Raspberries were dehydrated using air and freeze‐drying with wet and dry sugar infusion pretreatments. Product quality factors such as colour, bioactive compounds, antioxidant capacity and sensorial characteristics were analysed. Special emphasis was placed on the analysis of anthocyanin degradation and its relationship with colour deterioration and with polymeric compounds development and browning. Freeze‐dried raspberries presented a higher retention of bioactive compounds and a lower content of polymeric compounds than air‐dried ones. Dried samples without pretreatment (control) showed the highest retention of total phenolic content (freeze‐dried ≈82% and air‐dried ≈37% retention), but the lowest sensory acceptability. Although sugar infusion pretreatments caused an important loss of bioactive compounds (9–18% of TPC retention), a higher sensorial acceptability was obtained. Pretreatments with bisulphite and acid allowed obtaining the best quality attributes in terms of anthocyanin and polyphenol content, antiradical activity and colour retention. Polyphenol intake through pretreated dried raspberries (115–299 mg gallic ac./100 g intake) would be higher in some cases than that of usually consumed foods as vegetables, cereals and several fresh fruits.  相似文献

This study investigated the effects of processing and storage on the physicochemical properties and retention of antioxidant compounds of no‐added sucrose chewy candies (NASC) incorporated with differently processed açai (frozen pulp, spray‐dried and freeze‐dried powders). NASC containing freeze‐dried açai had the highest softness and recoveries of total phenolic (TP) and total anthocyanin (TA) immediately after production. Colour parameters and antioxidant capacity by ABTS and ORAC assays had no significant differences after 6 months of NASC storage, except for ORAC in NASC containing spray‐dried açai, whereas DPPH? in all samples significantly increased. Water activity and hardness also increased after storage, whereas TP and TA contents decreased, despite presenting good retentions (approx. 72–78% TP and 84–99% TA). This study suggests that açai has a great potential to be used as a natural pigment and antioxidant source in candy manufacturing, meeting consumption trends towards healthier products.  相似文献

This study aims to investigate the antioxidant properties and physical stability of convection‐ or vacuum‐dried orange, yellow and purple sweet potato (Ipomoea batatas) powder upon room temperature storage at different relative humidity (RH) of 33%, 43%, 54% and 75% for 25 days. Both convection and vacuum‐dried samples had lower total phenolic content (TPC), anthocyanin content and antioxidant activity compared to the fresh samples. Vacuum‐dried powder retained higher antioxidant activity than convection‐dried powder. Storage of the powder at high RH of 75% resulted in apparent clump formation, which was likely attributed to the decrease of glass transition temperature (Tg). In general, purple sweet potato powder contained the highest TPC (255.0 mg GAE 100 g DW?1) and antioxidant activity (1924.0 μmol TEAC 100 g DW?1), while orange powder had the highest beta‐carotene content (127.2 mg 100 g DW?1). Vacuum‐dried sweet potato powder, which has relatively higher antioxidant activity, could be a potential functional ingredient or natural colourant for the food industry.  相似文献

Isoflavone glucosides and aglucons in various soybean varieties (Chiang Mai‐60, S.J.‐5, Chiang Mai‐2, Srisumrong‐1, and Nakhonsawan‐1) harvested from dry vs. rainy seasons were quantified. Isoflavone contents of all soy germs ranged from 16.5 to 30.6 μmol g?1. Regardless of varieties, isoflavone contents in germ of seeds from dry season were higher (P < 0.05) than those from rainy season. The Chiang Mai‐60 germ, having the highest isoflavone content (30.6 μmol g?1), was selected for germ flour production. Freeze‐dried germ flour contained higher isoflavone aglucons (17.72 μmol g?1 daidzein; 6.48 mg g?1 glycitein; 4.28 μmol g?1 genistein) than those (15.07; 5.59; 3.41) of drum‐dried germ flour. However, isoflavone glucoside contents in freeze‐dried germ flour (3.27 μmol g?1 daidzin; 1.86 μmol g?1 glycitin; 1.41 μmol g?1 genistin) were lower than those (5.22; 3.15; 1.89) of drum‐dried germ flour. Total isoflavone contents of drum‐dried and freeze‐dried germ flours were comparable (34.32 vs. 35.02 μmol g?1) but more than that (30.16 μmol g?1) of unprocessed germ flour.  相似文献

Development of novel food ingredients with health benefits as well as desired sensory attributes is of great importance for food industry. For that purpose, complexes (BRP/R) between brown rice proteins (amounts varied; 2%, 6% and 10%) and raspberry juice were prepared. Obtained complexes were evaluated for the amount of volatile compounds, phenolic content, anthocyanin content and antioxidant activity. Those parameters depended on proteins amount. The highest adsorption of total phenolics and anthocyanins (18.18 mg g−1 and 4.59 mg g−1, respectively) was observed on complexes obtained with the lowest amount of proteins (2%). Regarding volatiles, dominant flavour note in raspberry juice was berry (40% of overall flavour), followed by citrus and woody notes (each around 18%), while dominant flavour note on complexes was citrus note (60%) followed by green note (15%). These results suggest an efficient plant-based approach to produce value-added protein-based complexes with possible utility as food colourant and flavouring.  相似文献

The aim of this study was to investigate the effect of freeze‐drying, hot air‐drying and vacuum‐drying at 70, 90 and 110 °C, on dried lemon pomace polyphenols and antioxidant capacity. The total phenolic content and antioxidant capacity were higher in lemon pomace dried by hot air or under vacuum than those dried by freeze‐drying and increased as the temperature increased. The highest total flavonoid content was recorded in the pomace dried under vacuum at 70 and 90 °C. Lemon pomace dried by freeze‐drying had the highest neohesperidin content, whereas pomace dried under vacuum at 70 °C had the highest rutin and p‐coumaric acid content. The highest gallic acid content was recorded in the pomace dried by hot air at 110 °C. The results of this study indicate that drying technique should be carefully selected according to the bioactive compounds aimed to be extracted.  相似文献

The aim of this study was to compare the chemical composition of freeze‐dried vegetable powders: celery, celery juice, parsnip and leek. The effect of different freeze‐dried vegetables onto the ripening process and the properties of dry fermented sausages was also evaluated. Vegetable products significantly (p < 0.05) differed in their chemical composition: celery products contained higher amounts of nitrates, total phenolic compounds and lower amounts of sucrose, parsnip had higher concentration of proteins, leek was rich in fat. The analysis of pH, water activity, lactic acid bacteria, coagulase‐positive staphylococci and coliforms content showed that the incorporation of freeze‐dried vegetables had no negative effect on the fermentation and ripening process of dry fermented sausages. In addition, the color parameters for sausages with the added lyophilised celery products were considerable (p < 0.05) more stable during these processes. At the end of the ripening process the sausages made with lyophilised celery juice were characterised by higher lightness and lower hardness than those made with the addition of other vegetable products and control. Freeze‐dried celery, celery juice, parsnip and leek have some potential for the usage as a functional ingredient or as a source for indirect addition of nitrate in the production of fermented sausages.  相似文献

Tropical fruits are rich in antioxidant and anticancer phytochemicals, but their nutraceutical potential could be enhanced by drying technologies. Mango cv. Ataulfo, papaya cv. Maradol and pineapple cv. Esmeralda ripe pulps were freeze‐dried (?42 °C, 0.12 torr, 48 h) and their physicochemical and phytochemical profile, radical scavenging and antiproliferative capacity evaluated. The content of soluble solids, phenolic compounds and ascorbic acid was higher in mango (16.1oBrix, 9.9 mg GAE per g and 9.6 mg g?1) than in papaya/pineapple, but the later had more flavonoids (0.45 ± 0.05 mg QE per g). A fruit‐specific phenolic profile was detected by HPLC‐ESI‐QTOF‐MS, being shikimic (mango), chlorogenic (papaya), and protocatechuic (pineapple) acids the most abundant. Mango was the strongest radical scavenger and showed antiproliferative capacity (IC50, μg mL?1) in RAW 264.7 (100.7), HeLa (193.1) and L929 (138.5) cell lines. Papaya and pineapple extracts showed no antiproliferative activity. Freeze‐dried mango is a ready‐to‐eat functional food with better cancer preventing properties than papaya or pineapple.  相似文献

Mung bean (MB) and adzuki bean (AZB) sprouts were hydrolysed with Flavourzyme® at four different concentrations for 6 h. Nongerminated beans subjected to each enzyme concentrations were set as the control. For both bean sprouts, the highest amounts of free amino group, total free amino acids and total phenolic content (TPC) were obtained with 7% (w/w) Flavourzyme®. Each bean sprout hydrolysate was subjected to freeze‐drying in absence and presence of 5% maltodextrin (w/v). The addition of maltodextrin resulted in a decrease in the free amino group, TPC, surface hydrophobicity and hygroscopicity in resulting freeze‐dried powders. Gallic acid, p‐coumaric acid and vitexin were identified in all freeze‐dried powders, while catechin and rutin were detected only in freeze‐dried AZB hydrolysate powder. Freeze‐dried AZB hydrolysate powder contained higher antioxidant activities. DPPH radical scavenging activity of all samples measured using electron spin resonance spectrometry was higher than that obtained by the colorimetric method.  相似文献

Common buckwheat flour (BF) was used to substitute 10%, 20%, 30% and 40% of corn starch, the main component of a gluten‐free bread formula, to make buckwheat‐enhanced gluten‐free breads. The 40% BF‐enhanced gluten‐free bread showed the highest antioxidant capacity against ABTS+˙ and DPPH˙ radicals (4.1 and 2.5 μmol Trolox g?1 DM, respectively) and reducing capacity measured by cyclic voltammetry (1.5 μmol Trolox g?1 DM). The antioxidant and reducing capacity of buckwheat‐enhanced gluten‐free breads were positively correlated with their total phenolic contents (r = 0.97). The 40% BF‐enhanced gluten‐free bread showed the highest overall sensory quality (7.1 units) when compared to control gluten‐free bread (1.8 units). The linear relationship between applied increasing BF doses in gluten‐free bread formula and magnesium, phosphorus and potassium content in breads was noted. It was concluded that 40% BF‐enhanced gluten‐free bread could be developed and dedicated to those people suffering from coeliac disease.  相似文献

The aim of this study was to evaluate the effects of freeze concentration of strawberry juice on content of total phenolic, anthocyanins content and antioxidant activity of the concentrated fluid and the ice obtained. An increase in the values of phenolic content was observed in the concentrate fraction for all the freeze concentration stages (five stages). The process efficiency presented a reduction when compared with the first stage, and however, the average efficiency remained around 65% in all the stages. The concentration of pelargonidin‐3‐O‐glycoside present in samples was increased in all stages. Furthermore, the antioxidant activity of the concentrated fluid of each stage, measured by DPPH and ABTS methods, was significantly higher in comparison with the juice feed. Also, antioxidant activity can be correlated with the content of pelargonidin‐3‐O‐glycoside presented in the strawberry juice. Freeze concentration can be considered a good alternative for improving the antioxidant activity of strawberry juice.  相似文献

Four species of edible tubers endemic to and domesticated in the Andes, native potato (Solanum sp.), mashua (Tropaeolum tuberosum Ruiz & Pavón), oca (Oxalis tuberosa Molina) and ulluco (Ullucus tuberosus Caldas), were studied for their antioxidant capacity and associated secondary metabolites. The antioxidant capacity was measured using ABTS? radicals and total phenolics, carotenoids, anthocyanin, betaxanthin and betacyanin content were also characterized. The antioxidant capacity found in the crops studied ranged from 483 to 9800 µg trolox equiv. g?1, phenolics ranged from 0.41 to 3.37 mg chlorogenic acid equiv. g?1, anthocyanins ranged from 0.08 to 2.05 mg cyanidin 3‐glucoside g?1 and carotenoids ranged from 1 to 25 µg β‐carotene g?1. The content of bioactive compounds was high and variable between crops and within the genotypes studied. In general, mashua tubers showed the highest antioxidant capacity and phenolic, anthocyanin and carotenoid content compared with other crops. Ulluco was the only crop that contained betalains in the acid form of betaxanthins (22–96 µg g?1) and betacyanins (64 µg g?1) with no presence of carotenoids or anthocyanins. This is the first publication regarding the antioxidant capacity of and associated secondary metabolites in Andean tubers. This information can be useful in the identification of Andean tubers species and genotypes with potential value as a novel dietary source of antioxidants for food, and also for medicinal use. Grape juices made using small‐scale production techniques are widely consumed. The extraction procedures employed to produce them, however, can affect bioactive compounds and antioxidant activity in the final product. In this study, juices prepared using four extraction methods (steam, extractor, juicer and blender) were evaluated for soluble and hydrolysable polyphenol content, total anthocyanin content, antioxidant capacity, physicochemical characteristics and colour. Acceptance of steam‐extracted juices and their stability during storage were also evaluated. Steam extraction resulted in a higher soluble phenolic (1073 ± 58 mg gallic acid L?1) and anthocyanin content (138 ± 22 mg cyanidin L?1), as well as a higher antioxidant capacity when compared to juices prepared using other methods. Although steam‐extracted juice remained microbiologically stable during 24 months of storage, changes in phytochemical compounds and antioxidant capacity did occur. Our results indicate that steam‐extracted grape juices have high commercial potential.  相似文献

Abstract: Processing of fruits and vegetables affects their phytochemical and nutrient content. Tart cherries are commercially promoted to possess antioxidant and anti‐inflammatory activity. However, processing affects their phytochemical content and may affect their related health benefits. The current study compares the in vitro antioxidant capacity and anti‐inflammatory cyclooxygenase activity of processed tart cherry (Prunus cerasus) products—cherry juice concentrate, individually quick‐frozen cherries, canned cherries, and dried cherries. Cherry products were analyzed for total anthocyanin and proanthocyanidin content and profile. On a per serving basis, total anthocyanins were highest in frozen cherries and total proanthocyanidins were highest in juice concentrate. Total phenolics were highest in juice concentrate. Juice concentrate had the highest oxygen radical absorbance capacity (ORAC) and peroxynitrite radical averting capacity (NORAC). Dried cherries had the highest hydroxyl radical averting capacity (HORAC) and superoxide radical averting capacity (SORAC). Processed tart cherry products compared very favorably to the U.S. Dept. of Agriculture‐reported ORAC of other fresh and processed fruits. Inhibition of in vitro inflammatory COX‐1 activity was greatest in juice concentrate. In summary, all processed tart cherry products possessed antioxidant and anti‐inflammatory activity, but processing differentially affected phytochemical content and in vitro bioactivity. On a per serving basis, juice concentrate was superior to other tart cherry products. Practical Application: Processing of fruits and vegetables affects their chemical and nutrient content and perhaps their related health benefits. Comparative studies are valuable to ascertain the effects of processing on fruit and vegetable chemical content and bioactivity. Here we present tart cherries as a model for this type of detailed comparison.  相似文献

Apple fruit skin, a rich source of dietary fibre and phenolics, is a by-product of apple processing. The effect of baking on the dietary fibre, phenolics, and total antioxidant capacity was investigated using a model system of muffins incorporated with dried apple skin powder (ASP) as a value-added food ingredient. The blanched, dehydrated, and ground ASP contained approximately 41% total dietary fibre and oxygen radical absorption capacity (ORAC) of 52 mg Trolox equivalents g−1 dry weight. The total dietary fibre content, total phenolic content, and total antioxidant capacity of muffins were positively correlated to the amount of ASP incorporated into muffins. The mean percent recovery of quercetin glycosides, catechins, chlorogenic acid, phloridzin, and cyanidin galactoside after baking were 61%, 57%, 53%, 44%, and 20%.  相似文献

Effect of pretreatments with 1 w/v% sodium hydrogen sulphite (NaHSO3) and 1 w/v% calcium chloride (CaCl2) and drying temperatures (55, 60 and 65 °C) on sweet potato flour were investigated. Flour treated with CaCl2 had higher amounts of ascorbic acid and β‐carotene (10.61–12.54 and 3.26–3.46 mg 100 g?1 wet basis, respectively) than that treated with NaHSO3 (9.47–11.47 and 3.05–3.43 mg 100 g?1 wet basis, respectively). Total phenolic content and water absorption index (wet basis) were highest at 65 °C when treated with NaHSO3 (10.44 mg 100 g?1 and 2.49 g g?1 respectively) and CaCl2 (9.52 mg 100 g?1 and 2.85 g g?1 respectively). Swelling capacity (wet basis) was highest at 60 °C when treated with CaCl2 (2.96 g g?1) whereas when treated with NaHSO3 (2.85 g g?1) it was highest at 55 °C. Freeze‐dried samples treated with NaHSO3 had higher lightness and total phenolic content while CaCl2‐treated samples had higher β‐carotene and ascorbic acid. The results showed that good quality flour could be produced after soaking in CaCl2 and dried at 65 °C.  相似文献

Black rice bran was fermented with Bacillus subtilis KU3 isolated from Korean traditional food, Kimchi. Antioxidant and cytotoxic activities of the fermented black rice bran were investigated. Total phenolic and anthocyanin contents decreased from 171.54 mg GAE g?1 and 2.31 mg g?1 to 139.13 mg GAE g?1 and 2.12 mg g?1, respectively, after fermentation. Antioxidant activities determined by 1,1‐diphenyl‐2‐picrylhydrazyl (DPPH) radical scavenging, β‐carotene bleaching and ferric thiocyanate assay were correlated with total phenolic and anthocyanin contents. Non‐fermented black rice bran extract (NFBE) showed greater antioxidant activities than fermented black rice bran extract (FBE). Cytotoxic activities measured by MTT assay showed that both NFBE and FBE had over 50% activities. The cytotoxic activities of FBE against MCF‐7 and HeLa cells were 71.65% and 68.07%, respectively, at 8.0 mg mL?1, but those of NFBE were lower than 50%. These results suggested that the cytotoxic activity of black rice bran improved through fermentation, while antioxidant activity reduced.  相似文献

Abstract: Anthocyanins, natural plant pigments in the flavonoid group, are responsible for the red color and some of the nutraceutical benefits of raspberries. This study explores anthocyanin degradation in frozen and freeze‐dried raspberries during storage in relation to glass transition temperatures. Frozen raspberries were stored at ?80, ?35, and ?20 °C, while freeze‐dried raspberries were stored at selected water activity (aw) values ranging from 0.05 to 0.75 at room temperature (23 °C) for more than a year. The characteristic glass transition temperatures (Tg) of raspberries with high water content and glass transition temperature (Tg) of raspberries with small water content were determined using a differential scanning calorimeter. The pH differential method was used to determine the quantity of anthocyanins in frozen and freeze‐dried raspberries at selected time intervals. The total anthocyanins in raspberries fluctuated during 378 d of storage at ?20 and ?35, and ?80 °C. Anthocyanin degradation in freeze‐dried raspberries ranged from 27% to 32% and 78% to 89% at aw values of 0.05 to 0.07 and 0.11 to 0.43, respectively, after 1 y. Anthocyanins were not detectable in freeze‐dried raspberries stored at aw values of 0.53 to 0.75 after 270 d. First order and Weibull equations were used to fit the anthocyanin degradation in freeze‐dried raspberries. The 1st‐order rate constant (k) of anthocyanin degradation ranged from 0.003 to 0.023 days?1 at the selected water activities. Significant anthocyanin degradation occurred in both the glassy and rubbery states of freeze‐dried raspberries during long‐term storage. However, the rate of anthocyanin degradation in freeze‐dried raspberries stored in the glassy state was significantly smaller than the rate of anthocyanin degradation in the rubbery state.  相似文献

Aronia melanocarpa is a rich source of phenolic compounds like anthocyanins, chlorogenic acids, quercetin derivatives, and proanthocyanidins possessing strong antioxidative potential. The consumption of A. melanocarpa is actually increasing because of the known bioactivity of its phenolic constituents. A. melanocarpa extracts are used as natural colorants and nutraceuticals. Several attempts of adulteration of aronia products have already been reported. In this study, we investigated changes in phenolic composition from berry to juice by HPLC‐PDA, and HPLC‐ESI‐MSn analyses as well as fingerprint profiles for authentication of commercially available aronia products in order to detect possible adulteration. Additionally, the radical scavenging activity of aronia products was determined by using the TEAC (Trolox® equivalent antioxidant capacity) assay. Aronia pomace, a valuable by‐product of juice production, showed the highest phenolic content and possessed the highest radical scavenging activity.  相似文献

The total phenolics, anthocyanins, flavan 3‐ols, carotenoids and antioxidant capacity of mashua (Tropaeolum tuberosum Ruiz & Pavón) tubers from 10 yellow and purple cultivars were determined at different maturity stages (5–7.5 months after planting) and sunning post‐harvest storage periods (7–35 days). Both the antioxidant capacity (ORAC and ABTS assays) and the content of the bioactive compounds tested varied markedly between cultivars. Purple varieties reached the highest antioxidant capacity during tuber development (271–446 µmol Trolox equiv g?1 DM, ORAC assay). The kinetics of accumulation or disappearance of the bioactive compounds tested during maturation was dependent both on the cultivar and on the compound considered. For anthocyanins, there was a marked increase during maturation in all the purple cultivars. During the sunning post‐harvest storage, the changes in antioxidant capacity (ABTS assay) and content of the bioactive compounds tested also varied between cultivars. A marked decrease in anthocyanins was observed for the anthocyanin‐containing cultivars. In general, the correlation between antioxidant capacity and the content of bioactive compounds varied markedly between cultivars. Antioxidant capacity in purple varieties correlated with total phenolics or flavan 3‐ols while only in some yellow varieties antioxidant capacity correlated with total phenolics.
