二氢杨梅素在猕猴桃籽油中的抗氧化性研究 总被引:1,自引:1,他引:1
以过氧化值(POV值)为指标,研究了二氢杨梅素对猕猴桃籽油的抗氧化性能。结果表明:二氢杨梅素对猕猴桃籽油具有较强的抗氧化作用,且具有剂量效应关系,即随着二氢杨梅素浓度的增大,抗氧化作用增强;抗坏血酸、柠檬酸、多聚磷酸钠、乙二胺四乙酸二钠对二氢杨梅素的抗氧化作用具有增效作用,乙二胺四乙酸二钠为最适增效剂;0.2μg/mL的二氢杨梅素对猕猴桃籽油的抗氧化作用强于同浓度的BHT和茶多酚。二氢杨梅素作为天然抗氧化剂可以有效地减缓猕猴桃籽油的氧化程度、推迟氧化诱导期,从而延长猕猴桃籽油的保质期。 相似文献

目的:探讨杨梅素、杨梅苷及二氢杨梅素的抗氧化和乙酰胆碱酯酶抑制活性。方法:采用DPPH自由基清除和乙酰胆碱酯酶抑制高通量筛选模型进行研究。结果:杨梅素、杨梅苷和二氢杨梅素清除DPPH自由基的IC50值分别为18.34、28.89、10.70μg/mL,三种化合物的抗氧化活性均强于阳性药芦丁(IC50=31.32μg/mL),其中二氢杨梅素还强于VC(IC50=14.69μg/mL);在质量浓度为0.25mg/mL时,杨梅素、杨梅苷和二氢杨梅素对乙酰胆碱酯酶的抑制率分别为:30.66%±4.05%、38.48%±1.98%、78.81%±2.23%,其中二氢杨梅素对乙酰胆碱酯酶抑制作用较显著,其IC50值为1546±47.05μmol/L。结论:杨梅素、杨梅苷、二氢杨梅素均具有显著的DPPH自由基清除能力,本文首次报道二氢杨梅素具有较好的乙酰胆碱酯酶抑制活性,值得进一步深入研究。 相似文献

二氢杨梅素在天然藤茶中含量高达25.6%,具有多种生理功能,受到广泛关注。但二氢杨梅素常温水溶性差,生物利用度较低,限制了其应用范围,为了提高二氢杨梅素的水溶性,对二氢杨梅素进行分子修饰,制备了二氢杨梅素-茶氨酸复合物,利用紫外光谱、红外光谱、质谱和核磁共振氢谱对复合物进行了结构表征,测定了复合物的理化性质,并考察了复合物的抗氧化活性。通过结构分析,二氢杨梅素分子中C3-OH、C5-OH、C7-OH、C3′-OH、C5′-OH与茶氨酸的活泼氢通过氢键结合形成复合物;复合物清除·OH自由基的能力均强于二氢杨梅素和Vc,清除O2-·自由基和DPPH自由基的能力和二氢杨梅素相当,比Vc强。二氢杨梅素和茶氨酸的复合,不仅提高其水溶性,在抗氧化活性方面也起到了强化的作用。 相似文献

用月桂酰氯对二氢杨梅素进行不同程度的酯化修饰,探讨不同程度的酯化修饰对二氢杨梅素溶解性和抗氧化性能的影响。结果表明:与二氢杨梅素相比,二氢杨梅素酯化物在油中的溶解度提高20~300 倍,并且随着酯化程度加大,二氢杨梅素酯化物在油中溶解度增加。二氢杨梅素酯化物在极性溶剂中清除DPPH 自由基和H2O2 的能力比二氢杨梅素低,酯化物的抗氧化活性随着酯化程度的增加呈下降趋势;在铁离子- 抗坏血酸诱导的卵磷脂过氧化反应体系中,二氢杨梅素酯化物的抗氧化活性明显优于二氢杨梅素,且不受酯化程度的影响,表明二氢杨梅素及其酯化物在卵磷酯脂质体中的抗氧化活性受溶解性和羟基数目双重影响。 相似文献

为研究二氢杨梅素对不同活性氧自由基的清除作用,采用ESR和自旋捕集技术测定二氢杨梅素对·OH、·O2-和DPPH自由基的清除效果。结果表明,二氢杨梅素对活性氧自由基有较好的清除作用,并呈现出一定的量效关系;二氢杨梅素对活性氧自由基有较好的清除作用,并呈现出一定的量效关系;二氢杨梅素清除和抑制·O2-、·OH-和DPPH自由基的IC50分别为7.4μg/mL、297.8μg/mL和12.4μg/mL,表明二氢杨梅素对不同自由基的清除能力有显著差异,对超氧自由基具有更强的清除作用。 相似文献

Intelligent packaging with the ability to detect chemical, physical, and/or biological changes in the food is a breakthrough in the food industry. Food freshness indicators (FFI) and time-temperature indicators (TTI) are major groups of intelligent packaging. They can be fabricated as a label, providing a rapid response to food quality or storage temperature changes through color changes. Electrospinning, as an effective and versatile method of preparing continuous nanofibers, has been employed as a promising candidate to manufacture food packaging materials. More recently, electrospun nanofibers have been utilized as a novel platform for the development of FFI/TTI intelligent packaging due to their excellent properties including high molecular orientation, high porosity, high surface area with tailored morphology, and a high level of versatility. This article reviews the morphological/thermal properties, color response activity, and stability of electrospun nanofibers mats as intelligent food packaging (i.e., FFI and TTI-based electrospun nanofibers). The applications of FFI/TTI-based nanofibrous on different food commodities are discussed. Finally, the existing limits and perspectives for the development of electrospinning in the area of intelligent food packaging are discussed. 相似文献

Water is a major component of drinking water, beverages, and most foodstuffs. In this study, an effort has been made to employ selected properties of water for: (1) evaluation of interactions of water with other food components; (2) discussion on the effects of water properties on food and beverage products; (3) applications of water properties in food technology; and (4) comparison of water properties with corresponding properties of similar substances. This study provides the following major conclusions: (i) unusual properties of water are mostly due to its high permanent dipole moment, partial ionic character of O–H covalent bonds, and extensive hydrogen bonds; (ii) different properties of many foodstuffs are strongly related to various properties of water; (iii) the properties of food products change depending on water availability and temperature; (iv) preparation of drinking water is a prerequisite for production of any safe drinks and foodstuffs; (v) water contributes important roles in quality, flavor, and shelf-life of foods; and (vi) water is used in food industries as a fluid for heat transfer; as a medium for temperature moderation in food processing; as a solvent for sugars, salts, water-soluble vitamins, and acids; as a dispersing agent for hydrophilic food components; as a dispersed phase for emulsified products; or as a reactant for several reactions in food processing. 相似文献

Plastic pollution is a significant concern nowadays due to wastes generated from non-biodegradable and non-renewable synthetic materials. In particular, most plastic food packaging material ends up in landfills, creating mass wastes that clog the drainage system and pollute the ocean. Thus, studies on various biopolymers have been promoted to replace synthetic polymers in food packaging and consequently, the high number of research in biopolymers food packaging, especially in the characterization, properties and also the development of the biopolymer. For biopolymer-based food packaging, silk fibroin (SF) has been highlighted because of its biodegradability and low water vapor permeability properties. This review focuses on the different properties of SF films prepared through solution casting and electrospinning for food packaging. Discussions encompassed chemical properties, mechanical properties, permeability, and biodegradability. This review also discussed the studies that used SF as the biomaterial for food packaging. 相似文献
