Endogenous tocopherols in extracted lipids from Jack beans (Canavalia gladiata DC.) were determined by high-performance liquid chromatography (HPLC), and were investigated in relation to the fatty acids (FA) distribution of triacylgycerols (TAG) and phospholipids (PL). The dominant tocopherols were (δ)-tocopherol (78.9–96.5 mg%) and (γ)-tocopherol (42.1–56.1 mg%) with much smaller amounts of (α)-tocopherol (1.1–1.3 mg%). The lipids of Jack beans comprised mainly TAG (34.6–38.6 wt.%) and PL (54.8–57.4 wt.%), and other components were also detected in minor proportions (0.3–3.8 wt.%). The PL components included phosphatidyl choline (46.2–48.7 wt.%), phosphatidyl inositol (23.4–29.6 wt.%) and phosphatidyl ethanolamine (18.5–21.2 wt.%). Comparison of these different beans showed, with a few exceptions, no significant differences (P > 0.05) in FA distribution. The FA distribution of TAG among the five beans was evident in the Jack beans: unsaturated FA (93.3–95.3 wt.%) were predominantly concentrated at the sn-2 position and saturated FA (33.6–34.4wt.%) primarily occupying the sn-1 position or sn-3 position. The results obtained from this work would provide useful information to both producers and consumers for manufacturing functional foods or beverages in Japan and elsewhere.  相似文献

Endogenous tocochromanols in extracted lipids from rice brans of the five cultivars were determined by high-performance liquid chromatography, and were investigated in relation to the fatty acid (FA) distribution of triacylglycerols (TAG) and phospholipids (PL). The dominant tocols were α-tocopherol and γ-tocotrienol, followed by α-tocotrienol and with much smaller amounts of γ-tocopherol and δ-tocotrienol. The lipids of these rice brans comprised mainly TAG (80.6–86.0 wt.%), free FA (4.2–9.0 wt.%), and phospholipids (5.5–6.7 wt.%), whilst other components were also detected in minor proportions (0.2–2.1 wt.%). The PL components included phosphatidyl choline (31.8–46.8 wt.%), phosphatidyl ethanolamine (25.0–38.9 wt.%) and phosphatidyl inositol (20.2–23.2 wt.%). Comparison of these different cultivars showed, with a few exceptions, no significant differences (P > 0.05) in FA distribution. FA distribution of TAG among the five cultivars was evident in the rice brans: unsaturated FA were predominantly concentrated at the sn-2 position and saturated FA primarily occupying the sn-1 or sn-3 position. These results suggest that the tocopherol content, lipid component, and FA distribution in rice brans are not dependent on the cultivation areas during the growing season.  相似文献

BACKGROUND: The fatty acid distribution of triacylglycerols (TAG) and major phospholipids (PL) obtained from four varieties of peas (Pisum sativum) was investigated. The total lipids extracted from the peas were separated by thin layer chromatography into seven fractions. RESULTS: The major lipid components were PL (52.2–61.3%) and TAG (31.2–40.3%), while hydrocarbons, steryl esters, free fatty acids and diacylglycerols (sn‐1,3 and sn‐1,2) were also present in minor proportions (5.6–9.2%). The main PL components isolated from the four varieties were phosphatidylcholine (42.3–49.2%), phosphatidylinositol (23.3–25.2%) and phosphatidylethanolamine (17.7–20.5%). Significant differences (P < 0.05) in fatty acid distribution were found for different pea varieties. Phosphatidylinositol was unique in that it had the highest saturated fatty acid content among the three PL. However, the principal characteristics of the fatty acid distribution in the TAG and three PL were evident among the four varieties: unsaturated fatty acids were predominantly located in the sn‐2 position while saturated fatty acids primarily occupied the sn‐1 or sn‐3 position in the oils of the peas. The composition and structure of triacylglycerols (TAGs) and partial glycerides of crude palm oil obtained from interspecific hybrid Elaeis oleifera × Elaeis guineensis, grown in Colombia, were fully characterised and compared to data obtained by analysing crude African palm oil. Hybridisation appears to substantially modify the biosynthesis of fatty acids (FAs) rather than their assembly in TAGs. In fact, total FAs analysis showed significant differences between these two types of oil, with hybrid palm oil having a higher percentage of oleic acid (54.6 ± 1.0 vs 41.4 ± 0.3), together with a lower saturated fatty acid content (33.5 ± 0.5 vs 47.3 ± 0.1), while the percentage of essential fatty acid, linoleic acid, does not undergo significant changes. Furthermore, 34 TAG types were identified, with no qualitative differences between African and E. guineensis × E. oleifera hybrid palm oil samples. Short and medium chain FAs (8:0, 10:0, 12:0, 14:0) were utilised, together, to build a restricted number of TAG molecular species. Oil samples from the E. guineensis × E. oleifera hybrid showed higher contents of monosaturated TAGs (47.5–51.0% vs 36.7–37.1%) and triunsaturated TAGs (15.5–15.6% vs 5.2–5.4%). The sn-2 position of TAGs in hybrid palm oil was shown to be predominantly esterified with oleic acid (64.7–66.0 mol% vs 55.1–58.2 mol% in African palm oil) with only 10–15% of total palmitic acid and 6–20% of stearic acid acylated in the secondary position. The total amount of diacylglycerols (DAGs) was in agreement with the values of free acidity; DAG types found were in agreement with the representativeness of different TAG species.  相似文献

Hens were fed five diets based on rapeseed/corn oils with or without addition of the marine microalgae, Nannochloropsis oculata. Colours of egg yolk, fatty acid profiles in phospholipid (PL) and triacylglycerol (TAG) fractions and carotenoid contents were analysed. The major effects on yolk fatty acid composition were observed in the PL fraction with changes in 18:2n − 6, 18:3n − 3, 20:4n − 6, 20:5n − 3 and 22:6n − 3. The highest amounts of eicosapentaenoic acid and docosahexaenoic acid were obtained from the diet containing 20% N. oculata, whereas the highest arachidonic acid content in yolk was from the corn oil diet. In addition, colour (a* value) and carotenoid content increased when N. oculata was included in the diet. Long chained fatty acids were almost exclusively present in the PL fraction of yolk. This study shows that fatty acid composition and carotenoid content of egg yolk are improved by addition of N. oculata in laying hen diet.  相似文献

The lipid composition and the distribution of fatty acids in the lipid pool were determined in eicosapentaenoic acid (EPA)-producing microalga (Nitzschia laevis) grown under different temperatures. Both the relative amounts of lipid classes and the degree of fatty acid unsaturation in various lipid species were not greatly changed under tested growth conditions. Higher temperature up to 23 °C benefited the growth of N. laevis but only had a slight influence on EPA and lipid contents. Further increasing the culture temperature caused a serious inhibition of both the cell growth and fatty acid biosynthesis. Under all temperatures tested, triacylglycerol (TAG) was the predominant lipid constituent (64.5–69.1% of total lipid) and was highly saturated. Lower temperature favored the formation of polar lipids. The highest content of phosphatidylcholine (PC), the major phospholipids component, was reached at 15 °C (10.9% of total lipid). In sharp contrast to TAG, PC was highly unsaturated and contained a higher amount of EPA under lower temperature. The highest EPA content in polar lipid was achieved at 19 °C. The results from this investigation suggested that the low temperature could improve the distribution of polyunsaturated fatty acids in phospholipids, though it could not significantly influence their amount, especially in PC.  相似文献

Six cultivars of Lupinus albus L. (white lupin) were grown in two subcontinental-climate environments and one Mediterranean-climate environment in Italy, to assess the influence of genotypic (G) and genotype × environment (GE) interaction effects on grain yield and grain content of oil, total saturated fatty acids (FAs), polyunsaturated FAs, monounsaturated FAs, and ω−3/ω−6 FA ratio. The variance of genotypic effects was much larger than the GE interaction variance for all variables, except for grain yield, indicating that oil content and FA composition of different varieties can be assessed reliably in just a few test environments. Gas-chromatographic analyses highlighted that linoleic acid and α-linolenic acid were in the range 1.76–4.76 mg/g flour (7.79–15.81% of total FAs) and 1.17–3.14 mg/g flour (5.40–10.36% of total FAs), respectively. As a consequence, the analysed lupin seeds exhibited a very favourable ω−3/ω−6 FA ratio, ranging from 0.49 to 0.79.  相似文献

A rapid Fourier transformed infrared (FTIR) attenuated total reflectance (ATR) spectroscopic method was applied to the determination of fatty acid (FA) profile and peroxide value (PV) of virgin olive oil. Calibration models were constructed using partial least squares (PLS) regression. A FA calibration model was constructed in the spectral range from 3033 to 700 cm−1. Oleic acid (62.0–80.0%), linoleic acid (5.3–15.0%), saturated fatty acids (SFA, 12.6–19.7%), mono-unsaturated fatty acids (MUFA, 64.4–81.0%) and poly-unsaturated fatty acids (PUFA, 6.0–15.9%) were considered for chemometric analysis. PV (5.7–15.7 meq O2 kg−1) was calibrated using the signal of the full spectral range 4000–700 cm−1 with first derivative pre-treatment. The LODs of the FTIR-chemometric methods were: 3.0% for oleic acid, 0.5% for linoleic acid, 1.3% for SFA, 3.0% for MUFA, 0.3% for PUFA and 1.0 meq O2 kg−1 for PV. Analytical methods were evaluated by use of validation samples (n = 25 for all the FA related parameters and n = 10 for PV) with nearly quantitative recovery rates (98–103%). The proposed method provided results comparable to official procedures, with the advantages of being less expensive and more rapid.  相似文献

Soybeans were exposed to microwave heating for 6, 12 or 20 min at a frequency of 2450 MHz. The hypocotyls were then separated from the other tissues, and the lipid components and the positional distribution of fatty acids in triacylglycerols (TAG) and phospholipids (PL) were investigated. Major lipid components were TAG and PL, while steryl esters (SE), free fatty acids (FFA), and 1,3- and 1,2-diacylglycerols (DAG) were minor ones. Following microwave heating, a significant increase (p<0.05) was observed in FFA and in both forms of DAG (primarily 1,3-DAG). The greatest rate of PL losses (p<0.05) was observed in phosphatidylethanolamine (PE), followed by phosphatidylcholine (PC) and phosphatidylinositol (PI). Significant differences (p<0.05) in fatty acid distributions occurred (with few exceptions) when soybeans were microwaved for 12 min or more. Nevertheless, the principal characteristics for the positional distribution of fatty acids still remained after 20 min of microwave heating.  相似文献

Extracted lipids obtained from black and red rices were analysed by high-performance liquid chromatography (HPLC), for endogenous tocochromanols. The molecular species and fatty acid (FA) distribution of triacylglycerols (TAG) isolated from these total lipids were analysed by a combination of AgNO3 thin-layer chromatography (TLC) and gas chromatography (GC), and were investigated in relation to the content of endogenous tocochromanols. With a few exceptions, the predominant tocols were γ-tocotrienol and α-tocopherol, followed by α-tocotrienol (red) and γ-tocopherol (black) with much smaller amounts of β-, δ-tocopherols and δ-tocotrienol. The lipids of these rices were comprised mainly of TAG (76.4–80.5%), free FA (7.2–9.8%), and phospholipids (3.5–3.6%), whilst other components were present in minor proportions (0.1–4.1%). The principal FA components were palmitic (16:0), oleic (18:1n − 9) and linoleic (18:2n − 6) acids. Fifteen different TAG molecular species were detected and quantified by successive applications of AgNO3-TLC and GC. The major TAG components were S2M (7.0–7.8%), SM2 (12.6–12.9%), M3 (15.7–16.5%), SMD (23.5–23.7%), SD2 (5.7–5.8%), M2D (9.3–9.8%), MD2 (8.1–8.6%) and D3 (5.8–7.4%) (where S, M, D, and T denote a saturated FA, a monene, a diene, and a triene, respectively). The results suggested that these rice lipids contain large amounts of nutraceuticals with proven positive health effects.  相似文献

Fatty acid (FA) distributions and molecular species of triacylglycerols (TAG) isolated from total lipids extracted from adzuki beans (Vigna angularis) were analysed by a combination of AgNO3-TLC and GC, and were investigated in relation to the content of endogenous antioxidants determined by HPLC. δ-Tocopherol was present in the highest concentration (30.5 mg/kg beans), and γ-tocopherol in small amounts (12.8 mg/kg beans). The major lipid components were phospholipids (74.3%), TAG (13.5%), hydrocarbons (4.6%) and steryl esters (4.0%), whilst other components were also present in minor proportions (0.5–1.3%). Seventeen different molecular species were detected. The major TAG components were SMD (5.0%), S2T (19.2%), SD2 (13.7%), SMT (9.3%), MD2 (4.5%), SDT (7.0%), D3 (8.8%) and ST2 (15.8%) (where S, M, D, and T denote a saturated FA, a monoene, a diene, and triene, respectively). These results would be useful to both consumers and producers for manufacture of traditional adzuki foods in Japan.  相似文献

Nutritional quality parameters (proximate and mineral composition, contents of glycogen, fatty acids, cholesterol, plant sterols, fat-soluble vitamins, carotenes) and ecophysiological and commercial quality indicators (Condition Index, percent content of meat and intervalvar fluid) of the striped venus clam, Chamelea gallina, from the central Adriatic coast of Italy were studied at seasonal intervals over a 1-year period. Contents of protein (8.55–10.7 g/100 g), total lipid (0.73–1.59 g/100 g), glycogen (2.25–4.96 g/100 g) and non-protein nitrogen (0.54–0.78 g/100 g) varied significantly during the year, reaching the highest values in winter, in coincidence with a peak of Condition Index. Gas chromatography of total lipids showed high percentages of n − 3 polyunsaturated fatty acids (33.7–41.9% of total fatty acids), in particular eicosapentaenoic (8.16–20.0% of total fatty acids) and docosahexaenoic acids (12.5–20.3% of total fatty acids) and low levels of total n − 6 polyunsaturated fatty acids (3.61–7.87% of total fatty acids). HPLC analysis of the unsaponifiable lipids showed low levels of cholesterol, the dominant sterol (28.3–34.2 mg/ 100 g), and variable amounts of plant sterols (stigmasterol + campesterol, β-sitosterol, fucosterol + brassicasterol), α-tocopherol and carotenes.  相似文献

Sutchi catfish (Pangasius hypophthalmus) produced in the freshwater basins of Vietnam, available on the Italian market as frozen or thawed fillets, were studied for their nutritional quality and safety aspects. Proximate composition, mineral content, fatty acid profile, unsaponifiable components of the lipid fraction and drip loss during thawing at 5 °C were determined on the fillets. Fillets were characterised by high moisture levels (80–85%) and low protein (12.6–15.6%) and lipid (1.1–3.0%) contents. Total lipids were characterised by low cholesterol levels (21–39 mg/100 g), high percentages of saturated fatty acids (41.1–47.8% of total fatty acid) and low percentages of polyunsaturated fatty acids (12.5–18.8% of total fatty acids), which were mainly represented by linoleic acid (44–59% of total polyunsaturated fatty acids). The mineral composition was characterised by a high sodium content (222–594 mg/100 g), probably partially due to the sodium tripolyphosphate (E 451) used to retain moisture. As regards safety aspects, the quality of the samples analysed was good, with low residue levels of mercury, organochlorine pesticides and polychlorinated biphenyls.  相似文献

Samples of cultivated Ulva clathrata were collected from a medium scale system (MSS, 1.5 × 1.5 m tank), or from a large scale system (LSS, 0.8 ha earthen pond). MSS samples were dried directly while the LSS sample was washed in freshwater and pressed before drying. Crude protein content ranged 20–26%, essential amino acids accounting for 32–36% of crude protein. The main analysed monosaccharides were rhamnose (36–40%), uronic acids (27–29%), xylose (10–13%) and glucose (10–16%). Some notable variations between MSS and LSS samples were observed for total dietary fibre (26% vs 41%), saturated fatty acids (31% vs 51%), PUFAS (33% vs 13%), carotenoids (358 vs 169 mg kg−1 dw) and for Ca (9 vs 19 g kg−1), Fe (0.6 vs 4.2 g kg−1), Cu (44 vs 14 mg kg−1), Zn (93 vs 17 mg kg−1) and As (2 vs 9 mg kg−1). The chemical composition of U. clathrata indicates that it has a good potential for its use in human and animal food.  相似文献

Fructose, glucose and sucrose, as the major soluble sugars and citric and malic acids, as the major organic acids, were identified and determined in kale (Brassica oleraceae L. var. acephala DC., black cabbage) leaves. Fructose was the predominant sugar (2011 mg 100 g−1 dry wt) identified, followed by glucose (1056 mg 100 g−1 dry wt) and sucrose (894 mg 100 g−1 dry wt). The contents of citric and malic acids were at 2213 and 151 mg 100 g−1 dry wt in the leaves. The 16:0, 18:2n − 6 and 18:3n − 3 fatty acids were the most abundant fatty acids in the leaves. Considering the level of these fatty acids, 18:3n − 3 was found to be the highest (85.3 μg g−1 dry wt), contributing 54.0% of the total fatty acid content. Linoleic acid (18:2n − 6), being the second most abundant fatty acid was present at 18.6 μg g−1 dry wt, contributing 11.8% of the total fatty acid content. In the seed oil of kale, 22:1n − 9 was the most abundant fatty acid (4198 μg g−1 dry wt, 45.7%), with 18:2n − 6 (1199 μg g−1 dry wt, 12.3%) and 18:1n − 9 (1408 μg g−1 dry wt, 14.8%) being the second next most abundant fatty acids. The most abundant amino acid was glutamic acid (Glu) which was present at 33.2 mg g−1 dry wt. Aspartic acid, which was the second most abundant amino acid, was present at 27.6 mg g−1 dry wt and accounted for 10.2% of the total amino acid content of kale leaf. The amino acid content was assessed by comparing the percentages of the essential amino acids in kale leaf versus those of a World Health Organization (WHO) standard protein. The protein of kale leaf compares well with that of the WHO standard. Only one amino acid, lysine, had a score that fell below 100%; the lysine score of kale leaf was 95%. This study attempts to contribute to knowledge of the nutritional properties of the plant. These results may be useful for the evaluation of dietary information.  相似文献

Ten margarine brands of Pakistan were analyzed for their fatty acid composition with emphasis on trans fatty acids (TFA) using GC-MS. Saturated, cis-monounsaturated and polyunsaturated fatty acids were present at 24.2–58.1, 5.7–35.4 and 3.8–37.4% of total fatty acids, respectively. Among the saturated fatty acids, palmitic acid (16.9–33.8%) was dominant in all analyzed margarine brands and its higher amount indicates that palm oil was a major contributor in the margarine manufacturing. Among samples tested only one contained a low level of TFA (2.2%) while the rest contained very high amounts of TFA (11.5–34.8%) which clearly shows that hydrogenated oils were used in the formulation of margarines. Fatty acid profiles demonstrated that all samples belong to the hard margarine category containing high amounts of trans and saturated fatty acids which is an alarming issue for the health of consumers.  相似文献

This study was carried out to determine the proximate composition, fatty acid profile and biometric data for farm fish species Labeo rohita, Cirrhinus mrigala, Catla catla raised under identical conditions. The analysed fish species were found as source of high polyunsaturated fatty acids with low fat high protein. Fat content of the fish fillets was in range 2.57–3.11 g/100 g. Whereas fat content for feed was 14.90 g/100 g. The protein level for the three fish ranged from 20.00–23.57 g/100 g and in feed it was estimated in the range of 67.70 g/100 g. The palmitic acid and stearic acid were the main saturated fatty acids (SFA), oleic acid was the predominant MUFA while the docosahexanoic acid and eicopentanoic acid were the major PUFA. The percentage of DHA exceeded that of EPA in all fish species analysed. The n−3/n−6 ratio ranged from 1.69–1.91. PUFA/SFA ratio was much higher in L. rohita (1.40) due to abundance of n−3 PUFA, particularly DHA.  相似文献

Thirty llamas were used to study the effect of a 90 day feed supplementation on meat quality, chemical composition and muscle fatty acid profile. Treatments were: GR = llama on native pasture until slaughter; GR + SH = like GR, but with overnight free access to barley/alfalfa hay; and GR + SC = like GR, but with overnight free access to a wheat bran/sorghum grain concentrate. The supplementation had no effect on postmortem pH and temperature decline in the Longissimus lumborum muscle (LLM), cooking losses nor Warner–Bratzler shear force values (P > 0.05). Meat from GR + SC llama had higher fat content in LLM (P < 0.05) compared to GR and GR + SH llama. Intramuscular fat from GR + SH llama showed higher (P < 0.01) proportions of polyunsaturated fatty acids, higher (P < 0.05) polyunsaturated fatty acids/saturated fatty acids and desirable fatty acids ratio, lower (P < 0.05) omega-6/omega-3 (n − 6/n − 3) ratio, and higher (P < 0.01) conjugated linoleic acid.  相似文献

The composition of three porcine muscles (Longissimus thoracis: LT, Semitendinosus: ST, Masseter: MS) was characterized and its link with muscle quality was evaluated. The LT muscle had a higher content of tyrosine, tryptophan, and carbohydrates and a lower content of vitamin E and haem iron than the MS muscle, while the ST had similar composition to MS but a lower content of haem iron. Large differences between muscles were observed in relative amounts of most of the major fatty acids. The LT muscle had higher saturated fatty acids (SFA) and n− 6:n− 3 fatty acid ratio, and lower polyunsaturated fatty acids (PUFA), PUFA:SFA ratio, unsaturation index and average fatty acid chain length than the ST and MS muscles. Muscle pH, redness and chroma were positively correlated with vitamin E and unsaturated lipids and negatively correlated with tyrosine, tryptophan, carbohydrates and saturated lipids, whereas muscle lightness and expressible juice showed similar correlations but an opposite sign with these variables.  相似文献

Today’s consumers look for foods which provide nutrition and pleasure, while safeguarding their health, the result of which is that they increasingly avoid foods containing cholesterol and saturated and trans fatty acids. Chemically modified vegetable oils can help tailor meat products to meet this growing need and at the same time fulfil the technological needs of the meat processing industry. In this study, 16 backfat samples were characterised for their solid fat content (SFC) and melting point and these characteristics were used to design a mixture of chemically modified vegetable oils for use as a pork fat substitute for elaborating sausages. The mixtures were prepared with different vegetable oils bearing in mind with stearic acid content due to its close correlation with the SFC. The backfat was characterised as a function of its SFC and some modified vegetable oil mixtures were proposed, which led to a 10–20% diminution in saturated fatty acids and with a melting point similar to those observed in the backfat. The fatty acid profile pointed to a polyunsaturated/saturated fatty acids ratio higher than 0.4, and an n − 6/n − 3 fatty acid ratio of less than 4 in both modified vegetable oil mixtures proposed.  相似文献
