Forty-nine Manchega breed male suckling lambs were used to determine the effect of different stunning methods (using two different CO2 concentrations and exposure times) on lamb meat quality. The lambs were allocated to five stunning treatments including four CO2 treatments [80% CO2 for 90 s (G1); 90% CO2 for 90 s (G2); 90% CO2 for 60 s (G3); 80% CO2 for 60 s (G4)] and an electrically stunned control group (G5). The gas-stunning treatments did not cause neither haematomas nor blood splash in the carcasses. Meat quality was evaluated by testing pH, colour (L, a, b, chroma, hue values), water holding capacity (WHC), cooking loss (CL), shear force (SF), drip loss (DL) and total aerobic bacteria. Statistical differences in pH at 24 h post-mortem, colour, WHC and CL were not found among groups. After 7 days post-mortem, there were statistical differences among groups in pH (highest in G4 and G5) and in DL (highest in G1). There were differences in SF due to stunning method evident after 72 h and 7 days ageing. The statistical differences (P < 0.01) among groups on total aerobic bacteria at 24 h (lower and higher values in G2 and G5, respectively) disappeared at 7 days post-mortem. As G2 as G3, could be recommended to stunning suckling lambs since a highest stability with ageing time on meat quality was found using 90% CO2.  相似文献

A study was undertaken, using 2701 overwrapped loin samples aged for 5 days and subjected to a simulated retail display (SRD) for 3 days; sourced from lambs in the Cooperative Research Centre for Sheep Industry Innovation information nucleus flock, born 2007–2009. The ratio of reflectance of light in the wavelengths of 630 nm and 580 nm (oxy/met) was measured daily during the SRD, using a Hunterlab spectrophotometer. A series of linear mixed models was fitted to the oxy/met and time data to compare 4 breed types and identify relevant covariates, of 19, using a forward selection process. Breed type, pH at 24 h post slaughter and Linoleic acid concentration (LA) were the most important factors and covariates, in that order. Merino breed type, high pH and high LA reduced colour stability. Fitting a spline model to predict the time for oxy/met to reach a set value, represents an alternative to comparing oxy/met at a set time, for describing colour stability.  相似文献

Previous work identified that a large number of domestic lamb carcases processed in Australia do not meet the recommended pH/temperature window during chilling. New medium voltage electrical stimulation technology has been developed to alleviate this problem. This study used an optimised setting (800mA with a pulse width 0.5ms) to evaluate the effects on meat quality with a focus on tenderness and meat colour. In total 40 (electrically stimulated) and 40 (non electrically stimulated) lambs from 11 lots killed over 2 days were evaluated. There was a significant difference (P<0.05) between stimulation treatments for initial pH, rate of pH decline and the predicted temperature at pH 6.0. There was also a large difference in the number of carcases that met the recommended window (pH of 6.0, between 18 and 25°C), with an average 67.5% of stimulated carcases and 25% of unstimulated carcases meeting or falling just above the recommended window. The stimulation treatment had no significant (P>0.05) effect on sarcomere length or myofibrillar fragmentation index (MFI) of the m. longissimus (LL). After 1day of ageing LL samples from stimulated carcases had a significantly lower (P<0.05) shear force than non stimulated samples, but there was no difference between stimulation treatments after 5 days ageing. However, ageing period did have a significant effect (P<0.001) on both MFI and shear force, such that 5days aged product had higher MFI and lower shear force values. There were minimal effects of stimulation on colour stability.  相似文献

The effect of type of silage offered to beef heifers during the finishing period on aspects of beef quality was determined. In two experiments, a diet based on grass silage (GS) was compared with a diet based on maize silage (MS) or whole-crop wheat silage (WCW). Compared to the GS-based diet, increasing the amount of MS linearly increased fat whiteness while the increase in fat whiteness due to WCW was dependent on the stage of crop maturity at harvesting. There was no effect of diet on muscle colour or on muscle pH measured at 48 h post-mortem, drip loss, taste panel traits after 14 days ageing or shear force values at 2, 7 or 14 days ageing. The alternative silages decreased the n − 3 polyunsaturated fatty acid proportion and increased the linoleic:linolenic acid ratio in intramuscular lipid. It is concluded that type of silage affects fat colour and fatty acid composition of muscle but not the other muscle characteristics examined.  相似文献

Groups of 8 lambs were allocated to one of five concentrate diets supplemented with all-rac-α-tocopheryl acetate containing 30 (C30), 60 (C60), 120 (C120), 250 (C250) and 500 (C500) mg/kg dry matter. Two other groups were fed grass silage and 400 g/day concentrate with 60 (S60) or 500 (S500) mg α-tocopheryl acetate/kg dry matter. Within diet, vitamin E level did not affect growth performance or carcass characteristics. Basal diet did not affect final live weight, conformation and fatness scores. M. semimembranosus from S lambs contained more α-tocopherol than that of C lambs on the same intake and by day 6 in MAP (75%O2/25%CO2) chroma and a* were below acceptable levels in C30 lambs. TBARS were higher in C30 and C60 muscle than in other treatments (P < 0.001) after 3 and 6 days display. Muscle fatty acid composition varied with basal diet but lipid oxidation depended more on vitamin E concentration with an initial concentration of 1.9 μg/g muscle preventing significant lipid oxidation.  相似文献

This study examined the effect of different gas stunning methods (concentration of CO2/time of exposure (G1: 80%90s; G2: 90%90s; G3: 90%60s; G4: 80%60s) on the initial meat quality of Manchego breed light lambs (25 kg live weight) and at 7 days post-mortem, assessed by pH, colour coordinates, water holding capacity (WHC), cooking loss (CL), drip loss (DL) shear force (SF) and lipid oxidation. An electrically stunned control group (G5) was used. Stunning method had a significant effect on pH values (P < 0.001) as well as on pH decline (P < 0.01). The lowest pH was found at 24 h post-slaughter in G1 and the highest one on G5. The greatest drop in pH (pH0–pH24) was found in G1 and G5 while the smallest in G3. In general values of colour coordinates, WHC and DL were similar in all groups. Stunning method affected CL (P < 0.001) at 7 days post-slaughter, with the lowest values being found in G1. Significant differences among groups were found (P < 0.05) in SF values at both post-mortem times, with less tender meat in groups stunned with 80% CO2, especially in G1. A significant effect (P < 0.001) due to the type of stunning was found at 24 h on lipid oxidation, with the highest value in G5. After ageing this parameter was lowest (P < 0.05) in G1 and G4.  相似文献

The aim of this study was to investigate the effect of muscle, inner and outer Musculus biceps femoris (IBF and OBF respectively) and Musculus longissimus dorsi (LD), on the post-mortem rate of pH and temperature fall, and the activity of superoxide dismutase (SOD), catalase (CAT) and glutathione peroxidase (GSH-Px) during simulated retail display. At day 0 of display (2 days post-mortem), the CAT and GSH-Px activities were lower in IBF than in OBF and LD (P < 0.001), and the SOD activity was lower in OBF compared to IBF and LD (P < 0.001). At day 10 of display, SOD and CAT activities had decreased in all three muscles compared to day 0 (P < 0.001), whereas the GSH-Px activity did increase with time of display. Across muscles, there were significant relationships between temperature fall, colour, lipid and colour stability and antioxidant enzyme activities.  相似文献

The effect of supplementing PUFA-rich cull cow diets with vitamin E (2.8 g/animal/day) or vitamin E plus plant extracts rich in polyphenols (PERP) (126 g/animal/day), for 101 ± 3 days preceding slaughter, on the oxidative stability of longissimus thoracis (LT) and semitendinosus (ST) steaks was evaluated after ageing (for 12 d at 4 °C either in carcass or under-vacuum) and packaging (14 d under-vacuum (V), 4 d aerobic (A) and 7 d under modified atmosphere (70:30, O2/CO2) (MA)). The ageing method had no effect on a beef lipid oxidation intensity marker (malondialdehyde (MDA)), whereas packaging systems containing O2 (A and MA) significantly increased lipid oxidation intensity (5 and 13 times higher than under V, respectively). Adding antioxidants to diets of animals given a PUFA-rich diet significantly improved lipid stability in steaks; the combination of vitamin E and PERP was more efficient than vitamin E alone for the most deleterious beef packaging.  相似文献

The purpose of this experiment was to examine the effect of dietary vitamin E supplementation on pork quality, and in particular on colour stability. Crossbred pigs (n = 72) at a mean weight of 44 kg were assigned to one of two treatments. One group received, during a period of 84 days prior to slaughter, a tapioca based diet, which contained 8 mg vitamin E per kg feed. The other group received during this period the same diet, except it was supplemented with 200 mg vitamin E per kg feed. Muscle samples of longissimus thoracis and lumborum (LL) and psoas (PM) were collected at 24 hr post mortem and meat quality was assessed: pH, drip and cooking loss, shear force and intramuscular fat content. Colour stability was evaluated in fresh muscle (LL and PM) and after freezing (LL only) by measuring redness (a(?)-values) during 6 days of storage at 7 °C. TBA-values and microbiological counts were also determined during storage. Results showed that extra dietary vitamin E had no effect on pig performance (daily gain, feed efficiency, lean meat percentage) nor on meat quality traits. The vitamin E levels were five times higher in the muscles of the treated group than the control group. In comparison with fresh LL muscle, colour stability was lower in PM and after freezing. In both muscles, the vitamin E treatment reduced TBA-values, in particular after frozen storage. No effect was found on microbiological counts. Colour stability was improved in LL after 6 days of storage, but not in PM. The effect in LL is too late to be of practical significance, since pork is usually sold well before that time in The Netherlands. It is suggested that variation in feedstuff composition of the diet may possibly explain part of the variable results reported in literature for the effect of vitamin E supplementation on colour stability of pork.  相似文献

Effect of breed on carcass measurements and meat quality characteristics were investigated by using 46 lambs from Turkish Merino, Ramlic, Kivircik, Chios and Imroz breeds. Chios and Imroz carcasses had smaller values for carcass quality characteristics. Breed had no significant effect on pH at 45 min and 24 h post-mortem, water holding capacity and cooking loss. Kivircik and Imroz lambs had lower Warner Bratzler shear force values than those of Ramlic and Turkish Merino lambs (P < 0.01). Meat samples from Kivircik lambs had the highest redness value. Differences among breeds for sensory characteristics, except tenderness were not significant. Tenderness scores given to meat samples of Kivircik lambs were significantly higher (P < 0.01) than those of Turkish Merino, Ramlic and Imroz lambs. Indigenous Kivircik breed, which had high carcass quality as those of improved breeds, might be considered for production of better quality meat in Marmara Region of Turkey.  相似文献

One hundred and twenty-seven lambs were fed as follows: lambs and dams grazing alfalfa (Gr); the same as Gr but lambs had access to concentrate (Gr + S); ewes grazed and lambs received milk and concentrate until weaning and thereafter concentrate and straw (Rat-Gr); ewes and lambs were stall-fed (Ind). Lambs were slaughtered at 22-24 kg live weight and fat and M. rectus abdominis colour was measured instrumentally and subjectively. The evolution of the instrumental colour and texture of M. longissimus lumborum was also recorded.There were significant differences in the instrumental colour of subcutaneous fat amongst feeding systems, but no differences were observed upon visual appraisal. On average, M. rectus abdominis colour in the four feeding systems was classed as pink. Differences in longissimus thoracis colour at 0 h disappeared at 24 h of air exposure and there were no differences in pH or cooking losses. At no time were any differences in instrumental texture found.  相似文献

The effect of genotype on meat ultimate pH, colour and tenderness was studied in 3 experiments involving 436 lambs. The lambs were sired by a selection of Texel (T), Poll Dorset (PD), Border Leicester (BL) and Merino (M) rams, crossed with Border Leicester × Merino (BLM) and Merino (M) ewes giving 6 genotypes (T × BLM, PD × BLM, T × M, PD × M, BLM and M × M). In experiment 1, pH data were obtained for 4 muscles (M. Semimembranosus (SM), M. Biceps femoris M. Semitendinosus and M. Longissimius thoracis et lumborum (LL)) from 198 carcasses representing two sexes (104 cryptorchid males, 94 ewes). There were significant differences for pH between genotypes in both sex groups. BL × M and M × M lambs tended to have higher pH values than the other genotypes.

In experiment 2, meat pH, colour using a chromameter, and tenderness data were obtained for 186 lambs representing two sexes (101 cryptorchid males, 85 ewes). There were few significant differences between genotypes for the various meat quality traits amongst the ewes. The PD × BLM ewes had a significantly lower (p < 0.05) pH than the BL × M ewes for the LL and SM muscles.

The BL × M crypt orchids had a higher LL muscle pH (p < 0.05) than the PD × BLM cryptorchids with other genotypes being intermediate. There were no significant differences between the genotypes for muscle shear force values. Within experiment 2, LL samples were taken from an additional 52 cryptorchid carcasses these being from 3 specific Poll Dorset sires (experiment 3). One of these sires (sire 3) was suspected of carrying a gene for increased muscling. Sire had a significant effect (p < 0.05) on shear force values, cooking loss and L* colour values, but not a* or b* colour values or pH. Sire 3 progeny had significantly (p < 0.001) tougher LL muscles than those from the other 2 sires. Sire 3 also had the lowest L* values, but was intermediate for cooking loss. There was no significant sire effect on LL area at the same carcass weight, but boneless loins from the progeny of Sire 3 were significantly (p < 0.05) heavier.

In a fourth experiment, meat colour was measured at three sites (LL, diaphragm and M. Obliquus externus abdominis) on 86 cryptorchid carcasses 24 hr post-mortem. There was little association between L*, a* and b* values measured at the different sites.  相似文献

In order to investigate the effects of increasing beef n-3 fatty acid content and the protective effects of vitamin E antioxidant activity on meat quality characteristics, 80 feedlot steers were fed 4 different diets (control, high vitamin E, 10% ground flaxseed or high vitamin E-10% ground flaxseed). While dietary treatments had no effect (P > 0.05) on meat composition or tenderness values, the increase in oxidation products was lower (P = 0.046) in meat from vitamin E supplemented steers and higher (P = 0.006) in meat from flaxseed fed animals. The increase in α-tocopherol tissue levels (P < 0.001) in meat from animals fed flaxseed and increased dietary vitamin E resulted in the lowest drip loss values (P = 0.013). As expected, display time had a large effect on retail traits in both steaks and patties (P < 0.001). While retail traits of steaks were not affected by the dietary treatments (P > 0.05), feeding flaxseed decreased (P < 0.05) ground beef retail scores, which were not corrected by higher levels of dietary vitamin E. Finally, although no effect (P > 0.05) was observed among treatments for sensory attributes in steaks, the correlations of a combined n-3:α-tocopherol ratio against retail and sensory attributes (P < 0.05) suggest that increased n-3 fatty acids levels require increased dietary antioxidants, such as vitamin E to avoid negative effects on meat quality from a loss in oxidative stability.  相似文献

The objective of this study was to determine the impact of lamb age and packaging types on meat quality. Paired loins (M. longissimus dorsi) were obtained from 36 carcasses that included 4-month-old (New season; NS) and 11-month-old lambs (Old season; OS). The loins were vacuum-stored for eight weeks at − 1.5 °C. After storage, the loins were cut into subsamples and were randomly assigned to either high-oxygen modified atmosphere packaging (HiOx-MAP) or PVC-overwrapping for further display for 8 days. No differences between the age classes in shear force and drip loss were found (P > 0.05). OS loins had significantly higher myoglobin and redness compared with NS loins. HiOx-MAP initially induced a more intense red colour compared with PVC (P < 0.05), but resulted in severe discolouration at the end of display regardless of the age class. This observation suggests that the retail packaging type is the dominant factor over the age on lamb colour stability.  相似文献

Forty eight lamb carcasses with temperature and pH monitored were obtained from two commercial plants. At 24 h post mortem both loins (M. longissimus) from each carcass were randomly allocated to a) unaged frozen at − 18 °C, (b) aged at − 1.5 °C for 2 weeks before freezing, (c) aged for 3 weeks before freezing and (d) aged for 9 weeks without freezing. Shear force, colour stability and proteolysis were analyzed. Carcasses with a slower temperature and more rapid pH decline had more calpain autolysis, slightly higher shear force and less colour stable compared to that counterpart in general (P < 0.05). However, the shear force values of the loins were all acceptable (< 6 kgF) regardless of different pre rigor processing and ageing/freezing treatments. Furthermore, the loins aged for 2 weeks-then-frozen/thawed had a similar shear force to the loins aged only for 9 weeks suggesting that ageing-then-freezing would result in equivalent tenderness compared to aged only loins for the long-term storage.  相似文献

The effect of RN genotype on pH decline, ultimate pH, pigment content, blooming and colour stability during 6 days of display at 5 °C was studied in two pig muscles, M. longissimus dorsi (LD) and M. semimembranosus (SM), and furthermore the effect of anaerobic storage time (2 days vs. 9 days of ageing) on the same parameters was examined. The postmortem pH decline was faster and the ultimate pH lower in LD and SM of the RN genotype compared with corresponding muscles from the rn+ genotype. Pork of the RN genotype was initially lighter and more red and yellow than pork of the rn+ genotype due to a higher degree of blooming, which might be explained by the faster pH decline and/or lower ultimate pH. The level of oxymyoglobin (MbO2) was decisive for the redness of both muscles during display in air despite a higher presence of metmyoglobin (MetMb). Pork of the RN genotype was thus redder than that of the rn+ genotype throughout display in air despite higher oxidation to MetMb. Ageing for 9 days in chill improved the blooming potential in pork of both genotypes compared with 2 days of ageing, resulting in superior meat colour. However, only in pork from the RN genotype, the colour was not negatively affected by ageing time upon display in air.  相似文献

In this study, 10 young steers received no beta agonist (C), 50 animals all received zilpaterol hydrochloride (Z), with 1 group receiving Z while the other 4 groups received Z and vitamin D3 at the following levels (IU/animal /day) and durations before slaughter: 7 million for 3 days (3D7M) or 6 days (6D7M), 7 million for 6 days with 7 days no supplementation (6D7M7N) and 1 million for 9 days (9D1M). LD samples were vacuum-aged 14 days post mortem, and repacked in high-oxygen modified atmosphere (70% O2/30% CO2) for a further 7 days. Parameters included Warner Bratzler shear force (WBSF), myofibril fragment length, thiobarbituric acid reactive substances, free thiol levels, muscle fat, and instrumental colour parameters. When allowing for a conversion period of vitamin D3 to its active metabolites, supplementing the zilpaterol treated steers with a high dosage of vitamin D3 (6D7M7N) resulted in improved colour stability, higher stability towards protein oxidation and lower stability towards lipid oxidation.  相似文献

The effects of breed, slaughter weight and ageing time on the meat quality of the three most important Spanish breeds were considered. Two hundred and twenty-five lambs of Rasa Aragonesa-local meat breed-, Churra-local dairy breed- and Spanish Merino were used. Animals (75 of each breed) were slaughtered at three different live weights (10–12, 20–22 or 30–32 kg), and the meat was aged for 1, 2, 4, 8 or 16 days. The meat pH, colour, amount of haem pigments, intramuscular fat, moisture, hydroxyproline content and sarcomere length were measured at 24 h post-mortem. Meat texture was measured by compression after each ageing time. The pH of the samples ranged from 5.50 to 5.58. Meat colour varied with breed and slaughter weight (P  0.01), the M. longissimus thoracis was lighter in the youngest animals and in the Churra breed and redder in Merinos. Intramuscular fat increased and moisture decreased for heavier lambs. Differences in collagen were associated with breed (P  0.01); total and insoluble collagen contents were higher in the Churra breed. Sarcomere length was only slightly affected by slaughter weight. Meat from the Churra breed had the highest values at high levels of compression. Suckling lambs (10–12 kg) had greater myofibrillar toughness than heavier lambs and ageing strongly influenced myofibrillar tenderness.  相似文献

A total of 14 female red deer were included in a study on the effects of low voltage carcass electrical stimulation on meat tenderness, colour stability and water-holding capacity. Carcasses were randomly allocated to either electrical stimulation treatment (ES; 90-95 V unipolar pulses, 7.5 ms duration, 15 Hz for a duration of 55 s) or no electrical stimulation (non-ES) (n=7 in each group). Temperature and pH decline was recorded in M.m. triceps brachii, longissimus dorsi et lumborum (at the last rib; LD) and biceps femoris, at intervals from 0.5 to 20 h post-mortem. At 24 h post-mortem, LD from the left side were excised, vacuum packaged and refrigerated at -1.5°C. Glycogen concentrations, measured at 30 min post-mortem, and ultimate pH did not differ between groups. Compared to controls, ES increased the rate of muscle pH decline and produced lower shear forces at 1 day, 1 week and 3 weeks post-mortem, but these differences disappeared by 6 and 12 weeks post-mortem. Sarcomere lengths at 24 h post-mortem were unchanged by ES. After 1 week of refrigerated storage, ES significantly reduced display life (hours of Minolta a* value ? 12), but this difference disappeared at 3, 6 and 12 weeks of ageing. ES did not affect drip at any ageing time point. The present results demonstrate that the benefits of ES on tenderness are not permanent, and the procedure is not necessary for a long-term, chilled product. This study showed no detrimental effects of using electrical stimulation on meat colour stability or drip loss.  相似文献

The effectiveness of heat inactivation of oxidative enzymes e.g., ascorbic acid oxidase (AAO) to stabilise vitamin C during extraction and analysis was evaluated. The influence of different sequences of performing treatments including acidification (pH 4.3 vs. pH 6.5), crushing, high temperature short time (90 °C/4 min–HTST) and low temperature long time (60 °C/40 min–LTLT)) blanching on vitamin C stability in broccoli florets and stalks was also investigated. Heat inactivation of enzymes prior to matrix disruption resulted in higher vitamin C values mainly in L-ascorbic acid (L-AA) form, while lack of enzyme inactivation resulted in high vitamin C losses resulting from conversion of L-AA to dehydroascorbic acid. Various treatments and their sequence of application influenced vitamin C stability as follows: (i) crushing prior to blanching reduced vitamin C stability and (ii) in the absence of heating, acidification increased vitamin C stability (iii) blanching prior to crushing resulted in higher vitamin C retention, with HTST blanching retaining more vitamin C than LTLT blanching.  相似文献
