为提高南极磷虾油微胶囊化率,降低南极磷虾油微囊化利用成本,以酪蛋白酸钠、明胶、麦芽糊精为壁材,采用喷雾干燥法对南极磷虾油进行微胶囊化包埋,利用单因素实验结合响应面优化包埋工艺,并对微胶囊化后产品的理化性质进行研究。结果表明:酪蛋白酸钠质量分数为24.55%、明胶质量分数为4.86%、芯壁质量比为0.33,麦芽糊精质量分数为45.60%,南极磷虾油微胶囊包埋率为93.79%。微胶囊水分含量2.31%±0.12%,吸湿性强,灰分含量为2.04% ± 0.14%,微胶囊粒径集中在14.8~26.7 μm。响应面法预测各因素对南极磷虾油微胶囊包埋率的影响大小关系为:芯壁质量比>明胶>酪蛋白酸钠。机械强度试验表明,在不同的pH环境和离心时间条件下,微胶囊中南极磷虾油释放率小于0.3%,微胶囊结构非常稳定。  相似文献

以大豆可溶性蛋白、鱼油为双层壁材 ,采用喷雾干燥法制备出SOD微胶囊 ,考察了SOD包埋率、活性和鱼油的过氧化值 ,结果显示产品的包埋率和抗氧化性均有提高 ,微囊在 45℃条件下 ,较大豆蛋白单层微囊的稳定性显著增加。经正交法优化选择 ,微囊的最佳制备条件为 :进风温度 1 95℃ ,均质压力 5 0MPa ,出风温度 1 1 0℃ ,外层壁材选择大豆可溶性蛋白和麦芽糊精 ,鱼油与SOD溶液比 (g∶mL)为 4∶1 ,鱼油占外层壁材百份比为 40 % ,SOD包封率达 3 8 65 %。  相似文献

基于复合壁材的沙棘籽油微胶囊制备工艺,以包埋率为指标,在单因素实验基础上采用正交实验优化制备工艺,并对其特性及微胶囊化对沙棘籽油性质的影响进行了研究。结果表明:制备沙棘籽油微胶囊的最佳工艺条件为以酪蛋白酸钠和麦芽糊精为壁材、酪蛋白酸钠与麦芽糊精质量比1∶1、壁材与芯材质量比2∶1、固形物含量20%。最佳工艺条件下制备的沙棘籽油微胶囊产品粒径分布均匀,包埋率可达96. 15%;热失重分析说明沙棘籽油微胶囊具备良好的热稳定性;微胶囊化前后,沙棘籽油不饱和脂肪酸含量变化不大;经过微胶囊包埋的沙棘籽油与未包埋的沙棘籽油相比,氧化诱导时间在高温加速储存过程中明显延长,具备较好的氧化稳定性。  相似文献

以紫玉米芯为原料,利用响应面实验优化花青素的超声波辅助提取工艺,并将获得的花青素冻干粉添加麦芽糊精,后经喷雾干燥制成花青素粉。响应面实验结果表明,最佳提取条件为:料液比为1∶13(g/m L)、提取温度为41℃、水浴提取时间为31 min、超声提取时间为20 min,在此条件下,得到花青素提取量为(4.623±0.021)mg/g,提取率为94.8%。花青素提取液添加麦芽糊精,经喷雾干燥工艺制成花青素粉,在进风温度为150℃、花青素冻干粉与麦芽糊精质量比为1∶1、固形物浓度为15%时,得到的花青素粉包埋率为86.7%,水分含量为4.8%。本实验得到了紫玉米芯花青素超声辅助提取和花青素粉制备的最佳工艺条件,为紫玉米芯的开发利用提供了参考依据。   相似文献

通过水酶法工艺制备的大豆油和大豆蛋白作为制取粉末油脂的芯材和壁材,同时加入复配乳化剂(单甘酯-蔗糖酯1∶1)和壁材麦芽糊精,通过恒温高速搅拌、高压均质得到一种稳定的水包油(O/W)型乳状液,对其进行喷雾干燥,获得高含油、无渗油的大豆粉末油脂。通过响应面法设计实验确定水酶法制备大豆粉末油脂的最优工艺条件为:麦芽糊精添加量2.6%,乳化剂添加量1.2%,酪蛋白酸钠添加量15.2%,固形物含量35.3%,乳化温度64.5℃。在最优工艺条件下制备出总含油率为40.18%,包埋率为94.13%,感官性状良好,复原乳状液的乳化程度较高,乳化稳定性好的大豆粉末油脂。  相似文献

为了拓展南极磷虾油的应用范围,采用喷雾干燥法制备南极磷虾油微囊粉。通过对比微囊化效果确定最佳壁材、乳化剂及工艺条件,并对最终产品各项性能指标进行测定。结果表明,制备南极磷虾油微囊粉的最佳条件为:最佳壁材组合为麦芽糊精(75%)与酪蛋白酸钠(2%),最佳乳化剂为单甘酯,单甘酯添加量2.0%,均质压力40 MPa,喷雾干燥进风温度180 ℃、出风温度90 ℃。在最佳条件下制得的南极磷虾油微囊粉表面含油率为0.68%,包埋率达到95%以上,载油量约为20%。南极磷虾油微囊粉为淡红色,具有一定的虾油味道,流动性良好,没有出现结块现象,并且复水后能够快速溶解,没有分层或漂油现象。  相似文献

该文优化功能油脂微胶囊的制备工艺,考察微胶囊相关理化指标。采用高直链玉米淀粉、酪蛋白酸钠和麦芽糊精作为复合壁材,功能油脂作为芯材,以包埋率为指标,根据单因素试验结果,设计三因素三水平响应面试验,得到最佳工艺条件为:乳化温度64.2℃、高速剪切时间5.8 min、喷雾干燥进风温度179.9℃,经验证试验表明包埋率可达96.42%以上。得到的微胶囊产品干燥充分,有效成分损失较少,大小均一,壁囊完整且热稳定性良好,足以满足工业生产的要求,达到了微胶囊化的目的。  相似文献

为研究混合壁材及乳化剂对沙棘果油微胶囊包埋效果及稳定性的影响,本文以沙棘果油为芯材,以酪蛋白酸钠和变性淀粉(辛烯基琥珀酸淀粉钠)为混合壁材,单双硬脂酸甘油酯为乳化剂,麦芽糊精为填充剂,柠檬酸钾为缓冲盐,通过喷雾干燥法制备50%载油率的沙棘果油微胶囊。在单因素实验的基础上,以酪蛋白酸钠添加量、变性淀粉添加量、乳化剂添加量为实验因素,采用Box-Behnken法设计三因素三水平试验进行优化,确定微囊粉的最佳包埋效果。结果表明,所得的回归模型具有高度的显著性(P<0.0001),方程对试验拟合较好,在酪蛋白酸钠添加量8%、变性淀粉添加量16%、乳化剂添加量2%条件下,制备得到的沙棘果油微囊粉包埋率最大,可以达到91.6%;扫描电镜观察微胶囊粉表面圆润无裂痕,马尔文激光粒度分析仪测定复原乳粒径<800 nm,通过油脂氧化自动分析仪进行油脂氧化诱导期分析,对照组沙棘果油氧化诱导期为7 h,试验组沙棘果油微囊粉氧化诱导期为40 h,表明沙棘果油微囊粉稳定性强,不易氧化变质,货架期较长。  相似文献

研究了微波制备抗性麦芽糊精的方法,主要以抗性麦芽糊精的含量和白度作为参考指标,在单因素的基础上,选取微波功率、微波时间、加酸量三个因素进行Box-Benhnken中心组合设计,再通过响应面分析法对实验条件进行优化,结果显示:微波功率630W,微波处理时间10·12min,加酸量是6·43%。得到的抗性麦芽糊精的含量43·30%,白度是76·9%。   相似文献

Since grapevine ( Vitis spp .) rootstock material is being traded increasingly as disbudded woody material a lack of distinctive morphological features on such material necessitates an alternative and reliable means of identification. Methods described here were developed for rapid and efficient extraction of DNA from woody samples rich in phenolic compounds and polysaccharides, and for subsequent identification of varieties by RAPD PCR. Using these methods, and with the application of only one selected RAPD primer, we were able to differentiate sixteen rootstock varieties, including the seven varieties most commonly used in Germany. Problems commonly encountered with reproducibility of RAPD patterns were avoided by choosing primers with a dinucleotide sequence and a high G/C content that allowed a rather high annealing temperature of 45°C. Methods described here should also be useful for other horticultural crops, especially those with woody tissues rich in phenolic compounds and polysaccharides.  相似文献

An internet website (http://cpf.jrc.it/smt/) has been produced as a means of dissemination of methods of analysis and supporting spectroscopic information on monomers and additives used for food contact materials (principally packaging). The site which is aimed primarily at assisting food control laboratories in the European Union contains analytical information on monomers, starting substances and additives used in the manufacture of plastics materials. A searchable index is provided giving PM and CAS numbers for each of 255 substances. For each substance a data sheet gives regulatory information, chemical structures, physico-chemical information and background information on the use of the substance in particular plastics, and the food packaging applications. For monomers and starting substances (155 compounds) the infra-red and mass spectra are provided, and for additives (100 compounds); additionally proton NMR are available for about 50% of the entries. Where analytical methods have been developed for determining these substances as residual amounts in plastics or as trace amounts in food simulants these methods are also on the website. All information is provided in portable document file (PDF) format which means that high quality copies can be readily printed, using freely available Adobe Acrobat Reader software. The website will in future be maintained and up-dated by the European Commission's Joint Research Centre (JRC) as new substances are authorized for use by the European Commission (DG-ENTR formerly DGIII). Where analytical laboratories (food control or other) require reference substances these can be obtained free-ofcharge from a reference collection housed at the JRC and maintained in conjunction with this website compendium.  相似文献

The characterization of the aromatic profile of several apricot cultivars with molecular tracers in order to obtain objective data concerning the aromatic quality of this fruit was undertaken using headspace–solid phase microextraction (HS–SPME). Six apricot cultivars were selected according to their organoleptic characteristics: Iranien, Orangered, Goldrich, Hargrand, Rouge du Roussillon and A4025. The aromatic intensity of these varieties measured by HS–SPME–Olfactometry were defined and classified according to the presence and the intensity of grassy, fruity and apricot like notes. In the six varieties, 23 common volatile compounds were identified by HS–SPME–GC–MS. Finally, 10 compounds, ethyl acetate, hexyl acetate, limonene, β-cyclocitral, γ-decalactone, 6-methyl-5-hepten-2-one, linalool, β-ionone, menthone and (E)-hexen-2-al were recognized by HS–SPME–GC–O as responsible of the aromatic notes involved in apricot aroma and considered as molecular tracers of apricot aromatic quality which could be utilized to discriminate apricot varieties.  相似文献

The advent of the functional barrier concept in food packaging has brought with it a requirement for fast tests of permeation through potential barrier materials. In such tests it would be convenient for both foodstuffs and materials below the functional barrier (sub-barrier materials) to be represented by standard simulants. By means of inverse gas chromatography, liquid paraffin spiked with appropriate permeants was considered as a potential simulant of sub-barrier materials based on polypropylene (PP) or similar polyolefins. Experiments were performed to characterize the kinetics of the permeation of low molecular weight model permeants (octene, toluene and isopropanol) from liquid paraffin, through a surrogate potential functional barrier (25 μm-thick oriented PP) into the food simulants olive oil and 3% (w/v) acetic acid. These permeation results were interpreted in terms of three permeation kinetic models regarding the solubility of a particular model permeant in the post-barrier medium (i.e. the food simulant). The results obtained justify the development and evaluation of liquid sub-barrier simulants that would allow flexible yet rigorous testing of new laminated multilayer packaging materials.  相似文献

This paper describes the second part of a project undertaken to develop certified mussel reference materials for paralytic shellfish poisoning toxins. In the first part two interlaboratory studies were undertaken to investigate the performance of the analytical methodology for several PSP toxins, in particular saxitoxin and decarbamoyl-saxitoxin in lyophilized mussels, and to set criteria for the acceptance of results to be applied during the certification exercise. Fifteen laboratories participated in this certification study and were asked to measure saxitoxin and decarbamoyl-saxitoxin in rehydrated lyophilized mussel material and in a saxitoxin-enriched mussel material. The participants were allowed to use a method of their choice but with an extraction procedure to be strictly followed. The study included extra experiments to verify the detection limits for both saxitoxin and decarbamoyl-saxitoxin. Most participants (13 of 15) were able to meet all the criteria set for the certification study. Results for saxitoxin.2HCl yielded a certified mass fraction of <0.07 mg/kg in the rehydrated lyophilized mussels. Results obtained for decarbamoyl-saxitoxin.2HCl yielded a certified mass fraction of 1.59+/-0.20 mg/kg. The results for saxitoxin.2HCl in enriched blank mussel yielded a certified mass fraction of 0.48 +/- 0.06 mg/kg. These certified reference materials for paralytic shellfish poisoning toxins in lyophilized mussel material are the first available for laboratories to test their method for accuracy and performance.  相似文献
