The objective of this work is measuring the effect of different volatile extract compositions on the perception of taste, astringency, global intensity and persistence of wine. Six Spanish wines, two from Chardonnay and four from Tempranillo grapes, all of them showing different chemical and sensory characteristics, were selected. Wines were separated into volatile and non-volatile fractions by solid phase extraction and lyophilisation and further liquid extraction, respectively. Eighteen “reconstituted wines” were prepared, combining different volatile extracts and different non-volatile matrices and adjusting ethanol content to 12% (v/v), and were further described by a specifically trained sensory panel. Taste attributes (sweetness, acidity, bitterness), astringency, aroma intensity, global intensity and persistence were assessed in both, original and “reconstituted” wines by using a numerical category scale. The sensory properties of the original wines were retained by their corresponding “reconstituted samples”. The sensory assessment of the “reconstituted wines” showed that the addition of volatile fruity extracts from white wines brought about a decrease in astringency and bitterness and an increase in sweet perception in all cases. While global intensity and persistence of white wine matrices were also increased, they did not change in red wine matrices, which suggests that the volatile fraction plays only a secondary role in these attributes of red wines. Similarly, the effects of replacing the volatile fraction of a red wine by volatile extracts from other red wines were small and inconsistent, which confirms that taste and astringency are primarily driven by non-volatile molecules in these wines.  相似文献

The effects of both wood chips addition and contact time on phenolic content, volatile composition, color parameters, and organoleptic character of red wine made by a native Greek variety (Agiorgitiko) were evaluated. For this purpose, chips from American, French, Slavonia oak, and Acacia were added in the wine after fermentation. A mixture consisting of 50% French and 50% Americal oak chips was also evaluated. In an attempt to categorize wine samples, various chemical parameters of wines and sensory parameters were studied after 1, 2, and 3 mo of contact time with chips. The results showed that regardless of the type of wood chips added in the wines, it was possible to differentiate the samples according to the contact time based on their phenolic composition and color parameters. In addition, wood‐extracted volatile compounds seem to be the critical parameter that could separate the samples according to the wood type. The wines that were in contact with Acacia and Slavonia chips could be separated from the rest mainly due to their distinct sensory characters.  相似文献

The influence of the prefermentative addition of copigments and different winemaking technologies on the polyphenolic composition of Tempranillo red wines after malolactic fermentation was studied. Six experiments dealing with the prefermentative addition of caffeic acid, rutin, (+) catechin, white grape skin tannin, white grape seed tannin and control wines were realised. Three different winemaking technologies (traditional vinification, prefermentative cold maceration at 6–8 °C and cold soak at 0–2 °C with dry ice) were studied. Prefermentative addition of copigments increases anthocyanin copigmentation reactions and produces wines with a greater colour, a higher anthocyanin concentration, a superior contribution of anthocyanins to the colour of the wine, a superior percentage of tannins polymerised with polysaccharides and less astringency. Cold prefermentative maceration increases the extraction of polyphenols, the anthocyanin copigmentation reactions and the polymerisation reactions between tannins and polysaccharides. The effectiveness of the combination of copigments and prefermentative maceration treatments was demonstrated by the increase of the concentration of the polyphenolic compounds.  相似文献

The astringency of wines enriched with commercial tannins (CTs) was evaluated by a method based on the SDS–PAGE electrophoresis of salivary proteins after the reaction of saliva with wine. Nineteen CTs tested in synthetic wine at the same pH (3.6) and concentration (1 g/l) gave different values of saliva precipitation index (SPI). The effect of CTs addition was investigated in four wines. Results showed that the wine matrix influenced the astringent capacity of CTs and that became less pronounced as wine polyphenolic complexity increased. For some types of wine, astringency was not affected, indicating that the effect of CTs utilisation is not easily predictable by classical methods. The ability to objectively evaluate the astringency provided by CTs with the SDS–PAGE-based method would supply producers and winemakers with a useful tool to manage the processing conditions and thus to improve the quality of wine.  相似文献

Sixteen commercial Spanish red wines selected to cover a wide range of sensory properties were stored at 25 °C for 6 months in air-tight containers under different oxygen doses (0–30 mg L 1) mimicking real and extreme bottling situations. The 16 initial samples (before storage) and the 80 stored samples (16 wines × 5 oxygen doses) were submitted to sensory analysis. Sensory changes related to post-bottling storage and initial oxygen dose were evaluated by means of discriminant and characterisation sensory strategies.Significant increases in black fruits, dried fruits, woody, lactic and stronger increases in cooked vegetables and spicy notes reveal a general pattern of aroma evolution. Remarkable departures to this general pattern have been observed, which can be related to the initial sensory properties of the wines and to their basic polyphenolic composition. The effect of post-bottling storage in bitterness is wine dependent, while global decreases in both global intensity and persistence evaluated in mouth are observed. Discrete increases in astringency are observed for wines with the lowest initial astringent scores. Important sensory interactions between aroma attributes (herbal and spicy) and bitterness and between roasted and astringency perception are shown. Little impact of the initial oxygen dose in the in-mouth sensory properties is reported. These results are relevant for wine experts in that they help understanding the evolution of wine sensory properties in the bottling stage. This study may help them to develop strategies for managing this winemaking stage with objective criteria.  相似文献

To understand effects of using oak barrels on the astringency, bitterness and color of dry red wines, phenolic reactions in wines before and after barrel aging are reviewed in this paper, which has been divided into three sections. The first section includes an introduction to chemical reactivities of grape-derived phenolic compounds, a summary of the phenolic reactions that occur in dry red wines before barrel aging, and a discussion of the effects of these reactions on wine astringency, bitterness and color. The second section introduces barrel types that determine the oak barrel constituents in wines (primarily oak aldehydes and ellagitannins) and presents reactions between the oak constituents and grape-derived phenolic compounds that may modulate wine astringency, bitterness and color. The final section illustrates the chemical differences between basic oxidation and over-oxidation in wines, discusses oxygen consumption kinetics in wines during barrel aging by comparing different oxygen consumption kinetics observed previously by others, and speculates on the possible preliminary phenolic reactions that occur in dry red wines during oak barrel aging that soften tannins and stabilize pigments via basic oxidation. Additionally, sulfur dioxide (SO2) addition during barrel aging and suitability of adopting oak barrels for aging wines are briefly discussed.  相似文献

The effect of three water status level and two harvest date 55 and 64 days after veraison (DAV) on phenolic and sensory composition of Cabernet Sauvignon wines were investigated. The later harvest date led to wine with a higher alcohol content. Total phenols varied from 1439.66 to 1643.08 mg L?1 with higher values at 64 DAV. No differences were observed between irrigation treatments. For total tannins and anthocyanins, no differences were found between harvest date. Separation of proanthocyanidins by Sep‐Pak Plus tC18 cartridges showed only differences in concentration but not in the proportion of proanthocyanidin fractions. The wines from the most restricted treatment had a better colour and the same aroma of red fruits, persistence, astringency, fullness and bitterness, as the wine from the treatment with highest irrigation. Under the assay conditions, it was possible to obtain wines with a similar chemical and sensory composition earlier and using less irrigation water.  相似文献

ABSTRACT:  During sensory evaluation assessments, visual masking techniques are frequently employed to disguise color differences between samples and minimize perceptual bias. Particularly in wine, the impact of these masking techniques on panelist evaluations has not been well studied. The objective of this study was to study the influence of visual masking techniques on the aroma and flavor assessment of 2 red wines and observe the impact of these techniques on trained and consumer sensory panels. Specific masking techniques included (1) blue wine glass/white illumination; (2) clear glass/red illumination; and (3) clear glass/white illumination. Ten panelists were trained to recognize 7 aroma and flavor attributes, while consumer panelists ( n = 80) evaluated attributes and liking. For the trained panel, the visual masking technique affected only perceived spicy flavor of Syrah ( P ≤ 0.05), with the clear glass/red illumination resulting in more intense spicy flavor compared to the other 2 conditions. Principal components analysis showed that for the 2 red wines evaluated by the trained panel, red illumination resulted in higher spicy attributes and perceived astringency while wines served in blue wine glasses were higher in perceived astringency. For the consumer panel, red illumination resulted in wines higher in perceived astringency and blue wine glasses resulted in wines higher in perceived flavor liking. These results indicated that the visual masking techniques may influence both trained and consumer panel evaluation of aroma and flavor attributes of red wine. However, beyond red wine, this study makes the larger point that the choice of masking technique does impact sensory evaluations.  相似文献

Grape seed and skin sensory parameters are important characteristics in making decisions concerning the optimal harvest time and producing high-quality red wines. The potential of near infrared spectroscopy to determine several sensory parameters of seeds and skins was evaluated. Taste (sourness), texture (astringency, tannic intensity, dryness and hardness), visual (colour) and olfactory (intensity and type of aroma) attributes were considered. Calibration models were performed by modified partial least squares regression. The differences between sensory analysis and NIRS analysis in external validation were lower in the case of seeds; they were between 4.5% for hardness and 8.7% for colour. For the skins, differences in external validation were between 9.8% for tannic intensity and 13.7% for astringency. The results obtained show that NIRS technology has considerable potential for predicting the above sensory attributes.  相似文献

This study was conducted to investigate wine professionals’ perception of aging potential of red wines. In the first experiment, 41 wine professionals assessed sixteen commercial Burgundy red wines via a binary categorization task, an aging potential rating task, and a hedonic rating task and an analytic sensory evaluation including an astringency and a bitterness rating task. The wines were also analyzed by High-Pressure Liquid Chromatography with a UV Detector (HPLC-UV) and their color was evaluated using Hue (H*), Lightness (L*) and Chroma (C*) measurements. Results showed that the wines were split into two clusters on the basis of aging potential judgements indicating that the wine professionals had a collective representation of the characteristics of a wine with a potential for aging. Wines with a potential for aging were characterized by low L* and H* and high C* values, a high astringency and a higher concentration of anthocyanins and polyphenol. In a second experiment, 34 wine professionals performed three potential for aging binary sorting task based on (1) visual assessment only, (2) olfacto-gustatory assessment only and (3) overall assessment (visual plus in-mouth). Results showed that the sensory modalities tested were complementary and that visual or olfacto-gustatory assessments alone were not sufficient to explain overall judgments of aging potential.  相似文献

Astringency is a sensory attribute, related to the quality and mouthfeel of red wines. However, the origin of astringency sub-qualities, such as the typical drying astringency found in immature grapes, is still unknown. Astringency of red wines with similar tannin content but different astringency sub-qualities, from different harvest dates, is studied. Astringency was characterised in terms of friction coefficient, polyphenol content, sensory analysis and tannin/salivary–proteins aggregates characterisation. A different evolution during ripening was found for both Cabernet Sauvignon and Carménère, and tannin–protein aggregates showed differences in size, shape and surface. The velvety sub-quality appears to be related to aggregates with low precipitation, and with specific surface characteristics as roundness and Feret diameter. Results from this work propose an effect of aggregates on sensory perception and opens the possibility to explore their effect on oral lubrication.  相似文献

Epidemiological data indicate that moderate red wine consumption leads to less coronary heart disease and shows anti-carcinogenic effects. Especially, red wine phenolics have been linked to these effects. Sixty-seven red wines from the Hungarian Villány region, of vintages from 1996 to 2003 were analysed for their polyphenolic and anthocyanin composition by means of RP-HPLC/UV–Vis. Varieties with generally high concentrations of polyphenols are Kékfrankos, Merlot and Zweigelt, while anthocyanin content was highest in Shiraz, Oportó, Kékfrankos and Zweigelt. In agreement with other authors, our results show that trans-resveratrol content is mainly dependent on variety and vintage year. Principal component analysis (PCA) revealed that flavan-3-ols and delphinidin- and petunidin-3-glucosides are mainly responsible for the separation of wines according to polyphenolic composition. We could not discriminate between varieties or wineries based on polyphenol content, but could for vintage years.  相似文献

Two red wines with a very high ethanol content were partially dealcoholized by reverse osmosis, so that the influence of this technique on wine color, chemical composition and sensory quality could be studied. No statistically significant differences were found in pH, color intensity, total phenolic index, proanthocyanidin concentration and their mean degree of polymerization between control wines and partially dealcoholized wines (?1 and ?2 vol. %). Some slight but significant differences were found in titratable acidity, anthocyanins, CIELab coordinates and polysaccharides. However, these differences were really quite small and only significant in a few cases. Moreover, a trained panel of tasters had severe difficulty in distinguishing between control and partially dealcoholized wines in triangular tests, and results were statistically significant only in some of the comparisons. It is concluded that this technique can be very useful for the partial dealcoholization of red wines because they hardly alter their composition and sensory characteristics.  相似文献

Polyphenols are an important fraction of the non-volatile components in the red wine matrix, and they are influenced in quantity and composition at all stages from the grape growing conditions until the time the wine is consumed. Evidence of their interaction with volatiles has been found, and this should affect wine flavour. A range of 12 commercial Spanish red wines from different regions and ages was analysed for their sensory properties, volatile composition in solution and headspace, and their non-volatile phenolic components. Maturation was the most important effect on sensory perception, while the chemical data showed also individual differences between the wines and their regions of production. Headspace volatiles and the phenolic fraction showed better correlations with the sensory perception, but volatiles in solution did not give a good prediction, though there were changes related to maturation. Some flavour components showed changes in their volatile behaviour in the matured wines. This supports the hypothesis that changes in the behaviour of the volatile fraction are related to the evolution of phenolic compounds.  相似文献
