BACKGROUND: This experiment was designed to examine the effect of dietary humate supplementation primarily on pH and colour parameters of carcasses, breast fillets and drumsticks and, secondarily on performance and carcass characteristics in broilers. RESULTS: A total of 240 male broiler chicks (Ross‐308) were randomly allocated to four dietary treatments varying in supplemental humate level (0, 0.1, 0.2 and 0.3% for H0, H1, H2 and H3). Dietary humate supplementation did not affect performance traits and slaughter, hot carcass weights and yields. Carcass‐related variables (pH, L*, a*, b*, H* and C*) were responsive to the dietary treatments. The L*, a*, b*, and C* values for drumstick muscles were higher than those for breast muscles. Except for the L* value, meat colour parameters changed due to packaging. The a* value was higher and b* value was lower for vacuum packaged breast and drumsticks than for those aerobic packaged. Storage period affected colour parameters; while L*, b*, H* and C* values were higher for drumstick skin than for drumstick meat; the a* value was greater in drumstick meat than in skin. CONCLUSION: pH and colour parameters of carcasses, breast fillets and drumsticks of broilers were improved by dietary humate supplementation.  The acceptability and quality of sous vide cooked green beans (Phaseolus vulgaris) were investigated during chilled storage. A suitable heating procedure was established whereby 2.0-kg packages were heat processed at 90°C for 25 min, corresponding to an average pasteurization value, PV70,10, of 14 min. During storage for up to 25 days at 3°C drip loss, pH, colour (Minolta L * a * b *), texture (Instron) and microbiological stability were examined and sensory characteristics evaluated by a trained sensory panel. No marked changes in texture, drip loss, pH or microbiological counts were observed but a change of colour from green to olive green was observed by both objective and sensory analyses. This detrimental change in colour, which had begun during the first week, was the limiting factor for shelf-life during storage. Subsequent reheating, however, resulted in further colour changes which partially obscured the initial differences observed during the storage period. Storage for more than 1 week resulted in undesirable quality changes in the odour and flavour of the green beans. Therefore, a maximum shelf-life of 8 days at 3°C was recommended. Inoculation trials showed that psychrotrophic Bacillus cereus were able to germinate and grow to levels of 107 g–1 in the packages at abuse temperatures (7°C and 17°C), whereafter numbers declined. BACKGROUND: The whiter the rice, the more it is preferred by consumers and the more value it has in the market place. The first objective of this study was to determine the interrelationships of raw colour, cooked colour, amylose content and protein content in rice. The second objective was to assess whether or not the colour of cooked rice can be predicted from raw rice colour in conjunction with amylose and protein contents. RESULTS: Protein and amylose contents were not significantly correlated with the colour measurements for raw rice. Protein and amylose showed moderate, significant associations with L* and a* and a*, b* and C* respectively for cooked rice. Only the colour variable a* of cooked rice could be predicted using protein, amylose and raw rice colour with high enough precision to be useful, and this was only for modelling using samples cooked in the same manner (rice cooker). Cooking method (rice cooker versus excess water) affected the colour of cooked rice. CONCLUSION: Being able to predict a* in cooked rice is likely of limited value. Only the model that used samples where postharvest handling conditions were controlled (US‐grown rice) was able to predict C*, a more useful measure, and then with only moderate ability. The effects of temperature (4 and 10–12 °C) and time (6, 12 and 24 h) on colorimetric parameters (Commission International de l'Eclairage (CIE) L*a*b*), carotenoid concentration, salt content and yield were investigated in brine (saturated or 50% saturation) and dry salted fillets of cold‐smoked Atlantic salmon (Salmo salar). Lightness (L*), yellowness (b*), hue (Hab) and chroma (C*) values were lower at 10 than 4 °C (P < 0.01), whereas redness (a*) was unaffected. L* increased (P < 0.05) and a*, b*, Hab and C* values dropped when salting time was increased (P < 0.001). Astaxanthin concentration of brine‐salted fillets decreased with increasing salting time (P < 0.05), but was unaffected by salting temperature. Increasing salting time affected colour negatively. The salt content of dry salted fillets increased with temperature and salting time. The process yield was unaffected by temperature and decreased with salting time. In conclusion, the cold smoking process is more important for variation in quality parameters than the salting process.  相似文献

The effectiveness of the pink-juice test to determine 79.4 °C end-point temperature (EPT) of cooked beef logs was appraised. Logs made from five cuts of meat from three animal age groups were fabricated in triplicate to simulate products received at ports of entry and then cooked to EPTs of 78.0–81.8 °C. CIELAB L*, a*, b*, C and h ° values of internal surfaces of freshly sliced meat and pressed juices from samples were determined. Sensory ratings were made by six trained panelists to determine intensities of residual red color of the juices. Animal age and cut of meat had little effect on the CIELAB color values. Residual red color was apparent in all samples by both sensory and a* values analysis. Sensory ratings did not vary significantly (P < 0.05) by animal age or cut of meat. Average values of 3.2 (intensity range, 1–9) corresponded to an EPT slightly greater than 80 °C; absence of red color in the juices would therefore indicate an EPT in excess of the target temp of 79.4 °C. Residual glutamic-oxaloacetic transaminase activity (GOT) activity, used as a collateral test for EPT, ranged from 482.5 to 1641.8 SFU ml−1 of juice and differed significantly by cut of meat (P < 0.05), but not by animal age. © 1999 Society of Chemical Industry  相似文献

Samples of meat emulsion batter were steam or ohmically cooked (at voltage densities ranging from 3 to 7 V cm?1) to standardized cook values (Cs) or to target end point temperatures (EPT). Higher ohmic voltage densities produced faster heating rates. Texture profile analysis (TPA) of ohmic and steam‐cooked frankfurters showed no significant difference (p ≥ 0.05) in any of the attributes assessed with the exception of springiness, which was significantly lower (p < 0.05) in ohmically cooked samples heated to similar Cs values, although this trend was less pronounced in samples cooked to similar EPT. Instrumental colour evaluations revealed that ohmically cooked samples (cooked both to similar Cs and EPT) differed from steam‐cooked in both a* and hue angle values (especially at 5–7 V cm?1 (p < 0.05)). Although instrumental measurements revealed differences in selected texture and colour attributes, panellists were not able to distinguish between steam and similar EPT ohmically cooked samples (p < 0.05). Thus while subtle differences may exist in the eating quality of ohmic and steam‐cooked emulsions, these differences are unlikely to be of an order of magnitude to affect consumer acceptance of ohmically cooked meat emulsion products. The effects of organic farming, pasteurisation and addition of β‐cyclodextrin on the content of vitamin C, colour, carotenoids and antioxidant capacity of orange juices were studied. After pasteurisation at 98 °C (20 s) and subsequently storage along 145 days at room temperature (20–25 °C), the loss of vitamin C content was around 30%. The effects of the thermal process on carotenoid were clearly observed in lutein (loss of 16% for organic and traditional 8%) and especially β‐cryptoxanthin (loss of 30%). The colour changes were noticeable after the pasteurisation of orange juice and subsequent storage, with significant decreases being observed in lightness and the coordinate a*, while increases were found for coordinates b*, Hue* and chroma. The antioxidant capacity was 0.075 ± 0.01 and 0.053 ± 0.01 mMT mL?1 for organic and conventional, respectively, with losses around 40% being found at the end of the storage period. The addition of β‐cyclodextrin caused no significant effects on the parameters under analysis. These data showed that strong thermal treatments, such as pasteurisation, adversely affect the nutritional and sensory quality of orange juices.  相似文献

The objective of this study was to monitor the stability of anthocyanin and phenolic compounds contained in two formulations of blackberry jam (traditional and low-sugar) during storage. For that purpose, jams were prepared with varying amounts of hydrocolloids and investigated as to pH, total soluble solids, water activity, total acidity, total anthocyanins and total polyphenols. In order to accompany and assess the levels of phenolic compounds and colour (L*, a* and b*) changes, the samples were stored for 180 days at two different temperatures (10 and 25 °C). The Arrhenius model was used to determine the relationship between the reaction rate (k) at the different storage temperatures, yielding activation energy values of 19 and 12 kcal/mol and Q 10 values of 3.0 and 2.0 for traditional and low-sugar jams, respectively. The results show that by the end of the storage time investigated, the anthocyanin compounds had been partially degraded, with the greatest loss being observed in traditional jam stored at 25 °C. Colour stability was also lower in traditional jam as compared to the low-sugar product.  相似文献

Sultana grapevines (Vitis Vinifera L. cv. Sultana syn. Thompson Seedless) were subjected to four shading regimes: 50% shading (1), 25% shading (2), fully exposed‐top of canopy (3) and beneath canopy (4) and harvested early (21 February) and late (13 March) in the 1996/1997 sultana season. Grapes from each of the eight field‐treatment combinations represented a range of maturities (14.4 to 23.50oBrix). Grape samples from each of the treatments were dipped and dried to 18% moisture, with half of each of the sultana samples further reduced in moisture by sunfinishing on plastic sheets in direct sun. These field treatments resulted in sixteen unique dried sultana bulk samples with a range of initial chemico‐physical properties; aw (0.481–0.691), skin‐polyphenoloxidase (PPO) activity (4.40–9.05 μmol O2/g.minute) free arginine in skin tissues (1.0–5.10 mg/g) and protein (16.40–27.18 mg/g). Sultanas were stored at 10oC and 30oC in either the presence or absence of oxygen for 10 months, and changes in CIE L*a*b* tristimulus values, hue‐angle (hab*) and chroma (Cab*) were monitored. Significant changes in sultana colour occurred in samples stored at 30oC, especially in higher aw non‐sunfinished sultanas. Although browning was more intense in the presence of oxygen, significant browning also occurred in the absence of oxygen. Lower concentrations of 5‐hydroxy methylfurfural, a key marker of Maillard browning in samples stored at 30oC in the presence of oxygen, indicated that the non‐enzymatic reactions were sensitive to oxygen. Changes in the concentration of trans‐caftaric acid, the main substrate of grape PPO, were also measured during sultana drying. Storage browning (changes in L*, b*, hab*, Cab*)in dried sultanas could be predicted by regression models using pre‐storage aw, free‐skin arginine or Kjeldahl protein after 10 months' storage between 10oC and 30oC. Non‐enzymatic and Maillard‐type reactions (sensitive to both oxygen and aw), made an important contribution to sultana storage browning. We provide only weak evidence that either shaded (immature) or green fruit was more susceptible to storage browning.  相似文献

The compositions of three peach juices obtained from the cultivars Redhaven, Suncrest and Maria Marta, respectively, were studied. The fruits were grown in the Emilia-Romagna region (Italy). The juices were characterised by pH, CIE L*, a*, b* colour values, soluble solids, individual carbohydrates, organic acids, and phenolic compounds. Univariate analysis disclosed some significant differences among the compositions of the varietal peach juices. Principal component revealed clear group structures in the data matrix, the most relevant variables being glucose, fructose, sorbitol, malic acid, L* and b*-values. Suncrest peach juice was clearly distinguished from Redhaven and Maria Marta juices.  相似文献

In an experimental study (October 2010 Mannheim Germany) with 99 Caucasian volunteers, the skin colour (L*, a*, b*) and the reflectance spectra of human skin were compared to the Fitzpatrick's sun‐reactive skin photo types (SPT). For this purpose, the skin colour and the reflectance spectra of human skin were determined using non‐invasive method with a newly developed fibre optic detection device. The device, based on reflectance spectroscopy, was designed and optimized using a commercial optical analysis Software. By means of the measured spectra of scattered light, the colour values and the absorption spectra of the skin were calculated. Neither any of the L*, a*, b* colour values nor any of the parameters of the absorbance spectra can be used alone to assess the skin type properly. Therefore, an ordinal logistic regression analysis was performed, using the statistical computing software r , to correlate the skin types with the measured optical parameters. It turned out that the detection device combined with the extended statistical analysis gives a better estimate of skin type in respect of the measured optical parameters than a procedure with only L*, a*, b* colour values. Even with the extended methodology, the procedure gives only a rough estimation of the skin type.  相似文献

The effects of harvest date and cold storage period on ethylene production, fruit firmness and quality of ‘Cripps Pink’ apple were investigated. Fruit were harvested from Perth Hills and Donnybrook (Western Australia) at commercial maturity (CM), 2, 4 and 6 weeks after CM prior to 0, 45, 90 and 135 days cold storage in 2003 and 2004. Delayed harvest significantly increased ethylene production, CIE values a* and C* at both locations in 2 years. Delayed harvest and extended cold storage period increased the internal ethylene production and reduced fruit firmness, soluble solids concentration: titratable acidity (SSC:TA) ratio and reduced CIE values L*, b*, h° during both years and locations. Fruit harvested 2 weeks after CM can be cold‐stored for 90 days with acceptable fruit quality. If the fruit is intended to be sold fresh immediately in local markets, the harvest can be delayed up to 6 weeks after CM to harness substantially improved fruit colour with acceptable fruit quality.  相似文献

The pectoralis profundus muscles of 200 selected beef carcasses were measured to develop a standard colour scale for evaluating beef carcasses at the time of classification (approximately 60 min post mortem). Five lightness (L*) values were chosen ranging from 22 to 42 with intervals of five L* units. Corresponding a* and b* values were calculated. Based on regressions between the actual reflection spectra and the L*, a* and b* values, spectra of the five chosen colours for the colour scale were predicted. The L*, a* and b* values accurately predicted the reflection spectra. A paint company imitated the five reflection spectra. Spectra could not be matched exactly, without metamerism occuring. Therefore, the colour scale should be used with specific light sources. The scale is recommended in The Netherlands to classify the colour of beef, as a supplement of SEUROP‐system for conformation and fatness. © 1999 Society of Chemical Industry  相似文献

The effect of F0 treatment time (min) and storage on the antioxidant activity and Hunter colour parameters (L*, a*, b*) of carrot slices was investigated. Carrot slices were sterilised for 0 (control), 3, 15 and 50 min and subsequently stored for 0, 3 and 6 months. Significant differences were observed in colour values of carrot slices with no significant difference beyond F0 treatment of 3 min. Regression modelling was used to investigate the main effects of treatment time and storage. Treatment time and storage period was found to be significant. Predicted models were found to be significant (p < 0.05) with low standard error and high coefficients of determination (R2). This study proposes the predicted models for quality parameters of sterilised carrot slices.  相似文献

Juices from the mandarin Clemenules (Citrus clementina Hort. ex Tan.), the tangor Ortanique (Citrus reticulata Blanco × Citrus sinensis Osb.) and the sweet orange Valencia Late (Citrus sinensis) have been industrially squeezed, pasteurized, concentrated and stored under refrigeration (4 °C) and at room temperature (20 °C). After each process, the flavanone-7-O-glycosides (FGs) and fully methoxylated flavones (FMFs) contents as well as total, cumulative fast-kinetics and cumulative slow-kinetics antiradical activities were determined and compared with those from the corresponding fresh hand-squeezed juices. Neither industrial-squeezing, nor pasteurization or concentration significantly affected FGs and FMFs contents and antiradical activities of assayed juices. Storage caused a slight decrease of the FMFs contents but a significant reduction of both soluble hesperidin contents and cumulative fast-kinetics antiradical activities in all assayed juices. These decreases were dependent on storage temperature. Characteristic values of the varietal characterization parameters, which are derived from the FMFs contents and antiradical activities of fresh hand-squeezed juices, held valid for industrially squeezed, pasteurized and concentrated juices. After storage, however, only the FMFs-derived varietal characterization parameters and cumulative slow-kinetics antiradical activity remained valid for the resulting juices.  相似文献

The effect of reuterin, lactoperoxidase system (LPS) and lactoferrin (LF) combined with high hydrostatic pressure (HHP) on the characteristics of sliced cooked ham during 35 days at 4 and 10 °C were investigated. Reuterin and LPS inhibited the growth of total microorganisms during 35 days at 4 and 10 °C, whereas a regrowth at 10 °C was observed when HHP was applied. Combined treatments kept total viable counts below 1.5 log cfu/g after 35 days at 10 °C. Regarding the effect of treatments on colour of cooked ham, LPS alone or in combination with HHP slightly affected L*, a* and b* values, but these changes tended to attenuate during storage. Likely, slight differences were registered in shear strength values among control and treated cooked ham. The accumulation of volatile compounds was reduced in cooked ham treated with LPS and LF in combination with HHP, even under abuse temperature conditions (10 °C).Industrial relevanceLPS applied in combination with HHP was the most effective treatment at reducing the growth of total microorganisms in refrigerated cooked ham with minor changes in its characteristics. The antimicrobial activity of such combined treatment against food-borne pathogens, which has also been reported in RTE foods, points to its usefulness to assure a safe product of sensory characteristics similar to those of untreated cooked ham.  相似文献

The level of binders (starch, refined wheat flour and milk powder) was optimised with respect to sensory quality of ready‐to‐eat kebab made from a dehydrated mix using the experiment based on the Box–Behnken design. The optimised levels (as % of cooked meat) were 4.5% starch, 9.5% refined wheat flour and 2% milk powder. Dehydrated chicken kebab mix prepared with optimised quantities of binders and spices was packed in metalised polyester pouches, stored at ambient temperature (27 ± 2 °C) for 6 months and sampled periodically for quality evaluation. A gradual decrease (P ≤ 0.05) in pH from 5.8 to 5.5, increases (P ≤ 0.05) in aw from 0.31% to 0.42%, in moisture from 5.4% to 6.2%, in free fatty acid values from 0.99 to 1.74 as per cent oleic acid and in thiobarbituric acid numbers from 2.9 to 5.3 mg malonaldehyde kg?1 were observed during storage. Hunter colour a values increased (P ≤ 0.05) from 0.30 to 1.29, whereas changes in Hunter L (51.8–53.4) and in Hunter b (19.0–19.5) values were marginal (P ≥ 0.05) during storage. The chicken kebab mix was microbiologically safe as indicated by low bacterial counts and absence of coliforms throughout the storage period of 6 months. Fried chicken kebabs prepared from mix stored for up to 6 months were acceptable.  相似文献

The application of high hydrostatic pressure (HHP) (250 MPa, 35 °C for 15 min) and thermal treatment (80 °C for 1 min) reduced the microbial load of carrot and tomato juices to undetectable levels. Different combinations of HHP did not cause a significant change in the ascorbic acid content of either juice (P > 0.05). Both heat treatments (60 °C for 5–15 min and 80 °C for 1 min) resulted in a significant loss (P < 0.05) in the free‐radical scavenging activity as compared to untreated samples. HHP‐treated juices showed a small loss of antioxidants (below 10%) during storage. The ascorbic acid content of pressurized tomato and carrot juices remained over 70 and 45% after 30 days of storage, respectively. However, heat treatment caused a rapid decrease to 16–20%. Colour changes were minor (ΔE = 10) for pressurised juices but for heat‐pasteurised samples it was more intense and higher as a result of insufficient antioxidant activity. HHP treatment (250 MPa, 35 °C for 15 min) led to a better product with regard to anti‐radical scavenging capacity, ascorbic acid content and sensory properties (colour, pH) of the tomato and carrot juices compared to conventional pasteurisation. Therefore, HHP can be recommended not only for industrial production but also for safe storage of fresh juices, such as tomato and carrot, even at elevated storage temperatures (25 °C). Fresh pork sausages containing natural colorants, red yeast rice powder (Monascus purpureus; Frame®) or a crude red beet root (Beta vulgaris) juice or commercial betanin (E‐162), at different concentrations, were packaged in an atmosphere containing 80% O2 and 20% CO2 and stored in the dark for 20 days. The following parameters were measured at 4 day intervals: instrumental colour (CIE L*, a*, b*, a*/b*, C* and h*), reflectance spectra, sensory discoloration (trained panel) and acceptability and willingness to purchase (habitual and non‐habitual consumer panels) under two different lighting displays (standard fluorescent and Promolux® lamp). The use of colorants improved the colour properties of fresh pork sausages. Sausages with red yeast rice, red beet root juice and betanin had lower L* and h* and higher a* and a*/b* values than control samples. The colour properties of sausages with red beet root were the closest to control sausages, while sausages with red yeast rice had significantly lower b* values. Both natural colorants and betanin protected sausages from discoloration and extended acceptability and willingness to purchase by about 4 days, according to evaluation by habitual consumers under two different types of lighting display. Therefore, red beet root juice may be envisaged as the most suitable natural colorant for use in fresh pork sausages. Copyright © 2005 Society of Chemical Industry  相似文献
