以当地优质葡萄品种媚丽为对照,调查酿酒葡萄品种增芳德的物候期与抗病性,并在果实转色后进行成熟度监控,采收后测定基本理化指标。按照小容器酿造规范酿造增芳德干红葡萄酒,测定果皮及葡萄酒中的酚类物质,并对葡萄酒进行感官分析。结果表明,增芳德在杨凌地区的物候期比媚丽早一周左右,抗霜霉病和炭疽病能力弱于后者。理化指标结果表明,除总黄烷醇外,增芳德葡萄酒中各酚类含量均显著高于媚丽(P<0.05)。感官评价结果表明,增芳德葡萄酒的口感和香气比媚丽葡萄酒更浓郁、复杂,且香气主要以红果和植物味为主。增芳德在杨凌地区的栽培适应性中等,且葡萄酒感官品质优于媚丽。  相似文献

分别测定干红树葡萄酒与2种干红葡萄酒(法国干红葡萄酒、国产干红葡萄酒)中的总多酚、总黄酮、白藜芦醇、单宁、酚酸、维生素、花青素及矿物质等功能性成分,采用DPPH法、ABTS法、邻二氮菲法和FRAP法分析3种酒的抗氧化能力,并对其差异进行分析比较。结果表明:干红树葡萄酒与2种干红葡萄酒功能成分种类及含量各有特点和优势。干红树葡萄酒中没食子酸、VA、VC、Mn与Zn含量均极显著高于国产干红葡萄酒和法国干红葡萄酒;法国干红葡萄酒中总多酚、总黄酮、白藜芦醇、儿茶素、咖啡酸、香豆酸、阿魏酸、矢车菊色素及Fe含量均极显著高于国产干红葡萄酒和干红树葡萄酒;国产干红葡萄酒中单宁、VD、飞燕草色素、矮牵牛色素、天竺葵色素、芍药色素、锦葵色素、Ca和Mg含量均极显著高于法国干红葡萄酒和干红树葡萄酒。3种酒抗氧化活性亦各具特色,树葡萄红酒对DPPH·的清除能力最强,法国干红葡萄酒对·OH的清除能力最强,国产干红葡萄酒对ABTS~+的清除能力及对铁离子的还原能力最强。  相似文献

<正>酚类物质是芳香环上连有一个或多个羟基的低分子量有机化合物,其不但决定了葡萄酒的口感、色泽、贮藏寿命及稳定性,而且具有很强的抗氧化活性。葡萄酒中酚类物质对机体的防御作用归功于它特有的化学结构——酚羟基结构,它们具有供电子作用,通过提供活泼的氢捕捉机体内活性氧等自由基,阳断了自由基对机体的损伤。另外,葡萄酒中酚类物质也具有络合过渡金属离子能力、激活抗氧化酶的活性、减少α-生育酚自由基及降低氧化酶活性的能力。然而,尽管现在不同实验模式已证实了酚类化合物的这种多功效作用,但对于它们的构效关系的描述还不尽一致,因此,本文总结了酚类化合物(以类黄酮酚为例,见图1)在自由基清除作用和金属离子络合作用中关键的化学结构特征及影响,以旨为葡萄酒中酚类物质构效关系研究提供理论参考。  相似文献

Phenolic antioxidants seem to be partly responsible for the protective effects against cardiovascular diseases attributed to moderate wine consumption. Grape skins greatly contribute to the phenolic composition of red wine. In this paper, the in vitro antioxidant activity of red grape (Vitis vinifera) skins is determined. We show that the radical scavenging activity (C 50 values) against 2,2-diphenyl-1-picrylhydrazyl (DPPH·) of grape skin extracts is relatively high (3.2–11.1 mg dried skin/mg DPPH·) in relation to other foodstuffs and, as expected, is influenced by grape variety, stage of grape ripening and vintage. The antioxidant potential of grape skins seems to be transferred into wine since grape varieties with skins exhibiting high antioxidant potential also resulted in wines with high antioxidant activity. Statistically significant correlations were found between antioxidant activity and phenolic content (total polyphenols, proanthocyanins, catechins and anthocyanins) for both grape skins and wines.  相似文献

Traditional balsamic vinegar (TBV) is a natural product prepared with cooked and concentrated locally grown grape must. It has been demonstrated that TBV contains phenols and shows antioxidant activity. In this study we investigated the antioxidant properties of TBV in relation to its content of phenolic compounds, polymeric tannins and Maillard reaction products (MRPs). Results show that TBV has a high antioxidant activity measured with both FRAP and ABTS assays, which is higher or equal to those obtained in some red wines. About 45% of the antioxidant activity of TBV is due to the total polyphenolic fraction. Among polyphenols, tannins contribute to about 50% of the antioxidant activity of the total polyphenolic fraction. The residual antioxidant activity of TBV is due to the melanoidins (about 45%) synthesized during the boiling of the must and the ageing of TBV and to other compounds such as low molecular weight MRPs. When we investigated the effect of heating on the browning and on the formation of antioxidant MRPs in must model systems, we observed a major formation of antioxidant MRPs for the model system containing both amino acids and sugars with respect to the model system containing only sugars. We also tested the effect of some representative phenolic compounds present in must. Only polyphenols were stable in the model solution; however, at our experimental conditions they did not influence the browning and the formation of MRPs. Independent of their bioavailability, dietary antioxidants play an important role in protecting the gastrointestinal tract from oxidative damage and also possibly against a buildup of peroxides and their assimilitation in the digestive tract.  相似文献

Indian grape wines are analyzed for total phenolic content and antioxidant activity along with other parameters, such as pH, alcohol content, and reducing sugars. Concentration of polyphenols, like tannic acid, catechol, vanillin, caeffic acid, ferullic acid, and resveratrol, was quantified using reverse phase-high performance liquid chromatography and ultra high performance liquid chromatography. The red wines showed the highest concentration of phenolic content (6.5 ± 0.1 mg/ml) and antioxidant activity (84.60 ± 1%) as compared to white and port wines, while red wine R2 showed the highest radical scavenging activity among red wines and R4 showed the lowest total phenolic content. The white wine W3 showed less total phenolic content and antioxidant activity. Further, a positive correlation between phenolic content and antioxidant activity was observed.  相似文献

The wine industry is responsible for the production of million tons of waste, such as grape skin, stalk, sludge and seeds, which can be considered inexpensive sources of phenolic compound owing to incomplete extraction during wine production. Phenolic compounds, also called polyphenols, comprise the most abundant bioactive compounds in grape and are recognized by their antioxidant and antimicrobial potential. Because of their functional properties, extracts obtained from grape wastes, which are rich in phenolic compounds, can be employed in the development of many products, ranging from medical to food applications, decreasing the growth of spoilage and pathogenic microorganisms and inhibiting lipid oxidation. These characteristics are motivating the research for alternative sources of natural antioxidant and antimicrobial agents, aimed at decreasing the use of artificial additives, which have been associated with some toxic effects. This article provides a review of the use of grape by‐product extracts and their bioactive compounds as natural antioxidant and antimicrobial agents in food products. © 2016 Society of Chemical Industry  相似文献

The influence of co-winemaking technique on the phenolic profiles, color and antioxidant capacity of wines made from red grape varieties cultivated in La Mancha region (Spain) was investigated. Co-winemaking red wines were obtained by pre-fermentative blend of grapes (1:1, w/w) from the predominant Cencibel (Tempranillo) variety in this region and the minor varieties Bobal, Moravia Agria, Moravia Dulce, Tortosí and Rojal, together with a three varieties blend (1:1:1, w/w/w) of Cencibel, Bobal and Moravia Agria grapes. The phenolic profiles obtained in co-winemaking wines showed more quantity of different compounds than single-variety wine of Cencibel used as reference. The best results were obtained using Bobal, Moravia Agria and Moravia Dulce varieties for co-winemaking, especially an improvement of color characteristics. All co-winemaking wines significantly increased the total resveratrol content as compared to the Cencibel reference wine, although cis-isomers largely predominated in all wines. Moravia Agria and Rojal varieties produced co-winemaking wines with decreased antioxidant capacity, whereas Bobal and Moravia Dulce varieties increased it, even when the co-winemaking wine from Moravia Dulce contained less total polyphenols than Cencibel reference wine. Co-winemaking technique can be suggested as a way to widen the offer of wines to consumers, incorporating characteristic properties of minor grape varieties. In addition, this enological technique has the benefit of avoiding the disappearance of native species, thus improving the biodiversity of La Mancha region.  相似文献

This research represents a first attempt to chemically characterize wines produced from the autochthonous grape variety, Uva Longanesi, based upon the phenolic compounds responsible for its high astringency as confirmed by preliminary sensory analysis. In addition, a wine produced from Sangiovese, the most popular grape variety in the Emilia-Romagna region, was analyzed for comparative purposes. Results showed that Uva Longanesi wine had a higher pH, alcohol concentration, and total dry extract than the Sangiovese wine. With regards to phenolic constituents, the Uva Longanesi wine had higher color parameters and greater concentrations of total phenolics, including monomeric anthocyanins, small polymeric pigments, and tannins. The phenolic composition of Uva Longanesi wine was found to be responsible for the high reactivity of the wine during fining trials.  相似文献

Influence of maceration on phenolic content and antiradical activity was analyzed in fourteen white wines from Italian region Friuli–Venezia Giulia and Croatian region Istria. Total phenols were determined by Folin–Ciocalteu reagent, twelve individual polyphenols were determined by high-performance liquid chromatography and antiradical activity was determined using 2,2-diphenyl-1-picrylhydrazyl free radical (DPPH·). The experiments showed that the maceration process increases significantly the amount of total phenols and inhibition of DPPH·. Furthermore, a high synergistic activity of individual phenols was observed. The strongest inhibition of DPPH· and the highest amount of total phenols were obtained for 800 Bianco, a blending macerated wine made from 3 white wine varieties. Our study shows that the antioxidant potential of white grape phenols can be preserved during wine processing. The maceration step allows the extraction of phenolic compounds from grape skins, seeds and stalks, resulting in phenol-rich white wine with strong antioxidant properties.  相似文献

葡萄酒中多酚、单宁等功能性成分主要来源于葡萄果皮中,为提高葡萄酒中的酚类物质含量,改善葡萄酒的口感,试验以陕西泾阳赤霞珠葡萄浆果为原料,分别在-20℃和-35℃两种不同温度下进行冷冻处理葡萄浆果并进行小容器酿酒试验,研究了葡萄原料经冷冻处理后葡萄酒中理化指标的差异变化,以及冷冻处理对葡萄酒感官特性的影响。结果表明:赤霞珠葡萄原料经-20℃和-35℃两种不同温度冷冻处理后,葡萄酒中单宁和总酚物质的含量显著增高,且-20℃冷冻处理后含量最高,其中单宁含量为29.54mg/L,总酚含量为129.71mg/L;葡萄原料经-20℃冷冻处理后,葡萄酒的外观、口感和总体评定显著提高。  相似文献

酿酒葡萄皮渣(皮和籽)生物活性物质含量丰富,具有很高的再加工利用价值。对鲜葡萄皮渣进行压榨处理后再干燥,研究压榨对皮渣的酚类物质提取及抗氧化活性的影响。结果表明:压榨处理可以快速降低葡萄皮渣水分含量,缩短干燥时间、提高可溶性膳食纤维提取率。压榨葡萄皮总酚、原花青素的提取量均有所增加,其含量分别为19.56 mg/g和22.64 mg/g。压榨葡萄皮的抗氧化能力高于未压榨葡萄皮,其DPPH、ABTS及羟自由基清除率分别为62.90%、70.18%和41.09%,铁氰化钾还原能力及金属离子螯合能力分别为0.23%和21.33%。压榨籽和皮籽混合物的酚类物质和抗氧化活性则明显降低。抗氧化活性与总酚、原花青素存在显著的相关关系(P<0.01)。  相似文献

Abstract: The potential effect of the extracts from free‐run and pressed Merlot red wine has been evaluated in PC12 cells under oxidative stress situation. Comparing both vinification process, pressed Merlot red wine extract possessed higher neuroprotective activity than the free run wine, possibly attributed to the major content in all global polyphenolic families. High performance liquid chromatography determination of individual polyphenols showed that the major compounds found in Merlot red wine extract were quercetin, catechin, epicatechin, tyrosol, gallic acid, and procyanidins. Pretreatments with these polyphenolic compounds (0.25 mM and 0.1 mM, 24 h) significantly increased cell viability of H2O2 and Fenton reaction treated cells. Moreover, these polyphenols attenuated ROS production and decreased the Redox Index of glutathione (RI = GSSG/GSH + GSSG) in cells treated only with Fenton reaction. Furthermore, some polyphenols induced antioxidant enzymes activity and protein expression. Quercetin was the most active. These results support the beneficial effects of red wine extracts and some of its polyphenols under oxidative stress conditions. Practical Application: This research provides evidences of the preventive properties of wine extracts and its major polyphenols under oxidative stress conditions.  相似文献

Polyphenols are an important fraction of the non-volatile components in the red wine matrix, and they are influenced in quantity and composition at all stages from the grape growing conditions until the time the wine is consumed. Evidence of their interaction with volatiles has been found, and this should affect wine flavour. A range of 12 commercial Spanish red wines from different regions and ages was analysed for their sensory properties, volatile composition in solution and headspace, and their non-volatile phenolic components. Maturation was the most important effect on sensory perception, while the chemical data showed also individual differences between the wines and their regions of production. Headspace volatiles and the phenolic fraction showed better correlations with the sensory perception, but volatiles in solution did not give a good prediction, though there were changes related to maturation. Some flavour components showed changes in their volatile behaviour in the matured wines. This supports the hypothesis that changes in the behaviour of the volatile fraction are related to the evolution of phenolic compounds.  相似文献

Owing to a globally increased interest in the relationship between nutrition and health, the development of new functional food products is gaining more importance. The aim of this research was to evaluate the quality and acceptability of a wine produced with increased amounts of grape seeds and stems as a functional beverage. Sensory properties of the wines produced were evaluated and the market potential of this product was estimated through a survey carried out among wine consumers in Novi Sad, Serbia. It was shown that addition of enhanced amounts of grape seeds in the pomace had a greater influence on the phenolic composition and antioxidant capacity towards DPPH and hydroxyl radicals than supplementation with stems. Flavan‐3‐ols and their monomers [(+)‐catechin and (?)‐epicatechin], as predominant phenolic compounds extracted from grape seeds, showed a high positive correlation with antioxidant activity (r ≥ 0.950). Based on the best relationship between phenolic composition and sensory acceptability, the addition of 80 g seeds per kilogram of pomace has been suggested as the most acceptable quantity. The survey showed the necessity for promoting the health‐beneficial effects of catechins through various channels, despite the high percentage of respondents (68%) who were willing to pay up to two times more for this functionally enhanced wine. The major obstacle to the official acceptance of this wine as a functional beverage in Serbia is the insufficiently examined question of the effect of moderate alcohol intake on health. Chamber drying under controlled temperature and humidity conditions of the red grape varieties Merlot and Tempranillo grown in Andalusia (Spain), and the fortification and maceration of the musts in the presence of skin from both types of grapes, to obtain sweet red wines, has been studied. Changes in colour and in monomeric and polymeric phenols during the vinification process were examined. Chamber drying increased the sugar content to about 31.4 °Brix within 48 h in Merlot grapes and 72 h in Tempranillo grapes. This drying process also causes skin rupture, facilitating the access of phenolic compounds to the pulp. The resulting musts exhibited slight browning and increased red hues, due to a high concentration of anthocyanins; maceration in the presence of grape skins for 24 h provided the best results. The end-product contained highly acceptable tannin, colour and phenolic compounds for marketing as a high quality sweet red wine, in comparison with other commercial sweet red wines.  相似文献

Plant phenolics present in fruit and vegetables, and that are particularly rich in red wine, have received considerable attention because of their potential antioxidant activity. Human consumption of antioxidants has many alleged health benefits, including protection against cardiovascular diseases, and, most recently, cancer. Red wines contain a variety of polyphenolic antioxidants. Five samples of commercial red wines from Spain and four phenolic compounds of red wine: gallic acid, trans-resveratrol, quercetin and rutin, have been studied. The total phenolics content and the total antioxidant activity (TAA) of wines was determined. The total phenolic content, determined according to the Folin-Ciocalteu method, varied from 1800 to 2300?mg/L, expressed as gallic acid equivalents (GAE). The antioxidative effects of wine phenolics were determined using a system based on the inhibition by antioxidants of the absorbance of the radical cation. The relationship between antioxidant activity of phenolic compounds, as hydrogen donating free radical scavengers, and their chemical structures was studied. Furthermore, the total antioxidant activity of the wines investigated was well correlated with phenol content. Thus, the results confirm that red wine polyphenols are, in vitro, significant antioxidants.  相似文献

The antioxidant properties of traditional balsamic vinegar as regards its phenolic and flavonoid content comparing it to selected vinegars and red wines have been investigated. The polyphenols were separated from interfering compounds utilizing C18 columns. The polyphenolic content was determined utilizing both Folin–Ciocalteu and peroxidase assays. The antioxidant capacity was quantified using both ABTS and FRAP assays. The results show that traditional balsamic vinegar has lower antioxidant activity and phenolic and flavonoid content than Nero d’Avola but higher than the other tested products. The antioxidant capacity of wines and vinegars is highly correlated with their phenolic content, measured by peroxidase assay and it is also highly correlated with their flavonoid content while in traditional balsamic vinegar and balsamic vinegar this correlation diminishes. The study describes a simple and fast method of separating from other compounds and of measuring polyphenols in the analysis of red wines and vinegars with complex composition such as traditional balsamic vinegar.  相似文献

The effectiveness of grape extracts as food ingredient has been tested in various systems. The objective of this study was to evaluate the efficiency of four concentrations of residues of the wine industry in delaying lipid oxidation in processed chicken meat stored under refrigeration. The development of oxidation during the 14‐day storage was evaluated through the thiobarbituric acid reactive substances method (TBAS). The analyses of phenolic compounds and antioxidant activity were performed in grape residue extracts through DPPH (1,1‐difenil‐2‐picrilidrazil) method, lipid peroxidation inhibition and Rancimat. The profile of polyphenols was determined using reversed‐phase high‐performance liquid chromatography. Isabel grape extract (IGE) and Niagara grape extract (NGE) showed significant content of phenolic compounds. NGE and IGE had high antioxidant activity. The addition of grape extracts significantly increased the oxidative stability of processed and cooked chicken meat during the storage time. The extracts from both grape varieties when applied in concentrations of 40 and 60 mg of GAE, presented results similar to that of Butyl hydroxy toluene (BHT).  相似文献

Pinot noir grapes have a unique phenolic profile which can impinge on the extraction and stabilisation of compounds such as anthocyanins and tannins which contribute to the colour and mouthfeel of red wine. This study examined the concentration of phenolic compounds in Pinot noir grape must and wine following application of a novel microwave maceration treatment for red grape must. Microwave maceration was shown to be highly effective for extraction of phenolics from grape solids into grape juice. When juices were fermented to wine, ultraviolet–visible spectrophotometry showed microwave maceration was associated with significantly higher concentrations of total phenolics, anthocyanin, tannin and pigmented tannin in wine at 18 months bottle age, compared with control wine. Mean tannin concentration in microwave treatment wine was 0.60 gm/L at 18 months, compared with 0.14 gm/L in control wine. The microwave treatment was also associated with a substantial and rapid decrease in the grape-associated yeast population, compared with control maceration, and a shorter lag phase at the outset of alcoholic fermentation. Based on this study, microwave maceration warrants further investigation as a potential industrial-scale application in red winemaking.  相似文献
