The increase in diabetes and obesity has increased the demand for sugar‐free/low‐calorie products. Three jelly formulations were prepared using sucralose, low‐methoxyl pectin and maltodextrin with either xanthan gum or locust bean gum (LBG) used singly or in combination and stored at 4C or 43C for shelf life evaluation. Jelly treatments were evaluated for chemical, physical and sensory properties. The combination of xanthan gum and LBG significantly reduced syneresis compared with either gum used singly. The combination of xanthan gum and LBG resulted in significantly higher firmness and springiness values than using xanthan gum or LBG alone. The overall acceptability, aroma, taste, texture, spreadability and sensory attributes for no sugar‐added grape jelly averaged 5.8–6.4 in a 9‐point hedonic scale consumer acceptance study.  相似文献

ABSTRACT

Physical–chemical quality of 14 garlic cultivars grown in Spain was analyzed, and the cultivars were classified into three types: purple, white and Chinese, in order to show the possible differences among them. The most useful instrumental color parameter to discriminate among the different types of garlic was lightness (L*). The high pH value of the purple‐type cultivar Moraluz, and the high content of d ‐glucose, d ‐fructose and total sugars of the Chinese‐type cultivars were quite remarkable. The consumer judges preferred the color and pungency of the purple‐type cultivar Morasol, while Chino Sprint stood out for its intense garlic odor. Finally, correlations between the physicochemical and the sensory parameters were studied. The red color intensity was correlated with lightness (L*) and with hue (h*); pH was correlated with chroma (C*) and moisture percentage was correlated with sucrose content.

PRACTICAL APPLICATIONS

One of the main objectives of this work was to advise growers on the selection of garlic seed. The data obtained in this work was sent to a regional research and advising agronomic center (Technical Agronomic Institute, provincial council of Albacete), where advice was given to local growers concerning the selection of the most adequate seeds, in terms of physical– chemical properties and consumer preference, plus agronomic performance (data not included in this article). The conclusions reached in this study will make an important contribution to the agronomic characterization of the garlic cultivars grown in Spain.

Two pea cultivars (Citrina and Warindo) at four commercial sizes (superfine, very-fine, fine and middle) were selected for a study of their physical-chemical parameters of raw and sensory attributes after canning. To determine the relationships between the physical-chemical parameters and the sensory attributes, Principal Component Analysis (PCA) was applied. About 65% of the total variation in the physical-chemical parameters and sensory attributes was expressed by two PCA Factors. Mealiness was an important sensory attribute in determining the sensory quality of pea, and was related to tenderometric value, alcohol insoluble solids and starch content of raw seeds. General acceptance of canned peas by panelists was based on titratable acidity, green color and juiciness. Raw peas should be selected according to their dry matter, starch and titratable acidity, if they are to reach the consumer in an appetizing state when canned. This quality is mainly determined by general appearance, juiciness and flavor.  相似文献

The changes in physical, chemical and sensory properties of common bean (CB) and chickpea (CP) bulgur prepared with different cooking (atmospheric, pressure and microwave) and drying (oven at 60, 70 and 80C; microwave at 350 and 700 W) processes were investigated. Neither the cooking methods nor the drying methods significantly affected the ash and protein contents of CB and CP bulgur. Pressure cooking gave lower phytate phosphorus and higher bulgur yield and volume increase values when compared to the other cooking methods. Average bulgur yields were found as 82% for CB and 84% for CP. Cooking processes decreased the phytic acid content of the bulgurs between 25.2 and 39.5% according to raw legume. Ca, K, Mg, P, Zn, Cu and Fe contents of the bulgurs decreased in variable degrees (8.69–28.5%) when compared to raw materials. Pressure cooked and oven (80C) dried bulgur samples in the case of bulgur pilaf were appreciated by the panelists in terms of overall acceptability.

PRACTICAL APPLICATIONS


Bulgur is a valuable cereal product with its high nutritional value and long shelf life. In this research, bulgur process was applied successfully on common bean and chickpea, and new legume-based bulgur products improved. The bulgur yield (BY) of the legumes was above 80%. Pressure cooking increased the nutritional, sensory and technological quality of the legume bulgurs.  相似文献

Stanley plums were processed into purees and then pastes by heat concentration to 25 and 300 Brix. The Brix of these two pastes was increased to 40 and 450, respectively, by sugar addition. Pastes were stored at 4 and 22 ± 2C in the dark for up to 24 weeks. Physical-chemical characteristics and microbiological quality were determined at 4 week intervals. Sensory evaluation was conducted at 0 and 24 weeks. Total solids, water activity, rheological properties and microbiological quality were stable during storage. Total acid, total anthocyanins, total pectin and Hunter ‘L’ and ‘a’ values decreased significantly during storage (P < 0.01). The degradation rate of total anthocyanins was much higher for pastes stored at 22C than those at 4C. Hue angle and Hunter ‘b’ values increased during storage. Sensory evaluation indicated that pastes were still acceptable after 24 weeks of storage.  相似文献

主要考查冷冻保藏时间对于速冻水饺的理化性质、微生物指标及感官性状的影响。结果表明,随保藏时间延长,饺皮的水分含量呈线性规律下降,从最初的(37.25&#177;0.44)%降至试验末期的(32.5&#177;0.92)%。而对于样品的酸价,随保藏时间延长,酸价升高,从初始的(2.01&#177;0.01)mg KOH/g升至试验末期的(2.38&#177;0.02)mgKOH/g。菌落总数及嗜冷菌菌落总数结果相似,都随保藏时间延长而增加,菌落总数从(1.27&#177;0.09)&#215;10^5 cfu/g升至(3.26&#177;0.08)&#215;10^5 cfu/g,而嗜冷菌菌落总数从(2.44&#177;0.06)&#215;10^5 cfu/g升至(3.73&#177;0.15)&#215;10^5 cfu/g。结合对水饺饺皮和饺馅的感官评价表明,速冻水饺的食用品质随保藏时间呈下降趋势,相对来讲,保藏时间越短,样品的食用品质越好。  相似文献

The influence of storage temperature of garlic bulb and chemical additives (including ascorbic acid, citric acid and potassium sorbate) on the chemical, physical, microbiological and sensory characteristics of garlic paste was evaluated. Formation of undesirable greenish pigment was avoided by storing fresh garlic bulbs at 25 and 40C. Moreover, heating bulbs to 40C a few minutes before processing facilitated skin removal. Garlic paste was processed, packed and thermally treated at 85C for 5 min. The color of garlic paste was affected by chemical treatment, temperature and storage period. The rate of color difference (ΔE) increase was divided into two linear periods with different slopes. Garlic paste exhibited pseudoplasticity with yield stress and flow adequately described by the Herschel–Bulkley model (r2 > 0.990). Both consistency index and apparent viscosity decreased with increase in temperature.  相似文献

Restructured pork chops were manufactured from the lean tissue of dressed sows that were color modified(CM) with a potassium buffer rinse to attain lighter appearance. This product was compared with counterpart samples that were not color modified(C). Measurements included CIE L*, a*, b* values, visual traits, sensory traits, shear force, pH, and percentage of moisture, fat, protein, protein solubility, and cooking loss. The CM samples were lighter colored (P<0.05), exhibited less (P<0.05) flavor intensity, had a higher (P<0.05) pH, and sustained less (P<0.05) cooking loss. No differences (P>0.05) between the CM and C samples were found in juiciness, tenderness, Warner-Bratzler shear force, and soluble protein. The CM samples exhibited less protein content and lower Lee-Kramer shear force values. Results confirm that sow meat can be lightened without adversely affecting functional properties and taste attributes of restructured pork chops.  相似文献

Three jerky formulations were prepared from beef top round, turkey breast, and various emu cuts (inner mid drum, inner outside drum, oyster, and fan fillet). The meat sources were sliced, cured, smoked, and dried. All treatments were evaluated for palatability traits, shear force and chemical properties. No significant difference was found in the sodium or ash levels among the three treatments. Beef jerky had the highest percentage fat followed by emu, and then turkey (p < 0.05). Emu jerky was the toughest, chewiest, and most desirable as evaluated by a trained and consumer sensory panels. The production of emu jerky may be of particular interest to the emu industry to increase profits by utilizing less desirable cuts and opening a new market for the meat obtained from the emu. The information provided by this study can be utilized by emu producers and product marketers for the advancement of the emu industry.  相似文献

The effects of moisture, temperature, and storage time on the flavor characteristics of increased water activity peanut butter products were determined by sensory analysis. All three factors affected the sensory attributes of the products. At all temperatures and storage times, peanut butter products with 5.0% water added had lower roasted aroma and roasted flavor, with more off-odors and off-flavors than the 2.5% or 0.0% water added samples. Water activity and color were monitored throughout the study, and samples were evaluated for oxidation.  相似文献

By extruding alternating layers of chopped lean and fat tissue, bacon-chopped and formed (CF) products were processed from pork, beef, mutton and chevon lean and beef fat. Slabs processed from beef materials had less weight loss and changes in width and thickness during smoking than the other formulations. Various sensory and consumer panels found pork-bacon-CF product to rate highest among the four formulations for tenderness, flavor and overall satisfaction. This formulation was rated as being closest in sensory traits to commercial bacon. Chevon and mutton bacon-CF products were found to be less desirable in flavor. Inclusion of pork lean and fat with chevon and mutton lean can potentially improve the acceptability of bacon-CF processed with lean from these two species. However, this process and product appears promising as methods of increasing consumption of underutilized meat animal species.  相似文献
