The purpose of this work was to determine the proximate composition and fatty acid profiles of the Gastrocnemius pars interna intramuscular fat (IMF) of rhea (Rhea americana) thighs. The birds were bred in captivity, fed with balanced feed (Nutriavestruz Crescimento - Purina) and kept in a pen with grass ad lib. The birds of both sexes used in the research weighed 23 kg on average and were aged about twelve (12) months old. They were subjected to hydric diet (12 h) before slaughtering by electric shock. The rhea meat showed an average moisture, protein, ash and total lipid contents of 74.1%, 22.8%, 1.5% and 1.6%, respectively. It was noticed the predominance of monounsaturated fatty acids (MUFA) in intramuscular fat (IMF), 42.3% and a high percentage of polyunsaturated fatty acids (PUFA), 29.7%. The fatty acids found in higher proportion in rhea IMF were: 18:2n-6 (24.33%), 18: ln-9 (19.25%), 16:0 (13.70%), 22: ln9 (11.40%), 18:0 (10.66%), 15: ln-10 (8.62%), 24: ln-9 (2.90%) and 20:4n-6 (1.72%). The PUFA/SFA and n-6/n-3 ratios were 1.06 and 31.30, respectively. The consumption of rhea meat is a healthy alternative to red meat as it points to a lower susceptibility to cardiovascular diseases caused by the high consumption of fat comparatively to the consumption of meat from most domesticated animals.  相似文献

The seeds of 12 species ofAcacia, although rich in C-18 unsaturated acids (47.9–93.5%), have low oil content (2.5–10.2%). Highest concentration of octadecatrienoic acid was inA. lenticularis (80.3%),A. suma (76.8%) andA. tortilis (71.7%) oils.A. mollissima was rich in octadecadienoic (69.1%) andA. senegal in octadecenoic (42.5%) acids. All the seed oils showed the presence of epoxy 18:1 acid, 0.6–3.8%. The protein content of the processed seed meals ranged from 13.4–37.2%, the highest being inA. senegal. Several plants of Acacieae (family Leguminosae) have been recommended under aforestation programs. The seeds of some such plants have been examined for their fatty acid composition with special reference to epoxy acids. A detailed analysis has been carried out on the deasphaltened Athabasca bitumen using two different series of Chromatographic separations followed by i.r., u.v., n.m.r. and computerized GC/MS studies of the separated fractions: saturates (22–25%), monoaromatics (10.3–10.8%), diaromatics (4.6–5.3%), polyaromatics and non-specific polar compounds (28.6%), acids (16.5%), bases (7.8%), and neutral nitrogen compounds (1.6%). The acyclic paraffin content of the maltene is low: straight-chain paraffins and the isoprenoids, phytane and pristane, are present in very low concentrations. Polycyclic saturates represent about 90% of the saturate fraction. The presence of C-27 and C-29–C-35 hopanes of the 17(h):21β(H) series and C-21–C-30 steranes was established. The mono- and diaromatic fractions were analysed by computerized mass spectrometry. The monoaromatic fraction contains alkylbenzenes, naphthenebenzenes and dinaphthenebenzenes in a ratio of 1.0:1.7:1.3. The ratio for naphthalenes, acenaphthenes + dibenzofurans and fluorenes in the diaromatic fraction is 1:0.9:0.5.  相似文献

White and yellow maize grains (Zea mays amylacea, capia), polished by means of heat treatment with lime and ashes were analyzed (maize for mote); the chemical composition and digestibility in vitro of these grains cooked in boiling water were studied (mote), they were obtained under standardized conditions (laboratory) to compare them with the ones purchased at stores. The composition of nutrients was similar in polished grains, standing out the white ones from laboratory with a protein and sodium content of 9.95 100 g/100 g and 80.33 mg/100 g in the ones processed with ashes respectively and calcium (979.70 mg/100 g) in the ones treated with lime. Motes purchased at stores were analyzed and turned out to be chemically similar to the ones from laboratory. In the white motes with ashes of this last group, values of sodium, iron and potassium (28,02; 7,95 and 75.64 mg/100 g respectively) were higher than those that received treatment with lime (white and yellow), which presented a high calcium content (464.97 and 430.79 mg/100 g respectively). The digestibility was superior in the samples with lime, 79% in the purchased ones and 80% in the standardized ones.  相似文献

The major components of the sunflower seed hull, lipids, proteins and carbohydrates were studied Lipids represent 5.17% of the total hull weights, 2.96% of which is wax composed of long chain fatty acids (C14–C28, mainly C20) and fatty alcohols (C12–C30, mainly C22, C24, C26). Hydrocarbon, sterol and triterpene alcohol fractions were also examined. The rest of the lipid fraction is an oil with a composition relatively similar to that of the kernel oil. The protein fraction (4% of the total hull weight) is similar to the protein fraction of the oil cake, although it contains hydroxyproline. The carbohydrate fraction is composed mainly of cellulose, but also of reducing sugars (25.7%), mainly pentoses. A detailed analysis has been carried out on the deasphaltened Cold Lake bitumen using two different series of chromatographic separations followed by i.r., u.v., n.m.r. and computerized GC/MS studies of the separated fractions: saturates (21.3), monoaromatics (8.3), diaromatics (3.6), polyaromatics and non-specific polar compounds (24.35), acids (15.2), bases (6.38), and neutral nitrogen compounds (1.15% of bitumen). The acyclic paraffin content of the maltene is low but decidedly higher than in the related Athabasca bitumen, indicating that the Cold Lake bitumen suffered a less complete biodegradation. Straight-chain paraffins and the isoprenoids phytane and pristane are present. The mono- and diaromatic fractions were analysed by high-voltage, low-resolution mass spectrometry. The monoaromatic fraction contains alkylbenzenes, naphthenebenzenes and dinaphthenebenzenes in a ratio of approximately 1:1:1. The ratio for naphthalenes, acenaphthenes + dibenzofurans and fluorenes in the diaromatic fraction is approximately 1:0.9:0.6. The composition of Cold Lake bitumen closely resembles that of the Athabasca bitumen except that its asphaltene content is somewhat lower and its acidic and saturate content is slightly higher.  相似文献

Buffalo meat is considered in Italy as an alternative product for its good nutritional characteristics. The influence of three cooking methods (boiling, grilling and frying) on the chemical and lipid composition of buffalo meat was evaluated. All the treatments reduced the moisture and increased protein, ash and fat content. The increase in fat content was higher after frying due to the incorporation of fat from olive oil. Fried meat had lower saturated fatty acid content due to the incorporation of mono-unsaturated (C18:1) fatty acids from oil. The incorporation of oil fatty acids caused a decrease in conjugated linoleic acid relative content. Moreover, fried meat showed the highest levels of the unhealthy trans fatty acids. Therefore, frying was shown as the worst cooking methods regarding human health. Boiling and grilling increased thiobarbituric acid reactive substances, while frying had no effect on them.  相似文献

The chemical composition of oil obtained from Pinus sibirica was investigated. The nonpolar lipids were the predominant lipid fraction while the triacylglycerols were the major component of this fraction. α‐ and γ‐tocopherols were the dominant tocopherols in pine oils. Eleven fatty acids (FA) were identified in pine nut oil. The unsaturated FA comprised over 90% of the total FA. Of these, polyunsaturated FA accounted for 66% of the total FA. 18:2 and 18:3 acids were the dominant unsaturated FA, while palmitic and stearic acids were the major saturated FA. Three unusual FA, namely 10,13‐octadecadienoic, gorlic and 11,13‐eicosadienoic acid, were tentatively identified in pine nut oil.  相似文献

Interspecific chemical variation of precloacal pore secretions of Liolaemus lizards was characterized in 20 species, and intraspecific chemical variation was characterized using nine individuals of L. bellii. The latitude (Chile, 18° to 33° South latitude) and altitude (100 to 4350 m.a.s.l.) of the capture sites were recorded, as well as the number of precloacal pores of each lizard. Secretions were analyzed by GC-MS. A total of 49 compounds were found distributed among the 20 species of Liolaemus. Different chemical patterns occurred at intra- and interspecific levels. Compounds belonged to three main families: n-alkanes, long chain carboxylic acids, and steroids. Cholesterol and five carboxylic acids (tetradecanoic, hexadecanoic, hexadecenoic, octadecanoic, and Z-9-octadecenoic) appeared in all species. The number of precloacal pores correlated positively with altitude and negatively with latitude, suggesting that lizards produce more secretions under harsh environments.  相似文献

This work is aimed at analyzing yeast strains, possibly used in animal feeding, obtained by batch cultivation from cheese whey as main carbohydrated substrate. For that purpose 10 yeast strains selected for its biomass production capacity were chemically analyzed. From the results, it can be observed that the chemical composition of the strains is quiet variable, showing in all cases high protein content, good solubility and enzymatic digestibility. In all of them, the RNA content is low, being this important if the biomass is utilized in human feeding. On the other hand, they have an adequate content of essential amino acids, although the sulphur amino acids content is deficient. Among the tested yeasts, Kluyveromyces marxianus var. lactis (No. 10) stands out for the good relationship it has between protein and RNA content, as well as for the detection of methionine among its essential amino acids.  相似文献

Rumex crispus L. seeds harvested in Olavarría (Province of Buenos Aires, Argentina) were extracted with 60–80°C petroleum ether to render 6.0% (dry basis) of a lipid fraction with a 152.4 saponification value and 15.4% unsaponifiable matter. Fatty acid composition obtained by gas-liquid chromatography was: 14:0, 2.7; 16:0, 13.5; 16:1, 1.2; 18:0, 1.2; 18:1, 38.6; 18:2, 36.3; 18:3, 0.5; 20:0, 2.4; 20:2, 0.3; 22:0, 0.9; 22:1, 1.2; and 24:0, 1.2; with traces of 14:1, 15:1, 17:0, and 17:1. Residual meal contained 10.62% crude protein, with a low value of available lysine (3.31 g/16 g N). Ash, crude fiber, sugars, hydrolyzable carbohydrates, total and phytic acid phosphorus, calcium and residual lipids contents are reported here.  相似文献

The effect of low-temp storage on the fatty acid composition of meat lipids was studied. Fat samples were taken from the perirenal and subcutaneous depots of 12 beef carcasses. The samples were divided and one-half from each carcass were stored at −37C for four months. The fat samples (before and after the low-temp storage period) were then extracted, the glyceride fractions separated by low-temp solvent crystallization, and subsequently analyzed by gas-liquid chromatographic techniques. The data obtained in this study and the changes in fatty acid composition noted were not consistent with the pattern of oxidative deterioration but would appear to indicate that non-oxidative mechanisms were responsible for the changes in fatty acid composition observed. The analysis of polymer surfaces in terms of functional groups can be undertaken by X-ray photoelectron spectroscopy. Correlations between chemical composition and water contact angle indicate the dependence of polymer wettability on the surface concentration of oxygen carrying a high electron density, whatever the specific functional groups present. Electrokinetic methods, which can be applied to plates or films, provide tools for examining the surface electric properties and for detecting ionizable groups at polymer surfaces. Surface characterization provides basic information for understanding the adhesion process through molecular interactions. However the study of polypropylene has shown that adhesiveness is not only influenced by surface properties but also by the deformability of the polymer and, consequently, by its crystallinity and its thermal history.  相似文献

The proximate chemical composition of total dust samples from five Texas cottonseed oil mills was determined. Dust compositions were highly variable and were affected more by the processing step than by differences among mills. Composition of cleaning room dusts reflected differences in soil minerals. Typical inorganic values were: silicon (12%), aluminum (0.5%), and iron (0.7%). Delintering dust was highest in cellulosic materials (40%), whereas the 23% protein composition of the hulling dust showed the influence of kernel fragments. Baling, dust contained large amounts of cellulose (38%) and noncellulosic organic constituents (36%).  相似文献
