Seeds of Vigna unguiculata (L.) Walp. ssp. cylindrica (L.) Estt. (Fabaceae) were analyzed for proximate composition, proteins, fatty acids, minerals, antinutritional factors and phytohaemagglutinating activity. Crude protein, crude fat, ash and nitrogen free extractives constitute 29, 10, 4 and 53%, respectively. The caloric value of 100 g dry matter of seed material was 1737 KJ. The essential amino acids, isoleucine, lysine and tyrosine+phenylalanine are present in higher concentrations as 124.3, 79.5 and 79.1 mg/100 g crude protein, respectively. The unsaturated fatty acids constituted more than 60% of total fatty acids. The seeds were found to be a potential source of minerals such as potassium, calcium, phosphorus, zinc and iron. The antinutritional factors such as total free phenols, tannins, L‐DOPA, hydrogen cyanide and phytic acid contents were determined. The effect of cooking on the levels of nutritional and antinutritional factors was also assayed. Cooking caused reduction of 0.02, 0.59 and 0.36% in the mineral constituents of potassium, calcium and phosphorus, respectively. More than 70% of the antinutritional factors were eliminated and there was an increase of crude fiber content.  相似文献

Seeds of Galactia longifolia Benth. (Fabaceae), locally known as Kaattukollu in Tamil language, used as food by Malayali tribals in the Kolli hills of Namakkal District, Tamil Nadu in South India were analysed for proximate composition, total (true) seed proteins, amino acid composition, fatty acid composition, minerals and antinutritional factors. Crude protein, crude fat, ash and nitrogen free extractives constitute 25.56%, 6.18%, 5.12% and 56.15%, respectively. The caloric value of 100 g dry matter of seed material is 1,601 KJ. The essential amino acids, tryptophan, leucine + isoleucine, arginine and threonine are present relatively in large quantities. The unsaturated fatty acids constitute more than 60%. The seeds are very rich in potassium, magnesium, calcium and phosphorus. Antinutritional factors such as total free phenols, tannins, L-DOPA, hydrogen cyanide and phytic acid is present in minute quantities. The seed meal is consumed after eliminating all the antinutritional factors using the conventional method of soaking seeds in water, boiling with water and decanting for four times by Malayali tribals.  相似文献

Seeds of Canavalia virosa (Roxb.) Wight &; Arn. (Fabaceae), known locally as Kaattuthambattan in the Tamil language, consumed as a staple food by Malayali tribals in the Kolli hills of Namakkal District, Tamil Nadu in Eastern Ghats of Peninsular India, were analyzed for proximate composition, total (true) seed proteins, amino acids, minerals, and some antinutritional factors. Crude protein, crude fat, ash, and nitrogen free extractives constitute 31.3%, 4.9%, 3.8%, and 48.2% respectively. The calorific value of seed material was 1512.4 kJ/100 g Dm. The essential amino acids, isoleucine, histidine, cystine+methionine, and threonine, were present in relatively large quantities. The seeds are rich in calcium, zinc, manganese, and iron. Antinutritional factors such as tannins (5.8%), L-DOPA (4.3%), hydrogen cyanide (0.013%), and phytic acid (1.1%) are present in variable quantities. The trypsin inhibitor activity (29.8 units) and hemagglutinating activity of the seed meal were also assayed.  相似文献

Chinese chive seeds (Allium tuberosum Rottl.) (grown in China) were investigated. Density, thousand-grain weight, and hectolitre weight of seeds were 1.27 g/cm3, 4.9 g, and 71 kg/100 l, respectively. The results showed that Chinese chive seeds contained high amounts of oil (15.8%), dietary fibre (18.2%) and crude protein (12.3%). Oil of seeds was composed of 10.1% saturated and 90.0% unsaturated fatty acids. Linoleic(69.1%) and palmitic (7.0%) were the most abundant unsaturated and saturated fatty acids, respectively. Chinese chive seeds contained 4.5 mg/kg of thiamin, 2.8 mg/kg of riboflavin and 55.1 mg/kg of niacin. The mineral contents of the seed of A. tuberosum, for iron, calcium and zinc, were 580 mg/kg, 1328 and 80.8 mg/kg, respectively. Analysis of the amino acid content of Chinese chive seed revealed that it was a rich source of the essential amino acids, isoleucine, tryptophan and lysine. The study revealed that Chinese chive seeds had high levels of nutritionally important components, such as oil, minerals and essential amino acids.  相似文献

Samples of beach pea (Lathyrus maritimus L.) seeds and plant parts were analyzed for their chemical composition, total and free amino acids as well as minerals. The crude protein content of plant parts was from 10.7–28.0%, soluble proteins from 190–709 mg/100 g, lipid from 1.3–6.0%, ash 2.2–6.8%, crude fibre 10.7–35.5%, soluble sugars 0.1–12.2%, starch 0.8–26.5%, carbohydrate 55.8–81.5% and phenolic compounds from 0.5–3.0%. The amino acid profile of proteins of seeds and other plant parts of beach pea showed that they were deficient in sulphur-containing amino acids. Tryptophan was another limiting amino acid in plant parts, except in leaves (1.35 g/16 g N). The content of free amino acids was highest in branches plus stems (3148 mg/100 g) and lowest in pod shells (151 mg/100 g). Beach pea plant parts were a good source of minerals such as K, P, Ca, Mg, Na, Fe, Al and Zn.  相似文献

Chinese mitten crab (Eriocheir sinensis) was analyzed for proximate composition, minerals, amino acids and fatty acid composition, and also evaluated for nutritional quality. The yields of crab meat and edible viscera were 24.2% and 9.2%, respectively. The crab meat contained 18.9% crude protein. About 80% of the protein resided in the crab meat portion, while about 90% of the fat was in the viscera. Chinese mitten crab was an excellent source of minerals, particularly zinc, iron, copper and phosphorus. The crab protein contained high amounts of glutamic acid (151 mg/g), aspartic acid (99 mg/g), arginine (99 mg/g), lysine (81 mg/g) and leucine (77 mg/g), and it was a high quality protein with well-balanced essential amino acid compositions. Twenty six fatty acids were found in the crab oil. The monounsaturated fatty acids were predominant with a percentage of 49.8. Oleic acid (18:1) was the dominant fatty acid, followed by palmitoleic acid (16:1), palmitic acid (16:0) and linoleic acid (18:2n − 6); and the percentages were 31.0, 14.3, 14.2 and 11.9, respectively. The ratio of n − 6/n − 3 polyunsaturated fatty acids (PUFAs) was 2.2, and this is a n − 3 PUFA-rich food. In short, the results showed that Chinese mitten crab is a nutritious food.  相似文献

以不同产地文冠果种仁为材料,对文冠果种仁营养物质、脂肪酸、活性成分、氨基酸等组成与含量成进行了测定与分析。并应用氨基酸比值系数法,以WHO/FAO氨基酸参考模式为评价标准,对其必需氨基酸的组成进行了评价。结果表明:文冠果种仁中粗脂肪的含量为56.2%,蛋白质的含量为25.9%,粗纤维含量为10.4%,灰分含量为2.4%。文冠果种仁含有丰富的P、Ca、K、Mg、Na、Cu等多种微量元素。文冠果种仁中含有13种脂肪酸,不饱和脂肪酸约为91.74%。文冠果种仁中含有维生素C、维生素E、多酚、黄酮、甾醇等活性物质。文冠果种仁中含有17种氨基酸,氨基酸总含量为24.27%,其中8种人体必需氨基酸的总含量为8.44%,亮氨酸含量最高,为1.84%。其必需氨基酸的构成比例基本符合食品法典委员会(WHO/FAO)的标准,其氨基酸的比值系数评分(SRC)为77.55。文冠果种仁营养物质、活性成分丰富,所含人体必需氨基酸的种类齐全,并且含有独特的功能性脂肪酸-神经酸,是有利于人体健康的优质食品原料。  相似文献

Egyptian mango seeds were collected as wastes from local fruit processing units and the kernels were separated and dried. This study was carried out on mango seed kernels to clarify their proximate composition, amino acids, phenolic compounds and the characteristics of the extracted oil including unsaponifiable matter constituents, lipid classes and fatty acid composition. Mango seed kernels contained a considerable amount of total phenolic compounds, total lipid, unsaponifiable matter, and a low amount of crude protein, but the quality of protein was good because it was rich in all essential amino acids. Eight phenolic compounds were identified; tannin and vanillin were in highest amounts. Unsaponifiable matter showed the occurrence of high amounts of squaline followed by sterols and tocopherols. Stearic acid was the main saturated fatty acid, while oleic acid was the major unsaturated fatty acid in all lipid classes. The fatty acid composition of total lipid and neutral lipid was similar, while phospholipid had a high amount of palmitic, linoleic and linolenic acids.  相似文献

采用常规生化分析方法测定了岷县高原鳅(Triplophysa minxianensis)肌肉营养成分的组成和含量,并对其营养价值进行综合评价。结果表明:岷县高原鳅(鲜样)肌肉中水分、粗蛋白、粗脂肪、粗灰分、胆固醇、牛磺酸和维生素E的含量分别为75.43%±0.32%、17.87%±0.14%、1.72%±0.01%、1.57%±0.06%、(114.2±0.8) mg/100 g、(2738.4±50.6) mg/kg和(915.1±3.7) μg/100 g。岷县高原鳅肌肉中共检测出18种氨基酸,总含量(TAA)为15.04%,其中必需氨基酸(EAA)含量为5.98%,占氨基酸总量的39.76%,必需氨基酸(EAA)与非必需氨基酸(NEAA)含量的比值为81.47%,其必需氨基酸比例符合FAO/WTO的理想模式。必需氨基酸指数(EAAI)为75.40,鲜味氨基酸(DAA)含量为5.21%,占氨基酸总量的34.64%,支链氨基酸(BCAA)与芳香族氨基酸(AAA)的比值F为2.97。肌肉中共检测出16种脂肪酸,单不饱和脂肪酸(MUFA)含量为26.79%,多不饱和脂肪酸(PUFA)含量为40.79%,其中二十碳五烯酸(EPA)和二十二碳六烯酸(DHA)的总含量为28.77%,必需脂肪酸(EFA)含量为10.40%。分析结果表明,岷县高原鳅具有合理的氨基酸和脂肪酸组成,是一种营养成分均衡、营养价值较高且极具市场开发前景的名特土著鱼类。  相似文献

摘 要: 目的 对比分析不同规格秋刀鱼肌肉的营养价值。方法 参照国家标准方法测定大、中、小3种规格秋刀鱼肌肉的基本营养成分、脂肪酸组成和氨基酸组成, 比较其营养价值。结果 随着秋刀鱼规格的增大, 秋刀鱼肌肉中的粗脂肪含量增大, 而粗蛋白、水分含量减小; 3种规格秋刀鱼肌肉中均检测出18种氨基酸, 氨基酸总量为50.93~59.50 g/100 g, 且谷氨酸含量最高(7.00~8.39 g/100 g); 根据氨基酸评分,第一限制性氨基酸均为缬氨酸; 中规格秋刀鱼肌肉蛋白的必需氨基酸指数最高为88.44, 是良好蛋白源。不同规格秋刀鱼均富含多不饱和脂肪酸(47.23%~49.66%), 其中, 中规格秋刀鱼二十碳五烯酸和二十二碳六烯酸占总脂肪酸的比例最高为27.56%。结论 3种规格的秋刀鱼均属于高蛋白、高脂肪鱼类, 氨基酸和脂肪酸种类丰富且比例适中; 中规格秋刀鱼必需氨基酸指数最高, 二十碳五烯酸和二十二碳六烯酸的比例也最高, 营养价值相对较高。  相似文献

目的评价舟山小黄鱼的营养价值,为舟山小黄鱼产业的市场开发提供营养数据支持。方法分别采用直接干燥法、灰化法、凯氏定氮法、索氏抽提法、氨基酸自动分析仪和滴定法、气相色谱法、高效液相色谱法、电感耦合等离子体质谱仪测定舟山小黄鱼肌肉中的水分、灰分、粗蛋白、粗脂肪、氨基酸、脂肪酸、核苷酸、矿物质含量。结果水分、灰分、脂肪、粗蛋白、胆固醇含量分别为75.3 g/100 g、1.78 g/100 g、3.90g/100 g、18.3 g/100 g、41.7 mg/100 g; 18种氨基酸总量为15.71 g/100 g (鲜重),必需氨基酸总量与氨基酸总量比值和必需氨基酸与非必需氨基酸的比值分别为43.10%和75.90%。舟山小黄鱼肌肉中的第一限制性氨基酸是半胱氨酸+甲硫氨酸,第二限制性氨基酸是异亮氨酸,缬氨酸、酪氨酸+苯丙氨酸的AAS评分接近于1,其余必需氨基酸的AAS均大于1;15种不饱和脂肪酸含量占总脂肪酸的41.13%,其中8种多不饱和脂肪酸占22.83%,二十碳五烯酸、二十二碳六烯酸分别占总脂肪酸量的4.93%和8.38%,由脂肪酸组成计算出的动脉粥样硬化指数和血栓形成指数分别为0.75和0.46;核苷酸中含量最丰富的肌苷酸含量达1975mg/kg,对舟山小黄鱼鲜美滋味的贡献最大。富含的K、Mg、Ca、Zn、Fe、Cu和Se等矿物元素含量分别为3330、256.5、76.9、6.25、3.03、2.11和0.86 mg/kg。结论舟山小黄鱼是一种高营养价值的海水鱼类,具有广泛的市场开发潜力。  相似文献

Mango (Magnifera indica) seed kernel from Nigeria were analyzed for proximate composition, inorganic ions, amino acid composition, tannin and fatty acid composition. Mango seed kernel had 44.4% moisture content, 6.0% protein, 12.8% fat, 32.8% carbohydrate, 2.0% crude fiber, 2.0% ash and 0.39% tannin. Mango kernel fat contained high amounts of stearic (46.3%) and oleic (40.0%), while palmitic, linoleic, arachidonic and behenic acids were present in small quantities (<6.6%). Of the inorganic ions detected, potassium (365 mg/100 g), phosphorus (140 mg/100 g), magnesium (100 mg/100 g) and calcium (49 mg/100 g) were present in high levels, while iron, sodium, manganese and zinc were present in small levels (< 11.0 mg/100 g). The mango seed kernel is potentially a good source of nutrients for human and animal feed.  相似文献

Seed kernels of two cultivars (Chausa and Dusheri) of mango (Mangifera indica) were analysed for chemical composition, lipid classes, fatty acid composition, amino acid profile and chemical evaluation of protein quality. The seed kernels constituted about 18% of the total fruit and had 5% protein, 6–7% crude fat, 0.19–0.44% tannins, iodine value of 34–44 and saponification number 202–213. Oleic acid (42%) and stearic acid (39%) were the principal fatty acids in the oil. The in vitro digestibility was low in these cultivars, possibly due to the presence of tannins. Sulphur-containing amino acids (methionine+cystine) and isoleucine were the limiting amino acids in Chausa and Dusheri, respectively. The essential amino acid index and protein quality index were high, thus indicating the good quality of the protein in mango seed kernel.  相似文献

Four indigenous Desi chickpea (Cicer arietinum L.) cultivars grown in the Punjab Province of Pakistan have been analyzed to determine and compare their nutritional and compositional properties and to assess their role in human nutrition. Variability was observed among investigated cultivars in terms of physical characteristics of seeds, such as seed size, seed volume, seed density, hydration capacity, hydration index, swelling capacity and swelling index. Mineral composition showed that sufficient amounts of Ca, P, K, Cu, Zn and Mg were present to meet the macronutrient and micronutrient demand in human diets. Despite variations, potassium and manganese were noted as being present in highest and lowest concentrations, respectively, in all cultivars. The distribution patterns of various amino acids in these cultivars suggested sulfur-containing amino acids as limiting amino acids. Fatty acid profile indicated unsaturated fatty acids as major fatty acids in all cultivars. The levels of some of the anti-nutritional factors were also determined. The analysis showed almost similar proportions of biochemical constituents among all cultivars. The data show that, in terms of both quality and quantity, the Desi chickpea cultivars can serve as a significant source of essential amino acids, essential fatty acids and trace minerals to meet the demand of populations living in Punjab Province of Pakistan.  相似文献

Total lipids, phospholipids (PL), free fatty acids, TBA, carbonyl values, fatty acids and amino acid composition of filleted sucker (FS) and mechanically deboned minced sucker (MDMS), were determined. Higher PL concentration (534 mg/100 g versus 370 mg/100 g) and higher carbonyl values (0.89 μmoles/g versus 0.61 μmoles/g) were found in MDMS. There were no significant differences between FS and MDMS in fatty acid composition of total lipid and phospholipids. The protein content and amino acid composition of FS and MDMS were similar.  相似文献

测定灰褐牛肝菌子实体的基本成分、单糖、脂肪酸和氨基酸组成,矿物质含量及其蛋白质连续累进组分的含量,并对其蛋白质的营养价值进行系统评价。结果表明:灰褐牛肝菌子实体中粗蛋白质量分数为28.22%;葡萄糖含量最高,为258.04 mg/g;17种脂肪酸被检出,亚油酸、油酸和棕榈酸分别占脂肪酸总量的35.91%、28.46%和24.50%;游离氨基酸共检出29种,其中Tyr和Ala含量较高,甜味氨基酸和鲜味氨基酸分别占游离氨基酸总量的23.37%和12.69%;水解氨基酸中必需氨基酸含量较高,占氨基酸总量的38%,其氨基酸评分、必需氨基酸指数、生物价、营养指数和氨基酸比值系数分别为71.88、69.93、64.52、19.73和50.05。灰褐牛肝菌富含Mg、Fe、Zn、Cu,同时有毒元素Cd含量相对较高。蛋白质连续累进组分中清蛋白含量最高,占总蛋白的65.62%,但其Cd含量较高,占总Cd量的38.79%。十二烷基硫酸钠-聚丙烯酰胺凝胶电泳分析表明清蛋白和球蛋白的分子质量分布主要在40 k D,差异热量扫描分析表明其热变性温度分别为125.04℃和75.04℃。结果表明,灰褐牛肝菌子实体的营养价值较高,但是由于Cd元素含量较高,可能存在一定的健康风险。  相似文献

利用液态发酵技术富集苦荞渣中的营养物质,测定分析西农9940苦荞粉及其经液态发酵后所得苦荞渣的蛋白质、粗脂肪、矿物质、粗纤维、灰分、总黄酮、总酚含量以及氨基酸和脂肪酸组成,并以总还原能力、1,1-二苯基-2-三硝基苯肼(1,1-dipheny1-2-picryl-hydrazyl,DPPH)自由基和2,2'-联氮-双-(3-乙基苯并噻唑啉-6-磺酸)二铵盐自由基(2,2'-azinobis-(3-ethylbenzthiazoline-6-sulphonate)radical,ABTS+·)清除能力为指标对抗氧化活性进行综合评价。结果表明苦荞渣的蛋白质、粗脂肪、灰分、粗纤维、矿物质含量均显著提高,且液态发酵过程不改变苦荞粉的氨基酸及脂肪酸组成。苦荞渣的总酚含量为1 343.22 mg/100 g,显著高于苦荞粉559.76 mg/100 g,总黄酮含量为2 186.06 mg/100 g,显著低于苦荞粉2 464.10 mg/100 g,芦丁和槲皮素含量的测定也进一步证明发酵后苦荞渣的总黄酮含量显著降低,但其总还原能力、DPPH自由基和ABTS+·清除能力显著高于苦荞粉,说明经过发酵后苦荞渣的抗氧化能力更强。  相似文献

研究牦牛肝中的营养素成分与营养价值,对牦牛肝中的基本营养成分、胆固醇、维生素、氨基酸以及矿质元素的含量进行测定,结果表明,新鲜牦牛肝中粗蛋白、粗脂肪、灰分、水分含量分别为19.7、2.9、0.7、70.9g/100g;新鲜肝脏中富含α-VE、维生素B12,含量分别为1.50mg/100g和0.9mg/100g;氨基酸总量为64.77g/100g,必需氨基酸占氨基酸总量的41.14%,缬氨酸是第一限制氨基酸,4种鲜味氨基酸占氨基酸总量的20.20g/100g;牦牛肝中富含Ca、Mg、Fe、Zn、Cu、Mo、Mn、K、Al等矿质元素。可见,牦牛肝是一种高蛋白、低脂肪,富含维生素和各种矿物质的健康食品。  相似文献

Breadnut flour was processed and evaluated in the laboratory for chemical composition, amino acid and functional properties. The results showed that breadnut flour contained high quality protein with total essential amino acid of 55.1% which is comparable with that of soya flour and egg; while it is better than most nuts and oil seeds. Most of the essential amino acids satisfy the range for infant requirement or even higher than the maximum value of the range. The most predominant amino acids in breadnut are valine, glutamic acid and aspartic acid, while the limiting amino acid is methionine + cystine. Breadnut protein has minimum solubility at pH 5 and maximum solubility at pH 8. Potassium is the most abundant among the minerals determined (0.7 g/100 g) while magnesium (0.08 g/100 g) is the least. The result of the functional properties showed that the flour may be useful as a thickener and protein supplement in diet.  相似文献

Nutritional and antinutritional characteristics and biological value of Acacia nilotica (L.) Del. seeds were investigated. The mature seeds contained 234 g kg−1 crude protein, 126 g kg−1 crude fibre, 66.6 g kg−1 crude fat, 39.7 g kg−1 ash and 534 g kg−1 carbohydrates. Potassium, phosphorus, magnesium, iron and manganese occurred in high concentrations. The essential amino acid profile compared well with the FAO/WHO recommended pattern except for cystine, methionine and threonine. Cystine and methionine were the first limiting amino acids. When compared with the globulin fraction, albumins appeared to be a richer source of cystine, methionine, threonine, lysine and tryptophan. Oleic and linoleic acids constituted the predominant fatty acids (66.9%). Both dry-heating and autoclaving reduced the antinutritional components significantly. The in vitro protein digestibilities of raw, dry heat-treated and autoclaved seeds were 61.2%, 77.4% and 80.2%, respectively. Biological value, true digestibility and net protein utilization were significantly higher in processed seed than in raw seeds. The utilizable protein difference was insignificant between raw and processed seed samples.  相似文献
