BACKGROUND: The aim of this study was to extract a sorting rule for Tarocco orange fruit from several physicochemical and sensory tests performed on a marketable lot of 399 Tarocco orange fruits. RESULTS: The elastic tension at 5% strain (T5) was found to be linearly correlated (r = 0.65) with the Magness–Taylor (MT) index. Thus T5 was regarded as a non‐destructive parameter quantifying fruit firmness and used to categorise the aforementioned lot in three different firmness classes, high (HF), medium (MF) and low (LF). Only the MT index, fruit rind thickness near the fruit peduncle, lightness coefficient and yellow/blue hue component of the orange flesh, as well as total soluble solid content, confirmed the validity of this discrimination at the significance level of 5%. Sensory professionals recognised the greater compactness (7 ± 2) but lower ease of peeling (4 ± 2) and segment separation (4 ± 2) of the HF oranges with respect to the corresponding sensory attributes of orange fruits grouped in the MF and LF classes. CONCLUSION: To limit the costly rejection of Tarocco orange fruit considered too soft, especially after long‐term shipping, it would be reasonable to select only fruits characterised by a compressive force or tension at 5% strain in the range 23–41 N or 300–540 N m?1 respectively. © 2012 Society of Chemical Industry  相似文献

When preclimacteric apples were stored in air at 3.3°C rapid ethylene production usually began after 5 to 10 days. Treatment with ethylene caused earlier softening of apples, especially at the highest concentrations tested, 1–2 ml/litre. No effects on soluble polyuronide or peel chlorophyll levels were observed. It was not possible to induce earlier softening or compositional changes by ethylene treatment of apples stored in 2% O2:98% N2 at 3.3°C. Ethylene removal, by permanganate, delayed softening and increase in soluble polyuronide in preclimacteric, but not in postclimacteric, apples, stores in 2% O2:98% N2 at 3.3°C. Peel chlorophyll degradation was slow and unaffected by ethylene removal or fruit maturity. Loss of galactose residues from the cell wall was similar at high and low ethylene concentrations. Removal of ethylene from apples stored in 5% CO2:16% O2:79% N2 at 3.3°C did not affect their ripening, but delayed softening of apples stored in 9% CO2:12% O2:79% N2 at 3.3°C.  相似文献

Storage at 2% O2 plus 5% CO2 at 1.1°C maintained higher flesh firmness and lower pH and retarded decay more effectively than air storage of immature (M1) and over-mature (M3) Patterson and Tilton apricot fruits. CA storage of fruits picked at the optimum maturity stage (M2) produced little benefit over air storage, however. -Treatment with 100 ppm ethylene for 48 hours accelerated softening and color change at 20°C compared to ripening in air and may potentially be used to prepare immature apricot fruits for canning in the shortest possible time. Large differences in storageability and canned quality following storage were found among the five clingstone peach cultivars tested. Loadel and Carolyn: peaches, if in sound condition at harvest, can be stored for up to 4 wk under 2% O2+ 5% CO2 at 1.1°C. Andross, Klamt and Halford peaches should be stored for shorter storage periods only. Fruits ripened at 20°C with ethylene (100 ppm for 48 hr) were similar to those ripened without it in appearance, texture, and flavor.  相似文献

The phenolic compounds and antioxidant capacities of orange juices obtained from cvs. Moro and Sanguinello (Citrus sinensis (L.) Osbeck) were determined. A high-performance liquid chromatographic method coupled with diode-array detection was used to identify and quantify phenolic compounds of the orange juices. A total of 18 phenolic compounds were identified and quantified in Moro and Sanguinello orange juices, including hydroxybenzoic acids (2), hydroxycinnamic acids (5), flavanones (5), and anthocyanins (6). It was observed that total phenolic content of Moro juice was higher than that of Sanguinello juice. Ferulic acid was the most dominant hydroxycinnamic acid and cyanidin 3-(6″-malonyl glucoside) and cyanidin 3-glucoside were the most dominant anthocyanins in both cultivars. Antioxidant activities of orange juices were measured using the DPPH· (2,2-diphenyl-1-picrylhydrazyl) method. According to DPPH· assays, the antioxidant capacity of Moro juice was found to be higher than that of Sanguinello juice.  相似文献

Calcium chloride treated or nontreated zucchini squash slices were stored in air or low O2 (0.25, 0.5 and 1%) at 10°C. Respiration rate, ethylene production, and development of browning/decay were reduced under low O2. Slices stored under 0.25% O2 had less weight loss and browning/decay, and greater shear force and L-ascorbic acid content than those stored in air. Microbial count, pH, and color at the end of storage were improved by low O2. Calcium treatment had no additive effect on maintaining quality of zucchini squash slices stored in 0.25% O2 atmosphere.  相似文献

 Ethylene synthesis and metabolism were studied in apricot fruits (Prunus armeniaca L. cv. Búlida, under controlled atmosphere (CA) conditions (20% CO2 and 20% O2; 20% CO2 and 1% O2; 0.03% CO2 and 1% O2) and at a temperature of 2  °C. In control apricots stored outdoors in air containing 20% O2 and 0.03% CO2, the evolution of the physical and chemical parameters characteristic of ripening (loss of texture, decrease in acidity and increase in soluble solids) was slow during the storage period. However, for apricots stored in CAs containing 1% O2 and 20% or 0.03% CO2, these parameters did not show significant changes during the storage period. Ethylene production was completely inhibited in apricots stored in the three CAs, while control fruits showed a maximum ethylene level after 2 weeks of storage. This inhibition was accompanied by lower levels of 1-aminocyclopropane-1-carboxylic acid, free and total, which were more pronounced in apricots stored in the CAs containing 20% CO2. In apricots stored in the CAs containing 1% O2, the ethanol content increased after 1 week of storage, and this caused a smell and taste that made the fruits unsuitable for consumption. The effects of several modified atmospheres (100% O2, 100% N2, 100% CO2+ O2 scavenger, and 25% CO2 9% N2 66% O2) and vacuum on the color stability of turkey were studied. Microbiological examinations were performed at days 0, 7, 14 and 21. pH and pigment content measurements were performed at days l and 2, respectively. Color coordinates were determined at intervals of 2, 5, 7, 11, 14 and 21 days storage in the CIELAB system (1976). Meat kept under vacuum and 100% CO2+ O2 scavenger treatment showed the highest a* values color stability (p < 0.05) and the lowest rate of myoglobin oxidation (p < 0.05). The level of microbiological contamination of turkey breast meat stored with 100% CO2+ O2 scavenger was the lowest. Conditioning breast turkey meat with 100% CO2+ O2 scavenger or under vacuum would improve the color stability during storage.  相似文献

The effect of CO2 or O2 shocks at high temperature on the quality of citrus fruits stored at 5 °C for up to 6 weeks followed by shelf life of 1 week at 20 °C was investigated. ‘Ortanique’ and ‘Nadorcott’ mandarins exposed to 95 kPa CO2 at 33 °C for 24 h showed apparent rind physiological disorders and a global loss of fruit quality. Exposure to CO2 concentrations up to 50 kPa at 33 °C for 24 h did not adversely affect mandarin quality. Moreover, the treatment of mandarins and ‘Valencia’ oranges with 15 kPa CO2 and 30 kPa O2, respectively, both at 33 °C for 48 h, reduced weight and rind firmness loss and prevented the accumulation of fermentative volatiles on cold‐stored fruit.  相似文献

‘Pink Lady®’ apples (Malus domestica) fruit were harvested at commercial maturity treated with three different agrochemical products, and stored at 1 °C under either air or controlled atmosphere conditions (2.5 kPa O2 + 3 kPa CO2 and 1 kPa O2 + 2 kPa CO2) for 15 and 28 weeks. Diphenylamine, folpet and imazalil contents in both skin and flesh were simultaneously determined after cold storage plus a simulated marketing period of 1 or 7 days at 20 °C. Results showed that apples stored in 2.5 kPa O2 + 3 kPa CO2 retained higher contents of diphenylamine residues in comparison with those stored in 1 kPa O2 + 2 kPa CO2 or refrigerated air. Significant differences in imazalil skin contents were found throughout the simulated marketing period at 20 °C after storage for 28 weeks in controlled atmospheres.  相似文献

Proton spin–spin relaxation times (T2) of peel (albedo and flavedo) and juice sacs (flesh segments) of navel oranges were measured at 10 MHz using a Bruker Minispec PC 110 NMR spectrometer. The oranges were subjected to chilling (5 °C) and freezing (−7 °C) temperatures for 20 h and warmed to room temperature before peeling for T2 measurements. The exposure to chilling or freezing temperature did not affect the T2 values of peel, but freezing caused an appreciable decrease (∼15%) in the T2 values of flesh segments of the varieties of navel oranges studied. When the peel was exposed to −20 °C, the T2 showed a drastic reduction suggesting that the peel did not freeze at −7 °C. The possible cause of reduction in the T2 values when exposed to freezing temperature may be damage to the juice sac membrane and leakage of juice out of the sac. The difference in the T2 values between juice sacs of freeze-affected and normal oranges can potentially be used for detection of freeze-damaged fruits. The effect of different colored filters and atmospheres on photooxidation and quality in milk was studied. Pasteurized bovine milk (3.9% fat) was packed in 2 different atmospheres (air and N2) and exposed to light for 20 h at 4°C under 8 transparent filters with different light transmission properties. The following transparent, noncolored, and colored filters based on polyethylene terephthalate (PET) were used: noncolored (PET), noncolored with 2 different UV-block regions, yellow, green, amber, orange, and red. Control samples were stored in darkness and in a carton. Sensory evaluation showed off flavors significantly increased in milk stored under all filters compared with the control samples. Variation in atmosphere resulted in significant differences in formation of rancid flavor in milk stored under different filters. Milk samples stored in N2 underwent the most sensory deterioration under orange and red filters, whereas milk samples stored in air were most deteriorated under noncolored filters. According to the oxidation compounds measured by gas chromatography, milk samples stored under noncolored and orange filters were highly oxidized, whereas red, green, and amber filters offered better protection against photooxidation. Fluorescence spectroscopy was used to examine the degradation of photosensitizers (riboflavin, protoporphyrin, and chlorophyllic compounds) in the milk samples. Degradation of protoporphyrin and chlorophyllic compounds in N2 correlated well with sensory properties related to photooxidation (R2 = 0.75-0.95). The study indicates that protoporphyrin and chlorophyllic compounds were effective photosensitizers in milk. To avoid photooxidation in milk, it is therefore important to protect it against light from the UV spectrum as well as light from the entire visible region.  相似文献

This research studied the physiological responses and quality attributes of Kyoho grapes (Vitis vinifera X V. labrusca) to controlled atmosphere storage. The grapes were stored for up to 60 days in 95% relative humidity with four different conditions, 4% O2+9% CO2, 4% O2+30% CO2, 80% O2, and air, as control. The examined physiological responses and quality attributes included polyphenol oxidase (PPO) activity, ethanol concentration, fruit detachment force (FDF), firmness, color, soluble solid content (SSC), titratable acidity (TA), ascorbic acid concentration (Vc), and sensory quality. PPO activity, FDF drop and decay incidence when stored in 4% O2+30% CO2 were more effectively controlled, but unacceptable alcoholic flavor and browning were detected after 45 days, compared with those stored in 4% O2+9% CO2 or 80% O2. The fruits kept in 4% O2+9% CO2 or 80% O2 had good quality during 60 days of storage. The results suggested that high O2 atmosphere exhibited a potential for maintaining the quality of ‘Kyoho’ grapes during long-term storage.  相似文献

Our objective was to compare the effects of controlled atmosphere (CA) and modified atmosphere packaging (MAP) on fruit quality, chilling injury (CI) and pro‐ and antioxidative systems in ‘Blackamber’ Japanese plums. Matured fruit were stored for 5 and 8 weeks at 0–1 °C in normal air, CA‐1 (1% O2 + 3% CO2), CA‐2 (2.5% O2 + 3% CO2) and MAP (~10% O2 and 3.8% CO2). CA was more effective than MAP in retention of flesh firmness and titratable acidity during cold storage. Fruit stored in CA‐1 showed reduced CI and membrane lipid peroxidation after 5 and 8 weeks of cold storage. Low O2 atmospheres appeared to limit the generation of reactive oxygen species (ROS) and their efficient scavenging through the concerted action of superoxide dismutase and peroxidase. The role of ascorbate–glutathione (AsA–GSH) cycle in the regulation of oxidative stress was also studied during and after storage in different atmospheres. In conclusion, optimum CA conditions delayed fruit ripening and CI through augmentation of antioxidative metabolism and suppression of oxidative processes.  相似文献

The effect of modified atmosphere packaging (MAP 1: 70% CO2/30% N2 and MAP 2: 50% CO2/30% N2/20% O2) and vacuum packaging (VP), on the shelf-life of chub mackerel (Scomber japonicus) fillets stored under refrigeration was studied. Quality assessment was based on sensory analysis and biochemical indices determination. Increase in total volatile basic nitrogen (TVBN) and trimethylamine nitrogen (TMAN) followed the order: MAP 1 < MAP 2 < VP < air (control samples). The presence of oxygen into the fish package (air or MAP) resulted in an increase in the 2-thiobarbituric acid (TBA) values in comparison with samples packaged in the absence of oxygen. The most effective MAP used was MAP 1 which contributed to a considerably slower rate of fish spoilage. Based primarily on odour scores it was observed that raw chub mackerel fillets stored in the presence of air remained acceptable up to ca. 11 days, VP and MAP 2 samples up to ca. 15–16 days, while MAP 1 samples up to ca. 20–21 days of storage. On the other hand, flesh texture and flesh colour of all packaged samples received scores above or equal than the acceptability limit up to ca. 13–14 days of storage.  相似文献

Cantaloupe fruit was processed into clarified juice and juice concentrate. Greater yields were obtained from pressing fruit containing the rind in contrast to pressing cantaloupe flesh with the rind removed. Juice pressed from cantaloupe flesh without rind was particularly difficult to filter, filtration being easier if the flesh had been frozen and thawed. Juice compositional measurements included °Brix, pH, titratable acidity (TA), formol values, ascorbic acid content, total carotenoids, browning indices, sugars, and nonvolatile acids. Ascorbic acid degraded rapidly during processing. Concentrates stored at 25C for 120 days showed extremely high rates of browning. Sensory evaluation demonstrated that rind aroma and flavor were removed during concentration. The high juice yields (ca. 80%), low TA (0.04 g/100 mL as citric acid) and sweet, fruity flavor suggest the potential use of clarified cantaloupe juice concentrate as an alternate sweetener and blended juice base.  相似文献

‘Gala’ apples from two Summerland sites were harvested at two harvest dates for two growing seasons (1994, 1995) and stored for 6 months in air and controlled atmosphere (CA). At harvest maturity indices were recorded. After storage, flesh firmness, titratable acidity and soluble solids were determined and sensory attributes were evaluated by a trained sensory panel. In both years, analyses of variance showed apples picked at commercial harvest were significantly more crisp, firm, and sour and less fruity and sweet than apples harvested two weeks later. Apples stored for 6 months in CA were more crisp, firm, juicy and sour, had fewer off-flavors, and had greater overall acceptability than apples stored in air. Apples held at 1.2% O2for 6 months were more crisp than apples stored at either 2.5% O2 or 5% Q, while apples stored at 5.0% O were significantly less firm, juicy, and sour than apples stored using the other O2 concentrations. Apples stored at either 1.2% and 2.5% O2 had significantly more fruity flavor than apples stored at either 5.0% O2 or in air.  相似文献

Sensory (color, turgor, decay) and nutritional (vitamin C, β-carotene) quality of broccoli florets were evaluated during storage at 4C in air or under a controlled atmosphere containing 2% O2+ 6% CO2 (CA). Shelf-life, green color and chlorophyll retention were greater under CA than in air, although loss of stem turgor was accelerated. All samples stored in air had decayed sufficiently by the fourth week to be unfit for consumption, while samples stored under CA showed a few spots of decay after five weeks. However, CA was associated with browning at the cut surface of the stem. Retention of vitamin C was slightly greater in CA than in air, while β-carotene content increased at the end of CA storage. Returning the samples to ambient conditions for 24 h after storage under either conditions resulted in chlorophyll and vitamin C losses, whereas β-carotene content remained stable.  相似文献

Blood-orange fruits are suitable to fresh-cut fruit production because of their chemical compositions. Nevertheless, the main limitation of using freshly cut oranges is their susceptibility to juiciness loss and ascorbic acid degradation because of enzymatic alterations. The aim of this work is: to identify some of the enzymes causing the qualitative decay in blood-orange slices during 15 days of chilled storage (at 4 ± 0.5 °C and 85% RH); to investigate the susceptibility to the previous alterations of five blood-orange clones ( Moro nucellare, Sanguinello nucellare , Tarocco arcimusa, Tarocco gallo and Tarocco meli ) to select the most suitable one for fresh-cut production. The enzymes studied were: pectinmethylesterase (PME) as index of juiciness loss, ascorbate oxidase (AAO) as index of ascorbic acid's degradation and polyphenol oxidase (PPO) as browning index. As far as we know, the changes of AAO activity during chilled storage of blood-orange fresh-cut slices has not previously reported and studied. Different clones showed different enzymatic activities and quality changes during chilled-storage. In particular a low juiciness loss in orange slices was correlated with a lower PME activity, as described in T. meli clone, while a high degradation of ascorbic acid was correlated with an higher AAO activity, as described in T. gallo clone; PPO activity seemed to have no significant action in quality degradation. Tarocco meli was the most suitable clone to the fresh-cut blood-orange production because it has the lowest enzymatic activity (PME, PPO and AAO) and the highest sensorial quality.  相似文献

 Several mechanical parameters obtained by means of compression and penetration tests, and changes in cherimoya (Annona cherimola Mill.) fruit quality during storage in air and two controlled atmospheres (CA), (3% O2+0% CO2 and 3% O2+3% CO2) were analysed. A gradient of softening was found among the equatorial and the apical areas of the flesh during CA storage, as assessed by localized penetration tests. The combination of low O2/elevated CO2 (3% O2+3% CO2) increased this gradient and had a greater inhibiting effect on skin softening than low O2. It appeared that the prevention of softening by CA was stronger in the less mature tissues (equatorial and outer areas) than in the more mature tissues (apical and inner areas around the longitudinal axis). CA delayed or inhibited changes in fruit quality observed during air storage: increases in total soluble solids (TSS), titratable acidity (TA), and yellowness of the flesh (b), and diminution in flesh lightness of colour (L). A good relationship between an objective quality index (QI, where QI=TSS+TA+L/b) and the compression slope (CS) was found during storage under all the conditions tested. It is suggested that the relationship, QI=29.25+0.04×CS–0.0023×CS2 could be useful when assessing stages of cherimoya fruit quality during storage under different conditions by performing a nondestructive, compression test.  相似文献
