The total lipids of whitefish flesh and roe averaged 3.0 and 9.8% fresh weight, respectively. Although neutral lipids dominated in both tissues the polar lipid content of fresh roe was unexceptionally high (2.5%). The fatty acid patterns of the total lipids from flesh and roe and of neutral lipids were similar to each other. Polyenoic acids constituted about half of the total fatty acids and monoenoic and saturated components existed in equal amounts. The calculated iodine values for the total lipids from flesh and roe indicated a slightly higher degree of unsaturation for roe fatty acids. The polar lipids were enriched in polyenoic and saturated fatty acids. Similarities in the composition and content of fatty acids from flesh and roe suggest that storage problems, apparent as a rancidity of roe products, may result from the high content of polar lipids readily hydrolysed during storage.  相似文献

The composition of hake flesh and hake liver phospholipids was determined by an hydrolytic procedure and by chromatography on silicic acid. The hydrolytic procedure involved determination of lecithin-choline, sphingornyelin-choline, lyso lecithin-choline, ethanolamine, serine, myo-inositol and the average equivalent weight of the liberated fatty acids. The composition of the flesh and liver phospholipids was very similar, the latter contained more sphingomyelins and cardiolipins at the expense of phosphatidyl choline. Phospholipid fatty acids had a markedly higher equivalent weight and unsaturation than the corresponding non-phosphorylated lipid fatty acids. The cephalin fractions contained more long chain polyunsaturated fatty acids, more stearic acid and less palmitic acid than the phosphatidyl choline fractions. Sphingomyelins were particularly rich in lignoceric and nervonic acid.  相似文献

The proximate composition, amino acid and fatty acid profiles, lipid classes and cholesterol and glycogen contents were determined in the edible part of red shrimp, Aristeus antennatus (Risso), pink shrimp, Parapenaeus longirostris (Lucas), and Norway lobster, Nephrops norvegicus (Linnaeus), in two distinct periods of the year. The proximate composition did not vary significantly between species or between periods of sampling. Significant differences in glycogen content were obtained between winter and summer; the lowest values were attained in winter (1.2, 1.1 and 1.0% wet weight for red shrimp, pink shrimp and Norway lobster respectively). With the exception of Norway lobster, an opposite trend was obtained for cholesterol content, ie lower values in summer (60.8 and 57.8 mg per 100 g wet weight for red shrimp and pink shrimp respectively). The major essential amino acids (EAA) were arginine, lysine and leucine and the limiting amino acid was methionine in all three crustacean species. The most important non‐essential amino acids (NEAA) were glutamic acid, aspartic acid, proline and glycine. In respect to lipid classes, phospholipids and free cholesterol predominated. The major fatty acids were 16:0, 18:1n‐9, 20:5n‐3 and 22:6n‐3. The polyunsaturated fraction was dominant (42.1–48.4%), followed by the monounsaturated (26.3–34.6%) and saturated (22.9–27.4%) fatty acids. In conclusion, the nutritional quality of these shellfish species is similar, they are valuable protein and lipid sources for the human diet and are adequate elements of the traditional Portuguese diet. 以泥鳅鱼籽为原料,对其基本营养成分进行测定。采用正己烷-异丙醇提取法得到鱼籽油,对鱼籽油的理化指标及脂肪酸组成进行了测定,并与泥鳅鱼肉、鲫鱼籽、鲟鱼籽、林蛙卵以及母乳的油脂进行比较。结果表明:泥鳅鱼籽的营养成分为水分含量64.69%、蛋白质含量24.49%、脂肪含量5.62%、灰分含量1.56%;泥鳅鱼籽油理化指标为密度0.901 4 g/mL、折光率1.463 8、碘值105 g I/100 g、皂化值134 mg KOH/g;气相色谱-质谱联用分析可知,泥鳅鱼籽中不饱和脂肪酸含量为71.30%,其中油酸和亚油酸含量较高,分别为28.02%和24.51%。通过与泥鳅鱼肉、鲫鱼籽、鲟鱼籽、林蛙卵以及母乳的油脂比较,发现泥鳅鱼籽和母乳的饱和脂肪酸、单不饱和脂肪酸、多不饱和脂肪酸比例基本一致,非常接近健康食用油黄金比例1∶1∶1,而且泥鳅鱼籽的主要脂肪酸组成和母乳的基本相同,具有较高的开发和利用价值。  相似文献

不同的烹调方式使猪肉中的脂肪含量和脂肪酸组成发生变化。以猪背最长肌为原料,通过4种常见的烹调方式:蒸、煮、微波、烤,探究脂肪酸的变化规律,进而指导人们的烹调方式。采用改进的Folch法提取烹调后猪肉中的脂肪,用氨丙基硅胶固相萃取小柱分离脂肪中的甘油三酯和磷脂,并采用气相色谱,以十三烷酸甲酯为内标定量分析总脂、甘油三酯及磷脂的脂肪酸组成。结果表明,与对照组相比,蒸、微波、煮和烤对猪肉脂肪中甘油三酯的脂肪酸组成无显著影响。而微波、煮和烤均使磷脂的脂肪酸组成发生显著性变化,其中饱和脂肪酸(SFA)和反式脂肪酸(TFA)的含量均显著增加,而单不饱和脂肪酸(MUFA)与多不饱和脂肪酸(PUFA)的含量明显减少,变化最明显的为烤制;蒸制对磷脂的脂肪酸组成影响最小,仅SFA和PUFA发生一定程度的变化;总脂肪酸组成差异显著,其含量变化主要是由磷脂的变化引起的。结论:烹调对磷脂影响显著;蒸制对猪肉脂肪的脂肪酸保护效果最好,烤制易破坏脂肪酸,从而降低营养价值。  相似文献

Total lipids, phospholipids (PL), free fatty acids, TBA, carbonyl values, fatty acids and amino acid composition of filleted sucker (FS) and mechanically deboned minced sucker (MDMS), were determined. Higher PL concentration (534 mg/100 g versus 370 mg/100 g) and higher carbonyl values (0.89 μmoles/g versus 0.61 μmoles/g) were found in MDMS. There were no significant differences between FS and MDMS in fatty acid composition of total lipid and phospholipids. The protein content and amino acid composition of FS and MDMS were similar.  相似文献

研究了摄食不同来源磷脂对大鼠脂质代谢及其脑内磷脂脂肪酸组成的影响。雄性SD大鼠按体重随机分为大豆油对照组(添加9%)、牛乳磷脂组(添加5%)、大豆磷脂组(添加5%)、蛋黄磷脂组(添加5%),喂食3周。检测了血清总胆固醇(TC)、甘油三酯(TG)、高密度脂蛋白胆固醇(HDL-C)、游离脂肪酸(FFA)及肝脏TC、TG、磷脂(PL)的含量,并用气相色谱法测定了脑内磷脂脂肪酸的组成变化。结果显示:与大豆油对照组相比,3种磷脂均不同程度提高了大鼠体重、脏器指数,蛋黄磷脂效果显著;3种磷脂不同程度降低了血清TC、TG和FFA含量,牛乳磷脂降低血清FFA显著,大豆磷脂降低血清TC、TG显著,蛋黄磷脂降低FFA显著,大豆磷脂显著提升了血清HDL-C含量;3种磷脂不同程度降低了肝脏TC、TG、PL含量,牛乳磷脂与大豆磷脂降低肝脏TG、TC显著,而蛋黄磷脂降低肝脏TG显著;3种磷脂对脑内磷脂脂肪酸组成的影响各不相同,牛乳磷脂显著提高了脑内磷脂饱和脂肪酸含量,而大豆磷脂和蛋黄磷脂提高了DHA等多不饱和脂肪酸含量。研究表明,3种磷脂均有降血脂、肝脂作用,以大豆磷脂作用尤为明显,大豆磷脂和蛋黄磷脂的益智作用可能优于牛乳磷脂。  相似文献

The fatty acid composition in muscle (claw and breast) and hepatopancreas of the Blue Crab (Callinectes sapidus ) of the north-east Mediterranean were determined. Fatty acid compositions were analysed by gas chromatography. The results showed that the fatty acid profiles were significantly different between claw meat, breast meat and hepatopancreas of the crab. The percentage of total saturated fatty acids was higher in the hepatopancreas than in the claw or breast meats. The total n6 fatty acids were 8.61%, 7.80% and 5.34% in the hepatopancreas, claw meat and breast meat, respectively. The claw and breast meats contained significantly (P<0.05) higher amounts of total n3 fatty acids than did the hepatopancreas. The n3/n6 fatty acids ratio was higher in the breast meat than in the claw meat or the hepatopancreas.It is concluded that claw and breast meat are good sources of n3 PUFAs. Therefore, the results suggest that claw and breast meat of the blue crab are appropriate for human health.  相似文献

This study was designed to clarify the content of lipid classes and the fatty acid composition of total lipids (TL), sterol esters (SE), triacylglycerols (TG), phospholipids (PL), phosphatidylcholine (PC), and phosphatidylethanolamine (PE) of the Japanese fish roe products, Ikura, Tarako, Tobiko and Kazunoko. The TL, total cholesterol, TG, and PL content of Ikura were higher than those of Tarako, Tobiko and Kazunoko. Kazunoko had the lowest cholesterol content among these roe products. PC was the main component in the PL class of each fish roe product. The main fatty acids of all roe products were 16:0, 18:1n−9, 20:5n−3, and 22:6n−3. Docosahexaenoic acid (22:6n−3) was rich in the TL, SE, TG, PL, PC and PE fractions of all roe products. In particulars the 22:6n−3 percentage of PC and PE fractions in Tobiko were higher than those of Ikura, Tarako and Kazunoko. These results indicate that the lipid from fish roe products may be a useful food source for maintaining human health.  相似文献

The composition of octopus (Octopus vulgaris) phospholipids was determined by analysis of hydrolytic breakdown products and by chromatography on silicic acid. The most remarkable feature of octopus phospholipids was the high content (13%) of ceramide aminoethylphosphonic acid. In addition the phospholipids contained phosphatidylcholine (42%), phosphatidylethanolamine (30%), phosphatidylserine (5%), phosphatidylinositol (4%) and sphingomyelin (3%). The fatty acid distribution of the phospholipids and the non-phosphorylated lipids was determined by gas chromatography. The major saturated fatty acids in the phospholipids and non-phosphorylated lipids were 16:0 (24 and 23%, respectively) and 18:0 (10 and 15%, respectively). The major highly unsaturated fatty acids in phospholipids and non-phosphorylated lipids were 20:5 (18 and 7%, respectively) and 22:6 (23 and 9% respectively).  相似文献

Lipid composition of calf blood plasma, liver platelets, muscle, heart, and brain was measured, as affected by high dietary intake of linoleic acid from corn oil or of polyunsaturated fatty acids from fish oil concentrate. Plasma total lipids, phosphatidylcholine, and cholesteryl esters were reduced by corn oil and fish oil concentrate. Dietary fatty acid composition had no influence on percentage distribution of the major phospholipid components of liver, heart, muscle, and brain, but did alter the polyunsaturated fatty acid composition of major phospholipids in plasma, liver, platelets, muscle, and heart. In general, high linoleic acid intake increased linoleic acid and decreased oleic, arachidonic, and linolenic acids in tissue phospholipids, and fish oil concentrate high in eicosapentaenoic and docosahexaenoic acids increased phospholipid concentrations of these fatty acids. The fatty acid composition of brain phosphatidylcholine and phosphatidyl-ethanolamine was relatively resistant to dietary lipid alterations. The fatty acid changes in tissue phospholipids that resulted from dietary lipid alterations may have important implications in eicosanoid metabolism, and in the structure and function of cell membranes.  相似文献

To investigate the effect of antioxidants on lipid oxidation and fatty acid composition in pressurized pork, minced pork with or without 1% Na(2)EDTA was pressurized at 500MPa before 7days storage at 4°C. TBARS value, lipid content and fatty acid composition in untreated and high-pressure (HP) treated samples were analyzed. HP treatment induced marked increases in TBARS values and lipolysis of partial phospholipids causing an increase of free fatty acid content. Preferential hydrolysis for polyunsaturated fatty acids (PUFA) in phospholipids resulted in the percentage of PUFA in phospholipids decreasing markedly and thereby that in free fatty acids increasing significantly. Addition of 1% Na(2)EDTA to minced pork before HP significantly decreased the TBARS values in pressurized samples, but did not inhibit the lipolysis of phospholipids, causing the fatty acid composition of phospholipids and free fatty acids to change similarly to those samples without Na(2)EDTA.  相似文献

Lipid hydrolysis and changes in the lipid components during cold and frozen storage of various rainbow trout and whitefish roe products were investigated over a 1-year storage period.
Rainbow trout roe lipids were composed of about 51% phospholipids and 46% triglycerides. The respective percentages in whitefish roe were 31 and 66. During the cold storage of salted roe products both of these lipids were hydrolyzed, the majority of the free fatty acids being produced from triglycerides. Lipid hydrolysis in frozen and pasteurized roe was very slow.
Lecithin as the major phospholipid comprised about 90% and 61% of the total phospholipid in rainbow trout and whitefish roe, respectively. The remainder was composed mainly of cephalin since all the other components amounted to less than 2%. Cephalin was found more susceptible than lecithin to being hydrolyzed although equal or higher amounts of free fatty acids were released in the roe products from lecithin due to its abundance.  相似文献

研究不同部位兔肉的脂肪含量和脂肪酸组成的差异,以伊拉肉兔的肩胛肌、背腰肌、后腿肌和肝脏为原料,对比分析4 者脂肪含量和肌内总脂、甘油三酯、磷脂、游离脂肪的脂肪酸组成。测定结果表明:4 部位肌内总脂、甘油三酯、磷脂和游离脂肪酸含量均有显著差异(p<0.05),但甘油三酯和磷脂的脂肪酸组成在不同部位间的差异不显著(p>0.05),只有少数脂肪酸在肝脏中的含量与其他3 部位差异显著(p<0.05),而总脂肪酸、游离脂肪酸的组成在各部位间差异显著(p<0.05)。由于游离脂肪酸在肌内脂肪中含量较少,不足以对总脂肪酸组成产生显著影响,因此不同部位伊拉兔肉肌内脂肪含量和脂肪酸组成的显著差异主要是由肌内甘油三酯含量的显著差异引起的。  相似文献

Lipids were freshly extracted from earthworms from agricultural pasture land, and fatty acid compositiona analyses were carried out on the total lipids; phospholipids; triglycerides; free fatty acids; mixed sterol esters, wax esters, free methyl esters, etc.; glycolipids; and neutrallipids. A wide variety of fatty acids ranging from C10 to C32 were identified. In the fatty acids of the total lipids, polyunsaturated constituents predominated in amount, while monomethyl branched, isoprenoid and n-odd-numbered acids were present in appreciable proportions. Eicosa-5,8,11,14,17-pentaenoic acid and arachidonic acid occurred at higher levels than any other components and were located mostly in the phospholipids. Significant contents of linoleic and linolenic acids were also detected. Earthworms collected in spring had a fatty acid composition which differed noticeably from that of worms from other seasons. The content of lauric acid during spring was much higher than that normally found in animals or pasture plants. The composition of the free fatty acids indicated that these components were the products of lipolysis and were derived from all the lipid classes. The results of this investigation suggest that the diet of local earthworms, which is reported to consist mainly of dead plant material, is supplemented by living and dead microorganisms from ingested soil.  相似文献

研究了金华火腿股二头肌 (bicepsfemoris)肌内脂肪在加工过程中不同时期的水解变化情况。肌内脂使用氯仿 甲醇溶液提取 ,采用固相萃取法将中性脂 (主要为甘油脂 )、游离脂肪酸和磷脂分离 ,用毛细管气相色谱分别分析甘油脂、游离脂肪酸和磷脂脂肪酸的种类与比例。通过比较不同时期样品的色谱结果 ,发现在金华火腿原料中磷脂脂肪酸的不饱和脂肪酸百分含量较高 ,尤其是多不饱和脂肪酸的含量高达 4 9 2 2 %。且在金华火腿成熟过程中 ,磷脂水解作用显著 ,而甘油脂脂肪酸百分比例比较稳定 ,说明甘油脂水解作用相对较弱。  相似文献

To investigate the effect of high-pressure (HP) treatment on lipid oxidation and fatty acid composition of intramuscular lipid in pork, the longissimus muscles from Rongchang (RC) pig were pressurized at 200, 350 and 500 MPa for 20 min at 20 °C prior to 7 days storage at 4 °C. The changes in TBARS number, lipid content and fatty acid composition of total intramuscular lipids, phospholipids, triglycerides and free fatty acids in untreated and HP treated samples were analyzed. HP treatment had no significant effect on the content and fatty acid composition of total lipids and triglycerides in the samples, but treatment at 350 MPa and above led to marked increases in TBARS values and lipolysis of partial phospholipids causing a correlative increase of free fatty acid content. A preferential hydrolysis for polyunsaturated fatty acids (PUFA) in phospholipids was observed, which resulted in the percentage of PUFA in phospholipids decreasing markedly and thereby that in free fatty acids increasing significantly.  相似文献

SUMMARY— The lipids extracted from five different muscles of four Angus steers were separated into phospholipids, free fatty acids, and a fraction containing the triglycerides. The phospholipid concentration for a given muscle was relatively constant in all four animals. The concentration of total lipids varied considerably more than that of phospholipids. The diaphragm had the highest total lipid and phospholipid content. The diaphragm also differed from the other muscles studied in the palmitic and steak acid concentration of the phospholipids. The free fatty acid concentration varied from muscle to muscle, however, two distinct patterns of free fatty acid distribution were observed in the four animals. The triglycerides and phospholipids differed in the qualitative composition of their fatty acids. Approximately 20% of the phospholipid fatty acids, but only a trace of triglyceride fatty acids, were above C20. The phospholipids contained a much greater amount of polyunsaturated acids than the triglycerides.  相似文献

Changes in the fatty acid composition of egg-yolk fat of hens fed diets with increasing fish meal content are studied by total fatty acid analysis. The fatty acid composition of the major lipid fractions in egg-yolk fat after feeding a high-level fish meal diet was determined by a combination of thin layer chromatography (t.l.c.) and gas-liquid chromatography (g.l.c.) The changes produced show a fatty acid pattern similar to those of the diets themselves. Long-chain polyunsaturated fatty acids are deposited preferentially in the phospholipids, reaching the highest concentration in cephalin and lecithin.  相似文献

分析比较新疆拜城油鸡和南京土鸡鸡皮总脂质和磷脂的含量及脂肪酸组成。用溶剂提取法分别提取2 种鸡皮的总脂质和磷脂,将提取的脂质经甲酯化后,利用气相色谱-质谱分析其脂肪酸组成。结果显示,南京土鸡鸡皮总脂质含量和磷脂含量分别为35.56%和7.71%,拜城油鸡鸡皮中总脂质含量和磷脂含量分别为42.65%和8.95%,均高于南京土鸡。南京土鸡与拜城油鸡鸡皮总脂质中各含有25 种脂肪酸,主要包含油酸、亚油酸、棕榈酸、硬脂酸、棕榈烯酸;2 种鸡鸡皮磷脂中均含有10 种脂肪酸,主要包含棕榈酸、油酸、硬脂酸和亚油酸。2 种鸡的鸡皮油脂脂肪酸的种类相同,但各脂肪酸含量有所差异;脂肪酸饱和程度比例基本相似,但南京土鸡鸡皮磷脂中不饱和脂肪酸和亚油酸含量高于拜城油鸡。  相似文献
