The effect of various cations, anions, acids and oxidising agents on the gelatinisation properties of cassava starch was studied and wide variation was observed in the pasting and swelling properties. Sodium chloride and sodium thiosulphate slightly lowered the peak viscosity of cassava starch with increase in concentration, whereas with sodium sulphite, calcium chloride and sodium hypochlorite, a more significant decrease in the viscosity and breakdown was observed. Ferrous sulphate, alum, aluminium chloride and acids enhanced the peak viscosity at lower concentrations followed by a decrease at 1% and above. Sodium metabisulphite elevated the viscosity at 0.05 and 0.1%, while sodium hypochlorite lowered the viscosity and breakdown. DSC studies showed that aluminium chloride, sodium sulphite, and sodium thiosulphate brought about an increase in Tonset, Tend and ΔH values at higher concentrations. A decrease in swelling volume was observed from 0.05 to 1% concentration of sodium chloride and above that there was a gradual increase. With sodium sulphite, a significant increase in swelling volume was observed at 2.5 and 5% levels. With 0.05 and 0.1% aluminium chloride and sodium metabisulphite an increase in swelling volume was noticed, but at higher concentrations there was a drastic fall. Sodium chloride, sodium sulphite, sodium thiosulphate and calcium chloride brought about decrease in starch paste clarity with increase in salt concentration, whereas ferrous sulphate, aluminium chloride, sodium hypochlorite, hydrochloric acid and acetic acid improved the starch paste clarity.  相似文献

The relationship between the gelatinisation parameters of native and annealed starches extracted from ten different potato varieties grown at the same site at the same time was studied. The objective was to identify how native gelatinisation temperatures and enthalpies impacted on annealed starch gelatinisation parameters. Prior to ANN, the initial onset (To), peak (Tp) and conclusion (Tc) gelatinisation temperatures ranged from 58.71 to 62.45, 62.52 to 66.05 and 68.67 to 72.27°C, respectively, which increased to 66.15 to 69.12, 70.22 to 72.30 and 76.21 to 77.44°C, respectively, post ANN. Overall, the greater the initial gelatinisation temperatures the smaller the increment (ΔGT) post ANN. Comparable enthalpy values pre‐ and post‐ANN were 15.13 to 18.37 and 15.76 to 18.37 J/g, respectively. These data indicate that the more ‘perfect’ the crystallites were before ANN the less they could be enhanced by the ANN process and that against a constant background of α‐glucan structure, the pattern (rate) of starch deposition might be the primary differentiator of starch architecture across the varieties.  相似文献

Grains of the Polish winter wheat variety Begra were subjected to γ‐radiation (grain harvested in 1996) within the dose range of 0.05–10 kGy and microwave heating (grain harvested in 1997) from 28°C to 98°C. Later the grains were divided into two parts, the first was used for direct analyses after treatment. The second part was sown on the experimental fields. The obtained crop was described as the first generation and divided into two parts. One part was destined to determination of starch properties and the second part was sown in order to obtain the second generation crop. The same pattern was conducted in order to achieve the third generation crop. γ‐Irradiation directly applied on the wheat grain reduced statistically significant falling number values and gelatinisation enthalpy (ΔH) of the grain treated by 5 and 10 kGy. Calculated linear regression correlation coefficient between the falling number values and the gelatinisation enthalpy was equal to 0.94 (p ? 0.001) and showed that these two starch characteristics are well correlated in the case of directly irradiated wheat grain. The falling number values, peak temperatures (Tp) and gelatinisation enthalpy (ΔH), in three generations of wheat grain crop studied, did not show any statistically significant differences as a result of indirect effect of γ‐irradiation. Microwave direct heating of wheat grain to 98°C caused a statistically significant increase in the falling number value and decrease in starch gelatinisation power expressed by the enthalpy of gelatinisation (ΔH). The statistically significant changes in the falling number values, slight changes in the peak temperatures (Tp) and enthalpy of gelatinisation (ΔH) were found in all three generation crops as an indirect effect of microwave heating.  相似文献

The study investigated the effects of the addition of different concentrations of potassium alum (PA, 0, 0.1, 0.3, 0.5, and 0.7 g 100 g?1; w/w, on a starch weight basis) on the pasting, thermal, gel texture and other physicochemical properties of potato starch. The addition of PA resulted in a significant increase in solubility and a decrease in swelling power and light transmittance of stored pastes. Differential scanning calorimeter analysis demonstrated an increase in gelatinisation temperatures and gelatinisation enthalpy and a decrease in phase transition temperature range (ΔTr) with increasing PA concentration. Results of rapid visco‐analysis indicated that addition of PA decreased the peak, trough, breakdown, final and setback viscosities, but increased in peak time. Textural tests showed that the addition of PA retarded gel strength development during refrigerated storage. The high ionic strength and water‐binding capacities of Al3+, K+ and SO42? point to being the key factors for these observed changes.  相似文献

Electrical conductivity measurements were applied to analyse the gelatinisation process of 12 starch or flour suspensions. The electrical conductivity of starch suspensions was found to increase upon gelatinisation because of the release of ions from starch granules. The initiation temperature of ion release, Ti, correlated well with the onset temperature in the DSC thermogram (R = 0.868), while the completion temperature of ion release, Tf, correlated with the temperature at the start of viscosity increase (R = 0.865). Thus Ti and Tf corresponded to the beginning and ending temperatures of gelatinisation respectively. The electrical conductivity measurement will be used as an on‐line technique to monitor the whole process of starch gelatinisation. © 2001 Society of Chemical Industry  相似文献

The starches derived from two different cultivars of cassava were modified with acetic anhydride. The increase in swelling power and solubility of the cassava starch (CS) pastes treated with different acetic anhydride concentration could be attributed to easier hydration, resulting from reduction of interaction between starch chains due to the substitution. The transition temperatures (To, Tp and Tc) and enthalpy of gelatinisation (ΔH) of acetylated CS, were determined. The values were lower than those of native starches. Rheological properties of CS pastes (5% w/w) as a function of the degree of substitution were evaluated in dynamic shear force measurements. Magnitude of storage modulus (G′), loss modulus (G′′) and complex viscosity (Eta*) of acetylated CS pastes were determined also. Dynamic moduli (G′, G′′ and Eta*) values of acetylated sweet cultivar pastes were generally higher than those of native starch whereas the acetylated samples of the bitter cultivar were lower than those of native starch. The magnitudes of G′ were greater than those of G′′ and Eta* at all frequencies (ω). The fact that all the tan δ (ratio G′′/G′) values (0.7–0.48 and 0.25–0.44) were less than one is an indication that the samples are more elastic than viscous. The acetylated starches could find promising industrial uses in food products like Lemon curd and Mayonnaise and other non‐food applications.  相似文献

This study investigated the effects of heat‐moisture treatment (HMT) on the resistant starch content and thermal, morphological, and textural properties of rice starches with high‐, medium‐ and low‐amylose content. The starches were adjusted to 15, 20 and 25% moisture levels and heated at 110°C for 1 h. The HMT increased the resistant starch content in all of the rice starches. HMT increased the onset temperature and the gelatinisation temperature range (Tfinish–Tonset) and decreased the enthalpy of gelatinisation of rice starches with different amylose contents. This reduction increased with the increase in the moisture content of HMT. The morphology of rice starch granules was altered with the HMT; the granules presented more agglomerated surface. The HMT affected the textural parameters of rice starches; the high‐ and low‐amylose rice starches subjected to 15 and 20% HMT possessed higher gel hardness.  相似文献

The molecular size of amylopectin (AP) and amylose (AM), AP chain length distribution, crystallinity and granular structure (morphology and granule size distribution) of five wild type potato starches (wtps), five AM free potato starches (amfps), four high-AM potato starches (haps), one wild type cassava starch (wtcs) and one AM free cassava starch (amfcs) were investigated and related to their gelatinisation characteristics. Starches with higher levels of short chains [degree of polymerisation (DP) 6–9 and DP 10–14)] had lower gelatinisation onset (To), peak (Tp) and conclusion (Tc) temperatures, whereas higher contents of longer chains (DP 18–25 and DP 25–80) led to higher gelatinisation temperatures. Gelatinisation enthalpies (ΔH) increased with degree of crystallinity. The granules of wtps were larger than those of amfps and haps, respectively. No differences in morphology were observed between wtps and amfps granules, but the haps granules had more irregular surfaces and showed multi-lobed granules.  相似文献

Mucuna bean (Mucuna pruriens) starch was isolated and subjected to chemical modification by oxidation and acetylation. The proximate analysis of the non‐starch components of the native starch on a dry weight basis was 92 g kg?1 moisture, 5 g kg?1 ash, 2 g kg?1 fat, 7 g kg?1 crude fibre and 19 g kg?1 protein. Chemical modification reduced the values for all the non‐starch components except the moisture level. For all the samples, swelling power and solubility increased as the temperature increased in the range 50–90 °C. The swelling power of mucuna native starch (MNS) and mucuna acetylated starch (MAS) increased with increasing acidity and alkalinity, while that of mucuna oxidised starch (MOS) only increased with increasing pH in the acidic range. The maximal solubility of all the starches was observed at pH 12. All the starch samples absorbed more oil than water. The lowest gelation concentration followed the trend MAS < MNS < MOS. Chemical modification reduced the gelatinisation temperature (Tp), while peak viscosity (Pv), hot paste viscosity (Hv) and cold paste viscosity (Cv) decreased after oxidation but increased following acetylation. The setback tendency of the native starch was reduced significantly after chemical modification. However, the breakdown value of MNS, 65 BU (Brabender units), was lower than that of MOS (78 BU) but higher than that of MAS (40 BU). Differential scanning calorimetry studies of gelatinisation and retrogradation revealed that chemical modification reduced the onset temperature (To), peak temperature (Tp) and conclusion temperature (Tc). Oxidation and acetylation reduced the gelatinisation and retrogradation enthalpies of the native starch. The enthalpy of retrogradation of the starches increased as the length of storage increased. Potato starch (35–40% slurry) was (i) acid modified with hydrochloric acid (0.5-N , 50°C, upto 4.5 h) and (ii) oxidized using sodium hypochlorite (7.5 to 70 mg Cl2/g starch, 38°C, 2.5 h). Rapid screening methodology has been developed for assessing the chemical composition and the gelatinisation and pasting properties of starch using flour from chickpea seeds. The methodology allows samples to be assessed using a minimal amount of sample and for starch information to be interpreted in the presence of other components present in the flour. The starch content of the flour and the amylose content of the starch was determined by modifying existing kit-based methods (Megazyme International Ltd). Using the Differential Scanning Calorimeter (DSC), starch gelatinisation characteristics can be assessed based on temperature of gelatinisation (Tp), specific heat capacity (Cpsp ) and half width of transition (½ΔT). Pasting properties could be assessed using the Rapid Visco Analyser (RVA), based on the determination of onset temperature for the RVA profile (T \displaystyle _o^{RVA} ), TpT \displaystyle _o^{RVA} and final viscosity (FV) values. The developed methodology was tested using a range of chickpea samples. No significant variation was found between the samples for starch content or for the proportion of amylose/amylopectin in the various starches. Significant variation was found in the starch properties of two of the samples, while the variation between the remaining samples was very small.  相似文献

Physicochemical properties (pasting and thermal properties, swelling power, water solubility and antioxidant activities) and chemical composition of pumpkin flour (PF) and starches, isolated from fresh pumpkin (SFF) or flour (SFP) were compared. SFP and SFF had similar proximate composition and amylose content. Drying process during PF preparation modified starch properties. PF exhibited greater antioxidant activities (DPPH, ABTS and FRAP), but had lower β‐carotene than fresh pumpkin. SFF and SFP had higher amylose content than PF, and exhibited a B‐type X‐ray diffraction pattern with spherical and dome‐like starch granules. Peak viscosity of SFP was relatively higher than that of SFF, probably due to lower swelling power and water solubility, which indicated increased granular rigidity in the SFP starch structure. Compared with SFF and SFP, PF had significantly higher onset (To), peak (Tp) and conclusion (Tc) temperatures due to a lower starch content and relatively higher fibre content, which resulted in lower gelatinisation enthalpy (ΔH).  相似文献

Comparative studies on acid hydrolysis of jicama and maize starch were carried out using concentrations of hydrochloric acid of 1.5%, 3.0%, and 4.5% (w/v), for 3 and 6 h, at 40°C. Native maize and jicama starches showed important morphological, thermal, and structural differences from those of tubers and cereals which potentially offer diverse industrial applications. Jicama starch showed low amylose content (12%) and small size of starch granules. Due to these characteristics, jicama starch was more susceptible to degradation during hydrolysis process than maize starch. Under the experimental conditions employed, the acid degradation was not particularly severe, as shown by scanning electronic microscopy analysis which showed small degraded zones and similar X-ray patterns in both starches. However, jicama starch was more susceptible to acid hydrolysis than maize starch, as revealed by the considerable increase in water solubility index, damaged starch, and crystallinity values. Also, the higher susceptibility of jicama starch than maize starch to the hydrolysis conditions was reflected in the sugar content release during hydrolysis. The relative crystallinity of hydrolyzed maize starches decreased during hydrolysis, while those of hydrolyzed jicama starches increased attributable to the lower amylose content of jicama starch in relation to maize starch. Maize and jicama hydrolyzed starches showed low viscosity values with relation to their native starch counterparts. However, native jicama starch showed lower viscosity values than maize starch, suggesting a lower internal stability of the starch granules during hydrolysis. Both native and hydrolyzed maize starches showed higher enthalpy, T o, T p, and T c values than jicama starch and the broadening of the endotherms decreased during the hydrolysis of both starches.  相似文献

Fourteen hull‐less barley cultivars, collected from four major cultivated areas in China, were employed to investigate the structural and physicochemical properties of their starches in this study. Relatively wide variations in physicochemical properties of the starches were observed. Amylose content ranged from 23.1% to 30.0%, swelling power and water solubility index ranged from 12.8 to 19.9 g g?1 and 12.7% to 23.7% respectively. Peak viscosity was from 170 to 346 Rapid Visco Unit (RVU), peak temperature (Tp) of starch gelatinisation was from 55.6 to 61.8 °C and enthalpy of starch retrogradation ranged from 0.3 to 3.1 J g?1. Weight‐based chain‐length proportions of fa, fb1, fb2 and fb3 in amylopectins ranged from 21.65% to 24.95%, 44.48% to 49.44%, 15.56% to 17.19% and 9.83% to 16.66% respectively. Correlation analyses showed that amylose content was inversely related to pasting parameters and enthalpy of gelatinisation. Pasting properties and amylopectin structures were the most important parameters to differentiate starch properties among different hull‐less barley cultivars in this study. This work will be useful for exploring applications of Chinese hull‐less barley starches in food and non‐food industries.  相似文献

BACKGROUND: The granules of amaranth starch are very small compared with starches from other sources. In the current work, amaranth starches with different amylose contents were treated with hydrochloric acid as a function of time in order to study the effect of acid treatments on starches. Differential scanning calorimetry and dynamic oscillation in shear were employed to analyse the thermal and rheological properties of acid‐modified amaranth starch. RESULTS: Results showed that gelatinisation temperatures and enthalpy change of gelatinisation (ΔH) decreased steeply initially, and had a slight increase with further treatment up to 12 h then decreased, an outcome that reflected distinct resistance to acid with various amylose contents. Rheological parameters of storage and loss moduli during heating, cooling and frequency sweep of modified starches reflected the differential scanning calorimetry results by decreasing in value as the time of acid hydrolysis increased. CONCLUSION: With amylose content increase, the effects of acid hydrolysis on gelatinisation temperatures became less pronounced. Nevertheless, prolonged acid hydrolysis decreased the storage and loss moduli, with the starch pastes becoming more liquid‐like. Copyright © 2012 Society of Chemical Industry  相似文献

Starches separated from different potato cultivars were modified using two different cross‐linking agents: epichlorohydrin (EPI) and phosphoryl chloride (POCl3) at different concentrations (1.0 and 2.0 g kg?1 POCl3; 2.5, 5.0 and 10 g kg?1 EPI). Differential scanning calorimetry, rheological and retrogradation measurements were performed to characterise the influence of cross‐linking on the properties of potato starches. Cross‐linking considerably reduced swelling power, solubility, water‐binding capacity and paste clarity. The decrease became greater as the reagent concentration increased. The starches treated with 1.0 g kg?1 POCl3 exhibited exceptionally higher swelling power than their counterpart native starches. Neither cross‐linking agent caused any change in morphology of the starch granules. Studies on the phase transitions associated with the gelatinisation showed significantly higher values for the onset temperature (To), peak temperature (Tp), conclusion temperature (Tc) and enthalpy of gelatinisation (ΔHgel) for the cross‐linked starches than the native starches. Starches treated with both the reagents showed lower peak storage modulus (G′) and loss modulus (G″) than their native counterparts. The tendency of the starch pastes towards retrogradation increased considerably with increases in storage duration. Commercial maize starches and potato starches of two cultivars differing in physicochemical composition (granule size distribution; amylose to amylopectin ratio) and crystallinity were heated to 180 °C and then cooled by fast quench using a differential scanning calorimeter (DSC), in order to produce spherulitic starch morphologies. Among the raw maize starches, waxy maize starch had highest relative crystallinity (49%) whereas a lowest crystallinity of 33–39% was calculated for high-amylose maize starches. Potato starches showed a relative crystallinity of 50%. The temperatures and enthalpies of gelatinisation and melting varied among all the starches. High-amylose maize starches showed higher transition temperatures of gelatinisation (Tgel), whereas waxy maize starch had lowest Tgel and enthalpy of gelatinisation (ΔHgel). Similarly, a considerable variation in parameters related with crystalline melting (Tm1, Tm2 and ΔHm1, ΔHm2) was observed for different starches. The superheated gels of different starches treated using DSC were subjected to polarised microscopy, to confirm the formation of spherulites. Both the high-amylose starch gels showed the presence of spherulites exhibiting birefringence and a weak crystalline pattern. No birefringence was observed for waxy maize starch gel, while potato starch gels had some birefringence. The particle size distribution of high-amylose maize starch gels analysed through Zetasizer showed the sizes of spherulitic particles fall in the range of 300 nm–900 nm. The scanning electron micrographs of the dried high-amylose maize starch gels showed the presence of round spherulites consisting of several aggregated spherulitic particles. Amylose content and melting of crystallites during heating play an important role during recrystallisation of amylose (spherulite morphologies).  相似文献

Chemical and physical properties of starch granules isolated from five grain tef (Eragrostis tef) varieties were characterised and compared with those of maize starch. Endogenous starch lipids extracted with hot water‐saturated n‐butanol and total starch lipids extracted with n‐hexane after HCl hydrolysis were 7.8 mg/g (mean) and 8.9 mg/g (mean), respectively, slightly lower than in the maize starch granules. The starch phosphorus content (0.65 mg/g) was higher than that of maize starch but virtually the same as reported for rice starch. The starch granule‐swelling factor was lower than that of maize starch and extent of amylose leaching was higher. The starch X‐ray diffraction pattern was characteristic of A type starch with a mean crystallinity of 37%, apparently lower than the crystallinity of maize starch and more similar to that reported for rice and sorghum starches. The starch DSC gelatinisation temperature was high, like for other tropical cereals; To, Tp, Tc and ΔH were in the range 63.8—65.4, 70.2—71.3, 81.3—81.5 °C and 2.28—7.22 J/g, respectively. The lower swelling, apparently lower percentage crystallinity and lower DSC gelatinisation endotherms than maize starch suggest that the proportion of long amylopectin A chains in tef starch is smaller than in maize starch.  相似文献

Differential scanning calorimetry was used to evaluate the effect of storage at 10°C, 20°C and 30°C, and 40% and 65% relative humidity (RH) on adzuki bean starch gelatinisation and protein denaturation temperatures. Storage for 6 months at an elevated storage temperature (30°C) caused increases in the starch gelatinisation onset temperature (To) and gelatinisation peak temperature (Tp) for both Bloodwood and Erimo varieties. Storage at 40% RH resulted in higher To and Tp values than storage at 65% RH. The To of starch from Bloodwood and Erimo beans stored for up to 1.5 months at 10°C and 65% were similar to those of fresh beans.The changes in the salt-soluble protein component were less clear cut than those of the starch. Nonetheless, protein extracted from beans stored at 40% RH exhibited significantly lower To and Tp values compared with those stored at 65% RH. This indicates some destabilisation of the protein at the higher RH.These results suggest that detrimental changes occur in starch and, to a lesser extent protein, of adzuki beans stored under unfavourable conditions. On the basis of these results, the best storage conditions to maintain the characteristics of fresh beans are low temperatures (e.g. 10°C) and high RH (e.g. 65%).  相似文献

The effect of starch gelatinization on glass transitions in a starch/water model system and how the concentrations of added solutes (sucrose and sodium chloride) affect the glass transition temperatures of the gelatinized starch solution was investigated. The starch suspension samples were heat treated in a Differential Scanning Calorimeter (DSC) under different time and temperature regimes to achieve different degrees of gelatinization. The gelatinization characteristics (onset, peak and end temperatures and enthalpy) and the glass transition values of a potato starch were determined using the DSC. The results showed that the starch concentrations had no effect on gelatinization characteristics and the Tg′ of the gelatinized potato starch but had clearly increased their ΔCp in the Tg′ region. Annealing at a temperature slightly below the Tg′ of −5 °C, led to maximal freeze‐concentration in the total/partial gelatinized starch and a higher Tg′ value at about −3 °C was obtained. The Tg′ values of the totally gelatinized starch samples were slightly lower than those of partially gelatinized samples. The Tg′ of the gelatinized starch decreased with increasing concentrations of sucrose or sodium chloride. Sodium chloride had a stronger depressing effect on Tg′ than sucrose. © 2000 Society of Chemical Industry  相似文献
