One of the aims of this work was to evaluate the impact of introducing products that are in agreement with the Choices criteria in the usual diet of the Brazilian population. However, due to the insufficient information on key compounds related to non-transmissible chronic diseases (NTCD) in the national food composition database, the nutritional information of food labels was collected. A food composition database of industrialized products was created (1720 products) and their data were evaluated according to the Choices criteria. The replacement of typical products by products that are in accordance to the Choices criteria may cause a decrease in the intake of saturated (52%) and trans fatty acids (92%), energy (14%) and sodium (47%), as well as an increase in the intake of DF (87%); improving the diet nutritional profile. This procedure can be used as important part in a strategy for decreasing the risk for NTCD.  相似文献

The core food dietary intake/exposure model may be used to assess the average intake of nutrients, contaminants and other food components by a population group and various subgroups of the population. The core food model is a mechanism that allows for the selection of the most important foods in a population's food supply so that these foods can be obtained and analysed in the laboratory. The core foods for a population change over time as food consumption patterns are altered by changes in the food supply and/or changes in the demographics of the population. Core foods of the US diet were selected using food consumption data from the 1994-96 US Department of Agriculture (USDA) Continuing Survey of the Food Intake of Individuals (CSFII). The 304 core foods were identified by placing the 5722 foods consumed by survey participants into about 300 groups. The groupings were based on food type, food use and similarity of nutrient composition. The foods within each grouping were ranked in terms of frequency of use and weight of intake, and one food item within each group was selected to become a core food and represent its group. In the model, each core food assumes the full dietary intake (by weight) for all the foods in its group. Daily mean intakes of the 304 selected core foods are presented for women and men of 19-30 years of age. If the food components of interest to investigators using this model are found in selected foods or food types, then only these foods need be analysed. The list of 304 core foods may be shortened by further aggregation to match the needs of different investigators. For example, limited data on food composition may warrant use of a shorter core food list. A shortened food list with average daily intakes of 78 core foods for women and men of 19-30 years of age is provided as an example.  相似文献

Estimations of ochratoxin A (OTA) and 4-deoxynivalenol (DON) exposure of the Belgian population through beer consumption were made using the results of the recent Belgian food survey and the compiled data set of OTA and DON levels in conventionally and organically produced beers in 2003-05. For the consumers of organic beers, the daily intake of OTA was 0.86 (in 2003), 1.76 (in 2004) and 0.72 (in 2005) ng kg-1 body weight (bw), considering the mean beer consumption (0.638 litres) and the average level of OTA in 2003, 2004 and 2005, respectively. Using the 97.5th percentile of beer consumption (1.972 litres), the corresponding OTA daily intakes were 2.65, 5.44 and 2.24 ng kg-1 bw, which are close or above the tolerable daily intake (TDI) of 5 ng kg-1 bw. For the consumers of conventional beers, the OTA intakes were low: 0.23, 0.23 and 0.11 ng kg-1 bw day-1 for the average beer consumption, in 2003, 2004 and 2005 against 0.72, 0.73 and 0.34 ng kg-1 bw day-1 when the 97.5th percentile level was considered. As for the DON intake, the estimates were quite low for both conventional and organic beer consumers when the provisional maximum TDI (PMTDI) of 1 µg kg-1 bw was considered. Average consumption of organic beer led to daily intakes of 0.05 and 0.04 µg DON kg-1 bw in 2003 and 2004, respectively, whilst for conventional beer, daily intakes were 0.07 and 0.05 µg DON kg-1 bw. At the 97.5th percentile level of beer consumption, daily intakes of 0.15 and 0.13 µg kg-1 bw were obtained for organic beers against 0.23 and 0.17 µg kg-1 bw for conventional ones. The results showed that beer could be an important contributor to OTA exposure in Belgium, even though a declining trend seems to be apparent during the last year of monitoring. Therefore, efforts should be devoted to maintain the OTA levels as low as reasonably achievable, especially for organic beer.  相似文献

An exposure assessment was performed to estimate the usual daily intake of sulfites in the Belgian adult population. Food consumption data were retrieved from the national food consumption survey. In a first step, individual food consumption data were multiplied with the maximum permitted use levels for sulfites, expressed as sulphur dioxide, per food group (Tier 2). In a second step, on the basis of a literature review of the occurrence of sulfites in different foods, the results of the Tier 2 exposure assessment and available occurrence data from the control programme of the competent authority, a refined list of foods was drafted for the quantification of sulphite. Quantification of sulphite was performed by a high-performance ion chromatography method with eluent conductivity detector in beers and potato products. Individual food consumption data were then multiplied with the actual average concentrations of sulfite per food group, or the maximum permitted levels in case actual levels were not available (partial Tier 3). Usual intakes were calculated using the Nusser method. The mean intake of sulfites was 0.34 mg kg?1 bw day?1 (Tier 2), corresponding to 49% of the acceptable daily intake (ADI) and 0.19 mg kg?1 bw day?1, corresponding to 27% of the ADI (partial Tier 3). The food group contributing most to the intake of sulfites was wines. The results showed that the intake of sulfites is likely to be below the ADI in Belgium. However, there are indications that high consumers of wine have an intake around the ADI.  相似文献

Polychlorinated dibenzo-p-dioxin and -furan (PCDD/F) and dioxin-like polychlorinated biphenyl (dl-PCB) exposure from food were estimated using new food consumption data from the recent German food consumption survey (Nationale Verzehrsstudie II – NVS II). Based on these comprehensive data, information on the consumption of 545 individual food items by the German population was derived. Concentrations of dioxin-like compounds in food were compiled from the German Food Monitoring Programme (GFMP), the German Dioxin Database, other German authority programmes, European countries’ authority programmes and the published literature covering the years 2000–2010. By multiplication with consumption data, estimates of intake from food were determined. The main food groups contributing most to the intake of the general public are dairy products (including milk), meat and fish (including seafood), followed – due to high consumption – by the main group vegetables. The combined intake of PCDD/F and dl-PCB (as toxic equivalents – TEQ) from food was estimated to be 2.11/1.53 pg kg–1 bw and day and 3.56/2.85 pg kg–1 bw and day (upper/lower bound) for average and high-end consumers, respectively. The estimated intake of average consumers is close to a reference value derived by the Scientific Committee on Food in 2001. Uncertainties in these estimates pertain to the influence of values below the limit of quantification (upper/lower bound ratio) and some foods not considered due to the lack of contamination data.  相似文献

In the Dietary and Nutritional Survey of British Adults (DNSBA) food consumption database, brand level intake data are recorded for 2197 subjects over 7 days. This study set out to examine the incremental value of such brand level data in food consumption studies to estimate additive intake. The food codes in the DNSBA database were re-arranged into 14 food categories within each of which were varying numbers of both sub-categories of foods and of brands. Intake of the 97.5th percentile for brands and sub-categories were compared with intakes at the 97.5th percentile of the appropriate food category. Taking ≥ 60 consumers as the minimal sample size for which a 97.5th percentile statistic can be calculated, only 6% of the 1363 brands listed had sufficient data to work with. Of the 14 food categories, six had a sub-category with a 97.5th percentile in excess of that of the category but none exceeded 1.3 x 97.5th percentile intake of the category. Of the 85 brands for which there were ≥ 60 consumers, only 11 had 97.5th percentile intakes in excess of that statistic for the relevant food category and none exceeded a multiple of 1.3 times the category 97.5th percentile intakes. Unless dietary surveys are very large and carried out for longer periods of time, there is little value in retaining food consumption data at brand level. If 1.3x the intake of an additive from a given food category at the 97.5th percentile does not exceed the ADI, no sub-category or brand appears to do so. This may provide a valuable technique in crude estimates of food additive intake.  相似文献

Food categories that significantly contribute to daily intake of total arsenic (TAs), inorganic arsenic (iAs), lead (Pb) and aluminium (Al) were statistically sought for the 949 duplicate diet samples collected from 319 households in Japan. Daily intakes of TAs, iAs, Pb and Al were calculated based on measured element concentration in duplicate diet samples and weight of the samples. Amounts of consumption of 12 food categories of each duplicate diet sample were self-reported (beverage), interviewed (fat and oil, spices, and sugar) and actually weighted (other 9 categories) at the time of diet sampling. Multiple regression analyses were conducted by using daily element intake as dependent variable and amounts of daily consumption of the 12 food categories as independent variables. The most significant predictors were amount of daily consumption of ‘Fish & Shellfish’ for daily TAs intake and ‘Rice & Rice products’ for iAs intake. Other food categories contributed to daily intakes of the four elements with smaller coefficient. Some of the significant predictors identified in this study were consistent with the findings of the previous market basket surveys while others were not. The 12 food category consumption data moderately explained daily intake of TAs (Coefficient of determination adjusted for degree of freedom (adjusted R2) = 0.447) and iAs (0.307) while they only poorly explained daily intakes of Pb (0.229) and Al (0.117). The present results suggest that a Total Diet Study based on food consumption survey data and element contents of food from data base/literature will result in large errors in the estimation of daily element intake.  相似文献

As first described in the 1980s, the core food intake model allows a precise assessment of dietary nutrient intake and dietary exposure to contaminants insofar as it reflects the eating habits of a target population and covers the most important foods in terms of consumption, selected nutrient and contaminant contribution. This model has been used to set up the sampling strategy of the second French Total Diet Study (TDS) with the aim of obtaining a realistic panorama of nutrient intakes and contaminant exposure for the whole population, useful for quantitative risk assessment. Data on consumption trends and eating habits from the second French individual food consumption survey (INCA2) as well as data from a 2004 purchase panel of French households (SECODIP) were used to identify the core foods to be sampled. A total of 116 core foods on a national scale and 70 core foods on a regional scale were selected according to (1) the consumption data for adults and children, (2) their consumer rates, and (3) their high contribution to exposure to one or more contaminants of interest. Foods were collected in eight French regions (36 cities) and prepared ‘as consumed’ to be analysed for their nutritional composition and contamination levels. A total of 20 280 different food products were purchased to make up the 1352 composite samples of core foods to be analysed for additives, environmental contaminants, pesticide residues, trace elements and minerals, mycotoxins and acrylamide. The establishment of such a sampling plan is essential for effective, high-quality monitoring of dietary exposure from a public health point of view.  相似文献

A key component of a food chemical exposure assessment using probabilistic analysis is the selection of the most appropriate input distribution to represent exposure variables. The study explored the type of parametric distribution that could be used to model variability in food consumption data likely to be included in a probabilistic exposure assessment of food additives. The goodness-of-fit of a range of continuous distributions to observed data of 22 food categories expressed as average daily intakes among consumers from the North-South Ireland Food Consumption Survey was assessed using the BestFit® distribution fitting program. The lognormal distribution was most commonly accepted as a plausible parametric distribution to represent food consumption data when food intakes were expressed as absolute intakes (16/22 foods) and as intakes per kg body weight (18/22 foods). Results from goodness-of-fit tests were accompanied by lognormal probability plots for a number of food categories. The influence on food additive intake of using a lognormal distribution to model food consumption input data was assessed by comparing modelled intake estimates with observed intakes. Results from the present study advise some level of caution about the use of a lognormal distribution as a mode of input for food consumption data in probabilistic food additive exposure assessments and the results highlight the need for further research in this area.  相似文献

目的进行乳酸链球菌素的摄入量评估研究,了解我国居民的乳酸链球菌素摄入情况,为采取恰当的管理措施提供科学依据。方法以2002年全国居民营养调查获得的人群食物摄入量数据和《食品添加剂使用卫生标准》(GB2760—2007)中规定的乳酸链球菌素允许使用的食品类别、最大使用量作为数据来源,利用点评估方法计算我国居民乳酸链球菌素的摄入量。按照不同的年龄、性别、地区组合将人群分为27组,分别计算食物摄入量平均值和第97.5百分位数(P97.5)情况下各组人群乳酸链球菌素的摄入量和各类食物对摄入量的贡献率。结果在食物摄入量为均值的情况下,各组摄入量占每日允许摄入量(ADI)的比例为1.49%~17.16%。在食物摄入量为第97.5百分位数的情况下,各组乳酸链球菌素摄入量为该组ADI的9.35%~77.95%。在食物摄入量为均值和食物摄入量为第97.5百分位数的情况下,乳制品和预制肉制品是乳酸链球菌素摄入量的主要来源。结论无论在食物摄入量为均值情况下还是在食物摄入量为第97.5百分位数的情况下,各组乳酸链球菌素膳食摄入量均未超过其ADI,表明按照目前标准规定使用该添加剂是安全的。  相似文献

In the last decade, the production and consumption of organic food have increased steadily worldwide, despite the lower productivity of organic crops. Indeed, the population attributes healthier properties to organic food. Although scientific evidence is still scarce, organic agriculture seems to contribute to maintaining an optimal health status and decreases the risk of developing chronic diseases. This may be due to the higher content of bioactive compounds and lower content of unhealthy substances such as cadmium and synthetic fertilizers and pesticides in organic foods of plant origin compared to conventional agricultural products. Thus, large long-term intervention studies are needed to determine whether an organic diet is healthier than a diet including conventionally grown food products. This review provides an update of the present knowledge of the impact of an organic versus a conventional food diet on health.  相似文献

The Nutrient Data Laboratory (NDL) of the U.S. Department of Agriculture (USDA) uses the Key Foods approach to select foods for nutrient analyses, allowing NDL to concentrate analytical resources on foods that contribute significant amounts of nutrients of public health interest to the diet.The Key Foods approach uses food composition data from the USDA National Nutrient Database for Standard Reference (SR26) for 14 nutrients of public health significance identified in the 2010 Dietary Guidelines for Americans, intake data from NHANES, What We Eat in America (WWEIA) 2011–12, and the USDA Food and Nutrient Database for Dietary Studies (FNDDS 2011–2012) to connect food composition with consumption data. For each food, NDL multiplies the nutrient content by the grams consumed. NDL then ranks all Key Foods for each nutrient and divides the foods into quartiles. The current Key Foods list contains 576 food items, similar to the list generated from NHANES-WWEIA 2007–08,although the number of foods per quartile and rankings of some foodshave changed slightly. Key Foods help NDL provide current, representative data for researchers, policy makers, the food industry, and consumers. This article describes the Key Foods list that NDL developed using data from SR26 and 2011-12 consumption data from NHANES-WWEIA.  相似文献

European methods for assessing dietary exposures to nutrients, additives and other substances in food are limited by the availability of detailed food consumption data for all member states. A proposed comprehensive European dietary exposure model (CEDEM) applies summary data published by the European Food Safety Authority (EFSA) in a deterministic model based on an algorithm from the EFSA intake method for food additives. The proposed approach can predict estimates of food additive exposure provided in previous EFSA scientific opinions that were based on the full European food consumption database.  相似文献

A dietary exposure assessment of food emulsifiers E481 (sodium stearoyl-2-lactylate) and E482 (calcium stearoyl-2-lactylate) in the Belgian population was performed. Nationally representative food consumption data from the Belgian National Food Consumption Surveys 2004 (BNFCS2004) and 2014 (BNFCS2014) were used for calculations. A conservative approach (combining individual food consumption data with the maximum permitted level (MPL) of foods (tier 2), was compared with more refined estimates (combining individual food consumption data with actual concentrations measured in food products available on the Belgian market (tier 3)). Estimated daily intakes were compared to the acceptable daily intake (ADI) of the stearoyl-2-lactylates. The results of tier 2 demonstrated that 92% of the children (3–9 years), 53% of the adolescents (10–17 years), 15% of the adults (18–64 years) and 26% of the elderly (64–98 years) had a potential intake higher than the ADI. When replacing the MPL with maximum analysed concentration levels in foods, daily intake estimates decreased dramatically. The estimated daily intake of the food emulsifiers was below the ADI for all age groups, except for a small percentage of children (1.9%) for which the intake exceeded the ADI. The main contributors to the exposure of E481 and E482 were bread, rolls and fine bakery wares.  相似文献

The availability of reliable information on food composition is essential both for the evaluation of diet and for nutritional research to relate diet to health or disease. In this article, we compare the total and individual carotenoid contents and the retinol equivalents in fruits and vegetables reported in several food composition tables and HPLC studies. The impact of the variability in carotenoid intake was evaluated on the basis of Spanish National Consumption Statistics and on the values for a standard diet. We identify, from a user's point of view, errors concerning identification of the items and the terms used to refer to the compounds. Food composition tables overestimate (by 2 to 48%) the retinol equivalent intake, whereas they underestimate (by 30 to 50%) the total carotenoid intake according to HPLC data. We study the effect of these main sources of error, their impact on dietary assessment and on the classification of relevant contributors, and the possible consequences with respect to proper diet in terms of nutritional assessment and epidemiological studies. Given the different dietary habits among populations and the fact that certain items may be over‐ or underestimated in databases, the use of a single database may be misleading as to the rate of carotenoid consumption and the “true” nutrient intake in a given population, thus weakening the reliability of the study and resulting in erroneous conclusions.  相似文献

Under-reporting has been identified as an important source of uncertainty in food chemical exposure assessments. The objective of the present study was to assess the influence of under-reporting on food additive intake estimates. Dietary survey data were derived from the North-South Ireland Food Consumption Survey (2001). Data from the Republic of Ireland (n = 958) were used. Energy under-reporters were identified using a ratio of energy intakes to estimated basal metabolic rate. First, food categories (n = 26) included in an assessment of exposure of four food additives were created and patterns of food intakes (i.e. likelihood of consumption, frequency of consumption and reported portion size) between acceptable and under-reporters compared. Second, for each food additive, deterministic intake estimates for the total sample (i.e. acceptable and under-reporters), under-reporters and acceptable reporters were calculated and compared. Differential reporting of the majority of food categories between acceptable and under-reporters was recorded. Under-reporters were less likely to record the consumption of a given food and more likely to under-report the frequency of consumption and portion size compared with acceptable reporters. Food additive intake estimates amongst acceptable reporters were higher than corresponding intake estimates amongst the total sample of reporters and amongst under-reporters. With the exception of one food additive (erythrosine), ratios of upper percentile additive intakes amongst acceptable reporters to corresponding intake estimates amongst the total sample of reporters did not exceed 1.06 when results were expressed as total population or consumer-only intakes. Findings illustrated that energy under-reporting does not materially influence estimates of food additive exposure based on the four food additives studied. However, a number of situations were identified where the under-reporting might exert a more significant impact on resulting exposure estimates.  相似文献

Demands are growing for information on the quality of food composition data. It is generally acknowledged today that the traditional measures of data quality (e.g. standard deviations) do not adequately address the complex issues affecting the quality of food composition data. Current efforts to address this problem centre on using multiple-choice questions to create “objective” quality scores for component values, allowing numeric scores to be set for a wide range of important factors. This paper discusses some of the significant challenges facing us as we begin to implement the process of creating the standards for, and assigning quality values to food composition data. Specific strategic approaches are suggested that can reduce both the complexity and the cost of overcoming each of these challenges.  相似文献

The popularity of herbal products, especially plant food supplements (PFS) and herbal medicine is on the rise in Europe and other parts of the world, with increased use in the general population as well as among specific subgroups encompassing children, women or those suffering from diseases such as cancer. The aim of this paper is to examine the PFS market structures in European Community (EC) Member States as well as to examine issues addressing methodologies and consumption data relating to PFS use in Europe. A revision of recent reports on market data, trends and main distribution channels, in addition an example of the consumption of PFS in Spain, is presented. An overview of the methods and administration techniques used to assess individual food consumption as a starting point, including their uses and limitations, as well as some examples of studies that collect Food Supplement (FS) information, including herbal/botanical/plant-derived products are also discussed. Additionally, the intake estimation process of food nutrients is described and used to propose the PFS ingredients intake estimation process. Nationally representative PFS consumption data is scarce in Europe. The majority of studies have been conducted in Scandinavia and the UK. However the heterogeneity of definitions, study design and objectives make it difficult to compare results and extrapolate conclusions.  相似文献

High prices are often quoted as an obstacle to consumer purchase of organic food products. This article investigates the market performance of organic food products at different price levels and whether high price is necessarily a disadvantage for organic food products, especially with regard to generating repeat purchase. Based on analyses of panel purchase data from 2011 in Denmark, the study explores the effects of production method (organic vs. conventional) and price on consumers’ repeat purchase and cross-purchase across four product categories: red meat, chicken, milk and hard cheese. Results show that a high price is a disadvantage for generating repeat purchase of organic food products. Although organic products enjoy higher repeat purchase than conventional products overall, a high price generates less repeat purchase of organic products than a low or a medium price in all product categories; whereas in the case of conventional food products the situation is the reverse. At the same time, the cross-purchase analysis reveals that consumers who buy organic products from the high price tier are less likely to switch to other price tiers than consumers who buy low or medium price organic products (i.e. there is a spillover of high price organic food purchases to other product categories). Implications for pricing strategies for organic food products are discussed.  相似文献

Polychlorinated dibenzo-p-dioxins and dibenzofurans (PCDD/Fs) are a group of persistent organic pollutants with well-known toxic effects and potential carcinogenicity. Human exposure to PCDD/Fs is mainly through food, including dairy products. The scientific information on the concentrations of PCDD/Fs in milk and dairy products is here reviewed. It also includes the intake of PCDD/Fs through the consumption of these products. PCDD/Fs concentrations in milk and dairy products are currently decreasing. A similar trend is also noted for their contributions to the total dietary intake of PCDD/Fs. No significant health risks due to exposure to PCDD/Fs through the consumption of dairy products are expected.  相似文献
