木糖醇通常以植物中提取的木糖氢化还原生成,可作为良好的食糖替代品。人体摄入适量的木糖醇可有效调节新陈代谢。与其它食糖相比,木糖醇有许多独特的优点,如:给人清凉感;不易发酵,延长食品保质期;加热时不产生“美拉德”褐变反应,保持食品洁白鲜艳;有吸湿性,保持较柔食品的柔软性。木糖醇广泛应用于口香糖、糖果、巧克力、酸奶、饮料、焙烤食品和酒类等多种食品中,并可替代食糖用于餐饮中。目前,木糖醇技术指标全部采用国际FAO/WTO和FCCIV标准。 相似文献

玉米芯的酸水解液是木糖醇生产的重要原料,但是该水解液中含有糠醛、酚类等对后续微生物发酵有毒害作用的化合物。本研究从土壤中分离了一株似假丝酵母LF01,通过驯化和微胶囊包裹来提高其对水解液的抗性。结果表明通过多次驯化并进行包裹的假丝酵母LF04能在玉米芯水解液中不经任何脱毒处理发酵木糖生产木糖醇。在pH5.5 溶氧为 0.15vvm 的条件下发酵 88h,木糖转化率为 76%,木糖醇浓度达 61.768g/L。远高于其出发菌株。该结果表明采用该方法有望用于木糖醇的工业化生产。 相似文献

The interaction between aspartame, glucose and xylitol in aqueous model systems of pH 3.00 and containing potassium sorbate was studied. Potassium sorbate degradation diminished with the increment of aspartame level from 0.050 to 0.500 g/100 g of system. Xylitol was the humectant that minimized aspartame degradation and non-enzymatic browning development. In general, as expected, presence of aspartame, xylitol or glucose and their mixtures increased the sweetness and they also diminished the sourness of the systems. The addition of 0.050 g of aspartame/100 g of system to the system containing xylitol produced a synergistic effect on sweetness intensity. Based on that trend, it could be concluded that the use of more than one sweetener might allow diminishing the amount of each one of them to assure a specific sweet level.These results stand out the advantage of the use of xylitol as well as the importance of an appropriate choice of the additives and food ingredients to use in the formulation of modified products with lower sugar content to optimize their quality. 相似文献

天然甜味剂是从天然植物中提取出来的,在安全性和营养功能方面远好于人工合成的甜味剂.本文采用液相色谱串联质谱法测定了食品中甘露糖醇、麦芽糖、木糖醇、山梨糖醇的残留量,并采用选择离子检测进行阳性确证.液体试样用水超声提取,离心定容后,固体和半固体样品采用水溶解定容,再经固相萃取柱净化,样液经洗脱定容后,供液相色谱-质谱/质谱仪测定,外标法定量.本方法的最低检出限、线性范围和方法回收率分别为:0.10mg/kg、0.10~1000.0mg/kg和89.0~94.9%.本研究建立了食品中甘露糖醇、麦芽糖、木糖醇、山梨糖醇的检测方法,可以快速、灵敏、一次同时测定多个、多类别天然甜味剂及其阳性确证.也为打破国外技术性贸易壁垒、增强我国出口产品在国际市场竞争力提供了有力的保障. 相似文献

Xylitol is a pentahydroxy sugar-alcohol which exists in a very low quantity in fruits and vegetables (plums, strawberries, cauliflower, and pumpkin). On commercial scale, xylitol can be produced by chemical and biotechnological processes. Chemical production is costly and extensive in purification steps. However, biotechnological method utilizes agricultural and forestry wastes which offer the possibilities of economic production of xylitol by reducing required energy. The precursor xylose is produced from agricultural biomass by chemical and enzymatic hydrolysis and can be converted to xylitol primarily by yeast strain. Hydrolysis under acidic condition is the more commonly used practice influenced by various process parameters. Various fermentation process inhibitors are produced during chemical hydrolysis that reduce xylitol production, a detoxification step is, therefore, necessary. Biotechnological xylitol production is an integral process of microbial species belonging to Candida genus which is influenced by various process parameters such as pH, temperature, time, nitrogen source, and yeast extract level. Xylitol has application and potential for food and pharmaceutical industries. It is a functional sweetener as it has prebiotic effects which can reduce blood glucose, triglyceride, and cholesterol level. This review describes recent research developments related to bioproduction of xylitol from agricultural wastes, application, health, and safety issues. 相似文献
