Wine aroma is formed by volatile compounds of different chemical natures and origins. Betanzos is the most northern viticole geographic area from Galicia (NW Spain). The aromatic profiles of wines produced from two white varieties (Blanco lexítimo and Agudelo) and one red variety (Serradelo) from Betanzos, harvested in 2006 and 2007, have been established by gas chromatography (GC/FID). A total of 35 varietal and fermentative aroma compounds were identified and quantified in free volatile form, which include terpenols, C13‐norisoprenoids, alcohols, esters, volatile fatty acids and volatile phenols. To ascertain the compounds with major impact odours, the Odour Activity Value (OAV) was calculated. Twelve compounds showed concentrations above their perception threshold (OAV>1). The results obtained suggest that ethyl octanoate (apple), isoamyl acetate (banana), ethyl hexanoate (fruity) and β‐damascenone (floral) were the most powerful odorants for the white wines Blanco lexítimo and Agudelo from Betanzos. Ethyl octanoate and β‐damascenone (fruity and floral aroma respectively) were the most odorant for the red wine Serradelo.  相似文献

Commercial Albariño wines from different subzones of Certified Brand of Origin ‘Rías Baixas’ (NW Spain) were analysed over four consecutive harvests. The contents of monoterpenes, volatile phenols, alcohols, sulphur compounds, acetates, fatty acids and ethyl esters were determined by gas chromatography (flame ionisation detector and flame photometric detector) and gas chromatography–mass spectrometry. These white wines presented high concentrations of free monoterpenes, volatile phenols, acetates, and ethyl esters, while the levels of sulphur compounds, known as default compounds, were very low. All the wines were elaborated from Albariño grapes, but they were produced by different enological practices, such as skin contact and by carrying out malolactic fermentation or not. No significant differences were found between wines from the same subzone and from different vintages. The results obtained, and confirmed by Principal component and linear discriminant analysis, showed a differentiation among these wines as a function of the Galician subzone of origin.  相似文献

Montepulciano is one of the most famous and important red-berried grapes of Italy. This article presents and discusses a comparative study of aroma profile and phenolic content of the Montepulciano wine from the Marches and the Abruzzo regions. The volatile composition of wines was determined by using headspace solid phase microextraction (HS-SPME) coupled with gas chromatography-mass spectrometry (GC-MS). The PDMS fibre was chosen. The dominating esters in Montepulciano wines were ethyl hexanoate, ethyl decanoate, and ethyl octanoate, whereas phenyl ethanol and 3-methyl-1-butanol were dominating alcohols.Phenolic compounds, namely gallic acid, p-coumaric acid, trans-ferulic acid, caffeic acid, trans-resveratrol, (+)-catechin and (−)-epicatechin, were examined using HPLC-MS with direct injection of wine samples. The total phenolic content of the analysed wines was in the range of 30.4-61.9 mg l−1. The presence of high amounts of esters seems to characterise the volatiles of Montepulciano wines from the Marches, whereas a high level of alcohols was found in Montepulciano wines from Abruzzo. Moreover, multivariate chemometric techniques, such as cluster analysis and principal component analysis, supported this thesis. Bobal is an indigenous Spanish cultivar, principally grown in the region of Valencia. The volatile composition of young red wines made from the cv. Bobal grape variety grown in the La Mancha region of Spain has been studied over five vintages by instrumental analysis to determine the influence of grape variety on the aroma of wine. Free and glycosidically-bound aroma compounds were isolated by solid phase extraction (SPE) using dichloromethane and ethyl acetate respectively to later be analyzed using gas chromatography-mass spectrometry (GC/MS). One hundred and twelve (112) free aroma compounds and ninety-six (96) bound aroma compounds were identified and quantified in Bobal wines oven this five year period. Based on the result, Bobal wine presents a complex chemical profile with a wealth of aromas in its aromatic composition.  相似文献

The volatile profiles of Vitis vinifera cv. Cabernet Gernischet wines in vintages 2010 and 2011 from rain-shelter cultivation and open-field cultivation were compared and detected by headspace solid phase micro-extraction with gas chromatography-mass spectrometry. The results showed that the number and concentration of volatile compounds quantified in wine were lower under rain-shelter cultivation compared with open-field cultivation. The strength of the fruity, fatty, caramel, and floral aromas of the 2010 vintage wines was lower under rain-shelter cultivation condition, and the compounds contributing to herbaceous aroma series were also lower with rain-shelter cultivation in the 2011 vintage wines. However, the strength of fruity, fatty, caramel, floral, and chemical aromas was higher with rain-shelter cultivation in vintage 2011. The cultivations in the two vintages could be clearly divided into three groups by principal component analysis. The difference between two treatments was significant in vintage 2010, whereas there was no significant difference in vintage 2011. The present work reveals the effects of rain-shelter cultivation on Cabernet Gernischet wine volatile compounds and explains that the technique is helpful in improving the wine quality in some rainy regions.  相似文献

The aroma characteristics of Cabernet Sauvignon wines from five different altitudes (Xidang-2110, Dari-2249, Jiunongding-2330, Adong-2610, and Jiangpo-2788, respectively) in the plateau of Yunnan (China) were detected by headspace solid phase micro-extraction gas chromatography mass spectrometry. The results showed that the numbers of volatile compounds increased with altitude rising, while the concentration of the total volatiles decreased with the exception of Xidang-2110. Alcohol and esters accounted for more than 97% of the total volatile compounds. Ten out of thirty-six components (22%) identified and quantified in five wines were found at concentrations higher than their corresponding threshold values (OAVs > 1). Ethyl hexanoate, ethyl butyrate, and 1-octen-3-ol were the three most powerful odorants in wine from Xidang-2110; but odor activity values and relative odor contribution of 1-octen-3-ol were higher than ethyl hexanoate and ethyl butyrate in the wines from Dari-2249 and Adong-2610; meanwhile β-damascenone, ethyl hexanoate, and 1-octen-3-ol were the three most powerful odorants in wines from Jiunongding-2330 and Jiangpo-2788.  相似文献

The purpose of this paper was to study the effect of wine composition and geographical origin on the accumulation of volatile compounds in barrel-aged wines. Therefore, 267 wines belonging to different origin appellations were analysed. In order to analyse the data, a multivariate statistical technique was applied, that can be quite useful in creating an overall view of the problem in which multiple variables are analysed. Statistical analysis gave four significant factors, accounting for 84.12% of the variance. These factors summarise the information of a group of variables closely correlated to each other. Factor 1 grouped together oak lactones and eugenol, so it was associated with oak barrel type and with toasting of barrels. Factor 2 was associated with ethylphenols, related to wine quality diminution. Factor 3 grouped together guaiacol, furfural, and 5-methylfurfural, and was thus associated with wood thermal degradation; factor 4 was associated with the cis/trans ratio, related to oak origin. Whereas geographical origin of wines affected the accumulation of volatile compounds, the cis/trans ratio was only affected by oak barrel type. Among the tested parameters, alcoholic degree was the enological parameter that had the greatest effect on the accumulation of volatile compounds in wines. Oak lactones were the compounds that were present in all wines, so they could be used as oak ageing indicators.  相似文献

Sparkling mead is obtained by secondary fermentation of the mead involving the addition of starter yeast culture, sucrose, nutrients and fining agents. The aim of this study was to evaluate the effect of different fining agents (tannins vs combined fining agents) on the volatile composition of sparkling mead. Sparkling mead was produced from a base mead using a commercial yeast strain (Saccharomyces bayanus) and the volatile compounds were determined by gas chromatography–flame ionisation detection and gas chromatography–mass spectrometry. Thirty six volatile compounds were quantified and the major groups were alcohols (73.2%), acetates (19.1%), carbonyl compounds (5.5%) and ethyl esters (1.2%), represented by 3‐methyl‐1‐butanol, ethyl acetate, acetaldehyde and monoethyl succinate, respectively. The remaining compounds were present at <1%. Eleven volatile compounds exhibited odour activity values >1, with ethyl octanoate and ethyl hexanoate contributing to the aroma of sparkling mead, with fruity, strawberry and sweet notes. The combined fining agents caused a marked decrease in the concentration of volatile compounds compared with tannins. In general, 3‐ethoxy‐1‐propanol, ethyl lactate, ethyl octanoate, diethyl succinate, diethyl malate, monoethyl succinate, 2‐methylpropanoic acid, hexanoic acid, octanoic acid, acetaldehyde, acetoin, furfural, benzaldehyde, 5‐hydroxymethylfurfural, trans‐furan linalool oxide, cis‐furan linalool oxide and 4‐oxo‐isophorone decreased in concentration. Conversely, 1‐propanol and 2‐methylpropanoic acid (tannins) and ethyl butyrate (combined fining agents) increased in concentration. The remaining volatile compounds were not affected. The effect of terroir on volatiles of Vitis vinifera cv Albariño was studied. Twelve commercial Albariño wines from Galicia, Spain, were analysed. The content of varietals and fermentative volatile compounds was determined by gas chromatography. The numerous significant differences found for most of the aromatic compounds studied show the influence of the terroir. The Albariño wines from northern Galicia showed the highest total concentration of volatiles analysed. The volatile components showing the greatest differences in Albariño wines from different areas were terpenes and higher alcohols. Among the terpenes found, geraniol was markedly abundant in the north, while nerol and linalool were most abundant in the south. Among the alcohols, 2‐phenyl ethanol and benzyl alcohol showed the highest concentrations in the south and in the north, respectively. Cluster analysis and principal component analysis revealed two clearly defined main groups of Albariño wines from different terroirs. An earlier study by the same team showed that Chardonnay wines have common olfactory properties by which wine experts can recognize them. The specific Chardonnay olfactory space was also tentatively linked to the relative concentrations of 29 volatile compounds, regarded as possible aroma-impact compounds. The question now is whether or not those initial results hold independently of the sample under consideration, that is, whether these sensory and chemical spaces are vintage-specific. A series of investigations was conducted on a new set of 46 wines (23 Chardonnay wines and 23 non Chardonnay wines) using the same sensory (wine typicality level) and physico-chemical (Gas Chromatography-mass spectrometry-selected ion monitoring: GC-MS-SIM) approaches as in the earlier study. The sensory space of Chardonnay wines has been identified again in this new study. Compared with white wines of other grape varieties, Chardonnay wines do have distinctive and recognizable olfactory characteristics. LSD tests carried out on the chemical data and a PLS analysis predicting wine typicality level from the chemical data showed that the relative concentrations of 35 volatile compounds affected the wines' typicality scores. Of the 35 compounds, 18 were already among the 29 possible aroma-impact compounds identified by the earlier study. These 18 common volatile compounds seem to be vintage-independent and as such might represent the core of the Chardonnay wine olfactory space. The others seem to be specific to the new wines tested and may contribute to the fuzziness of the boundaries of the Chardonnay wine olfactory space. These results emphasize the complexity of the odor quality of Chardonnay wines, with some volatile compounds remaining stable across vintages, while others are specific to enological practices and to vintages.  相似文献

Prefermentative maceration for 8 h at 5, 10 and 15 °C was used to make rosé wines, and changes in their colour (colour intensity (CI), tone and CIELAB parameters), phenolic compounds (classic indices and individual compounds) and volatile compounds (major and minor) were monitored from the must stage to wines until 6 months after bottling. The 15 °C maceration temperature provided wines with the highest CI, a* and C* values, the greatest malvidin‐3‐glucoside content and the lowest alcohol and ethyl acetate levels. Only in these wines were terpenols released after 6 months in the bottle. The wines produced at 5 °C had the highest ester levels, which also remained more stable during storage. When using maceration temperature as the differentiating variable in a discriminant analysis, volatile compounds were important contributors. However, colour and phenolic compound parameters were important when sampling time was used as the differentiating variable. The best scoring wines in an informal sensory evaluation test were those subjected to 15 °C maceration, while the least appreciated were those macerated at 5 °C. The aromatic compounds produced during the fermentation of the red grape cultivars Caiño Tinto, Caiño Longo, and Caiño Bravo were analysed by gas chromatography (FID) on the wines of 2002 and 2003 vintages. In both years, significant differences (p < 0.001) were observed between the wines with respect to the concentrations of aromatic compounds. Caiño Longo wines had the highest concentrations of acetates and esters. The concentrations of ethyl ester and acetates in Caíño Bravo wines were comparatively very low. Principal components analysis confirmed these results: the wines made from the different cultivars and the vintages were clearly different.  相似文献

The sulphur compounds composition of wines produced experimentally from six white cultivars (Alvarinho, Loureiro, Trajadura, Pedernã, Azal Branco and Avesso) was evaluated during two consecutive vintages. Results show that wines could be differentiated according to their sulphur compounds content. In general, Loureiro, Trajadura and Pedernã cultivars led to wines with low concentrations of sulphur compounds; however, Loureiro wines were characterised by significant amounts of dimethyl sulphone, whereas Trajadura wines possessed a high content of 3-(methylthio)propyl acetate and 4-(methylthio)-1-butanol. Alvarinho and Avesso wines showed high levels of S-methyl thioacetate, 3-mercapto-1-propanol, 3-(ethylthio)-1-propanol and 3-methylthiopropionic acid. Significant amounts of 2-methyltetrahydrothiophen-3-one, cis- and trans-2-methyltetrahydrothiophen-3-ol were also found in Avesso wines. Azal Branco wines were low in 3-(methylthio)propyl acetate and 2-(methylthio)ethanol, and high contents in S-methyl thioacetate, 3-mercapto-1-propanol and 2-mercaptoethanol. A linear discriminant analysis of sulphur compounds levels showed a differentiation of wines according to their varietal origin.  相似文献

Three different strains of Saccharomyces cerevisiae D15, Dibosh and 71B – were evaluated in the fermentation of Lonicera edulis wines. Volatile aromatic components were analysed by gas chromatography–mass spectrometry coupled with headspace solid‐phase microextraction. In all, 81 volatile compounds were identified in L. edulis wines, including 43, 48 and 38 individually found in wines fermented with D15, Dibosh and 71B. There were 17 common volatile aromatic components found in all the three L. edulis wines. The main volatile compounds in wines fermented with D15 and Dibosh yeasts were 2‐methyl‐1‐butanol (24.8%) and hexane (20.6%). Pentanol was the primary volatile aromatic compound in wines produced with S. cerevisiae 71B, accounting for 40.8% of total volatile aromatic compounds. Combining the sensory analysis, S. cerevisiae D15 was suggested to be the most suitable strain for producing L. edulis wine. © 2018 The Institute of Brewing & Distilling  相似文献

The aim of this study was to investigate the influence of the cultivation system on the volatile composition of the passion fruit and to determine the odoriferous contribution of the compounds for the aroma of the organic and conventional fruit, besides to assess the total antioxidant activity. The volatile compounds were isolated from dynamic headspace, separated by high-resolution gas chromatography and the odoriferous contribution to the passion fruit aroma was evaluated using the OSME technique. Total antioxidant activity was determined using the ABTS radical reaction. The organic and conventional passion fruit showed similar volatile profile, although some differences occurred. Ethyl 2-propenoate, 2-methyl-1-propanol, diethyl carbonate and ethyl hexanoate were threefold higher in the organic fruit while butyl acetate, hexanal, cis-3-hexenyl acetate and trans-3-hexenyl butanoate were threefold higher in the conventional fruit. Hexanoate and acetate esters, and saturated alcohols described as fruity, sweet, citrus and passion-fruit aroma showed the highest odorific intensity in the organic fruit. Furthermore, trans and cis-3-hexenyl acetate and alpha-copaene, alpha-terpineol, D-limonene, trans-beta-ocimene and delta-cadinene had higher contribution to the organic passion fruit aroma. On the other hand, unsaturated alcohols, beta-myrcene and beta-linalool described as grass, sulfur-like and passion-fruit aroma were higher in the conventional fruit. The organic passion fruit showed higher levels of total phenolic compounds and total antioxidant activity than the conventional fruit, suggesting that the cultivation system influenced the production of antioxidant bioactive compounds.  相似文献

The volatile components of cultivated strawberries Fragaria ananassa cv. Senga Sengana, Senga Litessa and Senga Gourmella were studied by gas chromatography-mass spectrometry. Employing standard-controlled aroma separation by combined vacuum distillation-liquid-liquid extraction, as well as prefractionation on silica gel, the aroma substances of freshly harvested and deep-frozen strawberries from two growing seasons were quantitatively determined by gas chromatography. Methyl and ethyl butanoate, methyl and ethyl hexanoate, trans-2-hexenyl acetate, trans-2-hexenal, trans-2-hexen-1-ol as well as 2,5-dimethyl-4-methoxy-3(2H)-furanone were identified as main volatile components. In comparison to Senga Litessa and Senga Gourmella, Senga Sengana showed higher amounts of aroma compounds. In general, deep-freezing resulted in decreases of the concentrations of most of the aroma substances, but higher amounts of 2,5-dimethyl-4-methoxy-3(2H)-furanone were found in deep-frozen berries than in the freshly harvested ones.  相似文献

Robus coreanus Miquel is widely used in the production of Korean black raspberry (KBR) wine owing to its health benefits and commercial value. The effects of three different commercially available glycosidase enzymes on the volatile compounds in KBR wines were investigated with large‐scale fermentation to develop a high‐flavour‐quality wine. Volatile aroma compounds from the wines were analysed using headspace‐solid phase micro‐extraction‐gas chromatography–mass spectrometry (HS‐SPME‐GC–MS) and sensory evaluations were performed to evaluate the flavour characteristics. KBR wines treated with commercial enzymes yielded high concentrations of terpenes and esters compared with the control wine because the odourless non‐volatile glycosides in KBR wines were converted to their corresponding free forms by the enzymes. HS‐SPME‐GC–MS‐SIM analysis showed that the primary monoterpene compounds in KBR wines treated by the enzymes were myrtenol, linalool, citronellol and a significant quantity of compounds such as 2‐phenyl ethanol and ethyl benzoate, which contributed to the flavour of KBR wine, as determined by GC‐FID. KBR wines treated with the enzymes exhibited different sensory characteristics from the control wine owing to higher intensity of floral and fruity aromas.
