In this work the total vitamin C contents (ascorbic acid + dehydroascorbic acid) and antioxidant activity of raw and cooked chestnuts was evaluated. The vitamin C contents of raw chestnuts varied significantly between the different cultivars (cv) studied and it varied from 400 mg/kg dry weight (cv Lada) to 693 mg/kg dry weight (cv Martaínha). The different cultivars behave differently during the cooking process concerning the loss of vitamin C. A significant decrease in the vitamin C content of the chestnuts was observed, 25–54% for the boiling process and 2–77% for the roasting process. Boiled and roasted chestnuts can be good sources of vitamin C since it may represent 22.4%, 16.2%, 26.8% and 19.4%, respectively, of the recommended dietary intake for an adult man and woman. The cooking process significantly changed the antioxidant activity of the chestnuts. A difference was observed between the cultivars during the cooking processes, concerning the antioxidant activity. For the raw chestnuts the variation in vitamin C content of the chestnuts explains 99% of the antioxidant activity variation but for the roasted and boiled chestnuts this percentage significantly decreases to 51% and 88%, respectively. Although a high antioxidant activity is still present in the cooked chestnuts, the cause for this antioxidant activity is less dependent on the vitamin C content of the chestnuts, probably due to the conversion of ascorbic acid to dehydroascorbic acid. The increase in gallic acid during the cooking process, presumably transferred from the peels to the fruit, also contributes to the high antioxidant activity observed for the cooked chestnuts.  相似文献

Chemical composition of eight sweet chestnut cultivars from the three protected designation of origin (PDO) areas in the Trás-os-Montes region were studied: Aveleira, Rebordã, Trigueira and Zeive from PDO ‘Terra Fria’, Demanda, Longal and Martaínha from PDO ‘Soutos da Lapa’ and Judia from PDO ‘Padrela’. Chestnuts were characterised by high moisture content (∼50%), high levels of starch (43 g 100 g−1 dry matter – d.m.) and low fat content (3 g 100 g−1 d.m.). Nuts contained significant amounts of fibre (3% d.m.), were rich in K (∼750 mg 100 g−1 d.m.), P (∼120 mg 100 g−1 d.m.) and Mg (∼75 mg 100 g−1 d.m.). Moreover, chestnuts are a good source of total amino acids (6–9 g 100 g−1 d.m.). Amino acid profiles were dominated by l-aspartic acid, followed by l-glutamic acid, leucine, l-alanine and arginine. These results provide additional information about the nutritional value of each cultivar and confirm that chestnuts are an interesting healthy food.  相似文献

The organic acids composition of two different chestnut (Castanea sativa Miller) varieties (Judia and Longal) were determined by HPLC/UV. In order to check the influence of the processing over these compounds, samples treated in three distinct manners (roasted, boiled and fried) were also analysed. The results showed that chestnut is characterized by the presence of seven organic acids: oxalic, cis-aconitic, citric, ascorbic, malic, quinic and fumaric acids. The organic acid quantitative profile allows the distinction of the two varieties. Longal variety samples presented higher organic acids contents than those from Judia variety. The contents of the pair malic plus quinic acids may be useful for the discrimination of the two varieties. Roasting, boiling and frying procedures lead to significant reduction of total organic acids contents.  相似文献

The effects of different processing methods on the amino acid contents of four marine fishes commonly consumed in Nigeria: Clupea harengus, Scomber scombrus, Trachurus trachurus and Urophycis tenuis were investigated. The samples were boiled, roasted over hot charcoal, or fried in any of four different oil types (palm oil, soybean oil, vegetable oil and groundnut oil). The total amino acids for all the fish samples ranged from 76.72 to 98.01 g/100 g protein and the total essential amino acids from 28.95 to 44.73 g/100 g protein. Frying reduced the total amino acid contents, with the lowest values obtained in samples fried in palm oil. Boiling and roasting increased the total amino acid contents, with the values higher in roasted than boiled samples. The percentage of essential amino acids reduced with processing in almost all samples, but the reduction was more pronounced in the fried samples. The raw, boiled and roasted samples had amino acid scores greater than 100%, while for the fried samples, the limiting amino acids were either leucine or threonine. The results showed that roasting and boiling had more desirable effects on the amino acid content of the fish samples.  相似文献

以天峨县、隆林县、隆安县3个产地板栗为研究对象,比较分析生熟板栗的营养物质、抗氧化成分及加工特性。结果表明:板栗品质因产地和生熟状态不同而不同。熟板栗色泽更深,脂肪、氨基酸含量及持水性更高,但生板栗中可溶性蛋白、VC含量更高,清除自由基能力与持油性更强。天峨生板栗更亮黄,可溶性糖、脂肪、VC、氨基酸及必需氨基酸总量最高;天峨熟板栗氨基酸、必需氨基酸总量最高。聚类分析结果表明,天峨生板栗、天峨熟板栗聚为一类,天峨板栗各营养成分含量较高,品质较好。3个产地生板栗可能更适合应用于曲奇、桃酥、膨化等食品,熟板栗更适合应用于板栗糊、面包等产品。  相似文献

Jerusalem artichoke tubers (Helianthus tuberosus L.) undergo enzymatic browning when peeled or cut, and turn grey after boiling, due to after-cooking darkening reactions between iron and phenolic acids. In an attempt to reveal the components responsible for these discolouration reactions, sensory evaluation and instrumental colour measurements were related to contents of total phenolics, phenolic acids, organic acids and iron in three varieties of raw and boiled Jerusalem artichoke tubers harvested in the autumn and the spring. No differences were found between varieties in sensory evaluated enzymatic browning, but Rema and Draga had higher scores than Mari in after-cooking darkening. Jerusalem artichoke tubers had higher contents of total phenolics, phenolic acids and citric acid in the autumn and low contents in the spring, while it was the opposite for malic acid. None of the chemical parameters investigated could explain the discolouration of the Jerusalem artichoke tubers.  相似文献

The effect of different roasting conditions on antioxidant capacity of phenolics of cashew nuts and their testa was evaluated using several food and biological model systems. Total phenolic content (TPC) of cashew extracts was determined and accelerated oxidative stability of stripped corn oil in the presence of cashew extracts evaluated. In addition, the antioxidant activity of the extracts was assessed in a β-carotene-linoleate and a cooked comminuted pork model system. Inhibition of oxidation of human low density lipoprotein (LDL) cholesterol and stand breaking of supercoiled deoxyribonucleic acid (DNA) was also investigated. The TPC ranged from 5 to 791 mg gallic acid equivalents/g crude extract. In general, whole cashew nuts and testa extracts demonstrated stronger antioxidant activity than that of the cashew kernel. The inhibition percentage of LDL cholesterol oxidation, as evaluated by conjugated dines formation, of cashew kernels was higher than that of testa and was 69% at the end of 24 h incubation. Extracts of roasted cashew nut showed considerable antioxidative efficiency in model systems employed in this study, however, the effect was not significantly (P ? 0.05) different from that of their raw counterparts, except for the accelerated oxidative stability assay. The results suggest that whole cashew nut and testa extracts could be used as a potential source of natural antioxidants in certain food applications and for disease risk reduction.  相似文献

The effect of roasting on the phenolic components of Australian wattle (Acacia victoriae Bentham) seed was investigated. Wattle seeds were roasted at 200 °C for 5–30 min and ground to flour, which were then extracted with 70% acetone. The total phenolic and flavonoid contents of the extracts were determined, and the phenolic components were analysed by reverse phase-high performance liquid chromatography (RP-HPLC) coupled with an on-line post-column reaction system to determine the active antioxidant peaks. The major peaks were then purified by preparative HPLC and identified by gas chromatography–mass spectrometry (GC–MS) analysis. Roasting of wattle seeds resulted in significant increases in its soluble phenolic content. The concentration of total phenolics and flavonoids in the seeds roasted for 30 min was more than nine and four times higher, respectively, than that in the raw seeds. The major phenolic acids present in wattle seeds were found to be succinic and gallic acids, the concentration of which increased by up to 10-fold as a result of roasting.  相似文献

The effects of the catching season (either Autumn/Winter or Spring) on lipid content, fatty acid profile and true retention values after oven baking were determined in anchovy (Engraulis encrasicholus), sardine (Sardina pilchardus), sprat (Sprattus sprattus) and horse mackerel (Trachurus trachurus) from the North Adriatic sea. In the raw state, the catching season induced significant changes in the flesh lipid contents of sardine and sprat. Anchovy was the species whose fatty acid composition of flesh lipids was most clearly affected by the season of catch. Oven baking had a significant, though rather modest, effect on some fatty acids and indices of sardine and anchovy lipids. When compared to the other species within the same season, spring sardine and winter sprat gave significantly higher true retention values for several individual fatty acids and some sums. Between 1 and 2.5 servings/week (depending on season) of either cooked anchovy, sardine, sprat, or 3 servings of cooked spring horse mackerel would suffice to satisfy human weekly requirements of EPA + DHA.  相似文献

Phenolic acids in potherb mustard (Brassica juncea, Coss.) were determined and the effects of pickling methods on the contents of total free phenolic acids, total phenolic acids, total phenolics, and antioxidant activities were investigated. Gallic acid, protocatechuic acid, p-hydroxybenzoic acid, vanillic acid, caffeic acid, p-coumaric acid, ferulic acid, and sinapic acid were identified in the present study. The contents of total free phenolic acids, total phenolic acids and total phenolics in fresh potherb mustard were 84.8 ± 0.58 μg/g dry weight (DW), 539 ± 1.36 μg/g DW, and 7.95 ± 0.28 mg/g DW, respectively. The total free phenolic acids increased during the pickling processes, but the total phenolic acids, total phenolics, and antioxidant activities decreased. However, after 5 weeks of fermentation, all the pickling methods retained over 70% of total phenolic contents and above 65% of antioxidant capacities. The results indicated that pickling processes were relatively good methods for the preservation of phenolic acids and antioxidants for potherb mustard.  相似文献

Swallow root (Decalepis hamiltonii) was extracted for free (SRFP), conjugated (SRCP) and insoluble-bound phenolic acids (SRIBP), and evaluated for cytoprotectivity, 1,1,diphenyl-2-picrylhydrazyl (DPPH) scavenging ability, reducing power and protection to DNA damage. In addition, the constituent phenolic acids in the extracts were also analysed. Results indicated a total phenol content of 20.72, 7.97 and 11.52 mg gallic acid equivalents (GAE)/g for SRFP, SRCP and SRIBP extracts, respectively. At 0.12 μg/mL concentration SRCP showed 87% cytoprotection (on NIH 3T3 cells) compared to SRFP (47%) and SRIBP (65%). DPPH radical scavenging activity indicated an IC50 of 0.046, 0.06 and 0.128 μg/mL for SRCP, SRIBP and SRFP, respectively. Also, SRCP showed higher reducing power and DNA protectivity (80%). HPLC analysis of phenolic acid extracts showed the presence of hydroxybenzoate and cinnamate derivatives. Among the phenolics identified gallic, gentisic, protocatechuic and p-coumaric acids were the major contributors to antioxidant activity.  相似文献

The effectiveness of increasing CLA in pork products through animal dietary supplementation or direct addition in the product formulation has been studied, and the effect of grilling on dry matter and fat contents and fatty acid composition has been analysed. Sausages made with meat and back fat from pigs with CLA dietary supplementation had the highest saturated fatty acid content. Sausages from dietary supplementation and direct addition had CLA levels between 6% and 7% of total fatty acids. Moisture and fat contents decreased and increased respectively after cooking for the three sausage types (control, dietary supplementation, direct addition). Grilling had little effect on fatty acid levels, especially for sausages with direct addition in the product formulation. In general, saturated fatty acids increased and poly-unsaturated fatty acids decreased due to the increase of C16:0 and to the decrease of C18:2 n − 6c and C18:3 n − 3 fatty acids. Added CLA, both from animal dietary supplementation or direct addition, remained at similar levels in cooked sausages to those found in raw sausages.  相似文献

Total phenolics content, free radical scavenging activity, reducing power, and antioxidant activity of the pyroligenous acid from a mangrove plant, Rhizophora apiculata were evaluated. Dichloromethane extraction of the raw pyroligneous acid successfully yield 2 extracts, i.e. concentrated pyroligneous acid (CPA) and concentrated pyroligneous acid extract (CPAE). Phenolic contents in CPAE and CPA, expressed as (±)-catechin equivalents/g of the sample were 5465 ± 367 mg and 2502 ± 152 mg, and expressed as gallic acid equivalents/g of the sample were 2919 ± 209 mg and 1348 ± 90 mg, respectively. CPAE exhibited superior free radical scavenging activity with EC50 value = 0.1235 mg/ml, or 80.96% of free radical scavenging capability. The ferric reducing power of CPAE was approximately 3.7, 5.1, 6.1, and 21.3 times higher than that of ascorbic acid, BHA, BHT and alpha-tocopherol. In phosphomolybdenum assay, CPAE showed the greatest antioxidant efficacy (A695 = 1.278) compared to those of CPA and different standards. In addition, the free radical scavenging activity, ferric reducing power and total antioxidative activity of CPAE and CPA showed positive correlation with their total phenolic content with R2 values ranging from 0.9624 to 0.9979.  相似文献

研究不同烹调方式(蒸煮、烘烤和煎炸)对羊肉品质的影响,分别对样品中氨基酸、脂肪酸和核苷酸的组成及含量、质构指标以及肌肉微观结构进行检测。结果表明:蒸煮方式的损失率最低,对氨基酸、脂肪酸和核苷酸的组成及含量的影响最小;在3 种烹调方式对肉样处理过程中,肉样的氨基酸模式和脂肪酸模式均发生不同程度的变化;煎炸肉样中呈味氨基酸含量为55.33%,显著高于蒸煮肉样呈味氨基酸含量(50.67%)和烘烤肉样呈味氨基酸含量(49.33%);烘烤肉样呈味核苷酸含量最低;蒸煮、煎炸和烘烤对肉样的脂肪酸组成及含量虽有影响,但组间并无差异显著性。烘烤肉样咀嚼性优于煎炸肉样和蒸煮肉样。在3 种烹调方式处理过程中,烘烤肉样肌纤维束变形、肌束膜破坏、肌间脂肪受损程度最严重。  相似文献

The influence of slaughter season and muscle type on the detailed fatty acid composition, including conjugated linoleic acid isomers, and contents of total cholesterol and lipid-soluble antioxidant vitamins (α-tocopherol and β-carotene) in Mirandesa-PDO veal was assessed. Mirandesa purebred calves (n = 29) were raised in a traditional production semi-extensive system, slaughtered in late spring (June) or early autumn (October) and the longissimus lumborum and semitendinosus muscles were sampled for analysis. Although the lipid composition of PDO veal was only slightly affected by the slaughter season, it was markedly changed by the muscle type. However, PDO veal had values of pasture-fed cattle for lipid grass intake indicators, in both seasons and muscles. From a human health standpoint, intramuscular fat in Mirandesa-PDO veal has a high nutritional value throughout the year, with favorable ratios of n− 6/n− 3 and contents of n− 3 PUFA and α-tocopherol, as a result of the beneficial effects of grass feeding.  相似文献

The effect of boiling, microwaving and grilling on the composition and nutritional quality of beef intramuscular fat from cattle fed with two diets was investigated. Longissimus lumborum muscle from 15 Alentejano young bulls fed on concentrate or pasture was analyzed. Cooking losses and, consequently, total lipids, increased directly with the cooking time and internal temperature reached by meat (microwaving > boiling > grilling). The major changes in fatty acid composition, which implicated 16 out of 34 fatty acids, resulted in higher percentages in cooked beef of SFA and MUFA and lower proportions of PUFA, relative to raw meat, while conjugated linoleic acid (CLA) isomers revealed a great stability to thermal processes. Heating decreased the PUFA/SFA ratio of meat but did not change its n−6/n−3 index. Thermal procedures induced only slight oxidative changes in meat immediately after treatment but hardly affected the true retention values of its individual fatty acids (72–168%), including CLA isomers (81–128%).  相似文献

Samples of fruit from the jussara palm plant (Euterpe edulis), collected in different regions of the state of Santa Catarina, Brazil, were analyzed for chemical composition, phenolic acids, anthocyanins, flavonoids and fatty acids profile. Results indicated that the jussara fruit has a high lipid content (18.45-44.08%), oleic acid (44.17-55.61%) and linoleic acid (18.19-25.36%) are the fatty acids found in the highest proportion, and other components were proteins (5.13-8.21%), ash (1.55-3.32%) and moisture (34.95-42.47%). Significant differences were found in the total phenolic, total monomeric anthocyanins and other flavonoids for the samples from the five cultivation regions. The fruit from region E harvested in summer, with high temperatures and medium altitudes, had the highest contents of total phenolics (2610.86 ± 3.89 mg 100 g−1 GAE) and monomeric anthocyanins (1080.54 ± 2.33 mg 100 g− 1 cy-3-glu). The phenolic compound included ferulic, gallic, hydroxybenzoic and p-coumaric acids, as well as catechin, epicatechin and quercetin. The results show promising perspectives for the exploitation of this tropical fruit with a chemical composition comprising considerable phenolic acids and flavonoids compounds and showing activity antioxidant.  相似文献

Antioxidant capacity of oil soluble and water dispersible carnosic acid (CA) extracted from dried rosemary leaves using HPLC was evaluated at two different dosages (22.5 ppm vs 130 ppm) in raw and cooked ground buffalo meat patties and chicken patties. Irrespective of total phenolic content, CA extracts reduced (p < 0.05) the thiobarbituric acid reactive substances (TBARS) by 39%–47% and 37%–40% in cooked buffalo meat and chicken patties at lower dosage (22.5 ppm) relative to control samples. However, at higher dosage (130 ppm) the TBARS values were reduced (p < 0.05) by 86%–96% and 78%–87% in cooked buffalo meat and chicken patties compared to controls. The CA extracts were also effective in inhibiting (p < 0.05) peroxide value and free fatty acids in cooked buffalo meat and chicken patties. The CA extracts when used at higher dosage, were also effective in stabilizing raw buffalo meat color.  相似文献

The objective of the present work was to evaluate the effect of hot air convective drying on the organic acid profile of chestnut. An extractive method, with internal standard, followed by HPLC-UV was validated, allowing the quantification of malic, ascorbic, citric, and fumaric acids with good precision and accuracy. Fresh chestnuts presented differences between varieties. The thermal process caused equivalent losses of ascorbic acid on both varieties, but higher losses of malic acid in Longal. Furthermore, fumaric acid contents increased on both varieties. Therefore, hot air convective drying affected the organic acid composition of chestnut slices, and this effect was varietal dependent.  相似文献

This study addressed determinations of the fatty acid profile of muscle, liver and mesenteric fat in European perch originating from natural aquifers and from intensive rearing in a closed circuit on an artificial feed mixture. The qualitative composition of fatty acids was identical in both groups of perch, except for 16:4 acid identified exclusively in the reared perch. The study demonstrated equal concentrations of saturated (SFA) and unsaturated (UFA) fatty acids in muscles, liver and mesenteric fat of both groups of perch. The wild fish, however, were characterised by lower concentrations of monoenoic (MUFA) and higher concentrations of polyenoic (PUFA) fatty acids. Analyses also demonstrated similar contents of n − 3 PUFA in muscles and their diversified concentrations in liver and mesenteric fat (higher in the wild fish), as well as a higher content of n − 6 PUFA in all samples. The lower content of MUFA in the wild perch was mainly due to lower concentrations of cis18:1 n − 9 and 20:1 n − 9, whereas the higher content of n − 3 PUFA was due to a higher concentration of DHA, and the higher content of n − 6 PUFA was due to a higher concentration of arachidonic acid (AA). The biggest differences between wild and reared perch were detected for AA. The wild and reared perch were also found to differ in the n − 3/n − 6 ratio (higher in the reared fish) and to have similar values for atherogenic index (AI) (except for liver and mesenteric fat) and thrombogenicity index (TI).  相似文献
