This study evaluated composite beef–bambara groundnut (Vigna subterranean L.) seed flour patties to determine the effect of bambara groundnut flour (BGF) inclusion on the quality and acceptability of the products. The effect of different levels of BGF (0%, 2.5%, 5.0% and 7.5%) on the proximate composition and pH indicate that BGF had no significant (p ? 0.05) effect on moisture, protein and carbohydrate of raw patties except ash and pH whereas there was significant (p ? 0.05) effect on all the parameters for the cooked patties. BGF significantly (p ? 0.05) reduced the shrinkage of the cooked patties from 9.13% to 6.76%, while percentage cooking yield, moisture retention, and fat retention increased significantly (p ? 0.05) with increasing BGF levels from 79.1% to 87.2%, 67.51% to 78.05% and 73.51% to 88.34%, respectively. The use of BGF significantly (p ? 0.05) increased the pH of cooked patties from 6.16 to 6.23. Beef patties extended with BGF up to 5% addition exhibited good quality attributes most acceptable to the consumers. The pH of the 0% BGF–beef patties decreased significantly during storage, up to day 14, and increased thereafter. However, the pH of the patties with BGF consistently decreased significantly up to day 21. The TBA values of both (0% and 5% BGF–beef patties) increased significantly (p ? 0.05) from 0.054 to 0.25 and from 0.05 to 0.24 mg malonaldehyde/kg, respectively. All sensory attributes decreased significantly (p ? 0.05) as storage time progressed. The physico-chemical, microbiological and sensory characteristics of the patties were found to be acceptable after 21 days refrigerated storage.  相似文献

Bambara groundnut is an underutilised African leguminous crop. This study investigated the effect of annealing on the complexing ability and functionality of Bambara groundnut starch with palmitic acid. Corn starch was included as the reference. Annealing created cracks and pores on the surface of Bambara groundnut and corn starches, respectively. Bambara groundnut starch had significantly higher amylose content, higher peak and final viscosities than corn starch. The peak viscosities of native Bambara groundnut and corn starches significantly reduced with palmitic acid addition. Greater reduction in peak viscosities was observed when the annealed starches were complexed with palmitic acid, suggesting that more palmitic acid was complexed after annealing. This was confirmed by XRD peaks and melting enthalpies. Pasting of native Bambara groundnut and corn starches with palmitic acid resulted in the formation of type I V‐amylose complexes, while type II complexes were formed from annealed starches pasted with palmitic acid.  相似文献

Benniseed and bambara groundnut seeds were roasted at 80 and 120 °C for 10–60 min. For both flours, the effects of roasting temperature and time on selected functional properties and chemical composition were determined, as were the effects of pH on the emulsification capacity and nitrogen solubility. The chemical constituents of the raw flours were present at higher concentrations than those of the roasted flours except for fat and ash. Protein concentrates of both flours contained 80.5–81.5% crude protein as the major constituent. Nitrogen solubility was lowest at pH 4.0 for raw and roasted benniseed flour and pH 5.0 for raw and roasted bambara groundnut flour. Roasting generally lowered the nitrogen solubility and increased the water and oil absorption capacities while decreasing the foaming capacity and emulsification capacity of both flours.  相似文献

Lipid oxidation and fishy odour development in protein hydrolysate from fresh and ice-stored Nile tilapia (Oreochromis niloticus) were investigated. During iced storage of 18 days, heme iron content decreased with a concomitant increase in non-heme iron content (P < 0.05). Peroxide value (PV) and thiobarbituric acid reactive substances (TBARS) values increased. Phospholipid content decreased with a corresponding increase in free fatty acid content. The results suggested that lipid hydrolysis and oxidation took place during storage. When protein hydrolysates were produced from fresh and 18 days ice-stored Nile tilapia muscle, higher lipid oxidation and fishy odour/flavour along with higher amount volatile compounds were obtained in hydrolysate for unfresh sample (P < 0.05). However, the addition of mixed antioxidants during hydrolysis process markedly lowered lipid oxidation, b, ΔC, ΔE values, fishy odour/flavour as well as the formation of volatile compounds in the resulting hydrolysates prepared from both fresh and unfresh samples. Therefore, hydrolysate from Nile tilapia muscle with reduced fishy odour and lighter colour could be prepared by using fresh fish and incorporation of mixed antioxidants during hydrolysis.  相似文献

Five landraces of bambara groundnut ( Vigna subterranea ) from northern Ghana were assessed for their physical characteristics, chemical composition and the effects of variety and processing on quality and consumer appeal for use in food products. The cultivars had distinct colour differences ranging from cream through brown, maroon to black, with variations in the seed sizes and seed coat thicknesses. Significant ( P  <   0.05) differences were observed in some of the chemical components of the different varieties of bambara. Protein and fat contents ranged from 19.3% to 27.1% and 4.8% to 7.0%, respectively, while ash content was not significantly ( P  >   0.05) different among the cultivars. Tannin content ranged between 4.5 mg CE g−1 sample for the cream-coloured and 14.9 mg CE g−1 sample for the black variety. Dehulling increased the protein content, reduced tannin content by up to 92% and improved the colour of bambara products, while heat treatment enhanced their taste, aroma and overall acceptability.  相似文献

The lipids extracted from cowpea flour before and after storage at water activities (aw) of 0·11, 0·33 and 0·75 and at 5, 25 and 40°C for 6 months were examined for their fatty acid composition and oxidation.Linoleic, linolenic and oleic acids, in decreasing order, were the unsaturated fatty acids recorded. The saturated fatty acids were palmitic, stearic and arachidic in decreasing order. The total unsaturated fatty acids concentration was higher than the total saturated fatty acids, with palmitic acid being the single dominant fatty acid.Saturatedunsaturated fatty acid ratios (su ratio) and lipid conjugated diene absorbance at 233 nm indicated that the aw of 0.33 and the storage temperature of 5°C were the most effective in mitigating the oxidation of the cowpea lipid.Oxidation rates of the unsaturated fatty acids were related to their levels of unsaturation.  相似文献

Impact of different pretreatments on chemical compositions of Indian mackerel mince was studied. Mince prepared using washing/membrane removal/alkaline solubilisation process (W–MR–Al) contained the lowest remaining myoglobin and haem iron content and also showed the lowest total lipid and phospholipid contents. When mince and W–MR–Al were hydrolysed using Alcalase for up to 120 min, a higher degree of hydrolysis (DH) was found in W–MR–Al after 30 min of hydrolysis. Furthermore, hydrolysate from W–MR–Al had lower peroxide value (PV), thiobarbituric acid reactive substances (TBARS) and non-haem iron content throughout hydrolysis period (P < 0.05). When hydrolysate powder produced from mince and W–MR–Al (0–0.3% w/v) were fortified in milk, the former resulted in the lower likeness score (P < 0.05) at all levels used. The addition of the latter, for up to 0.2%, had no effect on likeness of all attributes, compared with milk without fortification (P > 0.05). Therefore, the appropriate pretreatment of mince yielded hydrolysate with lower fishy odour.  相似文献

Changes in heme proteins and lipids associated with off-odour development in seabass (Lates calcarifer) and red tilapia (Oreochromis mossambicus × O. niloticus) muscles during 15 days of iced storage were studied. Fresh seabass contained the higher contents of myoglobin and heme iron, compared with red tilapia (P < 0.05). An increase in metmyoglobin proportion was observed during storage. After 3 days of storage, a decreased heme iron content and a concomitant increase in non-heme iron content were noticeable in both fish (p 0.05). Oxidation of myoglobin and released non-heme iron were associated with lipid oxidation. The increases in oxidation products and free fatty acids were observed as the storage time progressed. Fishy and rancid odours were detected at day 6 of storage for both fish and a higher intensity was found in seabass muscle. Thus, the off-odour in fish muscle was mostly governed by lipid oxidation and species specific.  相似文献

The effects of simulated solar heat on oviposition, development and survival of Callosobruchus maculatus (F.) and Callosobruchus subinnotatus (Pic) in stored bambara groundnut, Vigna subterranea (L.) Verdcourt, were evaluated at three high temperatures (40°C, 45°C and 50°C) at a constant, low humidity (30% relative humidity). Exposure to these temperatures for 6 h significantly reduced oviposition in C. maculatus and C. subinnotatus females. Females of both species that were exposed to 50°C laid significantly fewer eggs than those exposed to 40°C; and in the case of C. maculatus, females exposed to 45°C also laid significantly fewer eggs than those exposed to 40°C. The percentage of eggs laid by females of both species that reached adulthood after exposure to 50°C for 2–6 h was significantly lower than the percentage that developed from eggs laid by females that were exposed to 40°C. No adult developed from eggs of C. maculatus exposed for 6 h at 50°C or from eggs of C. subinnotatus exposed for 2 h at this temperature. For both species, no adult progeny subsequently emerged from seeds harbouring first instar larvae when exposed at 50°C for 2, 4 or 6 h. Older larvae of C. maculatus were more tolerant of exposure at 50°C: 26.8, 10.2 and 0.9% of late instar larvae exposed for 2, 4 and 6 h, respectively, developed to the adult stage. In contrast, no adults of C. subinnotatus emerged from seeds harbouring late instar larvae when exposed at 45°C for 6 h nor in seeds exposed to the temperature of 50°C for 4 or 6 h. On average, immature stages of C. subinnotatus were more susceptible to heat treatment than those of C. maculatus.  相似文献

Effects of high-pressure treatment (100 MPa to 600 MPa) on lipid oxidation and composition of fatty acids in yak body fat at 4 °C and 15 °C were investigated for up to 20 days storage. 400 and 600 MPa treatments increase the level of thiobarbituric acid-reactive substances (TBARS) 335% and 400% (p < 0.05), respectively. Composition analysis shows that 600 MPa treatment induces a lower (p < 0.05) percentage of polyunsaturated fatty acids, and C22:6 decreased significantly. A significant decrease in PUFA/SFA and n-6/n-3 PUFA values was observed at the end of storage. Samples treated at the lower pressures gave good sensory acceptability. It is concluded that a higher-pressure treatment is important in catalyzing lipid oxidation and the evolution of fatty acids in pressure-treated yak body fat.  相似文献

Protein and lipid oxidation was followed during processing and storage of mince and washed minces prepared from horse mackerel (Trachurus trachurus). Briefly horse mackerel mince (M0) was washed with three volumes of water, mimicking the surimi production and different washed products were obtained: M1, M2 and M3, with one, two and three washing steps, respectively. The different products were characterised (i.e. lipid content, protein, water, iron, fatty acid profile and tocopherol content) and analysed for protein and lipid oxidation in order to investigate the impact of the washing steps on oxidation. Subsequently the different products were stored for up to 96 h at 5 °C and samples were taken out regularly for analysis. Lipid oxidation was investigated by measuring primary oxidation products (lipid hydroperoxides) and secondary oxidation products (volatiles). Protein oxidation was followed by determination of protein solubility, protein thiol groups and protein carbonyl groups using colorimetric methods as well as western blotting for protein carbonyl groups. Lipid and protein oxidation markers indicated that both lipid and protein oxidation took place during processing and the ranking for oxidation was as follows M0 < M1 < M2 ? M3 with M0 being significantly less oxidised than M3. Results indicated that washing creates an imbalance in the initial prooxidant-antioxidant equilibrium in the muscle tissue and contributes to the observed differences in the oxidative status of the four products obtained. In contrast, during storage of different products, lipid oxidation development was faster in M0 and the ranking was as follows M0 > M1 > M2 ? M3. Lipid and protein oxidation developed simultaneously in different minces during storage, but it was not possible to determine at which level these two reactions were coupled.  相似文献

This study consisted of two trials aiming to evaluate, for the first time, the antioxidant potential of rooibos in meat products. With this purpose, the first trial evaluated three unfermented (green) rooibos forms (dried leaves, water extract, freeze-dried extract) added at 2% inclusion level to ostrich meat patties on an 8-day shelf-life trial. A Control group without green rooibos inclusion was also considered. The second trial evaluated the addition of different concentrations (0%, 0.25%, 0.5% and 1%) of a fermented rooibos extract to nitrite-free ostrich salami. The 2% green rooibos inclusion considerably lowered the TBARS content of ostrich patties, in this way extending their shelf-life. The fermented form (0.5% and 1%) was also effective in delaying lipid oxidation in ostrich salami until 15 days of ripening. The antioxidant potential of both green and fermented forms of rooibos in meat products was confirmed, even if its effect on lipid oxidation requires further study and long-term effects are not yet fully understood.  相似文献

Biodegradable films were prepared by using the flour and starch isolated from plantain bananas of the variety “Terra” (Musa paradisiaca). Since the non-starchy fraction present in the banana flour represents 29.4% (on dry basis) of its composition, we considered it would be interesting to compare the properties of the film elaborated from this natural blend with that of the film produced from the banana starch only. Both films were characterized on the basis of their mechanical, barrier, optical, structural, and thermal properties. The banana flour film was less mechanically resistant but more flexible than the banana starch film. Despite the differences in the microstructure of the flour and starch films, the former was slightly soluble in water, and its water vapor permeability was similar to that of the starch film. Regarding the optical properties, the flour film was yellowish, which can be attributed to its protein content and the presence of phenolic compounds. The starch film, on the other hand, was lighter and less opaque. The FTIR spectra revealed the presence of the amide I group related to proteins only in the case of the flour film. Both plantain banana films displayed a C-type X-ray pattern and one glass transition temperature each, which was higher for the starch film (46.4 °C) as compared to the flour film (30.2 °C). The presence of other components (protein, lipids, and fiber) in the flour film had important effects on its properties. In general, the banana flour and starch are very promising materials for the formulation of coatings and films.  相似文献

Lipid oxidation, microbial load and fishy odour development in the slices of bled and un-bled Asian seabass during 15 days of iced storage were comparatively investigated. Bled samples showed the lower peroxide value (PV) and thiobarbituric acid-reactive substances (TBARS) throughout the storage period (P < 0.05). Bleeding effectively lowered the total haem and non-haem iron contents in Asian seabass slices. The release of non-haem iron was pronounced in the un-bled samples during the storage. Solid phase micro-extraction coupled with gas chromatography and mass spectrometric (SPME-GCMS) analysis revealed that the bled samples stored in ice for 15 days contained the lower amount of volatile compounds. Heptanal, the major volatile compound detected in the un-bled samples, was four-fold higher than that of bled counterparts. The contents of aldehydic compounds, including hexanal, octanal, nonanal and nonenal were also higher in the former. Bled samples had the lower fishy odour, compared with the un-bled counterparts during storage (P < 0.05). The lower total viable counts (TVC) and psychrophilic bacterial counts (PBC) were observed in the bled samples, in comparison with the un-bled ones (P < 0.05). Thus, bleeding was a potential means in retarding lipid oxidation, fishy odour development, and microbial growth of Asian seabass slices during storage in ice.  相似文献

Changes in lipids, lipoxygenase activity and fishy odour development in the skin of Nile tilapia (Oreochromis niloticus) during iced storage of 18 days were monitored. Triacylglycerol content of skin decreased with coincidental increases in free fatty acid, monoacylglycerol, diacylglycerol and phospholipid contents during storage (< 0.05). During iced storage, peroxide value increased at day 9 and subsequently decreased up to 18 days (< 0.05). Thiobarbituric acid reactive substances values and lipoxygenase activity increased throughout 18 days of iced storage (< 0.05). With increasing storage time, a progressive formation of hydroperoxide was found as evidenced by the increase in amplitude of peak at 3600–3200 cm−1 in Fourier transform infrared spectra. Those changes indicated that lipid oxidation took place during iced storage. The increase in fishy odour of skin was observed as the storage time increased. The development of fishy odour in Nile tilapia skin during iced storage was mostly governed by lipid oxidation via autoxidation or induced by lipoxygenase. Thus, the extended storage time of whole fish resulted in the pronounced changes in lipids and the increased fishy odour in the skin.  相似文献

The oxidative stability of lipids in processed quinoa was investigated in this study. Ground quinoa was subjected to accelerated aging for 30 days at 25, 35, 45, and 55 °C. Three samples were removed from each temperature treatment every 3 days. Free fatty acids, conjugated diene hydroperoxides, and hexanal were used as indicators of lipid oxidation. Storage time and temperature had significant effects (p ? 0.05) on all three parameters, while the interaction between storage time and temperature was not significant for conjugated diene hydroperoxides produced. The results from these tests suggest that quinoa lipids are stable for the period of time studied. With vitamin E as a naturally antioxidant occurring abundantly in quinoa, the potential for quinoa to be a new oilseed could be enhanced. This study provided some preliminary information on the oxidative stability of quinoa.  相似文献

Myoglobin (Mb) and haemoglobin (Hb) accounted for 61% and 39% of the total haem-protein in bighead carp (Hypophthalmichthys nobilis) dark muscle, respectively. Molecular weight of Mb and monomeric-Hb was ∼16 kDa. Haemin loss from metHb was more rapid, compared to metMb (pH 6.0, 4 °C). Pro-oxidative activities of oxyMb/Hb and metMb/Hb were examined in washed mince during 9 days of iced storage (pH 6.0). Soret measurements suggested the existence of holoMb throughout storage. For Hb, weakening of haem-globin linkage was observed, especially for metHb which had undetectable Soret after 3 days of storage. Loss of redness was more rapid and extensive in washed mince containing Hb, compared to Mb. During storage, Hb induced larger amounts of peroxides, thiobarbituric acid-reactive substances and hexanal than did Mb (p < 0.05), especially for met-form. Thus, Hb had lower haemin affinity and was a stronger pro-oxidant than Mb.  相似文献

Lipid oxidation, discoloration, loss of amine groups and pyrrolization of the liposome systems of cuttlefish (Sepia pharaonis) in the presence of FeCl3 and ascorbic acid were studied. Thiobarbituric acid-reactive substances (TBARS) and the b-value of cuttlefish liposomes increased with a coincidental decrease in amine groups when the incubation temperatures (0, 4, 25, and 37 °C) and incubation times (0–24 h) were increased (p < 0.05). As lipid oxidation and yellow pigment formation in the cuttlefish liposome proceeded, a loss of amine groups and pyrrolization were also detected. The effects of FeCl3 and ascorbic acid, at different concentrations, on TBARS production, b-value, loss of amine groups and pyrrolization of cuttlefish liposome were also investigated. Both FeCl3 and ascorbic acid showed prooxidative effects in cuttlefish liposome in a concentration-dependent manner. Sodium chloride (0–2%) reduced TBARS, b-values and pyrrole compounds. These results suggest a positive correlation between lipid oxidation and the development of yellow pigments in cuttlefish phospholipids.  相似文献

The effects of added potassium ferrocyanide (CN) in different concentrations (2.5 ppm, 7.5 ppm and 100 ppm), in salt, on lipid oxidation in cod during salting, storage and rehydration were examined in this study. An increase in CN concentration accelerated lipid oxidation of the salted cod, as observed by increases in lipid hydroperoxides (PV) and thiobarbituric acid-reactive substances (TBARS), as well as in the development of fluorescence compounds (δFor and δFaq). A yellow discolouration (higher b value) of salted cod was associated with higher levels of oxidation derivatives. High correlation between PV, TBARS and free fatty acid (FFA), as well as between FFA and δFor, was found. The results of principal component analysis showed that TBARS, b value and δFor were the strongest indicators of lipid oxidation during salting and storage.  相似文献

The impact of smoking on the lipid fraction of seabob shrimp (Xiphopenaeus kroyeri, Heller, 1862) was evaluated by the formation of cholesterol oxides and changes in fatty acid composition and in nutritional quality. In addition, cholesterol and chloride contents, pH, and proximate composition were determined. Smoking reduced lipid and protein contents and increased ash and chloride concentrations, while the pH value remained constant. Despite the loss of 18:2n6 (53%), 20:4n6 (50%), 22:6n3 (49%), 20:5n3 (47%) and 18:1n9 (44%), the n6/n3 ratio did not change significantly. The index of atherogenic (0.82) and of thrombogenic (0.62) were low after smoking. Smoking also caused losses of cholesterol (27%) and 7β-hydroxycholesterol (50%), while 7-ketocholesterol and 7α-hydroxycholesterol contents remained constant.  相似文献
