This study quantified the impact of season on fatty acid profiles of male and female blesbok muscles (longissimus thoracis et lumborum, biceps femoris, semimembranosus, semitendinosus, infraspinatus, and supraspinatus). Eight mature blesbok were harvested per season (winter and spring). Gender and muscle type influenced (p < 0.05) the fatty acid profiles of blesbok muscles, while season only influenced the C18:3ω3 (α-linolenic acid, ALA) percentages and therefore the total omega-3 poly-unsaturated fatty acids (total ω3 PUFA). Female muscles had higher C16:0 (palmitic acid) (21.01% ± 0.256 vs. 19.05% ± 0.296) and total MUFA percentages, while male muscles had higher (p < 0.05) C18:2ω6c, C20:5ω3, total ω3 PUFA (11.08% ± 0.382 vs. 8.50% ± 0.367), and total PUFA (43.03% ± 0.904 vs. 29.59% ± 1.164) percentages, contributing to higher poly-unsaturated to saturated fatty acid ratios (PUFA:SFA ratios). Differences in fatty acid profiles were attributed more to gender and anatomical location of muscles, than seasonal differences in diets.  相似文献

The muscle lipid and fatty acid composition of carp, Cyprinus carpio in Beysehir Lake the largest freshwater lake in Turkey, was determined. Polyunsaturated fatty acids (PUFA) of carp, the most abundant fish species in Beysehir Lake, were found to be higher than those of saturated fatty acids (SFA) in spring, summer and autumn and also the monounsaturated fatty acids (MUFA) in spring and summer. Palmitic acid was the major SFA (14.6–16.6%) in all seasons. Oleic acid was identified as the major MUFA (15.1–20.3%). Docosahexaenoic acid (DHA) was the major PUFA in summer and winter, whereas linoleic acid (LA) was the major PUFA in spring and autumn. The percentages of total ω3 fatty acid were higher than those of total ω6 fatty acid in the fatty acid composition of carp in winter. It was shown that the fatty acid composition in the muscle of carp was significantly influenced by feeding period and seasons.  相似文献

Six cultivars of Lupinus albus L. (white lupin) were grown in two subcontinental-climate environments and one Mediterranean-climate environment in Italy, to assess the influence of genotypic (G) and genotype × environment (GE) interaction effects on grain yield and grain content of oil, total saturated fatty acids (FAs), polyunsaturated FAs, monounsaturated FAs, and ω−3/ω−6 FA ratio. The variance of genotypic effects was much larger than the GE interaction variance for all variables, except for grain yield, indicating that oil content and FA composition of different varieties can be assessed reliably in just a few test environments. Gas-chromatographic analyses highlighted that linoleic acid and α-linolenic acid were in the range 1.76–4.76 mg/g flour (7.79–15.81% of total FAs) and 1.17–3.14 mg/g flour (5.40–10.36% of total FAs), respectively. As a consequence, the analysed lupin seeds exhibited a very favourable ω−3/ω−6 FA ratio, ranging from 0.49 to 0.79.  相似文献

Seasonal variations on total fatty acid compositions of zander, Sander lucioperca in Beysehir Lake, were determined by using GC. Polyunsaturated fatty acids (PUFA) were found to be higher than saturated (SFA) and monounsaturated fatty acids (MUFA) in all seasons. Palmitic acid was the major SFA (57.0–64.0% of total SFA) in all seasons. Oleic acid was identified as the major MUFA (45.0–58.0% of total MUFAs). Docosahexaenoic acid (DHA), linoleic acid (LA), eicosapentaenoic acid (EPA), and arachidonic acid (AA) were the most abundant PUFA. Relating to the total fatty acid composition of zander, the percentages of DHA, LA, AA, and EPA ranged between 17.1–23.3%, 5.40–15.4%, 6.72–9.94% and 4.22–5.93% of total lipid, respectively. The percentages of total ω3 fatty acid were higher than those of total ω6 fatty acid in the fatty acid composition of zander with ω3/ω6 ratios of 1.49, 1.45, 1.22, 0.72 in spring, autumn, winter, and summer, respectively. It was shown that the fatty acid composition and ω3/ω6 fatty acids ratio in the muscle of zander were significantly influenced by spawning and season.  相似文献

Seasonal variations in total fatty acid compositions of tucunaré, Cichla sp. in the Janauacá Lake of the Amazon basin were determined by GC. Saturated fatty acids (SFAs) were found to be at higher concentrations than monounsaturated fatty acids (MUFAs) and polyunsaturated fatty acids (PUFAs) in two seasonal periods. Major fatty acids were palmitic (16:0, 48.5–51.6% of total SFA), oleic (18:1ω9, 43.9–50.2% of total MUFA), docosahexaenoic (DHA, 22:6ω3, 13.5–27.9% of total PUFA) and arachidonic acid (AA, 20:4ω6, 16.0–19.6% of total PUFA). Polyunsaturated fatty acids were the most abundant in muscle during the flood period, and more especially fatty acids 22:6ω3 (10%) and 20:4ω6 (7%). There were no significant variations amongst total lipid SFA, MUFA, and PUFA from eye sockets. The ω6 fatty acid percentages were always higher than the ω3 fatty acid percentages in tucunaré, with ω6/ω3 ratios varying between 1.02 and 1.6 in the flood and drought periods.  相似文献

The total lipids and seasonal variations in the fatty acids of the mantle of cuttlefish (Sepia officinalis) captured in the north eastern Mediterranean were investigated and the mantle was found to be a good source of polyunsaturated fatty acids (ω3 PUFAs, in particular). In all seasons, the major fatty acids in the cuttlefish mantle were observed to be palmitic acid (16:0), stearic acid (18:0), eicosapentaenoic acid (EPA, 20:5ω3) and docosahexaenoic acid (DHA, 22:6ω3). A comparison of the saturated fatty acid (29.5–36.8%), monounsaturated fatty acids (7.81–9.84%) and polyunsaturated fatty acids (43.7–49.6%) of the cuttlefish mantle revealed that polyunsaturated fatty acids (PUFA) constituted the highest proportion. The levels of DHA in the cuttlefish mantle in autumn, winter, spring and summer were 27.6%, 28.5%, 29.5% and 23.9%, while those of EPA were 16.8%, 15.4%, 14.7% and 13.9%, respectively.  相似文献

This study investigated the potential of Northern shrimp (Pandelus borealis Kreyer) by-products as a source of omega-3 polyunsaturated fatty acids (ω-3 PUFAs). The by-products (heads, shell and tail) of processing accounted for approximately 50–60% of the catch. Supercritical CO2 extraction (SFE) of the by-products at 35 MPa and 40 °C generated a deep red oil, rich in ω-3 PUFAs, specifically 7.8 ± 0.06% eicosapentaenoic acid (EPA) and 8.0 ± 0.07 % docosahexaenoic acid (DHA).  相似文献

Oil extracted from the belly flaps of Lake Victoria Nile perch (Lates niloticus) was evaluated for fatty acid composition, contents of vitamin A, β-carotene and α-tocopherol, and oxidative stability. The oil was found to contain substantial amount of palmitic, palmitoleic, stearic, oleic, docosapentaenoic and docosahexaenoic fatty acids (FAs) and had high vitamin A content (3.94 ± 0.02 to 5.90 ± 0.02 mg/100 g of oil). Docosahexaenoic acid (10.45 ± 0.38%), docosapentaenoic acid (5.30 ± 0.60%) and eicosapentaenoic acid (3.63 ± 0.05%) were the most dominant polyunsaturated fatty acids (PUFAs). Ratios of PUFAs to saturated FAs were in the range 0.68 ± 0.02 to 0.74 ± 0.03, while the ratio of total ω-3 FAs to total ω-6 FAs was 0.85 ± 0.02 to 0.95 ± 0.08. The oils showed exceptional resistance to accelerated oxidation at 65 °C probably because of its high content of β-carotene (2.93 ± 0.03 to 4.69 ± 0.01 mg/100 g of oil) and α-tocopherol (2.11 ± 0.03 to 11.4 ± 0.92 mg/100 g of oil). From the results, it can be concluded that Nile perch oil is a rich source of essential fatty acids and vitamin A.  相似文献

A consumer survey identified 10 species of most-preferred marine fish for daily consumption in Malaysia. Total lipids extracted from 10 species of the selected fish were analyzed for their total fat, fatty acids composition and cholesterol content. Most of the fish contained less than 6% lipid by weight and total cholesterol content was 37.1–49.1 mg/100g. The composition of fatty acids showed that total ω-3 poly unsaturated fatty acids (ω-3 PUFA; 29.7–48.4%) were the highest, followed by other PUFA (27.7–40.0), ω-6 PUFA (11.0–20.0%), saturated fatty acid (3.63–11.4%), and finally, mono unsaturated fatty acid (MUFA; 1.37–9.12%). All samples showed a much higher content of ω-3 PUFA when compared to standard menhaden oil. Most of the fish had a higher ω-3/ω-6 ratio (2.16 –4.14) than the standard menhaden oil (2.03) except for Four Finger Threadfin (1.50), Indian Mackerel (1.67) and Striped Sea Catfish (1.78). The ratio of PUFA/saturated of the samples ranged from 5.49 to 25.2.  相似文献

The fatty acid compositions of liver and muscle of male and female Salmo trutta macrostigma, in the Tohma River, Turkey, were determined by gas chromatography. There were quantitative differences between individual fatty acids in the tissues investigated, depending on the sex. The most abundant fatty acids in both tissues of both sexes were palmitic acid (C16:0; 19.0–21.6%), stearic acid (C18:0; 5.32–11.3%), C18:1 ω−7 (5.65–9.38%), oleic acid (C18:1 ω−9; 15.6–22.4%), eicosapentaenoic acid (EPA; C20:5 ω−3; 6.34–7.88%) and docosahexaenoic acid (DHA; C22:6 ω−3; 7.38–15.6%). The ω−3/ω−6 ratio in tissues were found to be 2.89 (♂) and 1.97 (♀) in liver, and 2.59 (♂) and 2.26 (♀) in muscle. S. trutta macrostigma may be a valuable food for human consumption in terms of fatty acids.  相似文献

The aim of this study was to evaluate the inclusion of different oil sources and dietary supplementation with vitamin E on the composition of fatty acids in rooster meat. Two hundred and forty 30‐week‐old White Leghorn roosters were distributed in a completely randomized factorial arrangement of 5 × 2, using five oil sources (sunflower, soybean, canola, linseed and fish) and two levels of antioxidant (30 and 400 mg vitamin E kg?1 of diet). The intake of fish and canola oil in the diet reduced (P < 0.05) the content of saturated and unsaturated fatty acids in the thigh meat. Amongst the unsaturated fatty acids in the thigh, the fish and canola oil reduced (P < 0.05) the level of ω6 fatty acid, with a consequent decrease in the ratio ω6:ω3. The diet with fish oil increased (P < 0.05) the content of C22:6ω3 in the thigh meat. The use of linseed oil resulted in a significant reduction of the ratio of ω6:ω3 fatty acid in the thigh. The use of soybean oil in the diet increased (P < 0.05) the content of saturated and unsaturated fatty acids in the thigh, specifically in the content of ω6. The inclusion of vitamin E increased the polyunsaturated fatty acids in the chest meat, such as C18:3ω3, C20:5ω3 and C22:6ω3. Copyright © 2004 Society of Chemical Industry  相似文献

Fatty acids (FA), phytosterols, tocopherols, phenolic compounds, total carotenoids and hydrophilic and lipophilic ORAC antioxidant capacities were evaluated in 16 cultivars of Sacha inchi (SI) seeds with the aim to valorise them and offer more information on the functional properties of SI seeds. A high α linolenic (α-Ln) fatty acid content was found in all cultivars (ω3, 12.8–16.0 g/100 g seed), followed by linoleic (L) fatty acid (ω6, 12.4–14.1 g/100 g seed). The ratio ω6/ω3 was within the 0.83–1.09 range. γ- and δ-tocopherols were the most important tocopherols, whereas the most representative phytosterols were β-sitosterol and stigmasterol. Contents of total phenolics, total carotenoids and hydrophilic and lipophilic antioxidant capacities ranged from 64.6 to 80 mg of gallic acid equivalent/100 g seed; from 0.07 to 0.09 mg of β-carotene equivalent/100 g of seed; from 4.3 to 7.3 and, from 1.0 to 2.8 μmol of Trolox equivalent/g of seed, respectively, among the evaluated SI cultivars. Results showed significant differences (p < 0.05) among the evaluated SI cultivars in the contents of ω3, ω6, antioxidant capacities and other evaluated phytochemicals. SI seeds should be considered as an important dietary source of health promoting phytochemicals.  相似文献

Total (TL), neutral (NL) and phospholipid (PL) amounts and fatty acid (FA) composition of female Salmo trutta caspius, Salmo trutta labrax and Salmo trutta macrostigma were investigated during one year. Twenty-three FAs were identified in both NLs and PLs. The principal FAs of both fractions were palmitic acid in saturated fatty acid, oleic acid in monounsaturated fatty acid, docosahexaenoic acid (DHA) in n-3 polyunsaturated fatty acids (n-3 PUFAs) and linoleic acid in n-6 PUFAs. The highest values for TLs, NLs and PLs were found in winter. As a general trend, the highest n-3/n-6 ratios and eicosapentaenoic acid (EPA) + DHA amounts were found in the winter and this coincided with the lowest gonado-somatic index.  相似文献

Omega‐3 is a polyunsaturated fatty acid (PUFA), which is an essential nutrient for health. Through this, the ω3‐PUFA concentration has increasingly gained interest. In this study, the concentration of ω3‐PUFA of Lantern fish oil was investigated through utilisation of membrane separation. Between tested membranes, it was observed that ETNA01PP separates ω3‐PUFA more selectively. Additionally, effects of main parameters affecting the ω3‐PUFA concentration, including temperature (20–40 °C), pressure (3–5 bar) and stirring rate (0–200 rpm), were evaluated through Box–Behnken design of experiment. According to anova , all these parameters showed significant impact on ω3‐PUFA concentration. To determine the optimal process parameters, the Derringer's desirability prediction tool was employed in which the highest ω3‐PUFA concentration of 35.1058 wt. % was estimated. The obtained optimal condition was found to be the temperature of 36.19 °C, pressure of 4.82 bar and stirring rate of 43.01 rpm with a desirability value of 0.99.  相似文献

Interest has been increasing to enhance the contents of healthy polyunsaturated fatty acid (PUFA) in milk. However, trans fatty acids and conjugated linoleic acid (CLA) can be altered after thermal processing and high pressures disrupt the milk fat globule membrane, exposing the lipid core and helping its oxidation. The objective of the present research was to study whether processing can alter the fatty acid composition of milk and if these changes are affected by PUFA concentration as previous studies suggest. Two cow milk batches (500 L each), one naturally enriched in PUFA, were processed to obtain pasteurized; high temperature, short time; UHT; high pressure; and microwave pasteurized samples. The detailed fatty acid composition was analyzed with special attention to trans fatty acids and CLA isomers. Results showed that after high temperature, short time processing, total CLA content increased in both milk batches, whereas sterilization resulted in a sigmatropic rearrangement of C18:2 cis-9,trans-11 to C18:2 trans-9,trans-11. The extent of these effects was greater in milks naturally enriched in PUFA.  相似文献

The ω-3 fatty acids (ω-3 FAs)-fortified eggs are typically developed through alteration of hen feed. The present study aimed at creating ω-3 FAs-fortified egg products via processing. Novel, nutritionally-enhanced egg products were developed by substituting cholesterol-containing yolk with ω-3 FAs-rich flaxseed, menhaden, algae, or krill oil. Experimental egg products (egg whites, ω-3 oils, and annatto), whole egg, and liquid egg product (Egg Beaters™) were microwave-cooked, analyzed, and compared. Protein, fat, and moisture contents of experimental egg products matched (P > 0.05) whole egg. Cholesterol was the highest (P < 0.05) in whole egg (1.35 g/100 g, dry weight basis); while it ranged 0.01-0.24 g/100 g (dry weight basis) in experimental egg products. On a per egg basis, one whole egg contained 216 mg; while experimental egg products ranged 1-38 mg. The total ω-3 FAs content was the lowest (P < 0.05) in whole egg (5.9% of total FAs) and the highest (P < 0.05) in experimental egg products developed with krill oil (46.5%), followed by flax (43.1%), algae (DHASCO-42.5% and DHAS-39.5%), and menhaden oil (27.6%). The essential amino acid (EAA) content of experimental egg products was similar (P > 0.05) to whole egg except methionine, phenylalanine, and valine were generally greater in experimental egg products. Experimental egg products also had similar (P > 0.05) content of non-EAA to whole egg except alanine and glutamic acid were higher (P < 0.05); while arginine and cysteine were generally lower and higher in experimental egg products, respectively. However, total EAA, total non-EAA, and the ratio of total EAA to total AA were similar (P > 0.05) between experimental egg products and whole egg. Whole egg contained more (P < 0.05) Ca, P, and Fe, but less Mg than experimental egg products.  相似文献

In modern diet of human being, the ω-6/ω-3 ratio of dietary fatty acid was shifted much towards ω-6 series. In this work, a fatty acid desaturase (FAD) gene lkfad15 was cloned and identified from oleaginous yeast Lipomyces kononenkoae. Function analysis results shown that LKFAD15 is a novel Δ12/Δ15 bifunctional FAD which could not only produce linoleic acid and α-linolenic acid use just oleic acid as substrate but also adjust the ω- 6/ω-3 fatty acids ratio to the WHO recommended ratio. Phylogenetic analysis of LKFAD15 suggested it is a specific intermediate product of gene evolution derives from independent gene duplication events.  相似文献

An implemented GC method to separate and quantify the cell cyclopropane fatty acids lactobacillic (C19cyc11) and dehydrosterculic (C19cyc9) was used to study the adaptive response to sublethal acid and cold stresses in Lactobacillus helveticus and Lactobacillus sanfranciscensis. The comparison of the composition of cellular fatty acids of the two strains and their changes after 2 h of stress exposure under micro-aerobic and anaerobic conditions indicated that the aerobic biosynthetic pathway for unsaturated fatty acids is prevalent in L. sanfranciscensis, while the anaerobic pathway is prevalent in L. helveticus. Indeed in the latter strain, in the presence of a source of oleic acid and under micro-aerobic conditions, C18:1n11 and its post-synthetic derivative C19cyc11 accounted for overall proportion ranging from 52 to 28% of the total FAs. On the other hand L. sanfranciscensis synthesizes by aerobic pathway C18:1n9 and transforms it to C19cyc9. However in this species the cumulative level of these two FAs did not exceed 30%. The relevant proportion of dodecanoic acid in the latter species suggests that carbon chain shortening is the principal strategy of L. sanfranciscensis to modulate fluidity or chemico-physical properties of the membranes.  相似文献

The Azorean macroalgae Petalonia binghamiae, Halopteris scoparia and Osmundea pinnatifida are undervalued and require further study regarding their potential use as food. These three seaweed species had low fat contents, and their fatty acid (FA) profiles were characterised by a high proportion of saturated FA (SFA) in the case of O. pinnatifida and similar weights of SFA and polyunsaturated FA (PUFA) in the other two species. Within the PUFAs, the ω3 PUFAs were the most prominent in O. pinnatifida and P. binghamiae, yielding ω3/ω6 ratios that were higher than one. Eicosapentaenoic acid (EPA, 20:5 ω3) was the most important ω3 PUFA (10–14%). Regarding the other bioactive compounds, the polyphenols were found to reach non-negligible levels (140–220 mg/100 g dw). Significant antioxidant activity was detected. Ethanolic extracts of H. scoparia and aqueous extracts of P. binghamiae showed cyclooxygenase-2 (COX-2) inhibitory capacities between 40% and 79%, indicating anti-inflammatory activity.  相似文献

The effect of feeding laying hens with refined seal blubber oil (SBO, containing 22.2% ω3 polyunsaturated fatty acids) on the fatty acids composition and regiospecific distribution of fatty acids in triacylglycerols (TAG) and phospholipids (PL) of egg produced was investigated. The hens were fed four diets containing 0 (control), 1.25, 2.5 or 5% SBO for 5 and 9 weeks. Comparison of the total fatty acids composition indicated that a 5 week feeding period was sufficient to obtain the highest amount of total polyunsaturated fatty acids in the eggs. The fatty acids composition of the egg lipids reflected the fatty acids composition of the diet. The substantial reduction in the ω6/ω3 ratio (ie 8.5 to 2.6) is of interest, and is in line with the recommendations of health authorities in several countries, where it has been suggested that the human diet should contain a ω6/ω3 ratio of 3–4. The greatest reduction of the ω6/ω3 ratio occurred for diet A (control) and diet B (1.25% SBO). Principal component analysis analysis of the fatty acids composition of egg lipid showed four clusters representing: (i) the control diet; (ii) the diet containing 1.25% SBO as well as samples obtained from feeding 2.5% SBO for 9 weeks; (iii) the diet with 5% SBO; and (iv) samples obtained from hens fed 2.5% SBO for 5 weeks. More ω‐3 polyunsaturated fatty acids (ω3 PUFA) were incorporated in phosphatidylethanolamine and phosphatidylcholine than in TAG. Although ω3 were predominantly linked in the position Sn‐1,3 of TAG in SBO, they were esterified in the Sn‐2 position of the TAG and PL of eggs obtained after feeding laying hens with enriched diets.
