目的 为进一步提高海关监管部门对进口酒类安全风险的预测预警能力,保障我国食品安全,加速通关效率,构建进口酒类安全风险模糊综合评价模型。方法 基于调查结果,利用层次分析法计算各指标的权重,运用风险矩阵获得模糊隶属度矩阵,进行模糊综合运算得到各级指标风险值,同时模型引入动态调节因子,最终实现对具体批次进口酒的风险等级评价。结果 我国进口酒类安全风险等级为中风险,检测项目中甲醇风险值最高(82.917),纳他霉素风险值最低(52.083)。结论 模型可根据进口酒类总体风险等级和检测项目风险值大小输出推荐检测项目,具有较高的可靠性,可为进口食品安全风险评价及管理工作提供参考。 相似文献

随着人们生活水平的不断提高,猪肉作为人们餐桌上的常见食物之一,它的品质直接影响到人们的健康,因此对猪肉品质的质量综合评价显得尤为重要。根据消费者需求分析影响猪肉品质质量等级的主要因素,采用安全品质、食用品质、新鲜度和卫生品质构建猪肉品质的综合评价递阶层次结构。基于物元分析理论及其主要特点,本文运用对指标体系等级划分、隶属度确定、物元分析模型建立、关联函数值计算等步骤实现了猪肉品质等级的评价模型。以某市场采样的猪肉为实例进行评价,结果表明其猪肉品质总体处于良好状态与实际相符合。该评价方法实现对消费者关注的猪肉品质进行综合评价和对猪肉生产具有重要的指导意义。 相似文献

目的:保障谷物资源的消费安全。方法:根据国家相关标准,确定以镉(Cd)、砷(As)、铅(Pb)、铬(Cr)、黄曲霉毒素(AFs)、伏马毒素(FB)、玉米赤酶烯酮(ZEN)、脱氧雪腐镰刀菌烯酮(DON)8个化学污染物为谷物质量安全的风险评价指标,采用基于熵权法的层次分析法(EW-AHP)计算各风险评价指标的权重,并利用权重将谷物资源中生物危害因素的日常采样数据量化为具体的风险值作为风险评估模型的输出。同时将评价指标的数据作为风险评估模型的输入,选择随机森林回归(LR)、支持向量机回归(SVM)、BP神经网络回归(BP)和K近邻回归(KNN)4种机器学习算法进行模型的构建和比较。结果:基于熵权的层次分析法随机森林回归算法(AHP-RF)构建的模型的预测相关系数达0.99以上,利用风险评估模型对2019年8月的谷物检测数据进行风险预测分析,相关结果与实际相符。结论:基于AHP-RF方法构建的风险评估模型可为谷物资源的安全监管提供有针对性的参考建议。 相似文献

为了实现不同类型服装企业规范化的智能制造建设,基于多维度网络层次分析法(ANP)采用5个一级指标、12个二级指标和35个三级评价指标要素,构建服装实现过程的智能化建设能力成熟度评价模型。通过专家问卷确定模型评价指标的权重关系,借助超级决策软件Super Decision实现ANP评价指标的建模。对新构建的能力成熟度评价模型与通用模型进行基于不同类型服装企业智能化建设能力成熟度的对比验证实验,结果表明新构建的评价模型能充分地体现服装行业智能制造发展现状,能准确地反映企业智能制造整体发展水平和单项指标建设情况,并帮助企业弥补应用技术的短板。 相似文献

为了对苹果采摘机的适用性能进行有针对性的评价,构建采摘机适用性能的树状层次指标体系,并选择带有可拓区间的层次分析法和模糊综合评价法对其进行分析。借助可拓层次分析法求解各级指标因子的权重系数,利用可拓区间替代传统方法中的单一数值,确保主观评价中模糊不确定性的合理存在;借助模糊评价方法对建立的层次体系进行反推评价,保证整体评价过程的科学、客观与准确。计算表明,目标苹果采摘机的一级影响因素中采摘环境、底座、执行器、ECB的权重分别为0.075,0.170,0.326,0.429,整体评估分数为83.26,对应适用性能等级为Ⅱ级,说明采摘机工作性能良好,可以保障长时间工作。研究为智能果园苹果采摘提供技术支撑。 相似文献

近年来,随着我国居民对健康的重视程度不断提升,食品安全问题也逐渐成为人们关注的焦点问题。食品供应链物流环节较长,容易引发食品安全问题,因此对食品供应链物流运行机制的研究具有重要意义。本文通过分析食品供应链物流的现状,指出了食品供应链物流中制约食品安全的因素,包括:食品物流包装不合格、食品供应链物流基础设施不完备、信息化程度低和缺乏食品安全监督机制。最后提出了建立保障食品安全的食品供应链物流运行机制,主要从建立食品供应链物流企业信用评价体系、建立食品供应链物流的科学协同机制、建立食品供应链物流的信息化保障机制以及监督机制4方面进行了论述。 相似文献

This paper summarizes results obtained by research into pork chain management in the EU Integrated Project Q-Porkchains. Changing demands for intrinsic and extrinsic quality attributes of pork products impact the way supply chain management should be organized from the farmer down to the consumer. The paper shows the importance of Quality Management Systems for integrating supply chains and enhancing consumer confidence. The paper also presents innovations in information system integration for aligning information exchange in the supply chain and logistics concepts based on innovative measurement technologies at the slaughterhouse stage. We aim to predict the population density of Salmonella spp. through the pork supply chain under dynamic environmental conditions (pH, a(w) and temperature) that fluctuate from growth to survival/slow inactivation. To do this, the dependence of the probability of growth, and of the growth and inactivation rate on the temperature, pH and a(w) were modelled. Probabilistic and kinetic measurements, i.e. growth and survival curves, were collected from the ComBase database (www.combase.cc). Conditions at which selected data used to fit the models were generated covered wide ranges that are relevant to the pork supply chain. Probabilistic and kinetic models were combined to give predictions on the concentration of Salmonella spp. at any stage of the pork supply chain under fluctuating pH, a(w) and/or temperature. Models were implemented in a user-friendly computing tool freely available from http://www.ifr.ac.uk/safety/SalmonellaPredictions/. This program provides estimates on the population dynamics of Salmonella spp. at any stage of the pork supply chain and its predictive performance has been validated in several pork products. 相似文献

In Switzerland. the safeguarding of food is the responsibility of industry, organizations, and governmental authorities. The dispersion of the tasks and the diversity of implemented safety measures among involved stakeholders do not allow a general overview of the national safety assurance level provided. A comprehensive evaluation of the level of safety assurance provided for foodborne pathogens such as Salmonella spp. is therefore lacking, and the prevalence of Salmonella spp. at various points in the food production chain is not known. The objectives of this study were to (i) collect data on safety measures implemented throughout the food production chain in Switzerland regarding Salmonella spp.; (ii) evaluate the safety assurance level for Salmonella spp. at each step of the production chain for chicken meat, pork, beef, and milk and dairy products (bovine origin); and (iii) gather data on the prevalence of the pathogen at each step. Data on implemented safety assurance measures for Salmonella spp. were gathered from the various stakeholders in the food production chain. The data were analyzed by a semiquantitative method that considered the quality and relevance of the implemented safety measures for Salmonella spp. The safety assurance level for Salmonella spp. was evaluated from "no safety assurance" to "very good safety assurance." Available results of testing for Salmonella spp. from 1998 to 2000 were used for calculating the prevalence of the pathogen throughout the food production chain. The results showed a varying safety assurance level for Salmonella spp. throughout the food production chain. Strengths (e.g., feed production for chickens) and weaknesses (e.g., pork production) were observed. These results serve as a basis for a rational optimization of the system. 相似文献

Today we manage food safety through good practices at different levels of food production, distribution, and consumption. The paper analyses current good practices, parameters involved in the food safety circle along the food supply chain, and consumer dilemmas. As a result of the current situation the new approach called "Good Nutritional Practice" (GNP) is proposed to balance the food safety systems. It is shown how important it is to integrate actual the food safety solutions within GNP, which includes consumers, and is based on a model that covers subsystems from other relevant good practices (nine good practices along the food supply chain). It has been shown that present maintenance of food safety in the food supply chain can be easily broken down, because of the different kinds of barriers or a simple misunderstanding among stakeholders including consumers. 相似文献
