This study focused on the exploration of the potentials of extracting antioxidants from peels and stems of yellow-fleshed and white cassava varieties. The effect of particle size (0.2 and 0.5 mm) and variety on the phenolic content and antioxidant activity was assessed. The peels of the yellow-fleshed cassava variety with a particle size of 0.2 mm showed the highest phenolic content with 681.5 GAE mg 100 g−1 and antioxidant activity of 19% and 425 μM TE g−1 dry matter using DPPH and FRAP assays respectively. The stems of the white cassava with a particle size of 0.2 mm exhibited high phenolic content (442.4 GAE mg 100 g−1) and antioxidant activity of 12.8% and 234 μM TE g−1, better than the stem of the yellow-fleshed cassava. These results indicate that phenolic and antioxidant extractions were influenced by variety, the plant parts and particle size for the antioxidant assays.  相似文献

The present study focuses on the extraction of phenolic compounds, anthocyanin and antioxidants from black jamun pulp by microwave and ultrasound assisted extraction process. The microwave-assisted extraction was carried out for 240 s at microwave power level of 100–400 W. The yield of total anthocyanin and total phenolic content in the microwave assisted extraction process at 400 W power level after an extraction period of 240 s was 8.197 mg of C3G g−1 and 37.671 40.632 mg GAE g−1, respectively. The ultrasound assisted extraction was performed at temperatures of 40, 50, 60, and 70 °C for 150 min. In the ultrasound assisted extraction at a sonication temperature of 70 °C, the yield of anthocyanin was 8.525 mg of C3G g−1, while the yield of the phenolic compound was 47.331 mg GAE g−1. The pseudo-second order model was found to be the most suitable model to represent the extraction kinetics of anthocyanin, phenolic compounds, and antioxidant activity of black jamun pulp. The effective diffusion coefficient for ultrasound assisted extraction of phenolic components, anthocyanin, and antioxidant activity in the temperature range of 40-70 °C was 5.704× 10−12–10.515 10−12, 2.485× 10−12 -8.507× 10−12, and 2.061× 10−12–11.977 × 10−12 m2.s−1 respectively. The negative Gibbs free energy change values for extraction of phenolic compounds and anthocyanin specified that the reaction was feasible and spontaneous. Thermodynamic parameters such as positive enthalpy change and positive entropy change indicated that the ultrasound assisted extraction process was endothermic and irreversible in nature.  相似文献

The seasonal variation of key bioactivities in ethyl acetate extracts of chub mackerel (Scomber colias), an underutilised fish species, was evaluated through a complete monthly sampling. The phenolic content had a seasonal variation, ranging from 39 ± 5 mg GAE/100 g ww (February) to 340 ± 6 mg GAE/100 g ww (October). Ferric reducing antioxidant power (FRAP) increased from 1.3 ± 0.4 μmol Fe2+ Eq/g ww (January) to 10.3 ± 0.1 μmol Fe2+ Eq/g ww (September). ABTS had no antioxidant activity between June and December, being the highest value in February, 64.3 ± 6.3 μmol Trolox Eq/100 g ww. For phenolic content and FRAP, there was a strong seasonality, which was similar to that of the lipid content. Therefore, correlations were high, being R2 0.95 for lipid vs. phenolic contents. Anti-inflammatory activity did not show large changes throughout most part of the year, remaining high in the 70–80% of COX-2 inhibition. This finding and the seasonality of the antioxidant properties warrant further research.  相似文献

Vitamin C, phenolic and flavonoid contents along with enzymatic and antioxidant activities were determined in germinated mung bean (Vigna radiate). Elevated levels of vitamin C 72.31 ± 0.62 mg/100 g FW and flavonoid content 85.57 ± 0.59 mg CE/100 g FW were estimated for euphylla after 6 days of germination. Moreover, maximum peroxyl radical scavenging activity 645.4 ± 28.5 μmol ASA equiv./100 g FW was also determined in euphylla. However, seed coat has the highest content of phenolic content (568.4 ± 8.8 mg GAE/100 g FW), whereas cotyledon depicted the highest ascorbate oxidase and peroxidase activities (396.5 ± 4.0 and 548.4 ± 2.8 min?1 g?1 FW, respectively). These findings revealed that euphylla in mung bean sprouts is the most bioactive part with significant level of phytochemicals. Therefore, after germination of 6 days, euphylla is the main source of nutrition in mung bean sprouts.  相似文献

Individual phenolic compounds, total phenolic content and antioxidant potential were assessed in kernels, oils and bagasse pellets (residues of oil pressing) of different walnut cultivars. Twenty-seven phenolic compounds were detected in kernels and pellets conducting high-performance liquid chromatography–tandem mass spectrometry. The main polyphenolic subclass comprised hydrolysable tannins, which accounted approximately 60.80% (kernels) and 61.66% (pellets) of the total phenolics identified (TPI). Walnut oil was poor in phenolics and contained only six different compounds but due to their low content (from 0.15 to 1.44 μg g 1) just two compounds have been identified. Glansreginin A and glansreginin B were detected in all analyzed walnut products. A comparison of average amount of total phenolic content revealed that walnut oil contains as much as 154 fold less phenolics (0.05 mg GAE g 1 FW) compared to kernels (7.7 mg GAE g 1 FW) or pellets (7.9 mg GAE g 1 FW).  相似文献

The biological activity of mango leaf extracts from different mango varieties was evaluated in terms of total phenolic content, flavonoids, antioxidant activity and inhibition of α-amylase and α-glucosidase enzymes. Leaf extract-based beverages were formulated and evaluated for some physicochemical, microbiological and sensory properties. Results indicated that the extract from 'Tommy Atkins' mango leaves had the highest total phenols content (137.08 mg of GAE g−1) and antioxidant activity (DDPH = 38.26 mg TEAC 100 g−1; ABTS = 59.13 mg TEAC 100 g−1). The beverage formulated with 20% leaf extract presented the highest percentage of antioxidant activity (38.63%) and inhibition of enzymes α-amylase (41.9%) and α-glucosidase (37.53%). All beverages presented a yellow hue and consumers rated it with a degree of liking between 4.8 and 7.3 according to a hedonic scale. Results showed that the biological properties of beverages could be an alternative for the control of free radicals and glucose levels.  相似文献

This study aimed to identify the least aggressive and highest yield extraction method to obtain bioactive compounds from Inga marginata Willd fruits, determine the chemical components, and evaluate the extracts’' antimicrobial and cytotoxic activity. The extraction efficiency was expressed by the total phenolic and total flavonoid content and antioxidant activity (DPPH, IC50, and ORAC) using conventional, ultrasound, and microwave-assisted extraction. The highest bioactive compound content was achieved using 5 min at 60 °C for total phenolic content (214.98 mg GAE g−1), total flavonoid content (22.90 mg EQ g−1), DPPH (45.98 μmol TEAC g−1), inhibitory capacity (0.80 mg mL−1), and ORAC (167.25 μmol Trolox g−1) using ultrasonic extraction, and the extract inhibited the growth of all microorganisms tested. Thirteen chemical compounds were determined by ESI-ToF-MS, confirming the high phytochemical capacity of the extract. Lastly, the Inga extract showed no cytotoxicity at the concentrations used.  相似文献

The total content of phenolic compounds in purple sweet potato (PSP) was determined and the release of such compounds from PSP in gastrointestinal digestion was studied in vitro. The extraction conditions for the maximum recovery of free phenol (FP) and bound phenol (BP) from PSP were determined by response surface methodology (RSM). The maximum recovery of FPPSP was 14.16 ± 0.87 mg GAE per g short for dry weight (DW), which was obtained using 60% (v/v) ethanol maceration with a liquid–solid ratio of 57.21:1 (mL g−1) at 51.93 °C for 2.12 h. The maximum recovery for BPPSP was 7.54 mg GAE per g DW, which was obtained upon hydrolysis with 1.87 mol L−1 NaOH at a liquid–solid ratio of 35.93:1 (mL g−1) for 4.74 h. The maximum phenolic content was released after 1 and 2 h for the in vitro gastric and intestinal digestion respectively. The release of the phenolics was promoted by pepsin and gastric acid during gastric digestion, while it was further promoted by trypsin during intestinal digestion.  相似文献

We produced the iron rice (IR) drink, determined the relevant chemical composition and antioxidant activity and tested the consumers’ degree of satisfaction. IR grains were digested with α-amylase and analysed chemical composition and antioxidant activity, while the hydrolysate (pH 4.0) and flavouring agents were added for final preparation of the IR drink. The IR hydrolysate contained a total iron content of 13.9 mg g−1, a total phenolic content of 1.33 ± 0.07 mg gallic acid equivalent g−1 and γ-oryzanol of 70.12 ± 2.7 mg kg−1 rice grain, all of which inhibited the generation of free radicals in a concentration-dependent manner. The IR drink was composed of flavonoids and phenolic acids for which kaempferol was predominant. The members of all three groups of elderly subjects who consumed the low-dose IR (1.47 mg iron/100 mL), high-dose IR (2.74 mg iron/100 mL) and white rice (WR; 0.5 mg iron/100 mL) drinks expressed satisfaction and interest with the beverages at 91.2%, 100% and 88.9%, respectively. In terms of sensory evaluation, the low-dose IR drink revealed a higher acceptance rating than high-dose IR and WR (P < 0.05). Notably, the Sinlek rice drink was abundant with iron, anti-oxidative phenolics and γ-oryzanol, for which consumers expressed an overall degree of acceptance (8.1 ± 1.1).  相似文献

Bran is detached from cereals during roller-milling operations and considered as a byproduct of milling. Bran carries phenolics and antioxidants in appreciable quantities which can be heightened by modification. In the present project, four cereals were under study that is, wheat, barley, millet and sorghum. Bran was separated from cereal grains and was subjected to size reduction that is, fine (1 mm) and coarse (2 mm) and enzymatic modification by using xylanase and cellulase. Total phenolic content (TPC), total flavonoids content (TFC) and phytic acid were determined spectrophotometrically and phenolic acids through HPLC. TPC and TFC were recorded highest in xylanase-treated millet bran (0.304 mg GAE g−1 and 211.42 μg g−1 QE respectively). In vitro antioxidant activity assessed by DPPH and FRAP was found to be highest in coarse millet bran (89.51% inhibition) and native sorghum bran (722.52 μMFeSO4 g−1) respectively. Bioactive compounds from Brazilian hop (Humulus lupulus L.) cultivars were extracted by ultrasound and their phenolic profile compared with commercial hop from the USA. The most effective extraction conditions (solution of ethanol 49%, at 52 °C and a solid/liquid ratio of 1 g per 34 mL) for the total phenolic compounds (TPC) were determined using a Central Composite Rotatable Design. The Brazilian hop showed higher content of TPC (33.93 ± 0.67 mg GAE g−1), total flavonoids (54.47 ± 0.10 mg QE g−1) and higher antioxidant activity (ABTS: EC50 21.29 ± 1.36 μL mL−1; DPPH: EC50 3.91 ± 0.17 μL mL−1) when compared with the USA hop. The main phenolic compounds present in the extracts were the flavonoids isoquercitrin and quercetin. The antioxidant properties of the Brazilian hop extract had not been reported yet in the literature for this raw material, thus showing potential to be incorporated in polymeric films used as active packaging.  相似文献

Pressurised liquid extraction (PLE) of antioxidant compounds from bitter gourd fruits (Momordica charantia) in aqueous ethanolic solvent was investigated using response surface methodology at laboratory scale to understand key impact of extraction variables. Extraction efficiency was optimised by measuring the yield of extraction, total phenolic content (TPC), total flavonoid content (TFC), ferric reducing/antioxidant power assay (FRAP) and radical scavenging activity (RSA). The optimal extraction conditions were reached at 80% ethanol concentration, 10‐min extraction time and at 160 °C. Under these extraction conditions, values of TPC (5.40 ± 0.30 g GAE per 100 g), TFC (1.50 ± 0.10 g QE per 100 g), FRAP (778.55 ± 10 μmol eq Fe (II) g?1), yield (178.50 ± 5.50 mg g?1 dc) and RSA (75.50 ± 4.50%) were achieved. Furthermore, statistical analysis revealed that antioxidative attributes of bitter gourd extract were strongly and positively correlated with extraction temperature and ethanol concentration rather than processing time. This study illustrated that PLE has the potential to extract antioxidant compounds from tropical fruit vegetables in an accelerated manner. Furthermore, influential parameters affecting the process could be optimised for further industrial intake.  相似文献

Kefir is a fermented milk beverage and known to have positive effects on gut microbial diversity and human health. In this study, digested and undigested kefir samples were compared for changes in their antihypertensive, antidiabetic, antioxidant and antimicrobial activities. Results showed that the amount of total phenolic substances, 2,2-diphenyl-1-picrylhydrazyl radical scavenging (DPPH) activity, and the angiotensin-converting enzyme inhibitor (ACE-I) activity increased from 43.76 ± 0.005 mg gallic acid equivalents (GAE)/L, 4.20 ± 0.55%, and 9.91 ± 3.90% in undigested kefir to 668.16 ± 3.332 mg GAE/L, 63.06 ± 0.64%, and 98.88 ± 0.42% in digested kefir, respectively. While the dipeptidyl peptidase IV-inhibitory (DPPIV-I) activity of undigested kefir increased by 19.11 ± 7.35% after digestion, the optical density of the ferric-reducing antioxidant power (FRAP) decreased from 1.188 ± 0.05 to 0.278 ± 0.009, and the protein amount decreased from 101.4 mg L−1 to 12.42 mg L−1 in digested kefir. No antimicrobial effect was observed in undigested kefir, whereas, digested kefir samples were active, but only against Escherichia coli. These results show that the gastrointestinal digestion processes of kefir generally increase the number of bioactive molecules, and the digestion process must be taken into account to determine the biological capability of foods.  相似文献

This study investigates the drying kinetics of residue of acerola, in a fixed‐bed dryer, analysing the effect of the process variables on the antioxidant properties of the residue. A complete factorial design 32 has been performed, where the independent variables studied were as follows: air velocity (0.5, 1.0 and 1.5 m s?1) and air‐drying temperature (40, 50 and 60 °C). The bioactive compounds studied were L‐ascorbic acid, total phenolic, total flavonoids and antioxidant activity (expressed as IC50) was determined using free radical DPPH?. Both independent variables studied have shown to be statistically significant. The content of ascorbic acid was the highest at 60 °C and 1.0 m s?1 (126.2 ± 0.004 mg 100 g?1) while for the fresh residue 16.12 ± 0.003 mg 100 g?1, whereas the total phenolic showed the highest content at 50 °C and 1.5 m s?1 (46.2 ± 0.003 mg gallic acid.100 g?1) while for the fresh residue 12.59 ± 0.001 mg gallic acid.100 g?1. The drying conditions play an important role in determining the final quality of the product mainly in terms of antioxidant activity.  相似文献

Water kefir microbiota was used to develop novel soy whey-based beverages that have antioxidant activity. In the present study, comparative phenolics, antioxidant and metagenomic composition of the soy whey beverages fermented using three different water kefir microbiota, named WKFS-A, WKFS-B and WKFS-C were investigated. WKFS-B beverage had the highest concentrations of isoflavone aglycones (208.73 ± 2.78 mg L−1) and phenolic acids (132.33 ± 3.41 mg L−1) compared with WKFS-A (193.88 ± 1.15 mg L−1) and (91.73 ± 2.34 mg L−1) and WKFS-C (160.63 ± 1.76 mg L−1) and (97.13 ± 2.63 mg L−1), respectively. The WKFS-B also showed higher DPPH and ABTS radical scavenging activity and ferric reducing antioxidant power compared with WKFS-A and WKFS-C beverages. Microbial species diversity index analysis showed that a higher concentration of isoflavone aglycones, phenolic acids and increased antioxidant activity in the WKFS-B beverage correlates with the higher relative abundance of Lactobacillus genus. This study thus revealed that Lactobacillus dominated water kefir microbiota produces soy whey beverages with high phenolic acids, isoflavone aglycones and antioxidant activity.  相似文献

The aim of this study was to evaluate the potency of polyphenolic extract from black radish (Raphanus sativus L. var. niger) root peel waste (PEBRRP) as an antioxidant food additive. PEBRRP was found a powerful antioxidant extract, in which had 172.9 ± 11.5, 462.72 ± 3.05, and 796.51 ± 10.4 mg TE per g dw of total antioxidant capacity (TAC) by CUPRAC, DPPH, and FRAP assays, respectively. The total phenolic content (TPC) and total flavonoid content (TFC) of PEBRRP were found as 305.51 ± 5.2 mg GAE per g dw and 171.58 ± 6.2 mg CAE per g dw, respectively. The ferulic acid (28.02 ± 4.5 mg per g dw) and epicatechin (19.82 ± 3.6 mg per g dw) were identified as the main polyphenols in undigested PEBRRP. The bioaccessibility of total phenolic and total flavonoid compounds of PEBRRP was found approximately 5%, and the antioxidant capacity of bioaccessible PEBRPP fraction was determined 6% in CUPRAC, 36% in DPPH and 47% in FRAP methods.  相似文献

This study investigated the antiglycation capacity and antioxidant activities of fifteen Thai rice varieties. Purple variety, Kum Rai showed the highest value of total phenolic content (245.06 ± 7.87 mg GAE/gram extract dry weight), DPPH radical scavenging activity (92.33 ± 0.49 mg Trolox/gram extract dry weight), ABTS radical scavenging activity (221.01 ± 0.25 mg Trolox/gram extract dry weight) and percentage inhibition of AGEs formation (82.03 ± 0.19%). We found that, total phenolic content and antioxidant activities (ABTS and DPPH assay) in rice varieties were highly correlated (P < 0.05) with their antiglycation capacity. These results indicated that the total phenolic content was responsible for antioxidant and antiglycation capacities of rice samples. This study is the first report on a correlation between anti‐AGEs capacity and antioxidant activities of Thai rice varieties. Our data have provided useful information for selection of rice varieties for the bioactive compounds that may improve the health of the aged and diabetic complications.  相似文献

This research focuses on green production of bioactive proteins and hydrolysates from Nitzschia. A comparison of antioxidant activities was established between protein extracts and hydrolysates from Nitzschia and two other well‐known microalgae, chlorella and spirulina. Protein hydrolysates from these microalgae were produced using Alcalase®, Flavourzyme® and Trypsin. The hydrolysis process enhanced the antioxidant activities in general, especially those obtained using Alcalase®. Nitzschia showed the highest (P < 0.05) total phenolic content/reducing capacity (2.4 ± 0.02 mg GAE/100 g) after 90 min of hydrolysis with Alcalase®. The ABTS [2,2′‐Azino‐bis(3‐ethylbenzothiazoline‐6‐sulphonic acid)] radical scavenging activity (66.77 ± 0.00%) was highest (P < 0.05) after 120 min of hydrolysis, but DPPH (2,2‐Diphenyl‐1‐picrylhydrazyl radical) was low (29.59 ± 0.02%). A correlation between ABTS activity and total phenolic contents was the highest (P < 0.05) for protein hydrolysates from all three organisms using Alcalase®, but superoxide anion radical scavenging activity was intermediate for Nitzschia. Therefore, Nitzschia protein hydrolysates have the potential to be used as antioxidants.  相似文献

Kyoho (Vitis labruscana) skin is one of the valuable and eco-friendly agricultural waste and a potential source of phenolic compounds. Therefore, we attempted to develop Kyoho skin functional tea and evaluated its nutritional-functional properties as affected by drying temperatures (30, 40, 50 and 60 °C). Kyoho skin functional tea reported negligible protein (0.02 mg g−1), fat (0.04–0.19%) and calories (0.36–0.70 cal g−1). Total phenolic and flavonoid contents ranged from 0.25 to 0.56 mg GAE mL−1 and 0.03 to 0.19 mg QE mL−1, respectively. Kyoho skin functional tea showed functional properties including antioxidant activity (63.33–79.78%) and anthocyanins (0.25–0.34 mg per 100 mL). The sensory evaluation of Kyoho skin functional tea (dried at 40 °C) rated as acceptable (>6) with attractive colour (>6). Overall, these findings recommended the possibility of using Kyoho skin to develop functional teas, which may strengthen the global beverage industries.  相似文献

The aim of this study was to determine the phenolic profile of seven different varieties of ripe date palm fruit (Phoenix dactylifera) from Algeria by LC–DAD–MS (ESI+), to investigate their respective antioxidant activities by the DPPH· method and to estimate their phenolic content using the Folin–Ciocalteu method. The total phenolic content was in the range of 2.49 ± 0.01 to 8.36 ± 0.60 mg gallic acid equivalents (GAE) per 100 g fresh fruit. This fruit was shown to possess an antioxidant activity, giving values of antiradical efficient (AE) from 0.08 ± 0.00 to 0.22 ± 0.00. The phenolic contents and the antiradical efficiencies of the different varieties were highly correlated (R2=0.975). All the varieties were found to contain mainly p-coumaric, ferulic and sinapic acids and some cinnamic acid derivatives. Three different isomers of 5-o-caffeoylshikimic acid were detected. Different types of flavonoids were identified, mainly flavones, flavanones and flavonol glycosides.  相似文献
