 Changes in the concentrations of hydroxybenzoic acids, hydroxycinnamic acids and their esters, monomeric and dimeric derivatives of flavan-3-ol, and flavonols, as well as in the UV-visible absorbances of pale Sherry wines were studied. The wines were subjected to four different fining treatments: casein + bentonite, casein + bentonite + activated charcoal, casein + bentonite + polyvinylpyrrolidone (PVPP) and casein + bentonite + Riduxhigh. Based on the results, the treatments including activated charcoal and PVPP were the most effective at decreasing the overall concentration phenolic compounds, with no significant difference between them. Likewise, these treatments provided the best results in relation to wine colour in the visible spectral region, and particularly at 420 nm, at which wavelength browning compounds are usually measured. The aim of this study was to assess the influence of different winemaking technologies on the chemical characteristics and, in particular, on the phenolic fraction of Aglianico, Montepulciano, Nero di Troia and Sangiovese wines produced in Apulia, Southern Italy. Four different winemaking technologies were compared: control (traditional, 5 days of maceration at 25 °C with three daily punching-down), prolonged maceration (10 days), addition of ellagic tannins and cryomaceration (24 h at 5 °C using dry ice), without any other oenological treatment. Results showed that the different technologies slightly influenced the phenolic fraction of Aglianico, which is known to be naturally rich of phenols. On the contrary, the prolonged maceration led to an increase of total phenols (TP) in Nero di Troia (2,592 mg/kg vs. 2,115 mg/kg of control) and a decrease in Sangiovese (869 mg/kg vs. 1,013 mg/kg); the addition of tannins led to an increase of TP in Montepulciano (1,358 mg/kg vs. 1,216 mg/kg) and to a decrease in Sangiovese (916 mg/kg vs. 1,013 mg/kg); and cryomaceration led to a decrease of anthocyanins in all cultivars (about 15%). Phenols extraction from grapes was found to be mostly dependent on the grape variety rather than on the applied winemaking technology.  相似文献

The Brachetto variety is the most important aromatic red grape used for the production of sweet sparkling wines in Italy. The phenolic composition and chromatic characteristics were studied in base and red sweet sparkling wines made from this variety. The present work represents the first study on sparkling wines manufactured with Brachetto grapes. The amount of pigments extracted in the base wine was low as a consequence of the necessity for short maceration time (48 h) and low alcohol content (< 3.5% v/v). The second fermentation (prise de mousse) caused a pigment content decrease, accompanied by both a color intensity decrease and a tonality increase. In terms of phenolic compounds and chromatic characteristics, lightly sparkling wines (final bottle pressure < 1.7 bar) agreed with fully sparkling wines (final bottle pressure > 3.0 bar) at the end of the second fermentation and, therefore, the chromatic quality was independent on the winemaking methodology used, excepting for lightness and color intensity.Response surface methodology was applied to predict the effect of two independent variables, namely time and temperature of storing, on the phenolic composition and chromatic properties in both lightly and fully sparkling wines. So, it is possible to evaluate the development of two types of sweet sparkling wines during their ageing in bottle and their commercial shelf-life. A central composite design (CCD) and response surface methodology (RSM) were used for this purpose. Quantitative changes were observed in the color parameters. Although the time variable strongly influenced them, the two sparkling wines were stable enough only at low temperatures after 12 months of ageing. During the wine ageing in bottle, an increase in the formation of polymeric red pigments can be suggested taking into account the losses observed in monomeric anthocyanins. The results obtained showed that the color of fully sparkling wines was more stable than that of lightly ones and, therefore, the shelf-life of the former ones could be longer.  相似文献

Concentrations of derivatives of benzoic and cinnamic acids and furaldehyde were studied during maturing of a red wine (a mixture of Cabernet Sauvignon and Merlot) in barrique barrels (Quercus robur). Samples were taken at three-week intervals over 6 months. The influence of degree of toasting of the wood on the amount of phenolic compounds in barrique wine was also investigated. The samples were pre-separated using a solid-phase extraction on an RP 105 polymeric sorbent and analysed by high-performance liquid chromatography with UV-DAD detection. Gallic, protocatechuic, p-hydroxybenzoic, vanillic, caffeic, syringic, p-coumaric, ferulic, benzoic and ellagic acids and p-hydroxybenzaldehyde, vanillin, 2-furaldehyde, 5-methoxy-2-furaldehyde and 5-methyl-2-furaldehyde were identified in the extracts of natural and toasted wood chips and in the extracts of the wine. Syringaldehyde was identified only in the extracts of the toasted wood chips. Ellagic acid can be regarded as a characteristic compound of barrique wine ageing and its constant level during some periods could become a marker of maturity of barrique wines. Due to the absence of furaldehydes in natural wines, these compounds can be considered as typical components of barrique wines and so they can serve as a marker of authenticity of barrique wines.  相似文献

Chromatic characteristics and phenolic composition of red wines elaborated from Sousón and Brancellao grapes (Vitis vinifera L.), whose vines were trained in cordon and Guyot systems, were determined. This comparison was possible because there were no significant differences between yields for each one. Hue was the only significantly different chromatic parameter for both training systems and cultivars. In Sousón cultivar, saturation, colour intensity and red percentage were greater for Guyot system. Sousón cultivar trained in Guyot system and Brancellao cultivar trained in cordon system were characterized by higher total anthocyanin concentration. However, greater ionization index and flavanols reagent with dimethyl aminocinemaldehyde were associated with Guyot and cordon systems, respectively, independently on cultivar. Furthermore, gentisic acid, as well as malvidin-3-glucoside, petunidin-3-acetylglucoside and malvidin-3-caffeoylglucoside in less extension, permitted to differentiate training systems in both Sousón and Brancellao cultivars. Principal component analysis was also performed for a better understanding of the differences found.  相似文献

The major phenolic compounds (catechins, oligomeric and polymeric proanthocyanidins, and anthocyanins) in Tinta Miúda red wines made by various winemaking technologies (i.e., fermentation with carbonic maceration, fermentation with stem contact and fermentation without stem contact) were analyzed after 2 years of ageing in bottle, and compared with the data on their younger state (i.e., at the time of bottling). The concentrations of all individual phenolic compounds analyzed were significantly changed and their degradation rates (percent of decrease) were highly dependent on the winemaking technology used. The degradation of anthocyanins was, in general, more remarkable than that of catechins and proanthocyanidins. Catechins and proanthocyanidins in carbonic maceration wine appeared more stable than in skin fermentation wines, during ageing in bottle.  相似文献

The aim of this study was to evaluate the similarities or differences in the phenolic composition and the sensory characteristics between wines traditionally aged in new French and American barrels for different periods of time, and wines aged for 30 days with different kinds (different geographical origin al toasting degree) of oak chips. This study was carried out with two grape varieties, Mencía and Tinta del País, and in two consecutive vintages. The results obtained indicated that it was not possible to obtain wines aged with chips with sensory characteristics similar to those aged for a long time in new barrels, independently. However, the results showed that the use of oak chips could be a good alternative for elaborating young wines with slight olfactory and gustative wood notes quite similar to wines aged in new barrels for short periods of time (about three months).  相似文献

为探究东亚种红葡萄酒的颜色特征以及酚类物质轮廓,采用分光光度法、酶标仪和高效液相色谱-串联质谱(HPLC-MS/MS)技术分别对3款东亚种、3款欧亚种及2款杂交种(山葡萄×欧亚种)红葡萄酒的颜色和酚类物质组成进行分析,并对其花色苷衍生物进行鉴定。结果表明,与欧亚种红葡萄酒相比,东亚种红葡萄酒的辅色花色苷含量较高(55.63%~55.66%),而聚合花色苷含量较低(19.63%~27.01%),并且花色苷含量较为丰富(399.30~829.95 mg/L),以花色素-3,5-O-双葡萄糖苷为主(>97.50%),酰化花色苷较低(<21.78%)。花色苷衍生物检测结果表明,东亚种红葡萄酒中的花色苷与(表)儿茶素聚合产物和吡喃花色苷的含量极低(痕量水平)。东亚种红葡萄酒在非花色苷酚组成上的突出特点为单体和二聚体黄烷醇的含量极低,因此其对酒体颜色的潜在影响可能较小。  相似文献

The effect of six winemaking techniques (traditional, prefermentative maceration, delestage, Ganimede fermentation system, enzymes and tannins addition, or oak chip addition during alcoholic fermentation) on phenolic composition and chromatic characteristics of young red wines, elaborated from Mencía grapes grown in Galicia (northwestern Spain), was studied. The evolution of phenolic compounds from grapes to bottling and its influence on CIELab parameters were investigated. After bottling, 26 phenolic compounds were determined by high-performance liquid chromatography (HPLC), and their influence on colour stability for ageing was evaluated. Principal component analysis allowed the differentiation of the winemaking techniques studied on the base of phenolic composition, which is correlated with polymerization grade of anthocyanins. This paper can contribute to improve the knowledge about the importance of selecting the winemaking technique to elaborate high-quality young red wines and to evaluate their ability for ageing. So, the addition of enzymes and tannins seems to be the most adequate winemaking technique to elaborate red wines for ageing as it results in the formation of major number of pigmented polymers that are stable over time. Nevertheless, the prefermentative maceration, Ganimede autowinemaker and the addition of oak chips can be used for the elaboration of young red wines.  相似文献

Different dehydrated waste grape skins from the juice industry were added into aged and young red wines as an innovative way of compensating for colour loss before bottling. After addition of grape skins, colour intensity of wines increased a mean 11% and a maximum of 31% with predominance of the red component. Total polyphenols mean increase was 10% with a maximum value of 20%. Analysis of low molecular weight phenolic compounds by HPLC–DAD showed a significant (p < 0.05) content increase of the bioactive compounds gallic acid, (+)-catechin, (−)-epicatechin, and (E)-resveratrol. Anthocyanins content also increased at an average of 50 mg/l. The volatile profile of wines analysed by SBSE–GC–MS was only moderately influenced by the treatments. Mixtures of dehydrated waste grape skins were useful to improve the colour and polyphenol profile of red wines, considering them a useful tool for correcting colour loss before bottling.  相似文献

The irradiation of four Italian white wines with a visible light comparable to that encountered in the market place showed a modification in the amount of aliphatic esters in the wines. Aliphatic esters are responsible for fruity aromas in wines. The first wine studied was the Gewürztraminer, a white wine from Alto Adige (Northern Italy). The amounts of the esters presents in the wine decreased. All the curves follow a pseudo-first-order kinetics. This behaviour can be explained assuming a photooxidation process catalysed by riboflavin. When Arneis Blangè was irradiated, ethyl acetate showed an increase after one day of irradiation; its content then decreased and after five days' irradiation its concentration reached a maximum. Conversely, the concentration of other aliphatic esters decreased after one day's irradiation and then increased progressively to reach a maximum after five days' irradiation. The same behaviour was observed with Pecorino wine. In this case, the concentration of the aliphatic esters decreased until the second day of irradiation but increased after five days' irradiation. In the case of the irradiation of Lighea Zibibbo all the esters showed an increase in concentration after one day of irradiation. The concentration decreased after two days' irradiation, and then increased to reach a maximum after seven days of irradiation. The increase in the amount of esters in some wines and, by contrast, the decrease in the same compounds in Gewürztraminer can be explained by considering that, during the irradiation, the pH of Gewürztraminer did not change, while the pH of Arneis Blangè changed following a curve similar to that showed by the concentration of esters. The pH change can be explained assuming the presence of a photocatalytic process induced by the presence of metals in the wines and influencing the amount of tartaric acid.  相似文献

Chenin Blanc, cultivated in cool climate regions, was chosen to evaluate the impact of different maceration techniques on polyphenolic profiles and volatile compounds. Control with no skin contact (CK), cold maceration (CM), cryogenic maceration (CR), separate fermentation before blending (SFB) and extended skin contact during fermentation (ESF) were the five maceration techniques being studied. SFB and ESF techniques resulted in significantly increased polyphenolic compounds compared to the control (< 0.05), while CM and CR maceration techniques resulted in almost no effect. Meanwhile, for aromatic components, the maximum change was observed in ESF wine, which had significantly highest levels of terpenes, alcohols, esters and acids. However, compared with control wine, CR wine had higher levels of terpenes and esters and SFB wine had higher levels of terpenes and alcohols. This study provides information about prefermentation techniques and additional options for oenologists to produce Chenin Blanc wines with different characteristics.  相似文献

Red wine has been reported to exert beneficial effects in preventing cardiovascular diseases probably due to their polyphenols constituents. The vasorelaxant capacity and phenolic composition of four monovarietal young red wines Merlot, Tempranillo, Garnacha and Cabernet-Sauvignon obtained from grapes from 2004 vintage, cultivated under the same climatic and agricultural conditions, wine-making technology and storage conditions, were determined using vascular reactivity assay in rat aortic and high-performance liquid chromatography, respectively. Primary cultures of vascular smooth muscle cells from Wistar rats were also used to evaluate their survival prevention activity as well. Every studied wine present vasorelaxation effect, but the higher value corresponds to the analyzed Merlot wine, especially rich in phenolic compounds, mainly catechins and oligomeric proanthocyanidins and anthocyanin glycosides. This study further demonstrated previous investigations about the phenolic composition of wines relation with their vasorelaxation activity.  相似文献

This research established a database of analytical values associated with 173 commercial red wines from 7 vintages (1995–2001), 4 varieties (Pinot noir, Merlot, Cabernet Franc, Cabernet Sauvignon) and 13 vineyard locations within BC. Wines were analyzed for sulfur dioxide, pH, titratable acidity, phenolics, tartaric esters, flavonols, as well as copigmented, monomeric, polymeric, and total anthocyanins. Colour was evaluated using colour density, hue, and L, a1, b1 and chroma measurements. The sensory astringent qualities were characterized on a subset of 78 wines, using a panel of 12 judges. The panel evaluated the magnitude of the astringency, astringent aftertaste, oakiness and bitterness, as well as 3 astringent sub-qualities (surface roughness, drying, puckering). Data were analyzed by analysis of variance, principle component analyses, and canonical discriminant analyses to track the influence of variety, vintage and vineyard location. Trends were observable despite large variation in winemaking techniques. Red colour, colour density, copigmented, monomeric, polymeric and total anthocyanins were lowest in Pinot noir and highest in Cabernet Sauvignon wines. Younger wines had higher concentrations of copigmented, monomeric, and total anthocyanins than did older wines. Canonical discriminant analysis of the analytical and sensory determinations were successful in distinguishing the wines according to where the grapes were grown.  相似文献

The purpose of this work is to evaluate the phenolic profile and the antioxidant activity of commercial dealcoholised wines and monitor the stability of their composition over time. This work also aims to test the influence of reverse osmosis (RO) process on phenolic compounds and on the antioxidant activity (AA) of dealcoholised wine.AA was measured by ORAC, DPPH and FRAP assays. Phenolic compounds were determined by LC-DAD.In the commercial dealcoholised wines, AA fell by between 33% and 54% and the concentration of phenolic compounds decreased significantly after 30 days of storage. However, RO process did not significantly affect any phenolic acids, regardless of their chemical structure (benzoic acids, cinnamic acids) and alcoholic degree. The AA and phenolic compounds of these products were monitored for seven months. No significant changes were observed. RO process therefore makes it possible to obtain a healthy, low-alcohol (<2% v/v) product with bioactive compounds that are stable in the product and are similar to those found in the original wine.  相似文献

A desirable sensory profile is a major consumer driver for wine acceptability and should be considered during the production of reduced‐alcohol wines. Although various viticultural practices and microbiological approaches show promising results, separation technologies such as membrane filtration, in particular reverse osmosis and evaporative perstraction, in addition to vacuum distillation, represent the most common commercial methods used to produce reduced‐alcohol wine. However, ethanol removal from wine can result in a significant loss of volatile compounds such as esters (ethyl octanoate, ethyl acetate, isoamyl acetate) that contribute positively to the overall perceived aroma. These losses can potentially reduce the acceptability of the wine to consumers and decrease their willingness to purchase wines that have had their alcohol level reduced. The change in aroma as a result of the ethanol removal processes is influenced by a number of factors: the type of alcohol reduction process; the chemical‐physical properties (volatility, hydrophobicity, steric hindrance) of the aroma compounds; the retention properties of the wine non‐volatile matrix; and the ethanol level. This review identifies and summarises possible deleterious influences of the dealcoholisation process and describes best practice strategies to maintain the original wine composition. © 2016 Society of Chemical Industry  相似文献
