Antioxidant and antimicrobial activities of ethanolic noni leaf extract (ENLE) without and with chlorophyll removal by sedimentation method were comparatively investigated. Total chlorophyll content was reduced by 82% in the top fraction (CR-ENLE) collected after 24 h at 4 °C as compared to that of ENLE. Antioxidant and antimicrobial activities were lower in the bottom fraction rich in chlorophyll (Chlo-ENLE) than others (P < 0.05). Based on the microbiological limit, the shelf-life of striped catfish slices pre-treated with 400 mg kg−1 C-R-ENLE was extended to 9 days as compared to the 3 days recorded for the control (without pre-treatment). Slices treated with CR-ENLE had lower lipid oxidation than those treated with ENLE during refrigerated storage (P < 0.05). The sedimentation process was therefore a potential green method for producing ENLE having improved antioxidant and antimicrobial activities without green colour. It can be used as a natural additive for shelf-life extension of fish slices.  相似文献

This study aimed to determine the phenolic content and antioxidant effect of grape pomace extract on silver carp fillets during refrigerated storage. Total phenolic content of grape pomace extract was quantified by colorimetric methods. Silver carp samples were treated with 0, 2, and 4% of grape pomace extract (g extract/100 g flesh) and stored 15 days in a refrigerator (4°C). Changes in pH, peroxide value, thiobarbituric acid, and heme iron at 0, 3, 6, 9, 12, and 15 days of storage were investigated. Results showed that the values of pH, peroxide value, and thiobarbituric acid increased and iron levels decreased in all treatments during storage (p < 0.05). The phenolic contents were generally much more influenced by the quality parameters treated compared to the control. The addition of grape pomace extract delayed lipid oxidation in silver carp fillet considerably during refrigerated storage. These results suggested that grape pomace extract has the potential to be used as a natural antioxidant.  相似文献

Microbiological, chemical and sensory effects of pomegranate peel ethanol extract (EE) at 0.1, 0.5 and 1% (w w−1) on refrigerated minced beef meat were undertaken. Chemical analyses revealed that the treated meat underwent significant decrease (P < 0.05) of primary and secondary lipid oxidation. By the end of storage, EE at 1% reduced the MetMb, carbonyl group accumulation and the disappearance of sulphydryl proteins by 56.68, 65.71 and 59.69% respectively, compared with control samples. EE at 1% showed also the highest scores for colour, appearance, odour and overall acceptability (OA) attributes using a 9-point hedonic scale. Chemometric approaches showed that lipid/protein oxidation analysis, sensory attributes and storage time allowed the samples discrimination. Oxidative stability parameters were equally used to predict OA by linear regression analysis. The reported data provide an approach to strengthen the interpretation of sensory quality and how they are affected by chemical changes in newly formulated meat products.  相似文献

Abstract: This study examined the effectiveness of fat and water soluble antioxidants on the oxidative stability of omega (ω)‐3 rich table spreads, produced using novel multiple emulsion technology. Table spreads were produced by dispersing an oil‐in‐water (O/W) emulsion (500 g/kg 85 camelina/15 fish oil blend) in a hardstock/rapeseed oil blend, using sodium caseinate and polyglycerol polyricinoleate as emulsifiers. The O/W and oil‐in‐water‐in‐oil (O/W/O) emulsions contained either a water soluble antioxidant (green tea extract [GTE]), an oil soluble antioxidant (α‐Tocopherol), or both. Spreads containing α‐Tocopherol had the highest lipid hydroperoxide values, whereas spreads containing GTE had the lowest (P < 0.05), during storage at 5 °C, while p‐Anisidine values did not differ significantly. Particle size was generally unaffected by antioxidant type (P < 0.05). Double emulsion (O/W/O) structures were clearly seen in confocal images of the spreads. By the end of storage, none of the spreads had significantly different G′ values. Firmness (Newtons) of all spreads generally increased during storage (P < 0.05). Practical Application: Lipid oxidation is a major problem in omega‐3 rich oils, and can cause off‐odors and off‐flavors. Double emulsion technology was used to produce omega‐3 enriched spreads (O/W/O emulsions), wherein the omega‐3 oil was incorporated into the inner oil phase, to protect it from lipid oxidation. Antioxidants were added to further protect the spreads by reducing lipid oxidation. Spreads produced had good oxidative stability and possessed functional (omega‐3 addition) properties.  相似文献

The aim of this work was to analyse the honeysuckle extract (HE) for its in vitro antioxidant activity using the ORAC, reducing power, DPPH and ABTS assays. The effects of HE on the quality characteristics and physicochemical properties of porcine patties during refrigerated storage at 4 °C were studied. Chlorogenic acid contributed about 50% to the antioxidant activity of HE. HE possessing strong antioxidant activity was incorporated into porcine patties at 0.02%, 0.1% and 0.5% concentrations and compared with 0.02% and 0.1% chlorogenic acid as references. The addition of 0.1% HE and chlorogenic acid significantly reduced the loss of hardness, springiness, chewiness and cohesiveness of porcine patties in terms of inhibition of lipid oxidation, formation of protein carbonyls, generation of covalent bonds and tryptophan loss during 15 days of chilled storage. HE could be used in porcine patty as a natural antioxidant.  相似文献

Abstract: The individual and interactive effects of green tea (GT) extract and sodium nitrite (NT) on lipolysis and lipid oxidation were investigated in pepperoni during processing and storage (4 °C). Pepperoni was treated with GT at concentrations of 0.02%, 0.05%, 0.1%, 0.2%, 0.5%; and NT from 0.003% to 0.015% in increments of 0.003%; and a combination of 0.05% GT and 0.009% NT (GT/NT). The pH, color, residual nitrite, fatty acid (FA), and 2‐thiobarbituric acid reactive substances (TBARS) values were measured. The results showed inhibitory effects on TBARS value were concentration dependent. The largest effect was at 0.05% for GT and 0.009% for NT. Adding 0.05% GT significantly decreased (P < 0.05) the TBARS values but did not affect color values during storage. NT (0.009%) was more effective than GT (0.05%) for maintaining lower TBARS values (P < 0.05). Total fatty acids were not affected by 0.05% GT and 0.009% NT treatments. However, adding GT/NT showed a significant prooxidant effect (P < 0.05) in pepperoni, which accelerated lipolysis and lipid oxidation significantly (P < 0.05) during storage, with depletion of nitrite. This suggests that adding GT and an appropriate amount of NT into pepperoni could promote lipolysis and lipid oxidation during storage, as compared to NT alone. Practical Application: When using GT extract as an antioxidant in industrial production of pepperoni, the interaction effect with NT should be considered, as it may lead to a prooxidant effect during refrigerated storage.  相似文献

This study investigated the efficacy of licorice extract (LE) to curtail lipid oxidation and protect sensory attributes of ground pork during refrigerated and frozen storage. Pork patties (20% fat) were formulated with 0%, 0.02%, 0.05%, and 0.1% (meat basis) LE or rosemary extract (RE) as comparison or 0.01% (fat basis) BHA with 0 or 1.5% NaCl. Raw and precooked (75 °C) patties were packaged in polyvinylchloride overwrapped trays and stored at 2 °C up to 7 and 14 d, respectively, or at –20 °C up to 6 mo. Lipid oxidation (thiobarbituric acid‐reactive substances [TBARS]) and sensory attributes of stored patty samples were evaluated, radical scavenging activity of the LE was measured, and the active phenolic compounds were identified. Cooking yield (<85%) was similar among antioxidant treatments, and lipid oxidation was minimal in refrigerated or frozen raw samples. However, TBARS values in refrigerated precooked control patties (0.22 mg/kg) rose to 9.3 to 9.4 mg/kg after 14 d, compared to 3.4 to 4.4 and 4.4 to 6.9 mg/kg in patties treated with 0.1% LE and RE, respectively. In frozen precooked samples, TBARS (0.22 mg/kg) increased to 1.3 mg/kg (P < 0.05) in control patties after 6 mo and had no significant change in patties treated with 0.1% LE or 0.01% butylated hydroxyanisol. Sensory panel evaluation confirmed strong inhibition of rancidity production by LE, corroborating its remarkable antiradical activity due to the presence of multiple phenolics. The results indicate that licorice has great potential as a natural antioxidative additive to extend the shelf‐life of precooked pork.  相似文献

Ability of commercial rosemary extracts (REs) alone and in combination with sodium tripolyphosphate (P) to inhibit lipid oxidation in uncured deli turkey (UDT) was examined via headspace hexanal and oxidation flavour. Sliced UDT was packaged (75% N2/25% CO2) and stored 13 weeks at 4 °C. Addition of P decreased hexanal 2.4-fold (P < 0.05) and increased mean pH of UDT from 5.94 to 6.30 (P < 0.05). Addition of water/lipid-soluble RE did not inhibit hexanal formation in UDT. Addition of water-soluble RE decreased hexanal 2.2-fold (P < 0.05). The combination of P and water-soluble RE decreased hexanal 33-fold (P < 0.05). The combination of P and water/lipid-soluble RE decreased hexanal ninefold (P < 0.05). Oxidation flavour was highest in UDT without added antioxidant> RE> P> RE+P (P < 0.05). Hexanal values were positively correlated with oxidation flavour scores throughout storage (P < 0.05). The combination of P with either RE was particularly effective at inhibiting lipid oxidation in modified atmosphere packaged UDT.

The radical scavenging activity, reducing power and phenolic composition of pomegranate rind powder extract (RP) were determined and antioxidant properties of RP was evaluated in cooked chicken patties compared with vitamin C (VC) during refrigerated storage. Freshly minced chicken meat were assigned to one of the following six treatments: control (meat without any antioxidant); RP 5, RP 10, RP 15 and RP 20 (5, 10, 15 and 20 mg equivalent RP phenolics 100 g?1 meat, respectively) and VC 50 (50 mg VC 100 g?1 meat). The RP exhibited significantly (P < 0.05) higher reducing power and 1,1‐diphenyl‐2‐picrylhydrazyl radical scavenging activity. Incorporation of RP into chicken patties significantly (P < 0.05) reduced the HunterLab L* values compared with control and VC patties. Total phenolic content (as tannic acid equivalent) significantly (P < 0.05) increased from 308 in control to 441 μg g?1 in RP 20 patties. Addition of RP to chicken patties did not affect any of the sensory attributes. The values of thiobarbituric acid reactive substances were significantly (P < 0.05) reduced from 1.530 in control patties to 0.135 mg malonaldehyde kg?1 samples in RP patties. Pomegranate rind powder extract treatment (RP 10, RP 15 and RP 20) substantially inhibited (P < 0.05) lipid oxidation in cooked chicken patties to a much greater extent than VC treatment. Therefore, pomegranate rind powder can be utilized as an excellent natural antioxidant source.  相似文献

The effective utilisation of Moringa oleiferia mature leaves (MOL) extract as an antioxidant in cooked goat meat patties during refrigerated storage was investigated, and its efficiency was evaluated against butylated hydroxytoluene (BHT). The extract exhibited high phenolic content (48.36 mg of gallic acid equivalent per g), flavonoid (31.42 mg g?1 of sample) being the major component. Moringa oleiferia mature leaves extract showed excellent antioxidant activity as determined by radical‐scavenging activity of 1, 1‐diphenyl 2 picrylhydrazyl (DPPH). The IC50 value of MOL extract for 2, 2‐diphenyl‐1‐picrylhydrazyl radical scavenging was 18.54 μg mL?1. Total phenolic content (as gallic acid equivalent) significantly (P < 0.05) increased from 285.56 in control to 379.45 in patties with MOL extract. MOL extract (0.1%) when added to meat was found to retard lipid peroxidation of cooked goat meat patties as measured by TBARS number during refrigerated storage. The increase in TBARS number in MOL extract–treated samples was very slow and remained lowest (0.53 mg malonaldehyde per kg sample) up to 15 days. The antioxidant activity of MOL extract was found to be comparable to BHT. Addition of MOL extract did not affect any of the sensory attributes of patties. The MOL extract at a level of 100 mg/100 g meat was sufficient to protect goat meat patties against oxidative rancidity for periods longer than the most commonly used synthetic antioxidant like BHT.  相似文献

Efficacy of varying concentrations of dried Holy basil powder and its ethanolic extracts in retarding oxidative rancidity was tested with cooked ground pork. The development of lipid oxidation products during 14 days refrigerated storage (5 °C) was evaluated by means of thiobarbituric acid-reactive substances (TBARS) value, peroxide value (POV), conjugated diene and hexanal content. In the amounts studied, dried Holy basil powder and its ethanolic extract significantly (P < 0.05) inhibited the formation of TBARS, peroxide, conjugated dienes and hexanal in a dose-dependent manner. The oxidation process was significantly (P < 0.05) influenced by the type of antioxidant and its concentration. Addition of dried Holy basil powder to cooked ground pork was more effective in inhibiting lipid oxidation than its ethanolic extracts. Additionally, TBARS values and hexanal contents in cooked ground pork were highly correlated (r2 = 0.95; P < 0.05) with each other.  相似文献

Effect of tannic acid (0.02% and 0.04%) and ethanolic kiam wood extract (EKWE) (0.04% and 0.08%) on lipid oxidation and textural properties of fish emulsion sausages during 20 days of refrigerated storage was investigated. Control samples (C) had the highest peroxide value (PV) and thiobarbituric acid-reactive substances (TBARS) value up to day 16 and 8 of storage, respectively. With the addition of tannic acid and EKWE, PV and TBARS values in the sausages were retarded effectively, compared to the control (P < 0.05), especially when the tannic acid and EKWE at higher level were used. At the same level, EKWE showed the lower ability in retarding the lipid oxidation, in comparison with tannic acid. Tannic acid at both levels (0.02% and 0.04%) was also effective in retarding the formation of fishy odour in the samples throughout the storage, compared to the control and EKWE treated samples (P < 0.05). Both tannic acid and EKWE had no detrimental effect on the sensory attributes of sausages. However, EKWE treated sample had lower L and higher a and ΔE values, compared to the control samples (P < 0.05). After 20 days of storage, the sample added with 0.04% tannic acid had higher hardness, gumminess and chewiness, compared with others (P < 0.05). Samples added with 0.04% tannic acid also displayed more compact structure with no visible voids. Furthermore, oil droplets with smaller size were dispersed more uniformly, compared to others. Thus, tannic acid (0.02% and 0.04%) and EKWE (0.08%) were effective in retarding lipid oxidation and fishy odour development as well as could maintain the textural properties of fish emulsion sausages during the refrigerated storage of 20 days.  相似文献

The antioxidant activity of plant extracts (100 and 500 mg/kg) from cloudberry, willow herb and beetroot on thiobarbituric acid (TBA) reactive substances (TBARS) development and hexanal content of cooked pork patties was investigated. Pure quercetin, rutin and caffeic acid were tested in parallel for comparison. The most potent antioxidants on stabilizing oxidation were cloudberry extract and quercetin. The lowest antioxidant activity was found with the addition of pure rutin to the meat. Caffeic acid showed an intermediate activity. At a concentration of 100 mg/kg, beetroot and willow herb extracts showed an antioxidant activity on TBARS and hexanal contents similar to that observed for caffeic acid during 3 days of refrigerated display, while cloudberry extract was as potent as quercetin. At a concentration of 500 mg/kg, beetroot and willow herb extract stabilized hexanal production of cooked pork patties after 6 days of refrigerated storage in a way comparable to that observed for pure quercetin and cloudberry extract. TBARS numbers were well correlated with hexanal content in cooked pork patties on day 3 of refrigerated storage. However, hexanal production and TBARS numbers were not highly correlated in samples with the highest level of beetroot (500 mg/kg). Hexanal production was inhibited by the high level of beetroot, but TBARS production was not, perhaps because the red color of beetroot extract interfered with the determination of the pink TBA chromogen.  相似文献

The effectiveness of Allium and Brassica extracts to inhibit the evolution of lipids oxidation in avocado pulp under refrigeration (storage at 4 °C) was studied. Onion, garlic, scallion, white cabbage, cauliflower, and Brussels sprouts extract were tested as preserving agents in refrigerated avocado pulp. Allium extracts promoted almost a 60% retention of the intrinsic anti-radical capacity of the pulps. Considering secondary oxidation effects, extinction coefficient at 270 nm shows that all treated pulps (except those with scallion addition) were acceptable at the 30th storage day (K 270 < 0.22), but they were all significantly less oxidized than the untreated samples (K 270 = 1.8) (P < 0.05). Garlic-treated avocado showed the highest antioxidant effectiveness, based on C=CH cis proportion (I cis = 108.3), while samples with white cabbage extract presented the highest C=CH trans (I trans = 5.7) proportion after 30 days. The PCA method was discriminant enough since 83.6% of the variance was explained by the first two principal components, allowing the samples to be grouped according to storage time and extract type. This study confirmed that the addition of garlic, onion, and cauliflower extracts enhanced lipid antioxidant properties in refrigerated avocado pulps.  相似文献

High voltage cold atmospheric plasma (HV-CAP) using dielectric barrier discharge was implemented on Pacific white shrimp (PWS) pre-soaked with 0.5 or 1% Chamuang leaf extract (CLE). PWS were firstly packed under different gas ratios of Ar, O2 or air and then subjected to HV-CAP for 10 min. Lower melanosis scores were found in the samples treated with 1% CLE and HV-CAP in the presence of Ar and air (80:20) than the control and other samples throughout the storage of 15 days at 4 °C (P < 0.05). Chemical quality changes in CP-Ar/Air-1 CLE sample were not significantly found at day 15. Those were evidenced by lower changes in pH (6.90), lower carbonyl content (2.41 μmol/mg protein), total volatile base (TVB) content (17.81 mgN/100 g meat), peroxide value (4.21 mg cumene hydroxide/kg meat) and thiobarbituric acid reactive substances (TBARS) (2.35 mgMDA/kg meat) at the end of storage, compared to those of the control and other samples treated with 0.5% CLE and HV-CAP under different gas compositions at day 15 of storage (P < 0.05). Mesophilic bacteria, Pseudomonas, H2S-producing bacteria, Enterobacteriaceae, lactic acid bacteria and psychrophilic bacterial counts were less or equal to 5 log CFU/g meat in CP-Ar/Air-1 CLE sample, which were lower than the control and other treated samples at the end of the storage (4 °C) (P < 0.05). CP-Ar/Air-1 CLE sample also exhibited higher likeness scores for all the tested attributes, mostly associated with the reduced protein and lipid oxidation at the end of storage. After treatment, oxidation of polyunsaturated fatty acids (EPA and DHA) was lowered by 14.9% and 12.4% in CP-Ar/Air-1 CLE sample, compared to that found in the control (P < 0.05). Protein oxidation of HV-CAP treated sample was prevented by 1% CLE, irrespective of gas composition. Therefore, HV-CAP especially under the mixture of Ar and air along with high level of CLE, exhibited high efficacy in prolonging shelf-life of refrigerated (4 °C) Pacific white shrimp up to 15 days.  相似文献

The effect of ambient and refrigerated storage temperature on post-harvest phytochemical qualities of broccoli florets was investigated during storage. Fresh broccoli florets were packed in polypropylene (PP) micro-perforated film bags and stored, under open ambient storage conditions (15 ± 1 °C, 55 ± 2% RH), and laboratory refrigerated storage (4 ± 0.5 °C, 50 ± 2% RH) for a total period of 144 h. Quality of broccoli florets was evaluated in terms of physiological weight loss (PLW), ascorbic acid content, chlorophyll content, β-carotene and total antioxidant activity. Samples packed in PP micro-perforated film showed significantly (P < 0.05) lower losses of PLW, ascorbic acid, chlorophyll, β-carotene and total antioxidant activity (5.51%, 4.53%, 18.9%, 4.04% and 16.4%, respectively), during storage for up to 144 h under refrigerated conditions. For better phytochemical retention, the broccoli florets should be packed in PP micro-perforated film bags and stored under refrigerated conditions.  相似文献

The objective of this study was to investigate the effect of antioxidant active system on physico-chemical properties, the microbial counts, lipid and protein stability and the sensory properties' changes of foal steaks during storage time. The experimental packaging systems were: (i) control group was packaged without active film, (ii) ATOX group was packed with active film containing a 2% of an oregano essential oil and (iii) ATGT group was packed with active film containing 1% of a green tea extract. Samples were filled with 80% O2/20%CO2 atmosphere and displayed under illumination at 2 °C for 14 days. Microbial populations were reduced up to 3.60 log CFU/g on day 14 of storage with the most pronounced effect being achieved by green tea film. Active films with oregano led to a significant (P < 0.001) inhibition of metmyoglobin formation. The use of oregano active film resulted in a decreased lipid and protein oxidation of foal steaks. Active films with oregano were significantly (P < 0.05) more efficient than those with green tea extended fresh odour and colour from 7 to 14 days compared to the control.  相似文献

Onion peels extracted with various concentrations of ethanol were examined for their extraction yield, total phenolic content, DPPH scavenging activity, and reducing power. Onion peel extracted with 50% ethanol exhibited higher extraction yields, total phenolic content, and DPPH scavenging activity than extracts from distilled water, 70 or 95% ethanol. Thus, the antioxidative efficiency to inhibit lipid oxidation of ascorbic acid (0.05%) and 50% ethanol extract of onion peel (0.05, 0.1, and 0.2%) in raw ground pork was investigated during chilled storage (16 days). The pH of the samples decreased considerably during storage (p<0.05). Addition of ethanol onion peel extract significantly improved the thiobarbituric acid reactive substances and peroxide values in raw ground pork meat (p<0.05). Therefore, onion peel extract by 50% ethanol is a very effective inhibitor of lipid oxidation and has potential as a natural antioxidant in raw ground pork.  相似文献

Cortex fraxini was extracted with 95% ethanol to obtain a crude antioxidant extract. The antioxidant activity was evaluated using the linoleic acid peroxidation method and the free radical scavenging assays, namely 2,2′-diphenyl-1-picrylhydrazyl (DPPH) and hydroxyl radicals. Cortex fraxini extract (CFE) showed high inhibition of peroxidation of linoleic acid when compared with butylated hydroxytoluene (BHT). CFE also exhibited excellent scavenging activity on DPPH and hydroxyl radicals. Total antioxidant activity was measured by the reduction of Mo(VI) to Mo(V) by the extract, and subsequent formation of a green phosphate/Mo(V) complex at acid pH. CFE had significant total antioxidant activity and the effects were increased with increasing reaction time. The total phenolic content of the sample, analyzed by using Folin–Ciocalteu’s reagent, was 91.33 mg/g dry weight expressed as pyrocatechol equivalents. Then the suitability of CFE as an antioxidant was determined in peanut oil, and the decrease of lipid oxidation was monitored using thiobarbituric acid-reactive substances (TBARS) assay. CFE treatment significantly (P < 0.05) reduced lipid oxidation in peanut oil compared to the control. No significant differences (P = 0.05) in lipid oxidation were detected between CFE antioxidant and BHT antioxidant samples.  相似文献
