Four studies were carried out for the purpose of measuring the digestibility of diets based on rice and beans (Phaseolus vulgaris), and in order to quantify the effect of their supplementation with animal protein (milk) and energy (oil), on the energy and protein digestibility of such diets in human adults. Diets were offered so that they supplied 46, 72, and 103 mg N/kg/day. When the basal diet--where rice provided 60% of the protein and beans 40%--was administered at a level of 102.5 mg of nitrogen/kg/day and 49.5 Kcal/kg/day of gross energy, an apparent and true nitrogen, energy and metabolizable energy digestibility of 59.1, 70.8, 93.8 and 92.5%, respectively, were observed. When substituting 10% of the vegetable protein by milk protein in the same diet, the same indicators revealed a digestibility of 65.3, 76.8, 93.5 and 92.1%, respectively. The information indicates that supplementation with animal protein improves nitrogen absorption at any of the energy levels studied. In contrast, caloric supplementation does not have any positive effect on nitrogen or energy absorption. It was also found that nitrogen apparent digestibility increases significantly when the N level in the diet is raised, and stabilizes when intake exceeds 100 mg nitrogen/kg/day. It is therefore proposed that for digestibility studies in diets where animal protein is utilized at a nitrogen level of around 120 mg/kg/day, true digestibility remains constant, no matter what nitrogen level is used in the diet.  相似文献

Information is provided on the nitrogen intake for nitrogen equilibrium in young human adults fed a cassava/bean diet and a plantain/bean diet. Ten individuals participating in each study ingested levels of 0, 0.2, 0.4 and 0.6 g protein/kg/day at a constant energy level (45 kcal/kg/day), using the short-term nitrogen balance method with multiple intakes. Even with intakes of 105.7 and 117.4 mg N/kg/day for the cassava/bean and plantain/bean diets, the experimental subjects did not reach a positive balance. The protein digestibility of the diets was low, as had been confirmed previously for beans alone: 55.7% for the cassava/bean study and 50.4% for plantains/beans. The average quantity of nitrogen intake required to reach nitrogen equilibrium for the cassava/bean diet was 114.3 mg N/kg/day and for the plantain/bean diet, 111.9 mg N/kg/day. In the case of the cassava/bean diet, the variability was 81.3 to 172.4, and for plantain/beans, 83.6 to 219.3 mg/kg/day. In four of the five individuals who participated in both studies, the nitrogen intake required to reach nitrogen equilibrium was greater when fed the diet based on plantain/beans than when fed the cassava/beans diet. These data support the assertion that the protein requirement is not a simple figure. Individual variability is so great that, as has been suggested, it is necessary to add two standard deviations to the average figure to cover 97.5% of the population. The results of this investigation support the need to increase protein digestibility and protein quality of beans, since this is a food of major importance for large population segments in the developing countries.  相似文献

This paper proposes a new approach to estimate the protein needs of a population; recommendations are also made on the protein intake of adults fed diets based on rice and beans. For this purpose, the nitrogen balance data previously reported for 40 adult human subjects who had participated in 160 nitrogen balance periods fed diets based on rice and beans, with and without animal protein and/or energy supplementation were used. The proposed method is based on the curvilinear response between nitrogen intake and its nitrogen balance. The second degree equation describing the relationship between nitrogen balance and intake is calculated. Using the mathematical concept of the first and second derivatives, the point of inflexion is obtained, and interpreted as that condition wherein the individual utilizes with maximum efficacy the ingested nitrogen; nitrogen ingestion, which corresponds to that point, is therefore taken as the dietary nitrogen recommendation for the individual. When the values obtained by means of the quadratic equation are compared to those obtained by the traditional linear equation, values were found to be statistically equal (p less than 0.05) for both calculation methods. The recommended protein intake of an adult population fed a diet based on rice and beans was 0.80 and 0.77 g/kg/day for the quadratic approach, and for the conventional method, respectively. When this diet was supplemented with 10% milk protein and with the same energy level, the calculated values were 0.64 and 0.71 g protein/kg/day for both methods, in this same order. The essential amino acid intake and absorption values were also calculated from the protein levels recommended by both methods to be in nitrogen balance, from a diet based on rice and beans. Findings revealed, in all cases, that the intakes of each and all essential amino acids met those levels indicated by FAO/WHO, with the exception of isoleucine and the sulphur-containing amino acids, which apparently limit the quality of the diet.  相似文献

The study reports on the protein digestibility of five cultivars of common beans (Phaseolus vulgaris) of different color, tested in young adult human subjects, as the sole dietary protein source. Cheese protein was used as reference protein. The cooked beans provided 0.65 g protein/kg/day, and energy intake was adjusted to 45 kcal/kg/day. Results indicated apparent protein digestibility to vary from 49.6 to 62.1%. White colored beans showed the highest value, while black beans gave the lowest. Cheese protein showed an apparent protein digestibility of 76.2%. The true protein digestibility was calculated using the endogenous nitrogen excretion values obtained in the study, as well as literature values. Digestibility increased as expected, but it is still low as compared to other protein sources. A high correlation was found between dry matter digestibility and protein digestibility. Fecal nitrogen was fractionated between soluble and insoluble nitrogen in a 0.02 N NaOH solution. This assay was also carried out in the cooked beans, and findings revealed that the soluble nitrogen fraction was highly correlated with protein digestibility, with a correlation coefficient of -0.94. This fraction, still to be identified, could very well be responsible for the low digestibility values found for common beans in human subjects.  相似文献

Three varieties of common beans were chemically analyzed and their protein quality was evaluated in 12 human male adult subjects by the short-term nitrogen balance method. Chemical analyses were performed for both raw and cooked grains. Cooking reduced the trypsin inhibitors in 28 to 73%, hemagglutinins, 100%, tannins as acid tannic equivalents, 9 to 72%, and 55 to 75% as catequin equivalents, and alkali-soluble nitrogen in 65%. Red and black beans contained more residual trypsin inhibitors and tannins than white beans, while the latter contained more alkali-soluble nitrogen. Although cooked colored beans had more antinutritional factors that affect protein digestibility, their protein quality was similar to that of white beans. This could be explained by the fact that the amino acid composition and/or balance of red and black beans absorbed nitrogen is better than that of white beans, so that the final nutritional value will be determined by the sum of interactions between all factors. In this study, each of the three varieties presented at least one protein quality depressor in higher concentration than the other two varieties. Therefore, the overall differences found between treatments and residual effect, were small or non existent, while significant differences (p greater than 0.05) were found between subjects and nitrogen balance periods. A level of 0.65 g of bean protein/kg/day was not enough to maintain nitrogen balance in subjects fed a diet where beans were the only protein source. According to calculations, 0.9-1.0 g of bean protein/kg/day are necessary for nitrogen balance in male adults, and 1.2-1.3 g of protein bean would be the recommendation for a normal population.  相似文献

The proximate composition as well as vitamin and mineral contents of a sample of chiga (Campsiandra comosa Benth) flour was analyzed, having determined that it was essentially a carbohydrate source. The product was evaluated as source of energy, substituting 33, 67 and 100% of the corn starch of isoproteic and isocaloric feeds for growing Sprague-Dawley rats. In an experimental period of 15 days, results indicated that the substitution of one-third of the carbohydrate with chiga flour did not reduce the weight gain, food consumption, metabolizable energy or utilization of the food energy by the rats. Higher levels of the product in the diet originated a decrement in these variable values. The apparent nitrogen and energy digestibility of the diets was progressively reduced as the concentration range of chiga flour utilized was increased. The metabolizable energy value of chiga flour was 3.15 kcal/g, which indicated that approximately 78% of its gross energy (4.01 kcal/g) was metabolized.  相似文献

Background

High protein diet has been known to cause metabolic acidosis, which is manifested by increased urinary excretion of nitrogen and calcium. Bodybuilders habitually consumed excessive dietary protein over the amounts recommended for them to promote muscle mass accretion. This study investigated the metabolic response to high protein consumption in the elite bodybuilders.

Methods

Eight elite Korean bodybuilders within the age from 18 to 25, mean age 21.5 ± 2.6. For data collection, anthropometry, blood and urinary analysis, and dietary assessment were conducted.

Results

They consumed large amounts of protein (4.3 ± 1.2 g/kg BW/day) and calories (5,621.7 ± 1,354.7 kcal/day), as well as more than the recommended amounts of vitamins and minerals, including potassium and calcium. Serum creatinine (1.3 ± 0.1 mg/dl) and potassium (5.9 ± 0.8 mmol/L), and urinary urea nitrogen (24.7 ± 9.5 mg/dl) and creatinine (2.3 ± 0.7 mg/dl) were observed to be higher than the normal reference ranges. Urinary calcium (0.3 ± 0.1 mg/dl), and phosphorus (1.3 ± 0.4 mg/dl) were on the border of upper limit of the reference range and the urine pH was in normal range.

Conclusions

Increased urinary excretion of urea nitrogen and creatinine might be due to the high rates of protein metabolism that follow high protein intake and muscle turnover. The obvious evidence of metabolic acidosis in response to high protein diet in the subjects with high potassium intake and intensive resistance exercise were not shown in this study results. However, this study implied that resistance exercise with adequate mineral supplementation, such as potassium and calcium, could reduce or offset the negative effects of protein-generated metabolic changes. This study provides preliminary information of metabolic response to high protein intake in bodybuilders who engaged in high-intensity resistance exercise. Further studies will be needed to determine the effects of the intensity of exercise and the level of mineral intakes, especially potassium and calcium, which have a role to maintain acid-base homeostasis, on protein metabolism in large population of bodybuilders.  相似文献

This study examined the capabilities of an ultraendurance athlete to self-regulate their diet during an attempt on the record for the longest period of stationary cycling. The attempt required the athlete to complete at least 20 km/hr, with a 15 minute break allowed every eight hours. Laboratory tests determined a heart rate-oxygen consumption regression equation enabling calculation of energy expenditure from heart rate during the attempt. Energy intake was determined by a non-weighed dietary record collected at the time of consumption. The athlete completed 46.7 hours, covering 1126 km, at a speed of 24 ± 1.6 km/hr. He expended 14486 kcal and consumed 11098 kcal resulting in an energy deficit (-3290 kcal) and a weight loss (-0.55 kg). The carbohydrate (42 ± 32 g/hr), water (422 ± 441 ml/hr), and sodium (306 ± 465 mg/hr) intake were all below current recommendations. The athlete was unable to self-regulate his diet or exercise intensity to prevent a negative energy balance.  相似文献

Casein or soy protein with vegetable or animal fat were used to determine the dietary protein or fat effects and their possible interaction on serum cholesterol levels. Young, male New Zealand white rabbits with a mean weight of 2.1 kg were divided into groups of six and fed one of four different diets containing 20% of the calories as protein, 30% as fat (according to dietary guidelines for the United States) and 50% as carbohydrate. The diets contained casein or soy (lysine/arginine ratio = 2.2 or 0.9, respectively) as the protein sources with fat from either almond oil or butter. There was no significant difference in weight gain among the diet groups. Total serum cholesterol level was highest among animals fed the diet containing butter with casein (177 +/- 25 mg/dl) or soy protein (189 +/- 50 mg/dl), it was intermediate in animals fed the vegetable oil with casein (121 +/- 14 mg/dl), and lowest in the soy protein with vegetable oil group (58 +/- 12 mg/dl). There was a significant difference in serum cholesterol levels due to the protein effect when vegetable oil was used (p less than 0.05) but not with butter. There was also a significant fat effect on serum cholesterol when the diet contained soy protein (p less than 0.005) but not when the protein was casein. No significant interaction was observed between the dietary fat and protein sources on serum cholesterol levels, which suggests that dietary protein and fat independently affect the levels of serum cholesterol. Thus, dietary protein has a significant effect on serum cholesterol levels and may be a factor in the low levels of serum cholesterol observed among vegetarians and in humans of Third World countries where the diets is primarily of vegetable origin.  相似文献

Epidemiologic and experimental data support thee possibility that dietary calcium intake plays a role in human body weight regulation. The aim of the present study was to evaluate calcium intake and its relationship with body mass index (BMI) in adolescents. Weight, height, 3-day food record and a food frequency questionnaire were collected among all adolescents participants at the Outpatient Clinic for Adolescents at the Federal University of Sao Paulo between 2001 and 2003. The statistical analysis comprised Chi-square, Student's T-test, Pearson correlation and linear regression. One-hundred and twenty-one adolescents were studied (62.8% female), with a mean age of 14.9 +/- 2.2 years old. Mean energy and calcium intakes were 1729.9 +/- 557.8 kcal/day and 598.2 +/- 287.9 mg/day respectively, with no significant statistical differences between sex or age. Almost ninety-eight percent of adolescents presented a mean calcium intake lower than proposed values. Calcium intake adjusted for energy presented a significant negative correlation with body weight (r=-0.194, p=0.03) and BMI (r=-0.185, p=0.04). Furthermore, adolescents in the lowest quartile of calcium intake presented higher BMI (29.7 +/- 7.4 kg/m2) than adolescents in the highest calcium quartile. These results indicated a dietary calcium intake lower than recommendations for this life stage, and a contribution of this mineral in the body mass index.  相似文献

To evaluate the effect of dietary factors on plasma zinc levels, dietary zinc intake was estimated and plasma levels were measured in 37 healthy young adults of low and middle socioeconomic status. Our study included 16 males aged 29 +/- 7 and 21 females aged 26 +/- 6 years. Dietary intake of zinc and protein was determined from a 24-hour dietary recall survey. Plasma zinc was measured by atomic absorption spectrophotometry. Alkaline phosphatase (AP) in plasma was also measured and the weight/height percentage for each subject calculated according to Jelliffe's standards. The average diet was composed of cereals, legumes, eggs, bread and noodles, caloric intake was 2051 +/- 154 kcal/day for men and 1767 +/- 158 (x +/- SD) kcal/day for women. The daily intake of zinc was 8.3 +/- 3.0 mg/day for males, and 9.7 +/- 2.0 mg/day for females. Cereals were the main source of zinc for men, while egg and dairy products were for women. Plasma zinc values were 82 +/- 22 micrograms/dl for men and 94 +/- 19 micrograms/dl for women (p less than 0.01). For the whole group plasma zinc concentration was 89 +/- 21 micrograms/dl. Seven males and two females had low plasma zinc values (70 micrograms/dl or less). Alkaline phosphatase (AP) levels were 110 +/- 10 IU for males and 71 +/- 4 IU for females (p less than 0.001). These values did not correlate with the zinc levels. Average weight/height was 99 +/- 18 for men, and 108 +/- 18 for females. Results indicate that on the average, in our study group plasma zinc levels were within the normal range, although they were significantly lower in men. Dietary intake of zinc was below the recommendations, being higher for women as related to values presented by men. The observed low plasma levels of zinc may be caused by a low intake, and/or poor bioavailability.  相似文献

The protein quality of soybean products was determined by a short nitrogen balance index (NBI) assay with 15 adult males. In the first study, a textured vegetable protein (TVP) was tested alone and in a 50:50 mixture with ground beef. Protein was fed at 0.2, 0.4 and 0.6 g/kg body weight/day with a constant energy intake. The protein quality (NBI) was then calculated by regression analysis of nitrogen absorbed to nitrogen retained. The NBI of beef (0.91) and of the mixture (0.87) were similar; however, the protein quality of TVP fed alone (0.77) was significantly lower. In the second study, carried out at an intake level of 0.6 g protein/kg/day, supplementation of the TVP with 0.5% DL-methionine improved nitrogen retention, but the values obtained did not reach statistical significance. Meat alone, or the 50:50 mixture fed at an equivalent protein intake, gave similar nitrogen retention values, both of which differed significantly from those obtained when TVP was fed alone. The addition of wheat gluten, used as a source of methionine, to the TVP: meat mixture, produced nitrogen retention values below those obtained with the 50:50 beef:TVP blend. Ten men participated in another trial, this time to determine the protein quality of a soybean protein isolate, which gave an NBI value of 0.91, indicating the high quality of the protein tested. Comparison of the protein quality values obtained by the short-term NBI assay revealed these were essentially the same as those reported by other workers using the conventional long-term approach.  相似文献

Weanling rats were fed on diets of rice/beans (RB) with or without mineral (M) supplement; vitamin A (A); M + A (MA); or milk (L), containing from 3 to 14% protein. As determined by various measures, the best results were observed in the group fed the RB diet, supplemented with L. This group was followed by those receiving the MA and M diets. Protein utilization in the RB diet, as well as minimum protein requirement for maintaining body weight, depend on the supplementary nutrients. The mechanism of this effect may be related to the appetite of the animals and to the voluntary intake, which is influenced and regulated by the diet composition.  相似文献

To evaluate the effects of nutritional supplements on nitrogen and energy balances, body composition and immune parameters, HIV-infected malnourished adult outpatients were prospectively studied. Forty-six patients (4 females and 42 males; 37 +/- 12 y) were supplemented with a polymeric diet (PD) or regular foods (RF) on two consecutive 45-day periods on a crossover design. Weight, skinfold thicknesses, plasma albumin (PA), CD4 and CD8 lymphocyte counts (LC), resting energy expenditure (REE) and urinary nitrogen excretion were measured at baseline, 45 and 90-day. Food intake was weekly recorded by food surveys. Thirty-five patients completed the protocol (18 in Group 1:PD-->RF; 17 in Group 2:RF-->PD). In both groups, weight, fat free mass (FFM), energy balance (EB) and nitrogen balance (NB) increased significantly after PD, whereas LC and PA remained unchanged in both groups. The best results in terms of weight gain were obtained in the PD group and PD plus zidovudine subgroup (n = 8) during the first 45 days (weight gain/FFM gain: 4.8/2.6 kg and 6.8/3.1 kg, respectively). Nutritional supplement with PD, according to the EB and NB goals, was well tolerated and permitted to achieve a significant weight and FFM gain over a 90-day follow-up.  相似文献

ABSTRACT: BACKGROUND: Around the world, beans and rice are commonly consumed together as a meal. With type 2 diabetes increasing, the effect of this traditional diet pattern on glycemic response has not been studied fully. METHODS: We evaluated the glycemic response of bean and rice traditional meals compared to rice alone in adults with type 2 diabetes. Seventeen men and women with type 2 diabetes controlled by metformin (n = 14) or diet/exercise (n = 3) aged 35-70 years participated in the randomized 4 x 4 crossover trial. The white long grain rice control, pinto beans/rice, black beans/rice, red kidney beans/rice test meals, matched for 50 grams of available carbohydrate, were consumed at breakfast after a 12 hour fast. Capillary blood glucose concentrations at baseline and at 30 minute intervals up to 180 minutes postprandial were collected. MANOVA for repeated measures established glucose differences between treatments. Paired t tests identified differences between bean types and the rice control following a significant MANOVA. RESULTS: Postprandial net glucose values were significantly lower for the three bean/rice treatments in contrast to the rice control at 90, 120 and 150 minutes. Incremental area under the curve values were significantly lower for the pinto and black bean/rice meals compared to rice alone, but not for kidney beans. CONCLUSIONS: Pinto, dark red kidney and black beans with rice attenuate the glycemic response compared to rice alone. Promotion of traditional foods may provide non-pharmaceutical management of type 2 diabetes and improve dietary adherence with cultural groups. ABSTRACT: An appreciable volume of human clinical data supports increased dietary protein for greater gains from resistance training, but not all findings are in agreement. We recently proposed "protein spread theory" and "protein change theory" in an effort to explain discrepancies in the response to increased dietary protein in weight management interventions. The present review aimed to extend "protein spread theory" and "protein change theory" to studies examining the effects of protein on resistance training induced muscle and strength gains.Protein spread theory proposed that there must have been a sufficient spread or % difference in g/kg/day protein intake between groups during a protein intervention to see muscle and strength differences. Protein change theory postulated that for the higher protein group, there must be a sufficient change from baseline g/kg/day protein intake to during study g/kg/day protein intake to see muscle and strength benefits. Seventeen studies met inclusion criteria. In studies where a higher protein intervention was deemed successful there was, on average, a 66.1% g/kg/day between group intake spread versus a 10.2% g/kg/day spread in studies where a higher protein diet was no more effective than control. The average change in habitual protein intake in studies showing higher protein to be more effective than control was +59.5% compared to +6.5% when additional protein was no more effective than control. The magnitudes of difference between the mean spreads and changes of the present review are similar to our previous review on these theories in a weight management context. Providing sufficient deviation from habitual intake appears to be an important factor in determining the success of additional protein in enhancing muscle and strength gains from resistance training. An increase in dietary protein favorably effects muscle and strength during resistance training.  相似文献

为了评价春雷霉素在水稻上使用的安全性,建立其使用规范,2010-2011年在河南、黑龙江和江苏3地进行了10%春雷霉素可湿性粉剂在水稻上的消解动态和最终残留试验。消解动态试验结果表明:春雷霉素在水稻田水和植株中的半衰期分别为0.972.70 d和1.002.70 d和1.002.18 d。最终残留试验表明:10%春雷霉素可湿性粉剂按推荐剂量(40 g/hm2)和1.5倍推荐剂量(60 g/hm2)在病害发生期施药32.18 d。最终残留试验表明:10%春雷霉素可湿性粉剂按推荐剂量(40 g/hm2)和1.5倍推荐剂量(60 g/hm2)在病害发生期施药34次,末次施药后14,21,28 d,春雷霉素在糙米中残留量≤0.022 mg/kg,稻壳中≤0.269 mg/kg,植株中≤0.159 mg/kg,土壤中≤0.005 mg/kg。  相似文献

测定了稻丰散在水稻及稻田环境的残留动态情况。以丙酮、乙腈或二氯甲烷提取水稻、土壤及水样中的稻丰散残留,稻苗样品过SPE小柱净化,稻壳和糙米直接浓缩、定容,最后用GC-ECD(气相色谱仪带电子捕获检测器)测定。稻丰散在土壤、田水、稻杆(苗)、糙米和稻壳中的添加回收率为83.8%~117.2%。稻丰散在三地田水、土壤和稻苗中的消解半衰期分别为0.92~1.71 d、8.2~16.1 d和2.59~4.30 d。按推荐剂量的1.5倍施药3~4次,距最后一次施药间隔21 d后,稻杆中最终残留量≤0.019~2.05 mg/kg,稻壳中最终残留量≤0.234~4.19 mg/kg,糙米中最终残留量≤0.001~0.040 mg/kg。暂以稻丰散在糙米中的最高残留限量为0.05 mg/kg,糙米距采收期最后一次施药21 d是安全的,但稻壳慎用。  相似文献

The polyphenolic compounds present in raw and cooked, and dried, with and without the cooking broth of common white, black and red beans (Phaseolus vulgaris) were measured by the Folin-Denis method for total polyphenols, and by the protein precipitation method of Hagerman-Butler, which measures their biological activity. The polyphenol content was measured during 20 consecutive days on the same sample, using three different extracts of volume from each sample. Statistical analysis of the results by the Folin-Denis method indicated that variability among the three aliquots was different for each bean color. A non-parametric analysis, however, indicated that the average in the three levels of concentration for beans of all colors, was the same. A similar analysis of the results by the Hagerman-Butler method demonstrated that variability and average values for the three aliquots were equal for black and red beans but not for white beans. The coefficient of variation was lower for the higher aliquot of the extract. A significant correlation (r = 0.72, P less than 0.05, n = 60) was found between the two methods for all beans using the larger aliquot of the extract. The correlation was highly significant (r = 0.84, P less than 0.05) when white bean values were eliminated. The polyphenolic content varied with seed color and the thermic process reduced their content, as measured by the two methods. The losses in polyphenolics as measured by the Folin-Denis in the cooked beans dried with broth, varied from 31.4 to 36.3%, and from 39.8 to 51.1% for the cooked bean flour dried without broth. The losses by the Hagerman-Butler method were from 25.0 to 93.5% in the cooked bean flours dried with cooking broth, and from 33.3 to 95.7% when dried without the broth. The higher losses were recorded for red beans. In vivo digestibility for cooked bean flours, dried and without broth, were 73.2, 69.6 and 64.5%, and 71.9, 71.9 and 68.8% for white, red and black beans, respectively. A negative correlation (r = -0.39) and significant (p less than 0.05) was found between polyphenolic content in the diet and in vivo protein digestibility.  相似文献
