The antioxidant activity of two virgin olive oils, obtained from the same olive (Olea europaea sativa) batch but processed with different hammer crushing conditions, was evaluated by measuring their protective action towards linoleic acid peroxidation in a micellar system. The antioxidant efficiency (AE) of the oil phenolic fraction was higher when the olives were processed with a higher hammer crusher rotation rate. HPLC analysis demonstrated that one of the main derivatives of oleuropein, indicated as 3,4-DHPEA-EDA (the dialdehydic form of elenolic acid linked with 3,4-dihydroxyphenylethanol), is present only in the oil with higher AE. 3,4-DHPEA-EDA showed the greatest antioxidant ability among virgin olive oil phenols. Its greater efficiency in the micellar system in comparison with 3,4-dihydroxyphenylethanol (3,4-DHPEA) is related to its greater lipophilicity. It is suggested that the behaviour in the water–micellar environment is representative of that in a real system such as tomato-based sauce with added virgin olive oil. © 1999 Society of Chemical Industry 相似文献

目的 针对橄榄油总迁移量测试参考的行业标准中的几个问题, 讨论并提出相关改进建议, 以提高测试的可操作性和结果的准确性。方法 采用控制变量法, 考察适宜性判定时不同橄榄油质量对试样中橄榄油干扰物定量结果的影响, 考察不同温度和时间对橄榄油中水分干燥程度的影响。结果 以45~55 mg橄榄油做单点标准曲线定量适宜性判定限量附近的试样时, 检测结果准确性欠佳, 由10.3、7.0、2.8 mg橄榄油做单点标准曲线定量试样中橄榄油干扰物的质量基本一致; 行业标准中橄榄油中水分的干燥条件要求高、操作困难, 较难实现。结论 适宜性判定时宜采用小于10 mg的橄榄油做单点标准曲线, 以此来定量试样中橄榄油干扰物的质量, 对于水分敏感性试样尽量避免采用干燥橄榄油的方法, 建议采用调理法确定试样的准确质量, 以提高橄榄油总迁移量测试结果的准确性。 相似文献

The effect of grinding/flaking with and without pre-cooling of celery seeds on the yield and physical and chemical characteristics of volatile oil was evaluated. For smaller batches (200 g) with pre chilling and flaking, yields of oil were marginally but consistently higher (2.20%), compared to grinding celery at ambient temperature using a mini plate mill (1.9%) and with waring blender (1.8%). With flaking at room temperature the yield of oil was 2.0%. However, in large batches (10 kg), with steam distillation the yield of steam distilled oil was significantly higher for flaking (1.76%) as compared to the hammer mill powdering (1.4%), both at room temperature. Extraction of volatile oil from celery powder or flakes follows first order kinetics with an variance value of 0.04. Gas chromatograph (GC) and gas chromatograph–mass spectra (MS) analysis showed that in case of flaking, the volatile oil had higher levels of limonene, the major volatile compound and sedanenolide, the major character impact compound being present in almost equal quantities in both the cases of flakes and powder. Selective collection of volatile oil at different intervals of time of distillation gave products of different flavour profiles. Flaking had the advantage of higher yields of the volatile oil with better flavour quality. It was also observed that flaking of celery helped in overcoming the problem of clogging and choking which is associated with the conventional grinding. 相似文献

通过野外调查、标本采集与鉴定和查阅文献,对庐山自然保护区的油脂植物资源进行了统计和分析。结果表明:庐山自然保护区共有油脂植物76科、194属、298种,其中裸子植物8科11属22种、被子植物65科179属271种、单子叶植物3科4属5种,占该区种子植物科属种的比例分别为46.62%、22.45%、14.16%,占全国油脂植物科属种的比例分别为70.37%、48.87%、36.61%;含10种以上油脂植物的优势科有10个,含油量在40%以上的有54种,隶属24科34属。庐山自然保护区油脂植物地理分布类型多样,起源古老,以温带成分占优势。 相似文献

以羽毛球运动员为研究对象,通过给予羽毛球运动员补充灵芝孢子油软胶囊,对比运动员运动前后免疫功能指标的变化情况。在为期21 d的高强度运动时间内,定期给予运动员服用灵芝孢子油软胶囊,实验组与对照组(未服用灵芝孢子油软胶囊的运动员)进行免疫指标测定。结果表明:羽毛球运动员服用灵芝孢子油软胶囊后,比对照组NK细胞、CD4~+、CD8~+、CD4~+/CD8~+指标在不同时间段有不同程度的提高。研究表明,运动员长期运动时定期服用灵芝孢子油软胶囊可防止免疫功能的降低,降低运动时被感染的概率,使得运动员身体健康,以更多精力投入运动。 相似文献
