In this study, the physical, thermal and mechanical properties of a novel edible film based on psyllium hydrocolloid (PH) were investigated. PH films were prepared by incorporation of three levels of glycerol (15%, 25%, and 35% w/w). As glycerol concentration increased, water vapor permeability (WVP), percent of elongation (E%) and water solubility of PH films increased whilst, tensile strength (TS), surface hydrophobicity and glass transition point (Tg) decreased significantly. At the level of 15% (W/W) of glycerol, PH films showed the lowest WVP values (1.16 × 10−10 g H2O m−2 s−1 MPa−1), E% (24.57%) and water solubility (47.69%) and the highest values for TS (14.31 MPa), water contact angle (84.47°) and Tg (175.2 °C). By increasing glycerol concentration, PH films became slightly greenish and yellowish in color but still transparent in appearance. This study revealed that the psyllium hydrocolloid had a good potential to be used in producing edible films with interesting specifications.  相似文献

Fish gelatin was plasticized with 20% and 25% glycerol (w/w of gelatin) and used to develop edible films by twin-screw extrusion at 110 and 120 °C followed by compression molding at 80 °C. Tensile and moisture barrier properties and glass transition temperature were then measured and compared with solution-cast films. The films extruded at 110 °C and with 25% glycerol had the highest percent elongation at break of 293 ± 27%. The water vapor permeability values of extruded films (the highest value being 2.9 ± 0.2 g mm h−1 cm−2 Pa−1) were higher than those of solution-cast films while the glass transition temperatures (Tg) of the extruded films were generally lower than those of solution-cast films. Films with 25% glycerol that were extruded at 110 °C had the lowest Tg (2.10 ± 0.31 °C). This investigation showed that extrusion processing followed by compression molding is a feasible method to produce fish gelatin films for commercial applications in a wide range of food products.  相似文献

The properties of porcine plasma protein-based films as influenced by some factors and pretreatment were studied. Both protein concentrations (20 and 30 g L−1) and glycerol contents (50, 60 and 70 g/100 g protein) had the impact on film properties. Film prepared from film-forming solution (FFS) containing protein (30 g L−1) and glycerol (60 g/100 g protein) possessed the highest tensile strength (TS) (2.48 MPa), while that containing protein (30 g L−1) and glycerol (70 g/100 g protein) exhibited the greatest elongation at break (EAB) (18.33%). Protein and glycerol contents affected water vapor permeability (WVP) and transparency of the resulting films. No differences in protein solubility were found among all films (p > 0.05). Pretreatment of FFS by adjusting pH (2-11) and heating at different temperatures (40, 55 and 70 °C) on the properties of the resulting films was investigated. TS and EAB became higher but WVP decreased with decreasing or increasing pH value of FFS. Heat treatment of FFS with pH 3 and 10 had no impact on TS of the resulting film (p > 0.05). On the other hand, EAB and WVP increased with increasing temperature of FFS at both pHs (p < 0.05).  相似文献

Triticale flour proteins based films were developed. Solubility in water, water vapor permeability (WVP), and mechanical properties of triticale films are presented. The effects of thermal treatments and glycerol concentration were also evaluated. WVP values were in the range 0.10-4.22 × 10−10 g m−1 s−1 Pa−1. Tensile strength (TS) and percentage of elongation (%E) were in the range 2.9-0.20 MPa and 250-110% respectively. Total soluble matter (TSM), WVP, and %E decreased with the increase in the curing temperature. More plasticized films presented greater TSM, WVP, %E and lower values of TS. At a giving temperature (T) and glycerol concentration, an increase in relative humidity (RH) resulted in higher values of TSM, WVP, %E and lower TS values. It was observed that in films with the same treatments and conditioning, WVP increased with the increase in measurement temperature. Triticale proteins showed suitable film-forming capacity for the formulation of biodegradable films.  相似文献

Sunflower seed meal protein (SP) films were prepared using various plasticizers, cross-linking agents, Cloisite Na+ or red algae, and their physical properties, such as tensile strength (TS), elongation at break (E), and water vapor permeability (WVP) were determined. The TS, E, and WVP of the SP film containing sucrose and fructose (2:1) as a plasticizer and cinnamaldehyde as a cross-linking agent were 3.05 MPa, 34.42%, and 2.25 × 10−9 g m/m2 s Pa, respectively. The incorporation of Cloisite Na+ improved the physical properties of the SP film. The TS of the SP/Cloisite Na+ composite film containing 3% Cloisite Na+ increased by 2.19 MPa, and the WVP of the composite film decreased by 0.52 × 10−9 g m/m2 s Pa compared to the SP film. The incorporation of red algae also improved the TS of the SP film. The TS of the SP composite film containing 1.2% red algae increased by 3.82 MPa compared to the SP film. In addition, an SP/red algae composite film containing grapefruit seed extract (GSE) was prepared and used in food packaging. After 12 days of storage, the population of Listeria monocytogenes inoculated on smoked duck meats packed with the SP/red algae composite film containing 1.2% GSE decreased by 1.31 log CFU/g compared to the control packaging. Therefore, these results suggest that SP composite films can be prepared by the addition of red algae to the SP film–forming solution and that the SP/red algae composite film containing GSE can be used as an antimicrobial food packaging material.  相似文献

Biodegradable three-layer gelatin film was obtained by heat – compression of piled dialdehyde starch (DAS) – cross-linked and plasticized-gelatin films (Ge-10DAS) outer layers and sodium montmorillonite (MMt) – plasticized – gelatin film (Ge-5MMt) inner layer. Multilayer film displayed a compact and uniform microstructure due to the highly compatible individual layers which could interact by strong hydrogen bonding. Lamination reduced moisture absorption and total soluble matter compared to the single layers while keeping transparency. Tensile strength and elastic modulus of the multilayer were 8.0 ± 1.3 MPa and 14.7 ± 2.4 MPa, which were significantly higher than values obtained for Ge-10DAS due to the contribution of the of the bio-nanocomposite inner layer. Elongation at break was not affected by lamination meanwhile it had a beneficial effect on barrier properties. Water vapor permeability (WVP) of the multilayer was 0.8 ± 0.1 × 10−13 kg m Pa−1 s−1 m−2 which was lower than those of the individual components whereas oxygen permeability was similar to that of Ge-5MMt (10.5 ± 0.4 cm3(O2) mm m−2 day−1) and lower than that of Ge-10DAS film.  相似文献

PLA-based composite films with different types of nanoclays, such as Cloisite Na+, Cloisite 30B and Cloisite 20A, were prepared using a solvent casting method and their tensile, water vapor barrier and antimicrobial properties were tested. Tensile strength (TS), elongation at break (E), and water vapor permeability (WVP) of control PLA film were 50.45 ± 0.75 MPa, 3.0 ± 0.1%, and 1.8 × 10−11 g m/m2 s Pa, respectively. TS and E of nanocomposite films prepared with 5 g of clay/100 g of PLA decreased 10-20% and 11-17%, respectively, depending on the clays used. On the contrary, WVP of the nanocomposite films decreased 6-33% through nanoclay compounding. Among the clay types used, Cloisite 20A was the most effective in improving the water vapor barrier property while sacrificing tensile properties the least. The effect of clay concentration tested using Cloisite 20A showed a significant decrease in TS and WVP, with increases in clay content. Among the PLA/clay composite films tested, only PLA/Cloisite 30B composite film showed a bacteriostatic function against Listeria monocytogenes.  相似文献

Edible films were prepared using sodium caseinate (6–8 g/100 g) and stearic acid (0–2 g/100 g). Effects of the ratio of stearic acid and sodium caseinate to water on the water vapor permeability (WVP) and mechanical properties of the prepared films were evaluated. Film-forming emulsions were also tested for rheological properties and surface tension. Changes in the ratios of sodium caseinate and stearic acid to water had significant effects on WVP (p < 0.05) and surface tension (p < 0.01). Higher values of consistency coefficient and elastic modulus were obtained in the presence of higher stearic acid. In addition, increase in stearic acid content increased the rate of water loss and gain of elastic modulus at the early stage of drying and resulted in production of less flexible film. The resultant edible film prepared with 6 g/100 g sodium caseinate and 2 g/100 g stearic acid showed the lowest WVP of 1.368 (g mm/m2 h kPa).  相似文献

Glycerol-plasticized gelatin edible films with a new kind of dialdehyde polysaccharide, dialdehyde carboxymethyl cellulose (DCMC) as crosslinking agent are successful prepared using casting techniques. The mechanical properties, thermal stability, light barrier properties, swelling behavior as well as water vapor permeability (WVP) of the gelatin-DCMC films are investigated. The results indicate that the addition of DCMC causes tensile strength (TS) and thermal stability to increase and elongation at break (EB) to decrease, suggesting the occurrence of crosslinking between gelatin and DCMC. The light barrier measurements present high values of transparency at 280 nm and low values of transparency at 600 nm of the gelatin-DCMC films, indicating that gelatin-DCMC films are very transparent (lower in transparency value) while they have excellent barrier properties against UV light. Moreover, the values of transparency at 280 nm increase with the increased DCMC and glycerol content, suggesting the potential preventive effect of gelatin-DCMC films on the retardation of product oxidation induced by UV light. Furthermore, the addition of DCMC can greatly decrease the water vapor permeability (WVP) and equilibrium swelling ratio (ESR) down to values about 1.5 × 10−10 g m/m2 s Pa and 150%, revealing the potential of DCMC in reducing the water sensitivity of gelatin-based films. In common for hygroscopic plasticizer in edible films, the addition of glycerol gives increase of EB and WVP and decrease of thermal stabilities and ESR of the gelatin-DCMC films.  相似文献

The effects of glycerol, sorbitol, xylitol and fructose plasticisers on water sorption, mechanical properties, water vapour permeability (WVP) and microstructure of pullulan–alginate–carboxymethycellulose (PAC) blend films were investigated. At low plasticiser concentrations (below 7% w/w dry basis), antiplasticisation effect was observed, causing an increase in tensile strength (TS) but a decrease in the equilibrium moisture content. As glycerol concentration increased from 0% to 7%, TS increased from 68.1 to 69.6 MPa, whereas equilibrium moisture contents at 0.84 aw decreased from 0.37 to 0.3 g H2O g?1 dry basis. At higher plasticiser concentrations (14–25% w/w), an opposite trend was observed on the PAC films, resulting in the reduction of TS and elevation of moisture content. Among the four plasticisers tested, the fructose‐plasticised films were the most brittle, showing the highest TS, but had the lowest elongation at break (EAB), WVP and equilibrium moisture content values than films plasticised with other polyols. On the other hand, glycerol resulted in the most flexible film structure, exhibiting opposite materials' properties as compared with the fructose‐plasticised films. For instance, at 25% (w/w) plasticiser concentration, EAB and WVP values of fructose‐plasticised films were 33.5% and 3.48 × 10?6 g m Pa?1 h?1 m?2, which were significantly lower than that of glycerol‐plasticised films (58.6% and 4.86 × 10?6 g m Pa?1 h?1 m?2, respectively). Scanning electron microscopy showed that the plasticised PCA films were less homogeneous and more porous than the unplasticised counterparts, indicating that plasticisers had an effect on the microstructural morphology of the film matrix.  相似文献

Novel edible composite films were prepared from pistachio globulin protein (PGP), saturated fatty acids, and an emulsifier using the emulsification technique. The water vapor permeability (WVP) of the emulsified films was reduced by approximately 37–43% by fatty acid addition. The effect of fatty acid on the oxygen permeability (OP) of PGP films was indirectly determined as the oil peroxide value. The OPs of the emulsified films were lower than those of a PGP film without fatty acid, but the differences were not significant (P < 0.05). The mechanical properties of PGP films were also affected by fatty acid addition; the ultimate tensile strength (UTS) was diminished, and elongation at breaking (E) decreased considerably (35–70%). Furthermore, the incorporation of fatty acid increased the opacity of the films. Finally, differential scanning calorimetry showed that the glass transition temperature (Tg) of the PGP film was ∼127 °C and was not considerably affected by fatty acid addition.  相似文献

Gelatin films derived from beef, pork and fish sources were manufactured by twin-screw, co-rotating extrusion. The effect of extrusion processing parameters, namely; screw speed (100–400 rpm) and temperature (90, 90, 90, 90 °C and 90, 120, 90, 90 °C) on the mechanical and barrier properties of gelatin films were studied. Increasing screw speed up to 300 rpm improved (P < 0.05) tensile strength (TS) and reduced (non-significantly) water vapour permeability (WVP) values for all manufactured gelatin films. However, the WVP of various gelatin film types was reduced (P < 0.05) when a screw speed of 400 rpm was employed. Increasing the speed of extrusion promoted (P < 0.05) increased solubility of films in water. Manufacture of films using a higher temperature profile resulted in films possessing higher puncture strengths (PS), increased water barrier properties with higher water solubility.  相似文献

Properties of film from cuttlefish (Sepia pharaonis) ventral skin gelatin with different degree of hydrolysis (DH: 0.40, 0.80 and 1.20%) added with glycerol as plasticizer at various levels (10, 15 and 20%, based on protein) were investigated. Films prepared from gelatin with all DH had the lower tensile strength (TS) and elongation at break (EAB) but higher water vapor permeability (WVP), compared with the control film (without hydrolysis) (p < 0.05). At the same glycerol content, both TS and EAB decreased, while WVP increased (p < 0.05) with increasing %DH. At the same DH, TS generally decreased as glycerol content increased (p < 0.05), however glycerol content had no effect on EAB when gelatins with 0.80 and 1.20% DH were used (p > 0.05). DH and glycerol content had no marked impact on color and the difference in color (ΔE) of resulting films. Electrophoretic study revealed that degradation of gelatin and their corresponding films was more pronounced with increased %DH, resulting in the lower mechanical properties of films. Based on FTIR spectra, with the increasing %DH as well as glycerol content, higher amplitudes for amide-A and amide-B peaks were observed, compared with film from gelatin without hydrolysis (control film) due to the increased –NH2 group caused by hydrolysis and the lower interaction of –NH2 group in the presence of higher glycerol. Thermo-gravimetric analysis indicated that film prepared from gelatin with 1.20% DH exhibited the higher heat susceptibility and weight loss in the temperature range of 50–600 °C, compared with control film. Thus, both chain length of gelatin and glycerol content directly affected the properties of cuttlefish skin gelatin films.  相似文献

Gelatin-based films containing both Yucca schidigera extract and low concentrations of glycerol (0.25–8.75 g per 100 g protein) were produced by extrusion (EF) and characterized in relation to their mechanical properties and moisture content. The formulations that resulted in either larger or smaller elongation values were used to produce films via both blown extrusion (EBF) and casting (CF) and were characterized with respect to their mechanical properties, water vapor permeability, moisture content, solubility, morphology and infrared spectroscopy. The elongation of the EF films was significantly higher than that of the CF and EBF films. The transversal section possessed a compact, homogeneous structure for all of the films studied. The solubility of the films (36–40%) did not differ significantly between the different processes evaluated. The EBF films demonstrated lower water vapor permeability (0.12 g mm m−2 h−1 kPa−1) than the CF and EF films. The infrared spectra did not indicate any strong interactions between the added compounds. Thermoplastic processing of the gelatin films can significantly increase their elongation; however, a more detailed assessment and optimization of the extrusion conditions is necessary, along with the addition of partially hydrophobic compounds, such as surfactants.  相似文献

The morphological, thermal and pasting properties of starch separated from potatoes of three varieties (Kufri Chandramukhi, Kufri Jyoti and Kufri Chipsona-2), treated either with CIPC (isopropyl N-(3 chlorophenyl) carbamate) or γ-irradiation (Co60, 0.1 and 0.5 kGy) and subsequently stored at 8, 12 and 16 °C for 90 days, were studied. Scanning electron microscopy (SEM) showed the presence of oval and irregular shaped starch granules with a diameter range of 15–16 μm. Mean granule size of starch separated from potatoes stored at 12 °C ranged from 18–25 μm and irradiation treatment resulted in an increase in the proportion of small size granules. The irradiation of potatoes with 0.5 kGy resulted in starch with significantly lower peak-, trough- and breakdown-viscosity as compared to starch from potatoes treated with either CIPC or 0.1 kGy irradiation. The irradiation of potatoes with 0.5 kGy caused a significant increase in setback and pasting temperature. Pasting temperature of starch was observed to vary with the storage temperature. Starch separated from potatoes stored at higher temperature showed lower pasting temperature and vice versa. The starch from potatoes stored at 8 °C showed higher peak-, trough- and breakdown-viscosity and lower setback. Peak viscosity increased and swelling volume decreased with increase in storage temperature. FTIR spectra showed that the starch from irradiated potatoes displayed a significant decrease in the intensity of the C–H stretch region between 2800 and 3000 cm−1, which was observed to be irradiation dose-dependent, and higher with 0.5 than 0.1 kGy. However, a slight broadening of O–H stretch (3000–3600 cm−1) in starches from irradiated potatoes was observed. The spectral changes caused by γ-irradiation were apparent in the O–H stretch (3000–3600 cm−1), C–H stretch (2800–3000 cm−1) and bending mode of water (1600–1800 cm−1).  相似文献

A sensitive and specific polyclonal antibody (PcAb)-based indirect competitive enzyme-linked immunosorbent assay (icELISA) for sodium saccharin is described. 6-Amino saccharin was coupled to carrier protein for artificial antigen by diazotisation. New Zealand white rabbits were immunised to obtain anti-sodium saccharin PcAb and then icELISA was developed. The assay showed high sensitivity and specificity to sodium saccharin, with the 50% inhibition value (IC50) of 0.243 μg mL−1, workable range (IC30–IC70) of 0.050–12.8 μg mL−1 and limit of detection (LOD, IC20) of 0.021 μg mL−1. The average recoveries of sodium saccharin in spiked food samples were estimated ranging from 70.7% to 98.8%. A statistically significant correlation of results was obtained between this new ELISA and previously established HPLC approaches with the food-relevant sodium saccharin concentration range 0–320 μg mL−1 (R2 = 0.9887–0.9975). These results indicated that the established ELISA was a potential and useful analytical tool for rapid determination of sodium saccharin residue in food samples.  相似文献

d-Galactose was produced from lactose (200 g l−1) in the batch mode of a simultaneous saccharification and fermentation process (SSF). β-Galactosidases (from Kluyveromyces lactis and Aspergillus oryzae) and yeasts were immobilized in poly(vinylalcohol) hydrogel lens-shaped capsules – LentiKats®. After 20 repeated batch runs with entrapped K. lactis, β-galactosidase and free Saccharomyces cerevisiae (10% v/v inoculum), galactose productivity decreased to 50% and 1.4 kg of galactose were prepared. Compared to this, just 20% decrease of galactose productivity and a 0.9 kg production of galactose were observed for the SSF process with β-galactosidase from A. oryzae after 15 repeated batches under the same conditions. In the process of SSF with co-immobilized enzyme from K.lactis and S.cerevisiae, the galactose productivity increased from 3 g l−1 h−1 to 4.1 g l−1 h−1, which reduced the time of preparation of d-galactose.  相似文献

The aim of this study was to develop and characterise edible films produced from hydrolysed collagen and cocoa butter and plasticised with sucrose. The mechanical properties, water vapour permeability, opacity and morphology of the films were characterised. The film composition that yielded the best results was used to produce a coating for application in chocolate panned products. A water-based coating with desirable barrier properties that could replace shellac is important for the environment as well as health, and also because chocolate products have great appeal among children. The films obtained were easily manageable and flexible. Sucrose reduced tensile strength (TS), while hydrolysed collagen at concentrations above 15% increased it. Cocoa butter resulted in less-resistant films. The elongation at break values (EAB%) were higher for films containing higher sucrose concentrations. The water vapour permeability (WVP) ranged from 0.32 to 0.63 g mm m−2 h−1 kPa−1. For the same concentration of cocoa butter, the WVP was directly affected by the thickness of the film, i.e., the greater the thickness, the higher the WVP. Cocoa butter increased film opacity, while sucrose decreased it, particularly at concentrations above 17.5%. High concentrations of hydrolysed collagen produced films with more homogeneous surfaces. The brightness of the product with the coating developed in this study was attractive; however the brightness of the product with shellac was considered more intense. The properties of these films indicate that they are promising systems for coating chocolate panned products.  相似文献

The influences of three root essential oils (ginger, turmeric and plai) at different levels (25%, 50% and 100%, based on protein content) on properties and antioxidative activity of fish skin gelatin-based film were investigated. Films incorporated with all essential oils showed the lower tensile strength (TS) but higher elongation at break (EAB) with increasing amount of essential oils, compared with the control film (without oil incorporated), regardless of types of essential oil (p < 0.05). Water vapor permeability (WVP) of films containing essential oils decreased as the amount of essential oils increased (p < 0.05). Decreases in L*-value and increases in b*-, ΔE*- and transparency value were observed with increasing amount of essential oils incorporated (p < 0.05). FTIR spectra indicated that films added with essential oils, especially from plai root, exhibited higher hydrophobicity than the control film, as evidenced by higher amplitude at wavenunber of 2877–2922 cm−1 and 1732 cm−1. Lower degradation temperature was obtained in films containing essential oils. Microstructural study revealed that bilayer films could be formed when essential oils at level above 50% were incorporated. Film incorporated with plai and turmeric essential oils showed the higher DPPH and ABTS radical scavenging activity, respectively, (p < 0.05), compared with the control film and ginger essential oil added film. Thus, the incorporation of root essential oils directly affected properties of fish skin gelatin-based film, depending on types and levels incorporated.  相似文献

Palladium plus magnesium nitrates with and without Ir, Ru and W were evaluated for the simultaneous determination of As, Cu and Pb in cachaça by graphite furnace atomic absorption spectrometry. For 20 μL of sample, 5 μL Pd(NO3)2 and 3 μL Mg(NO3)2 dispensed together onto the Ir-coated platform of the THGA, analytical curves in the 0–30.0 μg L−1 As, 0–1.50 mg L−1 Cu and 0–60.0 μg L−1 Pb were built up and typical linear correlation coefficients were always better than 0.999. The limit of detection was 1.30 μg L−1 As, 140 μg L−1 Cu and 0.90 μg L−1 Pb. As, Cu and Pb contents in 10 cachaça samples agreed with those obtained by ICP-MS. Recoveries of spiked samples varied from 96% to 106% (As), 97% to 112% (Cu) and 92% to 108% (Pb). The relative standard deviation (n = 12) was typically 2.7%, 3.3% and 1.9%.  相似文献
