BACKGROUND: There is no literature on changes in organoleptic, nutritive and functional properties during plum development and on‐tree ripening. In this work a comparative study on the evolution of physical, chemical and nutritive parameters and bioactive compounds of eight plum cultivars (yellow and dark‐purple) was performed. RESULTS: The main changes related to ripening (colour, total soluble solids, acidity, firmness and bioactive compounds) started at the early stages of fruit development, with significant differences among cultivars. Colour hue angle was highly correlated with increase in anthocyanins or carotenoids (in both skin and flesh). Total antioxidant activity (TAA) was determined in the hydrophilic (H‐TAA) and lipophilic (L‐TAA) fractions separately, and values were always higher in the skin than in the flesh. A continuous increase in both H‐TAA and L‐TAA during the process of ripening occurred. H‐TAA was about twofold higher than L‐TAA in the dark‐purple cultivars, while the opposite was found in the yellow cultivars. In addition, H‐TAA was correlated with total phenolics and total anthocyanins, while L‐TAA was positively correlated with total carotenoids. CONCLUSION: In order to achieve the optimal organoleptic, nutritive and health‐beneficial properties of plum consumption, it would be advisable to harvest the fruits at the fully ripe stage. BACKGROUD: Coloured potato varieties rich in anthocyanins are of increasing interest in breeding to upgrade the nutritional quality of tubers. The objective of this study was to examine purple fleshed breeding clones for anthocyanins, soluble phenols and their antioxidant capacity, and to compare them in this respect with purple and white/yellow fleshed potato cultivars. RESULTS: Within the coloured potato group, the breeding clones had the highest contents of anthocyanins, with values ranging from 0.94 to 1.75 g kg?1 fresh weight. In cultivars and clones with purple flesh the amounts of soluble phenols were 2.6‐times higher than in white/yellow fleshed potatoes. In addition, coloured clones exhibited 4.4‐fold higher antioxidant activity, which was correlated with phenols and anthocyanins. But there were no major differences between the two potato groups in dry matter, starch, crude protein and reducing sugars. CONCLUSIONS: The involvement of purple fleshed potatoes in breeding led to increased anthocyanin and phenol contents of the resulting progeny. Consumption of berries has become popular among health-conscious consumers due to the high levels of valuable antioxidants, such as anthocyanins, and phenolic compounds in berries. Four Rabbiteye blueberry cultivars (i.e., Powderblue, Climax, Tifblue, and Woodward) grown organically and conventionally were compared regarding their chemical profiles and antioxidant capacity in terms of total phenolic content (TPC), total anthocyanin content (TAC) and ORAC activity. Regardless of the high TPC, TAC and ORAC in both organically and conventionally grown blueberries, not all the organic berries showed significantly higher TPC, TAC and ORAC than the conventional berries. The chemical profiles (i.e., the free phenolic compounds and anthocyanins) were determined with aid of HPLC-MS, by which 13 individual anthocyanins and seven free phenolics were identified. This study demonstrated the subtle differences of bioactive phytochemicals between the organically and conventionally grown berries.  相似文献

ABSTRACT: Four cultivars of sour cherries (Balaton, Karneol, Kroeker and Northstar), 2 cultivars of plums (BY 8158.50 and Methley), and 1 red raspberry cv. Prelude were analyzed for total phenolics, antioxidant capacity, and total anthocyanins before and after jam production to evaluate their changes after thermal processing. Fruits had total phenolics ranging from 245.7 to 398.5 mg gallic acid equivalent (GAE)/100 g. Antioxidant capacity of fruits ranged from 354.8 to 692.3 mg/100 g, expressed as vitamin C equivalent antioxidant capacity (VCEAC). Total anthocyanins of fruits ranged from 30.9 to 67.1 mg cyanidin 3-glucoside equivalent (CGE)/100 g. In 100 g of jam, total phenolics varied from 132.9 to 218.9 mg GAE, while antioxidant capacity ranged from 205.6 to 373.5 mg/100 g VCEAC. Jams had total anthocyanins of 5.4 to 30.4 mg CGE/100 g. On the basis of fresh fruit (100 g), the processing and heating during jam making generally decreased the contents of total phenolics, VCEAC, and total anthocyanins. Major losses occurred in anthocyanin content where overall retention varied from 89% to 21%. HPLC analysis of individual anthocyanins from cherry cv. Balaton to its jam showed that processing caused 90% decrease in anthocyanins. The results indicated that more than 73% total phenolics and more than 65% antioxidant capacity were retained after processing fruits into jams. Optimization of food processing would help to conserve the bioactive phenolic compounds in fruits.  相似文献

The phenolics in 20 apple cultivars comprising 19 English cider apple varieties and one dessert apple variety were analysed by high‐performance liquid chromatography/tandem mass spectrometry. The cider varieties contained higher levels than the dessert apple and the peel was richer in phenolics than the flesh. The phenolic concentrations ranged between 230 and 4920 mg kg?1 fresh weight in the flesh and between 546 and 6306 mg kg?1 fresh weight in the peel. Fifteen compounds from five different phenolic groups, flavan‐3‐ols, flavonols, anthocyanins, hydroxycinnamates and dihydrochalcones, were detected. The major components in the flesh were 5‐O‐caffeoylquinic acid, procyanidin B2 and (?)‐epicatechin, while (?)‐epicatechin and quercetin glycosides predominated in the peel. Grapes (Vitis vinifera L.) possess health-promoting effects attributed to their supply of a wide variety of bioactive phenolics. Juice and skin fractions of 4 varieties of table grapes: Red Globe, Crimson Seedless, Autumn Royal, and Ribier were prepared to determine and compare their total phenolics content, antioxidant capacity (DPPH, FRAP, and ORAC), anthocyanins, and specific phenolics (caffeic acid, gallic acid, resveratrol, and catechin) content, since a series of positive health benefits are expected from the intake of any of these fractions. Higher amounts of total phenolics and antioxidant capacity were observed in the skin fractions (P < 0.05). Blue grapes (Autumn Royal and Ribier) exhibited higher phenolics content and antioxidant capacity (P < 0.05) than red grapes. The most abundant phenolic compound observed was catechin (P < 0.05). Significant correlations between the antioxidant capacity and total phenolics were observed in grape juice and skin fractions. Autumn Royal juice provides a very high amount of phenolics, anthocyanins, and exhibits the highest antioxidant capacity, offering the best health promoting properties compared with the other grape varieties studied. PRACTICAL APPLICATION: Grapes possess health-promoting effects attributed to their supply of a wide variety of bioactive phenolics. Grape juice made with blue grapes (Autumn Royal, Ribier) exhibit higher phenolics content and antioxidant capacity than juice elaborated with red grapes (Red Globe, Crimson Seedless). The skin is a good source of phenolics and has a high antioxidant capacity. Specific health-promoting phenolics are more abundant in blue grapes, mainly in their skin fraction, which should not be discarded.  相似文献

Abstract: Phenolic compounds and anthocyanins in muscadines have attracted much attention due to their diverse biological activities. With bioassays of antioxidant activities in terms of total phenolic content (TPC), total anthocyanin content (TAC), total procyanidin content (TPA), oxygen radical absorbance capacity (ORAC), and ferric reducing antioxidant power (FRAP) of different parts of the Noble muscadine, the butanol (BuOH) extract of the muscadine skin showed the highest TPC (317.91 ± 1.83 mg GAE/100 g FW), which might be ascribed to its high TAC of 227.06 ± 1.29 mg/100 g fresh weight (FW). The ethyl acetate (EtOAc) extract of the muscadine seed contained the highest TPA (55.30 ± 0.63 mg CE/100 g FW). Correlation analyses demonstrated a significant linear relationship of TPC and TAC compared to their ORAC and FRAP values within the range of R2 from 0.9283 to 0.9936, which suggested that phenolics and anthocyanins in the extracts contributed significantly to their antioxidant potential. Nineteen individual phenolics and 5 anthocyanins were identified by HPLC‐MS, which indicated different chemical profiles of anthocyanins and other phenolics in the muscadine extracts. Practical Application: The paper has provided rich information of bioactive phytochemical profiles in different solvent extracts and their correlation with the antioxidant activity in the muscadine that is a very special regional fruit in U.S. Its high content of phenolic compounds demonstrates that muscadine could be beneficial to human health.  相似文献

This study revealed that the ethanolic bran extracts of 11 Thai pigmented (red and purple) and 2 nonpigmented rice varieties exerted scavenging activity against DPPH and ABTS radicals and ROS in HL‐60 cells in the following order: red > purple > nonpigmented rice. These rice extracts also showed the same order of phenolic and flavonoid contents, which were strongly correlated with their scavenging activity. Phenolic subtype analysis further indicated that proanthocyanidins as well as anthocyanins and protocatechuic acid contributed directly to antioxidant capacity in red and purple rice bran, respectively. In contrast, these pigmented rice bran extracts possessed moderate chelating activity partly attributed to their contents of phenolics and flavonoids, especially proanthocyanidins in red rice bran. Moreover, rice bran extracts significantly restored SOD and CAT activities in oxidative stress‐induced A549 cells. This study provides new insights on the intracellular potent antioxidant capacity of pigmented rice bran extracts in the cell‐based systems.  相似文献

In this study, in order to evaluate the in vitro bioaccessibility of fresh and sun‐dried figs, total antioxidant capacity (TAC), total proanthocyanidin content (TPA) and the major phenolic compounds were determined at different phases of simulated gastrointestinal (GI) tract digestion for Sarilop and Bursa siyahi fig varieties. Four major phenolic compounds (chlorogenic acid, rutin, cyanidin‐3‐glucoside (C3G) and cyanidin‐3‐rutinoside (C3R)) were investigated for GI tract digestion. The results of in vitro GI tract digestion revealed that the dialysed fraction (IN) represented 9–26% and 1–22% of the initial TAC of the whole‐fresh yellow and purple figs, respectively. Moreover, in case of 2,2‐azinobis(3‐ethylbenzothiazoline)‐6‐sulphonic acid (ABTS), TPA and chlorogenic acid contents, drying caused an increase in the IN fraction of yellow figs (38, 140, 50%, respectively). The bioaccessibility of C3G and C3R were quite low for fresh figs (0–5% of the initial values), whereas for dried figs, anthocyanins were not detected at all in the IN fraction.  相似文献

ABSTRACT: The effects of hot and cold (nonheated) pressing on yield, quality components, and nutraceutical content of juice, grapes, and press fractions (seeds and skins) from Black Beauty ( Vitis rotundifolia ) and Sunbelt ( Vitis labruscana L.) grape cultivars were evaluated. Heating the must before pressing increased juice yield, titratable acidity, red color, brown/yellow pigments, and darkness and decreased the press fraction yield and juice pH in both cultivars. Sunbelt juice from the heated must had the highest yield (786 L/metric ton), red color, brown/yellow pigments, and darkness. Black Beauty nonheated must had the largest press fraction (43%) but the lowest red color, brown/yellow pigments, and darkness in the juice. The juice generally had less total phenolics, total anthocyanins, and oxygen radical absorbance capacity (ORAC) than the whole grapes. The juice from heated Black Beauty and Sunbelt musts had the highest total phenolics (1354 and 1937 mg/L, respectively) and anthocyanins (414 and 513 mg/L, respectively). Although the data for seeds and skins are on a dry basis, the press fractions had higher levels of phenolics and ORAC than the whole grapes and juice. The dried seeds had more phenolics and less anthocyanins than the skins. The highest total phenolic level (95338 mg/kg) equivalents and ORAC level (1100 μmol trolox/g) was in Black Beauty seeds from nonheated must. The skins of nonheated Sunbelt had the highest anthocyanins (11889 mg/kg). Because the press fractions of both cultivars had high ORAC values and total phenolic levels, products with nutraceutical benefits could be developed.  相似文献

A variety of phenolics had been found to be functional in promoting cellular glucose consumption that is important for blood glucose regulation. Sweet cherry (Prunus avium) is rich in such kinds of phenolics, including hydrocinnamic acids, anthocyanins, flavonols, and flavan‐3‐ols. Furthermore, a sweet cherry phenolics‐rich extract (PRE) was found to be effective in promoting HepG2 glucose consumption. Seventeen components were preliminarily identified by HPLC‐ESI‐MS, including 9 hydrocinnamic acids, 4 anthocyanins, 3 flavonols, and 1 flavan‐3‐ol. To investigate the cellular glucose consumption‐promotion activity of different phneolics subclasses, the phenolics were further fractionated into an anthocyanin‐rich fraction (ARF), hydrocinnamic acid‐rich fraction (HRF), and flavonol‐rich fraction (FRF) through liquid–liquid extraction and mix‐mode cation‐exchange solid‐phase extraction. The 3 fractions promoted HepG2 glucose consumption to different levels, with the promotion effects of HRF and FRF stronger than that of the ARF. The results provide guidance on the use of sweet cherry as a functional fruit.  相似文献

Commercial concentrated Concord (CCJ) and Isabel (CIJ) grapes juices were stored at 4–5 °C while pasteurised ready‐to‐drink juices of the same grape cultivars (PCJ and PIJ) were kept at 20–25 °C under indirect light for 10 months, simulating industrial storage conditions. (+)‐catechin preservation during storage ranged between 63% (PCJ) and 52% (PIJ); (?)‐epicatechin retention was of 32% (CCJ) and 15% (CIJ). Total phenols retention ranged from 93% (CCJ) to 84% (PCJ) and radical scavenging activity (RSA) from 87% (PIJ) to 85% (CCJ and PCJ). Concentrated juices showed higher monomeric flavan‐3‐ols amounts and CCJ depicted superior phenolic contents. PIJ yielded the highest RSA during storage per phenolic unit. Process and storage impacted flavan‐3‐ols and not total phenolics and RSA during 10‐month ageing.  相似文献

Non‐galloylated and galloylated flavan‐3‐ol composition in seeds from Vitis vinifera L. var. Graciano, Tempranillo and Cabernet Sauvignon grapes harvested in 2000, 2001 and 2002 at the same geographical area were determined using normal‐phase HPLC coupled with electrospray ionization mass spectrometry (LC/ESI‐MS) detection. Non‐galloylated and monogalloylated flavan‐3‐ols up to octamers, and di‐, and trigalloylated flavan‐3‐ols up to heptamers were identified in all grape seeds. Comparisons of the flavan‐3‐ol composition in three grape varieties harvested in three different years indicate that levels of non‐galloylated flavan‐3‐ols decrease as the degree of polymerization increased, whereas the monogalloylated dimers were present in the highest levels in all varieties and vintages. The levels of other monogalloylated flavan‐3‐ols varied in different vintages. Tempranillo contained the lowest levels of non‐galloylated and monogalloylated flavan‐3‐ols, whereas Graciano contained the highest levels, with the exception of non‐galloylated flavan‐3‐ols in vintage 2001, and non‐galloylated monomers in vintages 2000 and 2002. Grape seeds from vintage 2000 contained the highest levels of both non‐galloylated and galloylated structures. Statistical analyses indicate that the distribution of the flavan‐3‐ols is primarily determined by genetic factors and is also strongly influenced by climate conditions. Blueberry fruits from five commercial cultivars and 13 breeding selections grown at the same locations over two growing seasons were analysed for total phenolics (TPH), total anthocyanins (ACY), total hydroxycinnamic acids (HCA), total flavonols (FLA), fruit weight and oxygen radical‐absorbing capacity (ORAC). Variation in ORAC, TPH, ACY, HCA, FLA and fruit weight among genotypes was much greater than that observed between growing seasons, indicating that genetics plays a more important role than growing season in influencing ORAC and phenolic content in blueberries. Significant main effects for growing season and genotype × growing season observed for ORAC, ACY, HCA and fruit weight demonstrate that environmental growing conditions can impact levels of phenolics and ORAC in blueberries and that certain genotypes vary in their capacity to synthesise phenolics under different growing conditions. In general, genotypes with smaller berries had higher ORAC values and levels of TPH, ACY, HCA and FLA than large‐berried genotypes. Over both growing seasons, ORAC correlated highly with TPH, ACY, HCA and FLA, while fruit weight correlated inversely with all phenolics measured. Our results indicate that blueberry genotypes should be screened over multiple growing seasons in order to identify antioxidant‐ and phenolic‐rich germplasm. Berries were collected regularly from fruit set to berry maturity from irrigated (Shiraz) grapevines in a Barossa valley vineyard. Seeds were removed for detailed study of physical attributes (weight, moisture, colour) and phenolic composition (seed tannins). Three phases of seed growth and development were discerned: (1) a phase of seed growth characterised by a steady increase in both fresh weight and dry weight, biosynthesis and accumulation of flavan‐3‐ols and tannins, and green appearance; (2) a transition phase where seed fresh weight and dry weight reached a maximum, but with continuing enlargement of the basal end. Accumulation of flavan‐3‐ols and seed tannins also reached a maximum during phase 2, and was accompanied by an onset of tannin oxidation, and yellow appearance; and finally, (3) a phase of seed drying and maturation defined by a decrease in fresh weight due to water export, a sustained oxidation of tannins, and overall brown appearance. These phases in seed development correspond to particular stages in berry development. Seeds reached maximum fresh seed weight and full size at the beginning of berry colouring (veraison), while maximum dry seed weight coincided with maximum berry weight. Changes in seed phenolics were linked to berry development and maturation. Changes in seed coat colour were also related to developmental changes in berry anthocyanins and total skin phenolics, indicating that the external appearance and colour of the seed coat may be used as an additional indicator of overall berry ripeness. A graduated colour chart was developed to provide an objective index of seed coat colour and thus developmental status of seeds and berry.  相似文献

Nine solvents of varying polarity (water, methanol, ethanol, isopropyl alcohol, acetone, n‐butyl alcohol, ethyl acetate, chloroform and petroleum ether) were used to determine the optimal extraction solvent that gives the highest yield of bioactive compounds from six Asparagus Officinalis L root (AR) cultivars from China and New Zealand. The contents of total phenolics (TPC), total flavonoids (TFC), total saponins (TSC) and caffeic acid (CA) were determined. Antioxidant assessments included ferric reducing/antioxidant power (FRAP), 2, 2′‐azinobis‐(3‐ diphenyl‐ethylbenzothiazoline‐6‐sulphonic acid) radical cation (ABTS) and β‐carotene bleaching activity assays. The results indicated that yellow AR from China had the highest content of TPC, TFC, TSC and CA compared to other AR cultivars. The most effective solvents for bioactive compound recoveries and antioxidant activities from A. officinalis L root extraction were ethanol and methanol. The content of CA in ethanol extracts of yellow AR achieved 92.0 mg g?1 DE.  相似文献

The effect of thermal processing and the berry cultivar has been the subject of several studies, to serve as a basis for the least possible loss of bioactive compounds and antioxidant capacity. In Brazil, there are numerous blackberry cultivars under cultivation, and in this context, the aim of this work was to study how the bioactive compound contents and antioxidant capacity of blackberry jelly were influenced by the cultivars (Guarani, Brazos, Comanche, Tupy, Cherokee, Caingangue and Choctaw). Analysis was made of 7 fresh blackberry cultivars and 7 blackberry jelly formulations. Analysis of antioxidant activity, total phenolics, total anthocyanins and ascorbic acid was performed. It was verified that the contribution of the heat sensitive antioxidants compounds is considerable in all blackberry cultivars, and the degradation of these compounds was significantly different between the different blackberry cultivars. The Brazos and Caingangue cultivars stand out as undergoing the lowest losses in processing, resulting in jellies richer in bioactive compounds and higher antioxidant capacity.  相似文献

以广东地区9?个不同品种的紫肉甘薯为研究对象,评价紫肉甘薯抗氧化能力,并对花色苷的组成进行定性和定量分析。结果表明:不同品种紫肉甘薯,总酚含量和抗氧化能力也不尽相同,其中广紫9的总酚含量为578?mg?GAE/100?g,清除2,2’-联氮基-双-(3-乙基苯并噻唑啉-6-磺酸)二铵盐(2,2’-amino-di (3-ethyl-benzothiazoline sulphonic acid-6) ammonium salt,ABTS)自由基能力、氧自由基吸收能力、还原能力分别为4.36、10.38、11.23?μmol?TE/g,均高于其他品种的紫肉甘薯。通过高效液相色谱-四极杆飞行时间质谱法共鉴定出16?种花色苷,包括8?种矢车菊素类和8?种芍药素类。紫肉甘薯花色苷含量在77.17~1?125.06?mg/kg之间,以广紫9含量最高,花色苷主要以酰基化的形式存在,其含量是非酰化的89?倍,酰基化程度明显高于其他品种。综上所述,不同品种紫肉甘薯具有不同的抗氧化能力,其花色苷含量与结构也有较大差异,其中广紫9花色苷含量最高,抗氧化能力最强。  相似文献

Juices from 15 citrus varieties (six oranges, one lemon, two grapefruit, three bergamot, one cedar, one mandarin and one chinotto) from Calabria (Italy) were investigated mainly on quality parameters, total flavonoids, total phenolic compounds, total anthocyanin, ascorbic acid and antioxidant capacity (ABTS and DPPH assay). Total phenolic compounds had highest values, ranging from 1.54 mg/mL and 1.43 mg/mL respectively for pink grapefruit (PG) and yellow grapefruit (YG), to 0.92 and 0.96 mg/mL for cedar (C) and mandarin (Ma) respectively. Total anthocyanins ranged from 0.31 μg/mL yellow grapefruit (YG) to 3.51 μg/mL tarocco (T). Total flavonoids ranged from 0.09 mg/mL tarocco (T) to 0.24 mg/mL castagnaro (BC). In general the three cultivars of bergamot (BFe, BC and BF) have the greatest amount of flavonoids. All the analysed samples exhibit a good content of bioactive compounds.  相似文献

研究‘米拉’(‘Mira’)和‘哈尼’(‘Honeoye’)2个草莓品种的白色未熟期、粉色转熟期和红色成熟期3个阶段成熟过程中与风味、生理功能活性相关的特征品质指标变化。结果表明随着草莓成熟果实中总可溶性固形物含量、芳香性挥发成分、花色苷成分积累量有显著性上升,而总酸、总酚、总黄酮含量和抗氧化能力均有所下降。相关性和主成分分析结果表明,草莓成熟过程中总酚、总黄酮、总可溶性固形物和总酸含量均与总抗氧化-亚铁还原能力(ferric reducing-antioxidant power,FRAP)以及氧自由基吸收能力(oxygen radical absorption capacity,ORAC)的变化之间存在高相关性(r为0.859 1~0.994 7),而总花色苷含量与FRAP和ORAC之间的相关性仅为0.315 0和0.385 3。同时得出草莓果实的成熟度与芳香性挥发成分和花色苷组分积累量呈正相关性。  相似文献
