Abstract: The direct consumption of vegetable proteins in food products has been increasing over the years because of animal diseases, global shortage of animal protein, strong demand for wholesome and religious (halal) food, and economic reasons. The increasing importance of legume and oilseed proteins in the manufacturing of various functional food products is due to their high‐protein contents. However, the greatest obstacle to utilizing these legumes and oilseeds is the presence of antinutrients; but these antinutrients can be successfully removed or inactivated by employing certain processing methods. In contrast, the potential negative impact of the antinutrients is partially balanced by the fact that they may have a health‐promoting role. Legumes and oilseeds provide well‐balanced amino acid profiles when consumed with cereals. Soybean proteins, wheat gluten, cottonseed proteins, and other plant proteins have been used for texturization. Texturized vegetable proteins can extend meat products while providing an economical, functional, and high‐protein food ingredient or can be consumed directly as a meat analog. Meat analogs are successful because of their healthy image (cholesterol free), meat‐like texture, and low cost. Mycoprotein is fungal in origin and is used as a high‐protein, low‐fat, health‐promoting food ingredient. Mycoprotein has a good taste and texture. Texturized vegetable proteins and a number of mycoprotein products are accepted as halal foods. This article summarizes information regarding the molecular, nutritional, and functional properties of alternative protein sources to meat and presents current knowledge to encourage further research to optimize the beneficial effects of alternative protein sources.  相似文献

目的 分析全球范围内经济利益驱动型掺假(EMA)和食品欺诈信息,为建立符合我国国情的EMA数据库提供借鉴。方法 搜集美国药典委(USP)食品欺诈数据库的EMA信息,对1980-2018年在全球范围发生的4102条食品掺假事件作归类和统计分析。结果 掺假分为替代或稀释、人工增强、非法添加物、标签作假和产地作假等6个类型;EMA信息来源主要为学术文献(59.5%)、媒体报道(31.0%)和监管抽查(5.7%);欺诈事件发生率地区排名前三位为印度、中国、美国;按我国食品分类标准28类分析,食用油脂、乳制品、肉制品、酒类、调味品、饮料和蜂产品等7类产品占所有掺假食品类别的90%以上;牛奶、橄榄油和蜂蜜高居掺假食品产品前三,分别占13.1%、7.8%和6.9%;水产品、果品和蔬菜以及制品、饮料作物高居掺假农产品产品前四,分别占54.6%、11.0%、8.0%和7.6%;稀释或替代是最主要的掺假方式;目前最常用的掺假检测方法为高效液相色谱法和质谱法。结论 EMA是全球性的严重食品安全问题,EMA数据库是预防控制食品安全风险的重要技术支撑。  相似文献

The 21st-century consumer is highly demanding when it comes to the health benefits of food and food products. In the pursuit of attracting these consumers and easing the rise in demand for high-quality meat products, the processed meat sector is intensely focused on developing reformulated, low-fat, healthy meat products. Meat and meat products are considered the primary sources of saturated fatty acids in the human diet. Therefore, these reformulation strategies aim to improve the fatty acid profile and reduce total fat and cholesterol, which can be achieved by replacing animal fat with plant-based oils; it could be performed as direct inclusion of these oils or pre-emulsified oils. However, emulsions offer a viable option for incorporating vegetable oils while avoiding the multiple issues of direct inclusion of these oils in meat products. Processed meat products are popular worldwide and showing a gradually increasing trend of consumption. Various types of plant-based oils have been studied as fat replacers in meat products. This review will focus on possible methods to reduce the saturated fatty acid content in meat products.  相似文献

Conventional methods for food quality evaluation based on chemical or microbiological analysis followed by traditional univariate statistics such as ANOVA are considered insufficient for some purposes. More sophisticated instrumental methods including spectroscopy and chromatography, in combination with multivariate analysis—chemometrics, can be used to determine food authenticity, identify adulterations or mislabeling and determine food safety. The purpose of this review is to present the current state of knowledge on the use of chemometric tools for evaluating quality of food products of animal and plant origin and beverages. The article describes applications of several multivariate techniques in food and beverages research, showing their role in adulteration detection, authentication, quality control, differentiation of samples and comparing their classification and prediction ability.  相似文献

The identity of a variety of animal fats and vegetable oils was predicted by three different analytical techniques with help of chemometrics. The sample material of animal origin consisted of milk fat, cow fat, pig fat and poultry fat. The vegetable oils comprised coconut, palm and palm kernel oils. Each product group was composed of at least eight samples of independent batches. For the identity prediction of the fats/oils several (combinations of) datasets were used: absolute and relative measurements of fatty acid compositions, of triacylglycerol compositions, and of combined fatty acid and triacylglycerol compositions. Volatile organic compound compositions were used as well. Fatty acid and triacylglycerol compositions were determined by gas chromatography. Fingerprints of volatile compositions were acquired using Proton transfer reaction-mass spectrometry. The rates of successful prediction were high and varied between 89 and 100%. The 100% rate was obtained for the absolute combined fatty acid/triacylglycerol dataset. Proton transfer reaction-mass spectrometry resulted in 89% correct classifications, has the advantage that it allows very rapid measurements compared to the other techniques, but requires further studies.  相似文献

The objective of this study was to develop and evaluate the effects of pork fat substitution with canola oil in Toscana sausage. Canola oil was incorporated into the product via lipid emulsion with water and collagen. The physicochemical and sensory parameters and fatty acid profiles were evaluated in five treatments with different canola oil concentrations (0, 2.5, 5.0, 7.5 and 10.0%). The prepared sausages met the legal identity and quality standards, with no significant differences detected in the variables moisture, ash content, lipid, pH, colour and weight loss due to cooking (P > 0.05). We observed a significant increase in the linolenic fatty acid content (omega-3 series). In the sensory evaluation, a significant difference was observed only for the texture variable. Pig fat substitution with 10% canola oil in the Toscana sausage exhibited the best physicochemical properties and fatty acid profile.Industrial relevanceVegetable oils have been used in meat products as an alternative to improve their lipid profiles. The amount of fat and the lipid profiles of meat products are the most important factors for product quality and consumer health. Our understanding of the relationship between the intrinsic food quality and health is gradually increasing, and as a result, a revolution has occurred in eating habits. Therefore, an innovative product for a healthier consumer market has been created to meet the challenges of animal fat substitution on the organoleptic characteristics of Toscana sausage.  相似文献

ABSTRACT

As adulteration of foodstuffs with Sudan dye, especially paprika- and chilli-containing products, has been reported with some frequency, this issue has become one focal point for addressing food safety. FTIR spectroscopy has been used extensively as an analytical method for quality control and safety determination for food products. Thus, the use of FTIR spectroscopy for rapid determination of Sudan dye in paprika powder was investigated in this study. A net analyte signal (NAS)-based methodology, named HLA/GO (hybrid linear analysis in the literature), was applied to FTIR spectral data to predict Sudan dye concentration. The calibration and validation sets were designed to evaluate the performance of the multivariate method. The obtained results had a high determination coefficient (R2) of 0.98 and low root mean square error (RMSE) of 0.026% for the calibration set, and an R2 of 0.97 and RMSE of 0.05% for the validation set. The model was further validated using a second validation set and through the figures of merit, such as sensitivity, selectivity, and limits of detection and quantification. The proposed technique of FTIR combined with HLA/GO is rapid, simple and low cost, making this approach advantageous when compared with the main alternative methods based on liquid chromatography (LC) techniques.  相似文献

BackgroundExposure to carcinogenic compounds such as polycyclic aromatic hydrocarbons (PAHs) is responsible for numerous human health problems. Diet has been found responsible for nearly 88–98% exposure to PAHs in humans. Different studies have been conducted worldwide to investigate the role of food processing techniques and food matrix in PAHs' formation and adsorption, which has helped in establishing regulations and guidelines.Scope and approachThe present review focuses on the published research articles on concentrations and profile of PAHs in Indian food products. The levels in Indian diet were compared with those reported for similar food products and categories in international studies, and the associated gaps and future prospects were discussed. This paper holds importance for public health especially for societies having an Indian-influenced diet.Key findings and conclusionsIndian food products belonging to Beverages, Oils, Fruits, Vegetables, Supplements, Chocolates, Traditional items and Marine foods category accumulated PAHs during pre- and post-harvest stages and acted as the main sources of PAHs' exposure to humans. Compared to worldwide studies, studies focusing on PAHs in Indian food products are very few, basic in nature and limited in scope.  相似文献

ABSTRACT

The world population is increasing and there is a growing demand for food, leading to intensification of farming methods and a requirement for more coadjuvants. Potential high profits sometimes lead to fraudulent use of drugs and pesticides. Veterinary drugs in particular can pose a real risk to human health if their residues are allowed to enter the food chain. Parent drugs and their metabolites can occur in foodstuffs individually or as multicomponent mixtures with enhanced adverse effects. In order to protect consumer safety, the European Union has established lists of forbidden substances, maximum residue limits for authorised drugs and precise criteria for confirmation analyses and interpretation of the results. Due to their nature and potential danger, the ‘best available technique’ should always be applied. Following this principle, this review examines the procedures and techniques applied to monitoring pharmaceutical products of major concern (e.g. anthelmintics, NSAIDs, corticosteroids, coccidiostats) in foods of animal origin, discussing advances over the past five years and future trends in the field of food safety. Our goal was both to focus attention on this important topic and to provide a selection of the most relevant recent papers on drug residues in foodstuffs.  相似文献

Polychlorinated biphenyl (PCB) residues in food are an important food safety concern. Simple and sensitive analytical methods are needed to monitor PCB residues and ensure that food is safe for consumption. The aim of this study was to adapt a selective, sensitive, quick, and easy sample treatment for purification of animal fat matrices and to measure the level of PCB28, PCB52, PCB101, PCB118, PCB138, PCB153, and PCB180 in samples of meat products (salami, soudjouk, and sausage) produced in Turkey. The extraction and purification of meat products were performed via the modified quick, easy, cheap, effective, rugged, and safe (QuEChERS) method and PCB levels determined by gas chromatography–mass spectrometry. The linearity was satisfactory for all compounds studied, with correlation coefficients ≥0.99. The limits of determination and the limits of quantification were in the range of 0.144–0.382 and 0.479–1.274 ng g?1, respectively. Recovery at 3 different spiking concentrations was 95.7–101 % and the relative standard deviations were <3.5 %. This validated method was observed to be more economic and eco-friendly, as it uses a smaller volume of extraction solvents that are also less toxic. The validated method was successfully applied to the analysis of selected PCBs in meat products with satisfactory results. The method’s results indicated the presence of PCBs in some of the meat product samples, although the levels were below the maximum residue limit for food products of animal origin in Turkey (40 ng g?1 of fat), which is in accordance with EU and Turkish levels.  相似文献

ABSTRACT

Due to the internationalisation of food production and distribution, there has been a significant increase of food fraud in recent years. Food fraud can have serious health implications, and it occurs when food manufacturers implement unethical practices such as making false label claims as well as using additives and fillers within their products to increase profitability. This has been a serious concern. Meat adulteration was examined using a well-defined proteogenomic annotation, carefully selected surrogate tryptic peptides and high-resolution mass spectrometry. Selected mammalian meat samples were homogenised and the proteins extracted and digested with trypsin. Chromatography was achieved using a 30-min linear gradient along with a BioBasic C8 100 × 1 mm column at a flow rate of 75 µl min–1. The mass spectrometer was operated in full-scan high-resolution and accurate mass using resolving powers of 140,000 and 17,500 (FWHM) in full-scan MS and MS/MS respectively. Data independent acquisition (DIA) mode was used including 12 DIA MS/MS scans to cover the mass range 600–1200 m/z. Methodically in silico analyses of myoglobin, myosin-1, myosin-2 and β-haemoglobin sequences allow for the identification of a species-specific tryptic peptide mass lists and theoretical MS/MS spectra. Following comprehensive MS, MS/MS or DIA analyses, the method was capable of the detection and identification of very specific tryptic peptides for all four targeted proteins for each animal species tested with observed m/z below 3 ppm compared with the theoretical m/z. The analyses were successfully performed with raw and cooked meat. Specifically, the method was capable of detecting 1% (w/w) of pork or horse meat in a mixture before and after cooking (71°C internal temperature).  相似文献

There is a continual need for development of rapid methods that meet or exceed the detection levels of currently available analytical methods for authentication of food products. The objective of this study was to evaluate temperature-controlled attenuated total reflectance-mid-infrared (ATR-MIR) spectroscopy combined with multivariate analysis as a simple and rapid method for the determination of butter adulteration as a dairy food system. Commercial samples of butter fat were adulterated with margarine fat at levels ranging from 0% to 100% (v/v). Partial least square regression (PLSR) models gave standard error of cross-validation (SECV) of <1.2% (v/v) and correlation coefficients (r) > 0.99. Excellent predicting capabilities were obtained using an external validation set consisting of butter adulterated with margarines at ratios of 2.5%, 13%, and 45%. We have demonstrated the feasibility of a temperature-controlled ATR-MIR spectroscopy technique that would allow for rapid analysis of dairy products.  相似文献

BackgroundThe outstanding nutritional and technological properties lead to innovative applications of chia (Salvia hispanica L.) in food products.Scope and approachThe aim of this contribution is to give an overview of the various food application approaches for chia. The nutritional and technological properties of chia as well as its technological and innovative utilization are presented. Examples for the various applications in food products are given in five main topics: baked goods, dairy products, meat and fish products, gluten-free products and other products such as functional food, hydrocolloid and thickener.Key findings and conclusionsBesides the nutritional benefits of chia incorporation in food products the technological effects are emphasized very often. Summarized in five main topics, most authors conclude that chia is a valuable food ingredient for functional food development. The application of chia in baked goods for example is beneficial not only to improve the nutritional value but acting as hydrocolloid or substitute egg, fat or gluten. The increase of oil stability and applications as food thickener in novel food applications are of high importance too. As different chia fractions give various options for applications the utilization of chia for further food products will increase significantly in the future.  相似文献

BackgroundConsumption of protein-based food products has a key role in the improvement of human health. The crosslinking agent microbial transglutaminase (mTGase) is an effective and promising tool to modify animal proteins used in the food industry. Improvement in the gelation process, physicochemical and textural quality, and consumer's demand of protein-based food products could be attained by combining mTGase and some non-conventional food processing technologies.Scope and approachNew perspectives and key areas for future research in the development of high-quality food proteins and protein-based products as a function of interaction effect of mTGase and some new processing techniques (e.g. high pressure processing (HPP), ultrasound, microwave (MW) and ultraviolet (UV) irradiation) are reviewed. The effect of conventional thermal and emerging processing methods on the mTGase crosslinking activity and protein gel functionality are also compared.Key findings and conclusionsThe crosslinking density and functional properties of protein gels can be strongly promoted by the synergistic action of mTGase and innovative processing methods. Compared to the conventional heating, HPP with further increase of mTGase affinity to proteins can result in products with better physicochemical quality and more complex and firmer gel structure. The yield, water holding capacity, surface hydrophobicity, strength, and viscoelastic characteristics of mTGase-catalyzed protein gels can be significantly increased by ultrasonication treatments. mTGase-crosslinked hydrogels subjected to high-intensity ultrasonic pretreatment have potential to be used as delivery vehicles for a wide spectrum of bioactive compounds. The application of MW and UV light can substantially improve the surface, textural and structural features of gels generated by mTGase-technology.  相似文献

The application of qualitative analytical techniques is usually associated with the analysis of data sets targeting issues related with the presence or absence of a particular class or type of sample, pattern recognition and cluster analysis. In food sciences, these techniques are generally used to deal with the authenticity, classification, discrimination, fraud and origin of foods. In recent years, qualitative analysis became more relevant in both food research and industry applications, addressing fraud and traceability concerns in the food value chain. In this overview, some of the most common classification methods and techniques used in food sciences will be briefly described, with emphasis on the validation, interpretation and reporting of the results obtained.  相似文献

The analysis of pesticide residues in food is nowadays an increasingly important task. Quality control has to be very strict in order to safeguard the consumers’ health. One of the most important goals of food quality assurance is testing food for residues and contaminants. Among chemical hazards, the contamination of food with pesticides has been characterized as a significant source of many serious diseases. Consumption of food containing pesticide residues may cause cancer, malformations, and damage to the endocrine, nervous, and immune system. In order to assure human food safety, The European Community has established maximum residue limits (MRL) of pesticides permitted in products of animal or vegetable origin that are intended for human consumption. In the EU, Regulation (EC) No. 396/2005 of the European Parliament and Council on pesticide residues established the levels of pesticide residues allowed in food and feed. To ensure the compliance of marketed food commodities with the law on food safety, sensitive and reliable analytical methods for the determination of pesticide residues are required. Multiresidue liquid chromatography-mass spectrometry methods (LC-MS) are widely recognized as an ideal, highly specific, and extremely sensitive technique for testing food products. This review discusses LC-MS approaches applied most widely to pesticide residue analysis over the last few years. The main ionization methods and MS detectors used as analytical tools in quantification and/or identification/confirmation of pesticide residues in food are presented.  相似文献

Meat industry sector is likely exposed to illegal practices which involve replacement of meat ingredients with other animal species. Meat products are commonly modified during processing, and the cases have been rampant in certain part of the world. Meanwhile, individual consumption patterns are affected by religious belief and health reason. For instance, Muslims and Jews are prohibited from consuming pork and allergic reaction to certain meat species affects choices of meat products. Thus, food authentication is vital as it offers protection to consumers from fraudulent act. Numerous authentication techniques have been developed to tackle food fraud issues. Authentication methods are categorised mainly as targeted analysis which provides quantitative outcome and non-targeted analysis which offers qualitative result. In the present review, both targeted and non-targeted analyses for meat species authentication are discussed based on previous research conducted using these methods and how they serve the purpose for authentication.  相似文献

Traceability is the ability to maintain the identification of animal, or animal products, all along the production chain. It represents an essential tool to safeguard public and animal health and to valorize typical production systems. European food legislation is particularly strict and traceability systems, based on product labeling, have become mandatory in all European countries. However, the implementation of this system does not ensure consumers against fraud. Paper documents can be counterfeit so researchers have focused on the study of genetic traceability systems based on products identification through DNA analysis. In fact DNA is inalterable, detectable in every cell, resistant to heat treatments, and allows for individual, breed or species identification. Even if results are promising, these techniques are too expensive to be converted in routine tests but they could be a trusted tool for verification of suspected fraud. The present review proposes a synthesis of the major advances made in individual, breed, and species genetic identification in the last years, focusing on advantages and disadvantages and on their real future applications for animal productions.  相似文献

The dairy products sector is an important part of the food industry, and their consumption is expected to grow in the next 10 years. Therefore, the authentication of these products in a faster and precise way is required for the sake of public health. This review proposes the use of near-infrared techniques for the detection of food fraud in dairy products as they are faster, nondestructive, environmentally friendly, do not require sample preparation, and allow multiconstituent analysis. First, we have described frequent forms of food fraud in dairy products and the application of traditional techniques for their detection, highlighting gaps and counterproductive characteristics for the actual global food chain, as longer sample preparation time and use of reagents. Then, the application of near-infrared spectroscopy and hyperspectral imaging for the detection of food fraud mainly in cheese, butter, and yogurt are described. As these techniques depend on model development, the coverage of different dairy products by the literature will promote the identification of food fraud in a faster and reliable way.  相似文献
