To estimate the trans-fatty acid production of edible oils during the frying process, 1.0 g of triolein, trilinolein and trilinolenin, as representative oils, were heated at 180 °C for a defined period. The amounts of trans-fatty acids in heated triacylglycerols were quantitatively determined by gas chromatography after methylation. It was revealed that heating induced cis to trans-isomerisation of unsaturated triacylglycerols, and that trans-fatty acid amounts increased gradually, depending on the heating period. For example, trans-isomer amounts in triolein, trilinolein and trilinolenin (per gram) were 5.8 mg, 3.1 mg and 6.5 mg, respectively, after 8 h incubation at 180 °C. At that time, the contents of polar compounds contained in the heated triolein, trilinolein and trilinolenin were 22%, 27% and 31%, respectively. When triolein was heated under a N2 stream, neither trans-isomerisation nor polar compounds were detected. The addition of α-tocopherol (1.0%) to triolein significantly prevented not only lipid oxidation but also trans-isomerisation during heating. A commercially available vegetable oil was also heated under the same conditions as these model oils. Compared with the trans-isomerisation in model oils, the degree of trans-isomerisation in the edible oil was relatively low. Tocopherols in the oil would prevent not only lipid oxidation but also isomerisation. These results suggest that the geometric isomerisation of unsaturated fatty acids during heating accompanies lipid oxidation.  相似文献

Physico-chemical properties of fried rice crackers were studied as a function of fish powder content, processing conditions, frying temperature and frying time. The results showed that addition of fish powder content at 5, 10 and 15 g/100 g reduced the oil uptake by approximately 10, 14 and 22 g/100 g (db), respectively in comparison to the control without fish powder. The deep fried rice crackers mixed with fish powder tended to be lower in hardness, lower in expansion ratio and higher in bulk density in comparison to the control sample. The color parameter, L of fried rice crackers decreased with increase in fish powder content. In contrast, a and b values increased with increase in fish powder content. The moisture content of deep fried rice crackers decreased with increase in frying temperature and frying time. The oil uptake in fried rice crackers increased with increase in frying time but decreased with increase in frying temperature. With increase in frying temperature and time, the texture of rice crackers became harder, the bulk density increased, and the expansion ratio decreased. The optimum conditions resulting in desirable physico-chemical properties and minimum oil uptake were rice crackers with fish powder content of 9 g/100 g, fried at a temperature of 220 °C for 60 s.  相似文献

The retention and distribution of phytosterols in fried oils and French-fries during eight successive pan- and deep-frying sessions of pre-fried potatoes in sunflower oil, palm oil, cottonseed oil, virgin olive oil and a vegetable shortening were evaluated. Phytosterols (β-sitosterol, campesterol, stigmasterol, Δ5-avenasterol) were determined in the unsaponifiable fraction of frying oils and lipids extracted from French-fries by GC/FID after derivatization to trimethylsilyl ethers. French-fries were enriched with phytosterols due to the absorption of frying oil, with β-sitosterol predominating in both fried oils and potatoes. The amount of phytosterols decreased during frying, their overall retentions reaching 9.5–22.8% and 29.4–51.2% after eight successive pan- and deep-frying sessions, respectively, while their deterioration was found to be affected by frying time, frying technique, being more prolonged during pan-frying, and by the oils’ unsaturation, being more extended in polyunsaturated oils. Phytosterols were more or less uniformly distributed between the fried oil and the fried potatoes. The phytosterols dietary intake by consuming potatoes fried in the oils tested is discussed.  相似文献

Effects of egg yolk powder added to the dough on the oxidation of frying oil and lipid of fried products were studied. Flour dough containing egg yolk at 0, 3.53, 6.73, and 9.66/100 g was fried in 180 °C sunflower oil for 1.5 min, and 55 fryings were performed. Lipid damage was determined by free fatty acids (FFA), conjugated dienoic acids (CDA), and polar compounds contents, and p-anisidine values (PAV). Phospholipid (PL) classes were determined by high performance liquid chromatography. PL was not detected in frying oil and fried products without egg yolk, while the first batch of fried products added with egg yolk at 3.53, 6.73, and 9.66 in 100 g of the dough contained total PL at 3.73, 7.93, and 8.98 mg/g, respectively. Contents of PL classes tended to increase in the products fried in the oil performing more fryings. As the number of fryings of oil increased, FFA, CDA, and polar compounds contents and PAV of frying oil increased. Addition of egg yolk to the dough significantly decreased CDA and polar compounds contents and PAV of frying oil, but it increased FFA values. Lipid of fried products showed the same tendency in CDA contents and PAV. The results clearly indicate that egg yolk powder improved the oxidative stability of frying oil during frying, possibly due to PL.  相似文献

Quality changes in chicken nuggets fried in different mixtures of hydrogenated and non-hydrogenated canola oils were studied. Colour, texture, oil and moisture contents of the chicken nugget samples fried at 190 °C for 30, 60, 90, 120, 180, 240 and 300 s were investigated. The proportions of hydrogenated to non-hydrogenated frying oils used in the study were 0%, 20%, 40%, 60%, 80% and 100%.Results indicate that increase in frying time resulted in decreased product lightness (L*) whereas redness (a*) and yellowness (b*) increased. The maximum load to puncture increased with increasing frying time. In addition, oil content increased slowly with frying time, and moisture content decreased as expected. Both frying times and oil types have significant effects on the quality parameters investigated. First-order kinetic equation was used to describe colour changes as well as oil and moisture contents of the samples. Oil and moisture contents had negative correlation relationship. With increasing degree of oil hydrogenation, the surface colour of the fried chicken nuggets samples were lighter, texture increased, oil and moisture contents decreased.  相似文献

Olive oil, sunflower oil and soybean oil were enriched with an olive (Olea Europaea) leaf extract rich in oleuropein at a supplementation level of 100 mg total phenolics per kg oil. Supplemented oils were used for deep frying of potatoes for eight successive frying sessions without replenishment under domestic frying conditions. Supplemented oils contained oleuropein while deep frying resulted in a gradual decrease in oils oleuropein content. After the eighth successive frying, oleuropein was still detected in oils, its retention being 3.2–12.4%. Deep frying of potatoes in supplemented oils succeeded in preparing French fries containing oleuropein even after eight successive fryings. Contrary to the oil type, the number of frying sessions affected potatoes oleuropein content. Oleuropein intake by consuming French fries deep‐fried in enriched oils was approximately ten times higher in potatoes prepared in the first frying session as compared to the respective intake after the eighth frying.  相似文献

The objective was to assess the effects of trans fatty acids and oxidised lipids, present in dietary fat by-products used in feeds, on cholesterol and oxycholesterols in meat, liver and plasma of rabbits. A palm fatty acid distillate, before and after hydrogenation (trans fatty acid trial), and a sunflower–olive oil blend (70/30, v/v), before and after use in a commercial frying process (oxidised lipid trial), were used in experimental feeds (at 3%, w/w). High trans fatty acid and oxidised lipid diets caused significantly higher cholesterol and oxycholesterol levels in all tissues of rabbit (0.01 < ? 0.05). The content of oxycholesterols in rabbit meat, liver and plasma obtained from trans fatty acid experiments varied from 9 to 34 μg/100 g, 24 to 61 μg/100 g and 60 to 138 μg/dl, respectively, from low to high levels. In the oxidised lipid experiments, content of oxycholesterols varied from 16 to 52 μg/100 g, 14 to 108 μg/100 g and 52 to 269 μg/dl in meat, liver and plasma, respectively. As a consequence, meat products from rabbits fed a diet containing higher levels of trans fatty acids or oxidised lipids may result in higher intakes of cholesterol and oxycholesterols by humans.  相似文献

Oil uptake in fresh, blanched and, blanched and dried potato slices was studied during frying. Potato slices blanched in hot water (85 °C, 3.5 min) and potato slices blanched (85 °C, 3.5 min) and then dried until to a moisture content of ∼60 g/100 g (wet basis) were deep fried in sunflower oil at 120, 150 and 180 °C. A control treatment consisted of unblanched potato slices without the pre-drying treatment (fresh samples). It was studied applying two empirical kinetic models in order to fit the oil uptake during frying: (i) a first order model; (ii) a proposed model, with a linear time behavior for short times, while time independent for long times. Oil uptake was high even for short frying times at the different temperatures tested suggesting that oil wetting is an important mechanism of oil uptake during frying. For control slices, oil uptake increased approximately by 32% as the frying temperature decreased from 180 to 120 °C at moisture contents ?1 g water/g dry solid. No apparent effect of frying temperature in oil uptake was observed at moisture contents ?0.5 g water/g dry solid in fried slices previously blanched and dried. The two kinetic models studied fitted properly the values of oil uptake during frying, with similar correlation coefficient r2.  相似文献

Vacuum deep-fat frying is a new technology that can be used to improve quality attributes of fried food because of the low temperatures employed and minimal exposure to oxygen. In this paper atmospheric and vacuum frying of apple slices were compared, in terms of oil uptake, moisture loss and color development. In addition, some apple slices were pre-dried (up to 64% w.b.) before vacuum frying to determine the overall effect. To carry out appropriate comparisons between both technologies equivalent thermal driving forces were used in both processes (ΔT = 40, 50, 60 °C), keeping a constant difference between the oil temperature and the boiling point of water at the working pressure. Vacuum frying was shown to be a promising technique that can be used to reduce oil content in fried apple slices while preserving the color of the product. Particularly, drying prior to vacuum frying was shown to give the best results. For instance, when using a driving force of ΔT = 60 °C, pre-dried vacuum fried slices absorbed less than 50% of the oil absorbed by atmospheric fried ones. Interestingly, a strong relationship between water loss and oil content was observed in both technologies, allowing the extension of observations that have been made for atmospheric frying.  相似文献

This work studied the effects of various pre-treatments (blanching, freezing, air drying, osmotic dehydration and control) on the shrinkage and textural properties of fried sweet potatoes. Sweet potato discs were pre-treated and fried in pure canola oil at 170 °C for 0.5-5 min. Bulk density of the fried samples decreased while porosity increased with frying time. Effect of pre-treatment though not significant on bulk density but was significant (P<0.05) on product porosity. Control samples exhibited less shrinkage than pre-treated samples. Maximum change in diameter of samples ranged between 6.7% and 10.2% depending on pre-treatment. Maximum change in sample thickness was observed by 120 s of frying and the highest value was 18.3%. Pre-treated samples had higher difference in thickness compared to the control samples. Change in sample volume increased with frying time reaching a maximum at 120 s after which it either decreased or levelled off. Generally, pre-treatment improved the textural properties of fried samples in product hardness, springiness, chewiness, cohesiveness and adhesiveness.  相似文献

Microwave frying of osmotically dehydrated potatoes was optimized by using response surface methodology. Osmotic dehydration was applied prior to microwave frying in order to reduce oil uptake and to evaluate the effect of osmotic dehydration on quality of microwave fried potatoes. Moisture content, oil content, hardness and color of the fried potatoes were used as quality parameters. Microwave power level (400, 550, 700 W), frying time (1.5, 2.0, 2.5 min) and osmotic dehydration time (15, 30, 45 min) were the independent variables in the study. Osmotic dehydration treatment was conducted using 20% (w/w) sodium chloride solution at 30 °C. Moisture content of the fried potatoes decreased whereas oil content, hardness and ΔE value of potatoes increased with increasing frying time and microwave power level. The increase in osmotic dehydration time reduced moisture content and oil content and increased hardness of fried potatoes. The optimum condition was found as frying at 400 W microwave power level for 1.5 min after 39 min of osmotic dehydration time.  相似文献

选取食用油-橄榄油、大豆油和棕榈油,模拟日常烹饪体系,采用气相色谱法分析加热和煎炸情况下食用油中反式脂肪酸的种类和含量。试验结果表明,食用油单独加热情况下,加热温度、时间和循环加热次数影响食用油中反式脂肪酸的种类和含量,高温、长时间加热、反复加热均会使反式脂肪酸的含量有所增加。煎炸情况下,在一定温度范围和加热时间内,食用油的反式脂肪酸的含量增加并不明显。因此,普通的烹饪过程中,应注意减少高温加热时间、避免食用油的反复使用。  相似文献

The levels of β-sitosterol and total phytosterols were monitored in pre-fried potatoes during eight successive pan- and deep-frying sessions in five different commercial frying oils (virgin olive oil, sunflower oil, palm oil, cottonseed oil and vegetable shortening oil). The amount of these constituents that were transferred from the frying oils to the potatoes at the end of each frying session was determined prior and after frying by GC/FID. Except for the potato enrichment with phytosterols, the kinetics of the destruction of β-sitosterol and total phytosterols, mainly due to thermal oxidation of the oils, were evaluated for each of the five different types of oil. The experiments showed that in most cases the destruction of both β-sitosterols and total phytosterols followed first order kinetics with quite good correlation coefficients (R>0.92) and the reaction constant k was found to be at the range of 0.004 - 0.028 min-1. Concerning the absorption of the two types of phytosterols in the fried potatoes during frying, they were found to be at the range (average) of 0.4-27% of their initial content in the oil at the beginning of each frying process (eight frying processes/session), depending on the type of oil and the constituent.  相似文献

Sweet potato, green beans, Tommy Atkins mango, and blue potato were fried in a vacuum frying process at a temperature of 120-130 ± 1°C. Before frying, green beans and mango slices were soaked in a 50% maltodextrine 0.15% citric acid solution. The products were also fried in a traditional (atmospheric pressure) fryer at 160-165 ± 1°C for 4 min. A 30-member consumer panel rated the sensory quality of both types of fried snacks using a 1-9 hedonic scale. Compared with traditional frying, oil content of vacuum-fried sweet-potato chips and green beans was 24% and 16% lower, respectively. Blue potato and mango chips had 6% and 5% more oil, respectively, than the traditional-fried samples. Anthocyanin (mg/100 g d.b.) of vacuum-fried blue potato chips was 60% higher. Final total carotenoids (mg/g d.b.) were higher by 18% for green beans, 19% for mango chips, and by 51% for sweet-potato chips. Sensory panelists overwhelmingly preferred (p < 0.05) the vacuum-fried products for color, texture, taste, and overall quality. Most of the products retained or accentuated their original colors when fried under vacuum. The traditional-fried products showed excessive darkening and scorching. These results support the applicability of vacuum frying technology to provide high-quality fruit and vegetable snacks.  相似文献

The supercritical fluid extraction (SFE) trends and antioxidant activities of Hibiscus cannabinus seed oils were studied. SFE results indicate that extraction pressure is the major factor determining the oil yield. In comparison, classic Soxhlet extraction (SOX/L) yielded higher oil content than SFE (P < 0.05). However, no significant differences in oil content were observed in SFE at 600 bars/80 °C, rapid Soxhlet extraction (SOX/S) and conventional ultra-sonic assisted solvent extraction (SONIC) (P > 0.05). Antioxidant activities of H. cannabinus seed oils were compared with 7 types of commercial edible oils. DPPH scavenging activity test indicated that H. cannabinus seed oil extracted by SFE at 200 bars/80 °C possessed the highest antiradical activity whereas beta-carotene bleaching (BCB) assay revealed that all H. cannabinus seed oils (except for SFE at 400 bars/80 °C and 600 bars/80 °C) exhibited higher antioxidant activity than all commercial edible oils (P < 0.05). Thus, SFE – H. cannabinus seed oil may serve as an excellent source of solvent-free edible oil with high antioxidant properties.  相似文献

The effect of oil-based marinades containing grape seed extract (Vitis vinifera L.; 0.2, 0.4, 0.6 and 0.8 g/100 g) formulated in a water/oil emulsion or rosemary extract (Rosmarinus officinalis; 0.12, 0.2, 0.6, 1.0 and 1.5 g/100 g) in oil on the formation of heterocyclic amines (HAs) in fried beef patties was examined. After application of marinades and frying, four HAs MeIQx (2-amino-3,8-dimethylimidazo[4,5-f]quinoxaline), PhIP (2-amino-1-methyl-6-phenylimidazo[4,5b]pyridine), Norharman, and Harman were found at low levels in all fried patties, MeIQx (0.3–1.0 ng/g), and PhIP (0.02–0.3 ng/g). The content of MeIQx and PhIP were significantly reduced by approx. 57% and 90% (p < 0.05), respectively, after use of marinades containing the highest extract concentration. The antioxidant capacity of grape seed was about two-times greater than that of rosemary extract. A correlation between inhibition of HAs and Trolox-equivalents (MeIQx, R2 = 0.85, p < 0.001; PhIP, R2 = 0.83, p < 0.001) was found. Sensory tests showed a high acceptance of flavour and colour for controls and samples.  相似文献

Using hydrocolloids to decrease oil absorption in banana chips   总被引:1,自引:0,他引:1  
The aim of this research was to investigate the influence of hydrocolloids (alginate, CMC and pectin) on the oil absorption in fried banana chips. The control banana chips (no hydrocolloid treatment) had oil content as high as 40 g/100 g sample, whereas the sample blanched in 0.5 g CaCl2/100 ml water and following with immersion in 1 g alginate/100 ml water exhibited a small decrease of oil uptake (p ≤ 0.05) to 38 g/100 g sample. The others which treated with 0.5 g CaCl2/100 ml and 1 g pectin/100 ml water, and with 0.25 g CaCl2/100 ml water and 1 g CMC/100 ml water absorbed much less oil (p ≤ 0.05), approximately 23 g/100 g sample. Besides, pectin-treated chips had higher sensory scores in all attributed than CMC-treated sample. These resulted showed that pectin was the most effective hydrocolloid for low fat fried banana chip production. Scanning electron microscope photographs indicted that coating banana chips with pectin was effective in protecting the cellular structure of the banana tissue from damage during deep-fat frying.  相似文献

Potatoes, green peppers, zucchinis and eggplants were shallow fried in virgin olive oil (VOO) according to the Mediterranean traditional culinary practice. Zucchinis and eggplants were also blanketed with wheat flour or batter prior to frying. Polyphenols and hydroxy pentacyclic triterpene acids (HPTAs) were determined by GC/MS, while α-tocopherol was determined by high-performance liquid chromatography. Among 12 polyphenols determined, tyrosol predominated in frying oils and zucchini samples, while chlorogenic acid was the major phenolic species in the other vegetable samples. The triterpene acids maslinic, oleanolic and ursolic were determined in frying oils and fried vegetables, while α-tocopherol was present in all samples. Besides water loss and oil absorption, shallow frying resulted in partial loss of all the antioxidants studied in frying oils and enrichment of fried vegetables with olive oil antioxidants, which was in some extent affected by the type of vegetable fried and the culinary practice followed. The overall retention of the antioxidants in oil and food ranged from 32% to 64% for α-tocopherol, 25% to 70% for polyphenols and 35% to 83% for HPTA. It appears that vegetables fried in VOO provide an additional intake of α-tocopherol, terpenic acids and polyphenols as tyrosol and chlorogenic acid.  相似文献

Two electron transfer (ET) reaction-based methods, ferric reducing antioxidant power (FRAP) and Folin–Ciocalteu (FC) reducing capacity, were used for the determination of total antioxidant capacity of vegetable oils (rapeseed, palm and extra virgin olive oils), meat samples (poultry and pork) and potatoes before and after the frying process under domestic frying conditions. Before frying, potatoes had the highest FRAP value (276.7 μmol Trolox/100 g), whereas extra virgin olive oil revealed the highest Folin–Ciocalteu Index (FCI = 443.2 μmol Trolox/100 g). Antioxidant capacity of methanolic extracts of raw meat (9.0–9.4 μmol Trolox/100 g and 135.7–160.1 μmol Trolox/100 g for FRAP and FC methods, respectively) was lower than FRAP (133.4–149.6 μmol Trolox/100 g) and FCI (156.2–443.2 μmol Trolox/100 g) of unheated rapeseed and extra virgin olive oils. However, antioxidant capacity of the studied food samples changed after frying process. Positive correlations (correlation coefficients ranged between 0.5742 and 0.9942) were found between the two analytical methods used to determine the antioxidant capacity of unprocessed and processed food products. The results of principal component analysis (PCA) indicate that there are differences between total amounts of antioxidants in raw and fried food products.  相似文献

The effect of type, molecular weight, and concentration of cellulose ethers on the microstructure of fried batter-coated potatoes in two batter systems: controlled viscosity batters (CVB) at 1200 cP and controlled initial moisture content batters (CIMB) at 134 g/100 g flour, were studied by coating cylindrical potatoes (10 mm diameter and 50 mm long) with treatment batters and fried at 160 °C for 3 min. The coatings were separated and their structures were viewed by scanning electron microscopy technique. The micrographs of fried batters showed that different types of cellulose ethers with the same molecular weight and concentration did not affect the microstructures of batters. The viscosity and water content of batters as well as the molecular weight and concentration of cellulose ethers altered the microstructure of fried batters. For CVB, the structure of fried batter containing methylcellulose of higher molecular weight and concentration with simultaneous higher moisture content showed greater hole-size which allowed higher amount of oil penetration through the batter into the food substrate. In contrast, the structure of CIMB with a higher molecular weight and concentration of methylcellulose was relatively more continuous; therefore, it might help in preventing oil penetration into the food substrate.  相似文献
