Carcasses of sixty-three Nellore bulls slaughtered at a commercial beef plant were randomly selected by dental classification (2, 4, 6 or 8 permanent incisors) in order to evaluate the influence of dental maturity on carcass traits and meat quality. Carcasses with 8 permanent incisors (p.i.) had greatest values (P<0.05) of carcass weight and longissimus area. Carcasses with 4 and 6 p.i. presented similar values of rib fat thickness being greater (P<0.05) than the other groups. Carcasses with 6 and 8 p.i. presented greater (P<0.05) values of shear force than the other groups. Conversely, carcasses with 2 and 4 p.i. displayed greater (P<0.05) myofibrillar fragmentation index and collagen solubility. Greatest values of thawing loss were observed in carcasses with 2 p.i. (P<0.05) while carcasses with 8 p.i. presented greatest values (P<0.05) of drip loss. Regarding longissimus color, carcasses with 8 p.i presented greatest value (P<0.05) of b*. Data suggests that dental maturity influences carcass traits and meat quality of Nellore bulls.  相似文献

Eighty four steers were randomly assigned to three pasture treatments with increasing levels of grain (T1: 0%; T2: 0.6%; T3: 1.2% of live weight) and to an ad libitum concentrate treatment, T4, to study the effects on carcass and meat quality. Animals were slaughtered with 500 kg of average live weight per treatment. Average daily gain increased with increasing levels of energy, determining different slaughter dates. Intermediate treatments showed higher carcass weight than T1. T4 and T3 had a higher weight of valuable cuts than T1 and T4. Pistolas from T4 had a higher fat proportion and lower bone percentage. Increasing levels of energy in diet decreased fat yellowness. After 20 days of aging, T4 had the lowest muscle a values and shear force was higher for T4 than for T1. With pastures finishing strategy, no adverse effects on meat quality were detected and tenderness was enhanced.  相似文献

This study sought to evaluate the effects of teeth maturity and carcass fatness on physical and sensory traits of the beef ribeye (M. longissimus thoracis). Carcass sides (n = 60) of Nellore steers were grouped into six categories, according to teeth maturity (2, 4 and 6 permanent incisors), and fatness (2 – slight and 3 – average). The boneless ribeye cuts (6th – 9th ribs) were vacuum packed and aged for 14 days. Steaks, 2.5 cm thick, were evaluated as to sarcomere length, shear force and sensory attributes. Sarcomere length was not affected (> 0.05) by maturity or fatness. Teeth maturity did not influence (> 0.05) tenderness measured by instrumental or sensory analysis, however rib steaks from fatter carcasses displayed better tenderness (< 0.01) and lower cooking losses (< 0.01). In the Nellore steer carcasses produced in Brazil, fatness may be more important than teeth maturity to improve meat tenderness.  相似文献

Post-slaughter muscle energy metabolism meat colour of South African production systems were compared; steers (n = 182) of Nguni, Simmental Brahman crossbreds were reared on pasture until A-, AB-, or B-age, in feedlot until A–AB-age. After exsanguination carcasses were electrically stimulated (400 V for 15 s). M. longissimus dorsi muscle energy samples were taken at 1, 2, 4 and 20 h. Post-mortem samples for meat quality studies were taken at 1, 7 and 14 days post-mortem. Production systems affected muscle glycogen, glucose, glucose-6-P, lactic acid, ATP, creatine-P glycolytic potential (P < 0.05), with the muscles of feedlot carcasses having a faster glycolysis rate than pasture carcasses. Energy metabolites correlated (0.4 < r < 0.9) with meat colour (CIE, L*a*b*), (0.3 < r > 0.5) water holding capacity, drip loss, and Warner Bratzler shear force. Muscle energy only affected muscle contraction of the A-age-pasture system (shortest sarcomere length of 1.66 μm vs 1.75 μm highest WBS of 6 kg vs 5 kg 7 days post-mortem).  相似文献

Effect of muscle stretching on meat quality of biceps femoris from beef   总被引:3,自引:0,他引:3  
The objective of this study was to examine the effect of muscle stretching on meat quality and ultrastructure of biceps femoris (BF) from beef. After slaughter, the right side of the carcasses were suspended from the Achilles tendon (AS; n=10), while the left sides were re-hanged from the pelvic bone (PS; n=10). Meat quality was evaluated by water holding capacity (WHC), cooking loss (CL), color, shear force (SF) and sarcomere length (SL). As a result, PS had no impact on WHC, CL and color parameters. PS significantly decreased SF values by 7.5% only at 2 days postmortem. At pelvic suspended sides, SL was increased by 0.13 μm, 0.14 μm and 0.12 μm at 2, 7 and 10 days postmortem, respectively (P<0.001). Electron microscopy showed that the ultrastructure of BF have longer sarcomeres and smaller fiber diameter after PS. In conclusion, PS is a useful method for improving tenderness by stretching muscles.  相似文献

Much research has been conducted and published about metabolic modifiers that increase growth rate, improve feed efficiency, increase carcass leanness, and decrease carcass fatness. Most of these metabolic modifiers have been developed to improve efficiency and profitability of livestock production and to improve carcass composition, with fewer of them developed and researched specifically to improve meat quality. Some of the metabolic modifiers can have negative effects on visual and sensory meat quality, especially when not used as recommended. This review evaluates the various kinds of metabolic modifiers that have been researched for their effects on production efficiency, carcass composition, and meat quality. Nutritional composition of meat generally is improved from use of most of the metabolic modifiers, visual quality is improved by others, but some can have a negative effect on marbling and tenderness. Anabolic steroid implants are very cost effective and practical for beef cattle production but aggressive implants used within 70 days of slaughter or too frequent use of them will reduce tenderness and marbling. Somatatropin and approved β-agonists are very effective in improving growth performance and carcass leanness in pigs, and β-agonists are effective in cattle, but improper use of them can have negative effects on marbling and tenderness. Feeding supplemental levels of vitamin E is quite beneficial for improving meat color and shelf-life of beef, lamb, and pork, whereas not supplementing diets with vitamin A has potential for improving marbling in cattle. Immunocastration shows promise for capitalizing on the efficiency of muscle growth of young boars up to a few weeks before slaughter, at which time boar taint is prevented and marbling is improved by immunocastration. Potential exists for improving the fatty acid profile of lipids and increasing conjugated linoleic acid content in beef through dietary manipulation. Supplementing swine diets with conjugated linoleic acid can improve carcass composition of swine, but is not yet cost effective to use. Dietary inclusion of magnesium, manganese, or chromium in diets of pigs and sheep has potential to improve meat color and water-holding capacity. Although, not all of these metabolic modifiers are approved in all countries, proper use of the ones that are approved offers opportunities for economically improving production efficiency and carcass leanness while maintaining acceptable marbling and tenderness, while some provide opportunities to enhance meat color and quality.  相似文献

Twenty-one Brown Swiss × Limousin young bulls reared on pasture were housed for a short finishing period (60 days). CA group (concentrate-ad libitum group) received concentrate and straw ad libitum for the whole finishing period. CR group (concentrate-restricted group) received 4 kg of concentrate/animal per day and ad libitum alfalfa hay throughout the 60 days. CRA group (concentrate-restricted/ad libitum group) received the same diet as CR group for the first 30 days and the same diet as CA group for the last 30 days. CA and CRA groups presented higher fatness values. Myoglobin concentration in muscle was highest in CA group (P < 0.05) and carotene content in subcutaneous fat was highest in CR group (P < 0.01), while Warner–Bratzler shear force and sensory traits were unaffected (P > 0.05). It is concluded that, in this type of young animal, 4 kg concentrate plus ad libitum alfalfa hay for a 60-day finishing period, despite lower fatness, provides carcasses and meat with acceptable quality characteristics, similar to those obtained from ad libitum fed animals for the same period.  相似文献

Forty-eight Bonsmara steers were assigned to three treatment groups and one control group consisting of 12 animals each. The control (C) received no β-agonist, while the three treatment groups received zilpaterol (6 ppm) (Z), ractopamine (30 ppm) (R) or clenbuterol (2 ppm) (Cl) for the last thirty days on feed. Growth performance (final 30 days), USDA quality and yield grades and meat quality (shear force, chemical, histological and biochemical) were compared for the three β-agonist and control groups. Animals responded negatively to Cl treatment during initial stages of supplementation, which was evident in lower feed consumption and initial growth rates. For carcass growth and yield, Cl had greater and more efficient growth rates, higher dressed out yields (proportional), lower USDA yield grades, and reduced marbling compared with C (P < 0.05). For meat quality measurements, the M. longissimus (LL) and M. semitendinosus (ST) were sampled. Cl had the greatest effect (P < 0.05) on WBSF, especially on the LL, followed by Z. Variation in tenderness and ageing effects corresponded with variation in calpastatin activity and myofibrillar fragmentation between treatment groups. While zilpaterol and ractopamine are currently the only products registered for cattle in different countries, it seems that zilpaterol has an advantage in carcass growth efficiency and yield without showing any adaptation problems for animals such as experienced by the more aggressive β-agonist clenbuterol.  相似文献

Finishing feeding was evaluated as a way to improve carcass-, meat- and eating quality of culled dairy cows. In total, 125 Danish Friesian cows were purchased from commercial dairy herds. Cows were culled for various typical reasons at different stages of lactation, were non-pregnant and had milk yield at culling ranging from 1 to 25 kg/d and had LW varying from 330 to 778 kg. Cows were housed in tie-stalls and had free access to barley straw and water during a 7-d drying-off period. Cows were allocated to three equal treatment groups based on parity, LW, BCS, and culling reason. A control group (C) was slaughtered immediately after drying-off (n = 43), a group (F2) was finishing-fed for 63 days (n = 41), and a group (F4) was finishing-fed for 126 days (n = 41). In the finishing period, cows had free access to a TMR (10.6 MJ ME and 130 g CP per kg of DM). Cows on treatment, F2 and F4 gained 1.16 ± 0.05 kg/d in the finishing period. Compared with C-cows, F2- and F4-cows had 56 and 97 kg higher carcass weight, 10% and 21% larger Longissimus muscle area, and 14 and 70% more backfat, respectively, at time of slaughter. EUROP conformation scores were 2.2 (C), 3.4 (F2) and 4.4 (F4) and EUROP fat scores were 1.9, 3.0 and 3.7. Finishing feeding increased IMF, improved meat flavour and colour, and tended to reduce shear force value and improve tenderness and juiciness. The F4 cows also had higher fat trim than C- and F2-cows. Cows were divided into two parity groups (1st parity and older cows). Compared with 1st parity cows, older cows ate 12% more feed, had similar daily gain, were heavier, and had higher BCS and fatness including IMF. The results show that it is possible to dry-off and finish-feed culled dairy cows resulting in larger muscles, increased fatness, improved overall carcass quality and better technological as well as sensory quality characteristics.  相似文献

The objective of the present study was to investigate the sensory properties, with special emphasis on tenderness, of meat from strategically fed young bulls (13 months of age) slaughtered when a plateau in protein turnover was observed. Twelve Holstein Friesian young bulls were divided into two feeding strategies. One group of young bulls (n = 6) were fed ad libitum throughout the rearing period (AD) whereas the second group (n = 6) was subjected to a compensatory growth feeding strategy (CO). Sensory profiling of beef longissimus dorsi (LD), semimembranosus (SM) and supraspinatus (SS) was performed in addition to physical measurements (shear force) and content of intramuscular fat of LD. The data was analysed using a regression-based multivariate data analytical strategy. In relation to predictivity of the various shear force measurement constituents for sensory texture, it was determined that a number of the responses collected (e.g. maxmm), in addition to the commonly used max(N) may be utilised to predict subtlety in the sensory texture differences of the samples (e.g. Crumbliness) with respect to compensatory feeding. Through profiling LD and SS were found to have enhanced texture and flavour properties when the young bulls were fed ad libitum during rearing. However, the SM samples were found to improve in characteristics regarding texture and appearance when the young bulls had been fed compensatorily. Thus, compensatory feeding as a texture improvement strategy proved to be highly dependant on muscle type. Of note, LD and SS were found to develop an off-flavour designated as ‘steer taint’ when derived from compensatory feeding. This was postulated as potentially not a problem for the consumer, in LD as the level was not significant, and in SS due to sensory masking when commonly prepared as a stew or casserole. Considering the different preparation methods used for meat from LD, SM and SS, compensatory feeding may be considered to have improved the texture and elevated the eating quality where it was most relevant, namely in SM roasts.  相似文献

This research evaluated effects of feedlot backgrounding on 40, 70 or 100% alfalfa hay diets (40hay, 70hay; 100hay, respectively) or pasture grazing (Pasture) before pasture finishing, on performance and beef characteristics of Angus heifers. Ninety six female calves were allocated to the four feeding strategies. Backgrounding took place during 114 days and subsequent pasture finishing over 132 days. Heifers of each strategy were slaughtered after 114 days (end of the feedlot period) and at end of the study when all remaining animals were finished on pasture. Effects of backgrounding were associated with rate of gain. Backgrounding strategies 40hay and Pasture resulted in the best performance. Beef attributes were similar. At the end of the feedlot period, 100hay was smaller and leaner, less tender and less juicy. At the end of the study, Pasture and 40hay heifers had on average the largest back fat thickness and intramuscular fat measurements. No treatment effects were detected for Warner-Bratzler shear force, muscle pH, muscle color and sensory panel attributes.  相似文献

The enhanced growth performance of calves fed a higher plane of nutrition pre-weaning is well documented, and the effect of butyrate on the development of the gastrointestinal tract in calves has been evaluated. The aim of this study was to examine the synergistic effects of ad libitum milk replacer (MR) feeding and butyrate supplementation on growth performance and energy metabolism in calves. Sixty-four (32 male, 32 female) Holstein calves were examined from birth until wk 11 of life. Calves received MR either ad libitum (Adl) or restrictively (Res) with (AdlB+, ResB+) or without (AdlB?, ResB?) 0.24% butyrate supplementation. Colostrum and transition milk were fed in predefined amounts (Res or Adl) for the first 3 d postpartum. Ad libitum and restrictive MR feeding with or without butyrate was performed from d 4 until wk 8 of age. From wk 9 to 10, all calves were gradually weaned and were fed 2 L/d until the end of the trial. Concentrate (CON), hay, and water were freely available. Intakes of MR and CON were measured daily. Calves were weighed at birth and weekly thereafter. Blood was drawn on d 1 before the first colostrum intake; on d 2, 4, and 7; and weekly thereafter until the end of the study to measure plasma concentrations of metabolites and hormones. Liver samples were taken at d 50 and at the end of the study to determine gene expression related to glucose metabolism. Milk, MR, and total nutrient intake were greater, but CON intake was lower in Adl than in Res calves, resulting in a greater body weight, but partially lower gain to feed ratio in Adl than in Res. Plasma concentrations of glucose and insulin were higher during the ad libitum milk-feeding period, whereas plasma β-hydroxybutyrate was lower in Adl than in Res. Plasma concentrations of nonesterified fatty acids, lactate, total bilirubin, and cortisol were lower, but triglyceride and cholesterol concentrations were higher in Adl than in Res at specific time points. Feed intake, growth performance, and metabolic and endocrine changes were insignificantly affected by butyrate, and hepatic gene expression of enzymes related to endogenous glucose production was barely influenced by ad libitum MR feeding and butyrate supplementation. Intensive MR feeding indicated greater stimulation of growth and anabolic metabolism, but butyrate supplementation did not further improve postnatal growth or anabolic processes either in intensive or restrictive MR-fed calves.  相似文献

Drying-off may challenge the welfare of especially high-yielding dairy cows. In this study, 119 loose-housed Holstein cows yielding ≥20 kg milk/d were enrolled in a 2 × 2 factorial design aiming to investigate effects of changes in diet energy density and daily milking frequency on behavior. The last 7 d before the dry-off day, cows were milked either twice or once daily, and were fed either a lactation diet or the same diet diluted with 30% barley straw, both offered in individual bins for ad libitum intake. All cows were fitted with sensors to record lying time and activity, and data from 109 of these cows were used together with behavioral observations obtained from video recordings of 52 of the cows. Data from activity sensors and video recordings were obtained during 24 h on d −6, −3, and −1 relative to the dry-off day (i.e., the day of the last milking). Across all days of observation, cows milked once daily spent more time feeding (149 vs. 130 min/d) than cows milked twice daily. Cows on the reduced diet and milked twice daily had a shorter lying time compared with cows on the normal diet and milked twice (759 vs. 837 min/d), whereas lying times of cows on the remaining 2 treatments were intermediate. Among cows on the lactation diet, reduced milking frequency increased time spent perching (from 11.1 to 28.7 min/d). Cows fed the energy-reduced diet spent more time feeding (154 vs. 124 min/d), showed more attempts to feed from unassigned feed bins (31.7 vs. 15.4 attempts daily), and spent less time using a mechanical brush (6.5 vs. 9.2 min/d) than cows fed the lactation diet. These results show that several aspects of cows' behavior, including main activities such as lying and feeding, but also behaviors of low resilience such as brush use, and to some extent more subtle and complex behaviors such as perching and attempts to feed from unassigned feed bins, are sensitive to management changes typically applied during the days before dry-off. The behavioral effects of the reduced feed energy level support earlier findings suggesting that qualitative feed restriction renders cows hungry. The effects of the reduced milking frequency on behavior were generally less pronounced, but 2 noteworthy interactions between milking frequency and diet were seen. First, cows milked twice daily and fed the energy-reduced diet spent less time lying, which is possibly related to increased energy demand and hunger. Second, cows milked once daily and fed the lactation diet spent more time perching, which may be related to udder discomfort. However, these more complex findings warrant further study. Taken together, the results of this study show that a dry-off procedure involving reduced energy supply induces behavioral changes indicating a higher degree of compromised welfare compared with reduced milking frequency.  相似文献

Steers were offered grass silage ad libitum and 6.4 kg concentrates daily for 126 days or silage ad libitum for 35 days, followed by concentrates ad libitum (Experiment 1). Steers were offered grass silage ad libitum and 6 kg concentrates daily for 154 days, concentrates ad libitum or grass silage ad libitum for 112 days followed by concentrates ad libitum (Experiment 2). All treatments received the same total concentrate allowance. In Experiment 1, there was no difference in any measurement of meat quality. In Experiment 2, ad libitum concentrate feeding per se, decreased redness and increased shear force of muscle at 2 days post-mortem. Delaying concentrate feeding decreased fat yellowness, decreased shear force at 7 and 14 days post-mortem and increased muscle redness at 14 days post-mortem. Modifications of the beef production system examined had minor effects on beef quality which are unlikely to be of commercial significance.  相似文献

The aim of this study was to evaluate the effects of 28 single nucleotide polymorphisms (SNP) in 10 candidate genes previously shown to be associated with quality traits in pigs and cattle. The data set comprised 28 traits recorded on a commercial population of 536 Aberdeen Angus-cross beef cattle. Among the traits, 20 were carcass and sirloin quality related, one mechanical measure of tenderness, and the remaining seven were taste panel assessed sensory traits. The candidate genes studied included growth hormone (GH) and pro-opiomelanocortin (POMC). Association analysis showed that 13 of the 28 SNPs were significantly associated with at least one of the traits. Some of these were novel (POMC and mechanical tenderness), whilst others confirmed previous results (GH and eye muscle length).  相似文献

Thirty-nine steers were distributed into a 2 × 2 factorial arrangement of treatments to determine the effect of corn grain particle size (cracked [CC] vs ground [GC] corn) and soybean meal treatment (solvent extracted soybean meal [SS] vs lignosulfonate treated soybean meal Soypass™ [SP]) on carcass and meat quality traits. When CC diet was supplemented with SS carcass quality grade score tended to decrease (P = 0.09). GC had no effect on meat quality, while SP only increased the intramuscular fat content when added to CC (P = 0.01). The CC diet supplemented with SP increased the proportion of saturated fatty acids (P = 0.01). Despite the positive effects on carcass quality, the lack of improvement in meat quality and the more saturated fatty acid profile would not justify the use of processed corn or treated soybean meal in the finishing diet of steers.  相似文献

The objective of this study was to determine the effects of three lairage times (24 h, 48 h and 72 h) on the meat quality of tame trained to lead Hungarian Simmental bulls subjected to long commercial transportation of approximately 1800 km. A total of 30 bulls, with an average age of 24 months, were used. During the lairage, bulls received 0.5 kg concentrate feed per animal per day and ad libitum access to the hay and water. As the lairage duration increased, the pHult decreased (P < 0.05). Bulls lairaged for 24 h had lower L*, b* and H* values than those lairaged for 48 h and 72 h (P < 0.05). The effect of lairage time on WHC, cooking loss and Warner–Bratzler shear force values was not significant. The b* value was considered the best predictor of muscle pHult. In conclusion, 72 h quiet lairage time is recommended after transportation in order to prevent the adverse effects of transportation on meat quality.  相似文献

Carcass and meat quality traits of 60 Nellore young bulls fed diets without crude glycerin (CG); with CG replacing corn (CGc; 10% of dry matter — DM) in the concentrate; and with CG replacing soybean hull (CGsh; 10% of DM) in the concentrate were evaluated. Diets were evaluated at two concentrate levels (CLs). The CL did not affect cold carcass weight (CCW; P = 0.6074), cold carcass dressing (CCD; P = 0.9636), rib fat thickness (RFT; P = 0.8696) and longissimus muscle area (LMA; P = 0.7524). Animals fed diets with CGc or CGsh showed meat with greater deposition of monounsaturated fatty acid (MUFA; P = 0.0022) and CLA (18:2 cis-9, trans-11) contents (P = 0.0001) than animals fed diets without CG. The inclusion of 10% of CG in diets CGc or CGsh does not affect the carcass and meat quality traits; however, it increases the MUFA and CLA contents in beef, although these changes are very small in nutritional terms.  相似文献

Fifty-nine Nellore bulls from low and high residual feed intake (RFI) levels were studied with the objective of evaluating meat quality traits. Animals were slaughtered when ultrasound-measured backfat thickness reached 4 mm, and samples of Longissimus were collected. A mixed model including RFI as fixed effect and herd and diet as random effects was used, and least square means were compared by t-test. More efficient animals consumed 0.730 kg dry matter/day less than less efficient animals, with similar performance. No significant differences in carcass weight, prime meat cuts proportion, chemical composition, pH, sarcomere length, or color were observed between RFI groups. Shear force, myofibrillar fragmentation index and soluble collagen content were influenced by RFI, with a higher shear force and soluble collagen content and a lower fragmentation index in low RFI animals. Feedlot-finished low RFI young Nellore bulls more efficiently convert feed into meat, presenting carcasses within quality standards.  相似文献
