The effect of xanthan gum (Xan) on pasting and gelatinization behavior of tapioca starch (TS) was investigated. Rheological measurements of TS/Xan mixtures with 5% w/w total polysaccharide concentration at different mixing ratios (10/0, 9.5/0.5, 9/1 and 8.5/1.5) were performed to understand the pasting and gelatinization behavior of TS with and without Xan on heating–cooling cycle using a Rapid Visco Analyzer (RVA) and conventional rheometers. Xan increased storage modulus (G′) and loss modulus (G″) of TS dispersions during gelatinization process. Pastes of TS/Xan tended to be more solid-like, i.e., G′ larger than G″, with increasing Xan. The G′ of TS/Xan paste increased when kept at 10 °C indicating the network formation. Pasting temperatures, peak viscosity, final viscosity and breakdown values of TS increased with increasing Xan content but the opposite result was observed in setback value from RVA measurement. Temperature dependence of steady shear viscosity became less pronounced with increasing Xan content on both cooling and reheating indicating that Xan made the mixture more thermally stable. All the results suggest that the sample preparation and measuring conditions influence the rheological properties of TS/Xan mixtures, which should be taken into account in food application.  相似文献

The structural aspects of proteins prepared from tomato seeds were studied by dynamic rheology, modulated differential scanning calorimetry (MDSC) and Fourier transform infrared (FTIR) spectroscopy. The critical gel point was determined from storage (G’) and loss (G”) moduli as functions of time and frequency. The findings indicate that tomato-seed proteins can create gels during heat treatment at 90–95 °C. Mechanical spectra of the tomato-seed protein gels were classified as weak gels based on the frequency sweep, complex viscosity (η∗) and tan δ results. Moreover, G’ and G” changes were found to be dependent on both concentration and frequency. MDSC showed two peaks, with gelation temperatures (Td) of 70 and 87 °C, which we attribute to starch and globular protein fractions, respectively. The FTIR spectra show an increase in the absorbance of amides I and II after increasing the solid content from 1 to 10% w/w, indicating mostly β-sheet and α-helical conformations.  相似文献

Sugars and hydrocolloids are used in starch-based product formulations during processing for improving the final quality of foods. Effect of sucrose (0–30%) on thermal and pasting properties of 5% w/w tapioca starch (TS) – xanthan gum (Xan) mixtures was investigated using differential scanning calorimeter (DSC), rapid visco-analyser (RVA) and rheometer. Sucrose increased gelatinization temperatures and enthalpies of TS and TS/Xan dispersions. RVA pasting temperatures, peak viscosity, final viscosity, breakdown and setback values of TS/Xan mixtures increased with increasing sucrose concentration (< 0.05). Addition of sucrose in all TS/Xan pastes increased the rate of viscosity breakdown during RVA heating under constant shear and temperature. Setback values of TS/Xan pastes increased with sucrose addition but decreased significantly with increasing Xan content. Xan enhanced thermal stability of steady shear viscosities to TS pastes with and without sucrose. Linear regression from pasting profile revealed a good relationship for predicting final viscosity. These results could facilitate the development of TS-based products with improved thermal and pasting properties.  相似文献

Tofu gels were rheologically examined to determine their storage or elastic (G′) and loss or viscous (G″) moduli as a function of frequency within their linear viscoelastic limits. The tofu gels were made using either glucono-δ-lactone (GDL) or calcium sulphate (CaSO4·2H2O), followed by either heat treatment (heated soymilk at ?97 °C prior to coagulation and subsequently held at 70 °C for 60 min, HT) or high pressure treatment (400 MPa at 20 °C for 10 min, HP). The overall moduli values of the GDL gels and CaSO4·2H2O gels of both physical treatments were similar, each gave frequency profiles expected for weak viscoelastic materials. However, although both temperature and high pressure treatments could be used to produce tofu gels, the final products were not the same. Pressure formed gels, despite having a higher overall “consistency” (increasing values of their moduli), had a proportionately higher contribution from the loss modulus (increased tan δ). Differences could also be observed using confocal scanning laser microscopy. While such treatment may give rise to differing systems/structures, with new or modified organoleptic properties, the more “open” structures obtained by pressure treatment may well cause processing difficulties if subsequent reworking or moulding is required.  相似文献

The effects of freezing rates and storage temperatures on starch retrogradation and textural properties of cooked rice were evaluated. Cooked rice was frozen with different freezing rates and then stored at 4 °C for 14 days or −18 °C for up to 7 months. Starch retrogradation enthalpy (ΔHr) of cooked rice was determined by a differential scanning calorimetry, and textural properties were determined by a texture analyser. The results showed that the ΔHr and hardness values had a negative correlation with freezing rate, however, a positive correlation was found between adhesiveness and freezing rate. On the other hand, the advantages (lower hardness and higher adhesiveness, less starch retrogradaton) of cooked rice gained by rapid freezing, were lost quickly in the first 3 days of storage at 4 °C. However, rapid freezing combined with −18 °C frozen storage can effectively retard starch retrogradation and maintain the textural properties of cooked rice for at least 7 months. Therefore, high quality cooked rice can be produced by combined rapid freezing with frozen storage.  相似文献

The effects of citric acid on the gelatinization and retrogradation for 20 wt% cornstarch gels were studied by differential scanning calorimetry (DSC) measurements, uniaxial compression tests and dynamic viscoelastic measurements. The pH value of cornstarch dispersion was adjusted to between 5.0 and 3.0 by adding citric acid. The pH of gels without citric acid (control) was 6.3. The cornstarch gels with pH value adjusted to 3.0 were brittle, while the values of Young’s modulus and dynamic viscoelasticity were higher than those of other samples. It is thought that hydrolysis of amylose and amylopectin chains by adding citric acid occurred and the length of elastically active chains decreased, also leading to the formation of new networks. It was found that when cornstarch gels with added citric acid were stored, they became brittle, but became hard to deform against small deformation. However, when cornstarch gels with or without citric acid were stored for longer time at 5 °C, the retrogradation ratio estimated by thermal analysis was not affected by the presence of citric acid.  相似文献

The current study investigated the effect of a neutral polysaccharide, konjac glucomannan, on the heat-induced gelation of whey protein isolate (WPI) at pH 7. Oscillatory rheology (1 rad/s; 0.5% strain), differential scanning calorimetry and confocal laser scanning microscopy were used to investigate the effect of addition of konjac in the range 0-0.5% w/w, on the thermal gelation properties of WPI. The minimum gelling concentration for WPI samples was 11% w/w; the concentration was therefore held constant at this value. Gelation of WPI was induced by heating the samples from 20 to 80 °C, holding at 80 °C for 30 min, cooling to 20 °C, and holding at 20 °C for a further 30 min. On incorporation of increasing concentrations of konjac the gelation time decreased, while the storage modulus (G′) of the mixed gel systems increased to ∼1450 Pa for 11% w/w WPI containing 0.5% w/w konjac gels, compared to 15 Pa for 11% w/w WPI gels (no konjac). This increase in gel strength was attributed to segregative interactions between denatured whey proteins and konjac glucomannan.  相似文献

Structural aspects of the psyllium gum prepared from the seed husk of the plant of Plantago ovata Forsk was characterized by dynamic rheology and microscopy. Dynamic rheological properties of psyllium gel in the linear viscoelastic region, as a function of concentration (2, 2.5 and 3% w/w), temperature (5–95 °C) and pH (2.5–10) were investigated. Mechanical spectra of the psyllium gels were obtained by frequency sweep measurement classified into that of weak gels because G′ was larger than G″ throughout the tested frequency range and the separation of the two moduli (tan δ) was greater than 0.1. The phase angle increased with temperature and a peak associated with gel melting appeared at about 40 °C. All gels at different pH presented a typical weak gel spectrum. Scanning electron microscopy showed porous structures with different pore-size distribution for psyllium gels under different conditions in terms of concentration, pH and temperature.  相似文献

Four β-glucan preparations, i.e., curdlan (CL), oat (OG), barley (BG) and yeast (YG) β-glucans, were compared for their effects on the gelatinisation and retrogradation of rice starch (RS). Rapid visco-analysis (RVA) showed that addition of any of these β-glucans significantly increased the peak, breakdown, final, and setback viscosities of RS, whereas the pasting temperatures were significantly decreased by OG or CL addition, but were unaffected by BG or YG addition. Differential scanning calorimetry (DSC) demonstrated that all the β-glucans had a negligible effect on the onset (To), peak (Tp), and conclusion (Tc) temperatures but slightly decreased the gelatinisation enthalpy (△H1) of RS. Storage of all the gels at 4 °C resulted in a marked decrease in the To, Tp, Tc, and melting enthalpy (△H2) values. The retrogradation ratio (△H2/△H1) and the phase transition temperature range (TcTo) of all the gels increased with storage time. Dynamic viscoelastic measurements revealed weak gel-like behaviour of all the gels, in which their storage modulus (G′) increased and their loss tangent (tan δ) decreased during storage. Steady flow tests illustrated time-dependent shear-thinning (thixotropic) behaviour of all the gels. The hysteresis loop area and the gel hardness increased with storage time. However, the rate and extent of retrogradation and the rheological and textural changes of the RS gels were reduced by addition of any of these β-glucans. The extent of the aforementioned effects differed among the different β-glucan preparations, generally in the order OG ≈ BG > CL ≈ YG.  相似文献

Dynamic and steady shear rheometry and differential scanning calorimetry (DSC) were used to investigate effects of xyloglucan (XG) on gelatinization and retrogradation of tapioca starch (TS). The viscosity of TS/XG pastes immediately after gelatinization increased with increasing XG content at the total polysaccharide concentration of 3.5%. Gelatinized TS alone showed pseudoplastic flow at low shear rates and dilatant behavior at higher shear rates (about >1 s−1), while mixtures with XG did not show dilatancy. Mechanical spectra of TS pastes containing XG were more liquid-like than those of TS pastes without XG. XG provides shear stability to the TS during storage. Increases in dynamic moduli during storage at 5 °C were suppressed in the presence of XG. In contrast, the retrogradation ratio determined based on DSC increased more rapidly in the presence of XG. These results suggest that XG forms a continuous liquid phase in a mixture to impart better mechanical stability during storage but to accelerate re-ordering of starch polysaccharides by effectively reducing the amount of water available for starch.  相似文献

Storage stability of different round scad (Decapterus maruadsi) protein-based films including (1) control film without palm oil and chitosan, (2) film with 25% palm oil (glycerol substitution) and (3) film with 25% palm oil and 40% chitosan (protein substitution) was investigated. During storage (54% relative humidity, 28-30 °C), tensile strength (TS) of the films without and with 25% palm oil or 25% palm oil in combination with 40% chitosan increased continuously, while elongation at break (EAB) decreased markedly when storage time increased up to 8 weeks (p < 0.05). No changes in water barrier properties were observed throughout the storage time up to 4 weeks (p > 0.05). Film solubility slightly increased but protein solubility decreased continuously during storage (p < 0.05). All films became darker and more yellowish as storage time increased. When round scad muscle protein-based films were used to cover dried fish powder, the samples covered with the film containing 25% palm oil and 40% chitosan showed lower thiobarbituric acid reactive substances (TBARS) and yellowness than other samples during the extended storage up to 21 days (p < 0.05). No differences in moisture content of all samples covered with different films were noticeable (p > 0.05), except those covered with HDPE, which had the lowest moisture content. Thus, round scad protein-based film incorporated with palm oil and chitosan could be a promising packaging material to prevent lipid oxidation in oil enriched foods.  相似文献

In this study, the physical, thermal and mechanical properties of a novel edible film based on psyllium hydrocolloid (PH) were investigated. PH films were prepared by incorporation of three levels of glycerol (15%, 25%, and 35% w/w). As glycerol concentration increased, water vapor permeability (WVP), percent of elongation (E%) and water solubility of PH films increased whilst, tensile strength (TS), surface hydrophobicity and glass transition point (Tg) decreased significantly. At the level of 15% (W/W) of glycerol, PH films showed the lowest WVP values (1.16 × 10−10 g H2O m−2 s−1 MPa−1), E% (24.57%) and water solubility (47.69%) and the highest values for TS (14.31 MPa), water contact angle (84.47°) and Tg (175.2 °C). By increasing glycerol concentration, PH films became slightly greenish and yellowish in color but still transparent in appearance. This study revealed that the psyllium hydrocolloid had a good potential to be used in producing edible films with interesting specifications.  相似文献

Fresh tubers from four traditional Taewa (Maori potato) cultivars (Karuparera, Tutaekuri, Huakaroro and Moemoe) and one modern potato cultivar (Nadine) of New Zealand, were stored at 4 °C and 80–90% relative humidity for six months after harvest. Starch was isolated from tubers after every three month period, and its physico-chemical and functional properties measured. Considerable changes in these properties occurred during storage. The extent of changes varied significantly from cultivar to cultivar. Starch swelling power, solubility and light transmittance decreased during tuber storage while a slight increase was observed in starch amylose content. The starch granule size distribution shifted to smaller granule size during tuber storage. Scanning electron micrographs showed degradation/erosion and pitting on the surfaces of many of the starch granules isolated from stored tubers. Transition temperatures and enthalpies of gelatinization of the starches increased somewhat during tuber storage, suggesting that changes in the stability of starch crystalline structures had occurred. Pasting, viscoelastic and texture profile analysis (TPA) characteristics of starch gels were found to have been influenced by tuber storage time for all the cultivars, but to the greatest extent for Nadine and Huakaroro. Gels made from starches from the stored tubers had a reduced tendency towards retrogradation as evidenced by the decrease in syneresis (%) during gel storage at 4 °C.  相似文献

Within the European Union, indications of ‘first cold pressing’ and ‘cold extraction’ can only be used for virgin olive oil (VOO) obtained below 27 °C from mechanical processing. Three different malaxing temperatures (25, 35 and 45 °C) are here evaluated for the quality of the VOO obtained in a continuous industrial plant. The oils were stored at room temperature in the dark for 12 months. Initially, oil obtained from a blend of Frantoio/Leccino cultivars (F/L) had higher acidity and peroxide levels and lower phenolic content than a Coratina cultivar (Cor). The oxidative stability of the oils positively correlated with malaxation temperature (F/L, R2 = 0.818; Cor, R2 = 0.987) as the phenolic content was directly proportional to the temperature (F/L, R2 = 0.887; Cor, R2 = 0.992). Only oils obtained at 45 °C were rejected because of ‘heated or burnt’ off-flavour. Decarboxymethylation of secoiridoids and further hydrolysis of phenolic esters occurred during storage. The oxidation products of derivatives of tyrosol and hydroxytyrosol were detected after nine months in both the F/L and Cor samples. Thus, VOO obtained at a processing temperature lower than 27 °C does not show higher chemical and sensory qualities than VOO obtained at 35 °C.  相似文献

Synthesised E- and Z-ajoene were used to determine their amounts in food oils containing various fresh garlics. The best yield of E-ajoene (172.0 μg/g of garlic) and Z-ajoene (476.0 μg/g of garlic) was obtained from freshly prepared Japanese garlic with rice oil which was heated at 80 °C. Determination of E- and Z-ajoene from soybean oil containing 15% Japanese garlic samples prepared at 80 °C for 0.5 h gave the amount of E-ajoene (170.0 μg/g of garlic) and Z-ajoene (127.0 μg/g of garlic). After 9-month storage, 54.0% E- and 11.0% Z-ajoene remained in Japanese garlic with rice oil. Ajoene (0.1 mM) in ethyl acetate was incubated under UV-light (253.7 nm) for 3 days, 81.7% E- and 56.9% Z-ajoene remained. 4.3% and 0.5% E- and Z-ajoene remained when ajoene (0.1 mM in ethyl acetate) was incubated at 100 °C.  相似文献

The release of strawberry flavour compounds from pectin gels and gelatin gels was evaluated by instrumental and sensory analysis. Three gel textures were established based on Young’s modulus of elasticity (E) for each gel. The E of the low, medium and high rigidity gelatine and pectin gels was 181, 300 and 493 N m−2, respectively. Air/gel partition coefficients were determined by static headspace analysis. In-nose/proton transfer reaction-mass spectrometry analysis produced temporal release profiles. Sensory analysis was conducted to assess perceived odour, thickness, strawberry flavour and sweetness using magnitude estimation. The type of hydrocolloid affected static and in-nose compound concentrations significantly. The pectin gels showed lower air/gel partition coefficients than the gelatin gels, but increased flavour release. Increased gel rigidity resulted in lower air/gel partition coefficients; higher maximum concentrations of volatiles and lower release rates during in-nose analysis; decreased perception of odour, strawberry flavour and sweetness; and higher intensity ratings for thickness in sensory analysis. Consequently, both type of hydrocolloid and rigidity of the sample greatly affected flavour release and perception.  相似文献

Four dispersions of 3% glucomannan in water, deacetylated with 5% 0.6 N and 1 N KOH (lots L1 and L2) and 0.6 N and 1 N NaOH (lots L3 and L4) as gelling agents, were evaluated for use in raw restructured seafood products. Several properties (pH, moisture content, water binding capacity, cooking loss and lightness) together with puncture data (breaking force and breaking deformation) were determined after 1 and 10 days of chilled storage at 5 °C. All these data were analyzed together with different viscoelastic parameters obtained at small amplitude oscillatory strain (SAOS) after 1 day of chilled storage, showing that L1 and L4 samples were the most suitable gels for incorporation in raw restructured fish products. In both cases the highest stress (σmax) and strain (γmax) amplitude values were found in the linear viscoelastic (LVE) range; however, L1 showed both high strain amplitude and breaking deformation values. Moreover, creep and recovery (transient) data showed that L1 was the most time-stable gel with the highest elasticity and the lowest relaxation exponent (n). L4 gel showed strong rigidity, i.e. the highest values of breaking force and storage moduli (G′) and the highest n value, making it less gel-like. Both L1 and L4 gels became significantly less gel-like over 10 days of chilled storage due to the loss of gel strength (S) and a noticeable increase of n. These chilled storage effects were more intense in L4 than in L1.  相似文献

A freshness index called the global stablity index (GSI) applicable to follow the variation of multi-quality indices of bighead carp (Aristichthys nobilis) heads during different temperatures storage was evaluated. Quality indices (sensory score, total aerobic counts, volatile base nitrogen, and K value) were estimated and calculated into the single parameter GSI at −3, 0, 3, 9 and 15 °C. GSI was then kinetically modeled to describe the dependency of GSI with temperature and storage time. The calculated data of GSI were satisfactorily described by a zero order kinetic model. The activation energy (EA) and the corresponding pre-exponential constant (k0) of GSI were 85.61 kJ/mol and 1.14 × 1015, respectively. Relative errors between predicted and observed GSI values were all below 10% before the 15th day. Thus, the established model based on GSI could effectively predict the freshness of bighead carp heads at the range of −3 and 15 °C during different temperatures storage.  相似文献

The frequency sweep test was used to evaluate storage modulus (G′), loss modulus (G′′) and loss tangent [tan (δ)] of Iranian UF-Feta cheese during ripening period (3, 20, 40 and 60 days). With development of ripening, storage and loss moduli increased at varying rates. The rate of increase in G′ was greater than that in G′′ resulting in a reduction in tan (δ). That is, storage modulus was dominant to loss modulus and as a result the elasticity nature was greater than the viscous nature of cheese samples. Due to the disruption of fat globules and proteolysis, protein matrix rearranged and formed a more compact texture containing aggregates of casein. Ripening did not influence the pH level and also the concentrations of dry matter, fat, salt, and total nitrogen in dry matter. However, water soluble nitrogen increased significantly (P < 0.05).  相似文献

Pure low-methoxyl (LM) pectin and mixtures of LM and high-methoxyl (HM) pectin in different ratios were used to produce gels with control over the rheological parameter storage modulus (G′). The gels either had similar pectin concentrations and different G′ values, or different pectin concentrations and similar G′ values. All gels were prepared with 30 g/100 g sugar, in the presence of 0.1 g/100 g CaCl2, at pH 3.5; these are conditions that favour gel formation of both LM and HM pectin.The gels were compared for their sensory characteristics; specifically sweetness, sourness, thickness, and glueyness. Sweetness was found to increase with increasing storage modulus (G′) in pectin gels of similar pectin concentration, but different G′ values. Gels with higher proportions of LM pectin were perceived as sweeter than those with low LM pectin ratios. These gels also had increasing loss modulus (G″), and increasing differences between G′ and G″, which indicates that diffusion has a bearing on the perception of sweetness in pectin gels. Thickness and glueyness were mostly determined by total pectin concentration. Thickness also increased with increasing LM pectin concentration while glueyness increased with increasing HM pectin concentration.  相似文献
