The aim of this study was to estimate the dietary intake of arsenic (As) by children and adults from Jinhu area of China. A duplicate diet approach was used to collect diet samples in November and December 2007. The As content was measured by hydride generation atomic fluorescence spectrometry. The As intakes (median) for different group were: children: 0.6 µg kg?1 bw day?1 or 6.7 µg kg?1 bw week?1; adults: 0.5 µg kg ?1 bw day?1 or 3.8 µg kg ?1 bw week?1, none of which exceeded the provisional tolerable weekly intake (PTWI) of 15 µg kg ?1 bw week?1 for As proposed by the World Health Organization (WHO). The median and maximum of the children group amounted to 44.7% and 125.3% of the PTWI; the values for adults were 25.3% and 118.7%, respectively. There were 3.3% of children whose weekly As intake exceeded the PTWI, and there were 6.7% of adults whose weekly As intake exceeded the PTWI. It is concluded that dietary As intake was safe for most people in Jinhu area, but the high dietary As intake for a minority of people in this area deserves attention.  相似文献

In order to address the issue of excessive intake of aluminium (Al) from Al-containing food additives in the Chinese diet, this study conducted a dietary exposure assessment of Al in the general population based on the national surveillance data of Al content in foods and national food consumption data. It was found that the mean dietary exposure of the whole Chinese population to Al from Al-containing food additives was 1.795 mg kg?1 bw week?1, not exceeding the PTWI, while high dietary exposures (e.g., 97.5th percentile) to Al were 7.660 and 2.103–2.903 mg kg?1 bw week?1 for children, respectively, both exceeding the PTWI. It was found that the dietary exposure to Al for 32.5% of the total Chinese population and 42.6% of children aged 4–6 years exceeded the PTWI. Wheat flour and wheat-based products are the main source of dietary A l exposure (85% of the total intake); and puffed foods are the major source of Al intake for children. These findings suggested that consumption of Al-containing food additives could be a health concern for consumers with high food consumption (97.5th percentile) and children under the age of 14 years.  相似文献

Methylmercury intake for adult males of twelve provinces in China was estimated by means of the 2007 Chinese Total Diet Study. Methylmercury levels were measured in twelve food groups of each province of four regions and was only found in the aquatic food groups. The range for methylmercury contents of aquatic foods was 3.29–31.60?µg?kg?1, being 50–87% of total mercury. Methylmercury intakes from aquatic foods for adult males of twelve provinces ranged from 0.003 to 0.138?µg?kg?1?bw?week?1 with average of 0.041?µg?kg?1?bw?week?1, which were estimated according to methylmercury contents and corresponding aquatic food consumption. Methylmercury intakes for the Chinese population were far below the corresponding provisional tolerable weekly intake (PTWI), which was established by the Joint FAO/WHO Expert Committee on Food Additives (JECFA). Consequently, there was little health risk from methylmercury exposure for the average Chinese population.  相似文献

Fish is the main source of dietary exposure to methylmercury (MeHg), which is a public health concern owing to its potential neurotoxicity. To evaluate the public health risk, this study estimated the total mercury (tHg) and MeHg exposure from fish intake in Hong Kong secondary school students. Median tHg and MeHg concentrations of 280 samples purchased from different commercial outlets (covering 89 species of whole fish and three types of canned tuna), together with the local food consumption data of secondary school students obtained by semi-quantitative food frequency questionnaire in 2000, were used to estimate dietary exposure from fish intake for the average and high consumer (95th percentile exposure). For tHg, the median concentration was 63 µg kg–1 (range 3–1370 µg kg–1) and estimated exposures ranged 0.5–0.6 µg kg–1 body weight (bw) week–1 for an average consumer and 1.6–1.9 µg kg–1 bw week–1 for a high consumer. For MeHg, median concentration was 48 µg kg–1 (range 3–1010 µg kg–1) and estimated dietary exposures were 0.4–0.5 µg kg–1 bw week–1 for an average consumer and 1.2–1.4 µg kg–1 bw week–1 for a high consumer. These values are below the respective provisional tolerable weekly intake (PTWI) established by the Joint Food and Agriculture Organization/World Health Organization Expert Committee on Food Additives (JECFA). The health risk is greater for high consumers since MeHg exposures may approach or exceed the PTWI when other dietary sources are taken into account.  相似文献

A total of 214 samples, consisting of brown rice, barley, mixed grains, corn, wheat and wheat flour were analysed for T-2 and HT-2 toxins using high-performance liquid chromatography with fluorescence detection. Recovery and repeatability were 79.9%–107.5% and 4.9%–14.5% for T-2, and 74.0%–106.1% and 5.0%–17.9% for HT-2, respectively. T-2 toxin was detected in 11 (5.1%) of all samples. The highest incidence was found in corn (21.7%) followed by mixed grains and brown rice. Mean of all samples was 1.5–4.1?µg?kg?1, the maximum level being 41.5?µg?kg?1 in corn. HT-2 toxin was detected in 126 (58.9%) of all samples, and the mean values were 26.4–59.2?µg?kg?1. The estimated daily intakes for the sum of T-2 and HT-2 toxins were 2.56, 3.22, 2.53, 0.03, 0.01 and 2.45?ng (kg?bw)?1?day?1 in brown rice, barley, mixed grains, corn, wheat and wheat flour, respectively.  相似文献

The aim of the study was to assess the dietary intake of caramel colours and their by-products 4-methylimidazole (4-MEI) and 2-acetyl-4-tetrahydroxybutylimidazole (THI) for the Chinese population. Based on the typical and maximum reported use levels of caramel colours in 15 food categories, the dietary intakes of combined and single-class caramel colours of Classes I, III and IV were estimated with the food consumption data from the China National Nutrient and Health Survey. Using the mean values of 4-MEI and THI contents in Class III and Class IV Caramel colour samples, the exposures to 4-MEI and THI from dietary caramel colours were derived. The results showed that the combined and individual average dietary caramel colour intakes for the Chinese population of different age groups were estimated to be 232–60.3 mg kg?1 bw day?1 for combined caramels, 5.9–29.2 mg kg?1 bw day?1 for Class I, 7.7–29.6 mg kg?1 bw day?1 for Class III, 21.2–54.3 mg kg?1 bw day?1 for Class IV, which were far below the group acceptable daily intake (ADI) and respective ADIs. The combined intake of 4-MEI from Class III and IV caramel colours was estimated to be 3.8–5.2 μg kg?1 bw day?1 on average, and 12.9–27.1 μg kg?1 bw day?1 at 95th-97.5th percentile for the general population. The anticipated exposure to THI from Class III caramel colours was estimated to be 0.1–0.3 μg kg?1 bw day?1 on average and 0.5–1.7 μg kg?1 bw day?1 at 95th–97.5th percentile for the general population. The dietary caramel colours intakes and the exposures to 4-MEI and THI from dietary caramel colour for the Chinese population were considered to be of low health concern based on the present toxicological data. Soy sauce, vinegar and compound seasonings were found to be the main contributors to the dietary intake of caramel colours.  相似文献

The aim of this first study was to determine the dietary exposure of antimony, lead, mercury in foodstuffs consumed by secondary school students in Hong Kong. Around 100 composite food items were purchased and then cooked prior to analysis. Antimony was measured by hydrogen generation (HG)/inductively coupled plasma–mass spectrometry (ICP–MS), while lead was determined by ICP–MS. Total mercury was measured by cold vapour atomic absorption spectrometry. The detection limits for antimony, lead and total mercury were 1, 0.6 and 3 µg kg?1, respectively. The dietary intake of antimony, lead and total mercury for an average secondary student were estimated to be 0.252, 1.98 and 0.92 µg (kg bw)?1 week?1, respectively. The dietary intake of antimony, lead and total mercury for high-consumer secondary student were estimated to be 0.567, 5.09 and 2.33 µg (kg bw)?1 week?1, respectively. The main contribution to antimony, lead and mercury were milk, vegetables and seafood, respectively. The Tolerable Daily Intake (TDI) of antimony, as recommended by WHO, is 6 µg (kg bw)?1 week?1, while the Provisional Tolerable Weekly Intakes (PTWI) of lead and mercury, as recommended by JECFA, are 25 and 5 µg (kg bw)?1 week?1, respectively. The estimated exposure values for secondary school students were compared to these safety reference values. For the relevant population, this study confirms the low probability of health risks from these metals via food consumption.  相似文献

This paper reports an estimate of the dietary intake of lead by children and adults from the Jinhu area in South-eastern China. A duplicate diet approach was used to collect food samples in November and December 2007. The lead content was measured by furnace atomic absorption spectrometry. Median lead intakes for different groups were as follows: children: 1.65 µg(kgbw)?1 day?1; and adults: 1.10 µg(kgbw)?1 day?1. No exposure exceeded the provisional tolerable weekly intake (PTWI) of 25 µg(kgbw)?1 week?1 proposed by the World Health Organization (WHO). However, median and maximum exposure for the children group amounted to 60.8% and 97.2% of the PTWI, respectively, which were higher than those for adults, which were 40.5% and 86.4%, respectively. It was concluded that health risks due to dietary lead intake seem to be high in Jinhu.  相似文献

The objective of this study was to determine the distribution of an economically important class of mycotoxins, the aflatoxins, in rice milling fractions. Rice plants grown under field production conditions are frequently infected with types of pathogenic fungi that produce toxic metabolites (mycotoxins). Paddy (seeds) rice from healthy plants in the field was collected and stored on a farm under humid, poorly ventilated conditions. Samples were milled into four fractions (hulls, brown rice, bran and white rice) and analysed for aflatoxins (B1, B2, G1 and G2) using a validated method. Rice fractions from healthy plants, which contained low levels of aflatoxins (less than 1?µg?kg?1), were used to determine the efficiency of the extraction method. Seeds stored under poor conditions were found to be contaminated with aflatoxins B1 and B2 as were the fractions. The sums of AFB1 and AFB2 in stored paddy rice, hulls, brown rice, bran and white rice were 141, 39, 158, 367 and 56?µg?kg?1, respectively. The ratio of aflatoxin B1 and B2 was about 10?:?1. AFG1 and AFG2 were less than 1?µg?kg?1. Thus, brown rice contained 92.9% of the aflatoxins in paddy rice, whereas white rice contained only 27.9%.  相似文献

A survey of moulds and mycotoxins was performed on 99 rice samples taken from the Swedish retail market. The main objective was to study the mould and mycotoxin content in basmati rice and rice with a high content of fibre. Samples of jasmine rice as well as long-grain rice were also included. The samples were analysed for their content of ochratoxin A (high-performance liquid chromatography (HPLC)), aflatoxin B1, B2, G1, and G2 (HPLC, RIDA®QUICK), and mould (traditional cultivation methods in combination with morphological analysis). The majority of samples were sampled according to European Commission Regulation 401/2006. Subsamples were pooled and mixed before milling and both mould and mycotoxin analyses were performed on milled rice. The results showed that the majority of basmati rice (71%) and many jasmine rice samples (20%) contained detectable levels of aflatoxin B1 (level of quantification = 0.1 µg aflatoxin kg?1 rice). Two samples of jasmine rice and ten basmati rice samples contained levels over the regulated European maximum limits of 2 µg kg?1 for aflatoxin B1 or 4 µg kg?1 for total aflatoxins. Aspergillus was the most common mould genus isolated, but also Penicillium, Eurotium, Wallemia, Cladosporium, Epicoccum, Alternaria, and Trichotecium were found. The presence of Aspergillus flavus in 21% of the samples indicates that incorrect management of rice during production and storage implies a risk of mould growth and subsequent production of aflatoxin. Rough estimates showed that high rice consumers may have an intake of 2–3 ng aflatoxin kg?1 bodyweight and day?1 from rice alone. This survey shows that aflatoxin is a common contaminant in rice imported to Europe.  相似文献

Brown rice and yellow milled rice were characterised in relation to milling properties, cooking, processing quality and microbial testing, and utilised to develop an expanded snack. The extrusion process was done in a Mapimpianti single screw cooker-extruder. A flour sample feed rate of 70 g (dry matter) min−1 was maintained by varying the force-feeder speed. A screw speed of 150 rev min−1 and a die with 20 die-nozzle orifices (2 mm in dia) were used. The die zone was heated at 110°C by electrical resistance. Compressed air was circulate around the barrel to maintain precise control of the temperature. The moisture content of the samples was 120, 150 and 180 g kg−1. The grains were classified as long-thin with an average size of 2·13 mm×6·79 mm. The milling yields obtained in the laboratory with paddy rice were 700 g kg−1 brown rice and 600 g kg−1 milled rice. Brown rice and yellow milled rice had similar amylose contents, 225 and 256 g kg−1, respectively. Gel consistency was soft with low gelatinisation temperature (63–68°C) for both samples. Field fungi such as Helminthosporium oryzae and storage fungi as Aspergillus spp were present in paddy, yellow milled and commercial rice. Helminthosporium oryzae was not present in extruded products. The extruded products showed low density and a high degree of expansion, with the optimum degree of expansion obtained in flours processed with moisture at 150 g kg−1 in both milled and brown rice. The highest values for water solubility index were obtained with flours from milled yellow rice and none of the extruded products showed significant differences on water absorption index. Sensory analyses carried out on the snack products showed them to be acceptable, with the bent acceptance for products made from milled yellow rice processed with 150 g kg−1 moisture.  相似文献

The presence of heavy metals in big game meat may pose a risk to human health. The main objective of this paper is to carry out a risk assessment study (using a probabilistic and point-estimate approach) of lead intake by consumption of red deer and wild boar meat in Southern Spain based on Spanish data collected in the period 2003–2006. In general, the concentration levels found for wild boar meat (mean?=?1291?µg?kg?1) were much higher than those observed in red deer meat (mean?=?326?µg?kg?1). The results from a point-estimate risk assessment showed that the estimated average intake of lead among different exposure scenarios varied from 0.1 to 6.5 and from 0.3 to 38?µg?kg?1?week?1 for red deer and wild boar meat, respectively; and from 0.3 to 35?µg?kg?1?week?1 for individuals consuming both red deer and wild boar meat, and that the estimated intake of lead by consumption of big game meat differed significantly between hunters and non-hunters, it being higher for hunters. Besides this, results from the probabilistic risk assessment study corroborated the fact that risk is greater in hunter populations, reaching a maximum in individuals consuming only wild boar and both types of meat, with 0.4% and 0.2% of the population above the provisional tolerable weekly intake (PTWI), respectively. Likewise, the hunter populations consuming wild boar and both types of big game meat (red deer and wild boar meat) were exposed to the maximum lead level (56?µg?kg?1?week?1), which corresponded approximately to 224% of the PTWI. Further data and studies will be needed to give a complete risk estimation in which it will be crucial to consider the contribution to the lead intake level of other foods in the diet of both population groups.  相似文献

Mercury (Hg) and cadmium (Cd) were quantified in fish, cephalopods and crustaceans from Italian supermarkets. Sample compliance with European dietary standards as well as human health risks according to provisional tolerable weekly intake (PTWI) and the methodology of target hazard quotient (THQ) were evaluated. Both element levels were under European legal limits, except for some fish having Hg and Cd contents exceeding or equal to critical values. Estimated weekly intakes (Hg: fish = 0.07–1.44 µg kg?1 bw week–1; cephalopods = 0.05–0.15 µg kg?1 bw week–1; crustaceans = 0.04–0.08 µg kg?1 bw week–1; and Cd: fish = 0.04–0.32 µg kg?1 bw week–1; cephalopods = 0.07–0.27 µg kg?1 bw week–1; crustaceans = 0.05–0.11 µg kg?1 bw week–1) as well as THQ < 1 were within safe limits. Although there seems to be no important risks associated with seafood consumption, Hg exposure was in some cases close to safety margins and thus levels of this metal should be under frequent surveillance.  相似文献

A survey of the levels of some essential and non-essential trace elements in different types of rice available on the Swedish retail market was carried out in 2001–03. The types of rice included long and short grain, brown, white, and parboiled white. The mean levels found were: chromium (Cr)?=?0.008 mg kg?1, copper (Cu)?=?1.9 mg kg?1, iron (Fe)?=?4.7 mg kg?1, manganese (Mn)?=?16 mg kg?1, platinum (Pt)?<?0.0003 mg kg?1, rubidium (Rb)?=?3.3 mg kg?1, selenium (Se) =0.1 mg kg?1; and zinc (Zn)?=?15 mg kg?1. Inductively coupled plasma-mass spectrometry (ICP-MS) was used for the determination of Pt, Rb, and Se, after acid digestion. All other elements were determined using atomic absorption spectrometry (AAS) after dry ashing. Intake calculations were performed and it was concluded that rice may contribute considerably to the daily requirements of the essential elements Cu, Fe, Mn, Se, and Zn if rice consumption is high. The levels of some elements, e.g. Fe and Mn, were significantly higher in brown compared with white rice.  相似文献

Dietary exposure of the Valencia Region population to polychlorinated dibenzo-p-dioxins (PCDDs), polychlorinated dibenzofurans (PCDFs) and PCBs was assessed in the Region of Valencia in 2010–2011. A total of 7700 food samples were collected. Occurrence data were combined with consumption data to estimate dietary exposure in adults (>15 years of age) and young people (6–15 years of age). The estimated intake was calculated by a probabilistic approach. Average intake levels (upper-bound scenario) were 1.58 and 2.76 pg toxic equivalent (TEQ) kg?1 body weight (bw) day?1 for adults and young people, respectively. These average intakes are within range of the tolerable daily intake of 1–4 pg WHO-TEQ kg?1 bw day?1 recommended by WHO, and slightly above the tolerable weekly intake (TWI) of 14 pg TEQ kg?1 bw week?1 and the Provisional tolerable monthly intake of 70 pg TEQ kg?1 bw month?1 set by the Scientific Committee on Food and the Joint FAO/WHO Expert Committee on Food, respectively. These results show that the contamination levels in food and therefore the exposure of the general population to PCDD/Fs and PCBs have declined in this region and therefore show the efficiency of the European risk-management measures. In terms of risk characterisation, the results showed that, under the upper-bound scenario, 22% of the adult and 58% of the young people population could exceed the TWI.  相似文献

Probabilistic and deterministic estimates of the acute and chronic exposure of the Danish populations to dithiocarbamate residues were performed. The Monte Carlo Risk Assessment programme (MCRA 4.0) was used for the probabilistic risk assessment. Food consumption data were obtained from the nationwide dietary survey conducted in 2000–02. Residue data for 5721 samples from the monitoring programme conducted in the period 1998–2003 were used for dithiocarbamates, which had been determined as carbon disulphide. Contributions from 26 commodities were included in the calculations. Using the probabilistic approach, the daily acute intakes at the 99.9% percentile for adults and children were 11.2 and 28.2 μg kg?1 body weight day?1, representing 5.6% and 14.1% of the ARfD for maneb, respectively. When comparing the point estimate approach with the probabilistic approach, the outcome of the point estimate calculations was generally higher or comparable with the outcome of the probabilistic approach at the 99.9 percentile (consumers only). The chronic exposures for adults and children were 0.35 and 0.76 μg kg?1 body weight day?1 at the 99.9 percentile, representing 0.7% and 1.5%, respectively, of the acceptable daily intake for mancozeb and maneb at 50 μg kg?1 body weight.  相似文献

BACKGROUND: Iron (Fe) fortification of parboiled rice increases both Fe concentration and bioavailability in milled grains (i.e. white rice). The aim of the present study was to evaluate parboiled rice fortified with 250 and 450 mg Fe kg?1 paddy rice for its pre‐cooking appearance, cooking quality, basic sensory attributes and overall acceptance in comparison with unfortified parboiled rice in Thailand and local parboiled rice in Bangladesh. RESULTS: Fe fortification at 250 mg Fe kg?1 paddy rice significantly elevated Fe concentration in white rice to as high as 19.1 mg Fe kg?1 white rice, compared with 6.2 mg Fe kg?1 white rice for unfortified parboiled rice, without any adverse impact on consumer acceptance based on the current preliminary assessment. The added Fe was well retained in the cooked rice, with significant residual value for human intake. Panellists in Thailand and Bangladesh did not detect significant differences in the acceptability of parboiled rice fortified at 250 mg Fe kg?1 paddy rice compared with unfortified and local parboiled rice respectively. However, Fe fortification of parboiled rice at the higher level of 450 mg Fe kg?1 paddy rice significantly intensified the yellow colour of the grain and changed the off‐flavour, chewiness and flakiness of the cooked Fe‐fortified parboiled rice. This resulted in a low acceptability ranking of parboiled rice fortified at 450 mg Fe kg?1 paddy rice by panellists in both Thailand and Bangladesh. CONCLUSION: Fe fortification of parboiled rice at an appropriate level (e.g. 250 mg Fe kg?1 paddy rice) is dosage‐effective and acceptable to rice consumers. Concentration levels of As, Cd, Hg, Pb, Tl, Sn, Sb Co, Cu, Mn, Se, Zn, Cr, Ni and Mo in different types of rice cultivated in irrigated fields in Brazil were evaluated. Arsenic, Cd, Pb, Zn, Mn and Cu were found in higher concentrations in brown rice samples, suggesting the prevalence of these elements in the bran. Meanwhile, lower concentrations of Pb, Mo, Cr, Se and Co were found in parboiled rice. Organic rice did not differ of cultivated conventionally rice. Thallium, Hg and Sb were not detected in any rice sample whose limits of detection were 0.7 μg kg?1, 2.5 μg kg?1 and 8 μg kg?1, respectively. The concentrations of the investigated elements were compared with those reported for polished rice and brown rice from other countries, unveiling concentrations in general at the same level for rice produced at non-contaminated sites.  相似文献

This paper provides an estimate of the weekly intake of total mercury (THg) and methyl mercury (MeHg) from consumption of fish from the Sagua la Grande River, Villa Clara, Cuba, by determining the THg levels in different fish species. The levels varied between 0.143 and 0.484 μg g?1 on a fresh weight basis. None of the analysed fish was found to have levels above the national and international regulatory levels, although THg levels over 0.2 μg g?1, the threshold concentration established by the World Health Organization (WHO) for the consumption by vulnerable population groups, were found in 75% of samples. The MeHg level was found to be 84% of the THg content. A Food Frequency Survey was given to 127 townspeople to estimate river fish consumption. The weekly intake of MeHg was found to be greater than the value established by the provisional tolerable weekly intake (PTWI) in 50% of children, in 80% of pregnant women, and in 75% of women in childbearing age. These weekly intakes can represent an important risk to the population's health, especially for vulnerable groups.  相似文献

A sensitive flame atomic absorption spectrometry (FAAS) method was developed for the determination of cadmium (Cd) in brown rice and spinach. The method involves extraction with 1?M hydrochloric acid (HCl), followed by a selective pre-concentration by solid-phase extraction (SPE). The pH of the loading sample solution was adjusted to 4.0 for the brown rice and to 5.0 for the spinach. The masking agents, tartrate and citrate, were required for the spinach before pH adjustment. The SPE step achieved a 20-fold enrichment of the sample solution. The limits of quantification (LOQs) were 0.0054?mg?kg?1 for the brown rice and 0.0022?mg?kg?1 for the spinach, being more sensitive than those of AOAC Official method 999.10. A single-laboratory validation was performed by testing spiked samples at 0.04 and 0.08?mg?kg?1 for the brown rice, and 0.02 and 0.04?mg?kg?1 for the spinach. The average recoveries were 93.3–96.9% with relative standard deviations (RSDs) of 4.1–8.2% for brown rice, and 90.5–91.9% with RSDs of 5.8–10.0% for spinach.  相似文献
