对中空纤维超滤膜法澄清橙汁(Citrus sinensis)进行了研究。试验着重研究了操作压力、温度、物料浓度和进料流速对膜透过速率的影响,并测定了超滤(?)中的营养成分的保存率。还探讨了超滤作为膜蒸馏浓缩预处理的可能性。结果表明,超滤法澄清橙汁是可行的.对果汁营养成分及风味无显著影响。由于超滤除去了果胶等固形物,因此能提高膜蒸馏过程的蒸馏通量。 相似文献

本文以面粉、豆纤维粉、橙皮糖为主要原料,通过单因素实验,研究豆纤维粉添加量、橙皮糖添加量、糖油质量比(黄油与糖粉的比值)对豆纤维橙味曲奇饼干的感官评分和硬度的影响。按Box-Behnken法设计试验方案,运用响应面分析法建立多元二次非线性回归方程,以感官评分为指标,优化豆纤维橙味曲奇饼干配方,确定豆纤维粉添加量、橙皮糖添加量、糖油质量比。结果表明,豆纤维橙味曲奇饼干的最佳添加量为:豆纤维粉添加量为26%(以面粉与豆纤维粉的总量为基准)、橙皮糖添加量为16%、糖油质量比为2:1。在此条件下的曲奇饼干色泽均匀,硬度、甜度适中,并具有橙皮特有的清香以及豆纤维食品的独特口感,其感官评分为(87.3±1.1)分,与预测值87.7分接近,偏差为0.4%,说明该模型下确定的产品配方对实际生产具有较好的指导和应用价值。 相似文献

利用甜橙加工制汁后的废料———甜橙皮渣进行固态发酵制作蛋白质强化饲料。通过对发酵饲料样品的相关营养成分分析测定等方式筛选菌种、优化发酵条件,即经过单菌试验初步筛选出5株优良菌种,进行3种菌的混合固态发酵,找出适宜该皮渣发酵的优势菌种组合,并对发酵条件进行了优化设计,结果为:添加15%左右的麸皮;在温度29℃左右,pH自然下培养4~5d;混菌接种比为黑曲霉(2281)∶康宁木霉(13016)∶产朊假丝酵母(1807)=1∶2∶3。该饲料样品的粗蛋白含量比相应对照高出近80%,是纯皮渣对照样粗蛋白(绝干含量)的3~4倍。此强化蛋白饲料未添加任何无机物或有机氮,全天然,无污染。 相似文献

对红江橙皮渣提取果胶的最佳工艺进行了研究.结果表明:Al2(SO4)3为最优果胶沉淀剂;酸提条件为在水料比20:1(m/V)、85 ℃和pH 2.0下酸提120 min;盐析条件为在pH 7.0和75 ℃下每100 g果胶粗提液(由10 g红江橙皮渣制成)中加入5 mL的饱和Al2(SO4)3盐析60 min;脱盐条件为每1 g 果胶粗品用20mL的混合液(VHCl/V乙醇/V水=47/50/3)脱盐30min.最终果胶得率为6.70%,含盐量为4.34%;成品中半乳糖醛酸含量为47.3%,甲氧基含量为33.3%,胶凝度109. 相似文献

Starch, its derivatives and hydrolysis products are well established as industrial products for the food and technical industries. More advanced products, based on starch, are available today, manufactured by biotechnical and chemical processes. They comprise a variety of monomeric compounds like polyols, hydroxycarboxylic acids, glycosides and their derivatives obtained by esterification, etherification and amination. In addition, interesting oligomeric and polymeric products are accessible, based on starch and its derivatives. Selected examples of these products are described as well as their respective production methods. For some products the chemicals synthesis will be compared with the fermentation route, analysing the relative advantages and disadvantages of both. The wide application potential of these “new” products is illustrated with reference to their use in different industries, e. g. in the manufacturing and processing of resins, polymers, detergents, cosmetics, pharmaceuticals and processed foods. Special emphasis will be given to the structural peculiarities of these carbohydrate derivatives, for example chirality, which enables them to act as unique intermediates in the production of biologically active products. 相似文献

分别研究了干柑橘皮粉中类胡萝卜素的稳定性以及光照、温度、酸碱、氧化剂、还原剂、金属离子、防腐剂和酸味剂对柑橘皮类胡萝卜素提取液中胡萝卜素稳定性的影响。结果表明:光照、温度、氧气都能影响到干柑橘皮粉中类胡萝卜素的稳定性,其中光照对其影响最为显著。对于柑橘皮类胡萝卜素提取液中类胡萝卜素,在高温下不稳定;对室外日光、紫外光不稳定,对室内光较稳定;在碱性环境中较稳定;加入金属离子如Fe3+、Fe2+、Cu2+、Al3+不稳定,其它金属离子影响小;加入氧化剂、酸味剂对其有破坏作用,加入还原剂、防腐剂影响小且对色素有一定的保护效果。 相似文献

以干燥的夏橙皮渣为原料,先用复合磷酸盐碱性溶液浸泡24 h,采用超声波辅助提取法对果胶进行了提取。以果胶提取率为考察指标,研究了盐酸浓度、液料比、水解温度、水解时间、超声波处理时间对果胶提取的影响。结果表明,盐酸浓度为0.15 mol/L、液料比为30 m L/g、水解温度为70℃、水解时间为30 min、超声波处理时间为40 min时,果胶提取率高达20.67%,试验重现性好。 相似文献

Two types of lemon albedo (raw and cooked) at 5 concentrations (0% to 10% in 2.5% increments) were added to dry‐cured sausages, and compositional, textural, and sensory analyses were conducted on finished products. The addition of albedo provided an improvement in nutritional properties from fiber addition and may have beneficial effects due to the presence of active biocompounds as evidenced by a decrease in residual nitrite levels and delayed oxidation (based on CIE redness values). Products with sensory properties similar to control sausages were those that contained 2.5% raw albedo and 2.5%, 5%, and 7.5% cooked albedo. 相似文献
