Thirty genuine honey samples were analyzed for pH, acidity, water, ash, net absorbance, total polyphenols (Folin–Ciocalteau method) and glucose, fructose, melezitose and erlose (as their trimethylsilyl oximes and trimethylsilyl ethers) by capillary gas chromatography. The resulting data were used, along with palynological analysis, to characterize the samples in relation to their possible source (nectar, honeydew and mixture honeys).Some minor components (carboxylic acids and cyclitols), eluting before monosaccharides, were also determined. One of these compounds was quercitol (1,3,4/2,5-cyclohexane-pentol), a deoxyinositol which has been previously determined in Quercus sp. samples. Quercitol was present in a broad concentration range (0.01–1.50 g/100 g) in honeys whose major source was honeydew but it was never higher than 0.01 g/100 g in samples characterized as nectar honeys. Quercitol concentrations appear to be related to the presence and amount of Quercus sp. honeydew as honey source, although further research is required to confirm this.  相似文献

Multivariate analysis was applied on physicochemical parameters (moisture, water activity, electric conductivity, colour, hydroxymethyl furfural, acidity, pH, proline, diastase and invertase), sugar composition (fructose, glucose, sucrose, maltose, isomaltose, trehalose, turanose and melezitose) and palinological parameters determined in blossom and suspected honeydew honeys in order to differentiate them. The majority of the physicochemical, sugar composition and palinological parameters evaluated presented significant differences in the mean values between the suspected honeydew and blossom honeys, with the exception of moisture, water activity, diastase, fructose and maltose. Blossom honey samples tend to differentiate from the suspected honeydew honeys after applying factor analysis on the physicochemical parameters and sugar composition. Stepwise linear discriminant analysis allows the correct classification of all blossom honeys, and only one honeydew honey was erroneously included as blossom honey. So, the use of multivariate analysis on physicochemical parameters and sugar composition can be a useful tool to differentiate these types of honeys.  相似文献

Commonly consumed honeys from sixteen different single floral sources were analyzed for their in vitro antioxidant capacities by several methods including DPPH, ABTS, FRAP, SASR and MDA assays. The total polyphenol contents varied among the tested honeys and were highly correlated to their antioxidant capacity values. The antioxidant capacity of Chinese milk vetch flower honeys was significantly higher than those of other flower honeys. All honeys tested were active in inhibiting the browning of apple homogenate and linden honey displayed the highest inhibition rate as 85%. When the antimicrobial activity of the investigated honeys was screened using Gram-positive bacteria (Staphylococcus aureus) and Gram-negative bacteria (Escherichia coli), clover honey exhibited the strongest antibacterial activity as 2.2 mg mL(-1) kanamycin equivalent inhibition.  相似文献

Sixty-seven Spanish honeys from different floral origins, nectars and honeydews, were examined for potential antimicrobial and antioxidant activities. Antioxidant capacities were determined in terms of their antiradical capacity using the stable free radical DPPH?. The bacterial species Micrococcus luteus and Staphylococcus aureus were used as the resistant microorganism in the antibacterial assays. The results showed that honeydew honeys presented higher antioxidant capacities than nectar honeys. On the other hand, honey capacity to inhibit Micrococcus luteus and Staphylococcus aureus was firstly evaluated by an agar diffusion method. Secondly, the active samples were tested with a spectrophotometic method to quantify their “non-peroxide” antimicrobial capacity to inhibit Staphylococcus aureus . We did not observed any relationship between the physicochemical parameters of the samples, and their ability to inhibit these microorganisms. The results obtained by the spectrophotometric method show that this method is easy and useful in the evaluation of the antibacterial capacity of honeys.  相似文献

Seven physicochemical parameters (water content, ash, water activity, free, lactone and total acidity, pH and electrical conductivity) were analyzed in 19 nectar honeys of different floral origin and from several regions of Argentina. In addition, the pattern of electrical conductivity and pH upon honey dilution were also studied with increasing honey concentration, the pH values decreased exponentially. The dependence of specific electrical conductivity (κ) on honey concentration was characterized by a maximum at a κ value (κmax) corresponding to a dry solids of honey concentration of 30–35% (w/w). For a given geographical region, ash and acidity values were useful for discriminating honeys of different floral origins. The most adequate parameters for discriminating honeys of different geographical origin were those which described the patterns of pH and electrical conductivity with changes of honey concentration.  相似文献

Forty-six artisanal honey samples, from different places of Madrid province (Central Spain), were characterized on the basis of their melissopalynological, physico-chemical and volatile composition data. Results were submitted to principal component analysis and stepwise discriminant analysis in order to evaluate the existence of data patterns and the possibility of differentiation of Madrid honey samples according to their botanical source (honeydew, nectar) and geographical collection place (mountain, plain). Colour, electrical conductivity, acidity, ash content and pH were the physicochemical parameters with higher discrimination power in the differentiation of nectar and honeydew honeys while, among the volatile components, concentrations of borneol, 1-(2-furanyl)-ethanone and 3-hydroxy-2-butanone were the most discriminant variables. In the differentiation of honey samples from mountain and plain zones, 2,3-butanediol and 1-(2-furanyl)-ethanone were the most significant volatiles, while physicochemical data were not useful for distinguishing between collection places. The honeydew percentage in a honey sample (HD%) was estimated from physicochemical measures and also from volatile concentrations; 2,3-butanediol, 3-hydroxy-2-butanone, 1-hydroxy-2-propanone and 1-(2-furanyl)-ethanone were found to be related to HD%.  相似文献

Several honey samples (27) from Burkina Faso were analyzed to determine their total phenolic, flavonoid and proline contents as well as their radical scavenging activity. These samples consisted of 18 multifloral, 2 honeydew and 7 unifloral honeys, derived in the latter cases from flowers of Combretaceae, Vitellaria, Acacia and Lannea plant species. The total phenolic contents varied considerably with the highest values obtained for honeydew honey. Similarly, much variation was seen in total flavonoid and proline content, with Vitellaria honey having the highest proline content. Vitellaria honey was also found to have the highest antioxidant activity and content. The correlation between radical scavenging activity and proline content was higher than that for total phenolic compounds. This suggests that the amino acid content of honey should be considered more frequently when determining its antioxidant activity.  相似文献

Concentration of polyphenols in apples depends on factors such as harvest, cultivar, processing, and storage conditions. We aimed to identify essential polyphenols present in various apple varieties, and measure their free phenol and antioxidant capacities using 1,1-diphenyl-2-picylhydrazyl radical scavenging capacity, oxygen radical absorbance capacity, hydroxyl radical scavenging capacity, and ferric reducing antioxidant power methods, and correlating with the total polyphenol content and antioxidant capacity with high-performance liquid chromatography results. Thirteen apple varieties cultivated in northwest China showed significant polyphenol content. Hongxun 1 had the highest polyphenol content and antioxidant capacities in comparison with other apple varieties, while phlorizin showed the strongest 1,1-diphenyl-2-picylhydrazyl free radical scavenging rate (73.5 ± 2.7%), oxygen radical absorbance capacity value (44.6 ± 3.1 μmol TE/g), hydroxyl radical scavenging capacity value (61.9 ± 3.5 μmol TE/g), and ferric reducing antioxidant power value (0.53 ± 0.37 μmol TE/g). The antioxidant capacities of the polyphenol extract was related not only to its total polyphenol content but also to the phenolic composition.  相似文献

In this work, 7 Spanish honeys with different botanical origins were studied. The honey origins were rosemary, chestnut, lavender, echium, thyme, multifloral, and honeydew. The chemical compounds determined were ascorbic acid (vitamin C), hydroxymethylfurfural, and major sugar contents (glucose and fructose). The physicochemical parameters, pH, conductivity, moisture, free acidity, and color, were also measured. Vitamin C is an important antioxidant in food, and the possibility to use it as discriminate parameter among different honeys was studied. The determination of vitamin C in honey samples was carried out by 2 different methods, volumetric and chromatographic comparing the results by both statistically. Vitamin C content was higher in thyme honeys than in the other types; however a wide dispersion in the values was found. Through a linear discriminant analysis (LDA), conductivity, glucose, fructose, and vitamin C content were the most important discriminant parameters. PRACTICAL APPLICATION: Vitamin C content in different honey sources has been determined by a simple and rapid chromatographic method (less than 3 min) in honeys from 6 botanical origins. The results together with glucose and fructose content and some physicochemical parameters have been studied in order to discriminate the botanical origin of honeys and in the future certified their quality. A statistical LDA was applied to the data, and differentiation of honey sources was possible with very good agreement. The vitamin C content found in thymus honeys was significantly higher than in other types. This fact makes vitamin C a special marker for thymus honeys that have a higher antioxidant effect than the others giving it special properties. The identification of honey sources is essential for beekeepers in order to certify honeys for consumers.  相似文献

Apitherapy has become the focus of attention as a form of folk and preventive medicine for treating certain conditions and diseases as well as promoting overall health and well‐being. In apitherapy, honey is the therapeutic agent used for dressing surgical wounds, burns or skin ulcers, as well as for dyspepsia, peptic ulcer, etc., because of its antioxidant activity. Therefore, it is important to determine the antioxidants in honey by analytical techniques. In the present study, the antioxidant activities of honeys from different floral sources were investigated by electron spin resonance (1,1‐diphenyl‐2‐picrylhydrazyl (DPPH) and H2O2/NaOH/DMSO scavenging systems), liquid chromatography with coulometric array detection (LC‐ED), and liquid chromatography with electrospray mass spectrometry (LC‐MS). The antioxidant activities of some unifloral honeys (acacia, Chinese milk vetch, buckwheat and manuka) were evaluated using the radical scavenging systems. It was shown that DPPH radical scavenging activity was significantly different among the honeys, with buckwheat and manuka honeys having significantly higher scavenging activity than acacia honey. In addition, only manuka honey had specific scavenging activity for superoxide anion radicals. The compound responsible for this activity in manuka honey was identified by LC‐ED and LC‐MS. Careful examination of the LC‐ED chromatographic patterns of manuka and other honey samples revealed a distinct peak in the chromatogram of manuka honey to be methyl syringate (MSYR). Differentiation of nectar and honeydew honeys is difficult, not only because of the wide variability in composition and organoleptic properties among samples from the same source, but also because of the frequent existence of honeys resulting from a blend of nectar and honeydew. A mathematical expression to evaluate the relative presence of honeydew in a honey sample (HD) has been developed from relevant physicochemical properties of honey samples selected as highly representative of both honey types on the basis of their physico‐chemical and melissopalynological analysis. As honey aroma depends on its volatiles composition, GC‐MS analysis of the volatile fraction obtained by SPME has been carried out in order to evaluate its usefulness in honey source differentiation. Stepwise regression from multicomponent volatiles data was used for the estimation of HD and for determining which volatile compounds were related to the different honey sources. The antioxidant activity of two selected Malaysian honeys, as well as their ethyl acetate extracts, were evaluated. The antioxidant activities were determined in terms of their anti radical power (ARP) as assessed by DPPH radical scavenging assay and their total antioxidant power (TAP), as assessed by FRAP assay. Total phenolic content of the extracts was determined according to the Folin-Ciocalteau procedure. The characteristic antioxidant activities showed a marked correlation with the total phenolic contents. These results indicated that honey has antioxidative and radical scavenging properties, which are mainly due to its phenolic content. This is the first report of the antioxidant properties of Malaysian honeys.  相似文献

Summary Eighteen chemical and physical parameters of nectar and honeydew honeys were determined and the results were analysed statistically by the method of principal component analysis. On the plots of principal component loadings, the honeys were divided into the following groups: (1) acacia honey; (2) rape honey; (3) linden, floral (nectar coming from various plants) and heather honeys; (4) honeydew honey. The samples which were a blend of nectar and honeydew honeys may be considered as a separate group between 3 and 4. The most important first principal component was strongly associated with the value of electrical conductivity, the contents of ash, free acids and proline, as well as with the pH and the diastase number. The principal component loadings and linear correlation suggested that these parameters contributed much more to the classification of honeys than apparent reducing sugars, apparent sucrose, mono-, di-, and trisaccharides, glucose and fructose. The classification of honeys by the method of principal component analysis may serve as an additional tool in specifying samples on the basis of their chemical composition.
Klassifizierung von Honigen durch chemische und physikalische Parameter mit Hilfe der Hauptkomponentenanalyse
Zusammenfassung 18 chemische und physikalische Parameter der Nektar- und Honigtauhonige wurden bestimmt und die Ergebnisse statistisch mit Hilfe der Hauptkomponentenanalyse ausgewertet. Danach konnten die Honige in folgende Gruppen unterteilt werden: 1) Akazienhonige, 2) Rapshonige, 3) Linden-, Blüten-und Heidehonige, 4) Honigtauhonige. Zwischen dem Nektarhonig und Honigtauhonig lagen wahrscheinlich die Proben von Mischhonigen aus Blüten- und Waldtracht. Die bedeutendste erste Hauptkomponente war mit folgenden Parametern verbunden: elektrischer Leitfähigkeitswert und Aschegehalt, Gehalt an freien Säuren und Prolin sowie der pH-Wert und Diastasezahl. Aufgrund der Hauptkomponentenladungen und der linearen Korrelation kann angenommen werden, daß diese Parameter für die Honigklassifizierung von größerer Bedeutung sind als der Gehalt an reduzierenden Zuckern, scheinbarer Saccharose, Mono-, Di- und Trisaccharide, Glucose und Fructose. Die Klassifizierung der Honige mit Hilfe der Hauptkomponentenanalyse kann bei der Spezifikation einer Honigprobe aufgrund ihrer chemischen Zusammensetzung von Nutzen sein.

作者以防止新鲜苹果切口的褐变为目标,比对不同食品配料组成的复配成分,发现蜂蜜作为涂膜材料可以有效延缓鲜切苹果片的褐变。将鲜切苹果片浸泡在质量分数0.1 g/g的椴树蜂蜜水溶液中,8 d后其仍能维持新鲜的色泽;探究了蜂蜜对苹果多酚氧化酶(polyphenol oxidase, PPO)抑制的动力学,发现蜂蜜对苹果PPO起非竞争性抑制作用,酶活抑制能力来自蜂蜜的抗氧化、清除自由基(相关系数r>0.6)能力;进一步分析蜂蜜成分与酶活抑制率的关系,发现蜂蜜中蛋白质与多酚(r值分别为0.79、0.63)是蜂蜜发挥抗褐变作用的重要成分。  相似文献

The response surface methodology was used to study the combined effect of temperature (60 to 80°C), time (10 to 15 min), and pH (3 to 6) on the antioxidant activity (1,1-diphenyl-2-picrylhydrazyl-radical scavenging activity, total phenolic content, and total flavonoid content) of apple honey. Statistical analysis revealed that all the responses were significantly (p < 0.05) affected by independent process variables. 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity, total phenolic content, and total flavonoid content increased with the increase in time and temperature due to the formation of browning pigments. The antioxidant properties of apple honey significantly (p < 0.05) decreased with increase in pH from 3 to 6. The thermal treatment of apple honey at 80°C was found to be more effective than at 70 and 60°C. The average increase in 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity, total phenolic content, and total flavonoid content of raw apple honey due to combined effect of three process variables was 9.6% ± 1.9, 13.7 ± 2.5 mg gallic acid equivalent/100 g and 49.3 ± 3.3 mg quercetin/100 g, respectively. The results showed that the most desirable optimum conditions for temperature, time and pH for 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity (92.39%), total phenolic content (133.55 mg gallic acid equivalent/100 g of honey), and total flavonoid content (25.82 mg quercetin/100 g of honey) were 80°C, 15 min and 3.01, respectively. The results demonstrated that thermal treatment significantly increased the antioxidant activity of apple honey.  相似文献

Thirty-five honeys were evaluated for total phenolic content by Folin-Ciocalteu method, for potential antioxidant activity using phosphomolibdenum assay and by the 1,1-diphenyl-2-picrylhydrazyl method for antiradical activity. The antimicrobial activity was studied by the agar diffusion method, using 12 bacteria and 2 yeasts. The means of the total phenolic contents of chestnut, honeydew, multifloral, thyme, and astragalus were 47 ± 18, 24.2 ± 0.6, 14 ± 11, 11 ± 6, and 9 ± 7 mg/100 g honey as gallic acid equivalent, respectively. The lowest antioxidant activity was observed in honeydew 70 ± 5 mg ascorbic acid equivalent/g honey while the highest content was observed in astragalus honey 86 ± 16 mg ascorbic acid equivalent/g honey. Correlation between the phenolic content and antioxidant activity were found to be statistically significant. Chestnut honeys (n = 5) exhibited maximum free radical scavenging activity with an average 68 ± 9%. The honey samples showed the highest antimicrobial activity against some microorganisms, especially Escherichia coli O157:H7, Salmonella typhimurium, Staphylococcus aureus, Listeria monocytogenes, and Proteus mirabilis. On the other side, Aeromonas hydrophila, Bacillus subtilis, and E. coli were the most resistant microorganisms. The results revealed that the Turkish honeys studied proved to be a good source of antioxidant and antimicrobial agents that might serve to protect human health.  相似文献

The purpose of this study was sensory and physicochemical characterisation of Slovenian honeys with a chemometric approach. Honey samples were obtained from the beekeepers in different natural geographical macroregions of Slovenia. The sensory characteristics of the seven main types of Slovenian honeys are described, together with the physicochemical analyses. The average results of electrical conductivity (0.19–1.61 mS cm?1), pH (4.01–5.51), free acidity (13.3–30.9 meq kg?1), proline content (317–558 mg kg?1), protein content (1.70–3.53 g kg?1), optical rotation (–19.6 to 12.6), phenolic content (44.9–232.5 mg GAE kg?1) and antioxidant activity [69.6–456.4 μm Fe(II)] show wide variability among analysed honey types. Statistically significant differences were obtained among different honey types, generally lower values of the analysed parameters were determined in the light honeys, as the acacia, linden and multifloral honeys, while the higher values are characteristic for darker honeys, as the chestnut, fir, spruce and forest honeys. Linear discriminant analysis was performed to classify the honey samples according to their botanical origin and proved that physicochemical parameters analysed can provide enough information for the classification and distinction of acacia, linden, multifloral and chestnut honeys, and the group of honeydew honeys (fir, spruce and forest honeys).  相似文献

The minerals (Al, B, Ca, Cu, Mg, Mn, Ni, Zn) of 24 authentic Czech nectar and honeydew honey samples (2003 and 2004 harvests) were determined, to find the relationship between their content and the origin or type of honey. The concentrations of analytes in the digests, obtained via optimised dry decomposition of honey samples, were measured by flame atomic absorption spectrometry (F-AAS), as well as optical emission spectrometry with inductively coupled plasma (ICP-OES). With regard to its speed of analysis and cost, ICP-OES was the more favourable method. By combining the analytical data and electrolytic conductivities of samples, the honey samples could be divided into two groups – honeydew honeys and nectar honeys. Like Slovak and Polish honeys, samples of Czech honeys had higher nickel levels than honeys originating from other parts of the world.  相似文献

ABSTRACT: The impact of heat and filtration on the antioxidant capacity of clover and buckwheat honey during storage was analyzed. Processing clover honey did not significantly impact antioxidant capacity (determined by oxygen radical absorbance capacity [ORAC] assay); processing lowered the antioxidant capacity of buckwheat honey (33.4%). The antioxidant capacity of honeys was reduced after 6 mo of storage with no impact of storage temperature or container type detected at the end point of the storage period. Processed and raw clover honey antioxidant capacity decreased about 30%. Processed buckwheat honey decreased 24% in antioxidant capacity, whereas raw buckwheat honey decreased 49%. Antioxidant capacity of processed and raw honeys was similar after storage. Phenolic profiles, peroxide accumulation, 5-(hydroxymethyl)-2-furaldehyde (HMF), gluconic acid, and total phenolics were also analyzed. The impact of storage on antioxidant components of processed and raw honey was complex.  相似文献

Herbhoney is a honey-like substance produced by bees fed on a saccharose-based food supplemented with herbal extracts or fruit juices. Having specific sensory characteristics (colour, aroma and taste), different from those of natural honeys, herbhoneys greatly extend the range of bee products. With the aim of improving the knowledge of herbhoneys of various origins, their chosen physicochemical and quality parameters were evaluated. It was found that the herbhoneys studied satisfied most of the requirements relative to natural honeys (water, hydroxymethylfurfural and saccharose contents, free acidity, and diastase number). Some of the samples showed an increased specific conductivity, characteristic of honeydew honeys, although the ash contents of herbhoneys were at a level typical of nectar honeys. The saccharose content of some herbhoneys exceeded the value allowed for most natural honeys. Mineral composition varied between the samples, being in most cases within the limits reported in this literature for natural honeys.  相似文献
