The Food and Drug Administration (FDA) has conducted the Total Diet Study (TDS) annually since 1961. The TDS is designed to monitor the US food supply for levels of toxic chemical contaminants (pesticide residues, industrial chemicals and toxic elements) and nutritional elements. Foods are generally collected four times a year, once from each of four regions of the country. The foods are prepared table-ready before being analysed. From the results of the TDS, dietary intakes of these analytes are estimated for selected age- sex groups in the US population. This paper reports on the dietary intake of 10 nutritional and four toxic elements based on measurements made in foods collected in the TDS between 1991 and late 1996. Average daily intakes were estimated for 14 age-sex groups in the US population, as well as the contribution of specific food groups to total intakes. For most nutritional elements, teenage boys and adult males had the highest daily intakes. Intakes by infants were below the intake references for seven of 10 nutritional elements, and young girls and women had inadequate intakes of at least half the nutritional elements. Intakes by children between 2 and 10 years of age, teenage boys, and adult males met or exceeded the reference intakes for the majority of nutritional elements. Intakes by all population groups were well below the reference intakes for all toxic elements.  相似文献

PURPOSE: In this study, the Dietary Reference Intake standards were used to evaluate the prevalence of inadequate intakes of micronutrients in obese and non-obese youth. METHODS: Dietary intake was analyzed with a dietary history taken by a registered dietitian. The obese group (n=156) had a body mass index (BMI) above the 95th percentile for age and sex. The non-obese group (n=90) was between the tenth and 85th BMI percentiles. RESULTS: In the obese subjects, the prevalence of inadequate intakes was 81% for vitamin E and 27% for magnesium; the proportions with intakes below the Adequate Intakes (AIs) for calcium and vitamin D were 55% and 46%, respectively. The obese children consumed 124% of estimated need for energy, 32% of which came from fat. The non-obese had a similar prevalence of inadequate intakes (vitamin E, 93%; magnesium, 29%; calcium, 51%; vitamin D, 44%). They consumed 107% of estimated need for energy, and 31% of energy came from fat. For both groups, all other nutrient intakes were adequate. CONCLUSIONS: Even though children may consume an excess of energy, they may not be meeting all of their micronutrient needs.  相似文献

An estimate of the dietary intakes of nitrite, nitrate and N-nitroso compounds is presented, based on the analytical data supplied by the Finnish Food Quality Control. Figures on the food consumption of the Finnish population, taken from a national dietary survey, and food consumption of 1768 children and adolescents over a 48-h recall period were used. The mean daily dietary nitrate intakes were estimated to be about 55 mg for the total population and for children and adolescents. The mean nitrite intakes were 1.88 mg for the total population and 1.07 mg for children and adolescents. The intake of N-nitroso compounds (NDMA) was estimated to be 0.08 micrograms for the total population and 0.02 micrograms for children. Nitrates were found to originate mainly from vegetables (80%), nitrites from meat products (97%) and nitrosamines mostly from fish products and beer. A comparison of the estimate of dietary intake of with ADI values indicated that the nitrite intake of the total population was 23% and by children 39% of ADI. The average weight was approximately 60 kg for adults and 20 kg for children. When measured average weight (39 kg) was used, and the nitrite intake was found to be 28% of ADI. Nitrate intakes from food additives were 2.5% and 1.4% of the ADI value, respectively. When the total nitrate intake from various food sources was compared with the ADI (which is given only for food additives), the estimated nitrate intake of the total population was 25% and that of children 28% of the ADI value.  相似文献

This research investigated the intakes of six intense sweeteners: acesulfame-K (E950), aspartame (E951), cyclamate (E952), saccharin (E954), sucralose (E955), and steviol glycosides (E960) in the diets of Irish adults, using data from the National Adult Nutrition Survey. A food label survey that included products currently available on the Irish market supplemented the analysis. Sweetener intakes were investigated using three different exposure scenarios; beginning with a crude assessment which assumed that all foods permitted to contain the additives of interest always did contain them, and at their maximum permitted level (Tier 1). Refined assessments estimated intakes of the six sweeteners using food consumption data up to brand level with additive occurrence data from a survey of products currently available on the Irish market (Tier 2) and sweetener concentration data (Tier 3). Results of all exposure assessment scenarios demonstrate that intakes of each of the sweeteners of interest by the total population were below the relevant ADI level (mg kg?1 bodyweight?1), even by high consumers (P99). The three sweeteners consumed in highest amounts were acesulfame-k, aspartame, and sucralose. The main sources of these sweeteners in the diet were ‘cider and perry’, ‘energy reduced and no added sugar (ER and NAS) carbonated flavoured drinks’, ‘table-top sweeteners’, ‘dairy products’, ‘solid food supplements’, and ‘sauces’. Intakes of the six intense sweeteners are currently not a concern among Irish adults. However, exposure to these chemicals should be monitored on a regular basis due to evolving market and consumption patterns.  相似文献

The aim of this first study was to determine the dietary exposure of antimony, lead, mercury in foodstuffs consumed by secondary school students in Hong Kong. Around 100 composite food items were purchased and then cooked prior to analysis. Antimony was measured by hydrogen generation (HG)/inductively coupled plasma-mass spectrometry (ICP-MS), while lead was determined by ICP-MS. Total mercury was measured by cold vapour atomic absorption spectrometry. The detection limits for antimony, lead and total mercury were 1, 0.6 and 3 microg kg(-1), respectively. The dietary intake of antimony, lead and total mercury for an average secondary student were estimated to be 0.252, 1.98 and 0.92 microg (kg bw)(-1) week(-1), respectively. The dietary intake of antimony, lead and total mercury for high-consumer secondary student were estimated to be 0.567, 5.09 and 2.33 microg (kg bw)(-1) week(-1), respectively. The main contribution to antimony, lead and mercury were milk, vegetables and seafood, respectively. The Tolerable Daily Intake (TDI) of antimony, as recommended by WHO, is 6 microg (kg bw)(-1) week(-1), while the Provisional Tolerable Weekly Intakes (PTWI) of lead and mercury, as recommended by JECFA, are 25 and 5 microg (kg bw)(-1) week(-1), respectively. The estimated exposure values for secondary school students were compared to these safety reference values. For the relevant population, this study confirms the low probability of health risks from these metals via food consumption.  相似文献

An exposure assessment was performed to estimate the potential intake of preservatives in the Austrian population. Food consumption data of different population groups, such as preschool children aged 3-6 years, female and male adults aged 19-65 years were used for calculation. Levels of the preservatives in food were derived from analyses conducted from January 2007 to August 2010. Dietary intakes of the preservatives were estimated and compared to the respective acceptable daily intakes (ADIs). In the average-intake scenario, assuming that consumers randomly consume food products that do or do not contain food additives, estimated dietary intakes of all studied preservatives are well below the ADI for all population groups. Sulphite exposure accounted for 34%, 84% and 89% of the ADI in preschool children, females and males, respectively. The mean estimated daily intake of benzoic acid was 32% (preschool children), 31% (males) and 36% (females) of the ADI. Sorbic acid intakes correspond to 7% of the ADI in preschool children and 6% of the ADI in adults. In the high-intake scenario assuming that consumers always consume food products that contain additives and considering a kind of brand loyalty of consumers, the ADI is exceeded for sulphites among adults (119 and 124%, respectively). Major contributors to the total intake of sulphites were wine and dried fruits for adults. Mean estimated dietary intakes of benzoic acid exceeded the ADI in all population groups, 135% in preschool children, 124% in females and 118% of the ADI in males, respectively. Dietary intakes of sorbic acid are well below the ADI, accounting for a maximum of 30% of the ADI in preschool children. The highest contributors to benzoic and sorbic acid exposure were fish and fish products mainly caused by high consumption data of this large food group, including also mayonnaise-containing fish salads. Other important sources of sorbic acid were bread, buns and toast bread and fruit and vegetable juices.  相似文献

Food is contaminated by polychlorinated dibenzo-p-dioxins and furans (PCDD/F), polychlorinated biphenyls (PCB) and polybrominated diphenylethers (PBDE) worldwide. Previous data show elevated intakes in children. We determined intakes of POPs in Finnish children. Because no children-specific safe limit values exist, we used tolerable daily intakes (TDIs) set for adults by international expert bodies to examine the proportion of the study population that exceed those limits. We utilised dietary monitoring data with food consumption of Finnish boys and girls aged 1-6 years, measured the contaminant concentrations in all the main food items and calculated age-specific contaminant sum and congener-specific long-term daily intake levels. Our food intake and contaminant data correspond to years 2002-2005. The long-term upper-bound dioxin intakes ranged between 0.1 and 12.8?pg WHO(PCDD/F-PCB)-TEQ/kg bw/d (min and max). An immediate TDI for WHO(PCDD/F-PCB)-TEQs of 4.0?pg/kg?bw/d were exceeded by 2.5%-7.5% of the children. PBDE long-term upper-bound intake was between 0.1 and 5.8?ng/kg bw/d (min and max). Congener-specific analyses indicated a typical Finnish adult exposure pattern of the children to PCDD/Fs, PCBs and PBDEs. The highest POP intakes were observed in children aged 3 years. Long-term daily PCDD/F, PCB and PBDE intakes among Finnish children varied greatly between individuals and ages. In each age group of the study population, there was a proportion of children with their WHO(PCDD/F-PCB)-TEQ intake exceeding considered safe limits set for adults. Based on the exposure profile reported herein, children should be clearly considered as a specific sub-population in food-mediated contaminant risk assessment.  相似文献

The occurrence of patulin was investigated in 100 conventional and 69 organic fruity foodstuffs samples commercially available in Italy by using an HPLC method with a limit of quantification of 0.5 microg kg(-1). Patulin was detected in 26 (26%) conventional and 31 (45%) organic products with a significantly higher (p<0.01) mean concentration in the organic products (4.78 vs. 1.15 microg kg(-1)). Mean patulin concentrations in conventional apple juices, pear juices, other juices and fruits purees were 3.14, 0.22, 0.19, 0.11 microg kg(-1), respectively, and 7.11, 11.46, 2.10, 0.18 microg kg(-1) in the relevant organic products. Four samples of juices (one conventional and two organic apple, and one organic pear) contained patulin at concentrations above the limit of 50 microg kg(-1), four at concentrations between 10 and 25 microg kg(-1), and the remaining ones below 10 microg kg(-1). Patulin was detected (<1 microg kg(-1)) in only three of the 23 fruity baby food samples tested (homogenized fruits, 11 conventional and 12 organic). Based on the available data on Italian intakes of fruit juices, the estimated daily intakes of patulin, were 0.38 and 1.57 ng kg(-1) body weight (bw) from conventional and organic products, respectively. Estimated daily intakes of patulin for children were higher, 3.41 ng kg(-1) bw from conventional and 14.17 ng kg(-1) bw from organic products, but largely below the provisional maximum tolerable daily intake (PMTDI) of 400 ng kg(-1) bw. Patulin was also found in two samples of organic apple vinegar (<5 microg kg(-1)) and in fresh apples with rotten spots (12 out of 24 samples) with maximum levels at 16,402 and 44,572 microg kg(-1) for conventional and organic apples, respectively.  相似文献

An estimation of the dietary exposure of French consumers to 21 essential and non-essential mineral elements using duplicate meals (breakfast and lunch) purchased from catering establishments was investigated after digestion by a closed vessel microwave procedure and quantification by ICP-MS. Daily dietary exposure estimates for metals and minerals were compared with the Provisional Tolerable Weekly Intakes (PTWI), the Tolerable Daily Intake (TDI) or the Acceptable Daily Intakes (ADI), as established by the FAO/WHO to estimate the risk of toxicity, and the US Recommended Daily Allowances (US RDA) or the Estimate Safe & Adequate Daily Dietary Intakes (ESADDI). Moreover, comparisons were made with those from previous French studies as well as those from other countries. The estimated mean daily intakes were 11 μg for lithium, 3.42 g for sodium, 192 mg for magnesium, 2.03 mg for aluminium, 3.64 g for potassium, 642 mg for calcium, 154 μg for chromium, 12.3 mg for iron, 2.15 mg for manganese, 4 μg for cobalt, 74 μg for nickel, 925 μg for copper, 10.2 mg for zinc, 147 μg for arsenic, 66 μg for selenium, 112 μg for molybdenum, 3.6 μg for cadmium, 2.32 mg for tin, 3 μg for antimony, 9 μg for mercury and 34 μg for lead. For the non-essential (toxic) elements, aluminium, tin, antimony, cadmium, arsenic, mercury and lead, the daily intake estimates were far below tolerable limits; and similar or somewhat lower than their respective PTWI, ADI, TDI, ESADDI and US RDA for individual minerals and essential trace elements, with good agreement with other country studies. The dietary intake of 16 polycyclic aromatic hydrocarbons (PAHs) (naphthalene, acenaphthylene, acenaphthene, fluorene, phenanthrene, anthracene, fluoranthene, pyrene, benz[a]anthracene, chrysene, benzo[b]fluoranthene, benzo[k]fluoranthene, benzo[a]pyrene, dibenz[a,h]anthracene, benzo[g,h,i]perylene, and indeno[1,2,3-c,d]pyrene) by the general population of Catalonia, Spain, was calculated. Concentrations of PAHs in food samples randomly acquired in seven cities of Catalonia from June to August 2000 were measured. Eleven food groups were included in the study. High-performance liquid chromatography was used to analyze PAHs. The dietary intakes of total and carcinogenic PAHs was calculated for five population groups: children, adolescents, male adults, female adults, and seniors. Among the analyzed PAHs, there was a predominance of phenanthrene (16.7 microg/kg) and pyrene (10.7 microg/kg). By food group, the highest levels of total PAHs were detected in cereals (14.5 microg/kg) and in meat and meat products (13.4 microg/kg). The mean estimated dietary intake of the sum of the 16 PAHs was as follows: male adults, 8.4 microg/day; adolescents, 8.2 microg/day; children, 7.4 microg/day; seniors, 6.3 microg/day; female adults, 6.3 microg/day. The calculated daily intake of PAHs would be associated with a 5/106 increase in the risk for the development of cancer in a male adult with a body weight of 70 kg.  相似文献

This study was carried out to determine the current levels of nitrates in vegetables and vegetable-based baby foods (a total of 1150 samples) marketed in the Region of Valencia, Spain, over the period 2000–2008, and to estimate the toxicological risk associated with their intake. Average (median) levels of nitrate in lettuce, iceberg-type lettuce and spinach (1156, 798 and 1410 mg kg?1 w/w, respectively) were lower than the maximum limits established by European Union legislation. Thirteen fresh spinach samples exceeded the regulatory limits. Median nitrate values in other vegetables for which a maximum limit has not been fixed by the European Commission were 196, 203, 1597, 96, 4474 and 2572 mg kg?1 w/w (for potato, carrot, chard, artichoke, rucola and lamb's lettuce, respectively). The estimated nitrate daily intakes through vegetables consumption for adult, extreme consumers and children were found to be about 29%, 79.8% and 15.1%, respectively, of the acceptable daily intake (3.7 mg kg?1). The levels (median = 60.4 mg kg?1 w/w) found in vegetable-based baby foods were, in all cases, lower the maximum level proposed by European Union legislation. The estimated nitrate daily intake through baby foods for infants between 0–1 and 1–2 years of age were 13% and 18%, respectively, of the acceptable daily intake.  相似文献

Probabilistic and deterministic estimates of the acute and chronic exposure of the Danish populations to dithiocarbamate residues were performed. The Monte Carlo Risk Assessment programme (MCRA 4.0) was used for the probabilistic risk assessment. Food consumption data were obtained from the nationwide dietary survey conducted in 2000--02. Residue data for 5721 samples from the monitoring programme conducted in the period 1998--2003 were used for dithiocarbamates, which had been determined as carbon disulphide. Contributions from 26 commodities were included in the calculations. Using the probabilistic approach, the daily acute intakes at the 99.9% percentile for adults and children were 11.2 and 28.2 microg kg(-1) body weight day(-1), representing 5.6% and 14.1% of the ARfD for maneb, respectively. When comparing the point estimate approach with the probabilistic approach, the outcome of the point estimate calculations was generally higher or comparable with the outcome of the probabilistic approach at the 99.9 percentile (consumers only). The chronic exposures for adults and children were 0.35 and 0.76 microg kg(-1) body weight day(-1) at the 99.9 percentile, representing 0.7% and 1.5%, respectively, of the acceptable daily intake for mancozeb and maneb at 50 microg kg(-1) body weight.  相似文献

A total of 154 food composite samples from the 2008 total diet study in Quebec City were analysed for bisphenol A (BPA), and BPA was detected in less than half (36%, or 55 samples) of the samples tested. High concentrations of BPA were found mostly in the composite samples containing canned foods, with the highest BPA level being observed in canned fish (106 ng g(-1)), followed by canned corn (83.7 ng g(-1)), canned soups (22.2-44.4 ng g(-1)), canned baked beans (23.5 ng g(-1)), canned peas (16.8 ng g(-1)), canned evaporated milk (15.3 ng g(-1)), and canned luncheon meats (10.5 ng g(-1)). BPA levels in baby food composite samples were low, with 2.75 ng g(-1) in canned liquid infant formula, and 0.84-2.46 ng g(-1) in jarred baby foods. BPA was also detected in some foods that are not canned or in jars, such as yeast (8.52 ng g(-1)), baking powder (0.64 ng g(-1)), some cheeses (0.68-2.24 ng g(-1)), breads and some cereals (0.40-1.73 ng g(-1)), and fast foods (1.1-10.9 ng g(-1)). Dietary intakes of BPA were low for all age-sex groups, with 0.17-0.33 μg kg(-1) body weight day(-1) for infants, 0.082-0.23 μg kg(-1) body weight day(-1) for children aged from 1 to 19 years, and 0.052-0.081 μg kg(-1) body weight day(-1) for adults, well below the established regulatory limits. BPA intakes from 19 of the 55 samples account for more than 95% of the total dietary intakes, and most of the 19 samples were either canned or in jars. Intakes of BPA from non-canned foods are low.  相似文献

Infants and young children consume fruit juices and drinks at rates exceeding those of older children and adults. Carbamate pesticides are known to be used on a broad spectrum of crops, including orchard and vine crops such as apples and grapes. Concern over potential exposure to these acutely toxic pesticides by infants and young children has increased in the last decade. Liquid chromatography with fluorescence detection was used to determine the concentrations of seven N-methyl carbamates and three transformation products in domestic and imported apple and grape juices collected across Canada. Carbaryl was the most frequently (58.6%) detected N-methyl carbamate in juice samples studied. It was observed more frequently in grape juices than in apple or mixed juices. Oxamyl and methomyl were detected in apple juice samples, although they were below detection limits in all grape and mixed juice samples analysed. Maximum levels of carbaryl, methomyl and oxamyl were 93, 6.7 and 4.6 ng ml(-1), respectively. All other analytes were not present in any juice sample at concentrations above the method detection limit (0.3 ng ml(-1)). In all cases, N-methyl carbamate residues were well below the maximum residue limit established for apples and grapes in the Canadian Food and Drug Regulations. No estimated dietary intakes were above the acceptable daily intakes in any age-sex category, where an acceptable daily intake has been proposed. Carbaryl short-term intake estimates were calculated and all were below the proposed acute reference doses.  相似文献

The aim was to investigate the effect of feeding Fusarium toxin-contaminated wheat to dairy cows on the metabolism and carry over of zearalenone (ZON) and its metabolites at different feed intakes. Fourteen dairy cows equipped with rumen and duodenal fistulae were used. The experiment consisted of a control period in which the uncontaminated wheat was fed and a mycotoxin period in which the Fusarium toxin-contaminated wheat (8.21 mg deoxynivalenol (DON) and 91 microg ZON kg(-1) dry matter (DM)) was replaced by the control wheat (0.25 mg DON kg(-1) and 51 microg ZON kg(-1) DM). The wheat portion of the concentrate fed daily amounted to 55% on a DM basis. The ration was completed with maize and grass silage (50:50), whereby the maize silage contained 62 microg ZON kg(-1) DM. Feed intakes were adjusted to the current performance of the individual cows. The ZON metabolites alpha-zearalenol (alpha-ZOL) and beta-zearalenol (beta-ZOL) were recovered at the duodenum beside the parent toxin ZON. The recovery of ingested ZON as ZON plus alpha-ZOL plus beta-ZOL at the duodenum ranged between 19 and 247%. The portion of ZON (ranging from 29 to 99%) of the ZON plus alpha-ZOL plus beta-ZOL flow at the duodenum increased significantly with increasing ZON feed intake, whereas the portion of beta-ZOL (up to 57%) decreased significantly. In contrast, portions of ZON in faeces (32-100%), alpha-ZOL (up to 39%) and beta-ZOL (up to 43%) of ZON plus alpha-ZOL plus beta-ZOL were independent of ZON intake. It seems that a lower retention time of the feed and the toxins in the rumen as an effect of the increased feed intake may limit the ruminal metabolization of ZON. The relatively steady recovery of ingested ZON as ZON, alpha-ZOL and beta-ZOL in faeces at the different levels of ZON intake would suggest a further reduction of ZON by intestinal microorganisms. Furthermore, ZON and its metabolites in the milk were lower than the detection limits at daily ZON and DM intakes between 75 and 1125 microg and 5.6 and 20.5 kg day(-1), respectively, and milk yields (fat corrected milk, FCM) between 10 and 42 kg day(-1).  相似文献

PCDD/Fs and DL-PCBs contamination data in food products consumed in France collected from national monitoring programmes (2001-04) and representing analytical results for almost 800 individual food samples were combined with food consumption data from the French national dietary survey to estimate PCDD/Fs and DL-PCBs dietary intakes, expressed as toxic equivalents (WHO-TEQs). The mean PCDD/Fs and DL-PCBs intakes were estimated as 1.8 and 2.8 pg WHO-TEQ kg-1 b.w. day-1, respectively, for adults (aged 15 years and over) and children (aged 3-14 years). The main contributors to total intake were fish and milk products for both children and adults (48 and 31% for adults and 34 and 43% for children, respectively). DL-PCBs constituted the largest contributor to contamination in most foodstuffs. A life-long intake estimate showed that a non-negligible part of the French population (between 20 and 28%) had an intake above the tolerable monthly intake for dioxins and dioxin-like PCBs of 70 pg WHO-TEQ kg-1 b.w. month-1.  相似文献

A duplicate diet study has been carried out on a group of Harwell employees in order to investigate the food types in which radiocaesium from Chernobyl was most likely to be found, and also the intake of radiocaesium in food with relation to observed whole-body levels. The duplicate diet study indicated that the highest levels of radiocaesium were in milk and meat or fruit and vegetables. Radiocaesium concentrations in food of all types are small compared to the most restrictive generalized derived limit. Daily intakes of radiocaesium measured by the diet study, of the order of 2-3 Bq day-1, generally agreed with values calculated from whole-body measurements. Committed does from radiocaesium have been estimated from dietary intakes to be in the range 3-29 muSv year-1, while whole-body measurements indicate a range of 6-18 muSv year-1; these doses are small compared to other sources of internal irradiation and to recommended limits.  相似文献
