目的:通过比较杨凌地区‘媚丽’葡萄不同采收期的果实香气、葡萄酒香气和葡萄酒颜色指标,确定出该地区‘媚丽’葡萄酿造红葡萄酒的最适采收时间。方法:进入转色期后对‘媚丽’果实进行定期采样,测定其理化成熟、酚成熟和果实香气变化;选取最佳理化成熟时间和酚成熟时间采收的‘媚丽’葡萄进行酿酒实验,测定香气成分和颜色指标。结果:8月24日,细胞成熟指数为0.061,种子成熟指数为0.521,为最佳酚成熟时间,该时间采收的葡萄酿造的葡萄酒香气最丰富,共检测到41?种香气化合物,总量为471.75?mg/L,且葡萄酒颜色亮度和红色色调也最符合干红葡萄酒的要求;最佳理化成熟时间相比酚成熟晚4?d,但其葡萄酒香气和颜色指标相比8月24日都较差。结论:杨凌地区‘媚丽’葡萄在达到酚成熟时所酿造的葡萄酒香气和颜色最佳。  相似文献

Herein, the phenolic composition and colour attributes of red grapes extracts (obtained with a fast methodology) were correlated with those of their corresponding wines to predict the final quality properties of wines. The phenolic parameters were evaluated as total phenolic compounds (TPC), total anthocyanins (TA) and total condensed tannins (TCT), whereas the chromatic parameters were evaluated as colour intensity (CI), tonality (To), and the percentages of yellow, red and blue tones. All of them were determined by usual UV–Vis spectrophotometric methods. To get robust models, grapes of five red varieties were collected at three different ripening stages throughout the 2009 vintage. Good correlations between the results from grapes and wines were obtained, showing high regression coefficients and low prediction errors for TPC (R2 = 0.929, RMSE = 5.99%), TA (R2 = 0.953, RMSE = 7.23%) and CI (R2 = 0.954, RMSE = 7.58), concluding that these wine phenolic properties can be predicted reliably from the extracts obtained with an optimised fast extraction method from grapes on the ripening controls along the maturity process.  相似文献

Background and Aims: Deep red full‐bodied wines can only be obtained from grapes with complete phenolic maturity, which frequently produce wines with high pH and alcohol content. The present study focuses on a new procedure for simultaneously reducing pH and ethanol content. Methods and Results: Grapes from cluster thinning were used to produce a very acidic low‐alcohol wine. The wine was treated with high doses of charcoal and bentonite. This odourless and colourless wine was used to reduce pH and ethanol content of wine produced from grapes, which had reached complete phenolic maturity. The anthocyanin and proanthocyanidin concentrations, the mean degree of polymerisation and the monomeric composition of proanthocyanidin of reduced‐alcohol wines were similar to those of their corresponding controls. Since the pH was lower, the colour of the reduced‐alcohol wines was more intense. No significant differences were found between reduced‐alcohol wines and their controls by triangle sensory tests using dark glasses for two of the three studied cultivars. Conclusion: The procedure described allowed production of wines with reduced alcohol content and pH, while retaining similar phenolic content and sensory properties. Significance of the Study: The proposed procedure is easy to apply, does not require specific equipment and offers a means of addressing the problem of wines developing high ethanol and low pH as a result of over‐ripening of grapes.  相似文献

Various analytical methods based on the HPLC-DAD technique were used to determine 38 phenolic compounds in red wines. While anthocyanins and hydroxycinnamic acids were determined by direct injection of wine samples, hydroxybenzoic acids, catechins, procyanidins and flavonols required an analytical pretreatment involving liquid–liquid partitioning with ethyl ether followed by solid-phase extraction on C18 mini-columns. The proposed analytical methods were used to establish the phenol composition of Mencía and Brancellao, two varietal young red wines, and its influence on colour stability during storage in bottles for one year. At the end of malolactic fermentation, Mencía wine was found to contain much greater amounts of anthocyan pigments than was Brancellao wine. This resulted in a higher colour density but a weaker hue in Mencía wine than in Brancellao wine. Phenolic compounds evolved similarly in both wines during storage; changes in such compounds involved a decrease in the levels of monomeric anthocyanins, phenolic acids, epicatechin and flavonols, and an increase in those of procyanidins. The absence of a relationship between the changes in colour density and monomeric anthocyanins in both wines suggests that copigmentation and polymerization with other phenolic compounds (viz. phenolic acids, catechins and/or flavonols) prevail over degradation of the pigments.  相似文献

Chamber drying under controlled temperature and humidity conditions of the red grape varieties Merlot and Tempranillo grown in Andalusia (Spain), and the fortification and maceration of the musts in the presence of skin from both types of grapes, to obtain sweet red wines, has been studied. Changes in colour and in monomeric and polymeric phenols during the vinification process were examined. Chamber drying increased the sugar content to about 31.4 °Brix within 48 h in Merlot grapes and 72 h in Tempranillo grapes. This drying process also causes skin rupture, facilitating the access of phenolic compounds to the pulp. The resulting musts exhibited slight browning and increased red hues, due to a high concentration of anthocyanins; maceration in the presence of grape skins for 24 h provided the best results. The end-product contained highly acceptable tannin, colour and phenolic compounds for marketing as a high quality sweet red wine, in comparison with other commercial sweet red wines.  相似文献

Two commercial yeast strains were assayed during the winemaking process of Monastrell grapes to determine their influence on colour and phenolic composition of the resulting wines during alcoholic fermentation and maturation. The results showed that in 2002, the wines did not present great differences but in 2003 higher colour intensity and phenolic compounds content were detected when one of the commercial strains was used. A discriminant statistical analysis clearly showed that different yeasts led to different wines as regard their chromatic characteristics.Industrial relevanceThe importance of yeast in winemaking is extensively known since they are responsible for the transformation of sugars into ethanol and for the formation of the most significant aroma compounds in wines. However, they may also participate in wine colour and this role is usually not taken into account in the wine industry. The choice of a yeast strain is an important factor since these microorganisms have the capacity to retain or adsorb phenolic compounds and, on the other hand, yeast may contribute to stabilizing wine colour, as a result of participating in the formation of vitisins during fermentation or liberating mannoproteins that have the capacity to bind to anthocyanins and tannins, protecting them from precipitation. Two commercial yeast strains were assayed during the winemaking process of Monastrell grapes to determine their influence on colour and phenolic composition of the resulting wines during alcoholic fermentation and maturation. The results showed that higher colour intensity and phenolic compounds content were detected when one of the commercial strains was used, both during fermentation and wine aging, and may be used as a tool during winemaking for obtaining stable and highly coloured wines.  相似文献

Phenolic profile, antioxidant activity, and color parameters of Polish wines, produced from the multispecies hybrid and Vitis vinifera L. grapes were analyzed. A principal component analysis was applied, in order to differentiate the investigated wines in terms of content of phenolic compounds. The white wines turned out to be similar to each other in terms of color parameters and the results of principal component analysis, while the red wines strongly differed in this respect. However, the white wine produced from the multispecies hybrid grapes contained a higher level of phenolic acids and flavonoids, as compared to the white wines obtained from the hybrid cultivars. Out of the red wines, Rondo wine, produced from the multispecies hybrid grapevine was the richest in total phenolic and phenolic acids content. Caffeic acid and quercetin were the predominant phenolics in majority of the wines tested.  相似文献

Several red wines were elaborated in order to study the influence of the grape harvesting date (degree of maturity of the grape) on their chromatic characteristics and polyphenolic contents. Wines made from two grape varieties, at three different harvesting dates and from two consecutive vintages, were selected for this study. The results showed that the harvesting date of grapes (directly correlated with the degree of maturity of the grapes), influenced the chromatic characteristics of the wines, although their polyphenolic compositions were clearly different, especially in Cabernet Sauvignon wines. In general, higher intensities of blue or violet tones were detected in wines made from the grapes collected on the second harvesting date, in which the ratios anthocyanins/proanthocyanidins and anthocyanins/(proanthocyanidins + catechins) were the lowest. These ratios are proposed as probable indicators of the aptitude for wine ageing.  相似文献

Although grapes subjected to different sugar concentration methods are known to provide also different types of sweet wines, the exact influence of such methods on the sensory properties of the wines is largely unknown. The purpose of this work was to identify differences in sensory profile between young and aged wines obtained from grapes subjected to various sugar concentration techniques. Differences in sensory properties were judged by a panel of trained tasters. Young sweet wines were judged to have a sweeter balance and a dried fruit taste associated to higher global sensory attributes of odour and taste. Some differences in sensory fingerprint were due to their aging in oak barrels, which introduced flavour mainly based on attributes such as vanilla, phenolic, wood, and burnt wood tastes. There were also clear differences between sweet wines obtained by natural grape dehydration and others obtained by fortification with 96 % (v/v) ethanol fit for human consumption: naturally sweet wines were most appreciated than fortified sweet wines, since they were not only ranking higher in honey and dried fruit tastes, but also in overall colour and odour.  相似文献

Wine colour is one of the main organoleptic characteristics influencing its quality. It is of special interest in red vinifications due to the economic resources that wineries have to invest for the extraction of the phenolic compounds responsible for wine colour, compounds that are mainly located inside the skin cell vacuoles, where the volatile compounds are also found. The transfer of phenolic compounds from grapes to must during vinification is closely related to the type of grapes and the winemaking technique. During traditional winemaking, grapes are crushed and skin macerated for several days, with pumps overs to facilitate the colour extraction. To increase this extraction, some chemical (maceration enzymes) or physical technologies (thermovinification, cryomaceration, flash‐expansion) can be applied. In this work, a new methodology has been tested. This methodology consists in the application of high‐power ultrasounds to crushed grapes to increase the extraction of phenolic compounds. Crushed grapes were treated with this non‐thermal technology and vinified, with 3, 6 and 8 days of skin maceration time, and the results were compared with a control vinification, where crushed grapes were not subjected to any treatment and were skin macerated during 8 days. The wine chromatic characteristics (determined spectrophotometrically) and the individual phenolic compounds (anthocyanins and tannins, determined by HPLC) were followed during the maceration period, at the end of alcoholic fermentation and after two months in bottle. Also, the wine volatile compounds were determined by GC‐MS. The wines made with ultrasound‐treated grapes showed differences with the control wine, especially regarding total phenol content and tannin content. The wines elaborated with sonicated grapes and with only three days of skin maceration time presented similar concentration of anthocyanins and twice the concentration of tannins than control wines elaborated with 8 days of skin maceration.  相似文献

Different red wines were elaborated to study the effect of the date of the grape harvest on the levels of individual low molecular weight phenolic compounds, which are chiefly responsible for the wine color. Two red grape varieties and two consecutive years were studied at three different harvesting stages of grapes, and the changes during the 18 months of wine aging (12 months in oak barrels and 6 months in the bottle) were also followed. The results showed that the wines made from grapes harvested 1 week later than the usual date generally had higher contents of some simple phenols, which can act as cofactors that can maintain the color intensity and violet tonalities in aged wines. Besides, these wines had lower levels of caftaric and coutaric acids, which are two of the main substrates for oxidation and browning processes.  相似文献

The phenolic potential of the grapes of Tannat, Cabernet Sauvignon and Merlot produced in the south region of Uruguay was analysed in four years. The grapes of Tannat had the highest total phenolic richness (A280 = 80.0), total anthocyanin potential (ApH1 = 2540 mg L?1) and extractable anthocyanin potential (ApH3.2 = 1269 mg L?1), although there were important differences between the years. Representative winemaking of each vineyard was carried out. The differences verified in the grapes phenolic indexes were related to the colour and polyphenolic composition of the wines. The correlations between the phenolic indexes of the grapes and the colour and polyphenolic composition of the wines were very high. The estimation of the polyphenolic richness and the extractability of the anthocyanins of the grapes allow to improve the management of the winemaking and the prediction of the chromatic characteristics and the global polyphenolic composition of the wines.  相似文献

为研究不同采收期对黑比诺葡萄及葡萄酒品质指标的影响,于葡萄转色后每7 d取样1次,监控葡萄果实理化指标及多酚含量的变化,并对不同采收期葡萄酿造的葡萄酒感官指标进行定量描述分析(QDA),以确定宁夏青铜峡黑比诺葡萄的最佳采收期;对不同采收期葡萄和葡萄酒的多酚指标进行主成分分析(PCA),筛选出对其品质影响最大的指标,达到简化实用的目的。结果表明,在葡萄成熟过程中,还原糖含量、糖酸比不断增加,总酸含量不断降低;果皮和籽中的多酚指标含量基本都呈先降低后逐渐升高的趋势;QDA分析结果表明,随着采收期的推移,相应葡萄酒的感官质量也逐渐提高;PCA分析结果表明,籽总类黄酮、皮总类黄酮和皮总花色苷对葡萄及葡萄酒品质的影响最大,并且其含量分别达到52.02±0.13 mg/g,29.95±0.28 mg/g和7.09±0.02 mg/g时,葡萄多酚成熟度相对较好,所酿葡萄酒的品质较佳;以期指导该地区黑比诺葡萄采收期的确定。  相似文献

Chromatic characteristics and phenolic composition of red wines elaborated from Sousón and Brancellao grapes (Vitis vinifera L.), whose vines were trained in cordon and Guyot systems, were determined. This comparison was possible because there were no significant differences between yields for each one. Hue was the only significantly different chromatic parameter for both training systems and cultivars. In Sousón cultivar, saturation, colour intensity and red percentage were greater for Guyot system. Sousón cultivar trained in Guyot system and Brancellao cultivar trained in cordon system were characterized by higher total anthocyanin concentration. However, greater ionization index and flavanols reagent with dimethyl aminocinemaldehyde were associated with Guyot and cordon systems, respectively, independently on cultivar. Furthermore, gentisic acid, as well as malvidin-3-glucoside, petunidin-3-acetylglucoside and malvidin-3-caffeoylglucoside in less extension, permitted to differentiate training systems in both Sousón and Brancellao cultivars. Principal component analysis was also performed for a better understanding of the differences found.  相似文献

The vinification technique called pre-fermentative cold maceration is used to enhance the anthocyans diffusion from the skins to the must, increasing the pigments extraction. For using this technique the application of low temperatures is needed. In this study, two different refrigerating methods (dry ice and cooling of grapes) have been assessed regarding the colour and the phenolic composition of the Syrah wines elaborated by applying pre-fermentative cold maceration. Results showed more intense and stable colours when grapes were previously refrigerated in cold-storage rooms, which showed higher values of chroma and more red-bluish hues. As regards phenolic composition, the cold maceration technique used yields to significant differences among the levels of phenolics, having higher levels of anthocyanins and some non-coloured phenols as flavonols in PR wines. Regarding the colour-composition relationships, it has been highlighted the importance of the co-pigments such as flavonols and cinnamic acids for classify the two groups of samples.  相似文献

This paper reports the evolution, over two years, of the anthocyanin content, colour and organoleptic quality of red wines prepared from a single batch of Vinhão grapes by means of three different protocols (maceration/fermentation with conventional pumping-over or in rotary vats, and fermentation after initial carbonic maceration), with and without the use of four different fining agents (polyvinylpolypyrrolidine, gelatin, egg albumin, and casein). Carbonic maceration led to lower anthocyanin levels and less intense coloration than the other two methods immediately following vinification, but during storage the carbonic maceration wines underwent less colour degradation than the others, so that after two years the colour density differences among the three were negligible. Wines treated with fining agents tended to have somewhat lower anthocyanin levels and, especially in the case of PVPP, less intense colouration than untreated wines, and their colour was at best only marginally more stable during storage, but they nevertheless generally achieved higher panel ratings for organoleptic quality than untreated wines, especially as regards taste.  相似文献

Background and Aims: The impact of grey mould (Botrytis cinerea (B. cinerea)) was quantified on chemical, phenolic and sensory qualities of grapes, derived musts and wines. Methods and Results: Analyses were carried out by using naturally or artificially infected grape berries at ripeness or overripeness. In grape seeds, chemical analyses revealed no major differences between healthy and rotten grapes. In grape skins of Botrytis‐affected berries, concentrations of all the phenolic compounds (anthocyanins and proanthocyanidin monomers, dimers and trimer) decreased drastically. Mean degree of polymerization of the proanthocyanidin polymeric fraction was also affected in skins. Chemical analyses of musts and wines made with different percentages of rotten berries showed a moderate impact of the pathogen on their phenolic composition. Nevertheless, sensory analyses underlined a loss of wine sensory quality perceptible from a threshold as low as 5% of Botrytis‐affected grapes onwards. Conclusion: Phenolic variations and the associated negative impact in grapes, derived musts and wines may be related to oxidation phenomena from B. cinerea. The main effects of severity/age of grey mould and the level of berry maturity are also discussed. Significance of the Study: B. cinerea drastically affects the phenolic and organoleptic properties of grape skins and derived wines. Therefore, prophylactic actions early in the vineyard, evaluation of the sanitary status of the harvested grapes and berry sorting are primordial even under low disease pressure.  相似文献

Grapes of Touriga Nacional and Touriga Francesa red Vitis vinifera varieties have been sampled from two vineyard sites at different altitudes during three consecutive vintage years (1997, 1998 and 1999) in the Douro Valley. The total anthocyanidin monoglucosides (AMGs) detected by HPLC/DAD and the red colour of grape skin extracts were monitored during the last month of maturation. Microvinifications were performed with the grapes studied and the resulting Port wines were analysed. Malvidin 3‐glucoside and its acylated esters were the major AMGs irrespective of cultivar at harvest date. Vineyard altitude, together with other variables, was found to be an important factor contributing to the amount of anthocyanin compounds found in grapes of Touriga Nacional and Touriga Francesa. Overall, the climatic conditions observed at higher vineyard sites appeared to be advantageous, resulting in larger amounts of AMGs in grapes. The same outcome was obtained in the resulting wines, which showed higher levels of AMGs when made from grapes grown at higher altitude, especially for Touriga Francesa. © 2002 Society of Chemical Industry  相似文献
