目前市售猪肉干保质期一般为180d,为了改善猪肉干产品保质期短的现状,文章分别在猪肉中添加异抗坏血酸钠、山梨酸钾、乳酸链球菌素、双乙酸钠四种防腐剂进行单因素实验。微生物检测结果表明:当异抗坏血酸钠添加量为0.3g/kg、山梨酸钾添加量为0.024g/kg、乳酸链球菌素添加量为0.24g/kg、双乙酸钠添加量为1.2g/kg时,猪肉干菌落总数最少。并按上述的最优添加量进行防腐剂的复配,制作出色泽良好、无异味、无酸败、口感较好,且保质期在360d以上的猪肉干产品。 相似文献

研究并提高南美白对虾即食加工制品品质和贮藏性。采用正交实验和感官评价等方法研究制品中4个主要的栅栏因子(水分活度、pH、热杀菌和添加剂)和各因子间的相互作用,并优化各因子的强度,得出4个主要的栅栏因子的较佳强度为Aw0.94、杀菌温度85~90℃和时间40min、Nisin100mg/kg、乳酸钠2.4%、pH5.8~5.9。因此运用栅栏技术能试制出较好保存南美白虾鲜美风味的制品并提高其贮藏性,为栅栏技术在食品工业更广泛应用提供帮助。 相似文献

以漳州东山港产中国明对虾(15.0±1.0)g为原材料,在-4℃下采用1.5%壳聚糖保鲜及阻氧剂、0.1%植酸钠为护色剂及流化冰低温处理为栅栏因子,协同作用贮藏对虾,并设定对照组(-4℃贮藏)。通过考察贮藏期挥发性盐基氮含量(TVB-N值)、菌落总数、明度值、pH值、PPO、持水率、弹性等理化及生物指标,以及感官品质,探究栅栏因子应用于对虾的保鲜效果。结果表明:与对照组相比,处理组A(流化冰处理+-4℃贮藏)及处理组B(壳聚糖+植酸钠+流化冰处理+-4℃贮藏)可以有效延缓挥发性盐基氮、菌落总数、pH值及PPO上升,同时可显著提高对虾明度值、持水率、弹性及感官评分(P0.05);贮藏中后期(4,6,8d),处理组B保鲜效果显著优于处理组A。栅栏因子协同作用可以明显改善对虾贮藏品质,延长货架期约4d。 相似文献

兔肉营养丰富,是人们喜爱的美食,具有广阔的市场前景,但现在兔肉的加工多以手工作坊式为主,不能满足现今大众快速消费的需求。通过改变常规兔肉的加工方法,采用开封风干五香兔肉的制作方法,经过多次实验,在不改变传统烹调方法烹制出食品的风味特性基础上,采用现代食品加工工艺经包装杀菌处理后,使之可以远距离运输,进入超市,延长货架期,从而得到更大的社会经济效益。 相似文献

Three types of shelf stable buffalo meat chunks (SBM) were prepared using three types of infusion solution formulations. These contained varying percentages of glycerol, sodium chloride, propylene glycol and honey, in addition to sodium nitrite @ 100 ppm and sorbic acid @ 0.2%. Meat chunks were pasteurised at 80 °C for 20 min and then desorbed under refrigeration, drained and dried at 80 °C. The SBM processed with ISF‐3 (glycerol 6.0, propylene glycol 1.00 and sodium chloride 6.00%) had significantly lower salt and moisture content and significantly higher protein and haem pigments than the other two products. The SBM processed with ISF‐1 (glycerol 9.5, propylene glycol 1.5, sodium chloride 7.5 and honey 2.0%) had significantly lower water activity but significantly higher yield and protein solubility than other two products. The SBM processed with ISF‐2 (glycerol 2.5, propylene glycol 2.5, sodium chloride 8.5 and honey 1.0%) had significantly higher salt content and Thiobarbituric acid values than the other two products. 为实现快速鉴别肉松和肉粉松,文中提出了一种基于计算机视觉和BP人工神经网络的快速无损检测方法。先对60组肉松和60组肉粉松图像进行灰度化并剪切成长宽为899×772像素,然后在剪切后的灰度图像中提取灰度均值、总熵值、灰度等级矩阵的标准差、基于灰度共生矩阵的对比度、相关度、纹理二阶矩和均匀度,在剪切后的二值图像中提取分形维数,共计8个纹理指标,再将45组肉松和44组肉粉松作为训练集输入BP人工神经网络进行训练,剩余样本作为测试集进行测试。研究结果表明:构建的BP神经网络总分类准确率为80.65%,其中有2组肉松被误判为肉粉松,有4组肉粉松被归为肉松。该研究成果可为销售点快速无损鉴别肉松与肉粉松提供了一种技术方法。 相似文献

A number of ready-to-use shelf-stable intermediate-moisture (IM) spiced mutton and spiced chicken products were developed with a combination of hurdles (reduced moisture, vacuum packing, and irradiation). The water activity of the products was reduced to about 0.80 either by grilling or by hot-air drying. These IM products were vacuum packed and subjected to gamma radiation processing at 0 to 10 kGy. Microbiological analyses revealed a radiation dose-dependent reduction in total viable counts and in numbers of Staphylococcus species. IM meat products that did not undergo radiation treatment showed visible mold growth within 2 months. The products subjected to irradiation at 10 kGy showed an absence of viable microorganisms and also retained high sensory acceptability for up to 9 months at ambient temperatures. 相似文献

Today's consumers demand clean-label healthy products to which no artificial preservatives have been added. Distribution of fresh, safe raw meat or meat products requires reduced numbers of bacteria on its surface when it leaves the processing plant under strict maintenance of low temperatures throughout the supply chain. Means of controlling or even improving the food integrity aim to decontaminate the carcasses or products during or at the end of the production line. In the past decades, high-pressure processing (HPP) has been investigated as an alternative non-thermal preservation technology to match all these demands without compromising safety. HPP treatments could efficiently inactivate the vegetative microorganisms (related to foodborne diseases), but not spores. However, the combination of several non-thermal and conventional preservation techniques under the so-called hurdle technology has been explored to enhance their efficiency. 相似文献
