This paper provides an estimate of the weekly intake of total mercury (THg) and methyl mercury (MeHg) from consumption of fish from the Sagua la Grande River, Villa Clara, Cuba, by determining the THg levels in different fish species. The levels varied between 0.143 and 0.484 μg g?1 on a fresh weight basis. None of the analysed fish was found to have levels above the national and international regulatory levels, although THg levels over 0.2 μg g?1, the threshold concentration established by the World Health Organization (WHO) for the consumption by vulnerable population groups, were found in 75% of samples. The MeHg level was found to be 84% of the THg content. A Food Frequency Survey was given to 127 townspeople to estimate river fish consumption. The weekly intake of MeHg was found to be greater than the value established by the provisional tolerable weekly intake (PTWI) in 50% of children, in 80% of pregnant women, and in 75% of women in childbearing age. These weekly intakes can represent an important risk to the population's health, especially for vulnerable groups.  相似文献

The Pearl River Delta (PRD) is located in the Southern part of China and is the main region for fish culture in Guangdong Province. In order to assess the potential health risks associated with dietary consumption of mercury, hair samples from 91 urban, town and fishing village residents, 37 species of fish, cereal, vegetables, and meat samples were collected. The average total mercury (THg) and methylmercury (MeHg) concentrations in hair were 1.08 ± 0.94 and 0.58 ± 0.59 μg/g, respectively. Daily Hg intake via fish consumption is significantly correlated with THg and MeHg accumulated in human hair (r = 0.48, p < 0.01; r = 0.43, p < 0.01). The estimated daily intake of Hg via different food types showed that both fish and cereal consumption were the two main routes of Hg exposure for residents in the sampling areas. Besides food intake, smoking was also an important source for daily THg intake in the smoke group, contributing 11–18% to EDI of THg.  相似文献

Fish consumption today is widely recognized as highly beneficial since it constitutes a good source of several essential nutrients, such as selenium and polyunsaturated fatty acids (n-3 PUFA). However, fish can also contain contaminants such as mercury, which make the consumer, especially pregnant women, confused about the risk–benefit balance associated with fish consumption. This is particularly true for tropical fish species for which little information is available. We have previously reported that some Bermudian neonates had elevated mercury in their umbilical blood compared with international guidelines. The objective of this study was to give precise and balanced information on the content of mercury, selenium and PUFA in the most consumed fish species in Bermuda. In 2003 and 2006, a total of 307 fish were collected from 43 fish species and 351 samples were analysed (305 flesh samples, 44 liver samples, one roe and one fat sample) by inductively coupled plasma-mass spectrometry (ICP-MS) (metals) and high-resolution gas chromatography (HRGC) (fatty acids). Results show that mercury varies among species from 0.03 to 3.3 µg g?1 and that it is possible for at-risk groups such as pregnant women to make informed choices concerning fish consumption, e.g. maximizing fish species rich in nutrients and low in mercury.  相似文献

Chemical analyses were performed on 12 of the most popular varieties of canned fish on the Polish market. The contents of the nutritive substances of canned fish (protein, micro and macroelements, vitamins A1, D3, E, and fatty acids) and certain contaminants were determined. It was confirmed that canned fish is a good source of digestible proteins, fluoride, iodine, selenium, and vitamin D3. The fundamental nutritive benefit of processed fish is the highly advantageous fatty acid composition, which imparts healthful effects. The high content of long-chained polyunsaturated fatty acids, which is not noted in other food products, is especially important.  相似文献

Flesh quality of market-size farmed and wild British Columbia salmon   总被引:2,自引:0,他引:2  
This study compared the flesh quality of farmed and wild sources of British Columbia (BC) salmon with respect to concentrations of polychlorinated biphenyl compounds, polychlorinated dibenzodioxins/dibenzofurans and their associated toxic equivalents, total mercury (THg), methylmercury (MeHg), and selected fatty acids of known importance for human health viz., omega-3 (n-3) highly unsaturated fatty acids (n-3 HUFAs) and (n-6) fatty acids. Skinned fillets from known sources of farmed Atlantic, coho, and chinook salmon (n = 110) and wild coho, chinook, chum, sockeye, and pink salmon (n = 91) were examined. Atlantic salmon contained higher PCB concentrations (means, 28-38 ng/g) than farmed coho or chinook salmon, and levels in these latter species were similar to those in wild counterparts (means, 2.8-13.7 ng/g). PCB levels in Atlantic salmon flesh were, nevertheless, 53-71-fold less than the level of concern for human consumption of fish, i.e., 2000 ng/g as established by Health Canada and the U.S. Food and Drug Administration (US-FDA). Similarly, THg and MeHg levels in all samples were well below the Health Canada guideline (0.5 microg/g) and the US-FDA action level (1.0 microg/g). On average, THg in farmed salmon (0.021 microg/g) was similar to or lower than wild salmon (0.013-0.077 microg/g). Atlantic salmon were a richer source (mean, 2.34 g/100 g fillet) of n-3 HUFAs than the other farmed and wild sources of salmon examined (means, 0.39-1.17 g/100 g). The present findings support the recommended weekly consumption guidelines for oily fish species (includes all BC salmon sources) for cardio-protective benefits as made by the American Heart Association and the UK Food Standards Agency.  相似文献

This study characterized distribution patterns of monomethyl mercury (MeHg) and areal mass of total mercury (THg) and MeHg across U.S. upland forests. MeHg concentrations increased from surface litter (average: 0.14 μg kg(-1)) to intermediate (0.47 μg kg(-1)) and deeper, decomposed litter (1.43 μg kg(-1)). MeHg concentrations were lower in soils (0.10 μg kg(-1) at 0-20 cm depth; 0.06 μg kg(-1) at >20 cm depth). Ratios of MeHg to THg were higher in litter compared to soils. In soils, MeHg concentrations positively correlated with THg across all sites, and MeHg concentrations also increased with C content and latitude. THg areal mass ranged from 41.6 g ha(-1) to 268.8 g ha(-1). Largest THg mass at all sites was sequestered in soils (average of 91%), followed by litter (8%) and aboveground biomass (<1%). MeHg mass (litter plus soils only) ranged from 75 to 443 mg ha(-1), of which 88% was found in soils. Both THg and MeHg mass correlated with latitude, with average mass increases of 10.6 g ha(-1) (THg) and 20 μg ha(-1) (MeHg) per degree latitude, indicating that highest THg and MeHg accumulation in upland forests are expected in northern sites.  相似文献

Maternal fish consumption brings both risks and benefits to the fetus from the standpoint of methylmercury (MeHg) and n-3 PUFA (polyunsaturated fatty acids). MeHg is one of the most risky substances to come through fish consumption, and mercury concentrations in red blood cells (RBC-Hg) are the best biomarker of MeHg exposure. Docosahexaenoic acid (DHA, C22:6n-3), which is one of the most important fatty acids for normal brain development and function, is also derived from fish consumption. Our objective in this study was to examine the relationships between RBC-Hg and plasma fatty acid composition in mother and fetus at parturition. Venous blood samples were collected from 63 pairs of mothers and fetuses (umbilical cord blood) at delivery. In all cases, fetal RBC-Hg levels were higher than maternal RBC-Hg levels. The geometric mean of fetal RBC-Hg was 13.4 ng/g, which was significantly (p < 0.01) higher than that of maternal RBC-Hg (8.41 ng/g). While the average fetal/maternal RBC-Hg ratio was 1.6, the individual ratios varied from 1.08 to 2.19, suggesting considerable individual differences in MeHg concentrations between maternal and fetal circulations at delivery. A significant correlation was observed between maternal and fetal DHA concentrations (r = 0.37, p < 0.01). Further, a significant correlation was observed between RBC-Hg and plasma DHA in fetus (r = 0.35, p < 0.01). These results confirm that both MeHg and DHA which originated from fish consumption transferred from maternal to fetal circulation and existed in the fetal circulation with a positive correlation. Pregnant women in particular need not give up eating fish to obtain such benefits. However, they would do well to at least consume smaller fish, which contain less MeHg, thereby balancing the risks and benefits from fish comsumption.  相似文献

Juvenile, red hybrid tilapia were fed diets containing cod liver oil (0%, 4%, 8%, 12% of total diet) substituted against corn oil. After 10 weeks, no significant differences between treatments were seen in weight gain, specific growth rate, feed conversion ratio, whole body or dorsal muscle (fillet) proximate composition. Gas chromatography revealed significant differences in the total n-3 content and fatty acid profiles of dorsal muscle. The total n-3 content of dorsal muscle increased from 7.6% to 18.6%, total n-6 content fell from 37.5% to 12.9% and docosahexanaenoic acid increased from 5.8–16.1% of total fatty acids, in fish fed 0% and 12% fish oil, respectively. The retention of eicosapentaenoic acid was low in all dietary groups, possibly indicating selective use as a substrate for β-oxidation. The results demonstrate the potential to enhance the total n-3 fatty acids and docosahexaenoic acid in tilapia fillets by increasing dietary fish oil.  相似文献

The rate of methylmercury (MeHg) elimination by fish is important in determining the extent of bioaccumulation and for predicting recovery times of MeHg-contaminated fisheries. Rates of MeHg elimination remain uncertain in existing bioaccumulation models due to a lack of field studies. We addressed this problem by monitoring fish that had naturally accumulated isotopically enriched MeHg (spike MeHg) during a whole-ecosystem experiment. We transported yellow perch (Perca flavescens) from the experimental lake to an untreated lake and monitored spike total mercury (THg, most of which was MeHg) losses over 440 d. Spike THg was distributed among fish tissues in a similar way as ambient THg (background non-spike THg). We observed rapid loss of spike THg from liver and other visceral tissues (approximately 90 d) followed by a plateau. Subsequently, there was prolonged redistribution of spike THg into muscle (180 d). Loss of spike THg from the whole fish occurred > 5 times slower (half-life of 489 d) than in past laboratory studies using this species. We determined that MeHg bioaccumulation models with laboratory-based elimination rates produced faster losses than those observed in wild fish. The present findings provide support for refining elimination rates in MeHg models and show the importance of examining biological processes under natural conditions.  相似文献

The proximate compositions and fatty acid profiles of the flesh of the fresh water fish zander (Sander lucioperca) obtained from Eğirdir Lake and from Seyhan Dam Lake were compared. The crude protein (18.8–18.1%), ash (1.37–0.75), and dry matter (20.67–20.09) contents of fish in Seyhan Dam Lake were observed to be higher than those in the other lake. Zander in Seyhan Dam Lake had a significantly (p < 0.05) higher lipid content than its Eğirdir counterpart. Differences were also observed in the fatty acid profiles. The percentages of total saturated fatty acids (SFA) and total monounsaturated fatty acids (MUFA) were higher in the zander in Seyhan Dam Lake than in Eğirdir Lake, whereas the corresponding total polyunsaturated fatty acids (PUFA) content was lower. Moreover, the fatty acid composition of these fish showed a relatively high ratio of PUFA/SFA (1.00). Both zanders showed palmitic acid, C16:0, to be predominant, (19.6–20.8%), followed by oleic acid, C 18:1 n  9, (19.2–13.4%).The data obtained indicate that the % composition of n  3 PUFAs is greater in the flesh of zander in Eğirdir Lake. This finding is in compliance with the fact that n  3 fatty acids in fish living in cold climatic conditions have a higher % composition. It was concluded that the consumption of zander, widely found in Eğirdir Lake and having higher % composition of n  3 PUFAs than those caught from Seyhan Dam Lake, is more beneficial for human health.  相似文献

The forest canopy was an important contributor to fluxes of methyl mercury (MeHg) and total mercury (THg) to the forest floor of boreal uplands and wetlands and potentially to downstream lakes, at the Experimental Lakes Area (ELA), northwestern Ontario. The estimated fluxes of MeHg and THg in throughfall plus litterfall below the forest canopy were 2 and 3 times greater than annual fluxes by direct wet deposition of MeHg (0.9 mg of MeHg ha(-1)) and THg (71 mg of THg ha(-1)). Almost all of the increased flux of MeHg and THg under the forest canopy occurred as litterfall (0.14-1.3 mg of MeHg ha(-1) yr(-1) and 110-220 mg of THg ha(-1) yr(-1)). Throughfall added no MeHg and approximately 9 mg of THg ha(-1) yr(-1) to wet deposition at ELA, unlike in other regions of the world where atmospheric deposition was more heavily contaminated. These data suggest that dry deposition of Hg on foliage as an aerosol or reactive gaseous Hg (RGM) species is low at ELA, a finding supported by preliminary measurements of RGM there. Annual total deposition from throughfall and litterfall under a fire-regenerated 19-yr-old jack pine/birch forest was 1.7 mg of MeHg ha(-1) and 200 mg of THg ha(-1). We found that average annual accumulation of MeHg and THg in the surficial litter/fungal layer of soils since the last forest fire varied between 0.6 and 1.6 mg of MeHg ha(-1) and between 130 and 590 mg of THg ha(-1) among sites differing in drainage and soil moisture. When soil Hg accumulation sites were matched with similar sites where litterfall and throughfall were collected, measured fluxes of THg to the forest floor (sources) were similar to our estimates of longterm soil accumulation rates (sinks), suggesting that the Hg in litterfall and throughfall is a new and not a recycled input of Hg to forested ecosystems. However, further research is required to determine the proportion of Hg in litterfall that is being biogeochemically recycled within forest and wetland ecosystems and, thus, does not represent new inputs to the forest ecosystem.  相似文献

This study addressed determinations of the fatty acid profile of muscle, liver and mesenteric fat in European perch originating from natural aquifers and from intensive rearing in a closed circuit on an artificial feed mixture. The qualitative composition of fatty acids was identical in both groups of perch, except for 16:4 acid identified exclusively in the reared perch. The study demonstrated equal concentrations of saturated (SFA) and unsaturated (UFA) fatty acids in muscles, liver and mesenteric fat of both groups of perch. The wild fish, however, were characterised by lower concentrations of monoenoic (MUFA) and higher concentrations of polyenoic (PUFA) fatty acids. Analyses also demonstrated similar contents of n − 3 PUFA in muscles and their diversified concentrations in liver and mesenteric fat (higher in the wild fish), as well as a higher content of n − 6 PUFA in all samples. The lower content of MUFA in the wild perch was mainly due to lower concentrations of cis18:1 n − 9 and 20:1 n − 9, whereas the higher content of n − 3 PUFA was due to a higher concentration of DHA, and the higher content of n − 6 PUFA was due to a higher concentration of arachidonic acid (AA). The biggest differences between wild and reared perch were detected for AA. The wild and reared perch were also found to differ in the n − 3/n − 6 ratio (higher in the reared fish) and to have similar values for atherogenic index (AI) (except for liver and mesenteric fat) and thrombogenicity index (TI).  相似文献

The objective of this study was to compare the composition of fatty acids stored in the various parts of swordfish. Muscle and organ sections of a series of swordfish samples were collected. Their chemical analysis allowed the classification of swordfish as a semi-fatty fish, with its byproducts totalling 35.6% of the total fatty acids (TFA) and its white and red muscles (MR) 7.2%. The highest contents were found in the liver (26%), the gonads (4.7%) and the red muscle (RM) (4.5%). The UFA/SFA ratio as recommended by nutritionists is 3; in the liver, skin and RM samples this ratio was, respectively, 3.5, 2.8 and 2.7. There is a high level of unsaturated fatty acids (UFA) in swordfish. More than 40% of the muscular tissues are made up of polyunsaturated fatty acids (PUFA) of the n-3 series (EPA + DHA). The byproducts contain more than 30% of monounsaturated acids characterised by the fatty acids of the n-9 series and particularly by oleic acid.  相似文献

The fatty acid compositions and the positional distributions of fatty acid in triacylglycerol (TAGs) and phospholipid (PLs) fractions of four cultured freshwater fish species (Salmo trutta, Ictalurus punctatus, Ictalurus melas and Micropterus salmoides) were investigated. As regards the TAGs fraction, the S. trutta (trout) and I. punctatus (channel catfish) species had the highest % content in n3 polyunsaturated fatty acids (PUFAs) and the lowest n6/n3 ratio; this ratio resulted always lower than 1 in all the considered fish species. The PLs fraction of the considered fish was very interesting because of the high percentage of PUFAs, both in phosphatidylcholines and in phosphatidylethanolamines. The fatty acid distribution among the three sn-positions of the glycerol backbone was non-random; generally, both n6 and n3 PUFAs were mainly distributed between sn-2- and sn-3-positions of TAGs while the contents in sn-1-position were generally lower; in PLs fraction these fatty acids preferred the sn-2-position.  相似文献

The overall objectives of this study were to examine the effects of flooding on the decomposition and mercury (Hg) content of tissues from plants common to boreal upland forests at the Experimental Lakes Area in northwestern Ontario. We used litterbags to study changes in total Hg (THg), methyl Hg (MeHg), carbon (C), and nitrogen (N) in 12 different plant tissues (birch, alder, blueberry, and Labrador tea leaves, bunchberry plants, jack pine needles, Sphagnum spp., Polytrichum spp., and Pleurozium spp. bryophytes, lichen, and fresh and extensively decomposed wood) placed on unflooded boreal forest soils and in experimentally created reservoirs over an approximately 800 day period. Rates of decomposition (as indicated by differences in the percentage of C and N mass left in the tissues over time) were slower in plant tissues placed on unflooded soils compared to the same tissues that were inundated in reservoirs. Depending on tissue type and initial THg concentrations, decomposing litter on both unflooded and flooded soils was either a source or a sink for THg. Tissues where initial THg concentrations were greater than 30 ng g(-1) represented a source of THg to the surrounding environment, whereas tissues that had initial concentrations of less than 30 ng g(-1) gained THg mass. Initial rates of change in THg were more rapid in plant tissues placed in reservoirs compared to the same plant tissue placed on unflooded soils, but there were no differences in final THg masses after approximately 800 days. Plant tissues placed in reservoirs exhibited large increases in MeHg mass, whereas MeHg mass decreased in the same plants placed on unflooded soils. This is the first study examining THg and MeHg cycling in decomposing plants in upland boreal forests and reservoirs.  相似文献

Total (TL), neutral (NL) and phospholipid (PL) amounts and fatty acid (FA) composition of female Salmo trutta caspius, Salmo trutta labrax and Salmo trutta macrostigma were investigated during one year. Twenty-three FAs were identified in both NLs and PLs. The principal FAs of both fractions were palmitic acid in saturated fatty acid, oleic acid in monounsaturated fatty acid, docosahexaenoic acid (DHA) in n-3 polyunsaturated fatty acids (n-3 PUFAs) and linoleic acid in n-6 PUFAs. The highest values for TLs, NLs and PLs were found in winter. As a general trend, the highest n-3/n-6 ratios and eicosapentaenoic acid (EPA) + DHA amounts were found in the winter and this coincided with the lowest gonado-somatic index.  相似文献

Different brands of sardines canned in soybean oil and tomato sauce, that are commercialized in Brazil, had their proximate composition, cholesterol content and fatty acids composition analyzed. Protein contents were equivalent to the values found for sardines in natura, ranging from 19.8 to 24.4%. High variations of the total lipids content (5.30–16.8%) were verified; the highest levels were found for sardines canned in soybean oil. The cholesterol content ranged from 50.4 to 65.1 mg/100 g. The highest levels of essential C18:2n  6 and C18:3n  3 fatty acids were found in sardines canned in soybean oil. The EPA (C20:5n  3) and DHA (C22:6n  3) concentrations ranged from 5.39 to 15.1% and from 3.89% to 9.51%, respectively, and the highest levels were observed in sardines canned in tomato sauce.  相似文献

The total fat contents and the fatty acid compositions of three common Mediterranean fish, namely sardine (Sardina pilchardus), anchovy (Engraulis encrasicholus) and picarel (Spicara smaris) were determined at bimonthly intervals for a one-year period. The purpose of this work was to study the seasonal variation of the fatty acids in the three fish that are some of the best sources of n − 3 fatty acids. The fat and fatty acid content of the investigated fish species show a significant seasonal dependency. Two of the fish (anchovy and picarel) have the highest fat content during the late winter – spring period. On the other hand, sardine shows the highest fat concentrations during the spring-early summer period. The fish that showed the highest variation in fatty acid composition was the anchovy. The sardine was found to be the best source of n − 3 fatty acids during the one-year period (35.35 g/100 g fatty acids). Finally the picarel had the highest oleic acid content (on average, 13.89/100 g fatty acids).  相似文献

A relevant farmed fish species (coho salmon; Oncorhynchus kisutch) was studied as a raw material for the canning process. The effects of preliminary chilling storage and thermal treatment (cooking and sterilisation) on the chemical constituents (lipids and non-protein nitrogen compounds) of the canned fish were analysed. An increasing previous chilling time led to an important autolysis (K value) development, and to an increasing formation of free fatty acids, and interaction compounds (fluorescence and browning assessments) (p < 0.05) in the canned product. The thermal treatment led to the formation of volatile amines (total and trimethylamine), free fatty acids, secondary lipid oxidation compounds (anisidine and thiobarbituric acid values) and interaction compounds in canned fish. Interaction compound assessment was found the most useful tool to study the lipid oxidation and non-enzymatic browning developments, while the K value showed to be an interesting index for assessing the freshness stage of the raw material employed.  相似文献
