Legume flours, due to their amino acid composition and fibre content are ideal ingredients for improving the nutritional value of bread and bakery products. In this study, the influence of the total or partial replacement of wheat flour by chickpea flour on the quality characteristics of two kinds of cake was analyzed. The effects of the chickpea variety and the kind of flour used (white or whole) were also considered. Volume, symmetry, chroma, and crust and crumb L* diminished when increasing the amount of chickpea flour. The replacement of wheat flour by chickpea flour also induced an increase in the initial firmness but cohesiveness and resilience diminished, increasing the tendency to hardening. Among the studied varieties, Pedrosillano and Sinaloa produced cakes with the highest volume. Those varieties also gave layer cakes with the lowest firmness, gumminess and chewiness. White flours produced sponge cakes with higher volume and symmetry than whole flours. No significant differences, however, were observed in layer cakes between white and whole flours. In both layer and sponge cakes, white flour produced cakes with lower firmness, gumminess and chewiness than whole flours.  相似文献

Wheat flour was ground in an ultrafine pulveriser to obtain different levels of damaged starch (DS). The effect of DS content on physicochemical properties of flour and quality attributes of Chinese noodles and northern‐style Chinese steamed bread were investigated. Results showed that the degree of starch damage raised from 6.54% to 12.06% as grinding intensity increased from 0 to 130 Hz (P < 0.05). The falling number, sedimentation value, starch pastes' viscosity, dough proofing stability were negatively, while water absorption, pastes thermal stability, the degree of starch pastes and dough level were positively correlated with DS content, respectively (P < 0.05). The increase in DS content from 6.54% to 8.86% did not lead to a deterioration of texture characteristic, which might be attributed to the slight declining in hardness while enhancing in springiness and cohesiveness. The flour with DS content of 6.54–9.66% was suitable for steamed bread making.  相似文献

Some Nigerian snack foods, particularly cake, chin‐chin and puff‐puff, were prepared from blends of cowpea and wheat flours. The snack foods were evaluated for their protein content, physical and sensory characteristics. The latter included colour, flavor, texture and overall acceptability. All the snack foods showed higher protein content when compared with the 100% wheat flour based snack foods. The protein content increased with the increasing levels of cowpea flour in the blend. The physical properties of the supplemented snack foods were not adversely affected by supplementation with cowpea. Similarly, at all levels of cowpea supplementation, the sensory characteristics of the snack foods did not differ significantly (P > 0.05) from those of the 100% wheat flour based snack foods.  相似文献

The physicochemical characteristics, antioxidant properties and in vitro digestibility of high‐antioxidant content flours made from different combinations of Thai purple rice flour and refined wheat flour from 25%, 50% to 75% (w/w) were investigated and these were compared with whole flour from purple rice and refined wheat flour. The increase in substitution levels of purple rice flour affected all the functional properties of flours, at the same time the levels of dietary fibre, protein digestibility and antioxidant compositions were also changed. The purple rice flour exerted a particularly strong effect on starch digestibility as the purple rice increased to 50% in the mixture. Moreover, purple rice flour showed lower amounts of rapidly digested starch (RDS), whereas slowly digested starch (SDS) of whole flour from purple rice and 75% substitution purple rice flour was found to be the highest for all samples. The in vitro starch digestibility of all samples also showed a positive correlation between dietary fibre and antioxidant compounds. Overall, the addition of purple rice flour improved the final nutritional properties, notably a lower predicted glycaemic index, and a higher antioxidant potential, which are two important nutritional properties for human health.  相似文献

A comparative evaluation was made of some physico‐chemical and rheological characteristics of undehulled, manually dehulled and mechanically dehulled cowpea (Vigna unguiculata Walp. L.) flours from brown and white varieties of the legume. The flours were used to prepare steamed bean paste, ‘Moinmoin’, which was analysed for some sensory parameters. Dehulling and dehulling methods had no appreciable influence on the physical characteristics and proximate composition of the flours, except ash content, which was slightly higher in undehulled flour samples. Amylograph pasting characteristics of the flours showed varying trends because of dehulling method and/or presence of seed coats. ‘Moinmoin’ samples prepared from the flours received similar ratings for all sensory attributes, with no significant differences (P < 0.01 and P < 0.05), except for the low‐rated (poorer) colour of the undehulled brown product.  相似文献

The chemical, functional and pasting properties of flours processed from germinated (0, 24, 48 and 72 h) brown and yellow varieties of tigernut (Cyperus esculentus) seed was studied. Germination decreased carbohydrate (60.50–53.60%) and fat (60.50–53.60%) while protein and ash increased from 8.23% to 12.40% and 3.28% to 4.26%, respectively. In addition, functional properties such as foaming, emulsion, water and oil absorption capacities increased from 7.75% to 12.91%, 14.32–20.25 ml oil/g sample, 2.56–6.97 g water/g sample and 1.14–1.78 g oil/g sample, respectively, with germination. Least gelation of flour samples were improved as a result of germination process. Conversely, bulk density decreased with germination time (0.58–0.50 g/cm3). Trough, peak viscosity, break down, final viscosity, peak time and pasting temperature values were in the range (120.96–203.04 RVU), (145.28–228.11 RVU), (7.85–14.32 RVU), (180.62–324.73 RVU), (5.01.83–6.00 min) and (63.85–65.47 °C), respectively. Our results suggest that the incorporation of germinated tigernut flours may help in enhancing protein calorie delivery with improved functionality in complementary food formulations and baked products.  相似文献

采用蛋白酶、脱支酶、乳酸菌胞外酶处理玉米面粉,用RVA测其糊化曲线,筛选出对糊化性质有所改善的生物酶及其用量,并分析其改良机理。结果表明:蛋白酶可明显改善原面粉的糊化性质,其回生值和破损值都减小;脱支酶的作用效果不明显;乳酸菌胞外酶在一定浓度下也可以改善面粉的糊化性质。  相似文献

赤拟谷盗是小麦粉加工及储存过程中的重要害虫之一。选用普通小麦粉180g,向其中投入赤拟谷盗成虫,研究小麦粉在感染头数分别为0、10、30、60、100、200,感染时间为0、15、25、35、45d时的品质变化。实验表明:随着虫口密度的增大和感染时间的延长,小麦粉的水分稍有上升,灰分变化不大;粗淀粉含量降低,粗蛋白质含量升高,湿面筋含量和面筋指数则呈现不规律的波动;清蛋白、球蛋白、谷蛋白含量下降,醇溶蛋白的含量上升;降落数值下降明显。在较低虫口密度下时,小麦粉的峰值黏度、最低黏度、黏度破损值和最终黏度有升高趋势,但随着虫口密度的增大又逐步降低。  相似文献

通过对黑小麦全粉、与对照样特精粉复配混粉的面筋数量与质量测定,对黑小麦全粉占10%、15%、20%、25%、30%、40%、50%复配混粉进行流变学特性指标的测定及制作馒头成品以评价。结果表明:不同复配比例的混粉湿面筋数量表现比例越大含量越高;黑小麦全粉的流变学特性较差;复配混粉也都低于对照样特精粉的流变学指标;黑小麦全粉单独并不适合制作馒头,当复配比例在10%~15%时,馒头评价总分在80以上。  相似文献

As an alternative on the search for functional food products, this study evaluated the use of sourdough in the preparation of wheat flour tortillas. The sourdough was elaborated with Lactobacillus sanfranciscensis and the wheat flour tortillas were prepared with different concentrations of mother sponge (5%, 15%, and 25%) and fermentation times (1 and 3 h) at room temperature (25 ± 2 °C). Quality (diameter, height, color, pH, stretchability scores, and Kramer shear cell results) of wheat tortillas was evaluated after 24 h of preparation. The mother sponge concentration and fermentation time affected some quality parameters and acceptability properties (taste, aroma, color, opacity, and rollability). In addition, the sourdough tortillas had higher stretchability values than control tortillas. Since most of the prepared sourdough tortillas had acceptability values similar to those of tortilla controls, the introduction of sourdough is a viable means to incorporate additional nutritional and nutraceutical value into wheat tortillas.  相似文献

Between 2007 and 2009, 160 wheat samples were harvested at four growing locations in Quebec (Eastern Canada) and evaluated individually for their performance in whole‐grain bread (all grain fractions) and white bread prepared with a long‐fermentation process (3 h). Combination of results from both baking tests allowed the most complete evaluation of the gas retention capacity of wheat samples. Compared to cultivar and crop year, growing location had a minor effect on the overall bread making potential of wheat samples. In whole‐grain bread, the four winter wheat lines had a poorer performance than the twenty‐one spring wheat cultivars. Little correlation was seen between dough mixing stability and gas retention properties. Determination of strong gluten content (dry gluten × gluten index) might be a useful screening tool for early‐generation wheat cultivars.  相似文献

The objective of this study was to determine the effects of soy-fortified bread on the sensory and rheological properties. Ground defatted soy flour was blended with wheat flour at 3%, 7% and 12%. The organoleptic characteristics of soy-fortified wheat breads were carried out by taste panel. The effect of this fortification on the rheological properties of the resulting dough was investigated using farinograph and extensograph for quality assessment of the final product. The ash and protein contents of 3% and 7% wheat–soy bread blends increased compared with control. The results revealed that organoleptic characteristics score such as bendability, appearance, flavour and taste, crust texture and overall acceptability properties of bread containing 3% defatted soy flour was highest even though it is not significantly different. Therefore, we conclude that adding 3% or 7% defatted soy flour actually gives as good a loaf of bread as the 100% wheat bread with higher nutritional quality and acceptable consumer attitude with rheological and sensory characteristics.  相似文献

Green plantain flour (GPF) was used as a functional ingredient to produce gluten‐free (GF) bread based on a flour blend of rice flour and GF wheat starch (50:50) to improve their functional properties and to increase their resistant starch (RS) content. In pretrials, an addition of up to 30% GPF provided acceptable bread quality with maximum RS content. Based on these trials, two 23 factorial screening experimental designs were applied, where water content, baking temperature and baking time of GF bread containing 30% GPF addition were optimised. The best baking conditions to achieve satisfying GF bread quality – higher loaf volume, softer crumb firmness and regular porosity structure at the highest RS content could be defined to a maximum addition of water at 160%, baking temperature of 180 °C and baking time of 90 min. The incorporation of GPF showed good potential to improve the quality of GF bread.  相似文献

小麦粉在加工过程中会受到热的影响,导致小麦粉品质发生变化。该文研究不同受热条件下小麦粉品质及其面团特性的变化,以稳定或提高小麦粉品质。采用干热处理方式,在60~90℃分别对小麦粉加热10~50 s,测定小麦粉的水分含量、干面筋含量、面筋指数、蛋白质组分含量等理化特性,以及游离巯基含量、二硫键含量、面筋蛋白二级结构等结构组成和面团质构特性。研究结果表明,受热后小麦粉水分含量显著降低,在较长时间和较高温度时,随着温度升高和时间的延长,干面筋含量总体呈先升高后降低的趋势,当温度较高时,面筋指数均低于原粉,且随时间的延长先升高后降低;随着温度升高和时间延长,清蛋白和球蛋白含量降低,醇溶蛋白和麦谷蛋白含量先升高后降低;游离巯基和二硫键含量有显著变化,蛋白质的二级结构受温度影响显著,时间仅对β-转角含量有影响;面团质构特性在起始醒发时差异不大,但在醒发45 min后差异极显著,在温度高时,面团坚实度和黏弹性的值较大。  相似文献

Although much research has been conducted on wheat flour dough rheology, the principal focus has been the role of the protein fraction. Starch is the main component of flour and plays a key role in dough dynamic properties, particularly during heating. This study assesses the effect of two different waxy flours, a durum and a bread wheat, and their blends with commercial bakers' flour on dough rheology during heating with a concurrent investigation into baking performance. Both waxy flour blends produced similar effects on dough rheological behaviour despite differences in protein content, acting to delay gelatinisation and reduce storage modulus. The main effects in bread were to increase loaf expansion during baking and reduce loaf firmness. It is postulated these effects are largely water mediated, with the higher swelling ability of the waxy starch granules reducing overall water availability and driving complete gelatinisation to higher temperatures.  相似文献
