Gynura bicolor DC. (G. bicolor) is a popular vegetable consumed in many Asian countries. In this study, chemical profile and antioxidant activity of G. bicolor ethanolic extract were studied. The extraction conditions were optimized and the total phenolic content of G. bicolor was determined as 10.38 mg of gallic acid equivalents per gram of dry matter. Twenty three compounds were identified in G. bicolor by HPLC-Q-TOF-MS analysis. Among them, 14 phenolic compounds, including ninepolyphenols and five flavonoids were found. 3-O- and 5-O-p-coumaroylquinic acid were the most abundant phenolic compounds in the vegetable. The ethanolic extract of G. bicolor showed appreciable antioxidant activity as analyzed by radical scavenging and reduce power tests.  相似文献

Antioxidant and antiproliferative activities of three rosemary extract formulations (VivOX 20, VivOX 40 and Inolens 50) with different contents of carnosic acid, carnosol and methylcarnosol were tested in vitro. Electron spin resonance measurements revealed that Inolens 50 extract that contained highest amount of carnosic acid was the most potent scavenger of hydroxyl (concentration of extract where 50% of its maximal scavenging activity is observed, that is, EC50, 109.54 μg mL?1), superoxide anion (EC50 = 7.94 μg mL?1) and 2,2‐diphenyl‐1‐picrylhydrazyl (DPPH) (EC50 = 27.4 μg mL?1)‐free radicals. Comparison of the radar charts of standard antioxidants and rosemary extracts showed similarity between antioxidant characteristics of Inolens 50 and chlorogenic and caffeic acids. Tested rosemary extracts exhibited significant (P ≤ 0.01) antiproliferative effect in cervix epitheloid carcinoma (HeLa), breast adenocarcinoma (MCF7) and colon adenocarcinoma (HT‐29) cell lines. In both MCF7 and HeLa cell lines, the extracts yielded very low IC50 values (concentration of extract needed to inhibit cell growth by 50%), the most pronounced being for Inolens 50 in MCF7 (IC50 = 9.95 μg mL?1) and VivOX 20 in HeLa cell line (IC50 = 10.02 μg mL?1). The obtained results may provide support for the use of tested rosemary extracts as nutraceuticals and phytopharmaceuticals.  相似文献

Ground corn tassels, a by-product of corn, were used as a source of phenolic compounds. Water, ethanol, methanol, acetone, hexane, chloroform, butanol, petroleum ether and methylene chloride were evaluated as different polarity solvents to extract these phenolic compounds. Ethanol exhibited the highest extraction ability for such phenolic compounds, followed by methanol and water, where the total phenols were 0.1575%, 0.1125% and 0.0737%, respectively. Antioxidant activity of corn tassels ranged from 83.0% to 85.2%, 69.9% to 83.7%, 69.8% to 80.4%, 22.2% to 49.1% and 14.8% to 19.3% radical scavenging activity (% RSA) for ethanol, methanol, acetone, butanol and water extracts, respectively. The ethanolic extract of the corn tassels was successfully utilised to retard the oxidation of sunflower oil and the obtained induction period values were comparable to those of tert-butylhydroquinone (TBHQ).  相似文献

Flaxseed (Linum usitatissimum L.) is well known for its health benefits and chemical composition. This study aimed to evaluate the dynamic changes caused by germination in vitamin C, phenolic compounds and antioxidant activities of flaxseed. It was observed that eight‐day germination of flaxseed sprouts caused increases in phytochemical contents, that is 22.1‐fold increase in vitamin C, 2.67‐fold increase in phenolics and 5.48‐fold increase in flavonoid contents as compare to initial concentration in flaxseeds on dry weight basis. The stimulation was also noted in the three identified phenolic acid ingredients including caffeic acid, p‐coumaric acid and ferulic acid. Similarly, the total PSC and ORAC values of flax sprouts at day 8 increased by 3‐ to 4‐folds compared to nongerminated flaxseeds. It is revealed that comparatively, 8‐day germination of flax sprouts leads to a significant increase in vitamin C, phenolic constituents and total antioxidant activities than those of flaxseeds.  相似文献

Recent findings that many human chronic diseases are associated with oxidative stresses have instigated the search for dietary antioxidants. Isoflavones, a special phenolic group found in soybean, have been found to act as antioxidant in some model systems. The aim of this work was the evaluation the effects of spray drying on the chemical and biological properties of soybean extract. The total polyphenol contents in the concentrated soybean extract (CSE) and spray dried soybean extract (SDSE) were determined by Folin-Ciocalteau method and HPLC was utilized for the quantification of the genistein, active compound used as a chemical marker. The evaluation of antioxidant activity of CSE and SDSE was assessed by the hydrogen-donor ability to 2,2-diphenyl-1-picrylhydrazyl radical (DPPH). The results indicated that the inlet gas temperature showed significant effect on the total polyphenol, protein and genistein contents of the dried extracts. The SDSE obtained this work showed high antioxidant activity, opening perspectives for its use as food additive and/or ingredient.  相似文献

以超氧化物歧化酶(SOD)活力为评价指标,通过单因素试验以及正交试验,对植物乳杆菌(Lactobacillus plantarum)发酵的北五味子麦芽酵素的发酵工艺条件进行优化;并对该酵素产品的抗氧化活性进行了研究。结果表明,植物乳杆菌发酵制备北五味子麦芽酵素的最佳发酵工艺条件为北五味子∶麦芽=2∶1(g∶g),发酵时间为3 d、接种量为1.5%、发酵温度为41 ℃。在此最佳工艺条件下,北五味子麦芽酵素SOD酶活力为3 464.80 U/mL。抗氧化活性结果表明,该酵素对超氧阴离子自由基清除能力、羟自由基清除能力、DPPH自由基清除能力和对ABTS+自由基清除能力分别达到了26.03%、97.25%、89.10%和0.613 7 mmol/L,表明该酵素具有较好的抗氧化活性。  相似文献

The phenolic components of honeys have great participation in their nutritional value and antioxidant activity. Moreover, phenolic components are promising markers for the determination of botanical and geographical origin of honey. The purpose of the present work was to study the antioxidant activity and profiles of phenolic acids and flavonoids of honeys of various origins. The total phenolic content of honeys varied from 4.46 to 15.04 mg of gallic acid equivalents per 100 g of product and the total phenolic acid content determined chromatographically varied from 201.05 to 2089.08 μg per 100 g of product. Buckwheat honey exhibited the highest antioxidant activity and contained the highest total phenolic amount, whereas rape honey exhibited the lowest values in this respect. Moreover, the buckwheat honey contained the highest amount of phenolic acids. There were significant linear correlations between total phenolic content and antioxidant activity of honey extracts in the reaction with DPPH? (1,1‐diphenyl‐2‐picrylhydrazyl) and ABTS? + (2,2′‐azinobis‐(3‐ethylbenzothiazoline‐6‐sulfonic acid)) free radicals. In most samples, p‐coumaric acid was the dominant phenolic acid (39.1–677.2 μg per 100 g). The honeys also contained considerable amount of gallic acid (6.0–913.8 μg per 100 g). Among flavonoids naringenin was predominant in the most studied honey samples.  相似文献

采用高效液相色谱法对麦精中的纤维三糖和纤维四糖进行了定量测定研究,最终确定的最佳分析方法为CarbomixH-NP10:5%分析柱;示差折光检测器55℃柱温;流动相:2.5mmol/LH2SO4水溶液;流速:0.5mL/min;进样量:20μL。该方法精密度RSD<2%,回收率>97%。在此色谱条件下15min内完成了三糖和四糖的分离,结果比较理想。研究表明此新建方法准确而快速,并能适用于绝大部分食品中低聚糖的测定。  相似文献

为阐明萌发对黑大豆(Glycine max)、红小豆(Vigna angularis)和豌豆(Pisum sativum L)的影响,研究了其种子及萌发后形成芽苗菜的生长特性(总质量、可食部分鲜重、可食率、苗长、含水量)、营养品质(粗蛋白和可溶性糖含量)、功能性成分(总酚、总黄酮含量)和抗氧化性(DPPH自由基清除力、ABTS自由基清除力、FRAP亚铁还原力)。结果表明,3个豆类种子中,黑大豆的营养品质、酚类含量和抗氧化性显著高于红小豆和豌豆。3个豆类芽苗菜以豌豆苗的总质量(12.83 g/10株)、苗长(16.02 cm)和含水量(93.82%)最高;黑大豆芽苗菜的可食部分鲜重(5.87 g/10株)和可食率(71.03%)最高;豌豆苗的可溶性糖含量(0.75 mg/g)、总黄酮含量(7.09 mg/g DW)最高;黑大豆芽苗菜的总酚含量(4.28 mg/g DW)最高、ABTS自由基清除力(110.39μmol/g DW)和FRAP亚铁还原力(75.52 mmol/g DW)最强。萌发显著降低了3个豆类的可溶性糖含量,提高了粗蛋白含量;黑大豆萌发以后酚类含量和抗氧化性显著降低,而红小豆和豌豆萌发后显著提高了其酚类含量和抗氧化性。此外,酚类含量与抗氧化性之间存在着显著的正相关性。因此,黑大豆种子、红小豆芽苗菜和豌豆芽苗菜具有较高的营养价值,含有丰富的酚类物质和抗氧化性。  相似文献

以食品中常见的添加剂液体麦精和玉米糖浆为实验材料,采用改良的CTAB法,SDS法,试剂盒法提取DNA,依据大麦B1醇溶蛋白基因和玉米的淀粉分支酶基因设计特异性引物。结果表明,改良CTAB法可以得到较好质量的液体麦精和玉米糖浆的DNA,用特异性引物进行PCR扩增,产物条带单一,特异性良好,说明该方法可以用来区分液体麦精和玉米糖浆。本实验为检测食品中的液体麦精和玉米糖浆奠定了研究基础。   相似文献

Phenolic compounds and mineral content constitute important quality parameters of wines. It is probably during ageing, that the greatest number of polymerisation and condensation reactions occurs, notably modifying the composition of the wine. The aim of this study was to characterise Cabernet Sauvignon wines of different vintages from two regions in Santa Catarina State, Brazil. It was not possible to clearly observe an evolution of the phenolic content and colour parameters in the different vintages of the wines. The ABTS method gave higher antioxidant value than DPPH, which showed higher correlation with total polyphenols. Principal components analysis showed differences between the wines, especially in relation to vintage. Also, the study allowed a clear separation of wines in relation to place of vineyards in terms of mineral composition.  相似文献

Peel and seeds of red-skinned passion fruit, mango, longan, rambutan, white-flesh and red-flesh dragon fruit were screened for their in vitro antioxidant activity, and determination of a detailed profile of phenolic compounds. Rambutan peel and mango seed extracts exhibited the highest total phenolic content and antioxidant activities (DPPH, ABTS and FRAP values). By using UPLC-QTOF-MS/MS analysis, the profiles of soluble and bound phenolics in the fruit by-products were obtained. Ellagic acid, geraniin, quercetin hexoside, gallic and galloyshikimic acid were predominant in rambutan peel, whereas, mangiferin, ellagic acid and galloy(di)glucoside were the major phenolic compounds in mango seed. Main phenolic compounds in longan peel were ellagic acid, galloyldiglucoside, and gallic acid, while in dragon fruit peel this was isorhamnetin glycoside, isorhamnetin glucorhamoside. Meanwhile, rutin and quercetin hexoside were predominant in passion fruit peel. These findings contribute significantly to the database of phenolic profiles of by-products of tropical fruits.  相似文献

通过测定雪莲果叶酚酸提取物的还原能力和对化学模拟体系中羟自由基(.OH)、超氧阴离子自由基(O2-.)及二苯代苦味肼基自由基(DPPH.)的清除能力,研究了雪莲果叶酚酸提取物的体外抗氧化活性。结果表明:雪莲果叶酚酸提取物具有较强的抗氧化能力,对自由基有明显清除作用,并且随着雪莲果叶酚酸浓度的增加,其抗氧化能力有显著增强的趋势。  相似文献

We determined the effect of onion skin extract (OE) on the quality of wheat bread: contents of total polyphenols and flavonols, antioxidative activity and their changes during storage. With increasing doses of OE to bread, contents of total polyphenols and flavonols and the antioxidative activity were observed to increase. A higher total flavonol content was found in bread with 1% OE stored at 24 °C than in bread stored at 4 °C. There was no such relationship in the bread with 0.5% OE. Changes in flavonols content during storage for 72 h were insignificant. No clear trends of change in the antioxidant activity could be found at storage of breads. The addition of OE caused no changes in the yield and volume of bread and contributed to a decreasing value of L* parameter and to increasing values of ΔE, a* and b* parameters of bread crumb colour. Consumers accepted the smell and taste of bread with the addition of OE to a lesser extent than the control bread. Bread with 1% OE the taste was rated very low. Consumers rated the taste of bread with 1% OE low because it was bitter. Breads enriched with OE had a proper external appearance as well as crumb and crust features. Roasted onion aroma and taste were perceptible in the obtained breads. A bitterness was perceptible in breads baked with the addition of 1% of OE.  相似文献

The antioxidant activity change of breads added with grape seed extract (GSE) was investigated. The results showed that bread with the addition of GSE had stronger antioxidant activity than that of blank bread, and increasing the level of GSE addition further enhanced the antioxidant capacity of the bread. However, thermal processing caused antioxidant activity of GSE added to bread to decrease by around 30–40%. We also studied the effect of GSE on the formation of detrimental Nε-(carboxymethyl)lysine (CML), a famous advanced glycation endproduct in bread. According to the results, GSE could reduce CML in bread and acted in a dose-dependent manner. Meanwhile, except for an acceptable colour change, adding GSE to bread had only little effect on the quality attributes of the bread. Altogether, our findings indicate that GSE-fortified bread is promising to be developed as a functional food with relatively lower CML-related health risks, yet a high antioxidant activity.  相似文献
