The equation developed by Blahovec and Yanniotis, which is based on surface adsorption and solution water, was applied for fitting experimental sorption data for starchy and high protein foods, fruits and vegetables, nuts, legumes, and seeds. Analysis of sorption isotherms shows that surface adsorption is more important than solution water in the isotherms for cereals, potatoes, legumes and seeds, while in vegetables, fruits, meat, milk products and some nuts solution water is more important. The ratio of solution water to surface adsorption increases as water activity increases, it is higher for the adsorption isotherm than the desorption isotherm at any water activity value and decreases as temperature increases.  相似文献

Oil-in-water (O/W) emulsions with a dispersed phase mass fraction (φm) of 0.175 were prepared by dispersing a blend of candelilla wax/mineral oil (2:1 ratio) in 10 g of mesquite gum per 100 g of water containing either CaCl2 (0.0, 0.1, 0.2, 0.3, 0.4 or 0.5 g) alone or combined with 1.5 g of glycerol. The mean volumetric droplet size (d3,0), the rate of droplet coalescence (C) and the viscosity-shear rate behavior of the emulsions were affected by the addition of CaCl2 alone or combined with glycerol. The Carreau-Yasuda model fitted best the viscosity-shear rate data of all the emulsions. The surface morphology of the edible films, analyzed by Atomic Force Microscopy (AFM), exhibited a strong dependence on the CaCl2 concentration. Maximum roughness occurred with a CaCl2 concentration of 0.3 g per 100 g. Films with glycerol showed significantly higher roughness than those with only CaCl2. Water vapor permeability (WVP) was significantly lowered as the concentration of CaCl2 increased from 0.1 to 0.3 g per 100 g in the coatings, but increased again at CaCl2 concentrations of 0.4-0.5 g per 100 g. Coatings containing glycerol displayed significant higher WVP.  相似文献

从透水汽性能方面研究了未涂饰皮革、聚氨酯涂饰皮革、贴膜皮革和合成革的物质传递性能。研究结果表明 :涂饰对皮革的透水汽性能影响很大 ,未涂饰皮革的透水汽性能远远优于涂饰皮革、贴膜皮革和合成革。还分析了皮革的透水汽机理。未经过涂饰的皮革的透水汽作用是水分子在蒸汽压力作用下 ,在皮革微孔内的迁移和胶原上亲水性基团运动对水分子的传递的加合。而涂饰后的皮革、贴膜皮革和合成革的透水汽作用则只是水分子在蒸汽压力作用下在皮革微孔内迁移的结果。要提高成品皮革的透水汽性能 ,应该从如何提高皮革的孔隙率和皮革及涂饰剂的亲水性基团数目方面进行研究  相似文献

Sugars are natural plasticizers for food biopolymers and zein is the most important protein of corn. In this research, sugars (fructose, galactose and glucose) were used as plasticizers and the water vapor permeability (WVP), contact angle and microstructure of the zein films were studied. The pure zein film had high WVP and adding of sugars to 0.7 g/g zein caused to decrease of WVP. Films containing galactose had the lowest WVP.All samples had the lowest contact angle with ethanol and the highest contact angle with water. The zein films containing galactose had the highest water contact angle within the plasticized films. The pure zein films and the films containing fructose had higher critical surface tension of wetting (γc) than the films containing glucose and galactose. Adding sugar plasticizer to zein films increased the surface tension of zein films. In the unplasticized zein films, loose structures with a lot of cavities and voids were observed. The films plasticized by fructose had smooth surface and plasticizer particles distributed throughout of the films.  相似文献

The effect of murta (Ugni molinae Turcz) leaves extract on water vapor permeability (WVP) and gas permeability (GP) of carboxymethylcellulose (CMC)-based films was studied. Two ecotypes of murta leaves “Soloyo Grande” (SG) and “Soloyo Chico” (SC), were analyzed for their composition (HPLC-MS) and SC extract revealed a higher concentration of flavonols than the SG extract. The film forming solution was prepared with 2 g of CMC, 0.4 ml of glycerol and 0.5 ml of sunflower oil in 100 ml of water (Control), 50 ml of water and 50 ml of each exctract (SC50 or SG50) and 100 ml of each extract (SC 100 or SG 100). The addition of murta leaves extract modified the WVP and GP of the films. The WVP decreased significantly (P?0.05) with the incorporation of SG extract in the film but not with the SC extract (P>0.05). The CO2 and O2 permeability of the films were influenced by the kind and concentration of murta leaves extract used. The CO2 permeability, with SG extract was higher than without extract (P?0.05) and with SC extract was not modified. The O2 permeability with murta leaves extract were lower than without extract. Therefore, it is possible to consider that films with SC acts only as barrier to the oxygen, but with SG the water vapor and gas barrier properties were modified, being more permeable to the CO2 and acting as barrier to O2 and water vapor.  相似文献

Edible films were prepared using various ratios of pullulan and rice wax. Freestanding composite films were obtained with up to 46.4% rice wax. Water vapour barrier properties of the pullulan film were improved with increased addition of rice wax. Moisture sorption isotherms were also studied to examine the impact of rice wax on the water sorption characteristics of the film. The Brunauer–Emmet–Teller (BET) and Guggenheim–Anderson–de Boer (GAB) sorption models were tested to fit the experimental data. The models gave a good fit up to the water activity (aw) of 0.55 for BET and a full range of aw from 0.12 to 0.95 for GAB (R2 ? 0.98). Changes in the sorption parameters, particularly such as the decrease in monolayer moisture content (Mo), reflect the trend of reduced hydration capacity with increased addition of rice wax, providing useful information on water activity conditions to achieve stability for the composite films.  相似文献

Desorption isotherms of fresh and osmotically treated (70%, 30 °C) apricots have been measured at 30, 45 and 60 °C by the static gravimetric method. A differential scanning calorimeter was used to determine the Tg of samples equilibrated with several water activities. The osmotic pretreatment affected the shape of the desorption isotherms because of biopolymer binding at low activities values and dissolution of sucrose at high activities values. At 45 °C, isotherms of fresh and sucrose impregnated apricots are identical. At 60 °C, sucrose impregnation depressed water activity, while at 30 °C the opposite effect is observed. Evolution of moisture content at the first saturation layer expresses these effects of sucrose impregnation and temperature. Peleg model fitted the best experimental desorption isotherms of the fresh and osmotically treated apricots (0.990 ? r2 ? 0.999, 0.005 ? S ? 0.045). A strong plasticizing effect of water on the Tg was found, with a great reduction in this value with increase in water activity.  相似文献

Edible films are thin materials based on a biopolymer. The objectives of this work were to determine the water vapor permeability and the mechanical and thermal properties of edible films based on bovine hide and pigskin gelatins. These films were prepared with 1 g of gelatin/100 ml of water; 15–65 g sorbitol/100 g gelatin; and at natural pH. The samples were conditioned at 58% relative humidity and 22°C for 4 days before testing. The mechanical properties were determined by the puncture test and the water vapor permeability by gravimetric method at 22°C. For DSC analysis, samples were conditioned over silica gel for 3 weeks. Samples (10 mg) were heated at 5°C/min, between −150 and 150°C in a DSC TA 2010. A second scan was run after cell cooling with liquid nitrogen. As expected, the puncture force decreased and the puncture deformation and water vapor permeability increased with the sorbitol content. The origin of gelatin was important only above 25 g sorbitol/100 g gelatin. The DSC traces obtained in the first scan of samples with 15–35 g sorbitol/100 g gelatin, showed a well visible glass transition followed by a sol–gel transition. However, with the increase of sorbitol concentration, the glass transition became broader, typical of the system presenting a phase separation. The model of Couchman and Karazs for ternary system, was used to predict the Tg values as a function of sorbitol concentration.  相似文献

The effects of zinc oxide nanorod incorporation on the flow properties of sago starch solution and antimicrobial, sorption isotherm, water vapor permeability, and UV transmission of sago starch films were investigated. The nanorod-rich ZnO (ZnO-N) was homogenized by sonication and incorporated into sago starch solutions at different concentrations (e.g. 1%, 2%, 3%, and 5% w/w dried starch). Introduction of low concentration ZnO-N to starch solutions significantly increased the viscosity of the solution and significantly decreased the permeability of the films to water vapor by less than one third. Solubility, moisture content, and monolayer water content of the films were decreased, whereas contact angle was increased with higher ZnO-N concentration. ZnO-N starch films had 0% UV transmittance and were able to absorb more than 80% of Near Infrared spectra. ZnO-N sago starch films exhibited excellent antimicrobial activity against Staphylococcus aureus. These properties suggest that ZnO nanorod has the potential as a filler in starch-based films for use as active packaging materials in the pharmaceutical and food industries.  相似文献

采用NaHSO3为还原剂,研究了羽毛角蛋白溶液的制备工艺,探讨了各因素对产率和粘度的影响.通过正交实验,综合考虑产率和粘度的最优平衡得出结果:在NaHSO3 50g/L、尿素480g/L、SDS 30g/L、80℃下反应5h时,可以得到羽毛角蛋白产率为82.2%、粘度为166.4s并以β-折叠为主的羽毛角蛋白溶液.  相似文献

新型织物透湿性测试装置用防水透湿PTFE薄膜包覆透湿圆柱筒的底部,形成饱和水蒸气,使用干燥氮气流作为载体,将透过织物的水蒸气带走,通过测量出口氮气流的相对湿度来确定织物的透湿量。实验结果表明,这种测试方法能在5 min内准确地评价织物透湿性,试样透湿量的变异系数小于1%。该方法具有测试时间短,重复性好,灵敏度高和成本低的特点,可用于纺织生产厂家对产品透湿性的日常质量控制。  相似文献

Alginate films containing dissimilar amounts of guluronate (G) and mannuronate (M): M/G∼0.45 and M/G∼1.5, soaked in a calcium chloride solution up to 20 min were evaluated for water vapor permeability (WVP). M/G∼0.45 films proved to be better moisture barriers at all calcium immersion times compared to M/G∼1.5. WVP of M/G∼0.45 and M/G∼1.5 films decreased as time of immersion in calcium increased; after 3 min, a decrease in WVP was observed. M/G∼0.45 films soaked for 1 min in calcium were further analyzed to determine the effect of plasticizer and relative humidity (RH) on their mechanical properties and WVP, using fructose, glycerol, sorbitol, and polyethylene glycol (PEG-8000). Films without plasticizer showed a lower capacity to adsorb water compared to those with plasticizer. As RH increased, tensile strength (TS) decreased and elongation (E) increased for all films. This effect was more pronounced on films containing plasticizer, which had lower TS at all RHs. Plasticizer did not increase E at 58% RH. At 78% and 98% RH, glycerol, sorbitol and fructose showed a significant increase in E compared to PEG-8000 and no-plasticizer. PEG-8000 provided lower TS and E, while glycerol showed the highest among all plasticizers. There was no difference on WVP between no-plasticizer and glycerol. Fructose and sorbitol showed the lowest WVP while PEG-8000 showed the highest.  相似文献

采用扫描电子显微镜观察了医用防护服织物的结构,分析了不同复合结构的特征,分别用吸湿法和蒸发法测试了医用防护服织物的透湿量,以及模拟穿着多层织物的状态时医用防护服织物的透湿量。结果表明,聚四氟乙烯(PTFE)膜层压织物透湿量高,聚氨酯(PU)涂层织物及热塑性聚氨酯(TPU)涂层非织造布透湿量低,且有明显的涂层缺陷,有剥落现象。试样蒸发法透湿量普遍较吸湿法透湿量小,且试样间透湿量差异小。随层数的增加,多层织物组合试样透湿性有所下降。  相似文献

为解决天然羽毛蛋白在中性条件下水溶性较差而导致其在纺织上浆领域内使用受限的问题,通过将不同质度的亲水性乙烯基单体丙烯酸接枝到天然羽毛蛋白的分子链上,制备出一系列具有不同接枝率且在中性条件下可溶于水或较好地分散于水的羽毛蛋白-丙烯酸接枝共聚物浆料。分别采用天然羽毛蛋白与接枝改性羽毛蛋白对纯棉经纱进行了上浆试验,测试了上浆纱的强伸性、耐磨性及毛羽数量。结果表明,对羽毛蛋白进行接枝改性可显著提高其浆纱性能,与纯棉原纱相比,当选择接枝率为29.72%的羽毛蛋白-丙烯酸接枝共聚物作为上浆材料时,上浆纱的强度提高了24.56%,断裂伸长率仅降低了14.49%,耐磨次数达到原纱的4倍,毛羽数量亦大为降低。  相似文献

Moisture sorption isotherms of grapes, apricots, apples and potatoes were determined at 30°C, 45°C, and 60°C using the standard, static-gravimetric method. Six two-parameter and five three-parameter sorption models were tested to fit the experimental data. A nonlinear regression analysis method was used to evaluate the constants of the sorption equations. The Halsey equation gave the best fit to the experimental sorption data for all materials tested over the range of temperatures and water activities investigated. The GAB model gave also the closest fit to the sorption data for potatoes and grapes. The agreement between experimental and predicted values of these models was found to be satisfactory. The isosteric heat of desorption and adsorption of water determined from the equilibrium data using the Clausius-Clapeyron equation.  相似文献

To prepare chicken feather protein (CFP)/nano-clay composite films and to evaluate the effects of various plasticizers and nano-clay concentrations on the mechanical properties of the films, CFP composite films with various concentrations of Cloisite Na+ were prepared, and their physical properties such as tensile strength (TS), elongation at break (E), and water vapor permeability (WVP) were investigated. Optimal CFP films were formed with 5 g of CFP, 0.5 g of glycerol, and 1.5 g of sorbitol in 100 mL of film-forming solution; the TS, E, and WVP of the film were 4.74 MPa, 10.08%, and 3.11 × 10−9 g m/m2 s Pa, respectively. After the nano-clay was incorporated into the CFP film-forming solution, scanning electron microscopy and X-ray diffraction studies were conducted to examine the structural characteristics of the CFP/nano-clay composite films. The incorporation of nano-clay improved the physical properties of the CFP films. The TS of the CFP/nano-clay composite film containing 7% Cloisite Na+ increased by 1.21 MPa, and the WVP of the composite film decreased by 1.15 × 10−9 g m/m2 s Pa compared to the CFP film. Therefore, these results suggest that CFP composite films can be prepared with improved mechanical property by the addition of nano-clay and used as a food packaging material in the food industry.  相似文献

以发酵饼干为研究对象,采用动态水分吸附法研究发酵饼干在25℃的水分吸附等温线与水分吸附动力学特性,同时与饱和盐溶液法得到的水分吸附等温线进行对比,并基于常用的等温吸湿模型对实验数据进行拟合。结果表明:动态水分吸附仪能在更短的时间里采集更多的数据,高频率的实时数据采集能够更准确地获得食品的水分吸附动力学特性;其从水分活度适用范围和拟合精度方面来看,GAB模型拟合饼干的等温吸湿的效果最佳。与饱和盐溶液法结果相比,动态水分吸附法得到的饼干平衡含水率略低。   相似文献
