The tannin profiles of five grape (Vitis vinifera L.) varieties ‘Touriga Nacional’, ‘Trincadeira’, ‘Castelão’, ‘Syrah’ and ‘Cabernet Sauvignon’ and the profiles of their red monovarietal wines from their 2004 and 2005 vintages were studied. Depending on the variety, the polymeric fractions represented 77–85% in seeds and 91–99% in skins. The distribution of the mean degree of polymerisation (mDP) of the proanthocyanidins ranged from 2.8 to 12.8 for seeds and from 3.8 to 81.0 for skins. In the monovarietal wines, the distribution of the mDP of the proanthocyanidins ranged from 2.1 to 9.6. Of the total proanthocyanidins the polymeric fraction represented 77–91% in vintage 2004 and 82–95% in vintage 2005. The wine proanthocyanidins of Trincadeira and Cabernet Sauvignon showed similar tannin profiles in each vintage. After six months of storage, noticeable decreases in total proanthocyanidins concentration were measured. These were accompanied by slight decreases in prodelphinidin percentages but the percentage of galloylation and mDP remained similar.  相似文献

Phenolic compounds of seven grape seed samples originating from mechanical seed oil extraction were identified and quantified by HPLC–DAD before (intact seeds) and after (press residue) the oil recovery process. Total amounts of all identified compounds ranged from 4.81 (‘Cabernet Mitos’) to 19.12 g/kg (‘Schwarzriesling’) of defatted dry matter (DM; ‘Schwarzriesling’) for integral grape seeds, whereas their content in the press residues ranged from 2.80 (‘Cabernet Mitos’) to 13.76 g/kg of defatted DM (‘Spätburgunder’). This is the first study presenting comprehensive data on the contents of individual phenolic compounds comprising all polyphenolic subclasses of press residues from grape seed oil production also covering the determination of the antioxidant activities of each subclass (Folin–Ciocalteu, FRAP and TEAC assays). Additionally, the effects of different solvents on the yields of phenolic compounds were determined. Maximum yields were obtained using methanol/0.1% HCl (v:v), water [75 °C] and a mixture of ethanol and water [3:1; v:v], respectively, whereas pure ethanol resulted in poor polyphenol extraction. The results of the present study confirm the press residues of grape seed oil production still to be a rich source of polyphenolics with strong antioxidant activity.  相似文献

The purpose of the present study was to evaluate small and high molecular phenolics (tannins) and antioxidant activity of Aronia melanocarpa berries, juice and pomace in order to find new potential sources of natural antioxidants. The fruits of Aronia melanocarpa Elliot were collected in the middle of October at a plantation near Wroclaw, Poland. The pomace has a much higher content of phenolics in comparision to juice and fruits. Results showed that polymeric proanthocyanins, predominantly of (−)epicatechin, are the major class of polyphenolic compounds in chokeberry, represent 66% of fruits polyphenols. The average concentration ranged from 1578.79 mg/100 g of DW for chokeberry juice up to 8191.58 mg/100 g in pomace. The concentration of phenolic acids (chlorogenic and neochlorogenic acids) in juice was higher than in pomace. Anthocyanins in Aronia melanocarpa are second phenolic compound group and represent about 25% of total polyphenols, mixture of four different cyanidin glycosides: 3-galactoside, 3-glucoside, 3-arabinoside and 3-xyloside. The higher antioxidant activity expressed as TEAC was measured in pomace >fruit >juice.  相似文献

The phenolic compounds content and antioxidant activity of pomace from the vinification of grape varieties widely produced in Brazil (Cabernet Sauvignon, Merlot, Bordeaux and Isabel) were investigated with a view to their exploitation as a potential source of natural antioxidants. Cabernet Sauvignon grape pomace was found to have the highest content of total phenolic compounds (74.75 mg gallic acid equivalent (GAE)/g), the highest antioxidant activity (determined using the 2,2′-azino-bis(3-ethylbenzothiazoline-6-sulfonate) (ABTS) and 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical scavenging methods; 485.42 and 505.52 μMol Trolox equivalent antioxidant capacity (TEAC)/g, respectively), and the highest reducing power (determined using the FRAP method; 249.46 μMol TEAC/g). The Bordeaux variety showed the highest oxidation inhibition power (41.13%), determined using the β-carotene/linoleic acid method and the highest content of total anthocyanins (HPLC; 29.17 mg/g). Catechin was the most abundant non-anthocyanic compound identified in the grape pomace (150.16 mg/100 g) for all varieties. In this study, pomaces of the red wine vinification of Cabernet Sauvignon and Bordeaux varieties showed the highest potential as a source of antioxidant compounds and natural colourants, respectively.  相似文献

This study was conducted to evaluate the effect of red-wine grape pomaces on the quality and sensory attributes of beef hamburger patties. Both phenolic content and antioxidant activity were assessed using Syrah, Merlot and Cabernet Sauvignon pomaces. Following the assessment, hamburger patties were prepared with Merlot pomace at 0%, 2% and 4% for the patty quality and sensory attributes. Grape seeds possessed significantly higher phenolics and antioxidant activities over the seedless pomace (P < 0.05), whereas no significant difference was found for phenolics and antioxidant activities within the seeds and seedless pomaces. The patty pH decreased as the pomace was added for 2% and 4%. Colour values (L*, a* and b*) of patties lowered as the pomace was added. Allo-Kramer shear force and hardness values increased while cooking yield decreased (P < 0.05) with the addition of pomace. No significant difference between control and Merlot patties was found for flavour, juiciness and colour, whereas lower sensory attributes were observed for texture, taste and overall acceptability. It is observed that the addition of fermented red-wine grape pomace provides hamburger patties with health promoting factors such as antioxidant and other functional components, but it also provided darker, sourer and lower cooking yield.  相似文献

The study was aimed to determine the antioxidant activity (total antioxidant and free radical-scavenging activities) and total phenolic content of Amaranthus sp. The effects of different blanching times (10 and 15 min) on antioxidant activity and phenolic content were also studied. Four types of Amaranthus species locally known as spinach, namely ‘bayam putih’ (Amaranthus paniculatus) (BP), ‘bayam merah’ (Amaranthus gangeticus) (BM), ‘bayam itik’ (Amaranthus blitum) (BI) and ‘bayam panjang’ (Amaranthus viridis) (BPG), were selected. Total antioxidant activity of water-soluble components in raw spinach was in the order of BI ≈ BM ≈ BPG > BP, whereas free radical-scavenging activity was in the order of BI > BPG > BM > BP. The total phenolic contents of BM and BP were significantly higher (p < 0.05) than other samples. All the studied spinach species possessed different antioxidant activities and phenolic contents. Antioxidant activities and phenolic contents of all the spinach were in the order of raw > blanched 10 min > blanched 15 min. Blanching up to 15 min may affect losses of antioxidant activity and phenolic content, depending on the species of spinach.  相似文献

Skins and seeds of 18 grape cultivars belonging to Oriental and North American Vitis Species/hybrids, and Vitis vinifera were analysed for health beneficial properties. Four phenolic compound parameters (total phenols, flavonoids, flavan-3-ols and anthocyanins) and three antioxidant property parameters (DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging, ABTS [2,2-azino-di-(3-ethylbenzothialozine-sulphonic acid)] radical scavenging and FRAP (ferric reducing antioxidant power)) were measured. Principal component analysis (PCA) was used for this evaluation and results showed that both phenolic compounds and antioxidant properties in the seeds and skins varied among the cultivars investigated. V. vinifera “Cabernet Sauvignon” had the highest values of phenolic compounds and antioxidant properties in seeds followed by Muscadines, while the lowest appeared in the Oriental Vitis species. As expected, these values of the Euro-Asian or Euro-American hybrids fell between the parents. However, far less variation of these values was observed in the skins among different grape cultivars investigated. Interestingly, even the total phenolic contents in the berries of two cultivars are similar, distributions of phenolic compounds in seeds and skins varied greatly among them. Additionally, significant correlations among different antioxidant assays in both seeds and skins were observed. These antioxidant properties were also found highly correlated to the main phenolic compounds.  相似文献

Leaves and fruits (peel and flesh) of six improved cultivars (‘Mizuho’, ‘Néctar de Cristal’, ‘Mizauto’, ‘Mizumo’, ‘Centenária’ and ‘NE-3’) of loquat (Eriobotrya japonica Lindl.) were studied for their phenolic composition and antioxidant capacity. The analysis by HPLC-DAD-ESI-MS/MS allowed the identification of 18 compounds (8 hydroxycinnamic acid derivatives and 10 flavonoid glycosides). The quantification of the identified compounds revealed distinct profiles amongst the three analysed materials. Loquat leaves exhibited the lowest amounts of phenolics. 3- And 5-caffeoylquinic, and 5-feruloylquinic acids were the major compounds. Generally, ‘Mizauto’ cultivar presented the highest phenolic content. All loquat materials exhibited DDPH scavenging capacity, in a concentration-dependent manner, the leaves being the most active one. This effect seems to be related to the flavonoid content.  相似文献

This study investigated the effect of a postharvest 1-methylcyclopropene (1-MCP) treatment, controlled atmosphere and storage time on the total antioxidant activity (TAA) and phenolic compounds in the peel and flesh of ‘Cripps Pink’ apples (Malus domestica Borkh.). Preclimacteric apples were harvested and treated with 1-MCP then stored in normal atmosphere (NA) or controlled atmosphere (CA) at 0 °C for up to 160 days. In general, the level of phenolics decreased by 9% in the peel and significantly increased twofold in the flesh during cold storage, regardless of storage atmosphere or 1-MCP treatment. However, treatment with 1-MCP resulted in significantly lower concentrations of chlorogenic acid and procyanidin B2 in apple flesh, and catechin and epicatechin in the peel compared to the control fruits. There was no significant effect of CA on the phenolic compounds during long-term storage, except for quercetin 3-galactoside and quercetin 3-glucoside, which both significantly increased under CA storage. Total antioxidant activity (TAA) is an important nutritional attribute of apples in the human diet. The results showed that TAA in the peel tissue was about eight times higher than that of the flesh, with mean values of 4.75 g TE/kg FW and 0.56 TE/kg FW, respectively. The TAA in both the peel and flesh tissue increased significantly during storage by 40% and 70%, respectively. The storage atmosphere did not significantly affect TAA in either the peel or flesh, whilst the 1-MCP treatment significantly reduced the TAA in the peel tissue only. These results show the beneficial combined effects of pre-storage 1-MCP treatment and CA on ‘Cripps Pink’ apple phenolic composition and antioxidant capacity during long term storage.  相似文献

Quality properties of wine from Korean kiwifruit new cultivars   总被引:2,自引:0,他引:2  
Several domestic varieties of kiwifruit including Actinidia deliciosa cv. ‘Hayward’, ‘Daeheung’, ‘Monty’, ‘Arimold’, ‘Jinmi’, ‘Hyangrok’ and A. chinensis cv. ‘Haenam’ and ‘Golden King’ were utilized for the processing of wines. Kiwifruit wines were analyzed for sugar content, alcohol, acidity, pH, color, total phenols and antioxidant activity by radical scavenging assay ABTS. The soluble solid content of the kiwifruit must ranged between 22 and 25% and then was fermented at 14 °C during 4 months. The amount of alcohol productions differed especially during the first week of fermentation. Among cultivars, ‘Haenam’ and ‘Arimold’ were relatively slower than other wines with regard to alcohol production rate. The yield of wine production was increased from 63.35% to 66.19% in weight by using processing with pectinase.The ‘L’ values of wine made from ‘Hayward’ and ‘Monty’ were lower and darker than those of wines prepared from other cultivars. Wine made from ‘Daeheung’ had total phenols of 790 mg L−1, which was the highest among wines, followed by ‘Haenam’ and ‘Golden King’. ‘Daeheung’ also showed the highest antioxidant activity (22.55 mM TE L−1), while ‘Arimold’ showed the lowest one (10.91 mM TE L−1). The mean overall acceptability scores among kiwifruit wines ranged between 3.8 and 4.5. The sensory evaluations were higher in ‘Golden King’, ‘Monty’, ‘Daeheung’, ‘Arimold’, and ‘Hayward’ than those of ‘Haenam’, ‘Jinmi’, and ‘Hyangrok’. However, for commercial kiwifruit wine production not only overall sensory acceptance, but also functional properties such as total phenols and antioxidant activity, and fruit cultivation volume should be concerned. Therefore, three of kiwifruit cultivars which are ‘Golden King’, ‘Daeheung’, and ‘Hayward’ had the most desirable characteristics suitable for kiwifruit wine production.  相似文献

Concentrations of trans-resveratrol, catechin and epicatechin were analyzed in musts and wines produced from seven red and four white grape cultivars from various wine growing regions of Turkey. Phenolics were quantified using an HPLC method optimized for the separation of wine phenolics. Wine samples contained higher phenolics levels than the corresponding musts. With the exception of Semillion, white wines and musts contained lower concentrations of phenolics than red wines and musts. However, the white cultivar Semillion had the highest concentrations of catechin and epicatechin among all wine and must samples. Semillion wine catechin and epicatechin were 13.7 and 11.8 mg/L, respectively. The highest level of trans-resveratrol among the white cultivars was found in Narince wine (1.93 mg/L). Within the red wine and must cultivars, Bo?azkere, Öküzgozü, and Cabernet contained the highest concentrations of flavan-3-ols and trans-resveratrol. Catechin was the major phenolic in all wines and most musts. Epicatechin was the major phenolic in 6 of the 11 must samples, but none of the wine samples. trans-Resveratrol was generally found in lowest concentrations in both wines and musts.  相似文献

The effects of refrigerated storage at 2 °C and 95% RH and processing treatments on the bioactive compounds and antioxidant capacities of ‘Marion’ and ‘Evergreen’ blackberries were investigated. During refrigerated storage, total phenolics (TPC), total monomeric anthocyanins (ACY), and radical scavenging activity (RSA) fluctuated in ‘Marion’, but TPC and ACY continuously declined in ‘Evergreen’. Oxygen radical absorbance capacity (ORAC) and ferric reducing antioxidant power (FRAP) decreased by 20% and increased by 19% in ‘Evergreen’, respectively after 7-d refrigerated storage, while no changes (P > 0.05) in ‘Marion’ were observed. Compared with frozen samples, freeze-dried ‘Evergreen’ had higher TPC (21%), ACY (5.5%), and RSA (14%), while hot-air dried “Marion” had lower ACY (56%), ORAC (37%), and FRAP (27%) and hot-air dried ‘Evergreen’ had lower TPC (37%), ACY (84%), and RSA (13%). ORAC and FRAP in canned ‘Marion’ was 21-61% lower than that of frozen samples. Jam also had lower TPC and ACY (67-84%), RSA (˜80%), and ORAC and FRAP (65-77%) values than frozen ones in both varieties (P < 0.05). The 6-mo post-process room storage had little effect on the bioactive compounds of frozen and freeze dried samples, but reduced ACY in hot-air dried, canned, and jam samples, and antioxidant capacities of all samples (P < 0.05).  相似文献

The effects of blanching and drying treatments on stability, physical properties, and antioxidant activity of apple pomace polyphenols were evaluated. Blanched and unblanched apples were extracted, and the pomace was dried in a cabinet dryer at a speed of 3 m/s at 50 °C, 60 °C, 70 °C, and 80 °C. The color, total phenolics, flavonoids, individual polyphenolic compounds, anthocyanins, and total antioxidant activity were analyzed. The blanching process caused a major retention in color, total polyphenolic content, and total flavonoid content for fresh apple pomace when compared with fresh unblanched pomace. Drying of either fresh blanched or fresh unblanched pomace caused a significant reduction (P < 0.05) in total polyphenol and flavonoid content leading to a reduction in the total antioxidant activity. When compared with the unblanched treatment, drying the blanched pomace at 80 °C resulted in a product with significant amounts of total phenolics, flavonoids, and antioxidant activity. The individual phenolic compounds were significantly increased (P < 0.05) in blanched pomace that was not dried when compared with unblanched samples. Drying blanched apple pomace did not cause a significant change in the concentration of individual polyphenolic compounds, but drying unblanched apple pomace caused a reduction in the concentrations of epicatechin and caffeic acid, with an important reduction in p-coumaric acid at temperatures higher than 60 °C. However, the drying process caused a significant reduction in the antioxidant capacity. Therefore, a combination of blanching and drying processes for apple pomace results in a product that maintains antioxidant capacity.  相似文献

Fruit from 42 blueberry (Vaccinium spp.) cultivars, including 36 rabbiteye cultivars (Vaccinium ashei Reade), three V. ashei hybrid derivatives, and three northern highbush (Vaccinium corymbosum L.) standards were evaluated for antioxidant capacity, individual flavonoid content, and the contribution of each identified phenolic compound to total antioxidant activity. Considerable variation was found in flavonoid content, antioxidant activity, and their contribution to total antioxidant activity among cultivars. Among 42 blueberry cultivars, the rabbiteye ‘Early May’ contained the highest amount of chlorogenic acid, myricetin 3-arabinoside, quercetin derivatives, and delphinidin-, cyanidin-, petunidin-, and malvidin-basis anthocyanins. ‘Early May’ cultivar also had the highest antioxidant activity (88.2 μmol TE/g fw). ‘Owen’, ‘Bluegem’, ‘Clara’, Climax’, and ‘Centurion’ were among the other rabbiteye cultivars that also had high levels of flavonoids and antioxidant activities. In contrast, the pink-fruited V. ashei hybrid, ‘Pink Lemonade’, had the lowest content of flavonoids and lowest antioxidant activity. The mean flavonoid content and antioxidant activity of rabbiteye cultivars was higher than those among northern highbush and V. ashei hybrids. The antioxidant activity of V. ashei hybrid derivatives was derived mainly from chlorogenic acid, myricetin, and quercetin, which contributed 62.5% of total antioxidant activity, whereas anthocyanins (malvidin, petunidin, delphinidin, and cyanidin) were the main contributors to the antioxidant activity of rabbiteye cultivars (76.2%) and northern highbush standards (76.8%). Blueberry cultivars identified to have high phenolic content and high antioxidant activity could be used as parents for future blueberry breeding programmes to develop new blueberry cultivars with higher antioxidant activity and further improve human health.  相似文献

Total antioxidant capacities of 133 Indian medicinal plant species sampled from 64 families were assessed by ABTS, DPPH and FRAP assays, and their total phenolic contents measured by Folin–Ciocalteu assay. These species exhibited a broad range of antioxidant activities, varying from 0.16 to 500.70 mmol TEAC/100 g DW in the ABTS assay. The antioxidant activity values similarly varied with the DPPH and FRAP assays. Significant and positive linear correlations were found between total antioxidant capacities and phenolic contents (R = 0.89–0.97), indicating that phenolics were the dominant antioxidant constituents in the tested medicinal plants. Preliminary identification of the major phenolic compounds from 83 selected medicinal plants by reversed-phase HPLC revealed phenolic acids, tannins, flavonoids, curcuminoids, coumarins, lignans, and quinines. The fruit of Terminalia chebula, pericarp of Punica granatum and gall of Rhus succedanea showed very high levels of hydrolysable tannins, and the gum of Acacia catechu presented very high levels of catechin and epicatechin in addition to tannins. Major phenolics in many of the medicinal plants were identified for the first time (e.g., Euphorbia lathyrus, Ipomoea turpethum, and Picrorrhiza kurroa). This systematic investigation of a large number of Indian medicinal plants proved important for understanding their chemical constituents and functionality in Ayurvedic medicine, and contributes to the search for natural sources of potent antioxidants.  相似文献

The influence of cultivar and picking date on the phenolic content of walnut liqueur was investigated using HPLC with a PDA detector. Ten phenolic compounds, namely gallic, protocatechuic, ellagic, chlorogenic (5-caffeoylquinic), syringic, p-coumaric and sinapic acids, as well as (+)-catechin, 1,4-naphthoquinone and juglone were detected. The walnut liqueur under analysis was made of the cultivars ‘Franquette’ and ‘Elit’, on two sampling dates (June 30th and July 7th). A close interaction between cultivar and sampling date was noticed for most of the phenolics analyzed. The content levels of the main phenolic compounds under investigation were highest in ‘Franquette’ at the end of June and lowest in ‘Elit’ on the second or both sampling dates, except for syringic acid. A strong influence of cultivar choice and picking date was observed. The content levels of most phenolics were higher in liqueur prepared from the cultivar ‘Franquette’, than in ‘Elit’.  相似文献

Mango (Mangifera indica L.) is an economically important fruit throughout the world. ‘Ataulfo’ mango, a leading cultivar in Mexico, has the highest content of phenolic compounds among several commercial varieties of mango. However, the individual identification and antioxidant contribution of these phenols during ripening of mango fruit is unknown. Qualitative and quantitative analysis of the major phenolic compounds found in ‘Ataulfo’ mango fruit pulp was conducted in four stages of ripeness, using high-performance liquid chromatography coupled to mass spectrometry. The antioxidant contribution of each of the major phenolic compounds was calculated. The major compounds identified were chlorogenic acid (28–301 mg/100 g DW), gallic acid (94.6–98.7 mg/100 g DW), vanillic acid (16.9–24.4 mg/100 g DW), and protocatechuic acid (0.48–1.1 mg/100 g DW). The antioxidant contribution of the four phenolic acids increased during ripening. Gallic acid accounted for the highest contribution (39% maximum value), followed by chlorogenic acid (21% maximum value). This could indicate that these phenolic compounds may have an important role in the antioxidant metabolism in ‘Ataulfo’ mango fruit during ripening, and promoting health benefits to consumers.  相似文献

Grape pomace is an agro‐industrial residue produced worldwide and mainly employed for animal feed or as a fertiliser. Several studies have shown that grape pomace is a rich source of bioactive compounds, such as phenolic compounds, polysaccharides, fatty acids and others. Three varieties of grape pomace were evaluated in this study. Antioxidant activity was determined by three different methods, namely, DPPH˙, ABTS and ferrous ion assays. Fatty acids and phenolic compounds were identified, respectively, by gas and liquid chromatography. Results showed that grape pomace is a rich source of polyunsaturated fatty acids and phenolic compounds. Cabernet Sauvignon pomace revealed higher values of total phenolic compounds, total flavonoids and total monomeric anthocyanin, and presented the lowest value of EC50, and thus a higher antioxidant activity among the samples analysed.  相似文献

The effects of exogenous abscisic acid (ABA) on phenolic characteristics of grapes and wines were investigated in Vitis vinifera cvs. Merlot and Cabernet Sauvignon. Exogenous ABA treatment at veraison significantly improved phenolic contents, mainly anthocyanins and flavonols, and antioxidant properties of the grape skins, but had no effects on total phenolics and antioxidant activities in the seeds or on basic fruit qualities. The wines made from ABA-treated grapes were also consequently enhanced in total phenolics, anthocyanins, flavonols and antioxidant activities. The proportions of methylated anthocyanins in the skins and acylated anthocyanins and derived pigments in the wines were decreased to some degree by exogenous ABA treatment. No distinct relationships were observed between ABA concentrations and phenolic characteristics, and the effects were observed even with 200 mg/L ABA. The results revealed that exogenous ABA applied at veraison offered opportunities to improve phenolic contents and nutritional values of grape skins and wines.  相似文献

为探索不同品种枣果发育过程中多酚类物质与抗氧化活性的动态变化规律,对灰枣、鸡心枣、梨枣、赞皇枣、磨盘枣、葫芦枣6 个枣品种的不同发育期果实中多酚类物质的含量及组成和VC含量及抗氧化活性进行分析测定。结果表明,供试各品种枣果实中总酚、总黄酮、VC含量和抗氧化活性均在采摘初期(幼果期)为最高,其后随着果实的发育呈逐渐下降趋势。其中总酚、总黄酮含量在绿熟期前下降迅速,绿熟期以后变化趋缓,果实接近成熟时则趋于平稳,全红期果实可较采摘初期降低60%以上;VC含量和抗氧化活性在白熟期前下降较快,白熟期后降幅变小。高效液相色谱(high performance liquid chromatography,HPLC)分析结果显示,儿茶素、表儿茶素、芦丁是供试各品种枣果实中最主要的酚类物质,这些酚类物质含量在枣果实发育过程中也呈下降趋势,但在不同品种间存在较大差异。供试枣果实抗氧化活性与其中的总酚、总黄酮、VC以及儿茶素、表儿茶素、芦丁等主要酚类物质的含量均存在极显著相关关系(P<0.01),其中尤以芦丁、表儿茶素、儿茶素与抗氧化活性的相关性较高,说明芦丁、表儿茶素、儿茶素等多酚类物质是枣果中最主要的抗氧化活性成分。磨盘枣、葫芦枣具有较高的多酚类物质含量和抗氧化活性,鸡心枣具有较高的VC含量,是功能性枣果及其加工制品生产的理想品种。  相似文献
