To evaluate individual variations in broccoli VOLTA F1 plants, the bioactive components of 15 florets that were cultivated in identical agricultural and climatic conditions were analyzed. Glucosinolates were analyzed by HPLC; total phenolic compounds, ascorbic and dehydroascorbic acids (vitamin C) and the DPPH and OH radical-scavenging activities of samples were also determined. Florets were characterized by particularly high glucoraphanin content, 17.95 μmol/g dry weight on average, which comprised about 50% of total glucosinolates. High individual variation was observed for several bioactive compounds, as well as for DPPH and OH radical-scavenging activity. Coefficients of variability (CVs) were high, and except for one case, exceeded 10%. Among glucosinolates, the highest CVs were noted for progoitrin (34.22%), 4-hydroxyglucobrassicin (27.32%) and neoglucobrassicin (24.44%). High CVs were also observed for vitamin C (29.11%), including dehydroascorbic acid (26.72%), and for OH (25.76%) and DPPH (21.77%) radical-scavenging activities. Determining ontogenic diversity in vegetables, in general or Brassicas in particular, regarding the bioactive content, is an interesting task since the most promising Brassicaceae foods could have the highest nutritional and health-promoting properties. Therefore, vitamin C, phenolic compounds, glucosinolate content, and total antioxidant capacity were evaluated in commercial cultivars of broccoli (Brassica oleracea var. italica; cv. Nubia, cv. Marathon and cv. Viola) seeds and during the sprouting period. Vitamin C was not detected in dormant seeds and its content increased with the germination, reaching values ranging from 53 (cv. Nubia) to 64 (cv. Marathon) mg/100 g FW, at the end of the monitored period (14days). The total glucosinolate content in seeds and 3-day-old sprouts was higher in cv. Marathon (1005 and 556 mg/100 g FW, respectively), however cv. Viola sprouts registered the highest glucosinolate content 7 and 14 days after sowing (235 and 208 mg/100 g FW, respectively). Aliphatic glucosinolates were more affected by genetic factors than the indolic glucosinolates, being glucoraphanin the predominant glucosinolate in cv. Nubia and cv. Marathon, whereas glucoiberin was the major glucosinolate in cv. Viola. The flavonoid and total phenolic content was significantly higher in cv. Viola. Also, seeds of this cultivar showed the highest antioxidant capacity (2.7 mg Trolox/g FW).  相似文献

The effect of high pressure treatment on the vitamin C content and antioxidant capacity of raw and germinated cowpea seeds (Vigna sinensis var. carilla) at 300, 400 and 500 MPa for 15 min at room temperature has been investigated. A considerable amount of vitamin C was detected in germinated cowpeas, but the vitamin was not detected in raw seeds. An increase on the antioxidant capacity (TEAC) in cowpea sprouts was also observed (58–67%). High pressure treatment (HP) slightly modified vitamin C content and TEAC and, after pressurization at 500 MPa, the decrease was more pronounced, although the germinated seeds submitted to this HP treatment still provided a high amount of vitamin C (15–17 mg/100 g d.m.) and the antioxidant capacity was 26–59% higher than that of the raw cowpeas. The HP process can provide minimally processed fresh-like sprouts of high quality.  相似文献

The purpose of this study was to determine the antioxidant capacity and the content of antioxidant compounds in raw mung bean seeds and sprouts (Vigna radiata cv. emmerald) germinated for 2, 3, 4, 5 and 7 days and of soybean seeds of Glycine max cv. jutro germinated for 2, 3 and 4 days and of Glycine max cv. merit germinated for 2, 3, 4, 5 and 6 days. Antioxidant compounds, such as vitamin C and E, total phenolic compounds and reduced glutathione (GSH) were studied. Antioxidant capacity was measured by superoxide dismutase-like activity (SOD-like activity), peroxyl radical-trapping capacity (PRTC), trolox equivalent antioxidant capacity (TEAC) and inhibition of lipid peroxidation in unilamellar liposomes of egg yolk phosphatidylcholine (PC). The results indicated that changes in the contents of vitamin C, vitamin E and GSH depended on the type of legume and germination conditions. Sprouts of mung bean and soybeans provided more total phenolic compounds than did raw seeds. The SOD-like activity increased after germination of mung bean seeds for 7 days, by 308%, while no change was observed in sprouts of Glycine max cv. jutro and an increase was observed after 5 and 6 days of germination (∼20%) in Glycine max cv. merit. PRTC and TEAC increased during the germination process and retentions of 28–70% and 11–14%, respectively, for soybean, and 248% and 61%, respectively, for mung bean were observed at the end of germination. The inhibition of lipid peroxidation increased by 389% in 5–7 days’ germination of Vigna radiata cv. emmerald sprouts, and 66% in Glycine max cv. merit sprouts whilst, in Glycine max cv. jutro, germination did not cause changes in lipid peroxidation inhibition. According to the results obtained in this study, germination of mung bean and soybean seeds is a good process for obtaining functional flours with greater antioxidant capacity and more antioxidant compounds than the raw legumes.  相似文献

Antioxidant capacity, measured by glutathione (GSH), superoxide dismutase-like activity (SOD-like activity), peroxyl radical-trapping capacity (PRTC), trolox equivalent antioxidant capacity (TEAC) and inhibition of lipid peroxidation in unilamellar liposomes of egg yolk phosphatidylcholine (PC) has been evaluated in raw and germinated lupin seeds (Lupinus angustifolius L. var. Zapaton) for 2, 3, 4, 5, 6 and 9 days. The content of antioxidant vitamins E and C has been also studied. The tripeptide GSH kept invariable for the first 5 days of germination and suffered a decrease of 20 and 78% after 6 and 9 days, respectively. During lupin germination, SOD-like activity increased slightly whilst PRTC doubled the amount after 9 days. TEAC values changed slightly up to 5 days of germination but after 6 and 9 days a significant increase (25 and 28%, respectively) was found. The oxidation of PC was inhibited by germinated lupin extracts and 9-day germination seeds provided the highest inhibition. Furthermore, germinated lupins provided more vitamin C, vitamin E activity and polyphenols than raw seeds, and the largest amounts of these bioactive compounds were found after 6 days of germination. Therefore, germination of lupin seeds (Lupinus angustifolius L. var. Zapaton) seems to be a good process to enhance their antioxidant capacity.  相似文献

The effect of 1-methylcyclopropene (1-MCP) on quality, antioxidant enzymes and glucosinolate contents in broccoli (Brassica oleracea var. italica) florets was investigated in the present study. Broccoli florets were treated with air (control) and 2.5 μl/l 1-MCP for 6 h at 20 °C, and were then stored at 20 °C for 5 days. 1-MCP treatment markedly extended shelf life, reduced postharvest deterioration, retarded chlorophyll degradation and inhibited the increase of malondialdehyde amount and activities of polyphenol oxidase and lipoxygenase in florets. The activities of superoxide dismutase, peroxidase and catalase in florets treated with 1-MCP were higher than those in control florets. 1-MCP treatment reduced the rate of decrease of total carotenoids, ascorbic acid and glucosinolates in florets when compared to those in the control. These results indicated that 1-MCP treatment could be a good candidate for extending shelf life, maintaining visual quality and reducing loss of health-promoting compounds, particularly glucosinolates in broccoli.  相似文献

The effect of thermal processing and the berry cultivar has been the subject of several studies, to serve as a basis for the least possible loss of bioactive compounds and antioxidant capacity. In Brazil, there are numerous blackberry cultivars under cultivation, and in this context, the aim of this work was to study how the bioactive compound contents and antioxidant capacity of blackberry jelly were influenced by the cultivars (Guarani, Brazos, Comanche, Tupy, Cherokee, Caingangue and Choctaw). Analysis was made of 7 fresh blackberry cultivars and 7 blackberry jelly formulations. Analysis of antioxidant activity, total phenolics, total anthocyanins and ascorbic acid was performed. It was verified that the contribution of the heat sensitive antioxidants compounds is considerable in all blackberry cultivars, and the degradation of these compounds was significantly different between the different blackberry cultivars. The Brazos and Caingangue cultivars stand out as undergoing the lowest losses in processing, resulting in jellies richer in bioactive compounds and higher antioxidant capacity.  相似文献

以神木连枷条、定边小黑豆和子洲小黑豆3个黑豆品种为材料,测定了小粒黑豆萌发过程中总酚、总黄酮和总花色苷等活性组分含量,同时测定其抗氧化能力的变化。结果表明,小粒黑豆萌发过程中,花色苷大量积累,3种小粒黑豆花色苷含量峰值分别为萌芽第1天的1.95、3.10、11.79倍,总酚和总黄酮含量均有所上升;抗氧化能力有所增强,其中O2-·的清除能力增强效果最为明显,3种小粒黑豆最大O2-·清除率依次是萌发第1天的1.83、1.53、1.93倍。相关性分析表明,子洲小粒黑豆和定边小黑豆的DPPH·清除能力分别与总酚、总黄酮和花色苷含量呈极显著正相关(P<0.01),神木连枷条和子洲小黑豆的O2-·清除能力和总酚含量均呈显著正相关(P<0.05)。因此,萌发可作为提高小粒黑豆活性组分含量及抗氧化能力的有效手段。  相似文献

In this study, ascorbic acid, total polyphenols and proanthocyanidins of fresh-cut cashew apple were quantified. Antioxidant capacity was determined in whole juice and in polyphenols extracts by three methods: 2,2-diphenyl-1-picrylhydrazyl (DPPH), ferric reducing antioxidant power (FRAP) and ??-carotene bleaching. Effect of cutting and storage for 24 h at 2 °C, 27 °C and 40 °C on these compounds were also evaluated. Cashew apple presented 163 mg of ascorbic acid per 100 g of fresh weight (FW). Soluble and hydrolysable polyphenols contents were 12.79 mg GAE/100 g FW and 18.53 mg GAE/100 g FW and proanthocyanidins were 9.27 mg/100 g FW. Antioxidant capacity of juice and polyphenols extract was high for DPPH method. Storage temperatures affected bioactive compounds on cut cashew apple. The content of ascorbic acid decreased in all temperatures. Proanthocyanidins were more sensitive to 40 °C than to other temperatures. The content of polyphenols and antioxidant capacity of juice by DPPH assay did not change. However, the reducing power was lower in samples kept at high temperatures. A strong positive correlation between ascorbic acid and FRAP (r = 0.99) and a negative correlation between DPPH and FRAP (r = − 0.79) were observed. No correlations were found between polyphenols and antioxidant capacity indicating the importance of phenolic composition in the extracts. The results confirm the importance of temperature and injury on the quality of cashew apple.  相似文献

In this study, changes in physiological and biochemical metabolism, phenolics and antioxidant capacity of six different Chinese pea varieties during germination were investigated. Results showed that germination had a positive effect on the physiological indexes and bioactive substances of pea. The bud length, root length, fresh weight and respiration rate of pea sprouts increased with germination time. The content of free and bound phenolics in germinated peas increased significantly. Meanwhile, activated phenylalanine ammonia-lyase (PAL), cinnamate 4-hydroxylase (C4H) and 4-coumaric acid coenzyme A ligase (4CL) led to the accumulation of phenolics. Antioxidant capacity of pea sprouts increased with the extension of germination time. From the perspective of principal component analysis, compared with the other five varieties, Longwan 7 can be distinguished by free phenolic content in the later stage of germination. The result provides a new perspective for further development of pea as a functional food for human consumption.  相似文献

Common bean (Phaseolus vulgaris L.) seeds are an economical protein source rich in bioactive compounds with antioxidant activity. In this work, we evaluated processed seeds from two common bean cultivars regarding protein profile and antioxidant capacity before and after enzymatic digestion in vitro. We provided protein maps by two-dimensional electrophoresis (2-DE) of seeds germinated during 36 h and 72 h. The principal component analysis (PCA) showed that protein abundance had more variation on germination times than the cultivar ones. Seeds germinated for 36 h showed greater antioxidant capacity compared to germination for 72 h and cooking, before and after enzymatic digestion. In protein isolates, cooking associated with digestion provided better antioxidant capacity. Germination time influences protein expression as well as the antioxidant capacity of common beans. Furthermore, in vitro digestion increases the antioxidant capacity of cooked bean protein isolates.  相似文献

The growing interest in new functional foods with special characteristics and health properties has led to the development of new beverages based on fruit juice–skim milk mixtures. The proliferation of ready-to-drink beverages has caused the market to focus its interest on these products. Commercial conventionally pasteurized or sterilized beverages based on a mixture of fruit juice and skim milk were evaluated nutritionally for their concentrations of vitamin C, vitamin A and phenolic compounds and their total antioxidant capacity, taking the influence of physicochemical parameters into account. The main contribution to the total antioxidant capacity (TEAC, trolox equivalent antioxidant capacity) was provided by vitamin C, followed by phenolic compounds, in accordance with a mathematical equation obtained from the data: TEAC = −0.184 + 0.009 ∗ [vitamin A] + 0.011 ∗ [phenolic compounds] + 0.058 ∗ [vitamin C]. The R-squared value was 86.88%. Citrus fruits, such as lemons or oranges, were the fruits associated with the greatest antioxidant capacity in the samples analysed.  相似文献

Antioxidant activity of asparagus, broccoli and their juices was evaluated using 2,2′-diphenyl-l-picrylhydrazyl (DPPH), 2,2′-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) and β-carotene bleaching assays. Asparagus showed greater antioxidant activity than broccoli. Asparagus juice also had greater antioxidant activity than broccoli juice. Methanol and acetone extracts of asparagus and broccoli had significantly greater antioxidant activity than their water extracts. Asparagus and broccoli extracts, as well as their juices, showed no significant difference in total phenolics content. However, asparagus contained more flavonoids than broccoli. The antioxidant activity of asparagus and broccoli extracts demonstrated a linear relationship with their flavonoid content.  相似文献

This work aimed at studying the effects of pretreatment, namely, hot water blanching, and hot air-drying (60–120 °C) on the evolutions of vitamin C, phenolic compounds, nomilin and limonin, which are potential bioactive compounds in lime residues during drying. Blanching was found to decrease both the antioxidant contents and activities of the residues due to thermal degradation and loss with the blanched water. During drying, nomilin and limonin contents first increased, probably due to the remaining enzyme activity after blanching. After this period, the amounts of both nomilin and limonin dropped rapidly, due to thermal degradation. Product temperature was found to be a major factor controlling the changes of limonoids and there was no direct correlation between the moisture change during drying and limonoid contents. During degradation of vitamin C and phenolic compounds, the amounts of both substances decreased as the product temperature increased and the moisture content decreased during drying. The amount of phenolic compounds correlated well with the total antioxidant activity and phenolic compounds were found to be a major contributor to antioxidant activity of the product.  相似文献

Eleven peach cultivars (white‐ and yellow‐flesh peaches, nectarines and canning clingstone peaches) were assayed for their antioxidant capacity and their content of some important organic compounds as well as vitamin C, carotenoids and phenols. Antioxidant capacity, determined by FRAP assay, varied between genotypes. Those with the highest value of Ferric Reducing Antioxidant Power (FRAP) were Federica and Springcrest. Antioxidant capacity was correlated to the amount of organic components with significant differences among the cultivars. In some case, antioxidant capacity was related to phenol content, as in yellow–flesh peaches. These results suggest the importance of genotype for determining antioxidant capacity, which, in turn, is related to the organic constituents, such as phenols, vitamin C and carotenoids.  相似文献

The effect of minimal processing on the health-related attributes of orange fruit was investigated. Oranges were prepared as whole fruits, hand-peeled fruits and manually separated segments, packed under air atmosphere and stored at 4 °C for 12 days. The stability of main bioactive compounds (carotenoids, flavanones and vitamin C) and antioxidant activity was evaluated. The total carotenoid content showed a significant increase for the whole samples during refrigerated storage, whereas no significant changes were observed for segments or peeled samples. A similar trend was found for vitamin A. With regard to vitamin C, at the end of refrigerated storage, some losses were observed although no significant differences were found among the different processed samples. The flavanone content showed a significant increase throughout refrigerated storage as response to cold stress. In general, the antioxidant activity remained stable in relation to the initial values. Hence, the health-related characteristics of minimally processed oranges were retained during refrigerated storage.  相似文献

The germination, growth, total phenolics, glucosinolate, myrosinase and antioxidant activity of radish sprouts germinated under 0 (control), 10, 50 and 100 mM of NaCl were investigated. The glucoraphasatin (4-methylthio-3-butenyl-glucosinolate), total glucosinolate and total phenolic contents of 5- and 7-day-old sprouts treated with 10 and 50 mM of NaCl were significantly decreased. However, the antioxidant activity of sprouts treated with 10 and 50 mM of NaCl was not affected. The glucoraphasatin and total glucosinolate contents of 5- and 7-day-old sprouts, total phenolic contents of 3- and 5-day-old sprouts were significantly increased and myrosinase activities of 3- and 5-day-old sprouts were inhibited, although the germination was dramatically inhibited by 100 mM of NaCl treatment. These results indicated that salt stress (100 mM of NaCl treatment) could improve the nutritional value of radish sprouts, and germination of sprouts under adequate salt stress could be one useful way to enhance health-promoting compounds of plant food.  相似文献

Grape pomace is an agro‐industrial residue produced worldwide and mainly employed for animal feed or as a fertiliser. Several studies have shown that grape pomace is a rich source of bioactive compounds, such as phenolic compounds, polysaccharides, fatty acids and others. Three varieties of grape pomace were evaluated in this study. Antioxidant activity was determined by three different methods, namely, DPPH˙, ABTS and ferrous ion assays. Fatty acids and phenolic compounds were identified, respectively, by gas and liquid chromatography. Results showed that grape pomace is a rich source of polyunsaturated fatty acids and phenolic compounds. Cabernet Sauvignon pomace revealed higher values of total phenolic compounds, total flavonoids and total monomeric anthocyanin, and presented the lowest value of EC50, and thus a higher antioxidant activity among the samples analysed.  相似文献
