This study compared the influence of dietary fat sources on meat quality, fatty acid composition and sensory attributes in pork. The experiment was conducted with 43 entire male pigs (Pietrain×(Landrace×Large White)) which were fed a basal diet without added fat (control diet) or supplemented with different sources of fat: animal fat (1%, AF1; 3%, AF3), soyabean oil (1%, SBO1) and calcium soaps of palm oil (1%, CaSPO1). Dietary fat supplementation did not significantly affect ultimate pH, colour, Warner-Bratzler shear force values, sensory attributes or SFA. Pigs fed SBO1 had the lowest proportion of MUFA and the highest of PUFA. In conclusion, these dietary fat sources could be recommended for inclusion in diets, at these levels, with no detrimental effect on eating quality. Despite finding no significant differences, the PCA afforded a comprehensive view of the predominating attributes of pork from animals fed the different fats. 相似文献

This study was undertaken to assess the effect of various levels of intramuscular fat (IMF: <1%, 1.0-1.49%, 1.5-1.99%, 2.0-2.49% and 2.5-3.0%) produced from Canadian pigs on the eating attributes of pork loin. Sensory and instrumental eating attributes were determined on 85 pork loins (m. longissimus lumborum and thoracis). The following correlations were found between IMF and eating attributes: softness, -0.32 (P<0.01); initial tenderness, -0.31 (P<0.01); chewiness, -0.27 (P<0.01); rate of breakdown, -0.20 (P=0.07); juiciness, 0.17 (P>0.05); flavour intensity, 0.24 (P=0.02); off-flavour, 0.13 (P>0.05); mouth coating, 0.13 (P>0.05); amount of perceptible connective tissue, -0.02 (P>0.05), and instrumental tenderness (Warner-Bratzler shear force), -0.41 (P<0.001). As tenderness is considered the most important attribute that determines overall acceptance of pork, the threshold level of IMF for ensuring a positive eating experience was identified as a function of the attributes describing tenderness. Increasing the level of IMF past 1.5% did not change (P<0.05) the panelists scores for softness and initial tenderness. Average shear force, an instrumental measure of tenderness, was higher (P<0.05) at less than 1% IMF but did not change past 1.0% IMF (P>0.05). It is proposed that the threshold level of IMF that will ensure a pleasing eating experience is 1.5% IMF. 相似文献

研究肌内脂肪(IMF)含量与肉质以及脂肪酸含量和组成比例之间的关系。以北京黑猪背最长肌(n=20)为实验材料,测定肌内脂肪含量、肉质以及脂肪酸含量和组成。结果显示,肌内脂肪含量与滴水损失呈显著正相关(p<0.05),与蒸煮损失、剪切力、肉色的相关性不显著(p>0.05)。随着肌内脂肪含量升高,除长链多不饱和脂肪酸(C20:3n6、C20:4n6)以外的大多数脂肪酸含量增加,相对比例也上升;多不饱和脂肪酸的含量增加,但是相对比例下降;长链多不饱和脂肪酸的含量和相对比例都降低。随着肌内脂肪含量的升高,饱和脂肪酸(SFA)和单不饱和脂肪酸(MUFA)的含量升高,回归方程斜率分别为197.3和248.31,多不饱和脂肪酸(PUFA)增加的幅度不大,回归方程的斜率为11.43。结果提示:肌内脂肪含量较低时(本实验平均值2.86%),对肉质的影响不显著。随着肌内脂肪含量升高,总脂肪酸含量(TFA)增加,主要归因于SFA和MUFA含量的增加。PUFA的含量相对稳定,受肌内脂肪含量变化的影响较小。 相似文献

Twelve gilts from four breeds were reared from 30 to 65 kg liveweight and assessed for carcass, muscle and eating quality. The breeds were Large White (LW), Gloucester Old Spot (GOS) Crossbreed 1 (C1) and Crossbreed 2 (C2). The latter two were commercial products from breeding companies. There were small differences in quality between the breeds. C1 had about 2% more lean than the others. GOS had shorter carcasses, a higher proportion of total lean in the fore limb and thicker backfat but were not fatter overall. C1 and C2 had lower pH1 measurements than LW or GOS but similar colour and drip loss measurements in M. longissimus lumborum. There were positive but weak relationships between pH1 and percentage fat (r= +0.1 to +0.3). C1 had the more tender meat. When all breeds were pooled, about 9 % of the variation in toughness was accounted for by variation in percentage lean or fat. There was no suggestion that the pure breeds or fatter pigs had meat of better eating quality. 相似文献

Effect of fat level and partial replacement of pork backfat with olive oil on processing and quality characteristics of fermented sausages 总被引:1,自引:0,他引:1
Six formulations of dry fermented sausages were produced in three replications with three initial fat levels (30, 20 and 10%) and two levels (0 and 20%) of pork backfat replacing olive oil. After 4 weeks of fermentation and ripening the fat content of the treatments with 30, 20 and 10% fat level ranged from 38.86 to 43.60%, 25.56 to 26.86% and 19.01 to 20.14%, respectively. Fat level affected (P<0.05) the weight losses, the chemical composition, the Gram −ve bacterial count, the lightness, the texture and the appearance of fermented sausages. Replacing 20% of pork backfat by olive oil affected (P<0.05) the lightness and yellowness of sausages. Fat-reduced sausages without olive oil and low-fat sausages with olive oil had the highest score for odour and taste. However, the appearance of fat-reduced sausages was just acceptable while that of low-fat sausages was unacceptable, because the surface was intensively wrinkled and case hardening had developed. Further research is needed to improve the appearance of these sausages. 相似文献

A 42-day study was conducted to evaluate the effect of genotype: terminal sire line Duroc × F1 (DC×F1); terminal sire line Embrapa MS-115 × F1 (MS-115×F1); and MS-115 × Moura (MS-115×MO) and three dietary oil sources: soybean; canola; and canola + flax, on performance, carcass traits, pork quality, and fatty acid composition. Genotype affected the technological quality of pork and fatty acid profile. MS-115-sired pigs had better meat color and Duroc-sired pigs had higher intramuscular fat content, more saturated fat and better omega-6/omega-3 ratio. Moura breed influenced positively meat tenderness and intramuscular fat. Diet did not affect the technological quality of the meat. Canola or canola + flax oil diet supplementations increased monounsaturated and C18:3 and decreased C18:2 fatty acids, reducing the omega-6/omega-3 ratio. The best omega-6/omega-3 ratio was obtained through supplementation with canola + flax. 相似文献

The present study is part of a project which aims to examine the influence of intramuscular fat (IMF) content on the sensory attributes and consumer acceptability of pork. An experiment was conducted to evaluate the influence of IMF level in muscle semimembranosus (SM) on the composition of its lipid fraction and on the sensory qualities and consumer acceptability of cured cooked hams. Thirty‐two carcasses were selected 24 h after slaughter from 125 Duroc × Landrace castrated male pigs showing large variability in SM muscle IMF content and were assigned to four IMF groups: ≤2%, 2–3%, 3–4% and >4%. Cured cooked ham slices were evaluated by a trained expert panel of 12 members and by a group of 56 consumers. Results from lipid analyses indicate that (i) an increase in IMF content was almost entirely reflected by an increase in the triglyceride content of the muscle and (ii) higher IMF levels were associated with higher free fatty acid and monoglyceride and lower cholesterol levels. The sensory evaluation of marbling significantly increased with IMF level, whereas other sensory qualities were unaffected. High IMF levels significantly depreciated the consumer perception of fat, aspect, taste and smell of ham slices. Overall, slices with the highest IMF levels got the least favourable rating by consumers. The present study indicates that increased IMF levels in muscle semimembranosus do not have significant effects on the sensory attributes of cured cooked hams, apart from the perception of marbling. However, high IMF levels have detrimental effects on the acceptability by consumers. © 2000 Society of Chemical Industry 相似文献

The possibility of using IMF content/MS at the last rib to predict the corresponding fat attribute of loin chops at the 2nd last to the 7th last thoracic ribs and the mean of IMF content/MS of the whole loin joint was investigated. Linear and quadratic regression, cross‐validation analysis and analysis of variance were employed for the study. For either IMF or MS, linear and quadratic regression models had similar performance. The best mean correlation coefficients of calibration (Rc) of 0.91 and cross‐validation (Rv) of 0.88 were obtained for linear regression model of IMF content of the whole loin, while Rc of 0.90 and Rv of 0.88 were obtained for quadratic regression model of MS of the whole loin. The results indicated that IMF content and MS at the last rib had great potential for the prediction of IMF content and MS at the other ribs. 相似文献

Seventy‐two entire male pigs (40.4 ± 1.0 kg) were used to study the effects of increasing crude fibre (CF) level in the diet and maintaining the digestible energy (DE) content of the diet by increasing dietary fat inclusion on pig performance and nutrient digestibility in a 3 × 2 factorial experiment. Productive performance and nutrient digestibility were determined in individually fed pigs offered expander‐processed pelleted diets ad libitum containing three levels of CF (50, 60 and 70 g kg?1) and two levels of fat supplementation (25 and 50 g kg?1) until slaughter at 100 kg. All diets were expander processed at 105 °C for 5 s at 35 bar pressure having been previously conditioned at 85 °C for 5 s. All diets were formulated to have similar concentrations of digestible energy (13.5 MJ kg?1) and lysine (10 g kg?1) and the fat source was a 60:40 blend of tallow and palm oil. The increase in dietary CF level decreased (P < 0.05) the apparent digestibility of crude protein, organic matter (OM) and energy, while the inclusion of 50 g kg?1 fat decreased (P < 0.01) OM and energy digestibility. The inclusion of 50 g kg?1 fat in the diet increased (P < 0.01) ether extract digestibility at the 50 and 60 g kg?1 CF levels; however, fat inclusion had no effect at the 70 g kg?1 CF level. There was no CF × fat interaction in any growth criteria. The inclusion of 50 g kg?1 fat in the diet significantly reduced (P < 0.05) feed intake (2.28 versus 2.43 kg day?1, SEM 0.039), average daily gain (ADG; 0.877 versus 0.927 kg day?1, SEM 0.017) and DE conversion ratio (36.1 versus 35.0 MJ kg?1, SEM 0.40). The increase in dietary CF level decreased (linear, P < 0.05) feed intake (2.45 versus 2.32 versus 2.29 kg day?1, SEM 0.040), ADG (0.940 versus 0.896 versus 0.872 kg day?1, SEM 0.021) and kill‐out proportion (740 versus 741 versus 730 g kg?1, SEM 3.6). Hepatic lipogenic enzyme expression in pigs is affected by selection for decreased backfat thickness at constant intramuscular fat content 总被引:1,自引:0,他引:1
This study investigated (i) whether genetic selection for decreased backfat thickness at constant intramuscular fat (IMF) affects the expression of lipogenic enzymes in pig liver and (ii) whether expression of the hepatic lipogenic enzymes is related to subcutaneous fat and IMF fatty acid composition. The enzymes investigated were fatty acid synthase (FAS), stearoyl-CoA desaturase and Δ6-desaturase (Δ6d). Experiments were conducted on 30 barrows (15 controls and 15 selected). Selected pigs had lower backfat thickness, which was accompanied by a reduced expression of the hepatic FAS and Δ6d when compared to control pigs. There was a trend towards a positive relationship between FAS and Δ6d protein expression and saturated and polyunsaturated fatty acids content respectively, in subcutaneous fat but not in muscle. It was concluded that selection against backfat thickness is associated with changes in expression of the hepatic FAS and Δ6d proteins. The changes in protein expression did not influence significantly the tissue fatty acid composition under these conditions. 相似文献

The purpose of this study was to compare parameters associated with pork quality, muscle fiber, and eating quality among various breeds, and to examine if differences in eating quality were associated to pork quality and muscle fiber characteristics. For carcass and pork quality, although there were significant differences among breeds, the values of parameters in all pigs were assigned a normal quality class, a likely outcome of the similarity in the area percentage of type I and IIB fibers. For eating quality, pork loins from Berkshire pigs were more tender and full of pork flavor than Landrace and Yorkshire pigs. Except juiciness and mouth coating, over 20% of the variability in the eating quality parameters can be explained by pork quality traits and muscle fiber characteristics using multiple regression analysis. Furthermore, differences in muscle pH24 h, cooking loss, shear force, and NPPC marbling score could explain a large proportion of variation in eating quality parameters associated with the texture of pork. 相似文献

In the last decade studies with the specific objective of improving the sensory quality of pork have come to the forefront of meat research, likely a result of consumer complaints of blandness levelled against modern lean meat and the frequent reference to the more strongly flavored meat that was available years ago. Regardless of the lack of scientific evidence to substantiate or refute these claims, the consumer perception of deteriorated quality is real and presents a challenge for the pork industry. Hence, this review has been undertaken with the aim of providing insight into potential sources of amelioration of the eating quality of fresh pork. Existing works are collated, encompassing animal effects, such as, species, breed, muscle type, fat, and ultimate pH, as well as environmental influences, including pre-slaughter conditions of and housing and exercise, and post-slaughter parameters, such as, electrical stimulation, chilling, and cooking. 相似文献

Influence of dietary oils and protein level on pork quality. 1. Effects on muscle fatty acid composition, carcass, meat and eating quality 总被引:4,自引:0,他引:4
This study evaluated the effects of three dietary oils - palm kernel (PKO), palm (PO) and soyabean (SBO) - and two protein levels - high (HP) and low (LP) in a 3×2 factorial design involving 60 pigs on growth performance, muscle fatty acid composition and content, carcass, meat and eating qualities. Oil type did not have a significant effect on growth and carcass quality. PKO significantly reduced the polyunsaturated (PUFA) to saturated (SFA) fatty acid (P:S) ratio in longissimus muscle (P<0.001). PKO increased the concentrations of lauric (12:0), myristic (14:0), palmitic (16:0) and stearic (18:0) fatty acids and decreased linoleic acid (18:2). The LP diet increased intramuscular fat (IMF) from 1.7g/100g muscle in HP to 2.9g/100g (P<0.001), increased tenderness by 0.6 units (P<0.01) and juiciness by 0.5 units (P<0.01) on the 1-8 scale, but at the expense of lower daily weight gain (P<0.01), lower feed conversion efficiency (P<0.01), reduced P:S ratio (P<0.001) and increased lipid oxidation (P<0.01). The results suggest that PKO and PO could be used in tropical developing countries as cheaper alternatives to SBO for the production of good quality and healthy pork, but their limits of inclusion need to be determined. 相似文献

The aim of this study was to evaluate the use of near infrared reflectance spectroscopy (NIRS) for predicting fatty acid content in intramuscular fat to be applied in rabbit selection programs. One hundred and forty three freeze-dried Longissimus muscles (LM) were scanned by NIRS (1100-2498nm). Modified Partial Least Squares models were obtained. Equations were selected according to standard error of cross validation (SECV) and coefficient of determination of cross validation (R(2)(CV)). Residual predictive deviation of cross validation (RPD(CV)) was also studied. Accurate predictions were reported for IMF (R(2)(CV)=0.98; RPD(CV)=7.57), saturated (R(2)(CV)=0.96; RPD(CV)=5.08) and monounsaturated FA content (R(2)(CV)=0.98; RPD(CV)=6.68). Lower accuracy was obtained for polyunsaturated FA content (R(2)(CV)=0.83; RPD(CV)=2.40). Several individual FA were accurately predicted such as C14:0, C15:0, C16:0, C16:1, C17:0, C18:0, C18:1 n-9, C18:2 n-6 and C18:3 n-3 (R(2)(CV)=0.91-0.97; RPD(CV)>3). The present paper reviews the available information on the eating quality of pork from the perspective of production systems considered at farm level. Among the specifications differentiating systems having a claim on eating quality, breed, feeding strategy, rearing conditions and slaughter age/weight of the pigs may influence pork eating quality. Specific genetic X environment interactions such as the use of slow growing-fat local breeds reared in extensive conditions, as encountered in local Mediterranean systems, lead to high eating quality of pork and pork products Organic production per se has little influence on the eating quality of pork. Welfare-oriented specifications such as enriched living environment, outdoor access or free-range rearing have limited consequences on pork quality. Because boar taint negatively impacts the consumer acceptability of pork, a total ban on castration to improve animal welfare would be a real challenge for the management of pork quality in those countries where entire male pig production is not currently common. 相似文献

A study was conducted to evaluate the influence of breed and sex of animals on tenderness of pork. For evaluation, carcasses
of pure breed barrows and gilts of Large White, Czech pig meat, Landrace and Duroc were used. For laboratory investigations,
the samples of musculus longissimus lumborum et thoracis (20 mm thick) were taken from the same place, at the first cruciate vertebra 48 h post mortem. Seven days post mortem, the
texture of heat-processed meat was measured objectively by the shear method on Instron equipped with Warner–Bratzler shear
device. Meat tenderness and juiciness were also evaluated sensorially. It was observed that the tenderness of cooked meat
is influenced by breed (the tenderest meat was from Duroc breed). The sex of animals has significant effect on meat tenderness
too. At the same time, the effects of pH 45 minutes (pH45) and 24 hours (pH24) post mortem and intramuscular fat content on meat tenderness were evaluated. Correlations were found between shear force
(tenderness) and intramuscular fat content and also between shear force and pH value 45 min post mortem. The shear force decreased
with increasing intramuscular fat content and with increasing pH45 value. Sensory evaluation of tenderness confirmed the objectively measured data. 相似文献

Fifty-seven York-crossed barrows and gilts were fed either a grain and soy diet (CONTROL with 28% C18:1) or a similar diet enriched with oleic acid (HO with 43% C18:1, Greedy-Grass OLIVA®). There were no interactions between dietary treatment and gender and there were no differences in intramuscular and subcutaneous fatty acid composition between sexes (P > 0.05). Similar primal cut yields, composition of major primal cuts, and carcass and meat quality characteristics were found for HO and CONTROL fed pigs. Apart from a few significant but small differences for some fatty acids, intramuscular fatty acid composition was similar for both dietary treatments. Subcutaneous fat from HO fed pigs had a 6.9% increase in total monounsaturated fatty acids and a 9.3% reduction in total polyunsaturated fatty acids (P < 0.05) compared with CONTROL fed animals, without adversely affecting carcass quality and producing suitable hams for processing by the meat industry. 相似文献

Pigs of Belgian Landrace (B), Duroc (D), Hampshire (H), and Pietrain (P) breeds were slaughtered at 90, 110 and 130 kg body weight (BW) and the carcass chemical composition and fatty acid profiles of intramuscular fat of loin and backfat were determined. The carcass of Pietrain pigs had a higher concentration of protein and less fat than of B, D and H breeds. In tissues, the PUFA:SFA ratio was lower in the heavier (130 kg BW) than in lighter pigs (90 and 110 kg BW). This feature was higher in P pigs compared with the other breeds. The backfat had a higher concentration of PUFA:SFA ratio than intramuscular fat. The PUFA n− 6:n− 3 ratio was not affected by the breed and weight of pigs, but it was lower in backfat than in longissimus muscle fat. The protein concentration in the carcass was positively related to PUFA and negatively to SFA concentration in tissues. 相似文献

Rapeseed and sunflower oil were used to replace pork backfat in UK-style sausages by incorporating the oils as pre-formed emulsions. Replacing the pork backfat emulsion with rapeseed emulsion at total fat content of about 12%, reduced total saturated fatty acid (SFA) composition from 38% to 14% (4.5 to 1.8 g/100 g), increased monounsaturated fatty acid (MUFA) composition from 45% to 59% and increased polyunsaturated fatty acid (PUFA) composition from 15% to 25%. Partial replacement of pork backfat with rapeseed at a fat content of about 20% reduced SFA from 38% to 24% (7.2 to 4.8 g/100 g). There were no significant differences in eating quality and overall liking other than slight differences in the attributes ‘firmness’ and ‘particle size’. Improvement in the fatty acid composition was achieved without adversely affecting colour shelf life or lipid oxidation. The study suggests that a substantial reduction in SFA can be achieved by incorporating ‘healthy’ oils in UK-style sausages without adversely affecting eating quality or shelf life. 相似文献
