Salmonella Typhimurium (ST) is one of the leading causes of foodborne diseases in fresh produce, such as lettuce. Despite this, the role of the possible interactions between lettuce indigenous microorganisms and ST on their ability to form biofilm on lettuce and subsequently on the sensitivity of their sessile cells to ultraviolet C (UV-C) irradiation, remains relatively unexplored. Here, the interaction of a mixed-culture of ST and cultivable indigenous microorganisms (CIMs) was examined, as well as the efficacy of UV-C. Initially, the CIMs were isolated and cultured with ST at 15 °C either planktonically or left to form biofilms on stainless steel (SS) and lettuce leaves. Microbial growth, biofilm formation, and survival following UV-C treatment were monitored using traditional plate count methods while biofilm formation, production of extracellular polymeric substance (EPS), and stomatal colonization were also observed by field emission scanning electron microscopy (FESEM). Internalization strength, color, and texture were analyzed by standard methods. Results revealed that the mixed-culture of ST and CIMs presented significantly (p < 0.05) decreased biofilm formation on lettuce leaves compared to mono-cultures (i.e. ST or CIMs alone), which indicated competitive interaction between them, while no interactions were observed for biofilms on SS and for the planktonic cultures. It was also demonstrated that a mixed-culture biofilm on lettuce presented significantly higher resistance (p < 0.05) to UV-C treatment compared to mono-culture biofilms, but such an effect was not observed for biofilms formed on SS and for the planktonic cultures. The Weibull model fitted well to microbial inactivation curves with R2 values that ranged from 0.90 to 0.97. Regarding the mixed-culture conditions, a UV-C fluency of 35 mJ/cm2 was required to achieve a 5.0 log CFU/mL or cm2 reduction in planktonic and biofilms on the SS for the mixed-culture, while 360 mJ/cm2 was required to reduce biofilm cell number by approximately 2.0 log CFU/cm2 on lettuce. Furthermore, FESEM analysis indicated higher EPS production, and greater stomatal colonization on lettuce mixed-cultures compared to mono-cultures. Finally, internalization strength was significantly higher (p < 0.05) for the mixed-culture on lettuce, thus supporting the notion that internalization in lettuce is a factor that contributes to microbial UV-C resistance. The absence of adverse effects of UV-C on the color and texture of the lettuce suggests it as an alternative means of eliminating ST.  相似文献

Salmonella internalization is an important issue in raw vegetable consumption because washing usually cannot remove or inactivate the internalized pathogens effectively. In this study, the impact of extreme weather events, drought and heavy rains, caused by climate change on the internalization of Salmonella Typhimurium was investigated. Two leafy green fresh produce, iceberg lettuce and green onion were chosen. Rhizosphere soil inoculation was conducted to mimic the contamination routes via soil and then root uptake. Most internalized S. Typhimurium were found in lettuce leaves and in the root portions of green onion under all three irrigation conditions (optimal, drought, storm). In general, high concentration of soil inoculation facilitated the internalization level in both lettuce and green onion. Under extreme weather conditions, the internalization of S. Typhimurium in lettuce occurred when the soil was contaminated with a high level of bacteria (8–9 log colony forming unit (CFU)/g soil) and under these conditions, the internalization level was higher than the lettuce grown at the optimal water condition, except with 8 log CFU/g contamination (storm). Under drought, the results showed high variation, but the level of internalization of S. Typhimurium in lettuce increased by 16 times (1.21 log CFU/g) and 27 times (1.43 log CFU/g) compared to the optimally irrigated group when the soil was contaminated with 8 log and 9 log CFU/g soil, respectively. Ten-fold increased internalization was observed in the over-irrigated lettuce leaves when the soil was contaminated with 9 log CFU/g soil. The green onion samples showed ~ 4 log CFU/g green onion of S. Typhimurium internalization when exposed to high level of contamination (> 7 log CFU/g soil), which is a much higher internalization rate than the lettuce (average 2–3 log CFU/g). However, from the green onion experiments, no apparent patterns of water stress that affect on the levels on the Salmonella internalization were observed.  相似文献

This study evaluated the effects of a flood event, floodplain and climatic parameters on microbial contamination of leafy greens grown in the floodplains. Additionally, correlations between pathogenic bacteria and levels of indicator microorganisms have been also determined. To diagnose the microbial contamination after the flood event, sampling was carried out in weeks 1, 3, 5 and 7 after the flooding in four flooded lettuce fields. To assess the impact of flooding on the microbial contamination of leafy greens, indicator microorganisms (coliforms, Escherichia coli and Enterococcus) and pathogenic microorganisms (Salmonella spp., VTEC (E. coli O157:H7 and other verocytotoxin producing E. coli, O26, O103, O111, O145) and Listeria monocytogenes) were evaluated. Irrigation water, soil and lettuce samples showed levels of coliforms and E. coli higher than 5 and 3 log cfu/g or 100 mL, respectively when sampled 1 week after flooding. However, bacterial counts drastically declined three weeks after the flooding. Climatic conditions after flooding, particularly the solar radiation (6–8 MJ/m2), affected the survival of bacteria in the field. L. monocytogenes was not detected in lettuce samples, except for 2 samples collected 3 weeks after the flooding. The presence of Salmonella was detected in irrigation water, soil and lettuce by multiplex PCR one week after the flooding, but only 2 samples of soil and 1 sample of water were confirmed by colony isolation. Verotoxigenic E. coli was detected in soil and lettuce samples by multiplex PCR. Therefore, the implication of flood water as the source of VTEC contamination of soil and lettuce was not clear. E. coli counts in irrigation water were positively correlated with those in lettuce. A significant correlation (P < 0.005) was found between the presence of pathogens and E. coli counts, highlighting a higher probability of detection of pathogens when high levels of E. coli are found. The results obtained in the present study confirm previous knowledge which defined flooding as a main risk factor for the microbial contamination of leafy greens.  相似文献

The detection limits of 24 antimicrobial agents were determined in ewes’ milk by one commercially available version of brilliant black reduction test, BRT Inhibitor Test with prediffusion AiM® (BRT AiM®). For each drug, eight concentrations were tested on 20 milk samples from individual ewes. The detection limits of the BRT AIM® method were determined by means of logistic regression models: 6 μg kg−1 amoxycillin, 6 μg kg−1 ampicillin, 51 μg kg−1 cloxacillin, 2 μg kg−1 penicillin “G”, 230 μg kg−1 cefadroxil, 1330 μg kg−1 cephalosporin “C”; 270 μg kg−1 cephalexin, 92 μg kg−1 cefoperazone, 120 μg kg−1 ceftiofur, 69 μg kg−1 cefuroxime, 6000 μg kg−1 streptomycin, 1200 μg kg−1 gentamycin, 3700 μg kg−1 neomycin, 630 μg kg−1 erythromycin, 120 μg kg−1 tylosin, 390 μg kg−1 doxycycline, 5500 μg kg−1 oxytetracycline, 6200 μg kg−1 tetracycline, 5400 μg kg−1 sulfadiazine, 3200 μg kg−1 sulfamethoxazole, 6500 μg kg−1 sulfamethoxypyridazine, 6200 μg kg−1 sulfaquinoxaline, 22000 μg kg−1 chloramphenicol and 4100 μg kg−1 trimethoprim. The BRT AiM® method presents detection limits for β-lactam antibiotics that are similar to those obtained as Maximum Residue Limits (MRLs) according to Regulation 2377/90 EEC as set out by the European Union. However, for other antimicrobial agents the estimated limits were higher than those of the EU-MRLs. It is therefore advisable to enhance the sensitivity of the method for the detection of the different antimicrobial groups or to develop a combined system of different microbiological inhibitor tests that would enable the detection of a greater number of antimicrobial agents.  相似文献

Study objectives were to evaluate ractopamine hydrochloride's (RAC) effect on performance, carcass characteristics, and tenderness of early weaned beef steers. Steers were assigned to a control diet (0 mg RAC·steer 1·d 1), 200 mg RAC mg·steer 1·d 1, or 300 mg RAC·steer 1·d 1. Steers fed 200 and 300 mg RAC·steer 1·d 1 gained 14.84 kg and 14.57 kg more live weight and produced 13.22 and 14.90 kg more hot carcass weight, respectively, than controls. Feed conversions for steers fed 200 or 300 mg RAC·steer 1·d 1 of RAC increased 45.2% and 47.3% and average daily gain increased 55.5% and 54.5% compared to controls, respectively. Feeding either dose of RAC increased (P < 0.05) loin muscle area and increased (P < 0.05) Warner–Bratzler shear force (WBSF) values compared to controls, however the magnitude of WBSF difference diminished (P > 0.05) over 14 days of postmortem aging. Results of this study confirm that RAC increases weight gain and feed efficiency, minimally impacts carcass quality and has manageable impacts on tenderness when fed at either 200 or 300 mg steer 1·d 1.  相似文献

The combined effect of high-pressure (HP) treatment and bacteriocin-producing lactic acid bacteria (BP-LAB) on the survival of Listeria monocytogenes Scott A in cheeses made from raw milk that was inoculated with the pathogen at 4.80 log cfu mL−1, a commercial starter and one of seven strains of BP-LAB was investigated. On day 3, the counts of L. monocytogenes were 7.03 log cfu g−1 in a control cheese (without BP-LAB, not HP treated), 6.06–6.74 log cfu g−1 in cheeses with BP-LAB, 6.13 log cfu g−1 in a cheese without BP-LAB and treated on day 2 at 300 MPa, 2.01 log cfu g−1 in a cheese without BP-LAB and treated on day 2 at 500 MPa, 3.83–5.43 log cfu g−1 in cheeses with BP-LAB and treated on day 2 at 300 MPa, and 1.81 log cfu g−1 or less in cheeses with BP-LAB and treated on day 2 at 500 MPa. Migration of low molecular weight substances into foodstuffs is a subject of increasing interest and an important aspect of food packaging because of the possible hazardous effects on human health.The migration of a model substance (diphenylbutadiene) from low-density polyethylene (LDPE) was studied in foodstuffs with high fat contents: chocolate, chocolate spread and margarines (containing 61% and 80% fat).A simplifying mathematical model based on Fick’s diffusion equation for mass transport processes from plastics was used to derive effective diffusion coefficients which take also kinetic effects in the foods into account and to determine partition coefficients between plastic and food. With this model migration levels obtainable under other storage conditions can be predicted. The effective diffusion coefficients for both margarines stored at 5 °C (3.0–4.2 × 10−10 cm2 s−1) and at 25 °C (3.7–5.1 × 10−9 cm2  s−1) were similar to each other, lower than for chocolate spread stored at 5 °C (9.1 × 10−10 cm2 s−1) and higher than the diffusion coefficient for chocolate stored at 25 °C (2.9 × 10−10 cm2 s−1). Good agreement was found between the experimental and the estimated data, allowing validation of this model for predicting diffusion processes in foodstuffs with high fat contents.  相似文献

The purpose of this paper was two-fold: to optimise an analytical method based on derivative anodic stripping chronopotentiometry (dASCP) for reliable trace manganese determination in different fresh vegetables and aromatic plants, and to use this technique to asses the effect of boiling and peeling processing on their manganese content. The deposition potential was −1700 mV and the deposition time 120 s; in this conditions the limits of detection 8.0 ng kg−1 (ppt) and the accuracy of the method, assessed using certified reference materials, was within 95.0%. Among the studied fresh vegetables, the highest content of manganese was found in vegetables with dark green leaves as chicory and spinach (respectively, 3.5 and 3.3 mg/100 g), while vegetables with light green leaves as lettuce, together with carrots, garlic and pore mushrooms had manganese levels lower than 1.0 mg/100 g. Boiling processing cause a significant decrease of manganese levels in artichokes, tomatoes, chicory, garlic, mushrooms, peeled carrots and potatoes, spinach, and string beans (p  0.005, ANOVA). Fennels, lettuce, marrow, unpeeled carrots and unpeeled potatoes did not show any statistical significant changes after boiling. Also peeling significantly influenced the content of manganese of carrots and potatoes (p  0.01, ANOVA) and favoured manganese loss during boiling.  相似文献

Authentic samples of oranges, frozen concentrated orange juice and pulp-wash, and retail samples of freshly squeezed orange juice and frozen concentrated orange juice have been collected in Brazil and analysed for the flavanone glycosides (FG) narirutin and hesperidin by reversed phase HPLC with UV detection at 280 nm. The juice from hand-squeezed fruit gave narirutin and hesperidin concentrations of 16–142 mg l−1 and 104–537 mg l−1, respectively. The ratio of hesperidin to narirutin showed varietal difference with Pera having the highest ratio (mean 8.4) and Baı́a the lowest (3.6). Frozen concentrated orange juice contained higher quantities of FG with narirutin ranging from 62 to 84 mg l−1 and hesperidin from 531 to 690 mg l−1 (after dilution to 12 °Brix). In frozen concentrated orange juice pulp-wash, the narirutin level ranged from 155 to 239 mg l−1 and hesperidin from 1089 to 1200 mg l−1. The analysis of 23 samples of freshly squeezed juice from the Brazilian market place showed that the FG content of most samples (9.1 to 94.8 and 105.8 to 586.6 mg l−1, respectively, for narirutin and hesperidin) was similar to those found for authentic ones, indicating that these orange juices were not adulterated.  相似文献

In colostrum collected 0–80 h postpartum the contents of immunoglobulins (Igs), transforming growth factor beta-2 (TGF-β2), insulin-like growth factor-1 (IGF-1) and growth hormone (GH) were analysed. Colostrum initially contained 90 mg mL−1 IgG1, 2.8 mg mL−1 IgG2, 1.6 mg mL−1 IgA, 4.5 mg mL−1 IgM, and these concentrations declined by 92%, 87%, 93% and 84%, respectively, in the samples collected later. Of the growth factors, colostrum initially contained 289–310 ng mL−1 TGF-β2 and the concentration diminished to 66 ng mL−1. The content of IGF-1 and GH postpartum decreased from 870 to 150 ng mL−1, and from 0.17 to <0.03 ng mL−1, respectively. Heat treatment and freeze-drying of colostral whey decreased the content of Igs to 75%, while the contents of IGF-1 and TGF-β2 were unaffected. A similar processing, including filtration steps reduced also the IGF-1 and TGF-β2 by 25%. IgM seems to be the most sensitive of the Igs to processing.  相似文献

Consumption of virgin olive oil (VOO) is highly recommended due to its human health benefits. Brazil is now beginning to experimentally produce VOO, and there are no data on its chemical profile. The aim of this work was to determine the phenolic compound, tocopherol and fatty acid contents of 17 monovarietal VOOs produced from olive varieties cultivated in the southeast region of Brazil during two crop years. The chemical composition of Brazilian VOO resembles that found in the literature for well-established VOOs. The analyzed compounds comprised palmitic acid (6–12%), stearic acid (1.6–2.2%), oleic acid (70–84%), linoleic acid (3.2–11.7%), α-linolenic acid (0.6–1.4%), tyrosol (NQ–155 mg kg 1), (+)-pinoresinol (2.9–23 mg kg 1), hydroxytyrosol (ND–38 mg kg 1), luteolin (ND–2.2 mg kg 1), α-tocopherol (29–233 mg kg 1), β-tocopherol (ND–9.6 mg kg 1), and γ-tocopherol (ND—19 mg kg 1). There was a significant difference in the contents of almost all of the analyzed compounds between the two crop years. Principal component analysis demonstrated that some varieties can be differentiated from one another by chemical composition. The results indicated that some Brazilian monovarietal VOOs are promising and that further studies will help to improve the quality of Brazilian VOO.  相似文献

In the spring and autumn of 1994, a total diet study, in which 123 participants collected duplicates of their 24-h diets, was carried out. One of the goals of this study was to determine the amount of sterols in the duplicates of 24-h diets so that we could establish the oral daily intake of these analytes. Lyophilised samples were analysed for cholesterol, coprosterol, brassicasterol, campesterol, stigmasterol and β-sitosterol content. The mean intake of all participants was: for cholesterol, 202 mg person−1 day−1; for campesterol, 27 mg person−1 day−1; for stigmasterol, 15 mg person−1 day−1; and for β-sitosterol, 102 mg person−1 day−1. The median intake of all participants was: for cholesterol, 160 mg person−1 day−1; for campesterol, 26 mg person−1 day−1; for stigmasterol, 14 mg person−1 day−1; and for β-sitosterol, 98 mg person−1 day−1. The mean and median intake for brassicasterol could not be calculated because too many values were below the limit of determination. The coprosterol intake was below the limit of determination for all samples. The mean intake for the plant sterols was 146 mg person−1 day−1, and the mean total sterol intake was 348 mg person−1 day−1. The median intake for the plant sterols was 138 mg person−1 day−1 and the median total sterol intake was 313 mg person−1 day−1. On the day of sampling the cholesterol intake of 32 participants was above the recommendation of the Dutch Food and Nutrition Council (Voedingsraad) of a maximum of 33 mg MJ−1. The overall mean intake of cholesterol of 25 mg MJ−1, however, is below this recommendation. The total sterol intake found in this study corresponds well with the results found in the 1984/1985 duplicate diet study. The sterol intake in mg MJ−1 found in this study corresponds well with the results from the Dutch National Food Consumption Survey and the Market Basket study.  相似文献

Utilization of distillery stillage from bioethanol production for lactic acid and feed production was studied. The lactic acid fermentation of the stillage was performed by Lactobacillus rhamnosus ATCC 7469 and maximal lactic acid concentration of 50.18 g L 1, yield of 0.90 g g 1, productivity of 1.48 g L 1 h 1 and viable cell number of 5 × 109 CFU mL 1 were achieved. Solid residues with biomass remains after lactic acid fermentation were assessed for animal consumption. The content of proteins and ash decreased in the residues after the fermentation, whilst the content of oil and nitrogen free extract was higher when compared to unfermented samples. The digestible (17480.64 kJ kg 1) and metabolisable (17389.08 kJ kg 1) energies as well as digestibility (966.95 g kg 1) of the fermentation residue were very high. The in vitro assessment of L. rhamnosus ATCC 7469 survival in simulated gastric conditions has shown high survival rate (87%). In addition, this bacterium has shown good antimicrobial activity against the most important pathogens and capability to produce exopolysaccharide on different sugars present in animal diet. After effective lactic acid fermentation, the residues could be recommended as a high quality feed for monogastric animals.  相似文献

Persistence of Campylobacter sp and its biofilm forming ability was assessed in two poultry abattoirs at two weeks intervals. Average prevalence (63.75%) of Campylobacter spp. was observed on assessing a total of 160 samples collected from the surfaces of packaging table (80%), dressing table (75%), floor source (70%) and washing table (30%). Biofilm assessment formed by Campylobacter jejuni within 5-days at 37°C were in decreasing order of washing table > packaging table > dressing table > floor. An average rate (19.6%) of isolates to develop biofilm observed in both sites was considered relatively low. Absorbance value (Optical Density-OD590nm) of formed biofilms ranged from 0.483 – 0.952. Wastewater from the facilities showed higher TDS (643 – 820 mgl−1), TSS (1200 – 1775 mgl−1), COD (152 – 141 mgl−1) and BOD (30.3 – 32.5mgl−1) than the WHO standards of 500 mgl−1, 100 mgl−1, 10 mgl−1 and 6 mgl−1 respectively. This is a clear indication of heavy microbial presence in the wastewater. Total bacterial count (TBC) was slightly higher in site A (4.4 × 105 CFU/ml) than site B (3.5 × 105 CFU/ml). Efficiency index ratio (≈/> 1) observed in all tested drugs suggests their effectiveness in campylobacteriosis management. Decreasing drug sensitivity pedigree was observed with streptomycin > erythromycin & gentamincin > tetracycline & neomycin > penicillin > riphapicin & ampicillin > norflaxicin & cephalexin. These results of frequency and biofilm forming tendencies of Campylobacter spp. observed in this study can be of value in checkmating campybacteriosis outbreak from poultry abattoir facility.  相似文献

The effect of microwave drying technique on moisture content, moisture ratio, drying rate, drying time and effective moisture diffusivity of mint leaves (Mentha spicata L.) were investigated. By increasing the microwave output powers (180–900 W) and the sample amounts (25–100 g), the drying time decreased from 12.50 to 3.0 min and increased from 6.60 to 16 min, respectively. To determine the kinetic parameters, the drying data were fitted to various models based on the ratios of the differences between the initial and final moisture contents and equilibrium moisture content versus drying time. Among of the models proposed, the semi-empirical Midilli et al. model gave a better fit for all drying conditions applied. By increasing the microwave output powers and decreasing the sample amounts, the effective moisture diffusivity values ranged from 3.982 × 10−11 to 2.073 × 10−10 m2 s−1 and from 9.253 × 10−11 to 3.162 × 10−11 m2 s−1, respectively. The activation energy was calculated using an exponential expression based on Arrhenius equation. The relationship between the drying rate constant and effective moisture diffusivity was also estimated; and gave a linear relationship.  相似文献

Fresh low-fat milk was fermented with five mixed lactic acid bacteria for up to 30 h at 42 °C. A protease, prozyme 6, was added 5 h after the beginning of fermentation. The whey was separated from the fermented milk and freeze-dried. As the fermentation time extended to 30 h, soluble protein content increased from 30.9 to 195.9 mg g−1, free amino acid content increased from 2.8 to 192.8 mg g−1, peptide content increased from 6.4 to 402.8 mg g−1 and γ-aminobutyric acid (GABA) increased from 0 to 80.6 mg 100 g−1, while inhibition of angiotensin I-converting enzyme (ACE) increased as indicated by a decrease of IC50 from 1.18 to 0.24 mg mL−1, respectively. The amino acid sequences of two ACE inhibitory peptides were Gly–Thr–Trp and Gly–Val–Trp, of which the IC50 values were 464.4 and 240.0 μm, respectively. The systolic blood pressure and diastolic blood pressure of spontaneously hypertensive rat (SHR) were reduced 22 and 21.5 mm Hg, respectively, after 8 weeks of oral administration of diluted whey (peptide concentration 5 mg mL−1) from the 30 h fermentation.  相似文献

A reliable and rapid capillary zone electrophoresis method for the determination of the major of cations in milk samples was developed. Sample preparation consisted of dilution, acidification to pH 4.0 with 1 mol L−1 acetic acid and filtration. The complete separation of K+, Ca2+, Na+ and Mg2+ could be achieved in 4 min with a simple electrolyte composed of 10 mmol L−1 imidazole and 1 mol L−1 acetic acid (pH 3.6). The running voltage was 25 kV at 25 °C. Indirect UV detection was achieved at 185 nm. Detection limits ranged from 0.06 to 0.57 mg L−1 and quantification limits ranged from 0.16 to 0.62 mg L−1. Precision data showed relative standard deviations (RSD%) lower than 4.1% for relative migration time and 2.4% for milk concentrations, respectively. Recoveries of cations in samples analysed ranged from 97.7% to 101.1%. Thirty samples of milk were analysed, obtaining mean values of 1.46, 1.19, 0.505 and 0.126 g L−1 for K+, Ca2+, Na+ and Mg2+, respectively.  相似文献

Five cassava products, commonly consumed in and around the Abraka area of Delta State, Nigeria were analysed for their cyanide levels. This study, to determine safe levels of cyanide, became necessary as the fermentation time in the processing of these products has been observed to be drastically shortened to as low as 6 h for quick economic returns. In all the products, the cyanide levels were reduced from 30.0–58.0 mg HCN equivalent kg−1 of product. These levels fall below the reported 30.0 mg HCN equivalent kg−1 safe (fresh weight) of raw cassava to 5.4–24.0 mg HCN equivalent kg−1 level for cassava products. Nevertheless, some of the products containing up to 20.0–26.5 g HCN equivalent kg−1 of products are dangerous to health as these levels are higher than the 20.0 mg HCN equivalent kg−1 safe level recommended by the Standard Organization of Nigeria. The current practice of short-time fermentation should therefore be discouraged.  相似文献

The physico-chemical characteristics, proteolysis (classical nitrogen fractions, caseins and their degradation products and free amino acids), and lipolysis (fat acidity and free fatty acids) were studied throughout the ripening of three batches of Babia-Laciana cheese, a Spanish traditional variety made from raw goats’ milk. The main compositional characteristics of this cheese at the end of the ripening are its high content of total solids (TS) (78.0±2.4 g 100 g−1 of cheese) and fat (61.1±1.2 g 100 g−1 of TS), the presence of residual lactose (1.6±0.8 g 100 g−1 of TS) and its low content of sodium chloride (1.1±0.7 g 100 g−1 of TS) and ash (2.8±0.5 g 100 g−1 of TS). Its pH values (4.44±0.72) are extraordinarily low. The evolution and final values of the different nitrogen fractions show that this cheese undergoes a very slight proteolysis, a fact which was corroborated when the caseins and their degradation products were quantified: β-casein did not undergo any modification throughout ripening, while only 21% of the αs-caseins were degraded. Free amino acids content increased by a factor of about 7 throughout ripening, resulting in a high content of γ-amino butyric acid and a low content of glutamic acid at the end of the process. Fat acidity increased very slightly, approximately 4.5 times, during ripening, reaching final values of 3.5±2.2 mg KOH g−1 of fat. The total free fatty acids content showed a similar evolution to fat acidity. At the end of the ripening process, the main free fatty acid was C18:1, followed by C16 and C10.  相似文献

In-vitro binding of calcium (Ca) and magnesium (Mg) by total dietary fiber, hemicellulose A (HCL A), lignocellulose (LCL), cellulose (CL), and lignin (L) fractions isolated from rice bran (RB), wheat bran (WB), oat fiber (OF), apple fiber (AF) and tomato fiber (TF) was evaluated. At pH 6.8, significant amounts of Ca were bound by whole fibers, ranging from 800 μg g−1 for RB to 10 097 μg g−1 for TF. Mg bound by whole fibers varied from 496 μg g−1 for OF to 2177 μg g−1 for WB. Re-acid washing (pH<2.0) released 95–99% of the Ca and Mg bound to the fibers. Fibers with the highest endogenous Ca and Mg concentrations bound significantly (P<0.05) the highest amounts of the minerals studied. The Ca bound by HCL A varied from 9753 μg g−1 for RB to 11 337 mg g−1 for TF, whereas Mg bound varied from 1151 μg g−1 for OF to 5626  μg g−1 for TF hemicellulose fractions, respectively. Among the fiber components, Mg binding decreased in the order HCL A>LCL>L>CL, whereas Ca bound was in the order HCL A>LCL>CL>L.
