This experiment was conducted to investigate the effects of rumen-protected γ-aminobutyric acid (GABA) on performance and nutrient digestibility in heat-stressed dairy cows. Sixty Holstein dairy cows (141 ± 15 d in milk, 35.9 ± 4.3 kg of milk/d, and parity 2.0 ± 1.1) were randomly assigned to 1 of 4 treatments according to a completely randomized block design. Treatments consisted of 0 (control), 40, 80, or 120 mg of true GABA/kg of dry matter (DM). The trial lasted 10 wk. The average temperature-humidity indices at 0700, 1400, and 2200 h were 78.4, 80.2, and 78.7, respectively. Rectal temperatures decreased linearly at 0700, 1400, and 2200 h with increasing GABA concentration. Supplementation of GABA had no effect on respiration rates at any time point. Dry matter intake, energy-corrected milk, 4% fat-corrected milk, and milk fat yield tended to increase linearly with increasing GABA concentration. Supplementation of GABA affected, in a quadratic manner, milk protein and lactose concentrations, and milk protein yield, and the peak values were reached at a dose of 40 mg of GABA/kg. Milk urea nitrogen concentration responded quadratically. Total solids content increased linearly with increasing GABA concentration. Supplementation of GABA had no effect on milk yield, lactose production, total solids, milk fat concentration, somatic cell score, or feed efficiency. Apparent total-tract digestibilities of DM, organic matter, crude protein, neutral detergent fiber, and acid detergent fiber were similar among treatments. These results indicate that rumen-protected GABA supplementation to dairy cows can alleviate heat stress by reducing rectal temperature, increase DM intake and milk production, and improve milk composition. The appropriate supplemental GABA level for heat-stressed dairy cows is 40 mg/kg of DM.  相似文献

Little is known about transfer of dietary β-carotene into colostrum, its absorption by the calf, and its effects on retinol and α-tocopherol in the calf when the dam's dietary vitamin A is adequate. Our objective was to assess the effect of β-carotene supplementation during the close-up dry period on the colostrum and calf. The study was conducted on a large commercial dairy farm in Indiana during early summer of 2015. Ninety-four multiparous Holstein cows were blocked by calving data, parity, and previous production, and then randomly assigned to either control or β-carotene (BC) treatments. While locked in headgates each morning, each cow received a topdress of β-carotene (Rovimix, DSM Nutritional Products, 8 g/d; provided 800 mg β-carotene) or carrier from 21 d before expected calving until calving. Colostrum was collected within 2 h of parturition. Calf blood samples were obtained within 2 h of birth before receiving the dam's colostrum, at 24 h after birth, and at 7 d and 60 d of age. Blood serum was analyzed for β-carotene, retinol, α-tocopherol, and other metabolites and enzymes. Colostrum was analyzed for β-carotene, retinol, α-tocopherol, colorimetry profile, and milk components. Data were analyzed using mixed-effects models in SAS (SAS Institute Inc.). Calf serum β-carotene data were analyzed using the FREQ procedure. Colostrum β-carotene was higher for BC cows. Colostrum from BC cows had increased a* [measures red (positive) to green (negative)] and b* [measures yellow (positive) to blue (negative)] colorimeter values, indicating that β-carotene altered colostrum color toward red and yellow. Supplementation did not affect colostral or calf IgG concentrations. Colostrum color indices were correlated with IgG concentrations as well as concentrations of β-carotene, retinol, and α-tocopherol. Before receiving colostrum, the concentration of β-carotene in calf serum was below the detectable threshold of 0.05 μg/mL. At 24 h of age, the number of calves with detectable β-carotene concentrations increased, with more calves from BC cows (52.1%) having detectable concentrations than calves from cows in the control group (6.1%). No differences in concentrations of retinol or α-tocopherol were observed in calf serum. Supplementation of β-carotene to cows decreased activities of gamma-glutamyl transpeptidase and glutamate dehydrogenase in calf serum. In pregnant cows already receiving adequate vitamin A, supplementation of β-carotene increased concentration of β-carotene in colostrum, altered colostrum color, and increased serum β-carotene in calves at birth.  相似文献

Responses to lipid supplementation differ between dairy breeds and genetic lines suggesting nutrition by genotype interactions. β-Lactoglobulin phenotype is associated with changes in yield and composition of milk. The response of cows with different β-lactoglobulin phenotypes to lipid supplementation has not been examined. Furthermore, we examined whether lipid supplementation alters milk protein composition. By using a randomized block design, we fed Holstein cows for 3 wk either a control diet containing 2.8% crude fat (n = 19) or an experimental diet that was supplemented with 4.2% tallow (n = 20). Before randomization, all cows were fed the supplemental tallow diet for at least 2 wk. Dry matter intake, body weight, milk yield, and milk composition were measured in the last week before and during the experimental period. Feeding supplemental tallow increased dry matter intake and yields of milk and milk components, including casein content, without decreasing milk component content or altering milk protein composition. On the low-fat control diet, cows with the β-lactoglobulin allele B had a greater milk and milk component yield than cows with the A allele, whereas no differences by β-lactoglobulin phenotype were observed in cows on the tallow supplement diet. Our results suggest that cows that differ in β-lactoglobulin phenotype respond differently to a low-fat diet and that feeding cows 4.2% of additional tallow increases milk yield without affecting milk component content and milk protein composition.  相似文献

β-Carotene, a pro-vitamin A carotenoid, acts as an antioxidant, able to scavenge free radicals to prevent oxidative damage. It has also been shown to increase rumen microbial production in vitro. When supplemented prepartum, β-carotene increased colostral fat and protein concentrations. The objective of this experiment was to evaluate the effects of supplementing 700 mg/d β-carotene (BC) daily for 4 wk prepartum on cow performance, colostrum, and performance in subsequent calves. Eighteen multiparous Holstein cows housed in a tiestall barn were blocked by expected calving date and randomly assigned to treatments at 4 wk prepartum. Blood samples were collected 3 times a week for analysis of nonesterified fatty acids, ketones, β-carotene, and IgG. Urine samples were also collected 3 times a week for analysis of creatinine and purine derivatives. Colostrum was collected within 90 min after parturition. Calves were removed from their dams before suckling, weighed within 30 min of birth, and received 4 L of maternal colostrum. Blood samples were collected from calves before colostrum administration (0 h) and at 24 h via jugular venipuncture for analysis of IgG concentration and apparent efficiency of IgG absorption. The 18 calves born were blocked based on treatments of dams. All calves were fed 449 g/d dry matter of milk replacer (20% crude protein, 20% fat) and an 18% crude protein textured starter and water ad libitum at 2 d of age until weaning at 42 d. There were no differences in any blood parameters of cows during the prepartum period. Supplemental BC increased the solids content of colostrum compared with control (22.89% control; 27.75% BC). Calves born from control fed cows had greater efficiency of IgG absorption than those born from BC supplemented cows (52.16% control; 39.50%, BC). Calves born from BC fed cows had greater feed efficiency (average daily gain/dry matter intake) compared with those born from control supplemented cows (0.33 for control; 0.44 for BC). These data indicate that although supplementing β-carotene to cows in the prepartum period negatively affects apparent efficiency of IgG absorption, it improved feed efficiency in calves.  相似文献

Beneficial effects for mood and cognitive performance are believed to influence food and drink choice. The purpose of the present study was to demonstrate a sensitive methodology for providing objective evidence of such effects. A mildly fatiguing repetitive task formed the context for assessing the potential restorative effects of caffeine-containing ‘energy’ drinks. The methodology used was designed to account for a range of theorised variations in the data, many of which are often overlooked in current research. Significant effects of the energy drinks on task performance and self-rated mood were found. These effects can be summarised with the terms ‘alerting’, ‘revitalising’, ‘awakening’ and providing mental energy, and appear to be mainly caffeine related.  相似文献

Residues of pesticides in food are influenced by processing such as fermentation. Reviewing the extensive literature showed that in most cases, this step leads to large reductions in original residue levels in the fermented food, with the formation of new pesticide by-products. The behavior of residues in fermentation can be rationalized in terms of the physical-chemical properties of the pesticide and the nature of the process. In addition, the presence of pesticides decrease the growth rate of fermentative microbiota (yeasts and bacterias), which provokes stuck and sluggish fermentations. These changes have in consequence repercussions on several aspects of food sensory quality (physical-chemical properties, polyphenolic content, and aromatic profile) of fermented food. The main aim of this review is to deal with all these topics to propose challenging needs in science-based quality management of pesticides residues in food.  相似文献

Influence of the concentration of sucrose and cellulose pulp on the compression behaviour of ϰ-carrageenan-based gels is studied. Composition of samples was established by using a second-order central composite design. Carrageenan concentrations used were between 0.5 and 1.25%, sucrose concentrations between 0 and 30% and cellulose fibre contents between 0 and 0.5%. Uniaxial compression behaviour was analysed by evaluating two parameters: maximum rupture strength (Fmax) and apparent Young's modulus (Eap). Results obtained showed that addition of sucrose increased both Fmax and Eap values while the effect of cellulose depended on the concentration of the other components.  相似文献

Studies have shown that β-glucans extracted from the cell wall of cereals, algae, and yeasts have been associated with improved immune function. However, it is unknown whether algae β-glucan supplementation affects the performance, blood metabolites, or cell counts of immune cells in dairy calves. The objective of this randomized clinical trial was to evaluate whether supplementation of β-glucans to milk replacer in dairy calves fed 6 L/d improved growth performance and fecal status and altered the blood metabolite profile. In this trial, we enrolled Holstein calves (n = 34) at birth (body weight 36.38 ± 1.33 kg; mean ± standard deviation) to receive, from 1 d of age, either 2 g/d algae β-glucans mixed into 6 L/d of milk replacer (22.4% crude protein and 16.2% fat) or an unsupplemented milk replacer (control). The calves were blocked in pairs according to birth weight, sex, and date of birth (up to 5 d difference). Calves were housed individually, and calf starter (24.7% crude protein and 13.9% neutral detergent fiber) was offered ad libitum based on orts of the previous day until 56 d of age (end of the trial). Body weight was measured weekly, and health checks and daily fecal consistency were evaluated daily in every calf by the same observer. Calves with 2 consecutive days of loose feces that sifted through bedding were considered diarrhea positive. We used a linear mixed effects model to evaluate the effects of β-glucan supplementation fed during the preweaning period on performance (average daily gain), final weight, feed efficiency (FE), white blood cell count, and selected blood metabolites, repeated by time. A generalized linear mixed effects model was also run to evaluate the likelihood of a diarrhea bout in the first 28 d of life, controlling for the calf as the subject with a logistic distribution. We included age, serum total protein at 48 h, and birth weight as covariates. At 56 d, β-glucan-supplemented calves weighed more than control calves (56.3 vs. 51.5 kg). Treatment had no effect on total starter intake, but there was a treatment by age interaction for FE, with greater FE for β-glucan-supplemented calves in wk 3 and 5 of age. There was only a tendency for average daily gain to be greater in supplemented calves than in control calves for the duration of the study. Furthermore, control calves had 14.66 [95% confidence interval (95% CI): 9.87–21.77] times greater odds of having a diarrheal bout than β-glucan-supplemented calves. Control calves had 12.70 (95% CI: 8.82–18.28) times greater odds of having an additional day with an abnormal fecal score compared with β-glucan-supplemented calves, suggesting that supplementation ameliorated diarrhea severity. We found no association of treatment with concentrations of serum total protein, albumin, creatinine, or glucose during the preweaning period. Our findings suggest that dietary supplementation of 2 g/d of algae β-glucans to milk replacer improved fecal status and may affect growth, as evidenced by a higher weaning weight, compared with control calves. Future studies should explore the effect of algae β-glucans on lower-gut physiology and digestibility in dairy calves.  相似文献

The nutrient status and composition in mediums have a significant effect on yeast metabolism and phenotypic characteristics in wine fermentation. In this study, the effects of three frequently used mediums, including synthetic grape juice (SGJ), grape juice without grape pericarp and seeds (GJ) and grape must with grape pericarp and seeds (GMPS), on yeast fermentation behaviour and aroma compounds produced by pure and mixed culture of Saccharomyces cerevisiae T73 with Torulaspora delbrueckii TD20 were investigated after alcoholic fermentation. The results showed that high fermentation activities and cell population were always found in GJ medium irrespective of inoculated approach. More esters and higher alcohols were produced in GMPS medium fermented by pure S. cerevisiae, while SGJ medium had increased levels of fatty acids. Consistent with previous literatures, the mixed fermentation of T. delbrueckii and S. cerevisiae produced more acetate esters and fatty acids than the pure culture of S. cerevisiae, while this enological trait was only found in SGJ and GJ, not in GMPS. Our results highlighted that more attention should be paid to the fermentation medium when evaluating the enological and aromatic properties of selected yeasts used in industrial winemaking. In this regard, the combined use of GJ and GMPS medium might be a suitable choice.  相似文献

Three experiments were conducted to examine the effects of dietary vitamin A supplementation on performance and carcass parameters in Limosin × Luxi crossbreed finishing steers fed a wheat straw-based diet. Sixteen 12-month old (301 ± 22 kg) steers, 16 12-month old (309 ± 15 kg) steers and 16 24-month old (411 ± 20 kg) steers were used in experiment 1 for 6 months feeding period, in experiment 2 for three months feeding period and in experiment 3 for three months feeding period, respectively. Sixteen steers of each experiment were randomly divided into the four groups of four animals. Treatments consisted of four vitamin A supplementation levels (0, 1100, 2200 and 4400IU/kg DM). The growth rate was affected by dietary vitamin A level in experiment 1 and 2, revealing that the suitable amount of vitamin A supplementation increased the growth rate; excessive vitamin A in the ration decreased the growth rate of 12-month-old finishing steers. The marbling deposition decreased with the increment of vitamin A supplementation level, but possibly associated with vitamin A supplementing duration. Furthermore, the suitable dietary vitamin A level probably decreased lipid and pigment oxidation, and increased the tenderness of beef meat. Vitamin A supplementation had no significant effect on chemical composition of gluteus medius muscle and longissimus dorsi muscle.  相似文献

Storage water activity (aw) affects the stability of freeze-dried food. The sugar crystallization and storage stability of β-carotene in freeze-dried mango powder was investigated following storage under various relative vapor pressures (11.3-80.9%). Sugar crystallization was revealed by the loss of sorbed water in the water sorption experiment. However, the sorption isotherms showed unclear divergence between the experimental and predicted values. X-ray powder diffraction and scanning electron microscopy were used to confirm the crystallization. The results showed that increased aw resulted in higher sugar crystallization. The loss of β-carotene was monitored by high-performance liquid chromatography with a diode-array detector and fitted to a first-order reaction. The rate constant decreased as aw increased up to 0.43, due to the collapse of the mango powder. An increase in the rate constant above this value of aw coincided with pronounced sugar crystallization. Choosing the appropriate value of aw for storage can prevent sugar crystallization and enhance β-carotene stability in freeze-dried fruit powder.  相似文献

The objective of our experiment was to evaluate the effects of prill size of a palmitic acid–enriched fatty acid supplement (PA; 85% C16:0) on feed intake, nutrient digestibility, and production responses of dairy cows. Twenty-four primiparous and multiparous Holstein cows were assigned based on parity and production level to replicated 4 × 4 Latin squares balanced for carryover effects with 21-d periods. Treatments were a control diet (no added PA), or 2.0% PA added as a small prill size (PA-SM; 284 ± 12.4 µm), a medium prill size (PA-MD; 325 ± 14.7 µm), or a large prill size (PA-LG; 600 ± 17.4 µm) supplement. Overall, PA treatments increased milk fat content (4.25 vs. 3.99%), milk fat yield (1.48 vs. 1.39 kg/d), 3.5% fat-corrected milk (39.2 vs. 37.7 kg/d), and improved feed efficiency (fat-corrected milk:dry matter intake; 1.51 vs. 1.42) compared with control. Compared with control, PA treatments did not affect dry matter intake, body weight, body condition score, or yields of milk, protein, and lactose. The PA treatments increased neutral detergent fiber digestibility (44.8 vs. 42.4%) and reduced the digestibility of 16-carbon fatty acids (72.3 vs. 79.1%) and total fatty acids (76.6 vs. 80.3%). Compared with control, PA treatments reduced the contents of de novo synthesized milk fatty acids (23.0 vs. 25.8 g/100 g of fatty acids) and preformed milk fatty acids (36.3 vs. 39.1 g/100 g of fatty acids), but did not affect their yields. In contrast, PA treatments increased the content (40.8 vs. 35.1 g/100 g of fatty acids) and yield (570 vs. 436 g/d) of 16-carbon milk fatty acids compared with control. The PA prill size had no effect on dry matter intake, yield of milk and milk components, or feed efficiency. However, PA-LG tended to increase milk fat content compared with PA-SM (4.28 vs. 4.22%), and it increased 16-carbon fatty acid digestibility compared with PA-MD (74.2 vs. 71.0%) and PA-SM (74.2 vs. 71.7%). Additionally, PA-LG increased total fatty acid digestibility compared with PA-MD (78.1 vs. 75.6%) and PA-SM (78.1 vs. 76.0%). Results demonstrate that PA increased milk fat content and yield, and feed efficiency. Reducing prill size decreased fatty acid digestibility, but it had no effect on animal performance under the dietary conditions and prill sizes evaluated.  相似文献

Pasture availability in early spring can be limited due to climatic effects on grass production, increasing the likelihood of feed deficits in early lactation of spring-calving pasture-based systems. We hypothesized that restricting pasture allowance (PA) when animals are at peak milk production will have more negative implications on milk production compared with restricting animals before this period. A total of 105 cows were assigned to 1 of 7 grazing treatments from March 14 to October 31, 2016 (33 wk). The control treatment was offered a PA to achieve a postgrazing sward height > 3.5 cm and mean pasture allowance of 15.5 kg of dry matter per cow. The remaining treatments were offered a PA representing 60% of that offered to the control for a duration of 2 or 6 wk from March 14 (mid-March; MMx2 and MMx6), March 28 (end of March; EMx2 and EMx6), or April 11 (mid-April; MAx2 and MAx6). Within grazing treatment, animals were also assigned to 1 of 2 calving dates (early and late) based on days in milk (DIM) on March 14. Early calved (EC) cows were ≥36 DIM, while late calved (LC) were ≤35 DIM. Restricting PA for 2 and 6 wk reduced daily milk yield (?1.6 and ?2.2 kg/cow, respectively), cumulative milk protein yield (?4.0 and ?6.3 kg/cow, respectively), and cumulative milk solids yield (?5.8 and ?9.5 kg/cow, respectively) in the first 10 wk of the experiment. Daily milk yield was similar across the treatments at the end of the 33-wk period (16.8 kg/cow, average of all treatments), as was daily milk solids yield (1.40 kg/cow). Cows in the EC group produced less milk over the first 10 wk of the experiment (20.0 kg/cow per day) compared with the LC animals (22.1 kg/cow per day). However, body weight was greater (+15 kg/cow) in the EC animals compared with the LC, while body condition score was similar (2.85). This outcome indicates that animals that are restricted later in early lactation (circa onset of peak milk production) partition a greater proportion of available energy to maintenance, resulting in greater losses in milk production. These data indicate that despite the immediate reduction in milk production, restricting intake of grazing cows to 80% of that required to achieve spring grazing targets for postgrazing sward height for up to 6 wk may be used as a method of managing short-term pasture deficits on farm with minimal effects on total lactation performance.  相似文献

The pre-pressing performance of urea formaldehyde resins has a significant impact on plywood production efficiency. This paper reports on the effects of the time elapsed after the addition of the hardener (“resin open time”) and of a melamine addition on the cold pre-pressing performance of UF resins. The changes in pH and viscosity, the thermal behaviour, and the structural composition as well as the performance during cold pre-pressing of veneers were investigated. Cold pre-pressing performance was measured by testing pre-pressed three-ply plywood stacks. The results showed that the cold pre-pressing performance is enhanced with longer time after preparation of the resin mix before application onto the veneers and also by longer pre-pressing times. All plywood stacks with at least 2 h pre-pressing time reached the so-called G1 grade (where the re-opened area of the cold pre-pressed plywood stack was 0), which meets the industrially accepted requirements for plywood fabrication. Further, the addition of melamine improved the cold pre-pressing behaviour compared to the investigated UF resin without melamine, showing an earlier start of the development of the pre-pressing shear strength and higher G grades at the various cold pressing times. There are two main reasons for the enhanced cold pre-pressing performance of the resin under the investigated conditions: (1) influence of the “resin open time”: a certain further condensation of the resin after preparing the glue mix (addition of hardener) leading to increased molar mass and viscosity ultimately transforming the resin from liquid-state to gel-state; (2) a higher methylol content in the resin after incorporation of melamine into the resin, which enhanced the formation of hydrogen bonds between the resin and the wood surface. These conclusions represent a feasible approach for the improvement of the cold pre-pressing properties and thus the practical applicability of UF resins with low molar ratios.  相似文献

The trial was carried out to investigate the effects of adding to the diet of rabbits vitamin E (40; 300; 500 ppm) and C (0; 500 ppm), on vitamin E deposition in the muscles and organs, on the oxidative stability of muscular lipids, and on various meat quality characteristics. The α-tocopherol content in muscles and organs was roughly doubled by feeding the highest levels of vitamin E; it was also increased by giving 500 ppm of vitamin C, but only in those muscles of rabbits receiving 40 ppm of vitamin E. The α-tocopherol content in tissues was negatively correlated with TBARS values of the longissimus dorsi (LD) at days 6 and 8 post mortem (p.m.). Five hundred parts per million (ppm) of vitamin C increased lipid stability of the LD at both 6 and 8 days p.m., though its effect was significant only with 40 ppm of vitamin E. Moreover, 500 ppm of vitamin C resulted in the lowest L(*) and highest pH values at all p.m. times, when the dietary vitamin E was equal to 40 ppm, and in the highest L(*) and lowest pH values when the vitamin E was equal to 300 ppm. Conversely, weight losses of the LD were the lowest, at days 6 and 8 p.m., in the group fed the highest levels of both vitamins.  相似文献

Feeding pregnant cows rumen-protected choline (RPC) may have the potential to affect the growth and health of offspring, but little is known about the optimal dose, or the potential mechanisms of action. The objectives of this experiment were to 1) determine if increasing RPC supplementation during late gestation in multiparous Holstein cows would improve calf growth and 2) determine if maternal choline supplementation alters global DNA methylation patterns. Pregnant multiparous Holstein cows (n = 116) were randomly assigned to diets targeting 0g choline ion (0.0 ± 0.000 choline ion, %DM, control; CTL), 15g of choline ion (recommended dose; RD) from an established RPC product (0.10 ± 0.004 choline ion, %DM, RPC1RD; ReaShure, Balchem Corp.; positive control), or 15g (0.09 ± 0.004 choline ion, %DM, RPC2RD) or 22g (0.13 ± 0.005 choline ion, %DM, high dose; RPC2HD) of choline ion from a concentrated RPC prototype (RPC2; Balchem Corp.). Treatments were mixed into a total mixed ration and cows had ad libitum access via a roughage intake control system (Hokofarm Group, Marknesse, Netherlands). All female Holstein (n = 49) and Holstein × Angus calves (male, n = 18; female, n = 30) were enrolled and fed colostrum from a cow within the same treatment. Holstein calves and Holstein × Angus calves were fed an accelerated and traditional milk replacer program, respectively, and offered ad libitum access to calf starter. Jugular vein blood samples were collected, and body weight was measured at 7, 14, 28, 42, and 56 d of age. Categorical treatment and continuous effects of actual prepartum maternal choline ion intake were analyzed using mixed effect models. An interaction of treatment with sex, nested within breed, resulted in any choline treatment increasing the proportion of methylated whole blood DNA in male, but not female calves. Although 37% of Holstein calves across all treatments experienced abomasal bloat, no evidence for differences in health measurements (signs of respiratory disease and fecal consistency) were observed across treatments. During the first 2 wk of life in Holstein calves, RPC2HD tended to increase average daily gain (ADG) and feed efficiency (FE) compared with CTL and increasing maternal choline ion intake linearly increased ADG and FE. Maternal choline supplementation increased plasma glucose compared with CTL, while increasing serum insulin-like growth factor-1 and decreasing serum lipopolysaccharide binding protein at 7 d of age in Holstein calves. In Holstein × Angus calves, the effect of treatment on ADG tended to interact with sex: in males, RPC2HD increased ADG after 2 wk of life compared with CTL, without evidence of a treatment effect in female calves. Increasing maternal choline ion intake linearly increased ADG after 2 wk of age in male Holstein × Angus calves, while quadratically increasing FE in both sexes. Altered global DNA methylation patterns in male Holstein × Angus calves, and changes in blood metabolites in Holstein calves, provide 2 potential mechanisms for observed improvements in calf growth. Continuous treatment models demonstrated that the effects of maternal choline supplementation are sensitive to the amount of maternal choline ion intake, with greater benefit to calves observed at higher maternal intakes.  相似文献

Seven batches of Arzúa-Ulloa, a short-ripened soft cow's milk cheese produced in Galicia (NW Spain), were prepared from pasteurized milk. Two control batches of cheese (CB) were made with an acid-aromatic starter containing Lactococcus lactis subsp. lactis and Lactococcus lactis subsp. lactis var. diacetylactis, isolated from raw-milk Arzúa-Ulloa cheeses. Five batches of cheese (LB) were made with the acid-aromatic starter plus one of five strains of mesophilic homofermentative Lactobacillus spp.: four of them isolated from raw-milk Arzúa-Ulloa cheese (characterized in previous works) and the remaining was a commercial Lactobacillus strain. Higher counts of mesophilic viable bacteria, lactic acid bacteria and citrate-fermenting bacteria were found on days 1 or 15 of ripening, while higher counts of lactobacilli were found on day 30 of ripening. On day 1 of ripening the highest diacetyl-acetoin content was noted in the CB, but after day 15 the diacetyl-acetoin content was similar or higher in three of the five LB. The mean degradation of beta-casein in CB was higher than in LB, while the degradation of alpha(s1)-casein was higher in LB. The mean contents of nitrogen-soluble fractions were slightly higher in the LB than in the CB. Volatile free fatty acid (VFFA) contents were, in general, greater in LB than in CB and maximum amounts were determined on day 15 of maturation. Sensorial analysis indicated a more acid taste was in LB, while bitter and astringent tastes were more intense in CB. A positive correlation was found between beta-casein degradation and bitter taste. Yogurt and butter aromas were more intense in CB and in two of the five LB. Firmness was lower in LB and a negative correlation was found between this parameter and alpha(s1)-casein degradation. Crumbliness showed a positive correlation with beta-casein degradation. The use of the Lactobacillus strains assessed in this study is recommended for Arzúa-Ulloa cheese manufacture, in order to enhance the desirable characteristics of this cheese variety, i.e., a soft texture due to alpha(s1)-casein proteolysis but without the bitter taste due to beta-casein degradation and a spicy and slightly rancid aroma and taste.  相似文献

The effects of γ-polyglutamic aid (γ-PGA) on the gelling properties and non-covalent interactions of fish gelatin were investigated. The gel strength and melting temperature of fish gelatin gradually increased, with increasing γ-PGA concentration, although there was no significant change when the γ-PGA concentration was greater than 0.04%. As the concentration of γ-PGA increased, the electrostatic interaction of fish gelatin increased and the hydrophobic interaction between gelatin molecules decreased. The fish gelatin system was comprised of γ-PGA concentrations of 0.04 and 0.06% showing a strong hydrogen bond. When the γ-PGA concentration increased from 0 to 0.04%, more phenolic hydroxyl groups in the tyrosine residue tended to form hydrogen bonds with the protein. However, an additional increase in γ-PGA concentration to 0.1% led to enhanced hydrogen bonding with water molecules. The results of this study showed that hydrogen bonds played an important role in improving the gelling properties of gelatin by γ-PGA.  相似文献

In present work, phase solubility analysis were conducted for studying the solubility of terpineol, a natural flavor compound with antifungal and disinfectant action, in 2-hydroxypropyl-β-cyclodextrin (HBCD) and in β-cyclodextrin (BCD) aqueous solutions and for calculating the thermodynamic parameters involved in the complex formation. Physical properties of the freeze-dried complexes were also evaluated as a function of water content and storage time. The solubility of terpineol increased linearly as the concentration of BCD or HBCD was increased, confirming the 1:1 stoichiometry of the complex. The negative value of the enthalpy and of the Gibbs energy demonstrated that the process is exothermic and spontaneous. Since complexation gives more ordered systems, the negative value obtained for the entropy change confirms the encapsulation of terpineol both in HBCD and BCD. The water adsorption data and glass transition values obtained revealed that complexation involves the displacement of water molecules from the cavity of the CDs by the guest compound that is being included.  相似文献
