Phytic acid or phytate is a chelating agent, which is involved in binding minerals (such as K+, Ca2+, Zn2+, Fe2+, etc.) and making them unavailable for dietary absorption. It is also involved in forming complexes with protein, making protein less soluble, and affecting enzymatic degradation, gastric absorption, and malting processes. The phytic acid and protein contents of barley grains are influenced by genetic and environmental factors. This study investigated differences in phytic acid and protein contents in grains of 100 barley (Hordeum vulgare L.) genotypes or cultivars. Eight barley cultivars were selected and grown at seven locations for two years to study the effects of genotypic and environmental factors on phytic acid content (PAC) and its relation to malt quality. The phytic acid contents of 100 barley genotypes ranged from 3.85 mg g−1 to 9.85 mg g−1, with a mean of 7.01 mg g−1. The effects of cultivars, locations, time and their interactions were highly significant, but the variation was mainly attributed to the environment (location and time). The correlation between grains phytic acid and protein content was significant and positive. Whereas, the correlation between grain phytic acid content and malt extract was significant and negative. The relationship between phytic acid and protein contents of barley is important as it affects the malting process, malt yield and quality, and final beer quality. Barley grain for malting and feed uses should have low phytic acid content.  相似文献

Fructose, glucose and sucrose, as the major soluble sugars and citric and malic acids, as the major organic acids, were identified and determined in kale (Brassica oleraceae L. var. acephala DC., black cabbage) leaves. Fructose was the predominant sugar (2011 mg 100 g−1 dry wt) identified, followed by glucose (1056 mg 100 g−1 dry wt) and sucrose (894 mg 100 g−1 dry wt). The contents of citric and malic acids were at 2213 and 151 mg 100 g−1 dry wt in the leaves. The 16:0, 18:2n − 6 and 18:3n − 3 fatty acids were the most abundant fatty acids in the leaves. Considering the level of these fatty acids, 18:3n − 3 was found to be the highest (85.3 μg g−1 dry wt), contributing 54.0% of the total fatty acid content. Linoleic acid (18:2n − 6), being the second most abundant fatty acid was present at 18.6 μg g−1 dry wt, contributing 11.8% of the total fatty acid content. In the seed oil of kale, 22:1n − 9 was the most abundant fatty acid (4198 μg g−1 dry wt, 45.7%), with 18:2n − 6 (1199 μg g−1 dry wt, 12.3%) and 18:1n − 9 (1408 μg g−1 dry wt, 14.8%) being the second next most abundant fatty acids. The most abundant amino acid was glutamic acid (Glu) which was present at 33.2 mg g−1 dry wt. Aspartic acid, which was the second most abundant amino acid, was present at 27.6 mg g−1 dry wt and accounted for 10.2% of the total amino acid content of kale leaf. The amino acid content was assessed by comparing the percentages of the essential amino acids in kale leaf versus those of a World Health Organization (WHO) standard protein. The protein of kale leaf compares well with that of the WHO standard. Only one amino acid, lysine, had a score that fell below 100%; the lysine score of kale leaf was 95%. This study attempts to contribute to knowledge of the nutritional properties of the plant. These results may be useful for the evaluation of dietary information.  相似文献

Two strawberry (Fragaria × ananassa Duch.) cultivars differing in their sensitivity to NaCl stress, cv. Elsanta (sensitive) and cv. Korona (less sensitive), were cultivated under 0, 40 and 80 mmol NaCl/l for two months during flowering and fruiting until final fruit harvest. Modifications of sensory quality parameters and selected chemical properties of the non-climacteric fruit were evaluated. Generally, NaCl salinity decreased quality of strawberry fruit, especially in cv. Elsanta. Fruits of stressed plants contained lower amounts of sugars, organic acids and soluble solids, were less sweet and did not meet consumers’ requirements. Overall appearance of fruits decreased significantly. The reduced acceptance to consumers was closely correlated with the decline of sugar contents, especially sucrose content, as well as with the increase of organic acids, such as acetic acid. Sensory changes were revised on the basis of a dose to threshold relationship. Decreasing contributions of sugars to taste and a rising importance of sodium, acetic and citric acids as the most taste-relevant compounds were the main causes of the limited acceptance of salt-stressed fruits.  相似文献

The inhibitory effects of 17 organic acids (C2-C16 fatty acids, sorbic, benzoic, phenylacetic, fumaric, succinic, lactic, malic and citric) on Arcobacter butzleri, Arcobacter cryaerophilus and Arcobacter skirrowii were investigated by determining their IC50 values, defined as the concentration of acid at which the target DNA sequence was expressed at 50% of the positive control level in cultures incubated at 30 °C for 24 h. DNA was analysed by real-time PCR. The Arcobacter strains tested were inhibited by all the organic acids, with the sensitivities in the order A. skirrowii > A. cryaerophilus > A. butzleri. Eight acids with IC50 values of < 1 mg/mL against A. butzleri were tested for their effects on A. butzleri inoculated on chicken carcasses at a concentration of 5 log CFU/g of skin. Inoculated halved carcasses were immersed in solutions of the acids at 5 mg/mL for 1 min. Samples of skin were collected from carcass halves after storage at 4 °C for 0, 1, 2 or 3 days for enumeration of arcobacters on Muller-Hinton agar. All eight tested acids suppressed bacterial proliferation. The highest inhibitory activities were observed for benzoic, citric, malic and sorbic acids. Subsequent sensory analysis revealed benzoic acid to be the most suitable organic acid for chicken skin treatment.  相似文献

Wild berries of Hippophaë rhamnoides ssp. sinensis were collected from nine natural growth sites in China in three consecutive years in order to get an overall profile of the sugars, sugar alcohols, fruit acids, and ascorbic acid, and especially of the influence of the latitude and altitude of the growth place on these components. The contents of fructose, glucose, and l-quebrachitol in the berry juice varied in the ranges of 0.01-7.17, 0.05-7.85 and 0.21-1.09 g/100 mL, respectively, those of malic, quinic, and ascorbic acids were 1.55-8.84, 0.07-2.94, and 0.25-1.66 g/100 mL, respectively. The berries from Hebei and Inner Mongolia were characterized by high contents of sugars and l-quebrachitol and low contents of malic acid and ascorbic acid. In contrast, the berries from Sichuan and Qinghai contained lower contents of sugars and higher contents of malic acid and ascorbic acid than the berries from other growth areas. The berries from Sichuan differed considerably from others by the remarkably low contents of sugars and the exceptionally high contents of acids. The contents of fructose, glucose, and total sugar decreased as the altitude increased and as the latitude decreased (p < 0.05). In contrast, the contents of malic acid and ascorbic acid increased as the altitude increased and as the latitude decreased (p < 0.05). The contents of quinic acid and l-quebrachitol correlated strongly and positively with the latitude (p < 0.01).  相似文献

Organic strawberry fruits (Cv. ‘Albion’) were harvested at six different ripening stages and evaluated for physical and chemical parameters. Biometrical characteristics and moisture content did not change significantly during ripening. Total soluble solids, pH and colour development increased while titratable acidity and fruit firmness decreased 14.7% and 91%, respectively. Fructose, glucose, and sucrose followed similar tendencies. Final contents of these sugars were 2323.4, 1988.5, and 1578.4 mg/100 g. Citric, malic, and ascorbic acids followed a descending, irregular, and increasing tendency during ripening, respectively. Final contents of these acids were 822.8, 245.8, and 78.1 mg/100 g. Total anthocyanins content (TAC) increased during ripening, while the opposite was observed for total phenolic content (TPC). TAC and TPC in ripe fruit were 56.4 mg/100 g and 196 mg gallic acid equivalents (GAE)/100 g. Twenty eight phenolic compounds, mainly glycosides, were identified and quantified by HPLC-DAD–MS analysis. The concentration of these compounds was ripening dependent.  相似文献

The effect of three frozen storage temperatures (− 8, − 18 and − 80 °C) on protein oxidation in beef patties was studied through the analysis of novel oxidation markers. Additionally, the connection between lipid and protein oxidation and the impact of the latter on particular quality traits (water holding capacity, color and texture) of subsequently processed beef patties (cooking/cold-stored) were investigated. Protein oxidation was measured as the loss of tryptophan fluorescence and formation of diverse lysine oxidation products (α-aminoadipic semialdehyde, α-aminoadipic acid and Schiff bases). Lipid oxidation was assessed by levels of thiobarbituric acid reactive substances and hexanal. A significant effect of storage temperature on protein oxidation was detected. Frozen storage increased the susceptibility of meat proteins to undergo further oxidation during processing. Timely interactions were found between lipid and protein oxidation. Plausible mechanisms by which oxidative damage to proteins may have an impact in particular quality traits are thoroughly discussed.  相似文献

The potential of X-ray computed tomography (CT) as a predictor of cuts composition and meat quality traits using a multivariate calibration method (partial least square regression, PLSR) was investigated in beef cattle. Sirloins from 88 crossbred Aberdeen Angus (AAx) and 106 Limousin (LIMx) cattle were scanned using spiral CT. Subsequently, they were dissected and analyzed for technological and sensory parameters, as well as for intramuscular fat (IMF) content and fatty acid composition. CT-PLSR calibrations, tested by cross-validation, were able to predict with high accuracy the subcutaneous fat (R2, RMSECV = 0.94, 34.60 g and 0.92, 34.46 g), intermuscular fat (R2, RMSECV = 0.81, 161.54 g and 0.86, 42.16 g), total fat (R2, RMSECV = 0.89, 65.96 g and 0.93, 48.35 g) and muscle content (R2, RMSECV = 0.99, 58.55 g and 0.97, 57.45 g) in AAx and LIMx samples, respectively. Accurate CT predictions were found for fatty acid profile (R2 = 0.61–0.75) and intramuscular fat content (R2 = 0.71–0.76) in both sire breeds. However, low to very low accuracies were obtained for technological and sensory traits with R2 ranged from 0.01 to 0.26. The image analysis evaluated provides the basis for an alternative approach to deliver very accurate predictions of cuts composition, IMF content and fatty acid profile with lower costs than the reference methods (dissection, chemical analysis), without damaging or depreciating the beef cuts.  相似文献

Reliable and accurately measurable chemical parameters that can be used to estimate black tea quality are desirable in trade, research and breeding programmes. Using plain Kenyan black tea from 11 cultivars, which gave some significant differences in their plain black tea quality parameters, the individual theaflavins composition, total theaflavins, thearubigins, theaflavin digallate equivalent, total colour and brightness were determined. The parameters were regressed against sensory evaluation scores of two tasters A and B. The theaflavin digallate equivalent (TDE) showed the strongest relationship (r = 0.71 (P ? 0.01) and r = 0.80 (P ? 0.001)) for A and B′, respectively. The simple (non gallated) theaflavin and thearubigins did not show significant relationships with sensory evaluation. Of the liquor characteristics, there were significant relationships between liquor brightness and sensory evaluation by A and B (r = 0.58 (P ? 0.06) and r = 0.59 (P ? 0.05)), respectively. In consequence, TDE and brightness can be used in tea breeding programmes as quality indicators or to estimate plain black tea quality potential in the tea trade. Optimising their levels can also help to produce good quality Kenyan black teas during processing. Comparison of these results with work published earlier indicates that, of the individual theaflavins, theaflavin-3,3′-digallate correlates best with tea taster scores for the 11 Kenyan cultivars, whereas the simple theaflavin correlates best with tea tasters’ scores for 40 Malawian cultivars. However, the derived parameter, TDE correlates very well with tea tasters’ scores for all of the above cultivars.  相似文献

The effect of rooibos tea extract (RBTE 0%, 0.25%, 0.50%, 1.00%) as a natural antioxidant on the lipid and protein stability of ostrich droëwors (traditional South African dried sausage) after a 15 day drying period was investigated. The lipid stability of the droëwors increased with 0.25% RBTE having lower TBARS. The protein stability of the droëwors did not differ (P ≥ 0.05) between treatments. The heme–iron content did not differ (P ≥ 0.05) between the treatments and increased from day 0 to day 15. Drying resulted in a decrease in the total moisture content by 45% and a corresponding increase in all other components. There were no differences between the moisture, fat and ash contents between treatments within a specific day. The droëwors had high concentrations of oleic acid, palmitic acid and linoleic acid. The addition of RBTE also improved the sensory attributes and can thus be added and marketed as a natural flavourant from ‘out of Africa’ for a traditional South African meat product.  相似文献

A simple, fast and accurate Fourier transform mid-infrared spectroscopy method was developed for simultaneously determining sugar and organic acid contents in apricot fruit slurries using the attenuated total reflectance. The potential of this method coupled with chemometric techniques based on partial least squares was assessed by comparison with currently used enzymatic determination of sucrose, glucose, fructose, malic acid and citric acid. Fruits of eight contrasted cultivars harvested at different ripening stages were used in this study and randomly divided in a calibration set (505 apricots) and in a validation set (252 apricots). The most suitable region was found in the range between 1500 and 900 cm−1. Good prediction performances were obtained (R2 ? 0.74 and RMSEP ? 18%). Results concerning the prediction of other quality traits such as firmness, skin colour, ethylene production, soluble solids content and titratable acidity were discussed.  相似文献

The effect of gamma irradiation on microbial load, chemical and sensory characteristics of camel meat has been evaluated. Camel meat was irradiated at doses of 0, 2, 4 and 6 kGy of gamma irradiation. Irradiated and non-irradiated meat was kept in a refrigerator (1–4 °C). General composition and sensory evaluation of camel meat was done two days after irradiation, whereas, microbiological and chemical analysis was done immediately after irradiation and throughout the storage periods. The results indicated that all doses of gamma irradiation reduced the total mesophilic aerobic plate counts (TPCs) and total coliforms of camel meat. Thus, the microbiological shelf-life of camel meat was significantly extended from less than 2 weeks (control) to more than 6 weeks (samples irradiated with 2, 4 or 6 kGy). No significant differences in moisture, protein, fat, thiobarbituric acid (TBA) values, total acidity and fatty acids of camel meat were observed due to irradiation. There were slight effects of gamma irradiation in both total volatile basic nitrogen (VBN) and lipid oxidation values in camel meat. Sensory evaluation showed no significant differences between irradiated and non-irradiated camel meats.  相似文献

Lupin protein isolate was extracted following the procedure in European Patent (EP 1024 706 B1) in order to use lupin protein for food and pharmaceutical applications. The acid insoluble/neutral pH soluble protein isolate was pasteurized at 65-125 °C for 10-1000 s. The objective of this study is finding out reasonable pasteurization condition for food use, or for good bioactivities like radical scavenging, angiotensin converting enzyme inhibition, and bile acid binding activity. Pasteurization at 65 °C for 10 s did not reduce the microbial count of the protein sufficiently for use in foods. The chemical composition of lupin protein isolates had no change by various pasteurization. The angiotensin converting enzyme inhibition decreased and the DPPH radical scavenging capacity increased after high temperature treatment at 125 °C. The sodium cholate binding capacity was not affected by tested conditions. Pasteurization at higher temperature is useful for producing selective bioactive fractions with suitable microbiological properties.  相似文献

Lupin seeds of different species representing diverse varieties of sweet lupin grown in Poland were investigated. The chemical compositions of lupin isolates and amino acid composition of the proteins, as well as the nutritive values were estimated. No significant differences (P ? 0.05) were observed among lupin isolates in their dry matter, crude fibre or alkaloid contents. The highest protein content (465 ± 11 g/kg d.m.) was found in seeds from lupins belonging to Lupinus luteus (P ? 0.01), while the highest oil content (ca. 115 g/kg d.m.) was found in Lupinus albus (P ? 0.05).  相似文献

The chemical analysis and preliminary toxicological evaluation of Garcinia mangostana seeds and seed oil have been investigated in order to determine the possibility of using them for human and/or animal consumption. Proximate analysis showed that the seeds had high amount of carbohydrate and were rich in oil (21.68 ± 6.18%) but have a low protein content. The physical properties of the oil extracts showed the state to be liquid at room temperature (25 ± 1 °C) and the colour of the oil golden-orange. The specific gravity of the oil was 0.98 ± 0.01. Among the chemical properties of the oil extracts, acid value, saponification number, iodine value, percent free fatty acid and peroxide value compared well with those of conventional edible oils. The seed flour was found to be a good source of minerals. It contained considerable amounts of potassium (7071 mg/kg), magnesium (865 mg/kg) and calcium (454 mg/kg). Fatty acid composition of the seed oil indicated that the oil contained one essential fatty acids small proportions: linoleic acid (1.30%). The most prevalent fatty acids were palmitic acid (49.5%) and oleic acid (34.0%). Weanling albino rats appeared to suffer no toxicological effects when fed with G. mangostana seed oil in their diet for 8 weeks. Weekly monitoring of the rats showed good physical appearance and steady weight increase. Histological examination of sections of the heart, liver, kidney, spleen and lung revealed that the kidney of some of the rats had some degrees of pathology which included diffuse glomerular and tubular degeneration. No lesion was found in the heart and liver of the rats. The seed oil could be useful as an edible oil and for industrial applications.  相似文献

The purpose of this study was to analyze associations between polymorphisms in the PRNP gene and ewe milk traits. A total of 242,565 lactations of the Latxa breed were used. Milk, fat and protein yields, and fat and protein content from black-faced Latxa from Spanish Basque Country, black-faced Latxa from Navarra, and blond-faced Latxa were collected. To evaluate evidence of association, the different traits were analyzed using an animal model, where the PRNP genotype effect was included or not as a random effect. Adding the PRNP effect to the model improved the fitting for milk yield in black-faced Latxa from Spanish Basque Country and in blond-faced Latxa, for fat yield in black-faced Latxa from Navarra, and for protein yield in blond-faced Latxa. However, the proportion of the phenotypic variance explained by the PRNP effect for milk yield (1.0 × 10−3), fat yield (3.6 × 10−3) and protein yield (9.4 × 10−4) were near zero. The PRNP locus accounts for about 0.5, 1.5, and 0.4% of total genetic (PRNP and polygenic) variance in milk, fat, and protein yield. These values indicated that the PRNP effect is not relevant regarding genetic additive contribution. For breeding purposes, it is unlikely that selection for scrapie resistance will have an effect on the milk traits studied in the Latxa breed.  相似文献

Sugars and organic acids in the fruit of two cultivars and three selections of black elderberry (Sambucus nigra L.): ‘Haschberg’, ‘Rubini’, ‘Selection 13’, ‘Selection 14’ and ‘Selection 25’ were quantified. The anthocyanin as well as quercetin profiles of this plant material were also established by the use of HPLC/MS. Significant differences in the concentration of sugars and organic acids were detected between the widely spread cultivar ‘Haschberg’ and all other cultivars/selections; ‘Haschberg’ was the richest in organic acids (6.38 g kg−1 FW), and it contained the least sugar (68.5 g kg−1 FW). The following major cyanidin based anthocyanins were identified in the fruit of black elderberry: cyanidin 3-sambubioside-5-glucoside, cyanidin 3,5-diglucoside, cyanidin 3-sambubioside, cyanidin 3-glucoside and cyanidin 3-rutinoside. The most abundant anthocyanin in elderberry fruit was cyanidin 3-sambubioside, which accounted for more than half of all anthocyanins identified in the berries. The ‘Rubini’ cultivar had the highest amount of the anthocyanins identified (1265 mg/100 g FW) and the lowest amount was measured in berries of the ‘Selection 14’ (603 mg/100 g FW). The ‘Haschberg’ cultivar contained a relatively low amount of anthocyanins in ripe berries (737 mg/100 g FW). From the quercetin group, quercetin, quercetin 3-rutinoside and quercetin 3-glucoside were identified; the latter prevailing in black elderberry fruit. The cultivar with the highest amount of total quercetins was ‘Selection 25’ (73.4 mg/100 g FW), while the ‘Haschberg’ cultivar contained average amounts of quercetins (61.3 mg/100 g FW). The chemical composition of the ‘Haschberg’ cultivar, the most commonly planted, conforms to the standards for sugars, anthocyanins and quercetins and exceeds them in the content levels of organic acids, the most important parameter in fruit processing.  相似文献

Recent studies have observed positive effects of both sucrose and exogenous amylase on the productivity of dairy cattle. Our objective was to evaluate direct effects and interactions of amylase and sucrose on dry matter intake (DMI), milk production, and milk components. Forty-eight multiparous Holstein cows between 70 and 130 d in milk were randomly assigned to each of 4 pens (12 cows/pen). Pens were randomly assigned to treatment sequence in a 4 × 4 Latin square design, balanced for carryover effects. Treatment periods were 28 d, with 24 d for diet adaptation and 4 d for sample and data collection. The treatments were a control diet (36% NDF and 21% starch), the control diet with amylase [0.5 g/kg of DM; Ronozyme RumiStar 600 (CT); DSM Nutritional Products Ltd., Basel, Switzerland], a diet with sucrose replacing corn grain at 2% of DM, and the sucrose diet with amylase (0.5 g/kg of DM). All data were analyzed with mixed models, including the fixed effects of sugar, amylase, and their interaction, and the random effects of period and pen. Milk data included the random effects of cow nested within pen and pen × period to provide the error term for the pen-level analysis. Dry matter intake was not affected by treatments. Milk yield and milk composition were not altered by the inclusion of sucrose or amylase; however, a tendency for an amylase × sucrose interaction was observed for milk protein content, reflecting slightly lower milk protein concentrations for amylase and sucrose treatments (3.00 and 2.99 ± 0.03%) compared with the control and amylase + sucrose treatments (3.02 and 3.03 ± 0.03%). Solids-corrected and fat-corrected milk yields were not significantly altered by treatment, although the direct effect of amylase approached significance for both variables, suggesting possible small increases with amylase supplementation (~0.5 kg/d). Feed efficiency (energy-corrected milk divided by dry matter intake) numerically increased with either amylase (1.57 ± 0.12) or sucrose (1.60 ± 0.12) treatment, but the combination of the 2 resulted in feed efficiency similar to the control treatment (both 1.50 ± 0.12). The inclusion of amylase or sucrose did not affect DMI, productivity, or feed efficiency in mid-lactation cows fed low-starch, high-fiber diets.  相似文献

Three levels (0%, 1% and 2%) of a conjugated linoleic acid oil (CLA) were combined with two levels of monounsaturated fatty acids (MUFA) (low – 19% average and high – 39% average) for pig feeding (n = 48, eight animals per treatment). The composition and quality traits (fat content, cooking losses, lipid oxidation, fatty acid profile, volatile profile and sensory analysis) of cooked loin, as affected by dietary CLA, MUFA, and CLA × MUFA interaction were studied. CLA and CLA × MUFA did not affect the intramuscular fat content, cooking losses, lipid oxidation, volatile profile and sensory traits of cooked meat. Therefore, CLA could be supplemented to the pig diet without detriment of the measured quality traits of cooked meat, and regardless of the MUFA level of pig diets. Dietary CLA increased the content of SFA and decreased the level of MUFA of meat, and led to a CLA enrichment, regardless the MUFA level of pig diets, but the content of CLA isomers of fresh meat decreased after the cooking process.  相似文献
