The objective of this study was to quantify differences in udder health and milking characteristics among the Holstein-Friesian (HF), Montbéliarde (MB), Normande (NM), Norwegian Red (NRF), Montbéliarde × Holstein-Friesian (MBX), and Normande × Holstein-Friesian (NMX) genotypes, while considering the effect of feeding system and parity. A total of 749 lactations were available for inclusion in the analysis from 309 cows in 1 research herd over 5 yr. Somatic cell score (SCS; i.e., natural logarithm of somatic cell count) was used as an indicator of udder health. Milking duration (seconds/d) was defined as the sum of the milking duration in the a.m. and milking duration in the p.m. Average daily milk flow (AMF; kg/min) was defined as total daily milk yield divided by total daily milking duration. Peak milk flow (kg/min) was defined as the maximum rate of milk flow achieved in the daily milking process. The SCS of the NRF (10.31 units) and MB (10.47 units) breeds was less than that of the HF (10.96 SCS units), whereas that of the NM (10.88 SCS units), MBX (10.93 SCS units), and NMX (10.84 SCS units) breeds was similar to that of the HF. The MBX and NMX had the greatest AMF (1.56 and 1.54 kg/min, respectively) and the NM had the lowest (1.33 kg/min). Animals offered a high concentrate diet had greater AMF, peak milk flow, and milking duration. The differences expressed by the divergent breeds may reflect differences in the past breeding goals among the breeds, namely the inclusion of traits aimed at maintaining or improving udder health.  相似文献

BACKGROUND: The objective was to compare the performance and meat quality of two different pig breeds: the modern crossbred Landrace × Yorkshire (LY) and the traditional Danish Black‐Spotted (BS) breed. The LY gilts and four of the BS gilts were inseminated with semen from Duroc (D) boars; the remaining BS gilts were served by BS boars. The experiment was performed on 26 gilts over 2 years. RESULTS: The BS breed in general had smaller litter sizes and weaned on average in terms of kg piglet 35% less than the modern breed combination. Crossbred piglets of BS × D had growth rates from birth to weaning comparable with piglets of LY × D. BS first parity sows were significantly fatter and less meaty, and the meat was significantly redder and darker compared to LY. The sensory profiling revealed increased sweetness, crumbliness and tenderness in BS. Further, the fat of the BS breed seemed to be characterized by a special nutty taste. CONCLUSION: The traditional breed has lower productivity and thereby higher costs of production compared to the modern genotypes. On the other hand, the meat and fat of the traditional purebred have special characteristics that might trigger a market premium. Copyright © 2011 Society of Chemical Industry  相似文献

Conventional husbandry systems for pork production are scrutinized by members of the general public as well as the scientific community. As a response, alternative forms of pig production, such as outdoor housing, organic farming and environmental enrichment are gaining interest. The question arises whether these production systems are indeed able to improve the welfare and health status of the animals, and whether these production systems alter production characteristics and meat or carcass traits. Measures of poor welfare have been described, but evaluating overall welfare is difficult. Certain parameters of alternative housing will improve welfare in some ways but, simultaneously, other welfare problems are inflated, and the weighting of each of these problems is very subjective. Alternative housing systems allow pigs to display species‐specific behaviour and decrease the occurrence of abnormal behaviours by acting on several parameters: indoor versus outdoor housing, floor space/density, floor type, and provision of bedding or other types of environmental enrichment. Evaluating alternative housing systems should be done by looking at all the welfare‐improving factors and the cost of alleviating welfare‐decreasing problems in a given production system. Data in the literature on growth, meat and carcass traits in alternative production systems, are inconsistent, indicating that other factors can play an important role. However, as equal, or in some cases even better, performance can be attained in certain production systems that meet concerns of animal welfare scientists and members of the general public, alternative production forms may be considered preferable. The objective of this study was to investigate the potential differences among Holstein-Friesian (HF), Montbéliarde (MB), Normande (NM), Norwegian Red (NRF), Montbéliarde × Holstein-Friesian (MBX), and Normande × Holstein-Friesian (NMX) across 2 seasonal grass-based systems of milk production. The effects of breed and feeding system on milk production, body weight, body condition score, fertility performance, hormone parameters, ovarian function, and survival were determined by using mixed model methodology, generalized linear models, and survival analysis. The 5-yr study comprised up to 749 lactations on 309 cows in one research herd. The HF produced the greatest yield of solids-corrected milk, the MB and NM produced the least yields, and NRF, MBX, and NMX were intermediate. The NRF had the lowest body weight throughout lactation, the NM had the highest, and the other breeds were intermediate. Body condition score was greatest for MB and NM, least for HF, and intermediate for NRF, MBX, and NMX. The HF had a lower submission rate and overall pregnancy rate compared with the NRF. The NRF survived the longest in the herd, the HF survived the shortest, and the NM, MB, MBX, and NMX were intermediate. Breed of dairy cow had no effect on selected milk progesterone parameters from 5 d postpartum until 26 d after first artificial insemination. Breed of dairy cow did not influence insulin and insulin-like growth factor-1 around parturition or at the start of the breeding season. Animals offered a high-concentrate diet had greater milk yield, but they did not have improved reproductive performance. Differences observed between the different breeds in this study are a likely consequence of the past selection criteria for the respective breeds.  相似文献

The objective of this study was to evaluate the effect of early-life feeding duration on growth and economics of group-fed organic dairy calves. Heifer calves born during the spring of 2011 (n = 67) and the spring of 2012 (n = 57) were used to evaluate the effect of weaning age, growth, and profitability of group-fed calves fed once per day in an organic dairy production system. Calves were assigned to replicate feeding groups of 10 in super hutches by birth order, and were born at the University of Minnesota West Central Research and Outreach Center, Morris organic dairy. Breed groups were Holsteins (n = 15) selected for high production, Holsteins (n = 23) maintained at 1964 breed-average level, crossbreds (n = 54) including combinations of Holstein, Montbéliarde, and Swedish Red, and crossbreds (n = 32) including combinations of Holstein, New Zealand Friesian, Jersey, and Swedish Red. Groups of calves were weaned at 30 (EW, early weaning), 60 (MW, mid weaning), or 90 (LW, late weaning) d of age, and groups were fed 1.5% of birth weight of 13% total solids organic whole milk once daily and weaned when the group of 10 calves consumed an average of 0.91 kg of organic calf starter per calf per day for 4 consecutive days. Body measurements were recorded at birth, weekly during the preweaning period, at weaning, and monthly thereafter. Profitability was estimated as a function of the total cost for organic milk and organic calf starter for weaning groups to weaning and to the first 90 d of age. Preweaning group performance was weaning age, EW: 47.6 d, MW: 64.5 d, LW: 93.7 d; weaning weight, EW: 61.8 kg, MW: 79.2 kg, LW: 108.1 kg; and gain per day, EW: 0.51 kg/d, MW: 0.63 kg/d, LW: 0.75 kg/d. Body weight (BW) did not differ among weaning groups at 90 d of age; however, MW calves had lower 120-d BW than did LW calves. The EW calves did not differ from either MW or LW calves for 120-d BW. Total feed costs to weaning for groups were $1,092.97 for EW calves, $1,871.24 for MW calves, and $2,956.64 for LW calves. The cost per kilogram of gain was higher for the EW ($5.54) group of calves than for the MW ($4.60) or LW ($4.14) groups during the preweaning period. Total costs and cost per kilogram of gain for the first 90 d of age were lowest for EW ($1,595.59, $3.02) calves and highest for LW ($2,956.64, $4.13) calves, respectively.  相似文献

BACKGROUND: Compensatory growth is the physiological process leading to accelerated growth following a period of growth retardation. This study assessed different feeding strategies that may induce compensatory growth. Pigs from two sire breeds, reared under organic conditions, were subjected to: (1) ad libitum feeding; (2) 0.7× ad libitum feeding; (3) 0.7× ad libitum feeding for 25 days followed by ad libitum feeding to slaughter; and (4) as (3) but finished with an energy‐ and vitamin E‐enriched diet. RESULTS: Compared to the performance of ad libitum fed pigs, re‐alimentation was not capable of fully compensating the effect of the imposed feed restriction either in the number of days used to reach the same slaughter weight (+4% to 7%) or in the slaughter weight achieved in the same number of feeding days (?0.5% to 2.0%, P = 0.65 and 0.11). CONCLUSION: It is reasonable to propose that although compensatory growth does occur by re‐alimentation after feed restriction, the compensation is far from always complete. The latter is a crucial aspect that has to be taken into account when considering the application of feeding strategies expected to lead to compensatory growth in organic pig production. The expectation of compensatory growth alone does not necessarily justify the application of these strategies. Copyright © 2009 Society of Chemical Industry  相似文献

Northwestern European consumers like their bread to be voluminous and easy to chew. These attributes require a raw material that is rich in protein with, among other characteristics, a suitable ratio between gliadins and glutenins. Achieving this is a challenge for organic growers, because they lack cultivars that can realise high protein concentrations under the relatively low and variable availability of nitrogen during the grain-filling phase common in organic farming. Relatively low protein content in wheat grains thus needs to be compensated by a high proportion of high-quality protein. Organic farming therefore needs cultivars with genes encoding for optimal levels of glutenins and gliadins, a maximum ability for nitrogen uptake, a large storage capacity of nitrogen in the biomass, an adequate balance between vegetative and reproductive growth, a high nitrogen translocation efficiency for the vegetative parts into the grains during grain filling and an efficient conversion of nitrogen into high-quality proteins. In this perspective paper the options to breed and grow such varieties are discussed.  相似文献

In 1997 and 1998 the effect of six different organic treatments on the chemical, rheological and sensory quality of cooked potatoes was investigated. Cattle slurry and cattle deep litter were each applied to sandy soil in three ways. The type of manure applied gave the most distinct effect on sensory quality. Manuring with slurry decreased dry matter, starch and phytic acid and increased N and rheological properties (modulus of deformability, stress, strain) significantly compared with deep litter manuring. Maturity of tubers was assumed to be the main cause of these differences. Regarding the sensory quality of potatoes, minor differences were found among the organic treatments investigated. Potatoes manured with slurry were slightly moister and seemed to have higher discolouration and off‐odour and lower yellowness than potatoes manured with deep litter. Mealiness was highest when composted deep litter was ploughed in and lowest when deep litter and straw were ploughed in. The observed differences in sensory quality are presumably an effect of availability of N in the manure. Chlorogenic acid was the only phenolic acid that was affected by the organic treatments. The variation in phenolic acid and scopoletin contents did not seem to influence the off‐taste of potatoes. As the sensory quality of potatoes produced by different organic treatments had not been addressed previously, this study revealed interesting results. © 2001 Society of Chemical Industry  相似文献

Our aim was to map the performance of local (native) dairy cattle breeds in Austria, Switzerland, Poland, and Sweden with regard to production, fertility, longevity, and health-associated traits and to compare them with commercial (modern) breeds. For this purpose, we analyzed test-day records (July 1, 2011, to June 30, 2014) and treatment records (Austria, Sweden) of cows managed on organic farms. We performed country-wise comparisons of 123,415 lactations from Original Braunvieh (OB) and Grey Cattle (AL) with Braunvieh (BV; Brown Swiss blood >60%) in Switzerland; AL with BV (Brown Swiss blood >50%) in Austria; Polish Black and White (ZB), Polish Red and White (ZR), and Polish Red (RP) with Polish Holstein Friesian (PHF) in Poland; and Swedish Red (SRB) with Swedish Holstein (SH) in Sweden. Average milk yields were substantially lower for local compared with commercial breeds in all countries; differences ranged from 750 kg (Sweden) to 1,822 kg (Austria), albeit on very different average levels. Local breeds showed a longer productive lifetime by 0.64, 0.83, 1.42, and 0.20 lactations in Switzerland, Austria, Poland, and Sweden, respectively, again on very different levels in each country. Regarding fertility traits, calving interval was shorter in local than in commercial breeds by 13 (Sweden), 14 (Switzerland), and 20 d (Austria, Poland). Insemination index was lower in certain local breeds by 0.15 (Switzerland), 0.14 (Austria), 0.21 (Poland), and 0.13 (Sweden). Several local breeds showed a lower proportion of cows with >100,000 somatic cells/mL. This was the case in Switzerland (OB 24.2%; BV 35.8%), Austria (AL 25.3%; BV 36.9%), and Sweden (SRB 42.4%; SH 43.4%). In contrast, the respective proportion in Poland exceeded 82% in all breeds except the commercial PHF (76.1%). In Sweden, lactations with veterinary treatments were considerably less prevalent in SRB (15.6%) than in SH (21.7%). In Austria, breeds differed only in treatments for udder disorders, which favored AL. In conclusion, the markedly lower milk yields of local breeds are partly counterbalanced by (somewhat inconsistent) advantages in longevity, fertility, and health traits across 4 European countries. This indicates that the robustness of local breeds can contribute to improved sustainability of organic dairy systems.  相似文献

Our objectives were to evaluate the effects of complete replacement of supplementary inorganic salts of trace minerals (STM) by organic trace minerals (OTM) in both pre- and postpartum diets on feeding behavior, ruminal fermentation, rumination activity, energy metabolism, and lactation performance in dairy cows. Pregnant cows and heifers (n = 273) were blocked by parity and body condition score and randomly assigned to either STM or OTM diets at 45 ± 3 d before their expected calving date. Both groups received the same diet, except for the source of trace minerals (TM). The STM group was supplemented with Co, Cu, Mn, and Zn sulfates and Na selenite, whereas the OTM group was supplemented with Co, Cu, Mn, and Zn proteinates and selenized yeast. Treatments continued until 156 days in milk and pre- and postpartum diets were formulated to meet 100% of recommended levels of each TM in both treatments, taking into consideration both basal and supplemental levels. Automatic feed bins were used to assign treatments to individual cows and to measure feed intake and feeding behavior. Rumination activity was monitored by sensors attached to a collar from wk ?3 to 3 relative to calving. Blood metabolites were evaluated on d ?21, ?10, ?3, 0, 3, 7, 10, 14, 23, and 65 relative to calving. Ruminal fluid samples were collected using an ororuminal sampling device on d ?21, 23, and 65 relative to calving, for measurement of ruminal pH and concentration of volatile fatty acids. Cows were milked twice a day and milk components were measured monthly. Cows supplemented with OTM tended to have longer daily feeding time (188 vs. 197 min/d), and greater dry matter intake (DMI; 12.9 vs. 13.3 kg), and had a more positive energy balance (3.6 vs. 4.2 Mcal/d) and shorter rumination time per kg of dry matter (DM; 40.1 vs. 37.5 min/kg of DM) than cows supplemented with STM during the prepartum period. In the postpartum period, OTM increased DMI in multiparous cows (24.1 vs. 24.7 kg/d) but not in primiparous cows (19.1 vs. 18.7 kg/d). The difference in DMI of multiparous cows was more evident in the first 5 wk of lactation, when it averaged 1 kg/d. Milk yield was not affected by treatment in multiparous cows (44.1 vs. 44.2 kg/d); however, primiparous cows supplemented with OTM had lesser yields than primiparous cows supplemented with STM (31.9 vs. 29.8 kg/d). Cows supplemented with OTM had a greater percentage of protein in milk (3.11 vs. 3.17%), reduced concentration of nonesterified fatty acids in serum (0.45 vs. 0.40 mmol/L), and rumination activity (30.1 vs. 27.8 min/kg of DM) than cows supplemented with STM. At the end of the transition period, cows supplemented with OTM had reduced molar proportion of acetate, reduced pH, and tended to have a greater concentration of total volatile fatty acids in ruminal fluid. In conclusion, complete replacement of STM by OTM caused modest changes in rumen fermentation, feeding behavior, energy metabolism, and performance of dairy cows, improving postpartum DMI in multiparous cows and reducing circulating levels of nonesterified fatty acids. The pre-absorptive effects of TM source and the parity specific responses on performance warrant further research.  相似文献

Production, carcass traits and meat quality of rabbits housed in cages or in different pens were compared. Rabbits (n = 579) were sorted into 5 groups: C = cage (2 rabbits/cage); pen without platform: P11 = 9 rabbits/pen; P16 = 14 rabbits/pen; pen with platform: PW = wire net platform, 14 rabbits/pen; PD = platform with straw-litter, 14 rabbits/pen. Feed intake and average daily gain between 5 and 11 weeks, and body weight at 11 weeks were significantly higher in C rabbits than that of the mean of pen-housed groups, while the PD group had the lowest growth performance. C rabbits had the smallest hind part to reference carcass (P < 0.001) and the largest percentage of perirenal and scapular fat (P < 0.001). The meat/bone ratio was the largest in group C (P < 0.05). Differences were recorded in a* value and lipid content of m. Longissimus dorsi. Rabbits housed in cages generally had the best performance whereas those housed in pens with platform exhibited the worst.  相似文献

Forty three-castrated male Iberian pigs of the Torbiscal line with an average initial weight of 102.27kg were used. A group of 22 pigs was fed according to the traditional way in free-range conditions with acorn and grass from November to January. Another group of 21 animals was fed 3.72kg/day of a conventional feed that contained 12.53MJME/kg, 16.21% crude protein, 4.94% fat and 6.64% of crude fiber, during the same period. Measurements of backfat thickness and Longissimus dorsi muscle area at the last rib were taken by means of a real-time ultrasound device (Kretz Technick Inc., 600 V-V2.32, Sonovet, Austria) in all pigs before slaughter. After slaughter, carcass, ham and foreleg weights and backfat and muscle area measurement from the last rib chop were recorded. The average daily gain, carcass yield, fat thickness, loin area, ham weight and proportion of hams were significantly higher (P<0.05) in the pigs fed in confinement than in those fed extensively (653.36g, 77.97%, 56.46mm, 3031mm(2), 22.26kg and 14.32% vs 501.48g, 76.94%, 51.74mm, 2673mm(2), 21.52kg and 13.79%, respectively). This paper shows the prediction equations for hams, forelegs and total hams and forelegs weights and proportions with respect to slaughter weight and live ultrasound measurements in pigs fed either extensively or in confinement. The ultrasound measurements better predicted the carcass cuts absolute amounts (R(2)=0.591-0.875) than the carcass cuts proportions (R(2)=0.23-0.40). The use of real-time ultrasound should be used with caution to predict the absolute quantities of hams and forelegs from Iberian pigs since the ultrasound measurements are only moderately accurate.  相似文献

Heifer calves (n = 102) were used to evaluate the effect of once- or twice-daily feeding on growth, behavior, and economics of calves in an organic group management system. Calves were assigned to replicate feeding groups of 10 in superhutches by birth order, during 2 seasons from September to December 2013 and March to May 2014 at the University of Minnesota West Central Research and Outreach Center, Morris. Calves in groups were the experimental unit. Breed groups of calves were Holsteins (n = 26), crossbreds (n = 45) including combinations Holsteins, Montbéliarde, and Viking Red (selected for high production), and crossbreds (n = 31) including combinations of Holsteins, Jersey, Normande, and Viking Red (selected for robustness). Treatment groups were once-daily feeding (1×) or twice-daily feeding (2×). Calves in both groups were fed 6 L per calf/daily of organic milk with 13% total solids and then weaned at 60 d when the group consumption averaged 0.91 kg/d of starter per calf. Body weight and hip height were recorded at birth, once a week, at weaning, and at 90 and 120 d of age. Hobo Pendant G loggers (Onset Computer Corp., Bourne, MA) were applied to the right rear leg of calves to measure total lying and standing time. Data were analyzed using PROC MIXED of SAS (SAS Institute Inc., Cary, NC). Independent variables for analyses were the fixed effects of birth weight (co-variable), season of birth, and treatment group, along with replicate as a random effect. No significant differences were found between feeding groups for body weight, weight gain, average daily gain, hip height, or heart girth. For calves in 1× and 2× groups, respectively, weaning group performance was as follows: gain per day was 0.79 and 0.81 kg, weaning weight was 92.7 and 93.3 kg, and weaning hip height was 95.2 and 95.3 cm. Daily gain to 90 d was 0.85 and 0.85 kg, and daily gain to 120 d was 0.85 and 0.83 kg for 1× and 2× calves, respectively. For lying time, calves in groups 1× (988 min/d) and 2× (995 min/d) did not differ. During the evening hours, 2× calves had lesser lying times (34 min/h for 1×; 28 min/h for 2×) because they were fed at 1800 h every evening. The average cost per kilogram of gain for the 2× ($4.03/kg) calves was greater than that for the 1× ($3.56/kg) calves. In summary, group-fed calves fed once a day in an organic production system had similar average daily gains and body dimensions compared with calves fed twice a day. Our results indicated that there is no need for twice-daily milk feeding under the conditions of the present study.  相似文献

The objectives of this study were to evaluate 2 feeding strategies for early lactation cows on performance and efficiency of nutrient utilization. Fifty-eight Holsteins cows were blocked by parity and production during the pretreatment period and then randomly assigned at 21 d postpartum to a control diet [n = 29; 16.2% crude protein, 1.64 Mcal of net energy for lactation (NEL), 22% starch, and 19% forage neutral detergent fiber (NDF)] or a diet with caloric density manipulated weekly (precision diet; n = 29; 16.2% crude protein; 1.59 to 1.68 NEL; 18 to 26% starch; and 16 to 22% forage NDF) to promote a calculated positive energy balance of 5 Mcal/day. Diets were fed as total mixed rations and precision cows had their diets adjusted individually once a week, by feeding additional grain supplementation from 0 to 25% of daily dry matter (DM) offered, according to the energy balance of the preceding week. Energy balance was calculated daily and then averaged weekly. The study lasted from wk 3 to 19 postpartum, and nutrient digestibility, rumen fluid composition, urinary output, estimates of microbial protein synthesis, and feeding behavior were evaluated between wk 9 and 13 postpartum. Compared with controls, precision cows had similar DM intake (24.3 kg/d), but NEL intake tended to be greater primarily between wk 4 and 8 postpartum. Yields of milk (45.2 vs. 41.9 kg/d), milk components, 3.5% fat-corrected milk (44.0 vs. 40.8 kg/d), and energy-corrected milk (43.4 vs. 40.2) were all greater for precision than control cows, resulting in greater energy-corrected milk production per kilogram of diet DM consumed (1.79 vs. 1.72). Precision cows produced more milk calories per kilogram of metabolic weight (0.227 vs. 0.213 Mcal of NEL/kg), although the amount of consumed calories partitioned into milk (82.3%) and measures of energy status did not differ between treatments throughout the study. Glucose concentrations were greater throughout the day in precision cows compared with controls at 6 wk, but not 13 wk postpartum. Apparent digestibility of nutrients, composition of rumen fluid, mean and low rumen pH, and estimated rumen microbial N synthesis remained mostly unaltered by treatments. Although precision cows produced more milk true protein, measures of efficiency of dietary N use were not influenced by treatment. On wk 13 postpartum, precision cows consumed a diet with longer NDF particles, which resulted in a tendency for greater intake of NDF >8 mm because of less sorting against the long particles than control cows. Meal pattern differed with treatment, and precision cows consumed feed more sparsely throughout the day, spent more time ruminating lying, and had similar meal duration (mean of 36.3 min/meal) compared with control cows, but smaller meal size (3.33 vs. 3.64 kg/meal). Results from the current study indicate that allocating dietary resources according to the individual needs of cows based on energy balance improves lactation performance compared with feeding a single total mixed ration, despite similar average nutrient intake between treatments. Improvements in performance are likely related to allocation of calories based on the needs of the cow and on shifts of feeding behavior that might favor intake of smaller meals.  相似文献

The objectives of this study were to determine whether doubling the amount of feeding space from 0.5 to 1.0 m per cow leads to increased spacing between cows at the feeder, fewer aggressive social interactions among cows, and ultimately increased feeding activity. Twenty-four lactating Holstein cows were provided with 0.5 and 1.0 m of feeding space per cow in a 2 x 2 crossover design replicated over time. Time-lapse video was used to quantify the inter-cow distance and incidence of aggressive displacements at the feed alley. An electronic feed alley monitoring system was used to monitor the feeding behavior of the cows. When animals had access to 1.0 m per cow, there was at least 60% more space between animals and 57% fewer aggressive interactions while feeding than with access to 0.5 m of feeding space. These changes in spacing and aggressive behavior in turn allowed cows to increase feeding activity throughout the day, especially during the 90 min after providing fresh feed (an increase of 24%). This increase in feeding activity was particularly evident for subordinate cows. These results indicate that increasing space allowance at the feeder increases feeding activity and reduces competition among lactating dairy cows.  相似文献

BACKGROUND: Restricted feeding before fattening is a common procedure in the production of Iberian pigs, but little scientific information about its consequences on productive traits and characteristics of fat is available. This work studied the effect of a severe feeding restriction previous to the free‐range fattening on carcass and fat quality traits in Iberian pigs, considering two different feeding levels (high restriction: HR; versus maintenance level: M) before free‐range fattening. RESULTS: Animals from the M group showed longer and higher‐perimeter hams and tended (P < 0.10) to show higher slaughter and carcass weights, carcass inner length and loin and sirloin weights than HR ones. Animals from the HR group showed lower proportions of total saturated fatty acids (SFA) and higher total monounsaturated fatty acids in the backfat inner layer than those from the M group. Total polyunsaturated fatty acids in intramuscular neutral lipids were higher in HR pigs than in M ones, while stearic acid (C18:0) was lower. The average daily gain, fatty acid profile of the outer backfat layer and that of the hepatic polar and neutral lipids and the rheological features of backfat inner layer remained unaffected. CONCLUSION: A severe reduction of the feeding level previous to free‐range fattening does not produce compensatory growth, tends to diminish carcass quality and to slightly increase IMF content and improves the fatty acid profile of the inner backfat layer. BACKGROUND: An excessive accumulation of skatole in pigs is a major contributor to boar taint. Intestinal skatole concentrations may vary among different pig segments and breeds. The objective of this study was to evaluate the spatial variation of intestinal skatole production and the microbial community in local Jinhua and exotic Landrace pigs. RESULTS: For both breeds, skatole concentration increased towards the rectum and segment had a significant effect on skatole (P < 0.001). The caecal skatole concentration in Landrace was significantly lower than proximal, distal colonic and rectal skatole levels (P < 0.05). Compared with Jinhua pigs, the rectal skatole and proximal and distal colonic indole levels were significantly higher in Landrace pigs (P < 0.05). Volatile fatty acids were significantly affected by breed except for isobutyrate and isovalerate (P < 0.05), with higher butyrate level and lower pH in Landrace pigs (P < 0.05). There were no significant differences in mitosis and apoptosis for the two breeds. The denaturing gradient gel electrophoresis profile showed differences between breeds and segments within one breed, though some bands were common to all samples. CONCLUSION: The higher skatole levels in Landrace pigs may be not associated with higher intestinal apoptosis. The results suggested that pig genotype plays a role in the establishment of the host‐specific microbiota and that the variations in fermentation patterns are more likely to explain differences in intestinal skatole production.
