An experimental investigation was conducted to assess the quality of vegetable oils used as liquid medium in preserved fish. Sixteen tuna preserves were tested, including two in extra virgin olive oil, nine in olive oil (refined olive oil plus virgin olive oil) and five in refined seed oil. Next to the traditional routine analyses prescribed by the EEC Regulation N° 2568/91 (useful for a preliminary characterisation of oils used as liquid medium), the content of trans isomers of unsaturated fatty acids was determined and the analysis of polar compounds was performed by HPSEC (high performance size-exclusion chromatography). The acid composition showed the presence of highly unsaturated fatty acids, typical of fish lipids. Trans isomers were always absent in extra virgin olive oils, whereas they were always present in olive oils and in refined seed oils. Triglyceride oligopolymers, oxidised triglycerides and diglycerides, measured by means of the HPSEC analysis of polar compounds, ranged within 0.13-1.07%, 0.51-2.36% and 0.96-4.02%, respectively. The HPSEC analysis of polar compounds and the determination of trans isomers enabled better assessment of the quality of different types of oils used as liquid medium for canned tuna.  相似文献

The potential application of differential scanning calorimetry (DSC) to verify adulteration of extra virgin olive oil with refined hazelnut oil was evaluated. Extra virgin olive oil and hazelnut oil were characterised by significantly different cooling and heating DSC thermal profiles. Addition of hazelnut oil significantly enhanced crystallisation enthalpy (at hazelnut oil ?20%) and shifted the transition towards lower temperatures (at hazelnut oil ?5%). Lineshape of heating thermograms of extra virgin olive oil was significantly altered by hazelnut oil addition: a characteristic exothermic event originated at −27 °C in extra virgin olive oil and progressively disappeared with increasing hazelnut oil content, while the major endothermic peak at −3.5 °C broadened (at hazelnut oil ?40%) and the minor endothermic peak at 8 °C shifted toward lower temperatures (at hazelnut oil ?5%). The preliminary results presented in this study suggest that DSC analysis may be a useful tool for detecting adulteration of extra virgin olive oil with refined hazelnut oil.  相似文献

An optimised off-line SPE–GC–FID method based on the use of silver-silica gel was developed for the determination of mineral oil saturated hydrocarbons (MOSH) in vegetable oils, including olive pomace oil. The method is specific in not including the aromatic hydrocarbons. The performance of different silica gels (untreated, activated and treated with silver nitrate) was compared in terms of capacity to retain fat and retention of interfering olefins present in particularly large amounts in refined olive oils. A coefficient of variation of 9% was obtained performing six replicate analyses of an extra virgin olive oil fortified with an amount of MOSH near the estimated LOQ (15 mg/kg). Recoveries were close to 100%. The use of activated aluminium oxide as an additional tool to eliminate interference by endogenous long-chain n-alkanes, is discussed.  相似文献

A capacitive technique to assess water content in extra virgin olive oils   总被引:1,自引:0,他引:1  
The present research investigated the correlations between capacitance and water content of extra virgin olive oils (EVOO). A commercial capacitor probe for radio applications and an LCR meter were used for electric tests in the frequency range from 500 Hz to 512 kHz. Seventeen samples of different EVOO with a moisture content ranging from 178 to 1321 mg/kg oil were selected for study. To assess the influence of moisture only, the oil with the maximum water content was filtered down to 288 mg/kg oil and five samples with intermediate water contents were prepared and submitted to electrical measurements. Subsequently, the capacitance of all 17 EVOO samples was measured at selected frequencies.  相似文献

The hydrolytic and oxidative degradation of olive oil and extra‐virgin olive oil, used as covering liquids in canned dried tomatoes, was studied during storage by means of conventional (acidity, peroxide value, p‐anisidine value) and non conventional (polar compounds) analyses. The effects of the addition of spices were also considered. The hydrolysis and oxidation of olive oil increased faster and was higher than that of extra‐virgin olive oil in terms of absolute values but some other indices, such as percentage of oligopolymers and percentage of oxidized triglycerides, increased faster in extra‐virgin olive oil than in olive oil. The antioxidant effect given by a higher concentration of polyphenols in the extra‐virgin olive oil was shown by a reduced amount of secondary oxidation. However, olive oil and extra‐virgin olive oils showed similar behaviour in terms of peroxide formation.  相似文献

The compositional analysis of tocols in oils extracted from Korean caneberry seeds was compared with commercial soybean, corn, olive, canola, perilla, and grape seed oils. The oils from caneberry seeds of six different species were extracted using either a chloroform–methanol–water system or hot hexane. Tocols from all of the oils were analysed using isocratic HPLC. The contents of total tocopherols in the caneberry seed oils were about 75–290 mg/100 g oil, whereas tocotrienols were not detected. γ-Tocopherol was the most abundant tocopherol (31.8–239 mg/100 g oil) in the caneberry seed oils, followed by α-tocopherol (7.6–58.2 mg/100 g oil). The contents of total tocols in soybean, corn, olive, canola, perilla, and grape seed oils were 99.9, 61.1, 28, 27, 45.4, and 52.2 mg/100 g oil, respectively. Total tocol content was higher in most of the caneberry seed oils including the refined ones than in the commercial vegetable oils.  相似文献

基于多元素含量分析结合化学计量学技术对特级初榨橄榄油和精炼橄榄油进行等级鉴别。结果表明,采用主成分分析可成功区分特级初榨橄榄油和精炼橄榄油,建立可靠的橄榄油等级鉴别的正交偏最小二乘法判别分析模型,结果与主成分分析一致,且各等级橄榄油组内聚类效果明显;聚类分析也有效鉴别了两种等级橄榄油。筛选出区分两个等级橄榄油的8 种特征性元素,分别为Al、Fe、Cu、Ba、V、Sc、La、Zn。因此,采用多元素含量分析结合化学计量学技术可用于特级初榨橄榄油和精炼橄榄油的鉴别。  相似文献

The objective of this study was to determine the health benefits of extra‐virgin and refined olive oils, which are high in mono‐unsaturated fatty acids (MUFAs) and polyphenolic compounds using the pig as a model. Thirty‐two cross‐bred pigs were individually penned, allocated to one of four dietary treatments and fed ad libitum for 28 days. Two of the experimental diets consisted of a basal diet containing 12% tallow and either 7% sunflower oil (TSO) or 7% extra‐virgin olive oil (TEVO) on a w/w basis. The remaining diets contained 19% extra‐virgin olive oil (EVO) or 19% of refined olive oil (RO). On days 7, 14 and 28 fasted and 3‐h post‐prandial blood samples were taken. Body composition was measured at the beginning and end of the study using dual energy X‐ray absorptiometry. Daily gain, feed intake and lean and fat deposition were not significantly different between the treatments. However, the daily increase in bone mineral density was higher in pigs fed diets containing olive oil (1.23 vs 2.54, 6.28, 5.20 mg cm?2 per day for TSO, TEVO, EVO and RO, respectively, P = 0.050). Both fasting and non‐fasting plasma triglycerides were lower (P = 0.003) in pigs fed MUFA‐rich diets, while the cholesterol profile was not significantly different between the treatments. The results from in vitro copper‐induced lipid peroxidation, expressed in terms of conjugated dienes, showed that low density lipoprotein (LDL) particles in postprandial serum from pigs fed olive oil were moderately more resistant to oxidative modification. In conclusion, these data demonstrate that both extra‐virgin and refined olive oils attenuate postprandial hypertriglyceridaemia, moderately affect oxidation susceptibility and increase bone mineral density in growing pigs. 为了对我国油橄榄产业提供基础数据支持,采用国际油橄榄理事会推荐的HPLC法检测特级初榨橄榄油中的多酚含量,分析了我国不同产地的28份市售食用特级初榨橄榄油样品的多酚含量,并对不同生产年度和不同产地单果级特级初榨橄榄油中多酚含量变化规律进行了分析。结果表明:市售国产特级初榨橄榄油中均含有较为丰富的多酚类化合物,多酚含量范围为(63.885±2.345)mg/kg~(307.325±6.865)mg/kg;特级初榨橄榄油中多酚含量受贮存时间的影响较大,同时不同产地中适合生产高多酚含量特级初榨橄榄油的品种具有差异。不同特级初榨橄榄油样品之间多酚含量波动较大,需要通过多种方法来防止油脂中多酚类化合物的降解,以保证油品的质量,并因地制宜对油橄榄品种进行优化筛选。  相似文献

Three methods, most frequently used in hydrophilic phenols extraction from virgin olive oils (liquid–liquid, solid-phase with C18 and solid phase with diol-bound sorbents), were applied on virgin olive oils enriched with 2.0–10.0 mg/kg of phospholipids (granular de-oiled soy lecithin). Phospholipids addition significantly decreased the total phenols concentration determined colorimetrically. Liquid–liquid extraction showed the best repeatability and recovery, and the lowest decrease of total phenols extracted in the presence of phospholipids. Extraction rate declined with the increase of phospholipids concentration, but showed a kind of saturation behaviour. Addition of phospholipids (5 g/kg) to various commercial extra virgin olive oils resulted in a different degree of total phenols decrease (from 1% to 45%), probably because of different affinity of phospholipids toward different classes of phenolic compounds. During prolonged contact time between phenols and phospholipids (60-days storage), oxidation monitored by K270 and a decrease of total phenols concentration proceeded more rapidly in the presence of phospholipids.  相似文献

The possibilities of a spectrofluorimetric method joined to multivariate analysis to assess the genuineness of olive oil in admixtures with hazelnut oils were studied. Virgin olive, virgin hazelnut and refined hazelnut oil samples and admixtures between them at 5, 10, 15, 20, 25 and 30% adulteration were analysed at ex=350 nm. The precision of the method, in terms of repeatability and internal reproducibility, was established by means of the analysis of a virgin olive oil sample under different conditions, the RSD showing values less than 10%. Raw data of the spectra were subjected to mathematical treatment by calculation of the first derivative, selection of the maximum values and application of one-way ANOVA, to assess the most prominent variables in the discrimination process. The response to the addition of adulterant was linear, adjusted-R2=0.99 for virgin olive and refined hazelnut oil mixtures, and 0.98 for virgin olive and virgin hazelnut oil mixtures. Stepwise linear discriminant analysis applied to each admixture separately and to the whole set of samples allowed 100% correct classifications.  相似文献

The effect of adding different ratios of inulin and extra virgin olive oil blends, formulated without (MPA) and with cryoprotectants (MPB), on texture properties of fresh mashed potatoes and frozen/thawed mashed potatoes was studied. Inulin and extra virgin olive oil behaved like soft fillers, but inulin was associated with increased fibrousness and extra virgin olive oil with increased creaminess. In the total dataset and frozen mashed potatoes, frozen/thawed mashed potatoes, and MPA subgroups, component 1 was a contrast between mechanical and surface textural attributes, whereas in MPB samples component 1 was determined by geometrical attributes. Addition of inulin at 30 g/kg and extra virgin olive oil at 45 g/kg is recommended.  相似文献

The sterol profile of Tunisian virgin olive oils produced from Chétoui cultivar, the second main variety cultivated in the north of the country, grown under different environmental conditions, was established by gas chromatography using a flame ionisation detector. More than ten compounds were identified and characterised. As expected for virgin olive oil, the main sterols found in all Chétoui olive oils were β-sitosterol, Δ5-avenasterol, campesterol and stigmasterol. Cholesterol, 24-methylenecholesterol, clerosterol, campestanol, sitostanol, Δ7-stigmastenol, Δ5,24-stigmastadienol, and Δ7-avenasterol were also found in all samples, but in lower amounts. Most of these compounds are significantly affected by the geographical origin. The majority of the Chétoui virgin olive oils analysed respected EC Regulation No. 2568, and in all cases total sterol amounts were higher than the minimum limit set by legislation, ranging from 1017 to 1522 mg/kg.  相似文献

This paper presents the first investigation of the chlorophyll and carotenoid pigments composition in sicilian monovarietal virgin olive oils from the three (Cerasuola, Nocellara, Biancolilla) main olive varieties cultivated in Sicily (Italy). In all, 19 compounds were identified and quantified in 24 olive oil samples. The application of reversed-phase liquid chromatography with photodiode array detection using a C-30 column in the simultaneous qualitative–quantitative analysis of virgin olive oils pigments, has been shown. The qualitative pigment pattern was similar among the varieties investigated, whereas quantitative differences were found among the different cultivars, which can all be considered as having an high pigment content. Pheophytin a, was the major component (19.36–25.04 ppm), followed by β-carotene (8.06–16.27 ppm). Pheophytin a′ (2.92–4.17 ppm), lutein (2.28–4.49 ppm) and neoxanthin (1.54–2.11 ppm) were also well represented. The presence of carotenoid esters was also detected. The neoxanthin and β-carotene contents were higher compared to reports present in the literature for other olive oil varieties. This may be due to genetic factors and/or geographical differences. The ratio between the two isochromic pigment fractions, namely the chlorophyll and the carotenoid fractions, was around one in all varieties, showing that they were in balance. The lutein/β-carotene ratio was less than one in all cases. These parameters, along with other analytical parameters, could be used as indicators of typicality in olive oils. The presence of a specific pigment profile in olive oils could in fact be used to guarantee the genuineness of the product, since the quality control of food requires a precise knowledge of the pigments composition of the original products.  相似文献

The aim of this study is to enrich edible oils with carotenoids and lycopene from tomato purée or tomato peel, an industrial tomato waste. These tomato derivatives were incorporated in refined olive oil, extra virgin olive oil and refined sunflower oil. The incorporation of peel enhanced the concentration of β-carotene and lycopene more than tomato purée. Furthermore, the incorporation of both tomato purée and peel induced better thermal stability of the refined olive oil compared to extra virgin oil and sunflower oil. A decrease on total phenols as well as some prooxidant activity account for this, when tomato purée was incorporated. In our oil preparations, rutin and naringenin, as flavonoids coming exclusively from tomato purée or peel, were detected. The enrichment of oils with tomato carotenoids and lycopene, in particular low quality oils like refined olive oils, might be an alternative approach to elaborate new functional foods.  相似文献

Stability of avocado oil during heating: Comparative study to olive oil   总被引:2,自引:0,他引:2  
The stability of the saponifiable and unsaponifiable fractions of avocado oil, under a drastic heating treatment, was studied and compared to that of olive oil. Avocado and olive oil were characterised and compared at time 0 h and after different times of heating process (180 °C). PUFA/SFA (0.61 at t = 0) and ω-6/ω-3 (14.05 at t = 0) were higher in avocado oil than in olive oil during the whole experiment. Avocado oil was richer than olive oil in total phytosterols at time 0 h (339.64; 228.27 mg/100 g) and at 9 h (270.44; 210.30 mg/100 g) of heating. TBARs was higher in olive oil after 3 h, reaching the maximum values in both oils at 6 h of heating treatment. Vitamin E was higher in olive oil (35.52 vs. 24.5 mg/100 g) and it disappeared earlier in avocado oil (at 4 vs. 5 h). The stability of avocado oil was similar to that of olive oil.  相似文献

BACKGROUND: There is much interest in foods that belong to Protected Designations of Origin (PDO) because the quality and other essential and exclusive characteristics are guaranteed because of a particular geographical environment. We have used a capillary electrophoretic method for the simple, rapid and simultaneous characterization and quantification of the polyphenolic fraction of extra‐virgin olive oil from different PDOs (18 compounds in less than 7 min). To demonstrate the usefulness of this method, we have analyzed 16 samples of a Spanish PDO and nine other samples belonging to an Italian PDO (n = 5). RESULTS: In this way, it was possible to compare the phenolic profiles of the oils of different zones of the same PDO, as well as the phenolic profiles of Spanish and Italian extra‐virgin olive oils. Univariate statistics were used for differentiating the oils produced in each PDO. Furthermore, the correlations among several of the phenolic compounds present in the extracts of olive oil and its sensorial properties were checked. decarboxylated oleuropein aglycon (DOA) (b) (peak 6) was the compound more related to the bitterness of the oils, Ac Pin (peak number 4) and the unidentified peak with tmig 4.025 min played an important role in the pungent taste of the oils, and these two latter compounds and the peak 13 seemed to be related to the fruitiness of the oils. CONCLUSIONS: The electrophoretic method described in the current work has the ability to detect and quantify simultaneously 18 phenolic compounds (belonging to five different families) in less than 7 min. This technique could improve the characterization of this polar fraction and determine the geographical origin of olive oils or detect possible ‘PDO markers’. In fact, capillary electrophoresis coupled to statistical analysis enabled discrimination among olive oils belonging to two different PDOs considering eight phenolic compounds present in the extracts, and also identification of the phenolic compounds which could have more influence on several sensory attributes such as bitterness, pungency and fruitiness. The influence of olive paste preparation conditions on the triterpenic content of virgin olive oils from Arbequina and Picual cultivars was investigated. For this purpose, three sieve diameters of the hammer mill (4, 5, and 6 mm), two malaxation temperatures (20 and 30 °C), and two malaxation times (20 and 40 min) were tested. Results obtained showed that for Arbequina oils, a finer crushing level resulted in higher maslinic acid and erythrodiol content. Increasing malaxing temperature and time lead to a rise in both oleanolic and maslinic acid concentration, whereas erythrodiol content increased only for the longer malaxation time. For Picual oils, higher concentrations of oleanolic acid, maslinic acid, and uvaol were obtained by prolonging the paste malaxation time. A finer crushing level resulted also in an increase of maslinic acid content. These findings suggest that virgin olive oil triterpenic composition can be improved by regulating olive paste preparation conditions.  相似文献

Four different types of “focaccia” (Italian flat bread) prepared with the same dough and the same extra virgin olive oil but with different seasonings, were analyzed. Lipids were extracted from each sample using the Folch method. The indices commonly used to assess oil quality, the amounts of trans fatty acids and compounds of triglyceride polymerization, oxidation and hydrolysis, were determined in all the samples to better assess the degree of oxidation and hydrolysis of the oils. The findings showed that, once baked, the oil sampled from the different types of focaccias could not be included in the virgin category. The level of oxidation of the baked samples was greater than that in the uncooked oil. However the results obtained showed that the level of degradation of the extracted oils was lower than that found in edible refined oils and it seemed to be influenced by the topping used to flavour the focaccias.  相似文献
